In the basement of this home, the homeowners wanted another warm and inviting space that felt like “home” for their family and friends. What looks like a wet bar is actually a fully functional kitchen with a refrigerator, full-size pantry, range,

DISCONNECT to RECONNECT BY JULIE HAYS

In 2024, I want to put my phone down more. Sounds like a simple goal but if it was that easy half of Americans wouldn’t admit they have a phone problem.   Just look around. In restaurants. At family gatherings. At work. At home. In groups and alone. We are all sitting around lost in devices, and I’m not judging. I’m just as guilty, but as we enter a new year, I want less screen time.    We all have our reasons or maybe it’s excuses. For me, it’s that the news never stops. There’s always an email to send, a text to return, a story to break or a lead on social media to follow. What starts with good intentions turns into hours of getting lost in videos, stories, pictures and statuses that have nothing to do with me. Or, more importantly, my family.   Raising three young kids, I’ve grown to appreciate that time is a gift and that the saying “don’t blink” couldn’t be truer. Since I can’t bottle it up, I want to maximize my time in the best ways possible, and I’m confident it’s not on my phone.   My oldest child is about to be a teenager, and I know she’s watching. I want to set an example for my kids about the big responsibilities that come from such a small device. It’s a constant balancing act.   Everything about phones isn’t bad. They have lots of features that enhance our daily lives. Things like knowing where family is at all times, keeping up with friends and family on social media, and professionally it’s made work on the go so much easier.

It is a way to feel connected, yet in many ways I’ve never felt more disconnected. Disconnected from good old fashioned quality time. Disconnected from an actual conversation with friends that I’ve replaced with quick text messages or comments online. And disconnected at times from my kids and husband who have to

ask me a question twice because they can tell I’m distracted by the tiny screen in front of me.    So, here’s to more quiet time in the new year. Here’s to silencing notifications and setting boundaries. And here’s to disconnecting with my phone so that I can reconnect with those I love the most throughout 2024. MODERN TEXAS LIVING | 25

SCOTT DREW BAYLOR BASKETBALL COACH

The upcoming season may be Scott Drew’s 21st as head coach of the Baylor men’s basketball team, but it will be his first season as a member of the Texas Sports Hall of Fame. After spending the last 20 years rebuilding the program from the ashes of scandal, last season he brought home Baylor’s first national championship and Big 12 title in school history.   “Great staff, great players each year, great administration and great fan support helped us develop a winning program, but it’s about more than just the wins and losses,” Coach Drew said. “At Baylor University, we are about preparing champions for life through character formation, academics and spiritual growth. We want to see our players graduate and become great husbands and fathers that impact their communities. We want to see them and their families in heaven one day. Iron sharpens iron each day. My staff also helps me to become a better husband, father and coach.”    After reaching this pinnacle in the program’s history, he was conducted into the Texas Sports Hall of Fame and published his own book, Road to J.O.Y., telling his story of “leading with faith, playing with purpose and leaving a legacy” while keeping your priorities in order — Jesus, others, then yourself. “Between recruiting, fundraising and parenting, coaches at the Power Five level are CEOs of small companies,” Coach Drew said. “Most parents might have two or three children at home, but we have 15 kids we are parenting in our program — 13 scholarship players, two walk-ons and 14 graduate assistants. We have a very big family!”    In addition to his Baylor basketball family, Coach Drew and his wife Kelly started their own family here in Waco during his 20-year tenure — Mackenzie is a sophomore at Baylor, Peyton is a sophomore in high school and Brody is in the sixth grade. “Growing up in a coaching family, I have lived here longer than anywhere else,” Coach Drew said. “The fact that we have so many great friendships and people that have supported us through the good times and tough times are what make Waco so special.”    Being raised by and starting his career with his father, Coach Homer Drew, allowed him to learn about this business and become successful. In fact, as he enters the hall of fame, he joins his father and brother, who are hall of fame basketball coaches, and his sister, who is a hall of fame basketball player. “My dad was always a better father than a head coach which is the most important thing to me,” Coach Drew said.   Coming off the ultimate winning season, Coach Drew is hoping for more parades and more championships in the future, but, most importantly, he looks forward to impacting the young people that God puts in his path.

After working in corporate retail in Dallas for 30 years, Terry Flick hand-picked Waco as the location for his personal business venture — Republic Gun Club. The planning for an indoor gun range began in 2017 and was four years in the making. He intended to run the business from Plano, where his wife had a successful chiropractor clinic, but the people of Waco inspired them to make some changes; his wife plans to sell her clinic in Plano, move to Waco, and open a new clinic across the highway from Republic Gun Club.    “We are diving head first into this community because of the impact it has made on our lives,” Terry said. “Even before we moved down to Waco, we felt the ‘big town, tight community’ vibe that just doesn’t exist in the DFW metroplex. There is a real connection between people, and it seems everyone knows one another. Ultimately, what we love the most is that this is a faith-based community.”   Terry saw an opportunity in the competitive shooting industry’s lack of high touch customer service. After traveling the country and visiting ranges and firearm retailers, he knew his goal was to provide service that was second-to-none and exceeded expectations. After a slow process through planning, clearing regulations and building during the pandemic and 2021 snowstorm, Republic Gun Club opened in October 2021.    Even though the business has been successfully running for over two years, Terry and his team are constantly adding value for guests and members to continually elevate the experience. They recently added a member loyalty program and are currently on-boarding several law-enforcement departments and school guardian programs that will utilize the facility for training.   “We really want each and every person to leave with the sense that this is truly ‘your home on the range,’” Terry said. “We want to shatter the poor customer service mold that this industry has sadly established. We want to be the destination for everyone looking for some exciting fun and every business seeking a place for team bonding. We strive to be known as the unique event venue that everyone talks about for years to come.”   In addition to his tremendous gratitude to God and his family, Terry is grateful for the impact that local people have had on his life and business — people like Roger Schmitt, professor for the Baylor University Law School, who took him under his wing instantly; Sam Brown, senior vice president of commercial business development at First National Bank, who helped him form countless connections; and Jeff Hatton, pastor at Redeemer Presbyterian Waco, who shares God’s message with him weekly. Because he knows this community has given so much to him, Terry prioritizes giving back to the community through events like their car show, which benefits Meels on Wheels.

Matt Fatheree, a trailblazer, shares insights into his remarkable journey where family bonds and business ventures seamlessly converge.   For over two decades, Matt and his wife Tiffany have navigated the joys and challenges of life while raising two children—Cason, a freshman at Baylor, and Addison, a junior at Midway High School. Their family narrative not only paints a portrait of love and connection but also intertwines with the captivating story of their entrepreneurial pursuits.    Influenced profoundly by his father, Matt’s career trajectory began at Wardlaw Claims Service before diving into entrepreneurship. He founded and later sold the successful insurance claims company, 470 Claims, guided by his father’s ethos of hard work and self-reliance.    The Fatheree family faced a significant test in February 2020 when Matt experienced a massive stroke. This lifealtering event became a turning point, propelling him towards a renewed focus on family and health. With a resilient spirit, he relearned basic life skills and embraced a new lease on life, fostering even stronger bonds within his family.    Navigating business and family, Matt and Tiffany embarked on ventures that have left an indelible mark on Waco. What began as Jute, a home décor business in 2010, evolved into The Findery in 2015—a testament to their commitment to creating unique experiences for the community. In 2022, they assumed sole ownership, expanding with a boutique and interior design services.   Simultaneously, Matt’s entrepreneurial spirit thrived in the insurance industry, culminating in the success of 470 Claims. However, in 2021, he made the strategic decision to sell the company, allowing for a recalibration of priorities.    The latest chapter in Matt’s entrepreneurial journey is The Butcher’s Cellar, a restaurant dream realized. Unfazed by the challenges, he seized the opportunity to bring a unique culinary experience to Waco. The Butcher’s Cellar is poised to become a gastronomic haven, promising to elevate Waco’s dining scene with its innovative approach to cuisine.    In the day-to-day rhythm of overseeing The Findery and The Butcher’s Cellar, Matt remains deeply engaged in community activities. Board memberships and involvement in local organizations showcase his dedication to enhancing Waco’s vibrancy.    As Matt reflects on his journey, he emphasizes the importance of community support for local businesses. His vision extends beyond personal success, aspiring to make Waco a culinary destination like no other in Texas. TRANNIE ANDERSON SONGWRITER   On a routine morning in Nashville, fourth generation Waco local Trannie Stevens Anderson was songwriting with her friends Dallas and Lainey Wilson when “Heart Like a Truck” was born.   “The songs and encounters that have lead to the most lifechanging events for me have felt like normal, everyday moments,” Trannie said. “I try to be faithful in every single moment since I never know which ones are going to be bigger and more important than I ever dreamed possible.”    In September, Trannie won the NSAI Song of the Year award for “Heart Like a Truck.” She was also nominated for the CMA Song of the Year award.   “The chances of ever winning Song of the Year are so slim because there are so many amazing songs coming out of Nashville every year,” Trannie said. “Performing on the historic and iconic Ryman Auditorium stage alongside my best friend Dallas with my family, friends and the biggest country stars in Nashville in attendance is something I’ll never forget.”   Trannie’s love for songwriting began in Waco when she was only seven years old, sitting at her family’s piano. As she began writing songs, her first teachers were local musicians and worship leaders — Gary Rhodes and Chris Wommack.   “Texas really impacted my songwriting and the perspective I craft from,” Trannie said. “I love how family-oriented, grounded and kind the Waco community is. I’m proud to call it my hometown because it taught me to appreciate the simple joys in life. Waco is full of good people who work hard, treat others right and love Jesus.”   Trannie attended Midway High School and began studying entrepreneurship at Baylor University in 2011. She spent the next four years starting a band, releasing music and performing locally at Common Grounds, After Dark and other campus events. After graduating in 2015, she moved to Nashville to pursue music fulltime, where Lainey Wilson became one of her first friends.   “Music made me feel known and understood when I listened to it,” Trannie said. “I craved creating it myself and helping other people feel that way. Writing a song is like making an imprint of your own heart and showing it to someone else in hopes that it might make theirs a little more whole. It’s truly a sacred process and the right idea with the right people on the right day can legitimately change the world.”   Trannie signed with Sony Music Publishing in 2018, allowing her to connect, grow and rise up with the next generation of Nashville artists, producers and songwriters. She has written with and for artists like Dan + Shay, Cole Swindell, Gabby Barrett, Nate Smith, Reba, Pentatonix, Meghan Trainor and Lauren Alaina.   “I’m grateful to do what I love for a living, to love an amazing man who inspires me, for the fellow dreamer and cheerleader I have in my mom, for the best friends, and a platform to encourage others to chase their dreams,” Trannie said. “Even on the hard days, I know I’m lucky. Madison Prewett, known for being a finalist on Season 24 of “The Bachelor,” is now living in Waco with her husband, Grant Troutt, and launching her second book — The Love Everybody Wants.    When Madi got the call to be on “The Bachelor,” she did not know that her friends had submitted an application on her behalf. After spending time in prayer and discussing it with her family, she agreed to be on the show.    “I had no idea what to expect or what was going to come from it, but I felt God calling me there, so I went into it with an open mind and heart,” Madi said. “The experience itself had a lot of highs and lows, but I’m so grateful for what I’ve learned along the way, who I’ve become, and how God has used it. Although I didn’t meet my spouse on the show, it indirectly led me to meeting my husband today, and I’m so grateful for it all.”    A year and a half after the show, Madi met Grant on a blind date in Dallas, and the rest is history. The couple moved to Waco when Grant was offered the position as the young adults pastor at Harris Creek Baptist Church.    “At first, I was really hesitant about the move, but as we continued praying, we just felt so much peace and felt God calling us here,” Madi said. “We’ve been here about a year, and we are so happy! Waco truly feels like home to us. Life in Waco has been exactly what we needed. We immediately got plugged into the community through Harris Creek, and those friends have become family. We have really been able to experience what the local church and community was created to be.”    In September, Madi launched her book, The Love Everybody Wants, in which she proclaims that the love you’ve been looking for is a love that’s already yours — not from a significant other or spouse but from our Savior.    “When we look to people and worldly things for what only God can give us, we’re going to stay striving and searching,” Madi said. “I started writing this book while I was single and somewhere along the way I met my now husband, Grant. By the grace of God, I had the opportunity to write this book on relationships from different relational vantage points — from single and struggling, to dating and evaluating, to navigating engagement season, and now being a wife.” Pick up a copy of Madi’s book and the accompanying Bible study to get a deeper glimpse into her message! BRONDA HAYS UNBOUND NOW | DIRECTOR OF OPERATIONS   Bronda Hays is a Waco native that spent most of her career in the healthcare industry, but, after hearing Unbound Now Founder and CEO Susan Peter speak at a conference, she found a passion for human trafficking advocacy. She volunteered with Unbound Now for six years before she had the opportunity to enter the nonprofit sector, help drive the mission to end human trafficking and serve as the director of operations at Unbound Now.    “I could not believe what was happening in our community and around the world,” Bronda said. “I felt a tug at my heart to jump in and help. Hearing stories of people being exploited and sold for someone else’s financial gain blew my mind.”    Unbound Now is a global nonprofit supporting survivors of human trafficking and providing community resources to fight human trafficking. Bronda oversees local programs focused on prevention, outreach, fundraising, volunteer organization and survivor advocacy.    “It takes our whole community to fight this,” Bronda said. “Watching our community come together sometimes brings tears to my eyes. Waco is such a collaborative city, and our community partners come around the table and fight for the one. It doesn’t matter who gets the credit. We are here for the people that we serve.”   Survivor advocacy is one of the missions that Bronda holds dear and takes place at The Reagan House, a shortterm placement home where girls who have been sexually exploited can heal.   “The most rewarding parts of my job are watching the advocates serve alongside the survivors and hearing the stories of the survivors getting their life back! I love spending time with the young ladies who live at The Reagan House. They become a better version of themselves everyday, and it makes my heart so happy to be a part of it.”   Bronda leads the local Unbound Now team alongside Executive Director Kristi Hayes, to whom she is, ironically, not related. Watching the team grow and become versions of themselves inspires Bronda to be a better leader.   In addition to her role at Unbound Now, Bronda is also involved with the Antioch Community Church, Junior League of Waco and the Alzheimer’s Association.

Before

After struggling with her own weight most of her life, Meredith Huston lost 120 pounds and now helps other women all over the world accomplish their nutrition and fitness goals — all from her home base in Waco. After multiple health concerns, her journey started because it had to. “One Thursday morning, on August 1, 2019, I took my first step,” Meredith said. “Even when I took that step, I didn’t know what the next one would be. There was no game plan, no guidance, no experience — it was just me and the confidence I had pulled from deep within myself. Not only did I rediscover myself, but I became and grew into the person I was always meant to be.” Only 50 pounds into her 120-pound weight-loss, Meredith started documenting her journey on TikTok, gaining 500K followers. Three years after taking her first step, she launched her fitness program as a part-time job, hoping she would be able to help other women. Only five days after launching the program, she decided to step away from her career as a hair stylist to coach full-time. 5 strips thick cut bacon 2 large boneless skinless chicken breasts ½ cup vegetable oil for frying Chicken Dredge ½ cup all-purpose flour ¼ cup breadcrumbs, plain or Italian 1 tsp seasoned salt ¾ tsp black pepper Gravy 4 tbsp butter 4 tbsp flour 2.5 cups chicken broth 1 beef bouillon cube or 1 tsp beef Better Than Bouillon ⅓ cup half and half 1 tsp low sodium soy sauce (or Worcestershire sauce) 1 tsp onion powder 1 tsp garlic powder ¼ tsp dried thyme ¼ tsp dried rosemary ¼ tsp ground sage 2-3 drops Kitchen Bouquet, optional

 Remove the oil from the pot, but leave any

plate and toss to combine. Set aside. Measure out gravy ingredients prior to beginning.  Fry bacon over medium-low heat until crispy on both sides. Remove from pan and pour grease into a heat-safe bowl. Reserve 2-4 tablespoons of bacon drippings. Wipe pan.  While the bacon cooks, slice each chicken breast in half lengthwise to create two thinner slices. Place saran wrap over them and use a meat tenderizer to pound them to about 3/4 inches thick.  Wipe the chicken dry and coat generously in the dredge mixture.  Add the reserved bacon drippings to the clean pan and enough vegetable oil to cover the chicken by half. Then heat the bacon and oil over over medium-high heat. Once heated and glistening, add the chicken. Fry two at a time for 4-5 minutes per side until they have a nice golden sear. Set aside on a plate.

Sprinkle the flour gradually, whisking continuously, until a paste forms.  Add the broth and half and half in small increments, whisking constantly. It will thicken up in between each splash of liquid.  Slowly add the beef bouillon, soy sauce and seasonings.  Bring to a gentle boil, then reduce to a simmer. Add a few drops of Kitchen Bouquet if a darker color is desired.  Add the chicken back to the pan along with any juice from the plate.  Chop up the bacon and add it to the top of the chicken.  Cover partially and cook over low heat for 10-15 minutes. The internal temperature of the chicken should reach 165 degrees prior to serving.  Garnish with parsley and serve with mashed potatoes.

Rice 1 cup uncooked white long grain rice 2 cups chicken broth Sauce ¼ cup soy sauce ¼ cup chicken broth 1 tbsp honey or brown sugar 1 tsp hot sauce ½ tsp sesame oil, optional 1/8 tsp ground ginger Stir Fry 1-2 tbsp oil (peanut, olive or canola) 1 lb. uncooked shrimp ¼ tsp paprika 1 tbsp butter 2 eggs, whisked well ½ cup dry white wine 3 cloves garlic, minced 1 small yellow onion, finely diced ¾ cup frozen peas ¾ cup frozen carrots 3-4 green onions, diced

This makes the rice extra fluffy, and allows any rice stuck to the bottom of the pot to release naturally. Refrain from stirring as this will release starch and make it sticky.  Spread the cooked rice out on a tray and transfer to the fridge to allow it to cool completely (the longer the better). A dry consistency is best for fried rice. The rice is actually better if made ahead and refrigerated for 1-2 days.

Increase heat to medium-high and toss continuously for about 3 minutes, until the rice is brown from the sauce and most of the liquid from the sauce is absorbed.  Reduce heat to medium and add the shrimp, eggs, and green onions and toss to coat and heat through. Remove from heat and serve!

INGREDIENTS

1 pound ground sausage (regular, hot or mild) 2 tbsp butter • 1 small yellow onion, diced ½ cup carrots, diced • 2 ribs celery, diced 3 cloves garlic, minced • 3 tbsp flour 1 tsp hot sauce • 1 tsp Worcestershire sauce 1 tsp dried basil • 1 tsp dried parsley ½ tsp oregano • ½ tsp mustard powder ¼ tsp pepper 6 cups low sodium chicken broth 2 cans (15.5 oz) pinto beans, drained but not rinsed 3 cups spinach • ¼ cup heavy cream, optional Freshly grated Parmesan cheese, optional for serving

INSTRUCTIONS

 Preheat a large pot over medium heat. Add

the sausage and cook and crumble to break it apart. Once cooked halfway through, reduce heat to medium-low and cover partially (this is the best way to ensure

you get drippings). Continue to heat, stirring occasionally, until cooked through. It will take around 10-12 minutes total.  Set the sausage aside on a paper towel lined plate. Reserve 1 tablespoon of drippings. Use butter if you don’t have drippings.  Add the drippings to the pot along with the butter over medium heat. Add the diced onions, celery and carrots and cook for 4 minutes. Add the garlic and cook for 1 minute.  Add the flour and cook for 1-2 minutes to remove the raw flour taste.  Add the hot sauce, Worcestershire sauce, seasonings and beans. The mustard powder and hot sauce are so subtle in this soup, but they enhance all the other flavors! You may be hesitant to add them, but we recommend you try it!  Add the chicken broth and use a silicone spatula to “clean” the bottom of the pot, this will add more flavor to the soup. Bring to a boil, reduce to a simmer. For even

more flavor, add the rind from a block of Parmesan or Romano cheese when you add the broth and let it simmer and flavor the soup. If any remains at the end of cooking, it can be discarded. This will add salt to the soup.  Simmer for 20 minutes, then add the sausage back. Simmer for 15 more minutes, then add the spinach and let it wilt for 2-3 minutes.  Stir in heavy cream if desired. Transfer to serving bowls and top with grated Parmesan cheese. Crockpot Method: Let the diced onions, carrots, celery and garlic cook on high in the crock pot with butter and meat drippings. Add the cooked sausage, hot sauce, Worcestershire sauce, seasonings and chicken broth. Cook on high for 3 to 4 hours or on low for 6 to 7. Add the drained pinto beans during the last 45 minutes. Add the spinach and let wilt, 3-5 minutes. Turn heat off and slowly stir in the heavy cream, then serve!

 Pulse the Oreos finely in a food

processor until they form fine crumbs. Set about five Oreos aside if you’d like to top yours with crumbled Oreos.  In a large bowl, mix together the melted butter and the Oreo crumbs.  Spread the Oreo mixture onto the bottom of a 9x13-inch pan and press down to form a firm crust.  Beat the cream cheese with an electric mixer in a large bowl until smooth.

 Add half of the Cool Whip, the peanut

butter and the powdered sugar. Beat on medium-high until smooth.  Spread it over the Oreo crust.  Combine the cold milk and instant pudding. Prepare it according to the package instructions. Spread it over the pie once set. Top with the remaining Cool Whip.  Decorate the top with crumbled Oreos or chocolate shavings.  Chill for a couple of hours before serving.
