How UCSC alumnus Matt O’Brien turned late-night munchies into a successful Santa Cruz delivery business By Georgia Johnson 8

T

here are two types of cookie eaters in this world. Those who, like me, prefer the thin and crispy snap of a chocolate chip cookie, and those like Cookie Cruz owner Matt O’Brien, who prefer their cookies thick, cakey and chewy. Before tasting Cookie Cruz, I would have said that O’Brien keep his cookies on his side of the court. But alas, after ordering the Nutella and Cookies ’n’ Cream, the chewy cookie has infiltrated my home, heart and long held opinions of what a cookie should be like.

Matthew O’Brien knows how to keep a good thing going. Not only will he deliver cookies to your front door during the late hours of the night, but he makes sure they are warm, gooey, and coupled with Marianne's ice cream and/or cold milk. It’s Santa Cruz, so he also provides for the gluten-free and vegans. Cookie Cruz (formerly All-Nighter Cookies) boasts eight cookie flavors, including (in order of my personal favorites) Nutella, cookies ’n’ cream, chocolate chip and chocolate mint chip. “A lot of people are surprised that there is no weed in the cookies,” O’Brien laughs. “Seriously, most people think that they are weed cookies, especially when I first tell them what my business is.” It’s not a surprise, really, since Cookie Cruz is particularly well-known among college students. O’Brien says they sometimes will tip with weed or acid. O’Brien uses his dad’s chocolate chip cookie recipe, which uses oatmeal flour to give it a more substantial, wholesome bite. Most of the other cookie

flavors are based off of the chocolate chip recipe, as well. He says he’s also experimented with a Cheetos cookie and a peanut butter and jelly cookie, which I continue to hope he brings back so that I have an excuse to order another dozen. But he’s got a lot of requests lined up already. “I get requests for the white chocolate macadamia a lot. I haven’t done that one yet,” O’Brien says. “The Cheeto one is really good. I’m telling you, it’s sweet and salty—it’s so good. I’ve also done a double peanut butter one that was peanut butter and stuffed with peanut butter. Before summer is over, I want to do an orange creamsicle cookie.” Cookie Cruz has regulars who order cookies every week, or even every day. Beyond satisfying the latenight munchies of students around UCSC, they serves families, middle and high schoolers schoolers, the 911 call center, police dispatch and hospitals. O’Brien says nurses, in particular, love them. “We’ve got them hooked,” O’Brien says. “I tell my delivery people that if they are delivering to a hospital, they have to call the nurse who ordered it, because if they just leave the cookies there they always get stolen and eaten. It happens all the time.” A UCSC alumnus, O’Brien has been running his cookie delivery business for three years since he started it in his apartment in 2015. He ran it all himself at first, baking cookies and delivering them from UCSC to Aptos almost nightly for a year. Eventually it got to the point where it was too busy for him to run the company alone. Now he has eight employees to do the driving for him, though he still makes deliveries. “I just really liked cookies, and ate them a lot, plus I wanted to start a business, so I just made this happen,” O’Brien says. “I only started off with chocolate chip cookies, then I added snickerdoodle and mint. Now there is a bunch of milks, ice creams and vegan cookies.” O'Brien says that they will spend one day mixing one type of cookie for the entire week, then they will scoop and freeze it for quick and easy baking. This continues throughout the week for all of the types of cookies. They are open nightly seven days a week. “My whole life, I’ve only worked for private businesses, and I wanted to make my own schedule and be my own boss,” he says. “I just really like sleeping in and surfing, and I wanted to start a business that I could do all of that. So, here we are.”

Meet the man behind local cannabis food company Cosmo D’s Outrageous Edibles By Lauren Hepler

D

avid Brissenden used to hate edibles. But the chef and owner of local cannabis food company Cosmo D's Outrageous Edibles has come a long way from the stale weed brownies that first soured him on the experience. Today, he sells high-end weed-infused chocolate bars and rice krispies in dozens of stores throughout California. Before he was making cannabis confections topped with goji berries, shredded coconut and other gourmet ingredients, the Sacramento native learned to cook at his family’s Byington Winery in the Santa Cruz Mountains. A knack for French and Italian cuisine paved the way to a career in catering.

It was in 2016, just as Prop 64 was reshaping the legal cannabis landscape, that Brissenden decided to switch gears and embrace a radical streak that has always included intense skepticism about the politics of weed. In an interview edited for length and clarity, he talked activism, adapting to a newly above-ground market, and how to set up an assembly line capable of cranking out 10,000 edibles a month. I heard you used to live in a tree.

BRISSENDEN: Yeah. I went off to college, up to Humboldt, and got kicked out of the dorms for being a little rebel. So I moved out into the trees. I went out and there was a fallen tree, old growth. I burned it, cut it out. Kind of old school. There was this book I read, My Side of the Mountain. It was one of my favorite books, about a little kid who went out and survived in the wilderness on his own, ran away

from home. I just lived out in the forest. It was a little double decker, so I could sleep up in one spot and have my little kitchen area down on the bottom where the dirt was. What were you studying in Humboldt?

Sociology was my major, and poli sci was my minor. I was heavy into politics. I started a zine called Instant Mind Orgasm, and it took off. It was cool. Political, against “The Man.” And against CAMP—the Campaign Against Marijuana Production. They always had helicopters flying around back then. How did that time shape your perspective on cannabis?

I got out and was just angry. I wrote about CAMP and the policies of prohibition. It had nothing to do with people getting stoned. It had everything to do with paper products and cotton products and fiberglass and plastics. Ford had just discovered that you could make a car out of hemp, and he made one. My Hazy Hazelnut box has a quote about that. So I came down here, worked with Ben Rice on Proposition 215. I campaigned for Ralph Nader. I was doing Save the Salmon, Save Our Shores, whatever I could get my hands on. Then I just got burned. Left or right, they won’t talk about the real issues going on out there, because it’s all bought and paid for. So I became a chef. When did you actually learn how to cook?

When I came home from college on summer breaks I would cater. I started working with the chefs at the winery. When I was 23, I thought I knew everything, so I started my own company. It was called Creative Cuisine in Saratoga. And then I realized, “Wait, I don’t know everything,” so I sold it and became a dishwasher. Started all over. So how did you go from there to edibles?

I’d been a chef, working my way up. I was at one spot, Catered Too, for 12 years. I was executive chef, cooking for 3,000 people a day. I was making good money, bought a house for my wife and two kids. Two weeks later, I lost my

job. It was 2015—the best thing that ever happened to me. I couldn’t get ahold of my alcoholism. I was still pissed off that there were all these political issues that had never been resolved, plus the stress of trying to provide. I never went to culinary school, which was one of my biggest mental blockers. But you know, I did it. I went to meetings and quit drinking. I was trying to get a job, dealing with unemployment, and one day, someone came over and was like, “Why don’t you try this butter?” He said, “It’s an edible,” and I was like, “No, don’t make me try it. It gives me anxiety.” He was like, “Try a little bit,” and I did. I was like, “Oh.” It calmed me down. I didn’t get stoned. So I started experimenting with it. I didn’t have money, so I was making my own and came up with these chocolate bars. It was 2016, Trump and Hillary were battling it out, and I was like, “Smokescreen! I’m gonna go start an edible company.” How did you start experimenting with recipes?

I had this recipe, pan de chocolate. It’s a Spanish recipe, chocolate and butter. You melt the chocolate down and you add the butter, then you chill it, usually in a mold. You serve it with grilled bread, sea salt, fruits and nuts. I was like, “Why don’t I just use canna butter?” It was Thanksgiving 2016, so I used hazelnuts, pistachios, cranberries. Hazy Hazelnut. People were like, “Dude, this is so good.” 14 >

So you were starting up in legal limbo, basically?

What are the most popular flavors?

Yeah. Prop 64 had passed, but the rules weren’t out yet. I had the chocolate in a bag. It was like a Reese’s peanut butter cup, so it was really hard to dose. People got sooo high. I really made a name for myself, like, “These Cosmo D’s are fucking fire.”

The Hazy Hazelnut, man, I have to get you one. I had four chocolates, then everyone was like, “You have to come out with rice krispies.” I wanted to do gourmet. But I did it, and it was like a bestseller. I called it snickerdoodle and added that flavor to it, but now it’s the hardest one to get past the test. Chocolates are in a mold, so every time, I know it’s the exact same amount.

Where was your kitchen?

I had met a woman who owned a gluten-free kitchen called In The Breadbox, and she was talking about going to a cannabis kitchen. But for like six months, I cooked in my kitchen. My wife hated it. I had chocolate everywhere. I was in the garage cooking butter. The neighbors were like, “Dude, it reeks!” But most of that was for the feedback—“this is too strong,” “that looks ugly,” whatever. Why were you interested in edibles? Had you had good ones before, or was the idea to do something different?

Like a lot of people, I’d had a horrible experience on edibles and promised to never eat them again. What did you eat?

Some brownies that were left out. I had tasted some of the edibles out there that were just dry. The vegan ones? Oh, god. One bar was good, but I thought I could take this to the next level. You’ve got all these foodie bloggers. It’s California—people want good food. If cannabis is going to be a regulated market, why not? The key that I had was that I know how to scale, because all of these gourmet edibles are coming out that are $50. Ours is $20. How many bars do you make a month?

Right now we’re at about 10,000. I used to feed 3,000 people a day. It’s all about scalability—assembly line. I can make 2,000 units a day. I want to move up to 4,000 a day. But you’re doing them one at a time. I do a sheet tray with four molds, which is 16 bars. You pour the chocolate in, shake it, let it sit. Another person levels it, so it’s an exact amount every time. Then another person tops it and that goes in the walk-in. It gets popped, wrapped, put in a box, taped and boom! Organized. Every amount of medicine that goes in there is verified by two people. Before, it would just be like, “Oh, that looks right.” If you want to do a food item for the mass market, that’s how you have to do it. Nestle and Hershey’s aren’t, like, sitting in a garage.

How has your taste-testing evolved since the early days? Any big mistakes?

My extra-toasted coconut used to just be called toasted coconut. I make my own canna-caramel for it. The first time I made it, I got so high. My wife was like, “I told you not to get so high around the kids!” I was like, ‘“Babe, I’m so sorry.” I was trying to not spin, so I was doing this weird thing all over the floor. I was like, “I swear it’s an accident.” She said, “You always say it’s an accident.” So I changed the recipe. She said fine, but we’re changing the name to extra-toasted coconut. What have been the biggest lessons from legalization?

The biggest lesson to me is to be patient, and to get help. So many people are used to the black market that they didn’t understand you need to go to the courthouse, you need to go to these policy meetings—normal business stuff. Being self-funded was another difficult thing. What saved me was knowing I had to market myself. People told me to get an Instagram account, so I did. Now, it’s not my only market. Do I want the stiletto stoners, or the 55-and-uppers? Or people who are on Instagram? Will there be new flavors in the future?

I did a pumpkin gingersnap, which we’re about to bring back. So more seasonal flavors?

Yeah, but we still have to go through the whole process, so it’s a huge ordeal. I have a CBD line coming out. I have hard candies. I have dog food. What I’m also hearing a lot is tourists are coming through town, and they want to buy multiple things. If I could make one of these that’s 30mg and sell it for way less, that’s another thing. It’s all based on feedback. Sugar-free? Okay. Small dose? Okay. If you listen to what the market wants, then you’ll thrive.

Food With Class For aspiring chefs, Cabrillo’s culinary arts programs are one of Santa Cruz County’s best-kept secrets By Christina Waters

I

s making food a serious educational topic? You bet it is! Cabrillo College’s celebrated Culinary Arts & Hospitality Management program, started in 1975, now boasts 300 declared culinary majors in four major programs: Cooking, Wine, Baking, and Food Service Management. These hands-on programs prepare students for careers as caterers, bakery managers, winemakers, hotel staff, and of course executive chefs—and they continue to expand.

“Our new Functional Nutrition class merges culinary with nutrition and business,” says Department Chair Sue Slater. “It’s perfect for students who are entrepreneurial and would like to become a private chef or cook for people who have dietary challenges.” Slater recalls that when she began teaching at Cabrillo, the program’s handful of students learned their skills in the school’s cafeteria. “We now call the beautiful Sesnon House our culinary home,” she says with pride. “We have classes that run the lunch and dinners in the house, which are open to the public, as well as a catering class on the weekends, where we cater actual events, like weddings and other events worth celebrating.” The strength of the Cabrillo’s culinary programs is that “we have the live, hands-on experience in our classes. Students leave our program with real live skills. It’s not just theory,” Slater explains. For example, next weekend the catering students are preparing a wedding for 150 guests. The program has a number of success stories. Graduate Cori GougeAyers says she is living her dream as chef/owner of Aptos’ beautiful Persephone Restaurant located close to the Cabrillo campus. Kinderwood Farms, specializing in sustainable and organically grown products, is owned and operated by Lauren Linkemyer, who credits the teachers of the Cabrillo program for “encouraging and inspiring students to keep learning, growing, and searching for new and better ways to be a chef.” Patti LeDay, owner of Chocolate Visions in Scotts Valley, was in Cabrillo’s baking program, and Mikael Wargin, now owner and winemaker of Wargin Wines, took wine classes there. A great way to find out more about the college’s vibrant food and hospitality program is to taste the results. The Piño Alto Restaurant, housed inside the campus’ elegant 107-year-old Sesnon House, showcases lunch and dinner menus created and cooked by student chefs, available for the public to enjoy. Open weekdays during the fall and spring semesters, the historic building invites culinary students to hone their craft as well as the public to sample the delicious results. Outwesty offers an offbeat kind of road trip ... By Maria Grusauskas

M

oving his rental outfit Outwesty Camper Vans from Tahoe to Santa Cruz in November of 2017 was a no-brainer for David Phelps. The season in Tahoe was simply too short for the kind of road-tripping ease his fleet of Westfalias is equipped for. Now, Outwesty is off the ground and running in snowless Santa Cruz, renting vans almost all year round, with a short break for maintenance between Dec. 15 and Jan.15.

The Outwesty fleet includes eight individually named Westfalias. And while their years span the reliable ’86-’91 models, they’ve been modified and updated to be fully functional little pods of adventure, complete with full kitchens—stocked with utensils, cutlery and cookware—running water, and modern refrigerators that run off of solar panels mounted on the roof. “We try to make them look as they appeared originally, but there’s a lot of

modernization; new transmissions and engines, LED lighting—it’s really pretty far from what the original was, just to make them more usable. You can hop in this and go and not have to worry about anything.” says Phelps. Each van also comes with camping chairs, a deck of cards, a shovel for using nature’s restroom, an auxiliary cord for playing your road tunes, and two smartphone mounts for easy navigation. Bike racks and sleeping bags can be rented for an extra fee. Of course, there’s much to love about the original design concept of these $50,000 vans, whose fold-out tables and bed provide creature comforts down below while the iconic expanding top promises a memorable sleeping experience wherever it is your wanderlust takes you. “The Germans utilized every inch of space. They are the perfect micro camper,” says Phelps, adding that they drive extremely well (though not fast) off road, and fit into parking spaces like a

dream, unlike the clunkier RV. And Phelps should know—he spent most of his 20s traveling and working in a Westfalia. In 2010, he drove to the Arctic circle in one, and for the last two years before he started his business, Phelps lived in a Westfalia while he worked on a grain farm in North Central Montana and simultaneously finished business school. “You get to know them very well when you’re in them for 700 nights,” says Phelps. can go on forever, assuming your skag doesn’t snag in the kelp-infested water. Also, about a block and a reef away is the infamous Toe’s Over, which needs a huge winter swell and a minus low tide to break. But when it does, it’s pure left- and right-breaking bliss.

COWELL The bunny slope of surfing gets its fair share of beginners, but it also has nice sloping waves that go on forever. Easy access and easy attitudes.

FOUR MILE Here, locals tend to stare hard and long at newcomers. Because of its bluff-protected location, Four Mile isn’t affected (as much) by the afternoon summer winds as most spots on the North Coast. Reaches its full potential during west, northwest 10-foot-and-above swells.

THE HOOK Named for the copious amounts of kelp in the lineup that “hooks” around skags and booties, this nice little point break also has a lot of surfers that are “hooked” on the spot. Nevertheless, it’s got a right-facing wave that, if you can maneuver around the flock, is to die for. MANRESA/LA SELVA Manresa is a mélange of peaks, valleys and sandbars. But a lot of the time the place is epic, breaking left and right and all over the place. Expect a long, grueling paddle during the wintertime to the outside and nil to no summertime surf—unless there’s a south swell. NATURAL BRIDGES When the conditions are just right, like an 8-foot west swell, this spot has the best tube rides available. It’s a speedy right that peaks over an outer reef and peels toward the beach.

PLEASURE POINT This place is generally crowded with everyone from groms to experts, longboarders to ultra thin-glassed rippers. Practice, as always, common courtesy and you should be all right in the outer, best breaks.

STEAMER LANE Perhaps the most classic break in the world, Steamer Lane more than lives up to its reputation. With four reef breaks rolled into one spot—The Point, Middle Peak, The Slot and Indicators—the Lane has it all, including ogling tourists. There’s even a surfing museum in the nearby lighthouse.

THREE MILE Primo reef break that is usually uncrowded, especially during weekdays. Named after the number of miles after Swift Street, it cops a great right line, particularly during a winter northwest swell.

Five Finger Falls, Forest of Nisene Marks State Park In the winter and spring, hike up to one of two prominent waterfalls located in the Forest of Nisene Marks State Park. It’s a nice, long day hike with gorgeous views.

Pogonip This short hike is easy to get to and winds up to the old Casa del Rey Golf & Country Clubhouse—featured in The Lost Boys movie—which sits on an abandoned golf course that overlooks Santa Cruz. Check out the tennis courts that have been reclaimed by nature over the years.

Observation Deck Loop Hike, Henry Cowell Redwoods State Park This loop hike, starting from Redwood Grove, takes you to the trails along the San Lorenzo River and Eagle Creek. Then you can hike up to the observation deck near the campground on the other side of the park and back. Most of the trail is shaded, making it ideal for relaxing under the giant redwoods.

Wilder Ridge Loop Trail, Wilder Ranch State Park Expansive ocean views and rolling hills characterize this 7.7-mile partial loop trail. It’s moderately easy to walk, with more shade than sun. Cyclists also love this one, so keep an eye out.

Skyline to the Sea Trail, Castle Rock State Park This three-day hike showcases the best of the Santa Cruz Mountains. Not for the faint of heart, the 30-plus-mile hike begins in Castle Rock State Park and winds through Big Basin State Park—where you’ll pass the impressive Berry Creek Falls—and ends at Waddell Beach.
