For most of their lives, Trio New American Café owners and executive chefs, Jason Harper and wife Miriam dreamed of making their home in the best restaurants of Texas. Inspired in the kitchen at early ages, they both learned the ropes and each earned prestigious posts at Kent Rathburn’s Abacus in Dallas. Today they can thank; fate for bringing them together, fortitude for sticking to their dreams, and fortune for conjuring Colleyville’s culinary masterpiece.

Over the course of 40 years, Jeff Blackard, CEO of Blackard Global, has developed more than 20 master planned communities bearing home to more than 15,000 single family residences. He also counts office parks, retail centers, resorts and championship golf courses amongst his prime properties. By most accounts he has had a productive and prestigious career. Yet after all of his experiences it is only recently that he admits to having the understanding of what makes a development exceptional. Through his life’s work and travels he has come to define the ‘village’ as being at the heart of his latest grand vision now under development in Westlake.

That’s exactly what former football head coach and Southlake citizen of the year Todd Dodge did at Dragon Stadium on Aug. 29. After leaving Carroll in the middle of the 2006 celebratory parade, he headed up Route 35 for the University of North Texas. It was there his fortunes on the field took a complete 180. He could only muster six wins before being let go early in the middle of his fourth season. However, the new coach of rival high school Austin Westlake was welcomed back by the Dragon faithful who paid homage to his 98-11 record and four state championships he brought home from 2000-2006.

SOUTHLAKE COMMUNITY RECREATION CENTER TO BREAK GROUND Located in Bicentennial Park, the site plan for the proposed community recreation center (CRC) in Southlake was approved at the City Council Meeting on June 3. Upon completion, the CRC will be the city’s largest public facility at 105,000 square feet, as well as the most expensive with the

current planned budget at $46.5 million. However, there will be no increase in taxes to construct or operate the facility. The city plans to break ground in early September, and completion is estimated for late 2015.

Although a portion of the funding has been set aside for the project since 2009, funding was not approved for phase1 by Southlake City Council until August 2013.

COLLEYVILLE RANKS HIGHEST AMONGST AREA TARRANT COUNTY CITIES ON D’S TOP SUBURB LIST An affluent city with a low crime rate and great schools, Colleyville ranked No. 3 on the list of the Best Suburbs

by D Magazine. Other Tarrant County cities to make the list; Southlake at No. 6, Trophy Club at No. 7 and Keller at No. 12.

The list of 63 North Texas suburbs was ranked according to a number of factors, taking into consideration factors such as the median age of the population, the average home price and the city’s square mileage.

GIRLS SCOUTS OPEN SERVICE CENTER IN SOUTHLAKE The Girl Scouts of Texas Oklahoma Plains recently opened a service center in Southlake. The corporate location for the Girl Scouts of Texas Oklahoma Plains is in Fort Worth. The Texas Oklahoma Plains council serves more than 20,000 girl members across 79,000 square miles and 81 counties. The service center in Southlake will serve as a retail space to sell items that Girl Scouts need throughout their membership in addition to items for volunteers. There is also a conference room for adult learning and volunteer training, in addition to approximately 10 staff offices for the mission delivery, product sales and retail staff who serve the northeast Tarrant County area.

CITY OF SOUTHLAKE RECENTLY PLAYED HOST TO THE 2014 RBI SOFTBALL WORLD SERIES The City of Southlake along with the Texas Rangers hosted the RBI Softball World Series in August. The Reviving Baseball in Inner Cities (RBI) World Series included baseball and softball teams from the United States, Canada, South America and the Caribbean. The softball games were played at Bob Jones Park.

An initiative of the Major League Baseball (MLB) the RBI program is designed to provide youth in underserved and diverse communities with the opportunity to play baseball and softball. In addition, the program works to encourage academic achievement and teach the value of teamwork.

BOARD APPROVED MICHAEL NASRA AS NEW KELLER HIGH SCHOOL PRINCIPAL Dr. Michael Nasra has joined Keller ISD as the new Keller High School principal. Nasra has spent the last two years as the Associate Principal at Kingwood High School, the second largest high school in the 36,800-student Humble ISD near Houston. Nasra holds an Executive Doctorate of Education Degree in Professional Leadership and a Masters of Education Degree in Administration and Supervision from the University of Houston, is a graduate of the Rice University Jones Graduate School of Business’ Rice Education Entrepreneurship Program, and earned his Bachelor’s Degree in Business from Southwestern University (Georgetown).

FOREST PARK MEDICAL CENTER SOUTHLAKE AMONG THE 20 MOST BEAUTIFUL HOSPITALS IN AMERICA Forest Park Medical Center Southlake was recently named one of the “20 Most Beautiful Hospitals in America” by Soliant Health.

Ranking at No. 14, Forest Park Medical Center Southlake is the only hospital in the Dallas/Fort Worth Metroplex to make this year’s list. Former Carroll Lady Dragon volleyball player Cat McCoy spent her summer playing and traveling with the U.S. Women’s Junior National Team. McCoy helped the United States win gold in the Under 20 NORCECA Continental Championship in a straight-set victory against Cuba on July 13.

LADY DRAGON VOLLEYBALL PLAYERS REPRESENT THE UNITED STATES IN COMPETITION Carroll Lady Dragon volleyball player Sophomore Haley Hallgren recently competed in the FIVB Under-17 Beach Volleyball World Championships in Acapulco, Mexico. Starting out the competition seeded as No. 28, the pair held their own

SOUTHLAKE BUSINESSWOMAN RECEIVES NORTH TEXAS WOMEN IN TECHNOLOGY AWARD Mary Coffee, vice president of Southlake business IronCloud Inc., was selected by the Dallas Business Journal to receive a North Texas Women In Technology Award. Following the publication of Coffee’s selection for Dallas Business Journal’s North Texas Women In Technology Awards list, American Registry seconded the honor and added Coffee to the Registry of Business Excellence. IronCloud is seeking funding to develop and take to market their unique security and encryption solution with developed IP (patent pending).

SOUTHLAKE PD CHIEF AND OFFICERS HONORED WITH PATRIOT AWARD Three members of the Southlake Police Department, including Police Chief Stephen Mylett, Sergeant Mike Dunn and Lieutenant Cynthia Tripp, have been honored with the Patriot Award, which reflects the efforts made by supervisors to support Citizen Warriors though a wide range of measures.

The award was established by the Employer Support of the Guard and Reserve (ESGR) to show their appreciation to supervisors who support employees who continue serve their country in the National Guard and Reserves. The award was presented by Southlake Detective Robert Briggs, a member of the Army Reserves.

SOUTHLAKE BASEBALL PLAYERS EARN TSWA 5A ALL-STATE BASEBALL TEAM Dragon Baseball Pitchers, Junior Ben Leeper and Senior Joe Heineman, have been named to the TSWA 5A All-State Baseball team. Leeper, who finished the season with a 9-1 record, made 2nd team.

Heineman, who finished with an 8-1 record, made 3rd team. Leeper allowed six earned runs, and had 83 strikeouts for the season. Heineman allowed only five earned runs, and had 62 strikeouts for the season. The Texas Sports Writers Association names the Class 5A All-State Baseball Team each year.

KELLER’S STATUS AS A SCENIC CITY HAS BEEN UPGRADED Keller’s Scenic City Certification has been upgraded from silver to gold in recognition of additional and stronger regulations adopted since the city was originally certified.

Southlake and Westlake remain at gold designation, while Trophy Club remains at silver.

This prestigious designation is given by the Scenic City Certification Program of Scenic Texas, the first in the United States to incorporate a comprehensive set of model standards for design and development of public roadways and public spaces into one program. Cities apply to the program and undergo a rigorous evaluation and scoring of existing municipal standards against the model. Those with the highest evaluation scores earn certification.

business KELLER REDESIGNS ITS ECONOMIC DEVELOPMENT WEBSITE The City of Keller’s Economic Development Department has created a new website to promote its Keep it in Keller campaign. Features of the website include making available lists of places to shop, play and eat in the city. In addition, it is also a one-stop shop for specials provided by local businesses for Keller residents and visitors.

The Economic Development Department started Keep it in Keller to not only raise awareness about shopping local, but to show the impact an increase in local sales tax has on the city’s economy. Sales revenue and the taxes it generates are responsible for new jobs in the community, strong property values, and additional retail, restaurant and service options for residents.

MULLER ENTERTAINMENT MAKES SOUTHLAKE HOME Muller Entertainment has recently relocated to Southlake bringing with it film production workshops for students, movie screenings for seniors and possibly a film festival in 2015. The company, which now resides at 540 Commerce Street, was founded in 2002 by film industry professional Justin Muller.

Muller Entertainment’s primary focus is creating and managing filmed entertainment projects, as well as management of studio facilities for motion pictures and television productions. Muller said Southlake’s location and economy make it attractive for the film industry. The Muller Film & Television Education Foundation is a non-profit branch of the company that was created to inspire youth, educate students and enhance the creative community through offering a variety of programs.

EBBY HALLIDAY MOVES TO NEW OFFICE ACROSS FROM SOUTHLAKE TOWN SQUARE The Southlake Ebby Halliday team is moving to a brand new office building across from Southlake Town Square. Chefs Jason and Miriam Harper share the secrets of their restaurant’s success

he secret is out. (Okay, maybe for some really-in-the-know local foodies, the secret has been out for a while). But for the rest of us, the buzz about Trio, with its globally influenced/locally sourced New American cuisine, has just about reached fever pitch.

Since 2009, husband and wife team Jason and Miriam Harper have been quietly building a culinary empire in a nondescript Colleyville strip mall. Somewhere between an Anytime Fitness and a hair salon, the 1,500-square-foot storefront belies what’s going on inside. Here, worldclass cuisine — think Smokey Hatch Crab Wontons and Pork Milanaise — is on the menu … for lunch. Who knew Precinct Line Road had it so good?

Well, apparently a lot of people. In the past six months, there’s been a shift. Attempting to get a table on a Friday or Saturday night, without a reservation, is just about a lost cause. “If someone walks in and every

cuisine. After three or four years, it was time for Jason to move on. “My family was up here in Dallas; I felt like I had gotten everything I needed to get out of San Antonio, so I wanted to come back home,” he says.

Jason did his research and heard great things about Abacus, a five-star Dallas restaurant with celebrity

“The one thing they took from that is, Wow, that place must be really good because they are completely packed. Then they’ll make it a point to make sure they get in the door, either come earlier or give us a call and make a reservation.”

He can be that confident. This summer, Jason was one of four finalists in Fort Worth, Texas Magazine’s Top Chef Challenge — along with Sebastien Layen of Cast Iron Restaurant, David McMillan of Bird Café and the eventual winner, Todd Phillips of J.R.’s Steak & Grill.

Not bad company when you’re still in your early thirties.

A Dallas-native, Jason grew up in a restaurant family, eventually landing in San Antonio at a series of chain restaurants and touristy spots before landing his first big break: Biga on the Banks, the River Walk institution and the standard for fine dining in that part of the state. There, highly regarded chef-owner Bruce Auden focused on New American

chef Kent Rathbun at the helm. In the culinary world, interviews often come in the form of a stage (a French word pronounced stahzje), where a chef works briefly, unpaid, in another chef’s kitchen to either learn new techniques and cuisines or simply to show off his culinary chops.

Jason literally picked up the phone and called the restaurant and spoke to Tre Wilcox (who rose to fame in Top Chef’s third season) and asked to stage on a Friday night. As Jason puts its, “That basically means come into a kitchen that you’ve never been to before, with people you’ve never worked with before, and show up and just work, and try to be as productive as you can and help them and showcase your skills, without getting paid at all on the busiest night that they have.”

The gamble paid off. “At the time he didn’t have anything for me, but I feel like I made an impression,” Jason remembers. Tre sent him over to a friend at Nobu, in Crescent Court. After just a one-month stint, Tre called him back to Abacus. “I came over and worked as

a line cook. I was there for about two years before I was promoted to sous chef.”

As if on cue, Miriam, a fresh-faced 19-year-old intern right out of culinary school, arrived at Abacus just after the promotion. A Fort Worth girl who had taken some recreational classes at the Culinary School of Fort Worth and later studied at Le Cordon Bleu in Austin, Miriam was

ready for her shot.

A high-end restaurant — especially those with a celebrity chef at the helm — can be a revolving door for interns. The work is hard and the hours are long, but Miriam excelled. “My wife had such a passion for what she was doing and such a strong work ethic already [instilled by her] parents, that she came in and it was like second nature for her,” Jason says. Miriam eventually became the assistant pastry chef.

“I had my sights set on her from Day One,” he says. “My passion is and always has been food. I’ve dedicated my whole life to it and expressing myself creatively through food.

I take it very seriously. She shares the same passion and has the same vision that I do as far as what she wants in life and what makes her happy. That’s all it took for me,” Jason says.

“Honestly, we fell in love, got engaged, got married and then actually did all the food for our own wedding,” Jason says.

A short time later, Jason was offered the cooking school manager position at the Central Market in Fort Worth, an offer he couldn’t refuse. There, one of his volunteers kept telling him about a little restaurant and catering operation for sale in Colleyville.

By this time, Miriam, at the ripe old age of 21, had become the head pastry chef at Mediterranean Villa, a meeting and reception facility in Arlington.

In 2009, with the country knee deep in recession, 27-year-old Jason and 22-year-old Miriam were able to negotiate a deal to make Simply

You, simply theirs. “It’s the dream of a chef to not work for someone else and to have his own restaurant and do his own kind of food that he wants to do.”

But still, as with the pursuit of most dreams, there was risk involved and plenty of naysayers to remind them of that. “Our entire family and friends all told us we were crazy, and we were making the biggest mistake you could make, going in undercapitalized, while at the same time there’s a recession.

But I’ve always taken a lot of risks in my career. I’ve always kind of been a risk taker in life, so it didn’t really scare me,” Jason says. “I knew I could make great food. And I believed if I made great food that people always have to eat. That’s something that has stuck with me.”

As tempting as it might have been to immediately make the place their own, they proceeded with caution.

The name remained unchanged at first, and so did the menu for the most part. The first year was rough, as they didn’t want to alienate the existing client base, however small it was at the time. “We slowly changed the menu.

good food is — made from scratch, kind of inspired cuisine,” Jason says.

“Things started to click and people started to understand it. I started being able to have more freedom with my menu.” At first, ladies who lunch filled the tables in the afternoon, dining on soups, sandwiches and salads in a very casual environment. At lunch, people walk up to the register, place their order and wait for their food and drinks to arrive.

There’s no server and just paper-wrapped cutlery and plastic cups. Still, lunch at Trio means Grilled Corn Caesar salad with cotija and charred tomato dressing or Pork Belly Mac with red fox cheddar (each under $10). By year three, they were shattering records.

In early 2012, Jason and Miriam decided to open for dinner. “I told my wife, ‘Look, if we open for dinner, I want to do the kind of food we used to do at Abacus. I want to do the high-end food,’” he remembers.

“That was another big risk that we took. No one has ever really done that — you take a very simple, simple sandwich shop and then from day to night you transform it to an upscale fine dining establishment,” Jason says.

The first few months they relied on the lunch business to sustain them. When dinner is served Thursday-Saturday, out comes the linen napkins, silverware, china and goblets. They bring in several other hot appetizers, flatbread pizzas, charcuterie boards and cheese plates, and even though the entire lunch menu is still offered in the evening, about 85 percent of diners order from the dinner menu. That makes for a unique dynamic. “You may have someone sitting at one end of the table who orders a $9 chicken salad sandwich. But her husband sitting at the other side of the table could very well be eating a $42 rack of lamb,” Jason says.

“The biggest reason we’re getting as much recognition as we are is because the dinner entrée selection that we put on is very small – one beef, one poultry, one fish. They rotate with the seasons, and are constantly in flux. Plus a dinner special as well — rack of lamb, venison, bison, copper river salmon, fish that you’ve never heard of before — such as blue nose sea bass.”

Trio sources ingredients locally whenever possible. “Our beef comes from a local Texas ranch. It’s not even certified — it’s beyond the grade of a prime beef because it’s local and it’s raised by a local farmer,” Jason says. Arrowhead, out of Lewisville, specializes in unique and specialty meats such as the Amish Airliner, a chicken breast from an Amish community — organic free-range chicken. On Pure Ground in Bonham allows Jason to call in a cheese order on Wednesday to be freshly made and delivered the following day.

In the laidback atmosphere, even the live music is locally sourced and the wine is BYOB, which Trio’s unique customer base considers a

plus — many of his customers have great selections at home. “They don’t have a lot of places where they can bring their really good wine and get really good food. So that’s where we come in,” Jason says.

That’s first-hand knowledge. For years, Jason has been cooking for private parties. “That is my absolute favorite thing to do. I love going into homes. I’ve got several clients who have me back multiple times in Vaquero, out in Westlake, and here in Colleyville. I love going into homes and doing small parties for anywhere from two to twenty, twenty-five people.”

In 2013, Trio expanded its catering operation by opening a state-of-the-art facility just across the street from the restaurant, in direct competition with Tastefully Yours and Bravo Catering. Miriam oversees the pastry side of the business with its very large dessert menu, including her raspberry panna cotta and mascarpone blackberry napoleons. Trio has catered events for up to 4,000 people, including Gateway Church’s upscale Volunteer Appreciation Night.

For the most part, Miriam remains the administrative brains behind the whole operation while tending to the couple’s two daughters, ages 2 and 4 months. At the end of a long day, are they whipping up world-class meals at home? “Most evenings, we get really, really good leftovers from the restaurant,” Jason shares.

Things are better than ever. “We’ll post a million dollars this year,” Jason reveals. “To look at how far we’ve come in a short amount of time and see the restaurant just constantly packed. It’s just unbelievable. It makes me really emotional just to think about it, because we’ve put in so much hard work.”

So where do they go from here? “The next step is for Trio to expand into a larger building,” Jason says. That might mean knocking down a wall or two in their current location, but with customers knocking down their door, they’re not in any rush. They know exactly what to expect, and can predict with great certainty how many diners they’ll serve each evening. “That’s a really good place to be,” Jason says.

RENAISSANCE MAN Jeff Blackard has found a way to combine the old-world culture of a European village with a new development in Westlake - Entrada.

T

Determined not to replicate, but instead build on what he has learned and accomplished at Adriatica, Jeff found himself ready to build his village again — this time in Westlake. But the idea to come to the affluent small town was actually not Jeff’s.

In reality, Westlake chose him.

Adriatica I climbed the narrow staircase to his “treehouse,” as he calls it — the top of the Bell Tower — and looked out over Adriatica. A European-like village set in the valley of McKinney, Adriatica, with its picturesque red clay roofs and stone buildings, looked and felt like something out of a travel brochure. Anyone would be hard pressed to enter the village blindly and not think they had stepped into Old World Europe.

Adriatica was created to become more than just aesthetically pleasing though. It’s Jeff’s vision for a self-sustaining, evergrowing and changing place. Bringing this old-world way of life, which has existed for centuries, to the present-day United States can best be described in his own term, neo-retroism.

In residential terms, Adriatica has a property type to fit any need, including single-family homes, townhomes and condominiums. But because a village is self-sustaining, goods and services providers have their place in the village as well.

Within the village, Jeff’s vision of having one bank, one florist and one bakery to meet the needs of the village is unfolding.

Currently, notable tenants such as Starbucks, Independent Bank and Keller Williams Realty call Adriatica home.

Entrada The half-billion dollar, master-planned project in the works for Westlake is a Spanish-inspired village named Entrada. But if you’re thinking it’s just another residential community — you’d be right. There will be 1.5 million square feet of residential space. Or, if you’re thinking it’s just another commercial real estate project — you’d also be right. There will be 550,000 square feet of office space and the same amount allocated to retail.

Entrada is a mixed-use development. And that automatically sets it apart from many area developments. Just like Adriatica, there will be residences built among shops, and offices Byretail Linden Wilson built among restaurants. But they won’t be arbitrarily placed.

“I’m trying to find out the needs of the people in [Westlake],” Jeff explains. “Entrada isn’t a retail development or a housing development; it’s not an office development. Entrada is as close as I can make a real village that serves the people in its area.” And according to WestlakeEntrad.com, Jeff already has a few things in mind. Plans include a 3,000-seat amphitheater, a chapel, a signature bell tower, a town hall and other government buildings, and a boutique hotel featuring 320 rooms.

The proposed land for Entrada is located at the northeast corner of Solana and Davis boulevards. The 85-acre tract is under the ownership of Centurion American. Mehrdad Moayedi, owner of Centurion American, contacted Jeff to develop the area.

Jeff’s vision for Westlake — supported by Mayor Laura Wheat — is that of a Spanish harbor village. Aesthetically speaking, the village will have the look and feel of Spanish architecture sitting next to a small harbor — which Jeff considers to be the heart of the village.

he Bell Tower seemed bigger before I entered from the outside through the heavy wooden door. But then as I sat on a small bench inside, I noticed the maximum occupancy sign read only 18. I wondered how accomplished developer Jeff Blackard could run a company like Blackard Global from such a small space.

Unable to call the elevator to Jeff’s office on the 7th floor, I dialed the phone number on a plaque sitting on a table. I was surprised that Jeff answered the call himself, and even more surprised when I shook his hand. Expecting a boardroom and a man in a suit ready to tell me about his life’s work, I got a Bell Tower and a laid-back guy ready to tell me his plans to change the way society — and perhaps the world — thinks about real estate.

It Takes a Village To put his philosophical 180 into perspective, two years ago Jeff was master planning more than 4,000 lots a year, but he gave it all up. Honestly, Jeff didn’t know where this new path would take him. He just knew that where he was currently headed was not going to benefit society, and that was his ultimate goal. “Most of my career was based on doing master-planned communities,” Jeff explains. “I developed thousands of singlefamily home sites, condos, industrial parks, retail restaurants —almost anything you can think of.”

It wasn’t until — by a “fluke” — he met the Croatian Ambassador to the United States and was asked to visit the country, that his new journey began. He ended up becoming the owner of a resort portfolio in a small island town of Croatia called Supetar. According to Jeff, during that time resorts came with a portfolio – 10 percent of this and that – and this resort in Supetar came with various parts of a village.

During his initial stay in Croatia, Jeff heard first hand the story of a young man from the village who had obtained his law degree from outside Croatia, only to return to the village — and not necessarily to practice law. Fascinated, Jeff went on to have similar dialogues with many other people in the village. “I consistently asked young people why they don’t leave this little island or village. Why do they stay in the village? Why do they not go to Paris or wherever? I realized what a village really was, so I set off on this journey,” Jeff says.

Over the next two years, Jeff spent a lot of time in Croatia studying what the word village really meant. He wasn’t out to learn the architecture or aesthetics of the village. What he wanted was to learn about the people and how they interacted with each other and their surroundings.

“I started taking more pictures and asking more questions, more about the village,” Jeff says. “I was constantly thinking about the village and how it evolves over time, how people are dependent on each other. I was passionate trying to figure it out,” Jeff remembers. Thinking it was a unique scenario, Jeff traveled to other villages along the coast and then to Italy. He was studying why people did what they did within the village.

He realized everything they did was based on their way of life, not tourism.

“I shut down everything in the United States,” Jeff says. “I started selling all my assets. I was onto something that was much bigger than I was. And I thought, Over all these years I’ve done all these things wrong, and I decided I wanted to figure out how to build a village.”

What he wants you to understand is that he didn’t give up

being a traditional developer to pursue a more lucrative journey.

It was a more fulfilling journey based on pursuing a better way to develop real estate, such as his village in McKinney and soonto-be Westlake, that Jeff was after.

He picked a piece of property and spent two years trying to get zoning approval, because a village really has no zoning, meaning it doesn’t fit into any one zoning category. A village evolves based on the needs of the people and it grows. This property became Adriatica. Next came the call for Entrada in 2012, and now two years later I am sitting with Jeff in Adriatica’s Bell Tower having this conversation.

A Passion for Conviction Meeting the needs of the people is not necessarily the direction real estate is headed, Jeff explains. It is up to the developer to make sure needs are met, and this is not a current practice among his breed.

“It’s very hard and it takes time, and the developer has to be the leader,” Jeff says. “We’ve come to a point where developers aren’t leaders. They have to have a place they are going, a vision of what it’s supposed to be. And that vision should be to meet the needs of the existing people.”

Perhaps Jeff’s leadership qualities are a derivative of what he has learned over the years from fellow businessmen. Although he had a hard time pinning down all the influential people in his life whom he considers mentors, he mentioned one he didn’t know personally – Walt Disney – and others he did have a chance to work with. Jeff describes these individuals as “living by their convictions, no matter the cost.”

Fellow developer Chas Fitzgerald worked with Jeff on the Lakes of Legacy development in Frisco in the late ’90s. According to Jeff, Fitzgerald taught him a lot about history and the reason certain things are done wrong in master planning, and how it should be done right.

Successful businessman Nathan Sheets gave up his life and business to pursue helping the world know Jesus through I Am Second, says Jeff. His philosophy is to be real with the struggles.

Sheets took him around the world to at least 50 countries to see how they could help with those struggles.

Jeff’s personal goals go hand in hand with his professional ones these days. To him, the real estate development process is much more than planning and building. He wants to gain from the experience of creating these villages. “I need to do a better job to learn how to be a great servant,” Jeff says. “That is my goal.

Being a servant right now would be me building villages.”

odd Dodge sits in his office at the Austin Westlake High School field house recounting the events that led up to his being named head football coach and athletic director of the Chaparrals.

When Austin Westlake Coach Darren Allman announced he was moving to Colleyville earlier this year, it was only a matter of days before Dodge and Westlake Superintendent Nola Wellman came to an agreement: Dodge was the right choice for Westlake.

“After hearing about Coach Allman leaving Westlake, I knew there was a great chance it could happen, and it didn’t take long for it to come together,” Dodge recalls.

Less than one week, in fact, is all it took for Dodge and Wellman to shake hands. “I think four days,” Dodge says, smiling. “I met the kids on the morning of May 5, and we

But the unexpected happened. The Dragons overwhelmed Denison in front of a partisan packed house, 5414. “We were in the third quarter and up by two or three scores,” Dodge says. It wasn’t until he looked across the field and saw how quiet it was that he realized how well his team was playing. “I couldn’t hold back and looked over at Hal and asked if we were this good,” Dodge says. “[Hal] said something like ‘you better believe it’ or ‘you betcha.’

It was one of those coaching moments you don’t forget.”

started spring practice that afternoon. We got right to it.”

As coaches do, Dodge called his old friend and colleague, current Dragon Head Coach Hal Wasson. Wasson and Dodge have been close friends for more than 20 years.

They competed in the ’90s when both coached 3A programs, and Wasson was part of Dodge’s staff in 2001 as running back coach and later took more responsibility for the offense in 2002.

“I called Hal to tell him I accepted the job, and he told me Westlake was playing Carroll the first game of the year.

I had no idea at the time, but we both got sort of a laugh … at the coincidence,” Dodge admits.

And what a coincidence it was. The two coaches date back to a time before Dodge’s legacy caught fire. In the early years, Dodge had a respectable 19-10 record with the Dragons competing at the 4A level, but it wasn’t until the Dragons elevated to 5A in 2002 when things began to click.

“We didn’t know how the kids would react or what to expect,” Dodge says when he recalls being elevated to Class 5A. “We were going to face bigger schools with better players, and just weren’t sure — until the Denison game.”

football history to win state the first year after elevating from Division 4A to 5A. What’s more, within Dodge’s budding spread offense, Wasson’s son, Chase, became the first of an impressive run of Dragon quarterbacks to set state records. That year Chase threw for 4,822 yards and 54 touchdowns. Over the next four years, the Dragons won three more state titles and posted a 63-1 record. Dodge’s final win as Southlake’s head coach brought the tally to 98-11.

As Dodge steps back into Dragon Stadium, his legacy at Southlake is still etched in the memories of coaches, players and Dragon fans alike. The memory of Dodge’s 98th and final win as the Dragon’s head coach is what makes his current position at Austin Westlake all the more, well, coincidental.

“That was a great game,” Dodge says, smiling. “The one where Tre went nuts,” referring to Tre Newton’s 74-yard touchdown run late in the third quarter. Dragon fans will recall the junior tailback breaking nine tackles before scoring and breaking a third-quarter tie, putting the Dragon’s ahead 29-22.

However, although Newton’s touchdown was key, the

CROSSING PATTERNS game’s biggest play occurred later with seven minutes left and the score tied at 29. The play featured Dodge’s son, Riley, tossing up a 30-yard touchdown strike to Anthony Ford.

“I don’t think Riley will ever live that one down,” Dodge says with a laugh.

“But that 2006 squad reminds me a lot of the kids I have now.

That team was young and they really battled. They didn’t give up, and these kids remind me a lot of that team. They have a lot of heart, and they will battle.”

If the uncanny aspects of Coach Dodge’s past life as Southlake’s winning head coach stopped here, this would make for a great story. But accepting the new coaching position at Austin Westlake is much more than taking the reigns at a former rival. Dodge is moving back home. The man who led Southlake to four 5A state championships from 2002 to 2006, and whose memory looms large around these parts, is ecstatic about being back in Austin, where he and his family hold quite a legacy.

Austin is his wife Elizabeth’s hometown, and she attended Westlake High School where her father, Ebbie Neptune, was a longtime coach and athletic director. Todd and Elizabeth met in Austin, when both were juniors at The University of Texas, and Todd was the Longhorn quarterback. Now their son, Riley, is at UT as an assistant on Charlie Strong’s Longhorn staff, and their daughter, Molly, is a junior at nearby Texas State University.

So Todd and Elizabeth Dodge are back in Austin, where they first became friends some 30 years ago. They are in a place they can comfortably call home. And Dodge is coaching at a premier Texas high school, where the words “Ebbie Neptune Field” shine brightly.

Todd Dodge considers himself fortunate for his successes in Southlake. During the state championship run, his teams were recognized as mythical national champions three times and USA Today honored him as National Coach of the Year in 2005. Along the way, his impact on the local community was also evident, and he was named Southlake’s Citizen of the Year in 2006. However, he and Elizabeth describe themselves as being blessed to be where they are right now. The move back to Austin and the opportunity to impact the community where they have so many family ties is a privilege they want to embrace for many, many years to come.

The Wild Wild East THE MODERN BRINGS BACK THE ART AND ATTITUDE OF 1980S NEW YORK

A

s the iPod has taken over for the Walkman and the Soviet Union is no more, the 80s seem like ancient history in many of our minds, so it only makes sense for the decade’s art to be featured in a museum. The Modern Art Museum of Fort Worth will be presenting URBAN THEATER: NEW YORK ART IN THE 1980s from Sept. 21 through Jan. 4, 2015.

According to Museum Chief Curator Michael Auping, the art world is what it is today because of the influence of the 80s.

The ideas about art and what that word could and could not include were questioned heavily throughout the decade.

Themes of consumerism and irony prevailed as everything from global warming to personal computers began to take hold of our imaginations. And although not unique to New York, the phenomenon that was the 80s art scene seemed more audacious and the artists more outspoken in the Big Apple.

During that time New York was just beginning to merge art and pop culture. Graphic prints and graffiti were not uncommon types of medium. Think about Andy Warhol and his take on media and

culture; his iconic Marilyn Monroe is indicative of what New York art in the 80s looked and felt like.

With more than 25,000 square feet of exhibit space visitors will be exposed a multitude of prime examples of painting, performance art, sculpture, photography and installation works.

Special installations will include snapshots of the typical gallery shows during the 80s featuring themes such as: the “Bad Boys” of painting, feminist conceptualism, appropriation and the Pictures Generation, “abstraction and culture,” political activism, the graffiti movement, and Warhol and the decade of art celebrity.

While the name doesn’t conjure up images of perfectly smoked meats, long lines or craft beers, for many in the DFW area this is the mecca for Texas-style BBQ. What began as a catering business in Shed 2 of the Dallas Famers Market is now a fullfledged restaurant in Deep Ellum.

Justin and Diane Fourton spent the early portion of their professional careers in corporate America - Justin working for Accenture and Diane working for Bank of America. But both were raised in the DFW area by families with deep Texas roots who placed an emphasis on cooking and community. Even the name of their restaurant, Pecan Lodge, carries a part of Justin’s family with it, taking its name from Justin’s grandfather’s home at the family ranch near Abilene.

What eventually became Pecan Lodge began with Justin towing a large BBQ smoker behind his green Range Rover from one office park to the next in the North Dallas suburbs. He sold brisket sandwiches at first, and added other menu items he and Diane would come up with during latenight food prep sessions. Eventually, they received catering requests from corporate customers, and

the couple could barely keep up with the pace.

Since they were out of space in their home, they went on to find a home at the Dallas Farmers Market.

I stood in line over a year ago with friends at that former location in the Dallas Farmers Market. I was hoping the food would live up to the hype since we got into line at 10:30 a.m. and waited nearly an hour with other admirers and first-timers. The hype wasn’t just hype, the BBQ was the best I had ever had anywhere in Texas.

We marveled at how amazing the food was while sitting at folding tables on folding chairs in the middle of the cavernous Shed 2 at the Dallas Farmers Market.

The buzz was increasing with each passing day, Guy Fieri from Food Network’s Diners, Drive-ins and Dives showed up in 2012 to feature Pecan Lodge on an episode dedicated to BBQ. Unfortunately, the buzzkill came in early 2013 when the city of Dallas announced it was selling the Dallas Farmers Market to private investors.

The new owners were planning on gutting Shed 2, leaving all the business owners, Justin and

Diane had a difficult road ahead, but they finally landed on a location not too far away.

Fast forward to today, with Pecan Lodge now residing in Deep Ellum on Main Street. The lines are still there, but a full-sized dining room and patio is able to accommodate many more devotees of their meats and side items. The décor features raw woods and steel pipes with pictures and mementos from around Texas - simple and unadorned, because the focus is on the food. We didn’t wait in line very long on a weekday, but only because we had the chance to sit at the bar and order our selections. (Foodie Fellow Tip!)

My dining companion chose the Hot Mess, a huge sweet potato filled with barbacoa, chipotle cream, cheese, butter and green onions. It arrives looking like a hot mess, but what a delicious mess it was. Spicy meat with creamy, smooth sweet potato is a perfect combination of protein and veggie smothered with toppings. I chose the three-meat plate with brisket, jalapeno and cheese beef sausage, and pork ribs. I was informed after placing the order the ribs were already sold out an hour and a half into the lunch rush, so I substituted the pulled pork and added a side of fried okra.

The brisket has the perfect crust on the outside with meat on the inside so tender and juicy it just pulls apart with a fork.

The sausage is made in house and is extremely flavorful and juicy, whereas many BBQ sausages are dry. I would also recommend the beef rib, it is as big as an adult forearm, if it is still available. There is even a beer brewed just for Pecan Lodge; Boss Lady Rustic Red from Four Corners Brewery in Dallas. It is the perfect compliment to their vinegar-based BBQ sauce made fresh daily.

The wait is worth it; don’t hesitate to make the drive out to Dallas for what many believe is the best BBQ in Texas. You should find out for yourself!

Gloria’s More than a Margarita Latin Cuisine restaurant has perfected the margarita, serving up salt-rimmed glasses that can solve even the biggest of problems. But it’s not just the drinks that have made Gloria’s a North Texas favorite for more than 25 years — it’s also the wide selection of Salvadorian-inspired brunch, lunch and dinner entrees. One of 15 restaurants state-wide, Gloria’s Colleyville location draws dutifully from the humble beginnings of El Salvadorian natives Gloria Rubio and Jose Fuentes. The restaurant’s story begins in 1986, the same year the duo was granted U.S. citizenship.

After taking over her sister’s restaurant in Oak Cliff, she legally changed the name to Gloria’s, and from there the legend was born.

A meal at Gloria’s begins simply enough. Hungry patrons are greeted by a contemporary, upscale design, paired with the restaurant’s signature black bean dip, salsa and chips. Smart diners will nosh on the irresistible ceviche, as they peruse the menu offering fresh fish, crispy tacos and authentic enchiladas. And that’s when the challenge begins. From familiar Tex-Mex dishes like Sour Cream Chicken Enchiladas to “Salvatex Combinations” such as Chilie Relleno, deciding which dish you want to try can be tough. For brunch lovers, savory omelets, breakfast tacos, breakfast burritos and Mexican specialties such as Huevos con Carne (scrambled eggs with brisket, served with pinto beans and guacamole salad) beckon. Stop in for lunch and enjoy Ceviche Tostados, featuring a unique combination of orange roughy, scallops and shrimp, or go classic with fajitas for dinner. Just don’t forget to save room for dessert, as sweet creations like flan and tres leches tempt you to enjoy just one more bite. And why shouldn’t you? After all, Gloria would want you to.

Chappellet’s 2011 Signature Cabernet Sauvignon To know the history behind Chappellet’s 2011 Signature Cabernet Sauvignon is to understand its full flavor. raveling to Napa Valley should be on any wine lover’s bucket list. However, even those who aren’t wine connoisseurs can still enjoy a vacation in Napa, California, the valley’s namesake. The vineyards are a spectacular sight set against the backdrop of the valleys and hills. As a bonus to sommeliers in training perhaps, from mid-August through late October is grape harvest time. Visiting during the fall gives you the opportunity to see vintners in action. With more than 400 wineries in Napa Valley, it may be hard to choose. However, starting in a city such as Napa, and then branching out is a good place to start.

The flights usually take off in the early morning. (Who wouldn’t like to see the sun rise over the valley?) Many tours also provide a preflight breakfast as part of your package. You can fly with a group to enjoy the thrill, or choose an intimate flight for two, which are perfect for special occasions such as proposals or anniversaries. Balloon tours are very popular and there are quite a few companies that provide the service. Many are unique in that they have a specific route they take that often is proprietary. ew production cars can match the history and nostalgia of the Camaro. And even fewer production cars can match the performance of the Camaro ZL1. For the latest version of Chevrolet’s classic muscle car, power and aeronautically optimized design converge to turn heads both at the track and on the streets.

At the heart of this supercharged beast is the LSA 6.2L V8 engine, which is based on one of the most powerful V8s in the world— the legendary motor of the Corvette ZR1. Offered with a six-speed, Tremec TR6060, manual transmission, this car boasts 30 percent more torque than its sibling— the Camaro Super Sport (SS).

Despite the aggressive, and instantly recognizable design of the exterior, the body of the Camaro ZL1 has just as much to do with the car’s performance as what’s under the hood. To maintain stability and steering response at top speeds in excess of 180mph the Camaro ZL1 makes the most of an aerodynamic design that generates as much as 65 pounds of downforce to press tires against the road.

In contrast, the Camaro SS delivers 200 pounds of lift. Several exterior elements help produce this “grip and rip” effect. The corners of the front fascia and the vented hood are both shaped to maximize downward pressure and a cooling airflow for both the brakes and engine. The fact that this vehicle looks as good as it runs is a testament to the teamwork in the labs at GM.

Clearly taking a backseat to the car’s high performance specs, the interior of the ZL1 is offered with a minimalist black interior. Leather front bucket seats with microfiber inserts help deliver the necessary support for high-speed turns while the flat-bottom steering wheel and alloy pedals keep serious drivers engaged from head to toe.

The 2015 Camaro ZL1 coupe is a performance showcase at a respectable starting price of $56,355.

Those looking for more wind in their hair may opt for the convertible model, which starts at $61,550.

Top down or not, the Camaro ZL1 is a pure street-legal thrill ride.
