Our conventional meats are laced with antibiotics and harmful hormones. And worst of all there are genetically modified organisms in almost all of our conventional processed foods. The good news is a healthy organic diet can help protect us from and help reverse most of these diseases.

I know eating organic is healthier but it can be hard to afford.

Organic food is more expensive and partially because the biggest conventional crops are subsidized by the government, making them artificially cheap. Here at NBOM (New Bridge Organic Market) we work hard to keep prices as low as we can. Our prices are in line with the organic stores in Wilmington – including Whole Foods. We accept EBT and all manufacturers’ coupons.

We give our military friends a 5 percent discount every Thursday and put a discount coupon in our newsletter each week for anybody to use. Customers can save a lot by shopping in our bulk section which is currently at about 100 items. Finally, much

Where do you get your produce?

The local produce comes from several small farms in the area. Although none of these farms are certified organic all of the produce is natural and pesticide free. We get our milk from a small NC dairy that does not use hormones or antibiotics. Our beef, rabbit, and lamb come from local farmers who raise their animals humanely and naturally. We also sell local free range eggs and local raw honey.

What else should we know about NBOM? In 2013 we will continue to expand our product lines. We take our customers product requests and suggestions seriously. We are happy to special order products for customers and offer substantial discounts for products bought by the case. We also plan to open a juice and smoothie bar and a soup, salad and sandwich bar in the near future so be on the look-out for a new healthy place to have lunch!

Organic foods are better for you and they are better for the environment.

What do you mean by “better for you”? Are they more nutritious?

They actually are more nutritious and the only studies that have not proved it were the ones conducted by the pesticide companies. But there is much more to it than the concentration of vitamins in a piece of fruit.

Studies have concluded that the food supply in the US is hazardous to human health.

I do. Think about it. Over the last few decades there has been a definite correlation between the contamination of the conventional food supply and the rise in all kinds of diseases – obesity, diabetes, leaky gut syndrome, colitis, inflammatory bowel disease, autism, autoimmune disease, cancers, sexual dysfunction, ADHD, sterility, asthma, allergies and so on. When I was a kid, I had a "problem" with Christmas and my parents had to make rules to prevent me from attempting to celebrate all year round. A tradition of watching Albert Finney's "Scrooge" and listening to Johnny Mathis' "Merry Christmas" on the day after Thanksgiving was the result. Every year, I'd look forward to black friday when I could finally start my celebration.

Even though many years have passed and I don't often get to spend the holidays with my family any more, I still maintain this ritual.

As an adult, movies are still part of my traditions and for the past few years my boyfriend and I have made a new tradition of having a "Lord of the Rings: Extended Edition" marathon on New Year's Day.

Hillary Bratton, Design Manager We didn’t have any holiday traditions that were out of the ordinary, so I’ll share a fun anecdote. When I was very young, I thought I was a ninja. So it goes without saying that I knew my ninja skills would help me catch Santa Clause hurriedly arranging presents under the tree. In 1992 I hid under the lambskin rug in the family room of our tiny Bermuda cottage...waiting...and waiting... I must have laid there motionless for at least a WHOLE twenty minutes before I heard him. Thud. Thud. Thud. Walking down my hallway?

I sprung from my ingenious hiding spot and struck a sweet ninja pose while yelling “Hi-yaaaaaaaaa” at the top of my lungs.

Thought I could scare the old guy into dropping all the presents for me...

That was when I discovered my old man was filling in for Santa. But I never stopped believing I was a ninja...

Shannon Sanchez, Inside Sales In the Sanchez family, recipes and food traditions filled with love are passed down through the generations. Every holiday, a special dish the whole family decides on is prepared together. The day is spent together in the kitchen helping make the dish.

Just as any regular family we bicker and fought, but we bonded when it came to food. Cooking meals and baking deserts is what united the Sanchez family. Even if the cookies turned out to be a little on the dark side, not one person cared. The time spent together is what we cherish. May it be through game and movie night or Friday night football, these traditions kept the Sanchez family together through the years.

As a child, my mother always asked me what I wanted for dinner on every holiday. My father and mother either agreed or compromised with me on the meal and desert for that night. The dish was always from the Sanchez’s heritage background of Mexican and Italian. Enchiladas were made on Christmas Eve, Lasagna on Christmas, and Tamales were the choice on New Year’s.

When the meal was finished the family sat at the table, said prayer, enjoyed the food made with love, and shared storied and jokes for hours on end.

The air was always full of giggles and love. From Valentine’s Day to Halloween, cookies, cakes and pies of our choice were baked. Any leftover food from our family kitchen time was made into treat bags for our friends and neighbors. We always loved feeding others. Preparing meals and deserts together in the kitchen and enjoying them at the table after is what brought my family together through the generations. My mother followed these traditions as a little girl, and followed them with my brother and myself. I know I will carry these traditions down to my child. I see these traditions as a time to communicate and come together as huge, happy family like the Sanchez family.

Motivate your children to volunteer this holiday season olunteering is a great way for people to give back to their communities. It’s also a great way for parents to instill character in their children.

When kids volunteer, they learn lessons about responsibility while also learning how enjoyable it can be to help the less fortunate. Kids who volunteer early in life are more likely to do so throughout their lives, and that lifetime of service can be invaluable. The right volunteering opportunity for a child often depends on the child’s age, as some opportunities are better suited to

younger children while others are tailor-made for teenagers. The following are a few age-appropriate ideas that can help get kids excited about volunteering and giving back to their neighborhoods.

Elementary school children When kids reach elementary school, parents should introduce them to volunteering. Volunteering activities for school-aged kids should be simple, such as accompanying their parents to food banks where kids can help feed the homeless and less fortunate.

Kids with grandparents living in assisted living facilities can

nervous when accompanied by Mom and Dad. Middle school children When kids reach middle school, they might not feel it’s necessary for Mom and Dad to tag along as much. This is perfectly alright, and it’s a great time for kids to branch out and choose some volunteer activities of their own. Instead of accompanying kids to the food bank, let them work a shift on their own. Kids who have been volunteering since early childhood might have some volunteering goals of their own by the time they reach middle school, so don’t insist they continue with current activities if there’s something else sparking their interest. Kids might want to help an elderly neighbor around the house, such as shopping for groceries or taking care of their property. Encourage such ideas, and expect kids to want to exercise some independence when they reach middle school.

High school students High school students tend to

have busy schedules, but those who have been volunteering since childhood will likely find a way to continue doing so.

Teenagers tend to have more specific interests than younger children, and parents can encourage teens to incorporate those interests into their volunteering. For example, kids who love sports might be able to work with the local sports and recreation center to coach younger athletes. Or kids who excel in the classroom can tutor younger students. Volunteering can look good on a high school student’s resume when the time comes to apply for college, but parents should be careful that their high school-aged children don’t stretch themselves too thin with extracurricular activities.

Encourage volunteering but not at the expense of schoolwork.

Many children embrace volunteering, especially when given the chance to choose how they want to give back to their communities and the less fortunate.

Cold Weather Guidelines Preventing Frozen PiPes

Even here in the south, we can experience problems from freezing pipes. Especially since it doesn’t occur frequently, we may not be prepared to prevent it and deal with the problem.When water freezes, it expands. If it freezes in your pipes, it may expand more than the pipes can take, and you can end up with a mess. Pipes not insulated become at risk for freezing when the temperature reaches 20º F or below. Some pipes that are exposed to flowing air, as in the case of a windy day, are vulnerable at higher temperatures. Pipes located in attics or crawlspaces are more vulnerable than those inside.

Protecting outside PiPes

Seal all the openings where cold air may get in to the pipes. This is especially important when it comes to cold air blowing on pipes, which can lead to freezing at higher temperatures. Home improvement/hardware stores offer foam or fiberglass insulation which can slow the heat loss. The thicker the insulation, the less amount of heat loss. Disconnect any hoses from outside facuets and drain them. Also be sure to drain any sprinklers. Leave an outdoor faucet flowing with a stream about the size of a pencil lead, to keep water flowing through the pipes. If ice does form, the open faucet allows pressure to escape before the pipe bursts, and if the drip stops you know that freezing may have occured. If this happens, keep the faucet open to allow for pressure relief.

Protecting inside PiPes

You can leave cabinet doors in kitchens and bathrooms open to allow warmer air to circulate around pipes. If you live in a home that is not well insulated, you may want to leave an interior faucet flowing. Allow a stream of water about the size of a pencil lead to flow through the faucet.

What about Wasting all that Water?

A faucet flowing with a stream about the size of a pencil lead equals about half of a cup a minute. If you’re able to, catch this water in a bucket or a milk jug to use later to water plants, feed animals, or for household uses. But if you can’t collect the water and are worried about freezing pipes, half of a cup a minute is a lot less water than you would lose if your pipes burst due to freezing, not to mention the costs of repairs.

If you do suspect your pipes are frozen, call a plumber. If you actually have a burst pipe, look for the hand gate valve, which will be located between the meter and your home. Turn it off, and call a plumber. If you can’t find the valve, or your home does not have one, call ONWASA at 455-0722.

The presence of chilly weather and seasonal retail sales signifies the nearing Christmas holiday. Many cherish the time spent with families, but children wait all year to unwrap presents that magically appear under the tree.

Unfortunately, there are children who make it on the “Nice List,” but may not have a single gift tucked under the tree. Luckily, Santa is blessed with elves in green as well as Marines in blues who help collect and deliver toys across the nation.

The Marine Corps Reserve’s Toys for Tots program kicked off its toy collection at

the Marine Corps Exchange aboard Marine Corps Base Camp Lejeune Nov. 1.

“Today, we have situations such as the natural disaster (along the East coast), and the tragedies in New Orleans a few years back,” said Cpl. Ryan A. Moszcienski, a landing support specialist with 2nd Landing Support Battalion, 4th Marine Logistics Group, who volunteered at the formal collection kickoff event. “Those affected families may have difficulty providing for their children.

Growing up and getting toys always brought me a smile.

Bringing smiles and hope back to children and families

is one of the biggest things we can do.”

The Toys for Tots program is a way to give back to the children and families, said Brig. Gen. Thomas A. Gorry, the commanding general of Marine Corps Installations East - MCB Camp Lejeune.

Onslow County is a community that strongly supports service members.

“Last year, Onslow County pledged over 34,000 toys,”

said Gorry. “Children were able to have a better Christmas knowing they had a gift.

We want to exceed what we accomplished last year.”

Collected gifts are distributed within the county in which they were collected.

The program operates in the local area, but toys are collected throughout the world where Marines are present.

After completing her Bachelor’s degree, Dr. Halley attended four years of dental school at the University of North Carolina at Chapel Hill. She then completed an additional three year residency in order to become a pediatric dentist.

Dr. Brian Talley graduated Cum Laude with a B.S. in Biology from the University of Mississippi in 1997. He received his D.M.D from the University of Mississippi School of Dentistry in 2002 and was subsequently commissioned as an Officer in the United States Public Health Service. Assigned to the Indian Health Service, Dr. Talley was first stationed on the Flathead Indian Reservation in Northwest Montana in 2002. He then transferred to the Southern Ute Indian Reservation in Southwest Colorado in 2005. After six and one half years with the Indian Health

Service, Dr. Talley was honorably discharged. He then practiced general dentistry in Colorado and Mississippi for one and one half years. In 2010, Dr. Talley began his advanced training in pediatric dentistry at Children’s Hospital Colorado. Upon completion of his residency in June 2012, Dr. Talley now joins Halley White Pediatric Dentistry in Jacksonville and Wilmington.

This specialized training gives Dr. Halley and Dr. Talley the skills necessary to treat children, infants, adolescents and children with special needs. Dr. Halley is certified by the American Board of Pediatric Dentistry.

If the baby owl has already started growing many feathers and the parents are around, you could place it on a tree branch or in a shrub to keep it off the ground and they will be able to feed it there. But if the baby is still very downy and you cannot find the nest, then it needs to be brought somewhere for special care where it can be raised with other baby owls.

Both parents care for their babies and bring them lots of food to help them grow quickly. Their favorite food is mice, and the babies eat them bones and all. In fact, eating the bones in their food is very important – without them the baby owls could not get enough calcium in their diet to develop their own strong bones. Owls can’t drink a big glass of milk like we can. The bones and fur will also form into a ball in the owls’ stomach, and then they spit them up to get rid of them. These

are called pellets, and students can learn a lot about what an owl eats by dissecting. Possumwood Acres uses these pellets in programs we give to the local schools.

Have you ever had the chance to hear an owl? Since they are nocturnal (active at night) you usually don’t hear them during the day. In the evening you can hear a soft trill that sounds like crickets, a call that sounds like “who cooks for you, who cooks for you all,” a low hooting call, or a loud screech. Some can make a scary scream that sounds like something you would hear at Halloween! But all of these are owl sounds – and because there are different types of owls, there are different types of sounds you can hear. Owls are the guardians of the forest, and live all around us in the woods near our homes. So when you hear one calling at dusk, they are simply announcing all is well and they are on the job keeping the rodent population under control.

Entertaining your family on a budget Story by Jessie Heath With stores and shows beckoning you to spend your hardearned cash this holiday season, the idea of keeping the kids entertained during their winter break may seem daunting. However, with some smart sense and a little searching you can come up with great ways to keep your family entertained.

Holiday Bake-off Divide your family into two or three teams. If your teams are even, consider inviting some close friends or nearby relatives to join you. Pull ingredients from your pantry, fridge and freezer and make sure you have enough counter space to do a lot of cooking. Separate all your ingredients into equal amounts to ensure nobody gets an unfair amount, and then explain the rules to your teams. Each team must come up with a holiday creation they would like to see on the dinner

table with the ingredients provided. Decide on a set time to plan, create and cook. Set a timer to help you keep track.

Don’t be afraid to let them take the reins and come up with something they think would taste good. If they want to make chocolate covered asparagus with peanut butter, go for it.

Have fun getting creative and trying new things with different ingredients.

At the end of the set time, have each team place their dishes on a table or counter. Let teams explain what they made and how they came up with the idea. Taste-test your creations if you dare.

‘Elf on the Shelf’ author reveals Santa’s secret Story By Amy Binkley

You’re being watched.

Hiding on top of the refrigerator, behind the couch or even on the bathroom sink, the Elf on the Shelf is every where, and he’s making his findings known to the big man in red.

While Santa updated his “Naughty or Nice” lists, service members and their families took the opportunity to meet Carol Aebersold, co-author of “The Elf on the Shelf: A Christmas Tradition,” during a book signing at the Marine Corps Main Exchange aboard Marine Corps Base Camp Lejeune Nov. 9.

Revealing the story of how Santa

really knows who’s good and bad with the help of the nosy elf was a family decision.

“I loved the story as a kid and my children did as well,” Aebersold said. “They suggested we share it with the world so we did.”

She couldn’t hide her enthusiasm to meet and greet members of America’s finest fighting force.

“It’s a small thing, but at least I’m doing what I can to show my appreciation to them,” noted Aebersol. “I’m so grateful for the sacrifices the whole family makes.”

full during the months before Christmas so each year he assigns his elves to be his eyes and ears to find out who’s been good and who hasn’t.

The elves are sent to adoption centers where they’re picked up by their new families.

Once their stories are read and they’ve been given a special name, the elf receives his or her Christmas magic.

‘The magic allows them to fly back to the North Pole every night to report back to Santa what they observed throughout the day. Upon returning home, the elves find new spots around the house to watch and listen. Their ever-changing locations are as much a tradition as the story itself as children attempt to find their holiday spies.

“We had someone tell us they found their elf in a box of cereal,” Aebersold recalled. “He was saved with a pair of salad tongs.”

Elves cannot be touched by

children or else they’ll lose their magic, she explained.

Popularity for the beloved Christmas tradition grows each year, and no one is more surprised than Aebersold.

The Elf on the Shelf reached new heights this year as an 85-foot balloon replica made its way down the streets of New York City during the annual Macy’s Thanksgiving

Day Parade.

“It’s really so amazing to me,” she confessed. “I could’ve never dreamed of all this; yet here it is. We feel very blessed.”

What age should you give your child a cell phone?

Such cell phones can be invaluable, but their accessibility often makes parents and guardians think twice about gifting children with a mobile phone.

Those who are carefully considering purchasing a phone as a holiday gift for a tween may want to consider the following.

Reliability How well does the child take care of his or her belongings?

Are keys constantly being lost?

Are you often replacing items that were just purchased? If so, the child may not be ready for a cell phone. Although many mobile phone companies offer promotional prices on phones this time of year, buying a phone can still be a considerable expense. Adding insurance to that phone will cost even more. Cell phones may only be for children who have a good track record of caring for and keeping important belongings.

Maturity level Some children seem to be born wise beyond their years.

It is unwise to base a cell phone purchase simply on age alone.

Safety Cell phones make it easier for parents to monitor their children when they are away from home, providing some peace of mind.

School rules In many institutions, cell phone use is prohibited during school hours or phones may not even be allowed on school property. This is something to keep in mind before purchasing.

Accessibility A child does not need a smartphone, so parents should buy a phone that doesn’t offer all of the bells and whistles. Not only will this cut down on the cost, it could help prevent irresponsible behavior as well.

Many children want their own cell phone, in part because they see their parents and others on the phone. But it’s wise to consider the pros and cons of giving children cell phones before telling children they can have one.

Hoopii, the sergeant major of MCI East MCB Camp Lejeune. “We’ve even done Toys for Tots in Iraq and Afghanistan. We are United States Marines, and we are very passionate about everything we do. We can be fierce, but we’re also compassionate. No better friend and no worse enemy. We defend our nation, and also provide care and support to families.”

Staff Sgt. Vincent T. Sicilia, the local coordinating officer with Marine Toys for Tots Foundation, said caring for the less fortunate is important and no one is forgotten.

“It’s a great feeling as Americans to know we pull together in times of need,” said Sicilia.

Toys for Tots began in 1947, when Maj. Bill Hendricks, a retired Marine reservist, col-

lected 5,000 toys to give to less fortunate children. He believed his efforts could influence and impact children in a positive way. His wife, Diane, developed the idea after finding out there were no programs or agencies collecting gifts for under-privileged children.

In 1948, Marine Corps reserve units across the country conducted Toys for Tots campaigns in their local communities. Marines continue the Hendricks’ mission to warm the hearts of children.

The Christmas Cheer organization in Jacksonville will help with the distribution of the toys. The locations of donation boxes can be found at every Walmart and Walgreens in Onslow County.

The Jacksonville Mall will also have donation boxes.

Collections started Nov. 1 and will end Dec. 14.

Celebrating New Year’s Eve at home Story by Jessie Heath

New Years Eve celebrations are a dime a dozen, and thousands flock to watch fireworks together in cities across America.

However, for families with small children, New Year’s Eve can be a testing time. Many children will grow weary of festivities long before the clock chimes at midnight, and pushing bedtimes back can cause chaos long after the festivities end. Large crowds may frighten small children, who then cling to parents, who have a hard time enjoying the celebration going on around them when they are concerned about their children’s feelings and emotions.

For these reasons and various others, an increasing number of families are celebrating New Year’s Eve at home each year, opting to watch the ball drop on television instead of huddling together in the cold weather for fireworks. Through proper planning and preparation New Year’s Eve at home can be as much fun as New Year’s Eve with friends.

Know the television schedule The climax of every New Year’s Eve is the dropping of the ball. If you choose not to

go out of your home to celebrate the New Year but still want to see the ball dropped, turn on the television. Big name news stations like ABC and NBC will have coverage from New York City, while smaller, local stations are more likely to have coverage in your town. Check online with television stations like WECT Channel 6 in Wilmington or WITN in Jacksonville to see who will be airing live coverage of local celebrations, or call your local radio stations to see if anybody will be recording live from the festivities.

Make your own ball drop If you want to go a step further than watching the ball drop on television, make your own. Blow up a large balloon. Tie or tape it to your living room ceiling until midnight. At midnight, rip off the tape and let your kids watch the balloon fall.

Your kids will enjoy having their own ball drop, and will likely tell their friends about it once they go back to school, making you the most fun parents in the neighborhood.

Have your own fireworks Start collecting your empty toilet paper rolls. Have one or two for each kid.

In the midst of your New Year’s Eve celebration, cut up construction paper into little pieces. Use a piece of paper to close one end of the toilet paper roll, stuff the confetti into the other end and seal it as well. When the time comes, let your kids rip open their toilet paper fireworks and watch the confetti swirl around them. An alternative method to this is to poke holes in raw eggs and let the insides drain out.

Once the egg is completely drained and dry, fill it with confetti and put a small piece of tape over it. At midnight, crack your eggs open. Be sure to have the vacuum cleaner ready.

Celebrating New Year’s Eve at home can be just as much fun as taking the party outside, and for families with children, it can be much easier than worrying about the large crowds and uncertainties that can come with joining the masses in town.

Paper Roll Dolls Ever wonder what to do with your used toilet paper rolls? Take a look at this great holiday craft! Decorate a mantel or tabletop with this easy-to-make Santa and his little helpers.

What you’ll need Cardboard tissue tubes Construction paper Scissors Craft glue How to make it Begin by wrapping each cardboard tube with a 4- by 6-inch paper rectangle, choosing an appropriate base color for each character.

Glue the paper in place.

To make faces for the angel, Santa, soldier and elf, cut 3-inch-wide circles out of orange or pink paper, and glue them onto the tubes.

For facial features, cut small circles for eyes and noses, mini rectangles for eyebrows and crescent shapes for mouths and moustaches.

Roll a tiny orange cone for the snowman’s nose, then make four small snips around the cone’s base and glue the tabs to his face. For Santa’s beard, glue on layers of 1-inch-wide white paper circles.

To make a tall, pointed hat for Santa or the elf, wrap a 2- by 5-inch paper rectangle around the tube top and glue the overlapped edges together. Pinch the top of the hat closed and trim with a paper pom-pom. Add a brow band in a contrasting color. For the snowman’s and soldier’s hats, start by rolling and gluing a 2- by 5-inch paper rectangle into a cylinder.

Make small slits along one end and fold the tabs in toward the center of the cylinder. Glue a 2 1/2-inch circle on top of the tabs. Trim Finish with distinguishing details for each figure. Frame the angel’s face with yellow curls and a lacy collar. Add a halo and wings. Complete Santa’s uniform with a broad black belt and buckle. Decorate the soldier with golden epaulets, coat lapels, and buttons. Fringe the ends of a 1- by 7-inch rectangle for the snowman’s scarf. Glue on pointed elf ears and feet, and top off the reindeer with antlers and ears.

Children do not have the ability to think long term and any actions that they take today will shape their tomorrows.

I would like to think that everyone wants to be a good parent. Sometimes we need to let our children make mistakes so that they can learn how to make better decisions in the future. I hear stories all the time from parents about the frustrations and challenges on following through with their child’s/children after school program/activities such as soccer, baseball, karate etc... In many instances, parents just end up quitting when the child continuously gives them a hard time.

I agree that sometimes a child might be having a bad day or prefers playing with friends or comes up with just about any reasons to give Mom and Dad a hard time about going to practice or finishing up their homework.

As a good parent, you know that following through or keeping your word or maintaining the commitment to the team members that your child is affiliated with is an important character to develop.

In martial arts, the ultimate goal is to achieve the Black Belt. I have been training and teaching for 30 years and have trained over 10,000 students during the course of my career. Earning a Black Belt is a major life changing event as well as an empowering one. I can almost guarantee that during that journey from getting a white belt (entry level/basic) to getting a Black Belt, there will be times when one would want to quit.

dren get in the habit of quitting the baseball team, quitting karate classes or taking the day off from completing their homework, it will directly make it harder for them to succeed in the future.

Success is a result of many formed habits at a young age. Unfortunately, so is failure. So when a child has made a commitment to a team and if they want to quit half way through the season, make them follow through. The lesson of commitment, perseverance and teamwork is invaluable. If you are face with a conflict with the coach, the schedule or the teammates, learn how to handle the situation. Conflict resolution is a great skill to have. I know it may seem easier to just let them quit then drag them to practice but dragging them to practice will produce better results in the future.

Too many times we take the easy way out. Most of the time, the easy way will turn out to be the most devastating.

And this is the amount you might spend before your son or daughter heads to college. Clearly, you need to start making the financial moves necessary to take your child from diapers to a degree. Here are some suggestions for doing just that: Purchase sufficient life insurance When it was just you and your spouse, it was a good idea for you to have life insurance — but now that you have a child, it’s an absolute necessity.

If you have any doubts about the value of life insurance, just look again at that $222,360 figure above, and then tack on the costs of four years of college. If you or your spouse were to die unexpectedly, would the survivor earn enough to raise and educate your child? In this day and age, that’s not likely — so make sure you have adequate life insurance in place.

Prepare a will Obviously, you hope to enjoy a long life — one in which you see your child grow to adulthood. But none of us can predict the future, so it’s essential that you draw up a will to provide for the care of your child, both financially and physically.

When you create a will, you can name a guardian to step in and take care of your child, if necessary, and you can make sure your child receives your financial assets. However, many people go beyond writing a

will and establish a living trust, which gives them more control over how and when they want their assets distributed. Your legal advisor can help you prepare a will and determine if a living trust is appropriate for your needs.

Maintain adequate cash To help pay for all those expenses related to child rearing, keep enough cash on hand. By having enough resources available in liquid accounts, you can avoid having to dip into your long-term investments to pay for short-term needs.

Save early for college It’s never too soon to start saving for the high costs of higher education. A 529 plan is a tax-advantaged vehicle and may be a great option for your college savings. Contributions to a 529 plan are made with after-tax dollars, and have the opportunity to grow tax-free.

Withdrawals used for qualified higher education expenses are also tax free. Furthermore, your 529 plan contributions may be eligible for a state tax deduction or credit depending on the plan and state.

Stay balanced As we’ve seen, it takes a lot of money to raise a child. But even as you’re meeting these expenses, think about your own future, particularly your retirement. Strive to strike a balance between the money you spend on your child and the amount you invest in your 401(k), IRA and other retirement-savings vehicles.

You can’t put a price-tag on your child’s future, but when it comes to taking care of that child, you’ll want to know the costs involved — and be prepared for them.

Is my child growing the way he or she should be?

There is a wide range of “normal” growth. Between the ages of 2 and 5, the average child grows about 2 ½ inches taller each year, and also gains 4 to 5 pounds each year.

Growth charts are a good way to monitor your child’s growth and health.

You and your preschooler’s doctor are partners in maintaining your child’s health. Your preschooler’s growth over time is an important sign of good health and nutrition.

Visit your doctor regularly.

As part of the visit, the doctor will weigh and measure your child. He or she can then plot your child’s information on a growth chart. Over time, the curve of the growth chart will show your child’s growth pattern and whether height and weight growth are increasing at

the same rate. Your doctor will monitor the growth chart to be sure your child continues to follow the same “curve” over time and the growth pattern does not unexpectedly change. After a child reaches three years of age, your doctor may chart your child’s Body Mass Index (BMI) for their age and gender. This indicates the body fatness and can be useful in the prevention of weight related illnesses.

What about babies & toddlers?

Babies are very individual in their growth patterns, but normally double their birth weight in the first six months and triple their birth weight by their first birthday. Your infant will have his/her own growth trend. It is extremely important to keep on schedule with wellbaby checkups so your care provider can monitor growth.

The position on the growth chart is not as important as keeping on

the growth trend. An otherwise healthy baby who does not gain weight between checkups may be a concern.

Toddlers’ growth is slower than that of infants. Expect your toddler to grow four or five inches and gain five pounds in their second year. You will notice a change in the proportions of their head to their overall height.

Growth is even slower in the third year of life.

Growth is one of the best indicators of good health and nutrition in children.

Heights and weights vary depending on: • Family History. Tall parents tend to have tall children.

Short parents tend to have short children.

• Gender. Preschool boys tend to be taller than preschool girls. Boys and girls tend to have similar weights until puberty.

• Nutrition. Healthy food choices are necessary for your child’s growth.

Children who are sick often or have special needs should be closely monitored by their doctor.

All children need the same things for good health: A variety of nutritious foods in age-appropriate quantities and exercise (at least an hour of activity per day for preschool children).

By providing these things, you will give your child the opportunity to develop life-long healthy habits.

TRADITIONAL WINTER FOODS FROM AROUND THE WORLD story by rachel picard

The winter months are a time steeped with tradition in all corners of the globe, and nothing goes with tradition like delicious home-cooked food. In fact, most of us would probably be challenged to think of a family holiday tradition that doesn’t involve food!

Whether you’re looking to start your own traditions, or would just like to try something different this year, here are some recipe ideas from around the world.

POLAND The Polish Christmas Eve feast consists of twelve complete dishes to represent the twelve months of the year, none of which contain meat.

Fish is allowed, usually herring, carp, or pike. These dishes are delicious when paired with traditional Polish dumplings called pierogis, which can be made with a wide variety of fillings, but are usually made with sauerkraut and mushrooms for the Christmas Eve supper.

JAPAN In Japan, special food called “osechi-ryori” is made for New Year’s. These are colorful dishes meant to bring good luck and prosperity, with each osechi ingredient having a different meaning such as “good

health,” or “good harvest.”

Even the colors have different meanings! Yellow ingredients symbolize prosperity and pink is for celebration.

SOUTH AFRICA Lekker pudding is a simple bread pudding enjoyed during the holidays in South Africa.

The pudding itself is made with bread, milk, sugar, and butter, then it is covered with a delicious icing made with sugar, milk, butter, and coffee.

SOUTHERN USA It is traditional to eat blackeyed peas either on New Year’s Eve or on New Year’s Day in the southeastern United States.

Usually, the peas are served with greens, cornbread, or sometimes cabbage.

One superstition is that at least 365 peas have to be eaten in order to bring good luck to every day of the new year!

BRAZIL The most traditional Brazilian Christmas desert is called rabanada which means “a gust of wind.” Most North Americans would recognize rabanada as French toast.

Traditionally, rabanada is enjoyed mid-day on December 25th after Ceia de Natal, or Christmas Supper.

Expecting the Unexpected

y little pride and joy is about four months old and things are running smoothly now. We have settled into a fairly predictable schedule and I’m pleased to be getting more sleep at night.

Cora’s personality is beginning to show and she is quite the diva. I’m not sure where she picked up this thing where she screams when I take the bottle out of her mouth, but it’s effective. When she starts to get upset she pokes her bottom lip out and puts on the most heartwrenching frown ever seen. We call it the “saddest baby in the whole world” face.

There have been so many changes since the last issue! She has discovered her hands and is quickly learning how to control them. Cora has been learning to how to grasp objects and reaches for things that catch her attention. She has also been leaning forward in an attempt to sit up. My little girl is growing up so fast! That also means she grows out of

her clothes at an incredible rate.

Even though she is coming up on four months, Cora is already in six month clothes. For any parents-to-be, I strongly advise you not to spend money on a bunch of brand new, namebrand clothes. Believe me, I know how adorable those $30 dresses or outfits are, but keep in mind that they won’t be in them for long. I’m not saying don’t buy any new clothes ever because you have to get something cute for pictures. Secondhand clothing stores are amazing.

Most of the clothes you find are practically brand new, they carry every size, and you can find spectacular deals. If your family is anything like mine, you may

not have to buy any clothes for your little one anyway. Grandma and Grandpa Thronson spoil Cora rotten.

By the next issue, who knows what will have happened. Maybe she’ll be sitting up on her own or saying “mama” since we have been practicing while dad isn’t around!

eanut butter is not only a staple of children’s lunches, but it also is a healthy food. While commercially made peanut butter is popular, foodies can also make their own homemade peanut butter.

Rich in fiber and protein, peanut butter makes a healthy addition to any diet. Fiber helps maintain a healthy colon and reduce bad cholesterol in the blood and also may help to regulate blood glucose levels, while possibly reducing an individual’s risk of developing colorectal cancer. Individuals looking to eat high protein foods can choose peanut butter as a good protein source that can help the body feel full longer.

Peanut butter sometimes gets a bad rap because of the amount of fat per tablespoon of the food. While a serving of peanut butter is roughly 188 calories and may have 16 grams of fat, the fat is monosaturated, meaning it is heart-healthy. When enjoyed in moderation, peanut butter is healthy.

There are several advantages to making your own peanut butter.

One of the main reasons is you have complete control over the ingredients. Unlike store-bought varieties, your peanut butter will not contain extra additives, such as preservatives, sugar, salt and oils -- all of which can make commercial peanut butters less healthy. Taste is another factor in homemade peanut butter. Many people find the taste is more authentic in homemade peanut butter. Plus the saltiness, sweetness or roasted flavor can be customized based on preference.

Here’s how to make homemade peanut butter. (Note: This recipe yields roughly 1 quart.)

1. Purchase 1 bag of unshelled peanuts or 1 can (1 pound) of shelled, raw or roasted peanuts.

2. Set aside about a tablespoon of vegetable or peanut oil.

3. Shell the peanuts, if necessary, and put them into a food processor.

4. Pulse the food processor to start chopping the peanuts.

Scrape down the bowl to ensure that all of the peanuts get finely chopped.

5. Add the vegetable oil to help make a smooth butter and continue to blend until smooth.

6. Taste the peanut butter and mix in salt or a small amount of sweetener depending on personal preference. Honey makes a good sweet alternative to sugar.

7. Peanut butter can remain fresh in a sealed container for roughly one month. It also can be frozen.

Making homemade peanut butter ensures you have control over the ingredients, potentially creating a healthier alternative than store-bought varieties. It is an activity that families can do together and you’re guaranteed a great-tasting peanut butter customized to your palate.
