Well, looks like he’s done himself in!

One lone strand of stubble emanated from his upper lip, like a monolith in an open field. It caught my eye as soon as I walked in to the interview. My inner voice is having to scream, “Stop staring at it! Keep eye contact!” It’s difficult concentrate on his questions when I have so many of my own. Did he leave it on purpose? Is he saving it?

Or did his razor just miss it? Do I even want to work here, based on the lack of attention to detail that my potential boss is wearing on his face? Is this a test?

Does he want me to point it out to him? Can I pluck it?

Do I have any stray stubble on my own face? Do I have OCD? I think I saw him notice me staring at his upper lip.

“Stop staring at it! Keep eye contact!” I’m now pretending to thoughtfully consider a question while I casually run my right hand over my face to inspect for stubble.

All clear. This confirms that I have the upper hand. I’ll have him reporting to me in less than a year. I still want to pluck it.

Pay Up Last year, San Jose voters passed a ballot measure that would move salarysetting power from the City Council to an appointed commission. The goal was to end the longstanding practice of councilors setting their own pay increases.

On Monday, the inaugural threemember Salary Setting Commission made a stunning recommendation.

Commissioners EILEEN CONSIGLIO, DAVID BURCKHARD and DOUGLAS LUDLOW suggested upping Mayor SAM LICCARDO’s yearly pay by $58,000 to $190,000 and that of each council colleague by $27,500 to $125,000.

According to a survey by the commission, that would bring the council more in line with other major cities. San Francisco Mayor LONDON BREED makes $326,000 and They LIBBY SCHAAF in smaller Did Oakland pulls down What? $203,000 in annual SEND TIPS TO compensation.

COM and Ludlow said boosting council pay would help attract strong candidates. “The commission felt strongly that the salary should empower good candidates who can devote their full time to the position,” they wrote in a joint letter to DAVID SYKES. A host of residents begged to differ.

Even Liccardo said that’s not a good look if the city’s going to ask other employees to tighten up in the face of looming budget shortfalls.

Liccardo said he’s pretty sure this isn’t what voters had in mind when they passed Measure U last fall. “Our city colleagues don’t earn salary increases of that nature, and we have ominous signs of budgetary challenges ahead,” he wrote in a memo to the council Tuesday. “That’s why I’m calling for a reduction of the mayoral salary increase to something more modest.”

Instead of a 22 percent bump up, Liccardo pitched a 3 percent annual raise—max. He didn’t weigh in on the proposed raise for the rest of his colleagues.

HEN MITCH LIU’s cellphone suddenly stopped working on a Monday in midFebruary last year, the founder and CEO of Cupertino-based streaming platform SLIVER.tv knew to act fast.

The 48-year-old Los Altos resident called AT&T, which informed him that someone claiming his identity and armed with his Social Security number walked into one of the mobile provider’s stores to request a new SIM card. By texting from the stolen phone number, the SIM thief

reset the password to one of Liu’s secondary Gmail accounts before AT&T regained control.

Five weeks went by before the next hack. At 11:55am on March 19, 2018, Liu got a text from AT&T notifying him of another password change— this time to his primary emails, which held a fount of personal and financial information. Using Google’s two-factor authenticator, the hacker began resetting passwords to Liu’s cryptocurrency exchanges. Some $10,000 went missing.

A day later, Liu’s wife got a call from her husband’s number. Liu answered to hear a voice at the other

end of the line that sounded deep and robotic—clearly disguised. Liu hung up.

The caller persisted, sending texts to Liu’s daughter. “TELL YOUR DAD TO GIVE US BITCOIN,” one read.

Police say the hacker also slid into Liu’s social media accounts. Posing as Liu, the identify thief began hitting up contacts about borrowing cryptocurrency.

REACT—short for Regional Enforcement Allied Computer Team—responded by hacking the hacker.

Using call details obtained from AT&T by a search warrant, they mapped out the suspect’s whereabouts, which centered around Boston. Records further revealed that the Samsung device to which the hacker switched Liu’s number was associated with an email for Joel Ortiz, a then-18-year-old high school valedictorian who still lived with his mom about a mile-and-a-half from Harvard University.

Turned out, Liu was merely a test run.

REACT detectives discovered that Ortiz stole more than $7.5 million from upward of 40 victims—two of whom reside in Silicon Valley.

The young man—who spent his ill-gotten gains lavishly on $100,000 nights at Los Angeles clubs, Airbnb mansion rentals, private helicopter rides to music festivals and designer luggage and clothing—agreed to pay restitution and pleaded no contest on Jan. 24 to 10 felony counts of theft. On Friday, Santa Clara County Judge Edward Lee sentenced him to a decade in prison.

The case, first reported by the Mercury News, proved remarkable— and not just the youth of the perpetrator and the flamboyantly reckless way he frittered away his loot and bragged about it online. It was a first in more ways than one.

For REACT—a small unit of local officers managed by the Santa Clara County District Attorney’s Office and one of just five such task forces in California—it was the first investigation of its kind. Officers pursuing Ortiz say they knew next to nothing about illegal SIM-swaps when they launched the probe, which turned into the kind of interstate operation typically handled by federal agencies.

By the time officers caught up with Ortiz at LAX last summer, it became the first arrest of its kind—not just for REACT, but nationally. And when Ortiz copped to the crimes earlier this year, he became one of the first in the country to be convicted of pilfering digital money through cellphone hacking.

Ultimately, Ortiz’s irresistible urge to gloat about his heists led to his capture—and a few critical missteps led the REACT unit to other suspects.

Xzayver Narvaez, a 19-year-old from Tracy, was arrested in mid-August last year after police noticed that a cellphone used by Ortiz for SIMswapping had been used to log into a Google account identified as xzavyer. narvaez@gmail.com. Narvaez, who allegedly spent the proceeds of his crypto-heists on high-end sports cars, is now on supervised release at his Central Valley home and due in court May 2 for a preliminary hearing.

On Sept. 24, REACT arrested Kansas City native Joseph Harris on

suspicion of pillaging $14 million in cryptocurrency tokens from San Jose-based Crowd Machine CEO Craig Sproule. A few months later, detectives busted Fresno’s Kalvin Ung for allegedly stealing $500,000 in cryptocurrency from a dozen victims. New York City’s Nicholas Truglia was subsequently arrested for numerous alleged SIM swap-related thefts throughout the US, including one that took $1 million from a Cupertino dad’s college fund for his daughters.

Deputy DA Erin West said the accused SIM-swappers have almost nothing to show for their alleged crimes. Police seized $400,000 from Ortiz, but say the rest of those millions were either spent or hidden.

“These are not Robin Hoods,” West said in announcing the sentencing this week. “These are crooks who use a computer instead of a gun.

They are not just stealing some ethereal, experimental currency.

They are stealing college funds, home mortgages, people’s financial lives.”

All three men are held at the Elmwood Correctional Facility in Milpitas.

Cybersecurity expert Brian Krebs, a former Washington Post reporter who runs the site KrebsOnSecurity. com, told Metro that the only way for consumers to protect themselves from heists like the one pulled by Ortiz and his ilk is to disconnect their cellphones from anything they care about online. That’s because PINs and security questions can be bypassed if somebody pays off a mobile phone company clerk to override those safeguards.

“So many places online require you to provide a phone number when you set up an account, which means that if somebody gets control of your phone number, they can then reset the password for a ridiculous number of accounts,” he said. “And all these mobile companies say they can put passcodes and PINs in place, but none of that matters if there’s crooked employee.”

Krebs advises people to use a Google Voice number for account sign-ups instead.

“Mere mortals cannot get Google on the phone, so, in a weird way, that’s a benefit,” he said. “There’s no employee there to bribe.”

A Life’s Work Beethoven biographer spent decades poring over Ludwig van’s life

ACK IN THE good old days when broke freelance writers became U.S. diplomats, Abraham Lincoln sent Alexander Wheelock Thayer to the Austrian port city of Trieste to work as the U.S. Consul General. By the time Thayer started his official diplomatic mission on Jan. 1, 1865—a post he would hold for almost 18 years—he was already decades into a research project on Ludwig van Beethoven.

Thayer would eventually become

the first writer to produce a reliable biography of the irascible composer, which is why a new exhibit, The Art of Biography: Beethoven and Steinbeck, just opened in the Martin Luther King Jr., Main Library. Organized by two SJSU institutions on the library’s fifth floor, the Ira F. Brilliant Center for Beethoven Studies and the Martha Heasley Cox Center for Steinbeck Studies, the exhibit celebrates Thayer’s life as well as that of Steinbeck. In the latter case, a new Steinbeck biography, written by William Souder, Mad at The World: John Steinbeck and the American Century, is in the works. Souder will keynote the upcoming 2019 Steinbeck Conference at SJSU May 1 through 3.

Since Steinbeck is more than well known, I will fixate on Thayer for the moment. The Art of Biography, while not a museum-quality exhibit by any stretch, presents a wonderful selection of documents, photographs, letters and even Thayer’s original uniform from his U.S. Consul days in Trieste, shedding light on a relatively unknown yet fascinating character.

Thayer was literally obsessed with Beethoven’s life.

Born in Natick, Massachusetts, Thayer attended Harvard, where his work as an assistant librarian fueled his passion for books and historical research. After graduating with three degrees, he decided to fully investigate Beethoven’s life. In 1840, when Thayer was in his early 20s, Anton Schindler published his own biography of Beethoven, riddled with what Thayer already knew to be inaccuracies, so at first Thayer merely wanted to set the record straight and produce a more scholarly work than the one produced by Schindler. Over time, however, this pursuit blossomed into a lifelong project that was both a magnificent obsession and a healthdamaging burden.

In the exhibit, we get maps detailing three research trips Thayer made to Europe beginning in 1849.

He crisscrossed the continent, tracing Beethoven’s life, and by 1862 had already settled there permanently.

His diplomatic life began as an assistant to the U.S. diplomatic minister at Vienna, where he lived for three years. In 1866, just after his appointment to Trieste, the first volume of Thayer’s Beethoven biography appeared, albeit translated into German, followed by volume two in 1872 and volume three in 1879. At this point, he was suffering from terrible migraine headaches and could not complete the fourth volume. After retiring from the diplomatic corps, he died in Trieste in 1897. It would be another 25 years before the complete biography was published in English.

Thayer was also a traveling journalist who reported on musical activities in Europe for several publications back home, including the Cambridge Chronicle and The New York Daily Tribune. He also wrote for Dwight’s Journal of Music, a highly regarded journal of the time, submitting diarystyle columns detailing numerous experiences at home and abroad. Even though his byline appeared in a variety of places, his freelance career was never lucrative and he never made a dime writing his biography of Beethoven, once it was published.

As always, the stories behind the collections are even more enlightening. For example, the Beethoven Center recently acquired a significant collection of over 200 items from Thayer’s descendants, including his uniform from when he served as US Consul to Trieste. We see it on display, including the jacket, pants, gloves, hat and a sword with two ornamental mother-of-pearl pieces on the handle.

We also see correspondence from 1965 between Thayer’s descendants and the American consul in Trieste at the time, regarding the state of Thayer’s gravesite. The lease on the plot had long since expired, and everyone had forgotten the grave was there until a former consulate employee rediscovered it. Thayer’s great-niece, Mrs. Gertrude Behr, had to wire a bank draft of $130—equal to 80,000 Italian lire—so the cemetery could rebuild the monument and properly display it.

Kitchen On Silicon Valley’s competitive culinary scene, fortune favors those who carve their own path BY NICK VERONIN

A

S IS THE case for many who work in the food and drink industry, Monday is typically the day that chef Josh Hanoka gets to take a breather. It is the one day of the week when his Willow Glen restaurant Braise isn’t open.

Today, however, he and Braise cochef Anthony Jimenez are hosting a private party of wine industry folks.

So they each have a bit of prep to do before they can put down their knives and talk shop.

Taking a rare moment to actually sit at a table on the sidewalk patio of their Lincoln Avenue storefront, Hanoka says he often avoids hanging out with his partner outside of business hours.

It’s not because the two don’t get along. Rather, Hanoka says, it is hard

to avoid bringing the kitchen with them wherever they go.

“This job takes a lot from you,” he says. “It’s all nights, weekends and holidays. Anytime people get together, that’s when you’re working.”

Jimenez nods in agreement: “It’s an at-all-costs kind of thing.”

But as the morning gives way to a warm, breezy afternoon, the two seem relaxed, and Hanoka says he is enjoying the chance to revel in just how far he and Jimenez have come.

This is more than a quiet celebration of a well-earned achievement; it is also a demonstration of the restraint Hanoka and Jimenez have learned to exercise over the course of their careers. After more than 20 years of working in restaurants and more than a decade of calling the shots in the kitchen, both men know

better than to cheer too loudly for themselves.

Even after the success Hanoka has seen with his former sandwich shop—Bray at the San Pedro Square Market—and with the downtown drinking establishment Cinebar, where he is a co-owner, he knows that things can, and often do, go awry in this business. Jimenez knows as well. Opening Braise was a challenge, with plenty of unforeseen obstacles.

First there were issues with financing. The pair celebrated landing a loan twice before they actually secured funding. “We had gotten the loan—in writing—and everything was good, and then the bank would call,” Hanoka remembers.

Then there were hiccups in the permitting process. Though they’d planned to open in the middle of 2017, changes made to the building by a

“There were a lot of sleepless nights and a lot of anxiety,” Hanoka says.

And then there was the fire, set off by a faulty power box attached to the back of the building. Hanoka was doubly lucky: He was near enough to hear the crackling and buzzing— which alerted him to the blaze—and fortunate that the fire extinguisher he reached for in that moment didn’t act

The fire forced Braise to close for a few months last summer, and while things are going well now, both men still wonder about the momentum they lost.

DIFFERENT STROKES Hanoka and Jimenez have faced plenty of hurdles on the road to making Braise a reality. But their path to success mirrors the paths of so many up-and-coming cooks and chefs currently working their way through the kitchens of Silicon Valley.

15 It is a business in which there is no clearly defined career trajectory.

Hanoka earned an associate’s degree from Johnson & Wales University’s culinary school in Denver, while Jimenez learned his craft at the soon-to-be-shuttered International Culinary Center campus in Campbell.

Some manage to climb the ranks within a single organization, while others bounce around from gig to gig, picking up as much as they can along the way and parlaying each job change into a higher title.

“In this industry, you can start as a dishwasher and become the chef of a restaurant,” Hanoka says.

That’s what Marshall Reid did.

Reid, who spent his 20s working odd jobs and playing music in a touring band, got his first job in a kitchen at 30 years old. He literally asked a former high school classmate if he could wash dishes for him.

Matt Close, who got his own start as a dishwasher, gave Reid a food prep job instead—at Firehouse No. 1 on San Pedro Street in downtown San Jose. Not long after, Reid found himself working as a line cook. He didn’t know the first thing about working in a professional kitchen.

From the Firehouse, Reid moved on to Cafe Stritch, where he learned from that restaurant’s founding chef, David Ramsey, who now runs the kitchen at LVL Up in Campbell.

After a stint at Stritch, he was off to Morton’s Steakhouse and then Alexander’s Steakhouse, where he worked his way up to a lead cook.

A Facebook message to the chef of Naschmarkt Restaurant led to an opportunity at the Viennese restaurant in Campbell. He stayed only a few months before jumping ship in the hopes of starting a new restaurant in Redwood City with a former Alexander’s colleague. The project fizzled quickly and Reid struck out on his own, hosting his first popup kitchen at the recently shuttered Social Policy, which led to a job running the kitchen there for a time.

He left about a year ago to consult and run pop-up kitchens. He hopes to open his own Mexican-inspired restaurant later this year.

You will work with people who went to a fancy culinary school and you haven’t. Somehow you end up on the same track.”

Hanoka and Jimenez—who are both around Reid’s age—wonder sometimes if they would still be in the same place without their official training. They’re certainly glad to have it. Hanoka says the business and bookkeeping he picked up at Johnson & Wales has been invaluable.

However, they both agree there is no substitute for hard work and learning on the job.

“We went the culinary school

route,” Hanoka says, “and I struggle to hire culinary students. To be honest, I always feel like they kind of have a big head.”

NICHE MARKETING Reality TV portrays professional kitchens as pressure cookers boiling over with ego. On programs like Hell’s Kitchen and Iron Chef, only the strong survive, while the rest are sent packing. This shapes the popular imagination of what it means to be a working chef: Either you win big or you go home.

KITCHEN CONSEQUENTIAL in Silicon Valley are a part of our region’s massive tech sector.

“A lot of people assume a kitchen runs on aggression,” says Wendy Neff, who works as a superfood chef for one of the largest tech companies in the valley. “There’s this idea that a chef is supposed to be someone who is really aggressive and intense. That the world of food is so strong and competitive and angry. I think it’s really damaging.”

Making things that no one else can make— that’s how you stand out’ —WENDY NEFF Neff may be particularly tuned into the most damaging stereotypes about chefs because she makes food that is meant to reverse damage.

“Food can literally help someone work through a time in which their health is not at its best,” she says, explaining what she means when she talks about superfood. “Food can literally help someone heal from an illness. Food can literally support the immune system.”

In her role, Neff craft recipes from nutrient-rich, non-processed and often raw foods, with a focus on sustainability and seasonality. It is a highly specialized position, which she

18 says has helped her raise her profile in a crowded field.

Neff got her start at Good Karma Artisan Ales & Café. Working at a vegan restaurant piqued her interest in cooking healthy, and that’s when she decided to go to school for holistic nutrition. In school she learned how to cook for those with special dietary restrictions and allergies—like those with a gluten sensitivity—while sacrificing as little flavor as possible.

Some of her specialties include gluten-free breads and a marinated, thinly sliced beet with the texture and taste of smoked salmon. When paired with a non-dairy cream cheese, the combo allows vegans with celiac disease to enjoy flavors they would otherwise miss out on.

“For me, carving out a niche is what made me really grow,” Neff says.

“Making things that no one else can make—that’s how you stand out.”

MIX & MATCH Hanoka and Jimenez know how to grab the public’s attention. One of Braise’s signature dishes is the head-turning peanut butter, jelly and bone marrow sandwich. It’s the kind of dish that gets diners talking and builds a buzz—but it also works. The savory, rich marrow harmonizes with the warm and familiar salty-sweet of the peanut butter, while a freshly pressed fruit jam lends a tangy pop.

But the PB&J with marrow is but one item on a creative, well-rounded menu that incorporates New American, French, Italian, Mexican and Asian influences and features plenty of fresh vegetables alongside unique proteins.

Their green papaya salad is made from shredded strings of young, unripe papaya and tossed with thinly sliced jalepeño, peanuts, a garlic-citrus dressing, cilantro and ginger.

Braise’s main dishes include a hamburger and a New York steak, as well as a soulful, sweet-and-savory fried chicken dish along with a whole roasted fish which is served with the head still attached and painted in a lemon- and caper-infused brown butter sauce.

KITCHEN CONSEQUENTIAL After the main course section of the menu and before the desserts, there are three “Braised” dishes to choose from—pork cheek adobo tacos, mushroom cannelloni and the standout lamb tongue pastrami.

Reading the menu alongside Hanoka and Jimenez’s resumes, it is clear that they are incorporating pieces of everything they have learned along the way.

Both men attended Leland High School in San Jose and plotted different routes into professional kitchens. For Hanoka, a rambunctious youth led him to splitting his time between Leland and the Central County Occupational Center, where he discovered his love of cooking.

Jimenez was exposed to the kitchen life at home, where as the youngest boy of a large Latin American family, he was tasked with helping his mother prepare meals at an early age.

They each worked in entry level restaurant jobs during high school—as busboys in pizza joints and front-of-house staff at chain restaurants. Eventually, they made their way into the kitchen. After their respective stints in culinary school, the two worked together at Emile’s in San Jose, picking up lessons from the restaurant’s then-celebrated Chef Emile Mooser. There, Hanoka and Jimenez were driven hard and learned many techniques they still carry with them to this day.

After working his way up to chef de cuisine at Emile’s, Hanoka moved to the East Coast for a time. He ran a large restaurant in Cape Cod, witnessing firsthand just how dialed in and mechanical an operation could be. He was in charge of four shifts of cooks, servers and other staff; there were teams working around the clock.

By the time he moved back to San Jose, Hanoka was ready to open his own business, though he wanted to do something much smaller and boutique. He found success with Bray Butcher Block & Bistro at the San Pedro Square Market—but not before he was turned down by more than 50 potential investors.

20 After finally scraping together enough money to build his custom stall and open Bray, he learned new lessons about the restaurant business—like paying attention to what is selling and what is not, and refining his offerings to meet demand.

“It taught me humility for sure,” Hanoka says. “We are chefs, so we have egos, and we have our thoughts of what we think is absolutely perfect and right. I had to look at it like, ‘It doesn’t matter what I want. I have to look at what my customers want.’”

During Bray’s five-year run, Hanoka also picked up an ownership stake in Cinebar, a venture that came with its own set of lessons— including how to keep the price of drinks down and how to buy and stock liquor. It also got him reading industry publications and keeping up with trends.

All the while, Jimenez was charting his own path through local kitchens—working for the E&O Trading Company, then Parcel 104 and finally as founding chef at The Table in Willow Glen.

Though he can’t remember exactly how it came up, Jimenez says it was a casual conversation with some of the back of house staff at The Table that led to the PB&J and bone marrow combo. “I think we started talking about, ‘Oh, have you ever eaten white bread with butter and sugar and cinnamon untoasted?’” Jimenez recalls. “Then we started talking about PB&J.” At the time, foie gras had been banned from kitchens in California, and he and his staff started musing about how they might find a similarly lavish ingredient to adorn the elementary school staple.

Jimenez says it is conversations like these—“Who makes a better s’more?”—combined with a passion for home cooking and the technique learned from chefs like Mooser, that inform the Braise menu.

“What we’re really trying to do here is not box ourselves in,” Hanoka adds.

“We’re not a cuisine; we’re just two chefs trying to make good food. Of course, you can’t stick that on a menu.

So we say we are taking a progressive approach on classic cuisine.”

Freshly Squeezed As cider’s popularity grows, two local entrepreneurs elevate the craft

L

IKE SO MANY who venture overseas, Claudia Derp was forever changed by her trek through Europe. Five years ago, before she boarded her flight, Derp had been in talks with a friend about starting a wine bar. By the time she returned, Derp had a different plan.

Her thinking began to evolve one evening in the United Kingdom when she happened to take a seat in a cider bar. “What is this?” Derp recalls thinking as she raised the fruity, bubbly and refreshing alcoholic beverage to her lips. And then: “This is awesome!”

As she continued her tour, she made a point of sampling more.

When she got back to the states, Derp went straight to her wine friend, Tracy Smith, with the news. They ultimately changed course, turning from wine to cider.

It was a natural pivot for Smith, who has more than a decade of

experience in winemaking. Though it is often lumped in with beer on restaurant menus, cider has more in common cabernet than IPA. Unlike beer, cider is produced by fermenting apple juice, not malted barley. Unlike beer, cider production requires no heating or cooling, as ales and lagers do. And unlike beer, no water is ever added to the apple mash. Technically, cider is a fruit wine.

Smith and Derp began experimenting with producing their own ciders.

However, as they dove into broader market research, the two discovered that craft cider is harder to come by than artisanal wine or boutique beer.

When it comes to beer and wine, Bay Area denizens—and Californians in general—have earned the right to be snobs. There are more wineries and breweries here than in any other state. By some counts, there are close to 4,000 vintners and 900 beer makers in the Golden State. There are far fewer cider producers—less than 100.

have few opportunities to ply their wares beyond their own taprooms.

They landed upon the concept of a cider bistro where they would serve small plates and cider. “We wanted to showcase what other makers make, instead of being that place fighting for that one tap handle in the restaurant,” Derp says. The Cider Junction Bistro & Bottle Shop opened in fall 2017 at the intersection of Willow Street and Bird Avenue in San Jose.

Judging by a report published last year by the US Association of Cider Makers, Derp and Smith are onto something. According to the industry group, 2017 marked “the year of regional cider”—the major alcoholic beverage conglomerates, like MillerCoors and Anheuser-Busch InBev, saw slumping cider sales, but independent producers saw major growth.

Since starting their cider project, Smith and Derp have taken many road trips throughout California and into Oregon. They are constantly on the hunt for the best cideries within a one- or two-day drive. “We want to showcase only craft cider makers,” Derp says.

For Smith and Derp it often comes down to the apples themselves.The biggest difference between craft cider and commercially made stuff is that craft makers start out with 100 percent apple juice that they’ve either grown themselves or purchased— never from concentrate. “The process is important to us,” Smith says.

In order for something to be legally labeled a cider, it must contain a certain percentage of apple juice.

Here in the US, it must be 50 percent apple juice to be considered cider. The UK has the lowest requirement—a mere 35 percent. The French insist on 100 percent apple juice, naturally.

America’s relatively lax regulation on what constitutes a cider allows U.S. cider makers lots of room for experimentation. It is common for cideries in this country to meet the halfway mark with apples and then “back-sweeten” the remainder with other fruits. I was impressed with the many combinations on tap at Cider Junction. I sampled cups of rhubarb-, pineapple- and honey-flavored ciders.

The pear-jalapeño mixture absolutely wowed me.

In addition to the delightful flavors, there is a visual element that cider makers have to consider. They come in many more hues than a brewmaster or vintner could hope to naturally achieve—from the standard yellow and orange to green and even a vibrant purple.

I was also surprised to learn that not all ciders are sweet coming out of the cask. Beer drinkers may find they appreciate “dry” and “off-dry” ciders the most, as the yeast has converted most of the sugars in these varieties into alcohol.

With 26 constantly rotating taps, Cider Junction aims to serve a wide selection of local, national and international ciders. They also carry more than 50 bottled and canned ciders, keep six craft beers from local breweries on tap, and boast an impressive wine selection.

Cider Junction’s food offerings are meant to complement their drink selection. Their menu is a single sheet, featuring mostly shared plates.

Cheese and charcuterie boards, flatbreads, salads and taco sliders are just a few of the options.

I was quite impressed with the variety, and noted the abundance of vegetarian, vegan and gluten-free items on the menu. Derp points out that cider is naturally gluten-free, which has made it a go-to for those with celiac disease. It was essential to have a menu that is also safe for the gluten-sensitive crowd.

Smith and Derp also incorporate their beverages into the food, by braising and infusing their meats with cider, and using cider to make sauces and dressings. “It’s important to me that we pair food really well with the ciders,” Smith says, “so that it accentuates the flavors of the food.”

Speaking with Smith and Derp, it was evident that they take the role of cider ambassadors very seriously.

As the only cider-based restaurant in Silicon Valley, they are on a mission to educate the public. They also hope to create their own craft cider to serve exclusively in-house, but that’s at least a year away.

“You can’t lose sight of your focus, which for us is in growing the category,” Smith says. “We want to elevate it and contribute to the industry.”

Machine Learning Alan Rath’s SJICA retrospective looks back on a career of artful mechanics

A

MONG THE MANY discarded objects, scattered tools and works in progress secreted away in Alan Rath’s Oakland studio, a poster loosely splayed out on top of a box grabbed my attention. It read, "I Pity Inanimate Objects" and was used to announce a 2018 talk the artist gave at San Jose State University’s Art Department.

The title is Rath’s reference to a Godley & Creme song, off of

their 1979 prog rock album Freeze Frame. After walking through “Virtual Unreality,” his current career retrospective at the San Jose Institute of Contemporary Art, the song’s lyrics indicate, if not the only theme, then a schematic for viewers unfamiliar with his work: “I feel sorry for them all/What are they thinking/ When they arrive at a place/Do they sigh with disappointment/And when they leave/Do they have regrets?”

Rath calls the variety of whirring, clicking machines in “Virtual Unreality” sculptures. Most of them call robots to mind. Vaguely humanoid in shape, whether tall or squat, most pieces

include imagery culled from the body.

Enlarged neon green eyes stare at you mutely, almost reproachfully, from behind the walls of their plexiglas containers. An open mouth, divorced from its face, opens and closes on a video screen that’s attached to cords and plugs and wires. It hangs on the wall like a mobile extracted from an electrician’s bad dream. Five yellow hands, each on its own screen, wave at half mast to some unseen thing. And each one of them is quietly, in its own way, flickering with life.

“They're hibernating if nobody is around,” Rath says. The red and white dots are sensors that wake them up so that the sculpture can spend time sleeping, thereby extending its artificial existence. But having to turn something on was a conceptual problem for him. “I don't want to force anybody to have to turn something on to demonstrate something. It somehow breaks the whole experience.”

With nearly 40 sculptures on display, and each one an animate object, it’s surprising that the galleries aren’t booming, crashing and thudding with

harsh, metallic sounds. When an array of long, pink feathers mechanically opens and closes toward you like an embrace, all you hear is the easy movement of the down as it whispers through the air.

Rath believes that the drive behind technology is comfort. “You think of all these great things like clothing, and being inside when it's raining out. It's nice to be protected from the elements, and warm.” The strident, intrusive strain of technology, such as the ubiquity of mobile devices, he feels is an aberration, one that he’s hopeful will sort itself out in time.

He began to sculpt in the 1980s, after securing his electrical engineering degree from MIT. He never considered making anything static “because, in my head, everything should move.” When he looked at traditional sculptures, he felt like that was a compromise.

“Every person who ever made a static sculpture was trying to imply motion, but they couldn't make it move.”

Rath then mentions another rock song, Jefferson Airplane’s “Crown of Creation,” to amplify what he means: “Life is change/How it differs from the rocks.” “Everything that's interesting moves and changes,” he says.

With a major retrospective like this that stretches back several decades, I asked Rath what he sees when he looks at the exhibit. “I see that over time, I actually did manage to build some stuff. I talk about how it seems so laborious, and it takes forever, but somehow I did complete some pieces. … I did pick up those skills that I didn't have any idea how to do.”

There’s a piece on the wall that he'd been wanting to make for 30 years but only recently finished. Its arms move gently, up and down, as if they’re waving goodbye. “It's just holding that idea in my head for 30 years while I worked on every single element of every system that's needed,” he explains. He asks himself, “Why did it take so long?" But comes to the satisfactory conclusion that, “On the other hand, okay, I finally did it.”

GRAND FINALE At just over 3 hours long ‘Avengers: Endgame’ never drags and serves as a fitting bookend to the Marvel Universe saga.

Time Crisis LIKE MANY OTHERS at the end of a life of violence, the would-be demiurge Thanos (Josh Brolin) has retired to the country. His new planet looks like upcountry Maui. Dissolving half of all life universe was a tough job, but now he’s hung up his armor to rust, a scarecrow in his vegetable garden. He’s boiling himself a meal of outer-space taro root, when suddenly, through his roof bursts a living blast of light that was once known as Carol Danvers.

In the early scenes of Avengers: Endgame—indeed, throughout the entire movie—you get what was ordered: Thanos, embodying every granny-starving politician who ever moaned about austerity, barbecued and body-slammed by several of Earth’s Mightiest Heroes. The ingenuity here is that this attack comes at the beginning of the film, not the end. The problem of the Infinity Stones proves to be a difficult anti-rapture, whose first step is triggered by the paws of a storage-room rat scuttling across the dashboard of an abandoned van.

This massive cycle is a feat of cinematic engineering for which there is no parallel. Completing it, the Russo Brothers use their three hours not just for the usual battle royals, last stands and self-sacrifice, but also to capture the mood of a grieving Earth. As the least respected member of the team, Ant-Man, Paul Rudd does the great old Ebenezer Scrooge at the graveside scene, seeing his name on a cenotaph to “The Vanished” in Golden Gate Park. Survivors have moved on— Stark (Robert Downey Jr.) has also resettled in the country with wife Pepper (Gwyneth Paltrow) and child; Mark Ruffalo’s Bruce Banner, no longer bifurcated, but a scholarly Hulk with glasses, signs Avengers: autographs for the kids who tug his sleeve.

Endgame In heading off Thanos at the past, Stark gets to see his father one last time. Thor—who reacted to the PG-13, 181 Mins. extermination of half the universe by becoming a beer-bellied Valleywide sea-side town slouch—visits his mother on Asgard once more.

(Sizing up her son’s Dude Lubowski look, Rene Russo’s Frigga says, “The future hasn’t been kind.”) Intriguing, this question of the kindness of the future mirrors whether noble yet mild Captain America (Chris Evans) regards our present in the same way we film watchers regard the past: as a nice place to visit, but maybe not a nice place to live.

Avengers: Endgame didn’t seem a moment too long, and there wasn’t an awkward performance among its cast. The comedy coming through from the wonderfully sarcastic Rocket Raccoon (Bradley Cooper); as the end approaches, Thanos shows the signs of ultimate defeat by using the villainous exclamation point when he talks. (“The Avengers! Unruly wretches!”)

Avengers: Endgame has as much faith in quietness as in the noise of milelong spaceships. For something that ends up nigh-Armageddon, there are a lot of scenes around lakes, scenes of fathers and daughters, quiet tearful farewells, and the trilling of birds. —Richard von Busack

URTLING TOWARD A black hole at nigh-light speed, a spacecraft known only as “7” is in the middle of an eightyear mission. The outside of the craft is blandly boxlike.

Inside, it’s crappy, exactly like the littered hall of a public housing apartment.

Claire Denis’ High Life, and yes, the title is ironic, begins with two survivors aboard.

Monte (Robert Pattinson) is

repairing a magnetic shield outside the craft, while baby-monitoring the wails of a yearling girl fussing in her makeshift playpen. When not tending to the babe, Monte is recycling his urine, or hauling the scraps of his meals in a dingy plastic bucket to the indoor compost heap.

The rest of the crew is still aboard, corpses in space suits. The mission was made up of murderous criminals shot into space as a way of serving their sentences. In flashbacks, the shipmates’ crimes are teased out.

One woman seems to be the focal point of the male passengers’ interest:

the red-headed Boyse (Mia Goth)— malignantly elfine.

High Life is authentic in one factor, describing space being a place where terrible things happen, where radiation and strokes take their toll.

The ailing travelers give the supervising mad doctor aboard a lot of work. Dr. Dibs (Juliette Binoche) is the biggest criminal on the ship, to hear her tell it; she’s guilty of the kind of crime they write Greek myths about. She’s also desperately trying to get a new generation born upon the unlucky “7.” The men are required to produce semen for analysis, collected in “the fuck box,” an orgasmatron of pathic VR. Dibs gets first dibs in there; we watch her coupling with some imaginary hairy shapeless protoplasm.

Binoche (or her body double) treats us to the sex scene we deserve after what High Life puts us through.

It’s explicit but not because of nudity.

The doctor is seen in pieces, from the back, as she swings her waist-long hair in ecstasy, now a face craning back, now a portion of her abdomen, where she

has a scar that looks like someone tried to give her a hysterectomy with a can opener. Later, when she’s really up to no good, Dibs oils her tresses like some Biblical temptress. Binoche’s Lilith qualities help us through the endless closeups of Robert Pattinson. Like Sam Rockwell in Moon, he has to be his own audience.

High Life has poetry, but it’s awkward. After a long and distinguished career (White Matter, Chocolat, 35 Shots of Rum) this is Denis’ first movie in English. Is there any reason, beyond increased ticket sales, that a director would cut off her tongue at age 70? It’s not like there needed to be much dialogue, since it’s mostly a movie about Pattinson looking bitter and Binoche looking wanton. As for everyone else aboard… as a friend says, “Violence is a universal language.”

Dull colors and people gone rapey from space madness explain why a person might want to “space” themselves, to use The Expanse’s term for the one way trip out the airlock.

No one made an effort to decorate this flying slum, except with gouged graffitti and sprays of bodily fluid.

But there is one break from the unnaturalness: a space garden. It’s like a sprawling version of a nature preserve in Silent Running (1972) a chaotic mass of plants slowly going unearthly in shape and color. The crew walks barefoot here, baptising themselves in the dirt of it, rubbing the soil on their faces.

After the encounter with another ship (a real SPCA-commercial, this ship: beware, dog-lovers) Denis sets up a hopeful ending you can’t believe. The tantalizing dream of space exploration is absent in High Life’s reckoning: it’d be better if we just stayed on Earth and tended our gardens. What’s here is either mankind, spreading its infection into the cosmos, or space greeting this infection with the hostility it deserves.

To paraphrase the comedian Brother Theodore, we look into the abyss, and the abyss looks into us, and neither one of us likes what it sees.

ALONE TOGETHER Lauren Morgan and Jordan Shih couldn’t find the artist entrance at this year’s Coachella, so they just walked in the main gate.

Selling Out Florida bedroom duo Sales are truly, absurdly and absolutely indie

HAT A BAND like Sales played Coachella this year is pretty remarkable.

Though the festival began as a single annual weekend with big name headliners supported by a bevy of indie artists, it has grown in popularity and visibility. Now it spans two weekends each spring, pulls in hundreds of millions of dollars and prompts headlines like this: “Ariana

Grande closes out Coachella with surprise Justin Bieber duet.”

Though not every act at the festival is as grande as Grande, the majority are major commercial artists, backed by radio hits and a crack marketing team.

Sales, on the other hand, barely have a website. They don’t have a label. They don’t have a crew. And they definitely don’t have a manager.

“When we got to Coachella, we

ended up walking through general entry or whatever because we had no idea what we were doing,” says singer guitarist Lauren Morgan. “Maybe if we had a manager they would tell us how to get us there, they would get us a golf cart and all that. But that’s what it’s like doing this. We figure everything out the hard way. ” The Orlando duo—Morgan and her co-writer Jordan Shih—are almost absurdly DIY. Since Sales began in 2013, all of their albums have been self-recorded, self-released, self-mixed and self-mastered. When they began tracking their tunes, Morgan and Shih didn’t even own amplifiers. They just plugged their guitars straight into the computer and hit record.

“We just kind of did what we could out of necessity,” says Shih.

“We didn’t have a lot of gear, and we didn’t have a lot of space. It wasn’t

like a conscious decision to say, ‘Let’s not use amps or drums.’ We were just working within the confines of what we had. But with that we learned, ‘Oh, this is our sound.’”

Comparisons could be made to Beach House, or The xx (Coachella bands, both). But while those groups retain the genre tag of “indie,” their albums are now recorded in studios and mastered by a professional. If Sales sound like bedroom pop, that’s because they record in a bedroom.

“Time, my favorite spiral,” Morgan sings on “Spiral,” the opener from last year’s Forever & Ever. “I breathe / I move / I turn / I turn into / Time, my favorite spiral.”

For the indie rock fans out there, “Spiral” sounds like Microcastle era Deerhunter. It is small and intimate, but also coiled and a bit stoned. The dreamy “You Look Well” follows, a song whose hazy warmth might very well have been recorded while under blankets.

In the almost-year since Forever & Ever was released, the band has managed to grow its following substantially—enough to get them invited to the biggest music industry event of the year. Originally intended as a recording project rather than a live band, Morgan and Shih had to effectively learn their own songs in order to tour.

“I think it’s a lot more interesting to write a song as the best song you can without any limitations, and then bring it to the live universe and work with those limitations,” says Shih. “And it’s interesting to see how people react to that kind of music. It’s not necessarily the loudest; it’s not four-on-the-floor.

It’s stuff people smoke weed to and then fall asleep to.”

“The songs do change live,” Morgan adds, “but in a great way.

We have a sound engineer and he’s doing, like, a stereo-feel whole thing.

It’s really something to experience; if you like the record, to go into a room and let us bring you the record in sort of a different way. It’s way bigger than the recording.”

I’m a slim woman in my early 40s—successful in my field—and I am always in jeans, a vintage ripped t-shirt and boots. I mean, ALWAYS. Granted, I have an extremely expensive handbag and perfectly highlighted blonde hair, and I always wear winged eyeliner. My friends say that going “underdressed” like this is disrespectful and inappropriate for (corporate-type) business meetings. Are they right, or is rocking your own thing no matter what a sign of confidence? (P.S. I’d kill myself before I’d wear a blazer.)—Punk Rock Corporate There’s actually something to be said for a person who goes into an important business meeting dressed like one of their LinkedIn endorsements is “aggressive panhandling.” Sure, to a lot of people, it looks like career suicide.

However, research by Harvard Business School’s Francesca Gino suggests that rebelling against norms for business attire can make you come off as higher status than people who dress all junior CEO. Gino ran a number of experiments that led her to this conclusion, but my favorite is from a seminar on negotiations she taught at Harvard to two different groups of bigwigs in business, government and philanthropy.

For each session, she dressed in the requisite “business boring”—a dark blue Hugo Boss suit and a white silk blouse. But then, for her second session, she paired this outfit with a pair of red Converse high-tops. Seminar participants, surveyed after each session, guessed that she was higher in status and had a pricier consulting rate when she was wearing the red sneaks.

Gino explains that a person who is seen to be deliberately violating

workplace wardrobe norms sends a message that they are so powerful that they can shrug off the potential costs of not following convention.

Anthropologists and zoologists call this a costly signal: a trait or behavior that’s so wastefully extravagant that only the most mojo-rific people or critters could afford to display it. This suggests to observers that it’s more likely to be legit and not false advertising.

So, it seems your dressing all hobo honcho could actually ramp up your status in others’ eyes. And let’s say someone suspects you’re dressing this way because you’ve lost it on some level. Gino writes in her book Rebel Talent that to signal status, it’s critical that people believe an individual is “consciously choosing not to conform” and willing to assume the possible costs of that. Well, with that pricey handbag, you swat away any suspicions that your poorgeoisie-wear reflects actual impoverishment. Just don’t be surprised if, post-meeting, two kindly old ladies drop a Ziploc in your lap with socks, a granola bar and directions to the nearest shelters.

I’ve long been a “Shallow Hal,” attracted to women’s youth and physical beauty and less concerned with integrity. Not surprisingly, I keep getting into relationships with women who aren’t very good people. How can I stop being so superficial?—Man With Eyes It isn’t wrong to initially be looks-driven: “Now, she’s a woman I wanna have sex with!”—as opposed to “Now, she’s a woman I wanna debate on Jeremy Bentham’s views on utilitarianism!”

Also, you should no more feel guilty for being drawn to young women than you would for having your taste buds be more “All aboard, baby!” for chocolate cake than for a “burger” made out of broccolini. This preference evolved to solve the “How do I pass on my genes?” problem for our male ancestors.

However, it helps to understand what psychologist Daniel Kahneman has explained as our fast and slow thinking systems. Our fast system is emotion-

driven, rising up automatically, and is often home to toddler-like demands: “Gimme cake!” Our slow system, the home of rational thought, needs to be forced to do its job, examining our impulses and assessing whether it’s wise for us to run with them.

In other words, your problem comes from running with your initial impulse without putting it through the Department of Reasoning. Though it’s natural to be led by your eyes, you need to implement a next step: assessing the character of these foxerellas before you turn them into girlfriends. This starts with generating standards so you can determine whether a woman meets or misses them.
