PINOT GRIS ROSE
Aromas of spiced pear, white peach and a touch of honeysuckle contribute to a delicious varietal bouquet. These flavours are displayed on the palate with a subtle texture and balanced acidity making it a good friendly wine. This would pair well with seafood, chicken or
Aromatically I think of raspberries and cream when smelling after a soft swirl. On the palate the wine is dry, with red fruits dominant, pleasingly the wine is naturally soft in the mouth which makes it a wonderful drink during most times of the year.
CABERNET SAUVIGNON SHIRAZ
This wine demonstrates it fullness through a deep Ruby colour with bright purple hues. Aromatically the wine exhibits a lovely balance between red and blackcurrants, with an underlying crushed character. The palate displays a fruit forward style of Cabernet, without being a too-much. A touch of tannins provides the wine with medium bodied savouriness, contributed to by older oak tannins.
Aromatically the wine is Cowra and Shiraz, with dark berry fruits of blackberry, and ripe cherries.
Aromatic spices are mixed with white and black pepper and vanilla. The palate is a well balanced. It has primary fruit purity, and exceptional flavour density. The persistence of flavour is this wines true hallmark, where flavours linger for longer, and flavour complexity develops during this appreciable period.

CABERNET SAUVIGNON MERLOT SHIRAZ SPARKLING
Distinctive cabernet fruit of blackcurrant, red berries, choc-mint and a hint of leaf. Fruit, oak and earthiness all compete for aromatic attention. Therefore there is a good level of complexity. The oak is cedar with some toast and vanilla. Tannins, often more forceful in cabernet than other varieties, have a lovely sense of balance adding length without being aggressive.
Unlike a lot of merlots, there is good aromatic intensity in a wine with plenty of character. Ripe fruit shows red berries, cassis, a hint of floral, almost Turkish delight & subtle cedar from oak maturation. A firm structure with fine tannins carry the flavours through to the finish. The balance is spot -on allowing for immediate enjoyment. Distinctly varietal.
From a cooler vintage, this is a fragrant, spice driven wine along with some juicy red verging on black berry fruit. Complexity is showing through background cedar oak, chocolate and earthiness. Mid-palate richness is building with time. Tannins are long, fine and quite approachable allowing early drinking or the chance of developing greater complexity with time in the cellar.
The Orange region has tremendous potential for sparkling wine due to its high elevation, cool climate and fantastic resource of chardonnay. The region has many similar climatic traits as Tasmania which is well recognised for its sparkling wine. This wine, being 100% chardonnay, has very clear citrus flavours and some complex apple and yeast derived nougat. There is a lively, fine bubble and a very approachable acid/dosage balance, inviting another taste.

NOTES
CHARDONNAY SAUVIGNON BLANC
This is not a big style of chardonnay. Having said that there are some generous, ripe fruit flavours and the subtle influence of oak and other winemaking techniques. A lactic mid-palate adds texture, lively natural acidity maintains freshness. It’s the style of chardonnay to win back those drinkers that got tired of big, rich, oaky chardonnays.
Orange region sauvignon blanc is quite distinctive. Intense, lifted fruit in the passionfruit, floral, citrus spectrum with a cut grass edge. But a few wine making techniques have added to the mid -palate weight and texture. Balanced acidity provides freshness and length. The extra maturation time has done wonders by avoiding shrill acidity and enhancing depth of flavour.
PINOT GRIS
The complexity of the wine is built up during maturation through some lees (solids) stirring and partial malo which contributes to a creamy mid palate texture. A good line of acid assists in holding the fruit on the palate and giving the wine length.
SWIFT CUVEE
Wonderful freshness, vibrancy and complexity which can only be achieved with great fruit, gentle handling and patience –time in bottle. Terrific intensity of white fruit, florals, strawberry, brioche & nuttiness.

PEPPERJACK
ABOUT PEPPERJACK
Pepperjack was first released in 1998 with a 1996 Barossa Shiraz. After spending five years exclusively in bars, clubs and restaurants Pepperjack has gone from strength to strength, with the Barossa Shiraz a real Aussie favorite. Since its release Pepperjack Shiraz has consistently received the honour of being Australia’s Number 1 red wine by value.
