How Erika Found

Her Way to the Perfect Job

A

fter her grandmother died in 2013, Erika Vaughn spotted a Craigslist ad for a Meals on Wheels driver at Whistlestop. She recalled that the Whistlestop staff had given her grandmother such tender care, delivering meals to her and providing her with transportation to her day programs. “I decided this would be a good way for me to give back.” Erika applied, got the job as a driver and has over the past four years worked her way up to the position of Program Manager. This puts her in charge of two crucial nutrition programs offered by Whistlestop: Whistlestop’s home delivered meals which delivers nourishing meals to homebound people with chronic illness, and of course, Meals on Wheels. Erika’s day at Whistlestop starts at 6:30am. After checking her emails and doing some paperwork, she goes to the packing room to count meals. “I’m very hands-on, even as a manager. I want to connect with the volunteers – they make my day because they are all special people.” Erika is proud of the progress she has had in her department. “When

I started, my goal was to build the home-delivered meal recipient list. At that time we had 17 recipients. Today, we have 58. Also, we have 250 Meals on Wheels recipients. I am very grateful to my boss, Anita Renzetti, for her encouragement and support in helping me reach this point. “What I like best about my job is making sure that our older adult recipients receive proper nutrition that helps them age with dignity. I go to work each morning knowing I am going to be able to help people. And when I go home at the end of the day, I know I have done something meaningful to improve the lives of others.” She added that she loves her co-workers at Whistlestop. “Everyone motivates each other here. I am so grateful to be part of the team.” Outside of

She is such a selfless person and I try to be the same. I also have four children, two grandchildren and a wonderful husband. We live in Novato.”

ERIKA VAUGHN PROMOTED Erika Vaughn has been promoted to Program Manager of Meals on Wheels. Ashley Baker, Whistlestop Human Resources Director, said, “As Program Manager, Erika has responsibility for managing both Meals on Wheels (MOW) and Meals of Marin (MOM) programs, with five employees and 35 volunteers.” Erika joined Whistlestop in March 2013 as a MOW driver/assistant. In 2014, she was promoted to MOW Program Coordinator and in 2015 to Program Supervisor. Congratulations Erika!

up a dull plate of grains or lean meat. Different colored fruits and vegetables contain different vitamins to help you in specific ways. Think Vitamin A for eyes and skin, B for organ function, C for immunity, D for joints and teeth, E for blood circulation, and K for your blood – just to name a few benefits. By incorporating a variety of fruits and vegetables into your diet, your body will gain these vitamins from multiple natural sources and you can avoid the lure of expensive supplements. Vegetables are not just salads. Salads are great, adding much-needed fiber, but you can also use a variety of vegetables to spruce up your meals. Add

in some steamed broccoli florets into your pasta dish, roast some vegetables with your chicken, or pair your grilled pork chop with grilled peaches. Consider tossing some leftover, chilled asparagus or beans into a green salad. ach year, some of the most popular New Year’s resolutions are to diet, eat healthier and lose weight. While many Americans could benefit from losing a few pounds, everyone can benefit from eating healthily. Changing one’s food plan is not always easy, but it can brighten up your life. How? Adjusting your snacks and meals to include a variety of colored fruits and vegetables is a great way to painlessly improve your diet and make healthy meals attractive. Start small: try a new fruit or vegetable each week, such as red cabbage, orange bell peppers, yellow squash, broccoli, or blueberries. There are many options you can choose from to spruce

KALE SOUP BY LUIS REALPOZO Ingredients • 2 tablespoons olive oil • 1 yellow onion, chopped • 2 tablespoons chopped garlic • 1 bunch kale, stems removed and leaves chopped

For garnish: The juice of 1 lime and 2 tbsp of cilantro chopped • 2 (15 ounce) cans cannellini beans (drained if desired) • 1 tablespoon Italian seasoning • 2 tablespoons dried parsley • Salt and pepper to taste Directions

Heat the olive oil in a large soup pot; cook the onion and garlic until soft. Stir in the kale and cook until wilted, about 2 minutes. Stir in the water, vegetable bouillon, tomatoes, potatoes, beans, Italian seasoning, and parsley. Simmer soup on medium heat for 25 minutes, or until potatoes are cooked through. Season with salt and pepper to taste.

VEGETARIAN QUESADILLA BY LUIS REALPOZO Ingredients • 1/2 cup chopped red bell pepper • 1/2 cup chopped zucchini • 1/2 cup chopped yellow squash • 1/2 cup chopped red onion • 1/2 cup chopped mushrooms • 4 slices of avocado in each one • 1 tablespoon olive oil • cooking spray • 6 (9 inch) whole wheat tortillas • 1 1/4 cups shredded reduced-fat sharp Cheddar cheese Directions W h i s t l e s t o p E x p r e s s D e c e m b e r 2 017

In a large nonstick pan, cook red pepper, zucchini, yellow squash, onion, and mushrooms in olive oil over medium to medium-high heat for about 7 minutes, or until just tender. Remove vegetables from pan. Coat the same pan with cooking spray, and place one tortilla in pan. Sprinkle 1/4 cup of cheese evenly over tortilla, and layer 3/4 cup of the vegetable mixture over the cheese. Sprinkle another 1/8 cup of cheese on the vegetables, and top with a second tortilla. Cook until golden on both sides, for approximately 2 to 3 minutes per side. Remove quesadilla from pan, and repeat with remaining ingredients. Cut each quesadilla into 8 triangles with a pizza cutter. Serve hot.

histlestop is committed to making sure that residents of Marin have access to nutritious food. One of the ways we provide this access is by offering the CarePool volunteer driver program. This program allows eligible riders to request rides to and from the grocery store and get assistance with their shopping if needed. So far in 2017 we have completed 715 CarePool grocery trips for 32 riders that enable them to access nutritious food. We are lucky enough to have over 50 volunteers who have shared 463 hours of their time with us and traveled over 2,000 miles to give our riders the ability to shop for the food they need to remain active and healthy. Cynthia Whiting is one of our riders who uses the

service regularly to do her grocery shopping. Cynthia signed up for CarePool in September 2015 and notes that she has always had a wonderful experience with our volunteers and program staff. She notes that, “CarePool has been spectacular because costs at the closest grocery store are often too high. CarePool allows me to get to an affordable grocery store where I can find nutritious food and can use my cash cards.” For Cynthia, CarePool offers many advantages compared to other transportation programs available in Marin. “The drivers are all so nice, and they help with my bags. They are such welcoming and pleasant people, plus it’s a service that doesn’t cost – all other options I have to pay for.” CarePool is available to

ave learned about Whistlestop when his mother received Meals on Wheels in her later years; she lived to be 95 years old. He began delivering meals alongside a Dominican University student who needed community service hours to complete his course requirements but didn’t have a workable car. The two partnered up and delivered meals together for the entire semester. When the semester ended and the student graduated, Dave continued to deliver meals on the same route each Wednesday morning. Dave is a true Marin native, born in the Cottage Hospital on Fifth and Nye in San Rafael. He went to local public schools and apprenticed as an electrician at the College of Marin. He was an electrician in the Army, stationed for 18 months at Fort Greely, Alaska, which was the largest base in the world at that time. Then for the next 48 years, Dave worked as an electrician for local contractors all over Marin. “Dave has become my star volunteer,” said Erika Vaughn, Meals on Wheels Supervisor. “Even with a bad knee and hip, he has at times volunteered three days a week, and he has spent more than 207 hours delivering meals for our home-bound aging adults so far this year.” He likes doing something useful with his time that helps others. The people who receive the meals are homebound and often not feeling so well. They are so appreciative of the food and the friendly check in every Monday, Wednesday and Friday. “Everyone leaves behind footprints in the sands of time, but Dave’s footprints will be engraved on stone for future generations to follow. I will forever be indebted to him for all of his hard work and dedication to our Meals on Wheels program,” added Erika. ichael Pritchard will bring a bagful of heartwarming stories of the engaging children and adults he has met in his work when he performs at Whistlestop Dec. 11. Pritchard, 68, of San Rafael, is a popular stand-up comedian, youth counselor and advocate of social emotional learning. He speaks to schools, parent groups, and corporations on the topics of communication skills, diversity, bullying, and conflict resolution.

class that she was not going to live the life of her mother, who suffered from being with a violent boyfriend. The girl said she was going to stand up for herself and for others who are bullied. That was a gratifying response for Pritchard to hear because he has worked with countless students on the topic of bullying, He has worked with a number of other stand-up comedians in his career, including the late Robin Williams, a good friend. Pritchard has recently worked with Williams’ widow, Susan, to raise awareness and funding for research of Lewy Body Dementia. “Susan is very smart in science and also is an artist. That’s an amazing combination. She can address scientific concepts and describe them as an artist. She has remarkable wisdom and emotional intelligence.” He added that 47 million people worldwide suffer from LBD and, “Twenty years from now, there will be 47 million more.” When Pritchard performs at Whistlestop, his audience can expect plenty of laughs and might even be invited to a sing-along or two. His enthusiasm is contagious. On his Facebook page, he tries to post a positive statement or story every morning. A recent one: a photo of a hospital room where a dying police officer is seen receiving a final visit from his beloved horse.
