y the time Sara Steiner’s custom-made, herbal tea blends reach various farmers markets in the Bay Area, they will have gone through the most rigorous testing standards—Steiner’s palate.

“I’m more critical than the people drinking it,” says Steiner, who is the owner of San Benito Tea Company. “For me, making tea involves a lot of trial and error. You’re mixing herbs together, and out of the blend you ask yourself, ‘Does the taste sing or is it dull?’ You keep playing with it until you get what you feel best expresses the herbs. The first person that has to be happy with the product is me.” ➝ 6

HERB SENSE Among Steiner’s top selling teas is the Herbal Sun Tea, a robust infusion that contains Manzanita bark, lemon verbena, peppermint, lemongrass and marigold petals.

It’s a formula that has worked ever since Steiner started selling custom tea blends four years ago out of her self-made processing plant on her five-acre estate property and farm in the Cienega Valley. Steiner, who has over 30 years of experience in the winemaking business and is currently a consultant for the Gabilan Wine Company, grows 50 to 60 herbs for her custom-blended herbal teas, properly known as tisanes.

“Fifty to 60 herbs is a tiny fraction of what is out there, but I learn everything about those herbs and pair them up really well,” Steiner says. “I am very conscientious about what I do—every herb I have is booked for reference, and that makes me confident with what I’m doing.”

Steiner focuses on growing one or two new herbs every year, finding ones that thrive best on her property. Steiner came to realize that she could approach tea like she approached wine. Steiner

uses the term terroir, or the environmental conditions in which grapes are grown and that give wine its unique flavor and aroma, to describe the process of making quality tea blends.

“Everything I’ve learned from making wine can be translated to making tea,” she says. “When you drink wine, you gain a sense of place of where it was grown. In the same way, you want to pair up herbs so they have a certain synergy and the potential to identify where the herbs were grown. That sense of place means everything.”

Steiner sells a variety of tea blend packages at three Farmer’s Markets every week—Fridays at Monterey Peninsula College, Saturdays at Cabrillo College in Aptos and Sundays in Palo Alto—but customers can also buy her products online, at sanbenitotea.com.

Steiner loves the interaction she has with customers at the Farmer’s Markets.

“You’re pouring tea for them and having them hear what they say on the spot,” she says. “And that’s invaluable because you have some really dedicated tea drinkers out there, and you’re always learning something new.”

Last year, Steiner started growing Chrysanthemum, which is native to Japan and also the country’s national flower.

“That was a fun project because there was an older Asian woman who came and was coaching me making sure I do the best job possible on it,” Steiner says. “She would give me pointers every week to perfect it in a more traditional style.

I realized I had to cut the flowers off and dry them whole. (Once I started selling the Chrysanthemum tea blend) she tasted it and said the flavor was better than what she could get in the store. I’ve been fortunate to say that I’ve had that experience more than once.”

Steiner grew up loving nature and always had a fascination with herbs, since everyone used them in cooking. As Steiner did more research, she learned certain herbs had purported medicinal properties.

“My sister had terrible bronchitis, and I grew a couple of herbs so I could make tea for her,” Steiner says.

Although Steiner creates herb blends knowing some of the health benefits, she puts a premium on how they taste.

“In the end, you want to finish that cup of tea and have another,” she says.

ocal community members are invited to come together to support the arts when Music As Language presents its third Rock for a Reason concert on August 19. Majhon Phillips, Music As Language President, says this kind of event is important because it keeps the arts alive and supports the children—and, it’s free.

This year the theme of Rock for a Reason is “A Night at the Movies,” showcasing a lineup of movie-based songs. Films including “Footloose” and “Mamma Mia” will be featured and performances will incorporate something from each

movie throughout the program.

Phillips anticipates the concert will be a lot of fun and a great entertainment value, and hinted that a Grammy award-winning musician will be joining the students for the performance. “We wanted to create a concert where we could blend young students with professional musicians, says Phillips.

“Give them that experience.”

The 2017 Rock for a Reason concert will benefit the Morgan Hill Community Foundation and its work with the Morgan Hill Peace Project. Refreshments will be available for purchase, and a silent auction will present items

ROARING WONDER Horsetail Falls is that rare combination of breathtaking spectacle within easy reach.

Grandeur in the Desolation Wilderness

The Pyramid Creek Trailhead ($5 day use fee) is immediately above Twin Bridges. The gentle mile and a quarter climb to the base of the falls turns counter clockwise around a bulge that initially hides the falls from view. Somewhere amid all the trodden footpaths, there is likely an official trail, but it didn't really matter. With the creek to guide me and steep cliffs on each side, it was a simple matter to make my own way with no fear of getting lost.

Things changed at the base of the falls. Here, the sense of adventure deepened and continuing on meant shifting gears from casual walker to quasi-mountaineer. The deafening roar of water confirmed that the way up and alongside the Horsetail Falls would be need my full attention. Guided by occasional rock cairn

trail markers, I scrambled up a steep slope of granite and chaparral past a succession of roaring cascades. The falls never paused to rest.

A thousand feet up, I reached the top of the falls, the landscape relaxed, and I entered Desolation Valley. In all my Sierra backcountry travels, I have seen no high country as picturesque as this wilderness.

It somehow unites the cold indifference of alpine country with the warmth one might find in a Japanese garden. Desolation Valley is a web of shallow glacier-carved lakes strung along several creeks, each dotted with islands appointed with windswept pines and groundcover chaparral; perfectly placed as if from an architect's blueprint.

I paused for a bite to eat at Ropi Lake. From here, the first genuine

trail I had seen headed northeast to Lake of the Woods, but I looked west toward Pyramid Peak. Decades ago, I had twice been to the top of Pyramid Peak, but after 1,800 vertical feet of trail-less scrambling, I doubted I had the strength or even the will to do it again.

Nevertheless, I started toward the peak, edging up, over, around countless obstacles, constantly measuring the idea of a trip to the top.

By the time I reached Pyramid Lake, dotted with brilliant blue icebergs, I decided it was time to turn back.

Horsetail Falls is that rare combination of breathtaking spectacle within easy reach. In just over a mile, a hiker stands on trembling ground and looks up at a wild raging monster. If you go beyond, there are rewards, but be careful.

omeward bound on US Highway 50, around a bend just a fistful of miles west of Echo Summit, Horsetail Falls appeared through my windshield with sudden grandeur. At that very corner, the narrow conifer-clad landscape widened into a sweep of bright granite carved millennia ago by a long gone glacier.

Down the middle of that expanse, Pyramid Creek carried the immense outflow of innumerable Desolation Valley lakes down one thousand feet of roiling madness. Even from several miles away through a car windshield, the Yosemite-like power and grandeur of Horsetail Falls was palpable.

CITY COUNCIL The City of Hollister invites all to come voice your thoughts, learn and connect with local government at their first City Council Meeting for the month of September.

Meeting are held the first and third Monday of each month beginning at 6:30pm and running to 8pm. The agenda for each meeting is posted online beforehand at Hollister.ca.gov.

The meetings are held at Hollister City Hall, 375 Fifth Street.

HISTORY AND WINE California Passport Tours of Morgan Hill invites the public to enjoy handcrafted fine wines at several beautiful historical settings along Redwood Retreat Road.

The history and wine tour visits different locations every month, this time around they will hit Fernwood Cellars Winery, Martin Ranch Winery and Historic Villa Mira Monte. The tour will meet at 11:30am and run until 5pm. Tickets are $99 per person with a $20 discount if you are a member of any of the wineries.

The next tour will be on Saturday, September 2 and continues every first Saturday of each month.

ANCIENT ROME NEIGHBORHOOD DRAMA The legendary Broadway musical A Funny Thing Happened on the Way to the Forum will be hitting the stage at Pintello Comedy Theater. Inspired by the farces of the ancient Roman playwright Plautus, this wild comedy musical tells the coarse story of a slave named Pseudolus attempting to gain his freedom by helping his master win over the girl next door.

Drying Many fruits and vegetables from your garden can be dried for future use and easy storage. Grapes, peas and beans can be dried at room temperature. For other foods, you can use a commercial dehydrator or your oven. Times and temperatures vary, depending on the type of food and its thickness. fter all the work home gardeners have done preparing garden beds, pulling weeds and irrigating, summer is normally a time of plenty. Plenty to harvest, plenty to store, and what on earth are you going to do with all those zucchini?

You can make the most of your garden harvest by keeping everything fresh and harvesting fruits and vegetables as soon as they are ready. Leaving them on the vine or stem for too long and they can attract pests and diseases.

Flavor and texture also tend to deteriorate over time.

Cooking Fruits can be simmered and pureed and then either canned or frozen. It

can also be dried into fruit leather.

Vegetables can be cooked, pureed, and then frozen for later use in soups, casseroles, and other recipes. All those zucchini can be cooked into Chocolate Zucchini Cake for a popular dessert that always disappears quickly. They can also be stuffed and frozen for a simple pop-in-the-oven dinner.

Freezing Freshly picked and washed produce can be placed in a resealable plastic bag or container and stored in the freezer. If you have an abundance of tomatoes that you will be canning, this is an excellent way to retain that fresh flavor while waiting for enough ripe fruit to warrant firing up the stove. Peas and beans should be hulled before freezing,

I relayed all this information to our seniors here at Live Oak Adult Day Services, and it sparked many to reminiscence about county fairs of their youth. Bill enjoyed all the animals, especially the roosters. “I saw one that was as big as a turkey!” he recalls, and goes on to mention that it was required of kids in 4-H to show their animals at the Texas fair near his home. Marie loved the county fair near her house in Idaho. She sampled all the food, from funnel cakes to cotton candy, but has no memory of the more creative fare typical these days. “Deep-fried butter? Really?” she asks in disbelief.

ounty fairs and state fairs are in full swing by this time of the summer. I am planning on attending one to try what sounds like a horrible, wonderful treat, the deep-fried Twinkie or, even better, the deep-fried Oreo. I keep hearing how delicious they are. Fairs specialize in food that is bad for you, but hard to resist. Some of the items on tap at fairs around the country right now include deep-fried butter, spicy chicken-stuffed dill pickles smothered in blue cheese, fried jelly beans, and a hot beef sundae (just like an ice cream sundae, only made with mashed potatoes and beef sauce instead of ice cream and syrup), and fried beer.

show her support. Tim used to raise cows to show at the Santa Clara County Fair. He recalls that it was very hard work, but a good learning experience for kids his age. Plus, he got his investment back and made a profit when he sold his cows at the end of the fair. He liked the cotton candy and corn dogs he would nibble on between events, but actually thinks that fried beer would be worth a try. We puzzled over how one would go about frying beer, and decided as a group that it must be frozen in cubes first and then fried so it doesn’t melt.

Other Live Oak seniors remembered all the collections displayed at fairs, from hand-sewn quilts to shot glasses from Las Vegas casinos. “People collect things that I would never think of saving,” said one man, “like matchbooks and spoons.” I told them about a woman I knew who won a blue ribbon for her postage stamp quilt, in which each quilt piece was the size of a postage stamp. She worked on it for more than a year, and fairgoers marveled at her patience for such an intricate project. Others here fondly recalled the food pavilions full of homemade jams, jellies, cakes and pies, many proudly displaying their own blue or red ribbons. Pie-eating contests were often held in that area of the fairgrounds, and we all decided that blueberry pie would be our favorite for stuffing ourselves with.

And all the fair rides were memorable, too, from the tilt-a-whirl ride, to the spinning teacups, to the merry-go-round. One woman vividly recalls feeling nauseous riding on the Ferris wheel. “It looks so gentle, but that drop from the highest point back down to the ground made my stomach feel like it was dropping, too.” Just imagine if she had boarded the Ferris wheel after a meal of deep-fried jelly beans and a hot beef sundae, all washed down with deep-fried beer.

“Do they even have county fairs anymore?” she wondered. That question would probably give nightmares to fair organizers.
