This month we would like to take the time to once again thank all our volunteers that made the Christmas Dinner such a big success!

We had great food, fun, time for our neighbors to get together and even a little entertainment came our way.

We would also like to welcome the new Social Club Committee, and wish them all the best for the next two years.

Now, it’s time to take a look at your homes and spaces…the park rules and regulations state your home, and space must be kept in a clean, attractive and well-kept manner at all times, including front sides and back. If you see the need to clear your home of any outside storage or overgrown vegetation or weeds, please take the time to take care of this now as weather permits. We will be out and about jotting down a list of homes that are in need of attention and you will be notified if your home or space is one of them.

A flyer will be distributed for each event listing the menu, cost, and any restrictions. Sign-up sheets will be posted in the clubhouse. We encourage you to bring your family and friends. If you are unable to attend the event after signing up please contact one of the social club committee members. If you have any questions, or would like to help please contact any committee member. Stovetop Honey Glazed Carrots Ingredients 2 pounds carrots ½ cup water ½ teaspoon kosher salt 2 tablespoons unsalted butter ¼ cup honey Chopped fresh parsley, for serving, optional Instructions Peel and slice the carrots into 1/2 to 1 inch pieces (smaller pieces if the carrot is thick and longer pieces if it is thin).

Take a large pan (with a lid) to medium heat on the stovetop. Add the carrots, 1/2 cup of water, and the salt. Cover and cook 8 to 10 minutes checking/stirring the carrots occasionally until they are starting to soften.

Remove the lid and add the butter. Stirring the butter in so it melts. Cook the carrots stirring occasionally until the butter/water mixture reduces slightly about 5 minutes.

Add the honey and cook another 5 to 10 minutes until the honey mixture is reduces and the carrots are cooked. Serve immediate
