Some pairings feel inevitable, like they were always meant to be, and then what follows is pure magic.

A little bit of that alchemy took shape when Manchesterbased chef Mary-Ellen McTague was introduced to the team at Starwood Hotels, formerly SH Hotels & Resorts.

Robbie Bargh of London-based hospitality agency, Gorgeous Group, played cupid, recognising from the start that McTague’s culinary vision aligned perfectly with Starwood’s commitment to sustainability, responsible sourcing and innovative hospitality. “It was a natural partnership,” says McTague, speaking from the resulting venture within the long-awaited Treehouse Manchester, the second UK property from Starwood’s playful, natureinspired brand. The venue’s name, Pip, is a nod to a kernel or seed, which mirrors its first-floor positioning at the base of the ‘treehouse’, as well as the bountiful feeling of fresh potential as each season comes and goes.

This is a restaurant with sustainable cooking at its core and the first of several F&B venues to take shape at the hotel. Its top floors, designed by Blacksheep, are soon to be under the jurisdiction of local DJ and hospitality duo, Luke Cowdrey and Justin Crawford, in collaboration with chef Sam Grainger.

“This dish was inspired by an intention to elevate plant-based ingredients within desserts,” explains Canella. “We really want to place them at the forefront of the pastry experience.” The resulting dish, conceived in collaboration with Pastry Chef Alessandro Attanasi, is a potato cannolo, generously filled with velvety Chantilly cream made with pecan nuts and miso. The creamy structure is complemented by a smooth scoop of rich coffee ice cream and a crunchy miso crumble that adds a textural contrast to each bite. A striking geometric plating style is rounded off with a neat dusting of beetroot powder in a rectangular shape.

Key to the dish is the bold interplay of every flavour. “For the ice cream, we use a Rotavapor to distil the coffee,” Canella explains. “It concentrates the flavours, intensifying the overall taste profile of the dish.” For this reason, the standard of each ingredient is of utmost importance. “Everything is sourced from local suppliers, ensuring freshness,” the chef concludes. “We also prioritise sourcing the finest raw materials from across Italy.”

“What if you could paint an entire city?” asks Hideyuki Saito, Director of Bars. “We’ve turned that childhood dream into a reality, blending vibrant graffiti with street art photography captured on my travels around the globe.”

Each cocktail encapsulates the distinct spirit of locations such as New York, Barcelona and Havana, while hand-drawn artwork by tattoo artist Haruka Sasaki adorns the menu.

Aromatic Banana Wine stands out as a playful creation, inspired by Saito’s discovery of a traditional Japanese spirit on a trip to Kyushu. “The barley shochu has distinct notes of tropical fruits, so we blended this flavour profile for a sophisticated banana wine cocktail - without using actual banana,” Saito explains. The libation combines rum and white port with tonka bean, cacao pulp and clarified milk, accompanied by a splash of mirin. The ingredients are left to macerate for 24 hours, then filtered for a smooth, clarified result. The final flourish is an aromatic vanilla mist. “For the guest, the experience begins with a gentle vanilla smoke, leading to an evolving, layered flavour,” Saito concludes. “This cocktail stands out for its almost perfume-like aroma - it is unexpected yet beautifully balanced.”
