Baur’s: Baur au Lac, Zurich

Perched on the edge of Lake Zurich, Baur au Lac is one of the world’s oldest luxury hotels still in the ownership of its founding family. The 175-year-old property’s newly launched art-and-design-focused brasserie, Baur’s, aims to bring locals and guests together in a chic and modern environment, whilst showcasing a distinctively contemporary take on classic dining.

Comprising an elegant bar, restaurant, dining counter and stylish cigar lounge, Martin Brudnizki Design Studio has drawn upon the iconography of the venue to usher in a new bolder era. Featuring a world-class art collection and a warm colour palette of burgundy red and soft green, contrasted with timber patterned floors and extravagant Murano glass chandeliers, the space has been designed to create a feeling of grandeur and intimacy at the same time.

Creating a decidedly relaxed ambience, frosted glass subtly divides tables, and lowlevel table lighting enhances the sense of cosiness, while the dining counter – crafted from marble and antique glass – adds a touch of glamour. Adjacent to the restaurant and bar is the cigar lounge complete with a state-ofthe-art humidor, housing a limited edition 1844 cigar from the year of Baur au Lac’s opening.

Positioned as a destination in its own right, the F&B venue has been meticulously thought through to create a memorable experience. The restaurant serves grill room classics with modern twists, including signature dishes like sepia linguine, lobster and Datterini tomatoes, and sole meunière. Reflecting modern tastes, the menu also offers an array of vegan and vegetarian options, such as ravioli with spinach, almond ricotta and black truffle.

The same attention to detail has been applied to the drinks selection, which features internationally inspired cocktails like Bavarian Spritz and Rubis Sour, as well as gently twisted classics and digestifs. Add in the expertise of award-winning Head Sommelier Marc Almert and sister wine trading company Baur au Lac’s Vins and the result is a stylishly reimagined brasserie that embodies modern hospitality whilst retaining its historical pedigree.
