passionfruit BREAKFAST PUDDING

This luscious breakfast pudding is quick and easy to make. Using coconut yoghurt adds to its tropical flavour, although vanilla works just as well.

INGREDIENTS — SERVES 4

1 1/3 cup coconut yoghurt

3 Tbsp maple syrup

1/3 cup chia seeds

1 cup milk

1 cup granola

Method

1 cup stewed, tinned or chopped fresh fruit, (peaches, mangoes)

Toasted or shredded coconut to garnish

Passionfruit pulp to garnish
