What’s Your Story Line?

Most people seem to have a story line for their lives, and we work hard to make that vision a reality. Oddly, there are some who seem to work as hard at failure as others do at success. Strange as it sounds, some seem to prefer failure. Like the character George Kastanza on Seinfeld, they sabotage their own plans when things are going well.

Your vision for yourself is critical to your future. High achievers envision themselves being successful. They don’t have difficulty seeing themselves taking center stage, hitting a home run, or closing a big sale. Others just can’t see themselves pulling it off. On the auditions for American Idol, many of the contestants are asked to look at the camera and say, “I am the next American Idol.” Many stumble over the words. They don’t believe it themselves. If you don’t see yourself growing, changing, losing

weight, quitting smoking, or being successful, you may not be able to follow through with the actions necessary to acheive your goal. You have to see it before it will become reality.

What is the story line for your life?

Are you living a drama or a comedy?

Are you the triumphant hero, or a tragic villain?

Setting a story line is a great method for deciding what you want to achieve in your life. It can separate what’s important from what’s irrelevant, motivate you to stay physically and mentally active, and build your self-confidence, based on successful achievement of goals. As you make this technique part of your life, you’ll wonder how you did without it!

The body is made up of 1.6 trillion skin cells and we lose and replace between 30,000 and 40,000 a hour, with it fully regenerating every 30 days. “We lose a lot of them in clothes and bedding,” dermatologist Dr Michael Rich, of enRich clinic in Melbourne, says. “We’re shedding skin non-stop.” The cells also end up as household dust, where they’ve been found to absorb harmful ozone. Researchers at the University of Medicine and Dentistry of New Jersey revealed that an oil called squalene in human skin cells “gobbles up” a small amount of air pollution from our homes.

Caffeine may boost long-term memory

Numerous studies have suggested that caffeine has many health benefits. Now, new research suggests that a dose of caffeine after a learning session may help to boost long-term memory. To find out, the investigators analyzed 160 participants aged between 18 and 30 years. On the first day of the study, the participants were shown pictures of different objects and were asked to identify them as “indoor” or “outdoor” items. Soon after this task, they were randomized to receive either 200 mg of caffeine in the form of a pill, or a placebo tablet. The next day, the participants were shown the same pictures as well as some new ones. The researchers asked them to identify whether the pictures were “new,” “old” or “similar to the original pictures.” From this, the researchers found that subjects who took the caffeine were better at identifying pictures that were similar, compared with participants who took the placebo.

What is Kale?

Kale is among the most nutrient dense foods on the planet. Before we get to all the benefits, let me briefly explain what kale is. Kale is a popular vegetable, a member of the cabbage family (Brassica oleracea). It is related to cruciferous vegetables like cabbage, broccoli, cauliflower, collard greens and brussels sprouts. There are many different types of kale. The leaves can be green or purple in color, and have either a smooth or curly shape. The most common type of kale is called curly kale or Scots kale, which has green and curly leaves and a hard, fibrous stem.

KALE NUTRITION FACTS 1 cup of raw kale (about 67 grams or 2.4 ounces) contains: Vitamin A: 206% of the RDA (from beta-carotene).

Vitamin K: 684% of the RDA. Vitamin C: 134% of the RDA. Vitamin B6: 9% of the RDA. Manganese: 26% of the RDA. Calcium: 9% of the RDA. Copper: 10% of the RDA. Potassium: 9% of the RDA. Magnesium: 6% of the RDA.

Kale is packed with phytochemicals like sulfur-containing glucosinolates and isothiocyanates that help ward off cancer. The fiber in kale helps absorb and sweep out DNA-damaging chemicals and other toxins that enter our bodies. Open-leafed plants in the cabbage family, like kale, have higher amounts of vitamins C and A and carotenoids than plants whose leaves don’t see the sun. Carotenoids are powerful antioxidants that also support proper functioning of the immune and reproductive systems and lower the risk of cataracts. Kale is an excellent source of minerals, including calcium, and manganese, a mineral the body requires for many physiological functions. One cup of kale provides 1,300 percent of the recommended daily allowance of vitamin K, which is important for healthy blood coagulation and maintaining bone mass. Three servings of leafy greens each day has been found to slow cognitive loss by 40 percent.

SHOPPING TIPS For optimum nutrition, buy kale in season. A light frost sweetens kale, so depending on where you live, fall or winter is the perfect time to enjoy it.

Choose kale from organic, biodynamic or responsible local growers when possible. Greens grown in better-managed soils help you net maximum flavor and nutrition and minimize exposure to pesticides. Whenever you shop for kale, buy lots of it because it cooks down dramatically. Keep blanched or precooked leftovers on hand to add to the week’s breakfasts, lunches, and dinners.

HOW TO COOK Thoroughly rinse the kale in cold water, soaking if necessary to remove grit.

Tear the kale into chunks and remove thick stems.Heat the olive oil in a large skillet over medium-high heat. Add the garlic and quickly stir it around to avoid burning. Throw in the kale (make sure it’s dry) and use tongs to move it around the skillet. Sprinkle in salt and pepper and continue cooking until slightly wilted but still crisp, about 1 to 2 minutes.

Remove the kale to a plate and serve!

Option: Squeeze the juice of half a lemon over the top.

KITCHEN TRICKS Washing: Avoid washing kale until just before use, since it will hasten spoilage. Cutting: To make cutting easier, remove any thick stems (just hold the kale upside down by the stems and pull the leaves off), then stack large greens on top of one another, roll them into tight bundles and slice into desired widths. The stems, finely chopped, can be used in soups. Blanching: Blanching reduces bitterness and softens thick greens, which is useful if you want to follow up with a quick sauté or freeze the greens for later use. To blanch kale, stir leaves into boiling water for a minute or two, drain, then immediately run under cold water. Braising: Braising tenderizes and adds flavor. To braise, slow cook 1 pound of greens in a ½ to ¾ cup of seasoned cooking liquid (chicken or vegetable stock or wine) or water for about 20 minutes or until greens are tender and ready to eat.

Vaccination Guide Vaccines are a triumph of modern times.

Imagine a world where the top killers of children were measles, polio, diphtheria, smallpox, and pertussis (whooping cough).

One does not have to venture far in time to recall the horror of childhood death, or birth defects from rubella. Where did they go?

These diseases are now called preventable diseases with our great friends, vaccines.

Where do we stand with vaccines now? Do I need any as an adult? Let’s discover how vaccines can help as we age.

Infants and children start out with vaccines that create a robust immune response.

These are inactivated, in other words, killed to where the bacteria and viruses cannot replicate or reproduce. The purpose is for the immune system to recognize the threat, generate scouts, and soldiers to eliminate any danger that penetrates our bodies. The CDC (Centers for Disease Control and Prevention) has studied extensively the correct timing intervals and doses for all vaccines given. As we get older, our immune system needs a “reminder” of how to combat threats to our bodies. This is also known as “memory” in immune function.

Teenagers and pre-teens get the next “reminder” and then, the “golden years.”

Some folks require vaccines more often than others. This may be due to certain diseases or illness that make one more vulnerable and require a little extra help. An example may be one with diabetes or heart disease that may call for a pneumonia vaccine every five years. Primary care providers are excellent sources of knowledge of whom needs extra protection, so if ever in doubt, don’t hesitate to ask! Of course, one can ask their friendly allergist/immunologist as well.

My List of Vaccination Must-Haves: 1. FLU VACCINE There is a nasty rumor that the flu vaccine causes the flu. This vaccine is a bit misunderstood. It is inactivated.

Therefore, the vaccine will not give one the full-blown flu. However, it may make one have arm soreness, slight elevated temperature of 99 degrees or so, and maybe fatigue. This is a normal part of the body using energy to train flu-fighting soldiers. If one does catch the flu, it will be far less severe and devastating. The flu kills thousands every year. Don’t be a victim. It is best to obtain this vaccine every year as it does change. The flu vaccine isn’t 100% preventative, however, I would much rather have soldiers trained to fight it than “risk it.”

2. PNEUMOVAX This vaccine is usually

given at ages 65 and older to help prevent pneumonia, sinus infections, and ear infections. It is also given to those undergoing an immune evaluation, those who may smoke tobacco products, and those with asthma. For those in the age group of 65 and older this vaccine is for you.

3. PREVNAR This can be considered the more robust, loud-mouth cousin of pneumovax. This vaccine also helps prevent

against pneumonia, sinus, and ear infections.

Because this vaccine stimulates a more aggressive response, it is now indicated for the ages of 65 and older. Under current CDC guidelines, this vaccine should be given first, then one year later, the pneumovax. But wait, what if I have already gotten the pneumovax first? Kindly tell your primary care provider you want the loud-mouth cousin, Prevnar, 6 months to a year after you have received your pneumovax.

4. ZOSTERVAX This vaccine helps to not only decrease the incidence of shingles by 51%, but it will also decrease the complications of shingles and severity by over 60%!

Even if you have already gotten the shingles, at the age of 60 years or older, this vaccine is indicated for you. It is a live-virus vaccine, so if one is immune compromised this one will need to be avoided.

5. TDAP This is a great vaccine to have. It is recommended for one lifetime dose. It can be considered a bundle vaccine. It has: Tetanus, diphtheria, and acellular pertussis. The reason to receive this is to protect young infants and children. The pertussis component is what protects from the “whooping cough.” Infants don’t have the classic cough. This age group typically will have apnea, or they suddenly stop breathing. Anyone needing to protect their grandbabies or infants and children in the community, this vaccine is for everyone.

However, as we mature, experience teaches us the importance of being in the know.

The Slidell Northshore club and its partners – most notably, the Rotary Club of Slidell – have raised more than $700,000, which in turn has been distributed to social services and charitable organizations throughout our community.

Few understand the diverse foods from Louisiana’s backyards and bayous or the local, cultural customs as well as renowned chef, John Folse. Named by the Louisiana Legislature as “Louisiana’s Culinary Ambassador to the World,” Folse is internationally known and readily accepted as a leading authority on Cajun and Creole cuisine and culture.

To call Folse a chef would not adequately describe this dynamic entrepreneur and culinary giant whose noteworthy awards and accolades easily outnumber the shrimp in an étouffée. Folse launched his career in 1978 with his popular Lafitte’s Landing restaurant in Donaldsonville, then built an impressive, multifaceted empire centered around his beloved Cajun/Creole cooking and culture. Marketing his Louisiana dishes globally, Folse has fed both Pope and Presidents and continues to delight foreign palates with flavors from his kitchen. Today Chef John Folse & Company is engaged in numerous endeavors including food manufacturing, catering, publishing and broadcasting. His popular television series, “A Taste of Louisiana,” airs on PBS in the United States and is syndicated internationally.

Born in July 1946 on the German Coast of the Mississippi River in St. James Parish, Folse learned to cook at an early age, using the ingredients available in his surrounding habitat. As one of eight siblings Folse cannot remember a time when he was not helping in the kitchen or working in their garden. According to Folse, his genuine love

for cooking was reinforced by the abundant array of indigenous plants and animals near his home, which added both flavor and variety to their table. “The swamp was at our back door and the Mississippi River at our front door. We never worried where our next meal was coming from!”

Although cooking was a fundamentally inspiring, integral part of Folse’s youth, his childhood was equally enriched and influenced by generations of family and folklore.

“We were always surrounded by family; aunts, uncles, grandparents, cousins.” Folse explains his ancestors originated from Germany but assimilated quickly into the French culture of the swamplands. His ancestors adopted the French language and eventually changed their name from the original German name “Voltz” to the French name “Folse.” Describing his childhood as a simple, yet happy time, Folse felt blessed with a wealth of love from family and neighbors. “Our door was always open. We never met a stranger.”

While discussing his own family and culture, Folse explains his early Christmases were not celebrated on December 25th,

but on February 25th which is known as Trapper’s Christmas. His father, who was a trapper by trade, left home each November and did not return until late February when he sold his pelts and hides. On Trapper’s Christmas children received small gifts from “Papa Noel” (the French Santa Claus) while the entire family gathered for a magnificent feast. Folse describes their Christmas table as filled with succulent dishes including roasted goose, meat pies, gumbos, rice dressings and any winter vegetable imaginable. Among their list of desserts were fresh pecan pies, custards, cookies

and their favorite German fruitcake (which were started in November and spiked with brandy or some other alcohol). Folse is particularly proud of his family’s fruitcake recipe which was handed down from his great-grandmother. “Nobody ever walks away from my fruitcake. I can promise you!”

Folse recognizes the deeply interwoven relationship between a family’s history, culture and cuisine and finds them difficult if not impossible to separate. He shares his philosophy with students at the Chef John Folse Culinary Institute at Nicholls State University.

First, choose the foods from the culture of your people. Next, choose ingredients local to your area, and lastly, practice simplicity.

The world often says more is better, but Folse insists simplicity is better in cooking. Moreover, Folse’s utmost desire is to ignite a passion in the culinary students to understand, preserve and share the origins of one’s culture, foods and family celebrations. “If we don’t teach it, it is lost forever.”

In 2010, as Folse reached the age when many chefs hang up their apron, he partnered with esteemed Chicago Chef Rick Tramonto in a new business venture. Folse admits he was not ready for retirement and ultimately decided, “It’s not too late to start something new.”

Together they opened Restaurant R’evolution, a reinterpretation of Cajun and Creole cuisine in New Orleans in 2012, followed by Seafood R’evolution in Ridgeland, MS in 2014. Their restaurant development company, Home on the Range, is working on additional projects

for future growth. As for Folse, he couldn’t be happier to share the taste of Louisiana’s cuisine and culture with new patrons and enthusiastically proclaims, “I’m looking ahead!”

In early December, just in time for the 2015 holiday season, Folse will release his newest cookbook, “Can You Dig It: Louisiana’s Authoritative Collection of Vegetable Cookery.” The latest book in his Cajun and Creole series is dedicated to Louisiana’s love for gardening and covers most anything you’ve ever wanted to know about vegetables. Readers will find chapters on the swamp floor pantry, root vegetables, leafy vegetables, off the vine,exotics and more. In a news release about his book, Folse reveals that tomatoes take center stage in the “Off the Vine” chapter. “I don’t care if everyone else in the world thinks tomatoes are fruit. In Louisiana, a tomato is a vegetable, and we will give it due homage.”

Can you dig it?

Chef Folse and his wife Laulie traditionally share Christmas with a close circle of family and friends. This year the food Folse selects for the occasion will have a story or special meaning and will be cooked over his open wood-burning fireplace using antique culinary tools. Before eating their holiday meal Folse says he will tell the story behind the foods and why they were selected. It promises to be a day filled with family, friends and fabulous food rich with Louisiana culture. Folse continues to feel honored to share his cuisine and culture both locally and globally. His life’s work is indeed a reflection of his passion.

Warm Christmas Cider from Chef John Folse & Company

This red punch with fresh, green rosemary sprigs is the perfect color for your next big holiday celebration.

INGREDIENTS

½ cups cranberry juice 4 1½ cups orange juice 3 cups apple cider 2 tbsps packed dark brown sugar 1 tsp fresh rosemary, finely chopped 3 tbsps grenadine 3 cinnamon sticks ¾ tsp whole cloves 1 orange thinly sliced ½ cup fresh cranberries 3 sprigs fresh rosemary, rinsed

SERVES 15-20 guests

PREPARATION 1. In a large pot, combine cranberry juice, orange juice, apple cider, brown sugar, rosemary, grenadine, cinnamon sticks, cloves and orange slices.

2. Bring to a boil, reduce heat, and simmer for 15-20 minutes, then remove from heat and add fresh cranberries and rosemary sprigs.

3. Serve in a decorative punch bowl immediately or keep heated by serving in a crock pot set on low.

Holiday Cheer isn’t a given; TIPS TO GET YOU THROUGH With the holiday season rapidly approaching many of us can get caught up in the hustle and bustle of the season. With a bit of foresight and planning the holidays can leave you feeling up, not down. Feeling down and overwhelmed during the holidays can be tough, especially when you go out and everyone around you seems to be beaming with the holiday spirit. Don’t let that fool you most are feeling wretched and exhausted. With High expectations, family commitments, money woes, remembering the loss of loved ones, and other holiday hazards can spell trouble for anyone.

Remember these quick tips to help you avoid the blues during this holiday season.

Increase exposure to light

During the winter months the sun is not as powerful as it was during the summer.

Most people feel consistently tired and irritable this time of year. It is due to the lack of exposure to the sun and a decrease in Vitamin D. On sunny days get outside as much as you can. You may even want to invest in a light box for light exposure for about 30 minutes a day.

Cut back on commitments

If you feel like you just can’t get through one more holiday gathering, it’s OK to sit one out.

Forget perfection

No one is perfect don’t let having to fine the perfect gift consume your focus.

Remember it’s the thought that counts.

Don’t binge on food or alcohol

Overindulgence can as much of a holiday tradition as opening gifts. Try to achieve more restraint. Don’t go back for seconds. This will help you from feeling guilty afterwards. Prepare yourself for the over indulgent meals by eating healthy the week leading up to the occasions. Don’t use alcohol to deal with holiday depression. Alcohol is a depressant and it can intensify your emotions and leaves you feeling worse at it wears off.

Focus on what’s important

Its not all about the presents. Financial woes are common this time of year. Overspending can get out of hand. Organize a gift exchange with friends or family.

You can also bake your gifts, or create traditions such as having a large potluck meal. When you take your eyes off of yourself and focus on those who have far less than you do, you can’t be depressed,” learn to be grateful for the blessings you have.

Exercise

Exercise is one of the first things to go by the wayside during the holiday shuffle. Keep physical activity on you to do list. The more stress we are under, the more irritated we feel. Through poor diet and lack of exercise we can feel like life is out of control. Exercise has been shown to improve mood. Taking a walk for at least 30 minutes five days a week, will boost your mood.

Avoid family conflict

You can’t be at every place at one time. If you know there are going to be conflicts, prepare a neutral response, such as, “Let’s talk about that another time,” or, “I can see how you would feel that way.” Everyone’s stress level is elevated during the holidays.

Its ok to grieve

If you are mourning a loved one, it’s a good time to talk about your feelings or reach out to support groups. It is not uncommon to feel depressed or angry for that person leaving you alone or feeling guilty if you enjoy try to enjoy the holiday.

You are human, focus on the wonderful moments you shared with your loved one.

Schedule some sleep

Sleep deprivation is not uncommon during the holiday season. Holiday activities easily can interfere with your sleep schedule. Studies have proven there is a link between sleep loss and depression. Don’t cut back on your sleep to get everything done or attend every event. Stick to your routine, wake up at the same time every day avoid stimulating activities around bedtime. Keep yourself free from distractions at bedtime.

How Did Santa Claus Begin?

When did Santa Claus begin? How did this wonderful Christmas character who is so giving begin? We didn’t make him up. Saint Nicholas, whose name was changed over the years to Santa Claus, was a real person, a bishop in the church in the fourth century.

Saint Nicholas was born in Patara (Asia Minor) and later moved to Myra (Demre in modern Turkey), where he was elected bishop.

He died on Dec. 6 sometime between A. D. 326 and 341. Many stories have been told of his generosity.

In Saint Nicholas’ time, a young woman had to have a dowry (money or material things which she brought to her husband) before she could be married. It’s a custom we have eliminated in our culture because we believe in the equality of women and men.

Saint Nicholas wanted to help a poor nobleman with three daughters, but he wanted to do it anonymously (without anyone knowing who did it). He didn’t want to be

praised for his generosity. He gave for the joy of giving. So, three bags of gold were thrown through the nobleman’s window. However, the nobleman found out who had given the gold for his daughters’ dowries. After that, anonymous gifts of charity often were attributed to Saint Nicholas.

This good man also spent several years in prison because of his faith. Many prisoners were converted to the Christian faith by his witness.

The stories of Saint Nicholas came to America through the Dutch settlers in the state of New York. He has changed through the years.

Originally, he was dressed in his traditional Bishop’s robes. It wasn’t until the 20th century that he began to be dressed in the red and white outfit in which he appears to us now in the persons of his many “helpers.” In fact, in 1874, the American cartoonist Thomas Nast drew him in a brown suit with brown fur trim.

Dr. Clement C. Moore, a professor of Greek and Biblical Studies at General Theological Seminary of New York, wrote “A Visit from St. Nicholas” (more commonly know as “Twas the Night Before Christmas”) in 1822.

Only eight reindeer pulled Santa’s sleigh until the song “Rudolph, the Red-Nosed Reindeer” was written.

Jesus, (the Messiah) is the most important person in the Advent/Christmas season.

However, since Saint Nicholas conveys a spirit of generosity and love, we remember him and we too give gifts. Because Saint Nicholas gave us such a good example of helping the poor, Santa Claus may well be a healthy part of our celebrations. As Allan Hauck wrote in Calendar of Christianity, If Santa Claus has become too commercial, too secularized, perhaps it is “because we have forgotten his historical origin in the beloved Bishop of Myra who obeyed Christ’s command that we help all those who are in need.”

A Safe and Happy New Year’s Eve for PETS While many of us enjoy New Year’s Eve celebrations, some of the festivities can be frightening to our animals.

Fireworks and other loud events can be startling and confusing to pets. The stress can even increase the risk of them getting spooked and then running away. Please read these safety precautions to ensure your pet has a safe and happy New Year.

EXERCISE AND FEEDING

Exercise your pet during the day, including playing games, going for a long walk, or a trip to the dog park.

A couple hours after you are finished, feed your pet a full meal. Tired and satisfied pets will be more relaxed and less anxious.Your pet’s favorite treats can help to distract them as well.

Try freezing bone broth in an ice cube tray–pets will keep occupied licking the healthy frozen cube.

HOUSING ARRANGEMENTS

Keep pets indoors during firework displays, preferably in a safe, escape-proof room or crate. Close curtains, windows and doors. Put the television, radio, or a white noise machine on at a comfortable level for distraction from the loud noises. Gather your pets favorite toys as playing can be another means of distraction and is also quality time together. If your pet seeks comfort hiding under

a bed or in a quiet place, let them stay there and come out when they are ready (cats especially may do this).

Stay home with your pet if possible or consider hiring a pet sitter. Diffuse essential oils, such as lavender which is calming to pets and people.

SAFETY

Have your pet microchipped and make sure your contact information is current along with ensuring your pet has a current identification tag.

Check your yard and keep pets away from all fireworks including the used remnants that fall on the ground- they can be toxic! As always, keep pets away from table scraps and avoid feeding them holiday foods. Make sure livestock and horses are secured in a fenced area away from loud noises.

ATRIP TO YOUR VETERINARIAN

If your pet historically stresses on New Year’s Eve and gets anxious frequently, consider scheduling a visit with your Veterinarian or a Veterinary Behaviorist or Trainer who can recommend safe options to help your pet cope.

I also recommend acupuncture as a safe and effective way to treat many behavior issues. Before trying any remedy, always consult with your veterinarian first.

Holiday Pork Roast INGREDIENTS

PREPARATION

1 pork rib roast (4 to 4½ pounds) 1 cup dried mixed fruit bits, divided ²/³ cup water ²/³ cup honey 1 envelope onion soup mix ¼ cup ketchup 2 tablespoons lemon juice 2 teaspoons grated lemon peel

1. Make 15-20 slits, about 1 to 1½ in. deep, in the roast; place some fruit in each slit. 2. In a small bowl, combine the water, honey, soup mix, ketchup, lemon juice, peel and remaining fruit.

3. Place roast fat side up in a roasting pan. Pour fruit mixture over the top.

Cover and bake at 325° for 3 to 3½ hours or until a meat thermometer reads 160°. 4. Let stand for 10-15 minutes before carving. . Makes 6-8 servings .

Egg Nog Pie INGREDIENTS 4 ounces cream cheese, softened 1 tablespoon butter, softened ½ cup confectioners’ sugar ¼ cup eggnog 2 tablespoons sour cream 1 teaspoon pumpkin pie spice 1½ cups whipped topping 1 graham cracker crust (9 inches) ½ 8 teaspoon ground nutmeg

PREPARATION 1. In a small bowl, beat the cream cheese, butter, and confectioners’ sugar until smooth. Then, beat in the eggnog, sour cream, and pie spice. Fold in the whipped topping and spread all of this into your graham cracker crust. Sprinkle with nutmeg. 2. Cover and freeze for 4 hours or until firm. 3. Remove your pie from the freezer 15 minutes before slicing. . Makes approximately 8 servings .

Cranberry Apple Pie INGREDIENTS 2 cups fresh or frozen cranberries 1¾ cups sugar 1½ ³ cup quick-cooking tapioca ¼ cup water 2 teaspoons grated orange peel 3 cups sliced peeled tart apples Pastry for double-crust pie (9 inches) 1 egg white, beaten 1 tablespoon water Additional sugar

PREPARATION 1. In a large saucepan, combine the cranberries, sugar, tapioca, water and orange peel; let stand for 15 minutes. 2. Bring to a boil, stirring occasionally. Remove from heat and stir in apples. Set saucepan in a pan of cold water for 10 minutes, stirring occasionally. 3. Line a 9-inch pie plate with bottom pastry. Pour filling into crust and top with remaining pastry or a lattice crust. NOTE: If using a full top crust, cut a few slits in it. 4. Beat egg white and water until foamy; brush this mixture over top pastry and sprinkle with sugar. 5. Bake at 375° for 45-55 minutes or until crust is golden brown and filling is bubbly. Cool completely. . Makes approximately 8 servings .

Senior Sampler Coaches Cheese Dip INGREDIENTS

Special Holiday Recipes

PREPARATION Preheat the oven to 350 degrees F.

• 1/2 cup mayonnaise • One 8-ounce package cream cheese, softened • 1 cup grated sharp Cheddar cheese • 1/2 cup grated Monterey Jack cheese • 2 green onions, finely chopped • 1 dash cayenne pepper • 8 butter crackers, crushed, such as Ritz • 8 slices bacon, cooked and crumbled • Chips for dipping

In a medium bowl, mix the mayonnaise, cream cheese, Cheddar cheese, Monterey Jack cheese, green onions and cayenne pepper. Transfer the mixture to a shallow baking dish, such as a 9-inch pie pan. Top the mixture with the cracker crumbs and bake until heated through, about 15 minutes.

Remove the pan from the oven and top with the bacon. Serve immediately with your favorite type of chip.

Poppa Noels Potato Soup Playbook Party Rye INGREDIENTS

6 medium potatoes, peeled and sliced 2 carrots, chopped 6 celery ribs, chopped 8 cups water 1 onion, chopped 6 tablespoons butter, cubed 6 tablespoons all-purpose flour 1 teaspoon salt ½ teaspoon pepper 1½ cups 2% milk

PREPARATION

1. In a large soup pot, cook the potatoes, INGREDIENTS carrots and celery in water until tender, (about 15-20 minutes). Drain, reserving 1 lb and ground chuck any • liquid setting vegetables aside.

PREPARATION 1. Brown meats and drain off fat.

2. Add meats and cheese in frying pan and stir over low heat until melted. Mix in spices and Worcestershire sauce.

3. Spread mixture on cocktail rye slices.

4. Place on cookie sheet and bake approximately 10 minutes at 400°F until hot.

Serve hot or warm.
