The Center for Disease Control and Prevention declared this season’s influenza an epidemic as the aches and fevers spread across country.

The flu, a respiratory virus, rears its ugly head through a multitude of symptoms including fever, cough, and sore throat, and poses a greater risk to young children and pregnant women.

While vaccines prove to be the most effective way to prevent the ill- ness, simple precautionary measures will also help fight off the flu.

WASH YOUR YOUR HANDS H It may seem too easy, but washing your hands with soap and water for 15 seconds or longer helps stop germs from spreading.

Germs linger everywhere from handrails to tabletops so wash your hands, as well as your children’s, as often as possible. Opt for antibacterial hand sanitizer if you can’t always get to soap.

GO TO BED Your body can’t fight sickness as effectively when it’s tired so during flu season make a conscious effort to have your entire household in bed at a decent hour.

While you’re resting, your body will recover and rally against any lingering viruses.

EAT HEALTHY Hopefully, fruits and vegetables are part of your family’s daily diet, but it’s wise to pack in a few more nutrients than normal when the

A smaller cousin of the breakfast burrito, the breakfast taco made with reduced-fat Cheddar and egg substitute is a satisfying and healthy breakfast option.

Pizza’s not just for dinner! Here we combine two kid favorites - mini pizzas and scrambled eggs - for a breakfast treat adults and kids will both love.

Ingredients 2 corn tortillas 1 tablespoon salsa 2 tablespoons shredded reduced-fat Cheddar cheese 1/2 cup liquid egg substitute, such as Egg Beaters

Ingredients 1 large egg, beaten 2 tablespoons prepared marinara sauce 1 whole-wheat English muffin, split and toasted 2 tablespoons shredded Italian cheese blend 2 slices pepperoni (optional)

Preparation Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds.

Meanwhile coat a small nonstick skillet with cooking spray. Heat over medium heat, add egg substitute and cook, stirring, until the eggs are cooked through, about 90 seconds. Divide the scrambled egg between the tacos.

Preparation Preheat oven or toaster oven broiler. Coat a small nonstick skillet with cooking spray and heat over medium-high heat. Add egg and cook, stirring often, until set into soft curds, 1 to 2 minutes. Spread marinara sauce on English muffin halves. Top with the scrambled egg, cheese and pepperoni (if using).

22nd Emerald Isle St. Patrick’s Day Festival, March 16 Hailed as the gem of the Crystal Coast, Emerald Isle highlights its Irish roots during the island’s largest event of the year. More than 75 vendors, crafters and exhibits welcome visitors from across the country to enjoy amusement rides, live entertainment and other family-friendly activities. GO TO THE BEACH Hammocks Beach State Park in Swansboro was a well-known segregated beach for minorities in the days before the Civil Rights Act took place.

In May of 1961, black families were limited to Hammocks Beach. Families gathered after churches, parties and important milestones to enjoy time with one another in a protected area, where they were free from the harsh words of anti-segregationalists. For three years, Hammocks Beach State Park was protected by an AfricanAmerican Teacher Association, who began the process of making it a recreational area by clearing trees, keeping it clean and making it a comfortable place for families. After the Civil Rights Act passed in 1964, Hammocks Beach State Park opened to all.

MAKE A SCAVENGER HUNT The Onslow County African-American Heritage Trail tells the story of black history in coastal North Carolina. Prepare a day trip on a Saturday and take a drive with your family, making stops along the way. Do a little planning ahead of time and make a scavenger hunt list.

Give every member of your family a digital camera and tell them to take pictures of something they find interesting everywhere you stop. Go to the Verona Loop Cemetery, a burial site originally designed for African-American service members. Visit Belgrade Community Center in Maysville to take a look at how African-American families nurture one another in times of need. After spending the day immersed in history and culture gather your family in the living room or kitchen and talk about your favorite parts of the day. Make a scrapbook of your family time and encourage your kids to write information on any black history they learned during your excursion. F

rom time to time business, or the call of duty, can send a parent on a trip away from home.

For children, adjusting to the extended absence of a parent can be especially stressful and hard to handle. Prepare your family beforehand to make the transition as easy as possible.

Be transparent Don’t keep the trip or deployment a secret, but also don’t make a big deal of it. Focus on making memories, cards or videos to last through the duration of the separation, especially if it encompasses holidays or birthdays where a parent’s absence may be felt the most.

Communicate Staying connected is important, whether the trip lasts a few days or few months. Technology has made staying in touch easier with programs such as Skype. Encourage your children to share their feelings and reassure them.

Educate As always, a business trip provides a perfect op-

portunity to educate your children about the world around us. Check out books from the library about the location beforehand and spend time familiarizing your children about where their parent will be visiting. Send postcards back and forth to each other and point out on a map where they are.

Lastly, remain optimistic and continue to live day to day life as normal as possible. Have some fun projects for children to look forward to – a countdown calendar or creating a care package together to send, for example.

For service members and their families, there are many resources available through base to help children cope with the stress of deployment.

The Focus Project, for example, (focusproject.org) “provides resilience training for military families facing the challenges of a family member’s deployment during wartime”. Counselors can make house calls to help equip families with the tools they’ll need for the extended absence of a parent due to deployment. enioritis. It’s a dangerous disease. It won’t show up in blood work and no doctor will write a prescription, but it is a very real illness many teens battle on a daily basis.

For many high school seniors, the temptation to succumb to senioritis is appealing. The SAT is a thing of the past, college applications are done, and acceptance packets are filling mailboxes on every corner.

After three-and-a-half years of high school, it’s not uncommon for high school seniors to want to lean back and relax. After all, they’ve already been accepted to college. Why waste anymore time in high school?

Helping your teen combat senioritis is a challenge, but crucial, task. Students’ minds are focused on the future, and it’s easy to neglect the present. However, as most colleges ask for final transcripts, the grades of a second-semester senior are just as important as any other grade.

Don’t be afraid to remind your teen that while they are living under your roof, they are still living by your rules. Homework, schoolwork and classroomreadiness come first. Breaks for Students STORY BY JESSIE HEATH Nobody likes to do taxes, but for parents of students preparing for or currently enrolled in a higher education program, understand tax incentives and the tax code can be a financial lifesaver.

The tax code provides a variety of tax incentives for families who are currently saving for or paying the cost of higher learning. It also incorporates a tuition deduction for independent students who are seeking higher education.

The Hope and Lifetime Learning Credit can be used for tuition and related expenses of students who are enrolled in educational institution. Each credit approved will come with its own set of unique rules, but

is sure to help your family save a little more. If you claim a Hope Scholarship Credit for a particular student, that student’s expenses will not be applicable to their Lifetime Learning Credit account, so choose wisely.

For families currently paying back student loans, the Tax code offers several deducted interest options. If student loans are canceled, tax payers may not have to include any amount in the income, depending on the deducted interest. Since the deduction is claimed as an adjustment to income, these families do not have to itemize their deductions on Schedule A Form 1040.

Generally, the amount provided through scholarships and grants is put on the same line as wages, salaries and tips. Every tax form will provide further explanation on incorporating scholar-

If you are the parent of a great wanderer and your child is abroad, tax forms must be filed in a different manner. While your child may still be eligible for higher education expenses, if they are filling out their own tax forms as an independent, they must be prepared for a little extra work. Overseas patriots are allowed a 2-month extension on their tax forms, but must be sure to express all amounts in American currency.

Most of them are admitted because they have been separated from their mothers. Some little ducklings are more adventurous than others and swim off away from mom, and then can’t find her again. Others may be chased away from the rest of their family by an animal and the mom cannot find them. Either way, a single duckling will not survive without care, because they need

their mother to keep them warm and safe.

People think the first thing you should do with a duckling is to put it in water – not true! The little babies are soft and cuddly because they are covered with down. It keeps them warm, but not dry, so that if they get wet and chilled, they can die very quickly. In fact, when we are caring for them when they are very tiny, they do not get a bath until they are several weeks old. This prevents them from getting chilled

Ducklings can grow very quickly when they are fed the right foods. They start off on a crumbly diet of food made especially for waterfowl (ducks and geese) which provides all the protein they need to develop strong bones and feathers.

When their feathers start coming in, we can let them have a nice long bath to practice swimming, diving, and lots and lots of splashing. Ducks are happiest when they have fresh water to play in!

If you ever consider getting a duckling as a pet, you should get two because they prefer company. Ducks are social animals and enjoy having others around. If you ever saw a mother duck with her babies out taking a walk, you saw how many babies there were – many brothers and sisters to all play together.

The mother duck is very protective of her babies and will try and chase away anything she thinks could hurt them. It

doesn’t matter that you are not trying to hurt the ducklings; if you get too close, she will run at you with her head down, her wings stretched out, and try and bite you. Even though ducks don’t have any teeth, the can give you a hard pinch that can hurt. The best thing to do is

Learning to brush their own teeth is a lesson all children must master. Although parents ultimately may have children who become proficient at brushing their own teeth, getting them to floss is generally more difficult.

The National Health and Nutrition Examination Survey from the Centers for Disease Control and Prevention found that 41 percent of children aged 2 to 11 had tooth decay in their first teeth. Dental caries are common among children, likely because they have not become proficient at taking care of their teeth.

Soft, sticky foods are commonplace in young kids’ diets, and these can promote decay. Even well-intentioned gummy vitamins can be sources of dental decay. Oftentimes, these foods become lodged between the teeth or on the surface of molars. If left in contact with the teeth for too long, food particles become a source of carbohydrates for oral bacteria, and cavities may appear as a result.

It’s recommended parents help their children to floss as soon as two teeth are touching and continue to do so until the child is around the age of 8, when a child should have enough dexterity to do it on his or her own.

Flossing is essential to making sure children do not experience cavities at an early age, and it can establish practices that promote oral health throughout life. Despite being so important, many parents fail to encourage flossing or are at a loss as to how to make it enjoyable and effective.

Although regular dental floss is one of the first tools for flossing, the dexterity required to wind the floss around little fingers and then thoroughly clean clean the teeth may discourages children.

The weather is nasty and you find yourself stuck inside with bored, energetic children.

You find yourself repeating the phrase, “stop that!” and are beginning to consider one-way tickets to grandma’s house. But all is not lost, including your sanity! Here are some ideas to get your kids out of bored mode and positively using their energy.

Cardboard boxes The old cliché about children ignoring the toy and playing with the box is very real! Crayons can be used to decorate the

boxes or you can cut doors and windows in larger boxes. No boxes at your house? Check the local appliance or furniture stores.

Play Hide And Seek Make sure to set the boundaries (i.e. stay in the house, family room only, etc.).

Make a fort Use chairs, sofa cushions, sheets, etc. Be prepared for the children to take up extended residence and want their meals served in their new “house.”

Provide pillows and blankets and they may even nap there!

Boogie to the music Put on some music and dance! Even a few minutes of dancing will expend lots of kid (and parent!) energy. For a variety, play “The Freeze” by having the kids freeze in place when the music stops. Play the

Sensory play Fill a large bowl, dish pan, or other child-friendly container with rice or sand. Add measuring cups, funnels, sifters, spoons, scoops, etc. Or use water—in a sink or the bathtub! Add a couple drops of food coloring to add interest. Not too much or you could have very colorful kids!

Infant Oral Exam The American Academy of Pediatric Dentistry and the American Dental Association recommends the first dental examination for your child occur around age one or within six months of the eruption of the first teeth. Helping boys become better readers Conventional wisdom has long intimated that girls are more adept at language arts and reading than boys of the same age. A recent study indicates there may be some merit to the assumption that boys tend to lag behind girls in reading. In order to bolster interest in books and reading comprehension, parents and educators can look to many successful literary series that tend to draw the attention of boys.

BOYS AND READING A 2010 study by the Center on Education Policy that looked at trends beginning from 2002 to 2008 found boys have been lagging behind girls on standardized reading tests in all 50 states. According to Jack Jennings, president of the Center on Education Policy, “We found no state in which

boys did not lag behind girls in reading at the elementary level, the middle school level and the high school level.

So it’s pretty clear: Boys are not doing as well as girls in reading.”

There are many theories as to why boys seem to eschew reading for other things. Some say that boys in general are always on the defensive, and reading -- which often calls to mind emotion and vulnerability -- is not something that boys would like to admit to doing.

Furthermore, schools heavily push classics full of fictional characters as the mainstay of literary curricula. However, research points out that boys tend to gravitate toward nonfiction. Others argue that boys do not have enough male literary role models. The majority of adults involved in shaping boys’ interest in reading are women, and boys might

Another theory as to why girls perform better on standardized reading tests revolves around brain function.

Girls’ brains tend to be more verbally oriented, which can make reading skills easier. Boys are more visually oriented. It stands to reason that boys are more physically restless than girls as well. Sitting for long periods of time reading can be challenging, even for an otherwise well-behaved male student. This was discovered as early as 1986 in an analysis of more than 100 studies by psychologist Warren Eaton and his colleagues at the University of Manitoba in Canada. The findings revealed that the average boy is more active than about 69 percent of girls.

CHOOSING MATERIAL Finding reading material to which boys will relate can be challenging. There is no blanket approach to finding the right books.

Boys may need to be approached individually to find subject matter that will interest them and take them out of their comfort zones.

Should schoolmates be viewed reading frequently, it may help other boys surpass their own reading fears and hurdles.

oda bread has become a staple of St. Patrick’s Day celebrations. But the tradition of Irish soda bread is a relatively recent one, especially when considering the extensive history of Irish culture.

In the 1800s, yeast breads were practically unheard of in rural Ireland. Yeast bread took a while to make and the results were not consistent to make it a worthwhile venture for many households. Instead, people began experimenting with baking soda as a leavening agent. Not only was it a quick way to produce the aeration necessary for bread,

the results also were more consistent than using yeast.

The first soda breads featured only a few basic ingredients in addition to the baking soda, including salt, buttermilk and flour. The bread was served often with fresh, churned butter. It is a recent change to the recipe to include other flavoring agents, like sugar, currants, caraway seeds, and raisins.

Although soda bread can be easily purchased at a bakery or supermarket, it’s more traditional to try to bake it at home. Here is a recipe for “Irish Soda Bread With Raisins,” courtesy of Epicurious. com.

IRISH SODA BREAD WITH RAISINS (Makes 1 loaf) 2 5 11/2 1 3/4 3 1 2/3

Nonstick vegetable oil spray cups all purpose flour tablespoons sugar, divided teaspoons baking powder teaspoon salt teaspoon baking soda tablespoons butter, chilled, cut into cubes cup buttermilk cup raisins

Preheat the oven to 375 F. Spray an 8-inch-diameter cake pan with nonstick spray.

Whisk flour, 4 tablespoons sugar, baking powder, salt, and baking soda in a large bowl to blend. Add butter.

Using your fingertips, rub in until coarse meal forms.

Make a well in the center of the flour mixture. Add the buttermilk, gradually stirring dry ingredients into the milk to blend. Mix in the raisins.

Using floured hands, shape dough into a ball. Transfer to the prepared pan and flatten slightly (dough will not come to the edges of the pan). Sprinkle dough with remaining 1 tablespoon sugar.

Bake bread until brown and when the tester inserted into the center comes out clean, about 40 minutes.

Cool the bread in the pan for 10 minutes. Transfer to a rack. Serve warm or at room temperature.

Expecting the Unexpected story by Emily Hanke Big developments in the Hanke house: I’m back in my pre-pregnancy pants! There is still a lot of work to do, but I’m so happy just to be back to this point. My entire life I’ve been blessed with a high metabolism and a body I was happy with. Pregnancy made me realize I was taking all of that for granted. Now I’m doing crunches, eating salads, and passing the cookie aisle without stopping.

I started running just 14 days after giving birth. I know, shame on me for not waiting the six weeks and I strongly caution anyone reading this NOT to follow in my footsteps. You could really mess your body up by pushing too far too fast. As a collegiate cross country runner, I felt up to doing a little working out and I did take it slow. I’m feeling pretty good about where I’m at now. It’s nice to see that my hard work is paying off.

Enough about me, though, this little ball of energy is six months old now

and really starting to develop a personality. Cora has been trying all of the finest selections Gerber has to offer and she is doing better every day with the spoon. When we first started with solid foods, she ended up wearing more than she ate. She may look just like her father, but she has a sweet tooth just like her mother. She will eat sweet potatoes and peaches, but she really likes when I dip her pacifier in chocolate syrup on the rare occasion I have a bowl of ice cream.

So along with being able to eat from the spoon, Cora has also learned to sit up, jump in the bouncy chair, and we are getting so close to saying mama!

Okay I made the last part up, but we are still working on it! Forest and I do agree we think her first word was “kitty” after our cat Remington sat on her lap.

She also had her first Christmas which was pretty awesome. She did surprisingly well with unwrapping

Creative fun for St. Paddy’s Day With overflowing spirits, pub crawls and boisterous parades, St. Patrick’s Day celebrations are largely geared toward adults.

Although children may experience a little bit of the festivities, they may not be able to participate fully in all of the activities.

That is why parents, teachers and caregivers can develop child-friendly activities that will enable children to enjoy the festivities of the day but also to do so in a way that is safe and age-appropriate.

One of the easiest ways to engage children for the holiday is to enable them to create

hand-made decorations and games that can be displayed.

With a few simple supplies, children can create a variety of festive items to share their enthusiasm.

An idea to get them started is to construct a rainbow and pot of gold complete with leprechaun.

To do so gather the following supplies: * poster board * clean, empty gallon milk container * crepe paper in rainbow colors and in black * gold foil circles * construction paper * glue * scissors * glitter, if desired 1. Draw and cut out a leprechaun using various shades of construction paper. Glue it to the posterboard.

2. Cut out half of the milk container to form a “pot.” Use glue to adhere black crepe paper to it. Attach to the posterboard.

3. Stick gold foil circles to form the “gold coins” that

will be filling the pot of gold.

4. Cut out pieces of crepe paper from the rainbow colors and attach to the posterboard to form the rainbow. Let the pieces end right near the pot of gold.

5. Allow kids to embellish further with glitter and any other things they may have on

hand.

Display the leprechaun with a pot of gold at the end of the rainbow in a prime spot during your St. Patrick’s Day celebration.

Have you ever had a friend that when you are around them you just feel good? They just have energy that when you see them they are just happy and it bleeds off to all the people around them.

What do they have? What makes them so happy?

My guess is that they are passionate and have a winning attitude. Now I know people that are passionate about something.

Some are passionate about their work, some about their sports, some in their relationship, and I’m sure some for other reasons.

All those things to be passionate about are great but one thing that trumps all of those is to be passionate about life. That’s a huge difference. When you’re passionate about life then that passion goes into all you do. The biggest thing that passion for life does is effect how you view and talk to yourself.

If you always look for what is going well, what is right, how good something is, you will focus on the positive and see things differently. This changes your attitude on everything you view. With that passion and positive view

you create a winning attitude. I believe one of the most important elements to success in the Martial Arts and life is to carry a positive attitude with you wherever you go. Here are a couple hints for us adults to pass down to our children: Look for the “can do” not the “cannot do” side of all situations.

Tell yourself to “remember” instead of “don’t forget”. A positive attitude is contagious. Find what is right about someone or something instead of what is wrong. Look at the bright side, because there always is one. Exercise and eat healthy. The better you treat your body the better it treats you. If you ask yourself what is wrong with you, your mind will

ooking for somewhere interesting to take your family this weekend, but don’t have the time for a long trip?

Eastern North Carolina is home to many interesting destinations that are fun for everyone.

Fort Macon State Park is open yearround and is admissions free. The remarkably preserved fort is located on Bogue Banks near Atlantic beach, just past USCG Base Fort Macon. Tour the fort and see the many rooms that have been decorated in the fashion of eras dating from the early 1800’s through the Second World War. Many of the 26 vaulted rooms have audio histories that are available on demand for the curious visitor, and there are also guided tours available. Kids and adults alike will love the cannons that can be found throughout!

The park also has a wonderful education center with information about the local beach ecology, including great interactive exhibits for kids of all ages. Everything from bird tracks and calls, seashell identification, and information on beach erosion is included! The education center is open from 9:00am to 6:00pm daily.

When you’re done exploring the fort, educational exhibits, and gift shop, it’s time to hit the beach! Fort Macon is surrounded on three sides by beach with easy access and free parking. Can you find any of the shells or plants you learned about?

Fort Macon is a great place for a fun low-cost weekend trip, and is easy to visit over and over again. There’s always something new to learn or see!

A kindergartener’s first day of school is a day to cherish. There are so many firsts to experience, from wearing a backpack for the first time to making new friends to riding on a school bus.

All of these firsts can be exciting and overwhelming at the same time.

For many youngsters, school marks the first time they are away from their parents for an extended period of time.

As a result, safety concerns -- especially concerning transportation to and from school -- is foremost on the minds of many parents. School bus safety is something that should be presented to children in terms they can understand.

Riding on a school bus is often a fun experience for kids, but the prospect of leaving Mom or Dad behind at the curb can spark mixed feelings. It is best to prepare students for the school

bus a few weeks prior to the first day of school to gauge their reactions and plan accordingly.

If the school district where you are living does not host a special orientation day for children entering kindergarten, see if you can arrange to have a bus tour by contacting a bus company in the area.

Here are some important topics to go over. * Walk to the bus using a sidewalk if there is one. If no sidewalk is present, walk on the opposite side of the street facing oncoming traffic. * Wait for the bus at the designated stop.

* Do not go into the street while waiting for the bus to arrive. * Do not roughhouse or run around with friends while waiting for the bus to arrive. * Wait for the bus a safe distance away from the street. * Do not push or crowd the doorway. * Once on the bus, quickly find a seat and sit down. * If there is a seatbelt, fasten it. * Do not put your head, arms or anything else out of the bus window. * Keep the bus aisle clear. * Keep voices down so not to distract the driver. * Listen to the driver. * Do not throw things on the bus. * Unbuckle your seatbelt only when the bus has stopped and the door is open. * Exit the bus slowly and do not push. * If you must cross the street when exiting the bus, do so in front of the bus so the driver can see you.

The first day of school may be full of new things, but children can acquaint themselves with school bus safety and grow accustomed to riding one each day.

It wasn’t until 1971, 17 years after the Brown v. Board of Education decision, that black students came to T.C. Williams High School in Alexandria, Va. Every other team in that footballloving district was still segregated. But the white T.C. Williams players were confronted with not only a whole new set of black players, but a black coach, Herman Boone (played here by Denzel Washington). In a matter of a few weeks, Boone has to make them into a team. It’s impossible to say which is the tougher workout for the team -- the physical challenges of drills and practices or the emotional challenge of overcoming a lifetime of anger and prejudice.

What parents need to know... Remember the Titans tells the inspirational true story about the struggles and victories of a newly-integrated high school football team in 1971 Alexandria, Virginia. As such, the film reflects the divisive nature of the times. The movie includes racist comments and situations and some locker room insults.

Ultimately, Remember the Titans is a deeply moving film about the courage of individuals and the power of sports to transcend perceived and ingrained differences.
