My wife Jenn and I have lived on Key Biscayne since 2001, but this island was home to me, many years before then, as my parents moved to the island in the early eighties. Back then, I was in boarding school in the UK, but welcomed Key Biscayne as my new home in 1986. Since then even though we traveled a lot this island was always both home, as well as a passion for me as it relates to photographing the incredible wildlife that resides here… Ever since I first arrived on “Paradise Found” I have been passionate about protecting the natural environment, be it the incredible species of iguanas, or the amazing birds that share this island with us. Be it the long-legged herons, the speedy turns, or the “eagle eyed” Ospreys there are so many bird species that call Key Biscayne home. As we adore boating, I am also passionate about the incredible wildlife below the water’s surface from the manatees to the tarpon, the sand crabs along our beaches, and the dolphins we often see enjoying Biscayne Bay! It thrills Jenn and me to share these photos of starfish, stingrays, and local birds. All of my photos are taken either on or around the island waters of Key Biscayne.

We would encourage everyone to not only enjoy all the local wildlife that this island and its surrounding waters have to offer, but as importantly please let’s all commit to protecting every species. We would encourage joining “Waterkeeper’s” (https:// www.miamiwaterkeeper.org/) a local environmental nonprofit organization that is dedicated to protecting and maintaining that our waters remain clean and safe for so many of our local neighborhood species. The Village of Key Biscayne is also working hard to ensure we protect all our natural resources here on the island, and our surrounding waters, so we would also suggest supporting our local government in those effects as well.

Rudy started working with his dad when he was 15 years old, but thought he would pursue a different career that that would allow him to use his creative abilities. “I love art and music.” Says Rudy. “My father convinced me to stay in the family business and become a designer like him. I reluctantly agreed thinking I would not stay in the Jewelry business as an adult. Initially, I helped him with his collections as he trained me. I studied Creative Advertising at FIU and graduated in 2001. I have been designing my own jewelry designs since then. When my father passed away in 2007, it was a huge surprise to our family and had a big impact on all of us. We now carry on his legacy and continue to serve the community he served for so long. In 2013, we opened a second store in Coral Gables near Merrick Park, in addition to the Miami store near FIU.”

“Another innovation that we are bringing to our customers is a new type of diamonds, Lab diamonds.” Rudy explains, “These are a new and exciting alternative to natural diamonds. Consumers first think when they hear lab diamonds in that “It’s a fake!” In fact, a lab diamond has the same atomic structure as a natural diamond and has the same attributes as a natural diamond – they both shine the same! Lab diamonds are cut the same way as natural diamonds. Lab diamond use the same grading system that a natural diamond uses to determine the quality. The biggest difference is the price. amily and friends gathered for the celebration of the marriage of Daniele and Daniela, known affectionately as Los Danis. The celebration was held at the beautiful home of Brigitte Nachtigall and Mike Aixala. Every detail and decoration was attended to by Asvaldo Acero and Mario Anton. It was an evening filled with love and laughter, singing and dancing. Ana Tootle BAKING A DIFFERENCE Feel Good Foods and Thoughts
When we sat down to visit with Ana, one of the questions we asked, was, How would you describe yourself and your passion? We love her answer. I’ve
worn several hats in my career but I am a hopeless foodie, philanthrpreneur and entrepreneur. I began “baking a difference” a couple of years ago by donating a portion of the sale of my homemade pumpkin bread to Feeding South Florida to help the fight against hunger. I want everyone to have access to Mother Nature’s bounty and this is a delicious way to make an impact on my community. I love this endeavor and have never looked back since. I also think it’s been a great example to our three kids that you can do what you love while helping others in need. Join us as we get to know Ana and more about her passion to make a difference in the community of Key Biscayne and South Florida. How long have you lived in Key Biscayne? I am a Key
Biscayne resident of over 30 years. Our 3 kids were born and raised here so they’re are often referred to what they call around here “key rats.” My husband and I are both Miami natives and my parents are originally from Colombia, South America (not Columbia, South Carolina) LOL! My parents decided to move to the Key from mainland Miami as soon as I left for college to enjoy a slice of paradise everyday as we already had family permanently living here. Miami was sprawling in the late ‘80s and they wanted to escape the mayhem while still having access to all the benefits the Magic City has to offer. Where did you go to college? I received my Bachelor’s degree from the University of Florida and an MPA from the University of Miami. Reflective of my hobbies, I am a certified Spinning instructor and Certified Laughter Yoga Leader. Please describe how this passion developed or how it all began. When life got a little challenging (as
can often happen) about a decade ago I knew somehow that the answers could be found within given all that I had read about self-help. I began to realize that listening to the inner wisdom paid off huge dividends and my practice began expanding in such a way that I KNEW I had to share what was unfolding before me with others. That’s when the idea of an Empower Hour was born, a class that takes meditation and mindfulness to the next level with

are not luxuries. They are necessities. Simply put, I believe no one should go hungry and this is my way of doing my part. Have other members of your family caught your passion? My husband
of 25 years, Clay Tootle, is a general contractor with Interscope and our three children are Christian (21), Alexa (20) and Patrick (17). They all love eating and promoting my pumpkin bread and sharing it with their friends. More significant, I think they are proud to see that I can make something that improves the lives of less fortunate members of our community in a simple and delicious way. I would tell anyone that is passionate about something. Get started! Dive in! Take a leap of faith and listen to that little voice inside of you that you keep shoving off. That voice is much wiser than you think and when you employ a simple mindfulness practice it’s easier to listen to it than you ever thought possible.

I decided to dive in then and that’s when the magic unfolded. I now teach a class called Empower Hour where I share the mindfulness techniques that have made a huge positive impact on my life so I practice what I preach. By employing meditation, gratitude, affirmations and journaling we take our practice to the next level and become a better version of ourselves. Everybody wins and we raise the vibration of the planet along the way. What’s not to love?! Was there a special person or event in your life that inspired your passion? I would say that the biggest
impact was the discovery of Hay House publishing, the world’s largest self-help publication company. The numerous authors, teachers and speakers have made a huge impact and opened up a world of self-empowerment I was always thirsty for. From then on, the knowledge on ways to improve my life exploded and I remain passionate about helping
others improve their lives with simple techniques reflecting unconditional love, unconditional worthiness, unconditional gratitude and unconditional generosity. This passion and practice lead me to baking pumpkin bread with impact that evolved into Feel Good Foods and Thoughts. Mine is a story of merging passion with purpose and I truly love what I do. I love that for every loaf of my homemade pumpkin bread sold I have helped put food on the table for a family that might otherwise go hungry. That’s HUGE for me and it is the north star that keeps me going. The thought of a child going to school or bed hungry is simply unfathomable and I know that organizations such as Feeding South Florida see to it that less and less of our neighbors face such a travesty. Food and nutrition
In the future I would like to begin a community on the island called Elevated in Paradise where we can all embrace the natural wonder we have under our noses while practicing mindfulness together in a relaxing, non-judgmental atmosphere. I love sharing the wisdom I have garnered over the years and connecting with neighbors looking to do the same. There is a thirst and an awakening to improve ourselves and when we support one another this way we can certainly make it fun!

Farmer’s Market

ey Biscayne is a wonderful family-oriented community with many fun activities and pleasures for residents and visitors to enjoy. From bike riding to boating to nature walks, Key Biscayne is a paradise with plenty to offer. One of the favorite weekly activities for residents and visitors has to be the Key Biscayne Farmers Market. Every Saturday the Key Biscayne Community Church hosts its weekly Farmers Market on its grounds with growers who offer juicy melons, peaches, vine-ripened tomatoes, fresh corn on the cob and lots more. You can find just about anything your heart or stomach could desire; homemade banana bread, canned goods, honey, Acai Bowls and smoothies; even delicious Greek and Italian delicacies. The Market starts at 9:00am and ends around 2:00pm with many vendors staying extra hours, especially the vendors serving lunch such as the Spanish Paella vendor. The Market is located on 355 Glenridge Rd., behind the Village Green Park. You can find vendors serving delicious BBQ, Pizza, Spanish Paella and tapas, Asian delights, Mexican food, sandwiches and wraps and plenty more.

The highlight at the Farmers Market is the fresh produce vendor. With the largest tent in the market, the Produce vendor offers fresh and wholesome produce, many sourced from local farms, at a fair price. Other vendors sell artisan products. You can find one of kind Venezuelan items such as fresh cheese and cachapas, delicious Greek products such as fresh jams, kalamata olives, and spices, Middle Eastern items such as hummus, baba ghanouj, seasonings and fresh pita, Mexican delights such as fresh Guacamole made on the spot, Imported Italian products such as pasta and pasta sauces and plenty more. Many Vendors also sell other items such as plants and flowers, nuts and grains, CBD oils and lotions, freshly brewed Kombucha and much more. With plenty of parking, the Farmers Market is a must-visit if you haven’t already. With no cap on the amount of vendors, each weekend there is the opportunity to find something new and different from the last. Her passion is to create solutions for each student and to boost their self-confidence and self-motivation for learning. gan caters to non-traditional learners, and those diagnosed with specific learning challenges such as ADHD. Involving parents, teachers and other education professionals is all part of the process. Megan emphasizes the value of listening carefully to each child as well as their parents and teachers to understand how to teach them. Students with learning challenges must have an individualized approach to the needed teaching style. When that is utilized, the student begins to experience success and an inward motivation to learn.
When self-direction and goal-attainment are built into the child’s life, the result is self-motivation and an inward desire to attain their own educational goals. The result is ongoing success by continuing to use the skills they have learned. Many of Megan’s students have been accepted to prestigious universities and attained honor roll status. But for Megan, their true success is the desire to continue learning.

We asked Joe and Jennifer to share a little about their life and how they came to live in Key Biscayne. I (Joe) was born In Nairobi, Kenya but grew up a little south of London in the small commuter town of Oxted, in Surrey, England. My wife Jenn is from Green Township in New Jersey.
There’s No Place Like Home! This month, we are delighted to introduce you to Joe and Jennifer Coote. They live here in Key Biscayne with their two cats, Beaches, 15 years old and Walter who just turned one and recently joined the family. 62 KB Living • March 2020
My father worked for a British sugar company that asked him to come to Miami and oversee their business here. So my parents moved from England, first to Coral Gables and then to Key Biscayne in the early ‘80s. I attended boarding school in England and moved to Key Biscayne in 1986. I fell in love with the island and still adore it today.
I worked at Key Biscayne Yacht Club from 1986 to 1989, first as a Security Officer and later as the Assistant Dockmaster. It was an enjoyable experience and a great learning oppor-
tunity. While working on the docks, I fell in love with the boats and time on the water. I left the Yacht Club to attend Pepperdine University in 1989 and graduated with a degree in Industrial Psychology and a minor in Organizational Behavior. After college, I worked for Westin Hotels, starting at the Westin Bonaventure in downtown LA. I transferred to Pittsburgh, PA, where I met Jenn! Jenn graduated from East Stroudsburg University with a degree in History. She worked with PNC bank. Even then we visited my parents on the Key whenever we could. We moved to Orlando for two years, then were off to Tucson where I worked at the Westin La Paloma. While living in Tucson, we married and honeymooned on Key Biscayne and the Ritz-Carlton in Naples. I knew then that I wanted to work for the Ritz-Carlton brand. Jenn worked as a store manager for Talbots and we returned to LA for a few years. When I heard that they were building a new Ritz-Carlton in Key Biscayne, I could hardly wait to apply. I hoped that Jenn and I could return to our island paradise! It thrilled me to open The Ritz-Carlton Key Biscayne as the Front of House Manager, and we moved back to Key Biscayne in 2001. Jenn transferred as a manager at Talbots Dadeland.
We later became members of the Key Biscayne Yacht Club. This was nostalgic for me as I had often dreamed of returning to live on the island and being a Yacht Club member. So Key Biscayne has been home for many years, even though we spent many years living in other states. We have now lived here just over 19 years. In that time, Jenn has worked for Commercial Property Management companies, including Terranova and Ritz-Carlton. She has recently transitioned to residential property management, first with KW and now with First Service as the Property Manager for Island House here on the island. Jenn is the Property Manager for Island House apartments and I am Director of Residences for The Ritz-Carlton Key Biscayne, Miami. We have established several traditions in the area. We get together with our family members whenever possible during Thanksgiving and Christmas holidays. My parents are here on Key Biscayne in the winter months, so it’s wonderful to have them with us. We visit Jenn’s family in Cleveland, Ohio each year. The yearly Miami International Boat Show makes the perfect way to celebrate our 21 years together. There’s no better way to enjoy boating and the show than over a special glass of champagne.

Each year we enjoy a week on Captiva Island just before Christmas. We are both used to working through the holidays, but we do enjoy that week away at our timeshare at The South Seas Resort. We attend at least one Miami Dolphins game each year with friends. They buy the tickets and we handle the “tailgating” food. It’s always an incredible day. On weekends we enjoy walking the beach, seeing dolphins and manatees and being Beach Club members, where we have celebrated many occasions, including my parents’ 50th wedding anniversary. We never tire of all the opportunities in Key Biscayne. We love the boating, swimming, cycling and snorkeling and the views from the Cape Florida Lighthouse. RESIDENT RECIPE By Virginie PARAN, Key Biscayne Resident
Gratin dauphinois INGREDIENTS •Gold Potatoes: 3 lb. bag •Heavy Whipping Cream: 1 pint •Swiss Cheese, shredded: 8-10 oz •Salt •Pepper
RECIPE 1. Preheat the oven to 380 degrees Fahrenheit 2. Peel the potatoes 3. Cut the potatoes into thin slices (use a food processor for uniform slices) 4. Place the potato slices (2.5 inches max of potatoes) in Gratin dish (8x12in) 5. Add the heavy whipping cream on top 6. Salt and pepper to taste 7. Add a layer of Swiss cheese on the whole dish 8. Bake 25 minutes (check with a knife if the potatoes are cooked) and it’s ready to eat This is a good recipe to make ahead or make extra. You can bake a 2nd dish to put in the freezer for another day! I recommend serving the Gratin dauphinois with a good roast beef and your favorite red wine!
