We have the tandoori salmon. Tandoori salmon you find everywhere, all over Indian restaurants, most of them anyway. If you look closely at ours, the marinade is different. It’s marinated in black pepper, green pepper and red pepper. When I came here to the Bay Area, peppercorns were quite abundantly available. In India, we only have black [ones] that are fresh. So I made a marinade of black, green and red with yogurt, ginger and garlic.

It gives that slight peppery punch to it. But it’s not very hot at the same time and it marinates the meat very well. I don’t need to cook the salmon for very long, so it’s quite juicy. —Aaron Carnes

GARLIC BREAD AND pizzas wouldn’t usually be the first things that spring to mind as Asian fusion dishes, but on the menu at the new downtown San Jose eatery Nomikai they keep company with other dishes that fall a bit more obviously into the genre, like sweet chili chicken wings, octopus dumplings or kimchi fries. And to be fair, the garlic bread is served with a Japanese eggplant spread, while many of the pizzas have toppings that draw on Asian flavors, such as duck with hoisin sauce or Japanese eggplant with Chinese broccoli and roasted red peppers. In any case, these typically Italian staples are dishes that are almost always meant to be shared—key because Nomikai’s tagline is “social food.” The restaurant’s concept is small plates and communal dining.

Nomikai is the reincarnation of Koji Sake Lounge, which operated for seven years on S. First Street. As part of its remodel, the restaurant changed out its low lounge couches for large dining tables that can accommodate big groups or smaller parties seated communally. The revamp also extended to the menu. Though sake definitely hasn’t been forsaken—the cocktail menu, for instance, still features sake-based favorites like the lychee martini—the establishment now offers a full bar. Japanese whiskeys are the star ingredients in new cocktails like the Japanese Old Fashioned, Salaryman or Hakushu Highball. Other cocktail offerings include the Ginger Margarita, Tokyo Sunrise and Thai Basil Mojito.

Currito Creation THROUGH RESTAURANTS LIKE Chipotle, the build-your-own meal model has thrived in the past few years. Curry Pundits, which opened in late 2013 on Santa Clara Street in downtown San Jose, applies the same concept to Indian cuisine. Diners create their meal starting with a choice of one of five bases: a currito (a curry burrito that swaps out the tortilla for roti bread), curry taco, curry rice bowl, salad or Bombay Frankie (a whole wheat flatbread). Options for fillings range from chicken, beef, pork or lamb kebabs ($6.50-$6.75) to tandoori spice-marinated paneer (cheese) and two vegan-friendly choices, grilled veggies or sauteed tofu ($6.25). Choose one of four curries—spicy vindaloo, tikka masala, creamy spinach curry or mild coconut ginger— to top off the creation.

The menu also includes sides such as samosas ($1.25) or aloo tikki (fried pea and potato patties, $1). For dessert, there’s coconut cake or panna cotta with mango and cardamom ($2 each).

You aren’t going to stop lusting after Uncle Romeo; what you can stop is the behavior that follows: running off to have a sex date with him. Tell him it’s over, and then come up with replacement behavior—maybe doing an hour of killer cardio—to plug in whenever the uncle lust bubbles up. To help maintain your resolve, especially at first, consider the kind of woman you want to be. Do the sorts of things this woman would do and avoid doing the sorts of things (and people) she wouldn’t. For example, it might be nice to find a guy who loves being around your family, but not because he’s already married to somebody in it. And finally, when you’re thinking of activities more in keeping with the new you, consider the obvious—that if you’re meeting your sex partners at family gatherings, you really need to get out more.

THE STRAIGHT DOPE

I was in the Costco liquor section when I happened upon a locked display case with three bottles inside (one whisky, one cognac, one I can’t remember), each priced upwards of $2,500. I imagine anyone who bought one would be heavily influenced by "buyer's bias" regarding the actual taste; still, I’d think that an average, uneducated drinker could pick out the ultra-expensive bottle from a $30 one in a blind test. What can science tell us about why an extremely highquality and typically older alcohol would be so much more pleasant to drink, and thus much more valuable? —Morton Christopher Science can tell us plenty about booze, Mort. However, the relevant discipline shifts as we rise in the price scale. At the low end, where we’re talking about beverages commonly drunk from paper bags, chemistry can easily demonstrate what separates rotgut from the decent stuff. Above a certain point, however, we find more useful insight in psychology, if you take my meaning. The question is where that shift occurs. In bitter moments I tend to say it’s around ten bucks a bottle, although having had a tasty if somewhat pricey Chateauneuf-du-Pape the other night I can see where you might objectively demonstrate that $100 was money well spent. But $2,500? Sorry, this is prima facie evidence of the madness of crowds.

With the exception of pure ethanol, alcoholic beverages are complex mixtures of chemicals derived from the raw materials plus the containers they’re aged and stored in. Variations in taste generally arise from differences in volatile organic compounds (VOCs), which give the brew, vintage, or what have you its characteristic smell—not the common term, particularly among wine enthusiasts, but let’s call a spade a spade.

The VOCs potentially found in alcoholic beverages make for a long list. Here are some things you might detect if your man cave is equipped with a mass spectrometer: Proanthocyanidins, tannin colloids, and flavan-3-ols all contribute bitterness and astringency to wine.

“Nuttiness,” considered a desirable quality in Scotch whisky, can often be traced to the presence of pyrazine compounds, whereas 2-furanmethanol imparts an aroma variously reminiscent of popcorn, earth, and feet.

Scotches made from malt smoked over peat fires acquire phenolic traits so distinctive chemists can sometimes identify the original peat bog. When researchers analyzed 1890s Scotch recovered a few years ago from Ernest Shackleton’s Antarctic camp, its phenol profile was correctly traced to a bog in the Orkney Islands.

Still, while we know in a general way which VOCs are associated with what taste, that’s a long way from saying we can

detail with any confidence the chemical differences separating an award-winning beverage from an OK one.

In many cases these differences are minute. For example, the subtle taste of “greenness” in a Sauvignon Blanc arises from methoxypyrazine compounds, detectable by humans in the parts per trillion. The best means of judging quality, therefore, remains the human nose and palate.

These make for an imperfect instrument. Nowhere is this more evident than in the world of wine tasting: In 2005 judges at the California State Fair Wine Competition were unknowingly served certain wines three different times on different days. Individual tasters’ scores for the same wine varied widely, in some cases from 87 points (nothing special) to 95 (primo).

In a blind tasting, 54 students in the wine program at the University of Bordeaux were tricked into perceiving a white wine as a red simply by adding food coloring to it.

Con man Rudy Kurniawan fooled wine experts from around the world with his counterfeits of rare wines made with cheap Napa Valley product and photocopied labels. He was finally tripped up when he tried to auction faux vintages dated decades before the wine in question was ever actually produced.

Does that mean alleged differences in alcoholic beverages are BS? Depends on what you consider differences. When nonprofessional tasters were trained to use a standardized whisky-tasting vocabulary and then given samples of 40 blended Scotch whiskies, their assessments generally corresponded with the four categories of whisky being tested (deluxe, standard, cheap, and West Highland). In a separate study, the four categories were themselves found to have distinctive chemical signatures. In other words, it was possible to sense broad variations in quality, and those variations had a chemical basis.

On the other hand, consistently distinguishing a presumably exquisite $2,500 bottle from a merely excellent $100 one . . . eh, maybe somebody with an unusually sensitive palate could do it. You or me? That I doubt.

Mellow mahoganies and resonant russets will work well for you, too. They will all be part of life's conspiracy to get you to slow down, deepen your perspective, and slip into the sweetest groove ever. In this spirit, I urge you to nestle and cuddle and caress more than usual in the coming months. If you aren't totally clear on where home is, either in the external world or inside your heart, devote yourself to finding it. Hone your emotional intelligence. Explore your roots. On a regular basis, remember your reasons for loving life. Stay in close touch with the sources that feed your wild soul.

TAURUS (April 20-May 20): For years, French

painter Édouard Manet and French poet Stéphane Mallarmé hung out with each other every day.

Mallarmé referred to their relationship as “the most complete friendship.” They influenced each other to become better artists and human beings. I'm guessing that in the coming months, Taurus, you'll thrive on that kind of stimulating companionship. Having such regular contact with a like-minded ally might even be an important factor in ripening your intelligence. At the very least, I predict that soulful friendship will be a crucial theme in 2014. You will attract blessings and generate luck for yourself by deepening your ability to cultivate synergistic bonds.

GEMINI (May 21-June 20): St. Peter's Basilica is a very old church in Vatican City. It contains a life-size bronze statue of St. Peter that is at least 700 years old. Over the centuries, countless visitors have paid their respects by kissing and touching the feet of the idol. The metal composing the right foot has been so thoroughly worn down by these gestures that the individual toes have disappeared, leaving a smooth surface. You will have a similar kind of power in 2014, Gemini. Little by little, with your steady affection and relentless devotion, you can transform what's rigid and hard.

CANCER (June 21-July 22): Big rivers don't travel in straight lines. Their paths are curvy and complicated, with periodic turns and bends. In some places they flow faster and in others they're slower. Their depth and width may vary along the way, too. Your own destiny is like one of those big rivers, Cancerian. In some years, it meanders for long stretches, slowing down as it wanders along a crooked course. It may even get shallower and narrower for a while. But I expect that in 2014, you will be moving more rapidly than usual. You will be traveling a more direct route, and you will be both wide and deep.

LEO (July 23-Aug. 22): “In games there are rules,” writes science fiction author Kim Stanley Robinson, “but in life the rules keep changing.” This is always true, of course, but I think it will be an especially poignant truth for you between now and your next birthday. During the coming months, you may sometimes feel as if every last law and formula and corollary is mutating. In some cases, the new rules coming into play will be so different from the old rules you've been used to, they may at first be hard to figure out. But now here's the happy ending: It may take a while, but you will eventually see that these new rules have an unexpected logic and beauty that will serve your future well.
