How chefs, wineries and breweries worked together to save the dining scene BY CHRISTINA WATERS
H
ere’s a toast to the resilience of food folks. The pandemic forced a sudden and vertiginous shut down of restaurants, breweries, and wine tasting rooms. For a long while everything was closed except groceries and take-out dining. To stem the tide of lost revenue, swift cuisinartists made a necessary pivot and formed alliances that took win/win to a whole new level. Food trucks pulled up beside breweries, chefs catered private events and pop-ups popped up everywhere. Variations on these creative alliances expanded with the gradual reawakening of DIY food venues. The current boom in casual dining looks like the post-COVID future, with infrastructure pared down and Julia Child era amenities the stuff of white tablecloth memories.

before the closures. Many chefs surfed the trend toward abbreviated menus of casual choices, 3-star Michelin chef David Kinch, for example, unveiled a trendy pizza parlor Mentone (now reopened) just weeks before the spring 2020 closure. At the popular downtown Birichino Winery Tasting Room, visiting food vendors made guest appearances, and tastings moved to sidewalk tables, winemakers Alex Krause and John Locke invited favorite bbqs and grills to visit each week. Necessity is the mother of partnership invention. After a year of patio tastings, Beauregard Vineyards opened Slow Coast Wine Bar in the Highway One village of Davenport, ten minutes north of Santa Cruz. Still testing food partnerships, the wine bar offers a stunning ocean view as well as catered cheeses and charcuteries to enjoy with Ryan Beauregard's wines. “We had to serve food in order to open,” says the winemaker. “So that’s when we started reaching out to food trucks and various caterers.” Catered appetizers also join the flights of Beauregard wines a few miles up the mountain at the winery's flagship Bonny Doon estate tasting room. The Davenport wine bar is currently offering wines by the bottle, glass, and 1oz pours, allowing tasters to create their own flights. At her Aptos Village Ser Winery Tasting Room, winemaker Nicole Walsh
has been proactive in doing whatever it took to stay open, including carving out table seating from her extra parking space. “Having an outdoor space has been critical for my business during this past year. I am also so happy it let us have a place for the community to get out and enjoy some time with friends and partners.” Ser has recently been welcoming creative food partners, such as the prolific chef Diego Felix of Colectivo Felix whose Argentine-inspired empanadas have popped up in the tasting room to pair with Walsh’s wines. Katherine Stern, who for a decade was head chef at Seabright’s La Posta, reinvented herself at the al fresco cooking outlet Midway. Her ingenious recipe designs energize the Santa Cruz farmers market landscape and are now popping up at Ser. “These events at Ser tasting room have been an exciting collaboration,” says Stern. “Even pre-pandemic, the opportunity for a food vendor to reach the community through a pre-existing business is a fantastic option to get things going. It allows new businesses to test out new ideas and explore the demographic, seeing what works and what might need some tweaking. The goal for the Midway is still to find a brick and mortar location, but in the meantime, various pop ups and the weekend farmers markets have been wonderful platforms to reach our customers.”

adise At the Westside’s Humble Sea, one of the area’s most exuberant breweries, innovative food collaborations are the house specialty. The four-year-old home of trendy craft beers, Humble Sea partners with Colectivo Felix, Full Steam Dumpling, Tori Man, and various pizza purveyors, among others. The variety changes daily to the delight of Humble Sea’s many fans. “We were using food trucks and popups before the pandemic to diversity our food availability beyond our kitchen. Right now we’re not sure about reopening the kitchen. It’s been great to have lots of different foods,” says Humble Sea brewer Nick Pavlina. Fran Grayson, a veteran of food truck cooking and now proprietor of the oceanfront Steamer Lane Supply, says the restaurant scene was primed for this trend before the pandemic. “The trucks-at-breweries thing pre-dates the pandemic for sure,” she says. She sees it as a natural partnership, “because the breweries need the trucks and the trucks need people gathered in one place.” “There has been some increase in pop-ups and certainly a substantial amount of new weekly-order type businesses as chefs became unemployed due to restaurant closures, and decided to do their own thing in that way,” says Grayson. “Some pretty fun stuff happening in that realm."

Stepping Santa Cruz’s first walking guide is a unique way to discover—or rediscover—the landscape BY STEVE PALOPOLI
T
hey say the journey of a thousand miles begins with a single step, and for Debbie Bulger, that step was onto the Beach Hill stairs that many locals—but not many tourists—know connect downtown Santa Cruz to the Beach Boardwalk via Cliff Street. There’s a reason those stairs are on the cover of Secret Walks and Staircases in Santa Cruz, the book she recently published with her husband Richard Stover.
It was 1986, and Bulger had come to Santa Cruz for the first time to run in the Wharf to Wharf race. She asked someone how she could get downtown from the beach, and they told her about the stairs. She loved the walk, but she didn’t love the sign on Cliff Street that said “Not a Through Street.” Bulger moved to Santa Cruz two years later, and she never really got over her beef with the sign.

“It’s always bugged me,” she says. “It’s only ‘not a through street’ if you’re in a car.” Clearly the seed had been planted for Bulger to champion the Santa Cruz pedestrian. But it didn’t bear fruit until she had spent years on several local advisory committees and task forces, where the lack of attention to the local walking world was noted over and over. “It always came up,” she says. “Someone would say, ‘We need a walking guide for Santa Cruz.’” Finally, Bulger decided to write it. It was six years in the making, and even then it took the eerie lull of quarantine last year to motivate her to pull it all together. “I guess when we all got locked down, Richard and I got serious about it,” she says. But there was plenty of work put into it before that, of course. “There was about a year of planning where I made a list of all the pedestrian shortcuts and staircases,” she says. Then she and Stover walked the routes. Stover, the project’s computer tech, used open source data to track them, while Bulger preferred pushpins and yarn on a map of Santa Cruz. After a
while, though, it started to look like one of those conspiracy theorists’ crazy charts that the FBI agents find in thriller films. “It got complicated as more and more walks got on my list,” she says. “I sort of had to impose a limit before it got too big.” Then there’s the fact that not all walks are created equal—even if they sound great on paper. “We would do the walks, and sometimes they didn’t work out,” Bulger says with a laugh. But she’s proud of the 28 walks meticulously documented with photos, maps and a complete list of turns in the book—some of which even most locals won’t have walked before. Like the alley by Arana Gulch on pages 242-243. “That is a hidden gem,” she says. “You think you’re in such an exotic place.” Bulger says she doesn’t really have a favorite Santa Cruz walk; it depends on what she’s in the mood for at any given time. And when she says the best thing about walking in Santa Cruz is that we have the perfect weather for it, she doesn’t just mean a sunny stroll through Pogonip—she can be just as happy promenading down West Cliff Drive in the rain.

Perhaps what’s most impressive is that even after logging all these steps, she still finds something surprising almost every time she goes out for a walk, whether it’s a mother duck and her babies nesting in the Bay Street median or a particular kind of flower newly in bloom. “You just have to keep your eyes open,” she says. The book has been selling briskly, even though it was released when tourism was discouraged, or flatly prohibited. That means that plenty of locals have been using it to explore Santa Cruz in a different way than they might be used to. She knows one city planner, for instance, who bought the book and took a very, er, officious approach. “He said he did all the walks in the order they were in the book,” says Bulger. “He was true to his profession.”

Manresa/La Selva Manresa is a mélange of peaks, valleys and sandbars, but often the place is epic, breaking left and right and all over. Expect a long, grueling paddle during the wintertime to the outside.

Comedy Comeback In Santa Cruz, the laughter has returned— here’s where to find it BY DNA
A
fter spending the day on the beach, picking sand out from between your toes, or screaming on the rides on the Boardwalk, it’s time for some laughter. From breweries to bars and hotels to parks, you have multiple chances to catch some of the best national, regional and local comedians from California and beyond.
Stand-up comedy has a long history in Santa Cruz. UCSC students include SNL greats Adam Samberg and Maya Rudolph. Recent Banana Slug graduate Emily Catalano had a blisteringly funny set on Conan and has over 7 million views on TikTok. (Check out her hilarious comedy podcast, Hesby Street.) Weekly comedy shows are still finding a foothold as venues reopen and normal hours resume. Every Friday night, catch the best of the Bay Area comedy world at Greater Purpose Brewery, located at 21517 East Cliff Drive. Tasty, locally crafted brews and pub food are available, and admission is $10. The shows are 7-9pm, and advance tickets are advised.

Underground comedy is alive and well in Santa Cruz with the drive-in shows on top of the Church Street parking lot every Friday at 8pm. Motor up there and enjoy some renegade comedy shows. Every Sunday, the longest running weekly show in California returns to the Crow’s Nest at 2218 East Cliff Drive. It started in the 1980s and is still run by comedy producer and legend Jon Fox. The show starts at 9pm, costs $8 and features a mix of California comics and comedians traveling through the area. New comedy rooms are popping up all the time. If you’re a local looking for a night of laughter or a visitor who wants to check out the local flavor, look no further than every fourth Saturday where you can see (and do) comedy at the Rush Inn at 113 Knight St. with host Ryne Watkins. Sign-ups are at 6:30pm, and everyone is welcome. Monthly shows are happening all over Santa Cruz. Up in the mountains, it’s the historically haunted Brookdale Lodge, featuring mostly music, but their monthly comedy is not to be missed at 7pm, for $5. Bring a date, but don’t get ghosted. The newest, coolest venue is the Felton Music Hall, at 6275 Highway 9 in Felton. On Sept. 21, you can see the homeless guy from the Scranton branch of Dunder Mifflin, Creed Bratton. The show starts at 8pm and is $25. Expect
more comedy from this new upstart. Spend a Sunday afternoon at the beautiful Skov Winery on 2364 Bean Creek Road in Scotts Valley. Nestled among the vineyards, see the best of Los Angeles and San Francisco comics at 4pm for $40, which includes a glass of wine or beer. And if wine is your game, check out the monthly comedy shows at Vino by the Sea, 55 Municipal Wharf, upstairs with the best view in Santa Cruz. Shows are free, take place on one Friday each month and are from 7-9pm. Coming Aug. 14-28, it’s the 8th annual Santa Cruz Comedy Festival with Saturday afternoon shows in Laurel Park behind the Louden Nelson Community Center in downtown Santa Cruz. National headliners like the fabulous Jackie Kashian, Kellen Erskine and Chris Estrada mingle with the best of the Bay Area comedy scene. Each Saturday features a new show with plenty of room to spread out your blanket and chairs and build community through laughter. Shows are at 4pm for $25. The festival will also hold special evening events throughout town at venues like Moe’s Alley at 1535 Commercial Way, The Crepe Place at 1134 Soquel Ave., Humble Sea Brewery at 820 Swift St., Urbani Cellar at 140 Encinal St., and more. KitSerious Santa Cruz’s Yuzu & Rose innovates with a DIY artistic outlet and creative business model
L
ately, I’ve been making up for lost time: meals at restaurants, long walks outside, going to the grocery store without panicking that I am out of hand wipes. So it came as a surprise recently when one of Santa Cruz’s creative types gave me a great reason to stay home—and enjoy it. I’ve wanted to go to one of Kaitlin Bonifacio’s natural dyeing classes since I wrote about her for Good Times several years ago. Bonifacio, owner of the Santa Cruz-based business Yuzu & Rose, first introduced me to using natural dyes—from Shibori (a Japanese method of dyeing with indigo) to onion and avocado skins. Fortunately for me, Bonifacio made it easy to teach myself from home. Bonifacio launched DIY home dyeing kits—both Shibori and natural dyes— during the Covid-19 pandemic so that people could do their own dye projects from home. “All you need is a bucket of water,” she says; everything else is included.

Bonifacio says she has been thinking about launching kits for a while now, but when she began teaching at Cabrillo College remotely, she started packing up kits for her students so they could follow along from home. Bonifacio says that within Santa Cruz there has been a need for creative wellness during the pandemic, from home or otherwise. “I haven't seen a lot of other people doing this yet, but I do feel like there is a market for it,” Bonifacio says. “A lot of people I’ve talked to have loved it. It seems like it could work for something like macrame or embroidery. I’m sure that’s on the horizon.” I got everything I needed to make my own little dyeing workshop in the mail. I opted for natural and shibori dyeing kits—and in retrospect, I had my work cut out for me. I probably could have dyed every article of clothing I own, everything my neighbors own, and then some. Note to self: buy more things to dye next time. “The community has been so supportive of this during this time that everything feels like it’s on hold,” Bonifacio says. “Because everything has gone digital, I’m teaching classes digitally all over the place now. I had some in Colorado, some in Los Angeles,
and there’s a school in Michigan that I taught at. It hasn’t been easy for a lot of small businesses, but since shifting to remote teaching and the kits, the business has grown a lot.” Bonifacio makes the process remarkably easy, there are step by step instructions, online videos, and she astoundingly avails herself to anyone who has questions via the chat feature on her website. This was particularly helpful for me because when the vat of blue indigo dye started bubbling and fizzing, I knew I had managed to royally screw it up. She assures me that this is totally normal. “This is the ‘mother’ layer protecting the rest of the dye from oxidizing.” Whew. Now, how do I get rid of the five-gallon vat of dye in my backyard once I am done? “It’s safe for groundwater, and your plants will enjoy the pH as fertilizer,” she writes over chat. At 5pm on a Sunday, no less. “Just make sure it’s somewhere you don’t mind getting blue.” Bonifacio makes it look easy; the kits are easy to follow, beautifully and conveniently packaged, but it’s anything but easy for artists to pivot to this kind of remote, DIY style—particularly those who may be used to teaching in person. “It can be daunting for artists to

us develop a product and have to price it out and think about scaling it and sourcing materials,” she says. “I did the troubleshooting already when I measured out materials for my students while teaching online, but it’s been really popular since the kits have been in stores for everyone.” Now, several hours and a pair of completely blue hands later (I wore the gloves, but was reckless with
my splashing), I have a new set of pillowcases and several one-of-a-kind naturally-dyed tea towels. But the best part of the experience was the opportunity to be creative from the comfort of home. The beauty about these kits is that they are versatile: they can be an individual creative project, a date activity, or shared at a party. Although the world is starting to reopen again, and with that comes the
opportunity to be in person and take part in creative workshops, there is something humble and validating about having access to these new projects from home and doing it on my own. Blue hands and all.

Warm Well Within is back, just in time for the self-care starved
I
t is finally time to take a load off and cleanse our cluttered minds for a truly deeper clean. Closed and cold for more than a year, the iconic Well Within Spa in downtown Santa Cruz has waited patiently for its warm waters to flow once again, after owner Eric Heckert made the difficult decision to close three days before California Gov. Gavin Newsom declared a statewide shutdown—and as of June 1, that moment is finally here. Heckert was himself an employee at Well Within many moons ago. He worked every position and facet (not to mention faucet) of the spa, yet becoming a business owner was not on his agenda back in the ’90s. But Well Within began to feel like family, and when the offer arose to become its owner, he felt compelled to accept. Aside from bodysurfing and hiking,

the Well Within Spa is still his home away from home. It has also become a bit like a second home to his regulars, who now seem like part of the family. Beaming in anticipation of the building once again being filled with fellow humans getting some tender loving care and leaving wholly rejuvenated, he expresses a renewed gratitude. “It’s all about people. I am just so looking forward to getting back to it; our guests are our family,” says this connoisseur of calm. As its name implies, the Well Within Spa has tapped a deep vein of aqua vita right in the middle of downtown Santa Cruz on Cedar Street. Nearly disguised as a residential home, the spa was established back in 1985 at its original location, moving to its bigger current space in the ’90s. Spending so much time at home during the pandemic has for most of us been too much of a good thing. All the projects—spring cleaning, taking classes, trying new hobbies—enough! With our hair unkempt and our clothes often optional, self-care has slacked. Our bodies need maintenance, cleansing, repair and rest. Sadly, by
design, we were not built to take care of our own backs, shoulders and spine, which are under constant pressure. Luckily, Well Within’s restorative and completely regenerative body treatments such as specialty massages, whole body care and private indoor or outdoor tub rooms are perfect for magically melting away all the stress. More than a deep restorative soak, the experience at Well Within involves herbal and alchemical blends infused into your water, and a setting for escape. Along with the steam, pulsating jets and warm breathing cedar wood, each room offers a private serene view of the Japanese Garden complete with Koi pond. Santa Cruz Naturals celebrates 10 years
I
n “normal times,” Colin Disheroon and his staff at Santa Cruz Naturals would pull out all the stops to celebrate their 10 years of booming business. Music, food trucks, delectable edibles, and all of the other accoutrements of a major rager. It would be a day—a high old time—to remember. “This year, because of Covid, Santa Cruz Naturals is not going to be able to do the kind of festivities that we would have otherwise done,” says CEO Disheroon. “We’re protecting the community and our employees from exposure to the pandemic. Next year we’ll be doing a post-Covid celebration that will have an ultra-festive vibe, for sure.” Prior to taking the helm of one of Santa Cruz’s oldest and most-trusted dispensaries, Disheroon spent a decade working in environmental resource management as an outdoor education teacher. Chronic back issues led to a deep dive into the world of cannabis—a delightful substance he found to be

extremely helpful for managing pain and discomfort. He discovered that the plant could help others transform their lives. “Dispensaries at the time—there were a lot of bad vibes around them. I thought I could do it well. Do it better, with an environmental ethos in mind,” explains Disheroon. Santa Cruz County began the process of legalizing medical cannabis dispensaries in 2010. Santa Cruz Mountain Naturals, as it was called then, moved quickly, and with backing from county officials and the local Chamber of Commerce, opened its doors to medical patients on May 30, 2011. It was admittedly a “cool time” for the fledgling cannapreneurs, operating out of a small building in Boulder Creek. “We felt like we were contributing and bringing an important product to the market,” says Disheroon. He and his team founded their dispensary/collective on the idea that you get the highest quality fruits and vegetables from a farmers market. Just like you can procure the best premium, top-grade cannabis from small local farmers who grow in an ethical, sustainable and environmentally friendly manner. Cannabis, they held, should be
the stark opposite of “Big Ag” or “Big Crop”—local, sustainable, and holistic. As a “clean green” business, Santa Cruz Naturals sources over 70% of its products from local cannabis growers, artisans, connoisseurs, and small business owners. To reach dispensary shelves, vendors must prove that they practice conscious cultivation, use organic products, reuse and recycle at all times, and constantly work to limit their carbon footprints. The dispensary is a survivor—the longest-operating original-owner cannabis retailer in the region. “Right now, there’s a lot of consolidation within the cannabis industry. There is a lot of big-money pressure. Publicly traded companies are buying out the small businesses. And many small local operations are really a part of a big corporate play,” says Disheroon. “There will be challenges for mom and pop companies in the coming years. The consolidation effect.” Jan. 1 of 2018 was a huge day for Santa Cruz Naturals and the entire cannabis industry—the day cannabis became officially legal in California. Even with new taxes (like the 15% state excise tax) and new laws and

regulations to adhere to, the dispensary experienced a spike in deliveries, new sales and overall business. Today, Santa Cruz Naturals is thriving. In 2019, the shop opened a second retail dispensary (besides its Aptos flagship) on the outskirts of Watsonville. The same year, it threw the first licensed cannabis event in Santa Cruz County, the Power of Flower Festival, at the Santa Cruz Fairgrounds. The large-scale gathering was a tremendous success, featuring a full-day lineup of world-class bands, VIP lounge, dab bar, and over 60 canna and non-canna businesses. “One half of my college degree was in Latino studies. It prepared me for this moment,” says Disheroon. “I’m stoked that I’ve been able to bring my business into a region of California that has such a strong and beautiful Latinx community. We serve the community. My Watsonville location is almost entirely bilingual.” The challenges the company has faced over the years have been largely
bureaucratic. Securing funding for company improvements and precipitous growth has proved to be a frustrating endeavor, as has obtaining insurance policies that aren’t out-of-this-world expensive. And banking has always been a big headache for all dispensaries. In the next decade, Disheroon envisions two or three more retail locations in different, underserved parts of California. And assuming that legalization on the federal level happens, he’d be thrilled to see his dispensary’s brands and products carried in other parts of the nation. “Santa Cruz Naturals is excited and humbled to celebrate its 10th anniversary,” says Kat Weaver, Santa Cruz Naturals’ sales and marketing director, “and looks forward to the next 10 years of serving our community!”

As the Bard so aptly articulated centuries ago, all the world is a stage, and nowhere is that more evident than the current real estate market. The importance of first impressions has never been more tantamount, to the point where, instead of just straightening the property up a few days before going on the market, it often becomes a much more involved process. In this arena, the role of the listing agent is increasingly centered around our ability to coordinate the many elements involved in putting on a successful production. Early on, I will perform an assessment of what can be done to optimize the value, followed by a visit with a designer or stager to help give specific direction on repairs, fixtures and finishes to help the place pop. I generally pay for this visit out of pocket and also bring along our in-house project manager who helps oversee operations with the various vendors we bring in. It has also become standard for sellers to get all the reports and disclosures up-front to clear the path for the increasing numbers of buyers driven by desperation to make non-contingent offers, helping mitigate their fears of unknown along with the possible issues and lingering liabilities that would result from an under-disclosed sale. For these details, it helps to have an efficient and socially adept associate on our team who has my back along the way, helping ensure that all the contract, inspection, disclosure and marketing aspects of the project get correctly handled at the macro level as we go along. Next comes the parade of contractors, installers, inspectors and other tradespeople to help with the property preparations. This can include clearing out clutter and hauling away debris before coming in with fresh landscaping and home elements to optimize the home’s overall presentability and appeal. On occasion it can also involve extensive repairs and remodeling, and amidst a rush to capitalize on the current market conditions, there’s often a new player in the drama: The element of time. Tradespeople and inspectors have never been busier, and many are booked out weeks or even months in advance, so another key factor in choosing an established agent is the benefit of their longstanding working relationships that can get your project pushed to the top of the stack. Add to all of this the backdrop of a very slow planning department which has on more than one occasion necessitated workarounds such as a holdback in escrow to allow a sale to close with final permits not yet signed off. I often wonder how the storyline of each transaction manages to get so complex, along the way involving all the players as it does. And yet, when the final curtain falls, as long as our clients are happy and protected in the end, then all the work has been worthwhile.
