Happy New Year!

It can be difficult when your list of New Year’s Resolutions is as long as your holiday shopping list. In addition to the post-holiday slump, not being able to keep your resolutions by the last week of January can increase your anxiety.

When the holiday season is over and all have returned to the working world. The frustration of lagging resolutions can make the later winter months feel hopeless.

One thing important to remember is that the New Year isn’t meant to serve as the beginning of sweeping character changes.

It is a time for people to reflect on their past year’s behavior and implement positive lifestyle changes. Setting small, attainable goals throughout the year, instead of a singular, overwhelming goal on January 1 can help you reach whatever it is you driving for.

Remember, it is not the extent of the change that matters, but rather the act of recognizing that lifestyle change is important and working toward it, one step at a time.

Some say the idea of eating blackeyed peas on New Year’s started at the time of the Civil War. Peas were considered animal food and not fit for Union soldiers. That meant peas were the only food that was left

for the Confederate forces and families to eat. These Southerners considered themselves lucky to have a meal of peas and salt pork in the dead of winter. What about Cabbage? Most people will tell you they eat cabbage or collard greens to ensure pros-

perity. The green leaves represent money.

The real truth is closer to this. Cabbage and collard greens are late crops. That means, especially in the south, they would be plentiful and ready for harvest in early January.

The greatest concentration of beneficial carotenoids is in the dark green fruit of the avocado closest to the peel.

To preserve that area closest to the peel with the greatest concentration of antioxidants, you basically want to peel the avocado as you would a banana, with your hands, but first there is agiant solid seed to remove in the middle.

1. Cut the avocado into quarters length-wise, around the seed.

2. Holding each half, twist them in the opposite directions to separate them from the seed

3. Remove the seed, by prying it out with your knife.

4. Using your thumb and index finger, simply peel the skin off each piece

PREPARATION

PICKLED ONION ¼ small red onion, finely chopped ¼ cup fresh lemon juice ½ tsp kosher salt CHIMICHURRI 1 garlic clove, finely grated 3 tbs finely chopped fresh parsley 1 tbs finely chopped fresh mint 1 tbs finely chopped fresh tarragon 3 tbs olive oil 2 tsp fresh lemon juice Kosher salt VEGETABLES AND ASSEMBLY 2 ripe avocados, thinly sliced 1 medium carrot, peeled, shaved into ribbons with a vegetable peeler 1 breakfast radish, trimmed, very thinly sliced on mandoline 1 red radish, trimmed, very thinly sliced on mandoline 1 tbs olive oil 1 tsp fresh lemon juice Smoked or flaky sea salt

Pickling the onion in lemon juice gives it a fresh, less acidic finish. If you like, soak the carrot ribbons in ice water for 10 minutes to make them curl.

PICKLED ONION Combine onion, lemon juice, and salt in a small bowl. Cover and chill until onion is bright pink, at least 8 hours.

Do Ahead: Onion can be pickled 2 days ahead. Keep chilled.

CHIMICHURRI Mix garlic, parsley, mint, tarragon, oil, and lemon juice in a small bowl; season chimichurri with salt.

VEGETABLES AND ASSEMBLY Arrange avocado on a platter. Spoon chimichurri over. Drain onions and scatter over avocado. Toss carrot and radishes with oil and lemon juice in a medium bowl; arrange over avocado. Sprinkle with sea salt. SERVES 4

Grilled Avocado, Scallion, and Red Onion INGREDIENTS 1 medium red onion, sliced into ½-inch-thick rings 2 tbs olive oil, divided, plus more for drizzling Kosher salt and freshly ground black pepper 3 bunches scallions, trimmed 2 ripe avocados, halved, pitted 1 chile de árbol, crushed, or pinch of cayenne pepper Flaky sea salt (such as Maldon) Lime wedges (for serving)

PREPARATION 1. Prepare your grill for medium-high heat. Combine onion and ½ tablespoon oil on a baking sheet, season with kosher salt and pepper, and toss to coat. 2.

Goals for 2016

On January 1 each year, we all start out with the best intentions. We use this day to signify a new beginning, a time to set goals and not let anything get in the way of accomplishing them! Then, reality sets in, and we realize our goals are not as easy as we thought.

With this in mind, we came up with some simple goals, specific to seniors, that are easy to stick to and essential to your health as you age.

2. EAT WELL

We know it’s hard to eat five servings of fruits and vegetables daily. Instead of striving to eat an exact number of servings per day, “eat the rainbow” as a part of your overall diet. That means eating a variety of colors, and doing so helps ensure you get the proper nutrition you need.

Another easy goal is to limit your portion sizes.

3. SEE YOUR DOCTOR

Make a commitment to see your physician at least once this year. If you already have more doctor appointments than you’d like to admit, make it your goal to use the time in your doctor’s office wisely. Once you get in the exam room, it’s often hard to remember the things you wanted to discuss.

Before you go, make a list of all of your medications, questions and concerns.

4. SAFEGUARD YOUR HOME 1. MOVE MORE

A body in motion stays in motion, and a body at rest stays at rest. When it comes to your health and well-being, this is the rule to live by, especially as you get older. You don’t have to

commit to a full exercise routine, but make a point to do something physical at least once every day. That could be a nice walk, gardening, or anything else that gets you up and moving.

You will find that these goals are not only easy to accomplish, but they will also help you feel your best. Always talk to your doctor about your specific health needs, and have a happy, healthy new year!

Falls are the leading cause of injury for seniors. To safeguard your environment, walk through each room in your home to assess your fall risk.

Look for trip hazards like throw rugs, install grab bars in your bathtub or along long hallways, and put nightlights around

These are simple things you can do to keep yourself safe.

5. SOCIALIZE Some seniors

start to withdraw as they grow older, but socialization actually exercises your brain and is good for your emotional health. Make a commitment this year to socialize with people you enjoy.

6. VOICE CONCERNS

It is human nature to put your feelings aside, to downplay pain or to simply keep concerns to yourself. Speak up! Depression and anxiety are prevalent among seniors, but many people do not let anyone know. Voice your concerns to your physician or someone you trust. The same goes for physical pain or other concerns, such as worry, irritability or difficulty sleeping. Do not be afraid to ask for support.

7. SLEEP

Changes in your sleep patterns are normal as you age, and sleep remains an important part of your overall health.

Sleep affects everything from helping your body repair itself and fighting off illness to your appetite and emotional health.

Make sure you are getting enough sleep!

Mackie Shilstone just applied for his Medicare card. That’s right; the man who is responsible for extending and reviving careers like St Louis Cardinals Hall-of-Famer shortstop Ozzie Smith and 2015 WTA Number 1 ranked Serena Williams is almost 65 and has absolutely no plans to slow down. Mackie says he can’t wait to have the card so the next time he’s running circles around some 20-something athlete, he can whip it out and say, “This is my Medicare card, what’s your excuse?”

Mackie grew up in New Orleans the only child of Cecil and Frances Shilstone.

His father had been a World War II hero who graduated from Tulane University with a degree in Chemical En-gineering.

He spoke fluent German after having done postgraduate work at Heidelberg University in Germany before the war. Cecil met his wife Frances at the Red Ox Bar which ironically was the same bar he later blew up during the war. Mackie still has a beer stein that his father pulled out of the rubble of that establishment!

Cecil Shilstone talked about his experiences in the war to his young son Mackie.

He was a cap-tain in the 94 Chemical Motor Battalion. Mackie learned from his Uncle Jim about five years ago that his father had orders “to destroy the town and take it” during the Battle of the Bulge. Cecil recounted walking into a room where there was a German soldier. His father told him, “It was him or me. Luckily, I shot first and solved the problem.” He also captured an

SS officer; Mackie inherited the gun that his father took from that officer. He donated that and many other items from his father to the World War II Museum. All this had a long-lasting effect on the senior Shil-stone and consequently on Mackie.

His father became an alcoholic trying to erase his memories of the men he had to kill during the war. But over the years, he recovered reminding himself of how many men were alive because of his heroism.

“My childhood drove me to overcome anything. I am who I am because of the strength of my father and the compassion of my mother.” Mackie says. “I might not have been a hero, but my father was. He is the greatest man I’ve ever met.”

Cecil Shilstone died in 1989, but not before he was able to see what Mackie could accomplish. He saw his influence on Michael Spinks the light-heavyweight and heavyweight champion in the 1980s and his work with the San Francesco Giants.

“Before he died, he got to see what I could

do.” Mackie reflects, “I hope my father saw that I was worthy to be his son.”

Mackie wouldn’t have changed anything about his childhood. It all helped to shape him into the man he has become: a highly driven, passionate man. Mackie and his wife Sandra have been married for 35 years and have two very accomplished sons. His older son Scott is 26 years old and lives in Los Angeles. He graduated from Ole Miss with a degree in journalism and is cur-rently the social media coordinator for Deadline Hollywood. His real passion however, is acting, and he’s had a lot of success! Scott has appeared in Drum Line and Pitch Perfect to name just a few. Spencer is 23 and also an Ole Miss graduate with a degree in business management. Spencer has been working with his father since his graduation and was recently promoted. Be-ginning

in 2016, Spencer will be the general manager of all eight GNCs in the greater New Orleans area.

Mackie’s resume reads like a Who’s Who of professional sports. He’s worked with and influ-enced more than 3,000 professional athletes. He’s written and published seven books on health and fitness. He’s a regular contributor to NOLA.com and “Muscle and Body” Magazine. He’s the director of the Executive Wellness and Performance Enhancement Program at St Charles Parish Hospital. He’s been the fitness and nutrition expert for the WWL Morning Show, appearing on Wednesday mornings at 8:50 for the last 17 years.

But now at 64 years of age, he’s just recently learned that “fun isn’t just a word.” By most people’s definition, he’s had a nor-mal life, a happy marriage, and has raised two normal,

happy children. But being as driven and passionate as Mackie has been, he’s had to sacrifice some things. However, things are going to change. He and his wife Sandra just returned from a 10-day trip to Italy. And it was great!

They were able to eat and enjoy fine wines, and just relax and reflect on all they have.

Mackie says that his healthy lifestyle is “such a part of me that I’m boring.” That couldn’t be fur-ther from the truth!! His son Spencer’s godfather was the late Al Copeland.

He would beg Mackie to come to his Popeye’s test kitchen to try this or try that! Mackie would tell Al to just taste things and then spit them out; you don’t have to eat everything!

Serena Williams calls Mackie Superman, and he calls her Lois. When he outruns her, he demands to know what her problem is? He’s 64!! Serena says, “I probably won’t be able to beat you until you're 90!” Superman Mackie always retorts…..“Nope, not until I’m 95.”

John Goodman is a Garden District neighbor of Mackie’s. He helped the former Grand Marshall of Endymion to lose 85 pounds which the beloved celebrity promptly gained back. One early morning the pair walked past the Lafayette Cemetery, when Mackie took him inside and told John that he would give him a shovel. “You can use it to dig your own grave John. Or you can use it to dig yourself out.” John then lost over 100 pounds with his buddy’s help.

Boring? Mackie Shilstone couldn’t be less boring!! He’s passion isn’t only to help professional athletes and celebrities to achieve healthy lifestyles, but all of us, even those seniors who have never eaten healthy or had an exercise regime. “It’s never too late to get healthy, but you need to start with a vision.”

Here’s six to help you get started the cold and flu season.

2. MUSHROOMS 1. CITRUS FRUITS

American chemist Linus Pauling taught us that citrus fruits are not only a tasty snack, but that they contain high concentrations of vitamin C, which can help ward off common colds. A 2006 Japanese study published in the “European Journal of Clinical Nutrition” showed the risk of contracting three or more colds over a five-year period was reduced by more than 60 percent when subjects ingested 500 mg of vitamin C per day.

THE RX Enjoy a grapefruit with your breakfast; include red and yellow bell peppers or broccoli with your lunch or dinner; or snack on oranges, strawberries, or kiwi.

The fungus among us (the kind found in your produce section, not on your shower walls) is a great ally in the fight against pesky respiratory viruses.

Button mushrooms and other shroom relatives increase the production of antiviral proteins to kick out foreign microbes that cause common colds and the flu.

THE RX Serve mushrooms as a side dish or salad topper. Wash them thoroughly prior to eating. The brown stuff you see in the container isn’t dirt. Store mushrooms in a plastic container wrapped with plastic wrap. Poke small holes in the top for aeration.

3. PUMPKIN SEEDS

Pumpkin seeds have long been praised by nutritionists for their high zinc content. Zinc is a mineral shown to reduce the duration of a cold and improve immune function. But zinc isn’t the only superstar nutrient found in these bite-size salad toppers.

Pumpkin seeds are plentiful in the antioxidant department, containing high levels of manganese and a wide variety of vitamin E forms. Additionally, they contain 5 grams of protein per 1 ounce serving.

THE RX If you aren’t in the habit of roasting your own seeds in the oven, purchase pumpkin seeds that have the shell on.

Though the shell itself has little zinc, the husk between the shell and kernel is packed with nutrients.

4. GINGER

Ginger contains potent chemicals called sesquiterpenes, which target stuffy noses and works to suppress coughs. In a study at the College of Medicine at Kaohsiung Medical University, researchers found that ingesting fresh ginger inhibits the attachment of rhinoviruses to cells and also promotes the secretion of antiviral chemicals to help fight viruses found in mucus membranes.

THE RX To keep ginger fresh, store it in a resealable bag with all of the air pressed out. Only peel what you plan to use that day; otherwise, keep it whole. Shave a teaspoon of fresh ginger into your tea, serve it in stir-fry, or chew on it after dinner to aid in digestion.

5. SWEET POTATOES

This bright orange root vegetable is a staple in many a gym enthusiast’s diet. But sweet potatoes aren’t just a good source of workout fuel.

Sweet potatoes are rich in beta-carotene— the reason for the bright orange pigment— which may increase T cell function. This may allow you to ward off infection faster.

THE RX Keep cooked sweet potatoes in your fridge so you can grab them at any time. Add them to your morning meal, throw them in a stew, or serve them as a side to grilled chicken (aim for 150-200 grams).

6. BRAZIL NUTS

Like tuna, Brazil nuts are a great source of selenium. Selenium is a trace mineral that boosts the production of cytokine—proteins that support the immune system—and helps your body respond to bacteria and viruses that invade during cold and flu season.

THE RX Brazil nuts offer a megadose of selenium, so you don’t need many. Eat 3-4 nuts per day along with your regular meals to help protect your health.

2. STUDY YOUR EATING HABITS.

Are you eating junk or sugary food late at night, nibbling while cooking, finishing the kids dinner? Take a look

around, and it will be easy to identify a few behaviors you can change that will add up to big calorie savings. It’ll be hard to succeed if you truly don’t know yourself.

3. LEARN TO READ THE NUTRITIONAL FACTS ON FOODS.

Pay attention to serving sizes and the content of the food you’re about to eat. It’s all about the protein, carbs, and fats. Remember knowledge is power. Know what you putting in your mouth. Don’t just put something in there because it taste good. Save that for your cheat meals.

4. FAIL TO PLAN, PLAN TO FAIL.

You need a plan and strategy for you meals. Take a few hours in the week to cook and pack your meals. Pack into Ziploc bags or storage containers. This is the number one key to success.

5. START YOUR DAY WITH BREAKFAST

It really is the most important meal of the day. After a long night’s rest, your body needs the fuel to get your metabolism going and give you energy for the rest of the day.

8. EAT BEFORE YOU GO TO BED.

Don’t fall victim of the age old advice, “Don’t eat after dinner”. You should keep your metabolism up before rest. The key to this meal is to ONLY eat protein and fat and keep it somewhat small.

6. IF YOU SNACK DURING THE DAY, TREAT THE SNACK LIKE A MINI-MEAL.

Everything you put into your mouth should have a purpose. Think of it like planting a garden. You wouldn’t plant weeds on purpose only plants that add to the beauty of the garden.

So is it with food. Your body is the garden. Don’t clutter it up with weeds (junk food).

To really maximize your weight loss try eating carbs in the morning then switching to fats in the evening. Remember to keep protein with every meal.

If you going out with friends go ahead and indulge in some tasty foods. New Orleans has plenty to offer, just don’t go hog wild. Always have a plan, understand what your eating, and why you’re eating it.

Remember these meals are designed as rewards for keeping up with you diet.

Keep yourself motivated by reading motivational books or quotes, talking with friends and family, or watching motivational videos. Either route you choose the main thing is MOTIVATION. The amount of free resources we have at our finger tips is unbelievable, use them.

2016 is Here!

Another year has passed and there is so much to do. Many of us just don’t take the time to explore the magnificent attractions that surround us here is south Louisiana. With so many places nearby with great history and culture, we decided to put together a list of our favorite places to go in Louisiana.

If there are any local experiences listed here that you have not enjoyed, then we recommend you add them to your 2016 bucket list...

1. VISIT AVERY ISLAND Located in Iberia Parish, Louisiana, United States Avery island is about three miles inland from Vermilion Bay. It is better known to the home of the Tabasco Company. Since 1868 this small little island has been producing the internationally known hot sauce we know a Tabasco Sauce. The island is also known for its nature preserve with beautiful gardens and unique marshes and bayous that open up onto the Gulf of Mexico.

2. RIDE A REAL GONDOLA IN CITY PARK Take a trip on a real Venetian gondola in the beautiful lagoons of City Park, New Orleans. Experience romance and relaxation as you sail throughout the park and its gardens.

3. RIDE THE STEAMBOAT ON THE MISSISSIPPI Listen to the paddle wheels and calliope as you sit aboard one of the last authentic steamboats on the Mississippi River and let it take you back in time.

There are dinner and daytime jazz cruises available practically year round.

4. THE NATIONAL WWII MUSEUM Formerly known as the D-Day Museum. Located in the Central Business District of New Orleans. Take a stroll through the history of WWII. Experience the fascinating history of the men and women who served our country during this time. There is a large display of weapons, letters, clothing. There is actual film footage of the war.

5. TIGER STADIUM Opening its doors in November 1924 it is the home of the Louisiana State University Tigers Football Team. Also known to locals as Death Valley.

Located in Baton Rouge LA. This stadium not only houses football but several concert venues as well.

6. LOUISIANA PLANTATION HOMES These homes are scattered throughout the state. Some of the most notable ones are the Myrtles Plantation, Oak Alley, Nottaway, San Francisco, Rosedown and Houmas to name a few. The beautiful architecture is a must see.

7. TAKE A SWAMP TOUR Experience one of the wildest swamps in Louisiana. Tours leaving daily in the Honey Island Swamp, located in St. Tammany Parish. This swamp is rich in ecology and natural history.

8. VISIT THE OLD LOUISIANA STATE CAPITOL Located in Baton Rouge.

This building completed construction in 1847, used to house the LA State legislature in the mid19th century. Now it is home to a museum of political history and can even be rented out for special events.

9. RIDE A CARRIAGE THROUGH THE HISTORIC FRENCH QUARTER Take a tour through the heart of the French Quarter in a traditional horse drawn carriage.

Most tours begin at St Louis Cathedral and will take you through a 30-minute ride in the quarter. The tour guides are very knowledgeable of the rich history of the area.

10. TOUR THE CHALMETTE BATTLE FIELD Located in Chalmette, LA. This historic site is home to a United States National Cemetery located within the Jean Lafitte National Historic Park.

This battle field is the site of the last battle ever fought on American soil with a foreign enemy, the Battle of New Orleans.

Black Cherry Bourbon Hot Chocolate INGREDIENTS ½ cup of milk 1 5 Tbsp of Hot Chocolate Mix 2 oz Black Cherry Bourbon Whipped Cream Topping Chocolate Shavings garnish

. Makes 2 servings .

PREPARATION 1. In a medium saucepan heat milk and hot chocolate over medium heat until it starts to steam. Do not boil–stir frequently. 3. Evenly divide the hot chocolate and black cherry bourbon into each cup.

4. Garnish with whipped cream topping and chocolate shavings. 5. Enjoy.

Smothered Pork Chops INGREDIENTS SAUCE: 2 Tbsp butter 2 Tbsp flour 1½ cup beef broth 1 pinch of sage leaves, crumbled PORK CHOP: 6 thick loin pork chops 1 cup flour for dredging salt and pepper, to taste ½ cup lard 3 large onions, sliced 3 cloves garlic, minced ¼ cup celery, minced

PREPARATION 1. In a saucepan, melt butter over medium heat, stir in the 2 tablespoons flour, and cook stirring constantly with a wire whisk, until lightly browned. Stir in broth and sage, mix well, remove from heat, and set aside. This mixture will be the sauce. 2. Add salt and pepper to the 1 cup flour; dredge chops in the mixture.

In a large, heavy skillet heat half of the lard over medium-high heat. Add chops and cook until they are browned. Move browned chops to a large, oven-proof casserole with a cover. Preheat oven to 350ºF. 3. Melt the remaining lard in skillet over high heat. Add onions, garlic, and celery; lower heat to medium, and cook, stirring frequently to avoid burning, until onions are golden (about 8-10 minutes).

Remove vegetables with a slotted spoon and place over chops in the casserole.

4. Pour off all lard from the skillet. Add reserved sauce, raise heat to high, bring to a boil, and cook for 1 minute, stirring vigorously and scraping the bottom of the skillet. Pour sauce over chops in casserole, cover, and bake for 30 minutes. Serve with beans, greens and skillet cornbread, (see recipe below).

Skillet Cornbread INGREDIENTS ¾ cups white cornmeal 1 1 tsp baking powder 1 tsp baking soda ½ tsp salt 2 cups buttermilk 1 large egg 3 Tbsp lard or bacon grease

PREPARATION 1. Preheat oven to 450 degrees. 2. Start with a 9” cast iron skillet on the stove over medium heat, put the lard in the skillet. 3. Mix all the dry ingredients together in one bowl. 4. Mix the egg and buttermilk together in another bowl. 5.

Mix the dry and wet ingredients together. 6. When you start to see little wisps of smoke coming from the lard, pour most, of the lard into the cornbread batter and mix well. 7. Then pour the batter into the hot skillet and hear the sizzling sound that guarantees you a nice crisp crust.

8. Place in the middle of the oven and bake about 30 minutes, until nice and brown on top. Serve with butter, beans or greens

The holidays have past, but here are some hearty recipes to get you through the rest of the winter months.

They will surely warm your body and soul.

Mustard Greens and Ham Hocks INGREDIENTS

2 pounds mustard or collard greens 2 pounds green cabbage 3 ham hocks, smoked (about 2 lbs) 3 quarts water 1 Tbsp salt 1 teaspoon freshly ground black pepper 1 teaspoon sugar 1 teaspoon thyme leaves 4 medium idaho potatoes, peeled (about 2 pounds) cut into quarters

PREPARATION 1.Wash the greens thoroughly and drain them by shaking off any excess water.

Remove the very thick part of the stems from the greens and coarsely chop the leaves. Cut the cabbage into quarters and cut the core from the cabbage pieces. Coarsely chop the cabbage and set aside. 2. Put the ham hocks and enough cold water to cover them in a 4-quart saucepan over high heat. Heat to boiling, reduce the heat to simmering, and cook the hocks, covered, until almost tender, about 1 1/2 hours. 3. Stir in the chopped

greens, salt, pepper, sugar, and thyme. Cook 30 minutes. Add the cabbage and potatoes and cook until all vegetables are tender, about 30 minutes.

Southern Hoppin’ Black Eyed Peas INGREDIENTS 6 slices smoked bacon 1 medium onion, chopped 2 cloves garlic, mashed 2 cups black-eyed peas (canned or frozen) ½ cup Chicken broth 1 Tbsp chipotle adobo sauce Optional garnish: Chopped Cilantro

PREPARATION 1. Fry bacon until crispy, remove to paper towels and set aside, reserving 1 to 2 tablespoons of bacon fat in the frying pan.

Add onions and garlic to the frying pan and sautèuntil tender and onion is translucent. 2. Combine black-eyed peas, sauteed onions and garlic, broth and chipotle paste in a medium saucepan or pot and bring to a boil over medium heat.

Reduce heat, cover and simmer for 15 mins to half an hour, stirring occasionally, until most of the liquid is absorbed.

Crumble in the bacon and stir. Taste for balance and season with salt & pepper. 3. Serve on either a bed of rice, grits, quinoa, bulgur or even mashed potatoes. 4.

Serve garnished with chopped cilantro.
