Liebe Leserin, lieber Leser Die Entstehung des Wintertourimus in St.Moritz verdanken wir dem grossen Hotelpionier Johannes Badrutt, der vor 150 Jahren die ersten englischen Gäste für einen Aufenthalt im damaligen «Hotel Engadiner Kulm» begeistern konnte.

Er legte damit 1864 den Grundstein für eine Erfolgsgeschichte, die nicht nur aus der ehemals bescheidenen Pension das heutige Fünfsterne Kulm Hotel St.Moritz werden liess, sondern auch St.Moritz und dem ganzen Engadin Zulauf, Wohlstand und Renommee verschaffen hat.

Auch das Grand Hotel Kronenhof verdankt ebenso wie Pontresina selbst seinen Aufstieg Gründervater Johannes Badrutt. Sein visionärer Geist, sein enormes Engagement und sein unbeirrbares Verfolgen seines Weges haben es möglich gemacht, dass nicht nur St.Moritz und Pontresina mit ihren beiden «Leuchttürmen» – unseren Hotels –, sondern das ganze Engadin eine schier unglaublich anmutende Entwicklung durchmachen durfte – heute würde man wohl von Ikonen sprechen.

Wir feiern « 150 Jahre Wintertourismus in St.Moritz» mit verschiedenen Anlässen, zu denen wir Sie gerne einladen.

Dear Readers, The development of winter tourism in St.Moritz began with the great hotel pioneer Johannes Badrutt who, 150 years ago, attracted the first English guests to stay in what was then known as the “Hotel Engadiner Kulm”.

Thus, in 1864, he laid the foundations for a success story, which not only brought about the transformation of the former modest guest house into the present-day fivestar Kulm Hotel St.Moritz, but also attracted crowds to St.Moritz and the whole of the Engadine, bringing prosperity and international recognition to the region.

The Grand Hotel Kronenhof and Pontresina itself also owe their development to founding father Johannes Badrutt. His visionary spirit, enormous dedication and his determination to blaze his own trail have ensured that St.Moritz and Pontresina with their two “lighthouses” – our hotels – as well as the whole of the Engadine have undergone incredible transformations, the like of which would be dubbed icons today.

We are celebrating “150 years of winter tourism in St.Moritz” with a variety of events to which you are cordially invited.

KULM GÄSTE SCHREIBEN SCHLAGZEILEN – ODER WESHALB EIN HOTEL AUCH EINE REDAKTION IST Erstmals schrieben die Kulm Gäste vor bald 130 Jahren Schlagzeilen, nämlich am 7. Dezember 1886, als sie mit The St.Moritz Post die erste Touristenzeitung des Tals herausgaben. Die Zeitung eröffnet, wie aktiv die Gäste waren und wie sehr sie sich mit St.Moritz und dem Engadin identifizierten. Ein Blick zurück, als Ferien machen eine Lebenshaltung verkörperte – von Cordula Seger Wer im Winter 1886 zu Erholung und Vergnügen ins Engadin reiste, benötigte Zeit und Musse. Bereits die Fahrt von London nach Chur dauerte gute 26 Stunden.

In Chur übernachtete der Gast im vornehmen Hotel Steinbock beim Bahnhof, um früh am nächsten Morgen die Postkutsche zu nehmen und später, dem Berg entgegen, spätestens nach einem Zwischenhalt in Mulegns, gar auf den offenen leichten Schlitten umzusteigen. Von Kälte und stürmischem Wind auf dem Julierpass wussten manche Reisenden zu berichten und schätzten sich glücklich, wohlbehalten in Silvaplana einzutreffen. Wer dies alles auf sich genommen hatte, war gekommen, um zu bleiben, nicht wenige Tage, sondern Monate.

Das Kulm Hotel war damals schon bequem für Wintergäste eingerichtet: Es gab einen grosszügigen Kamin in der Halle, Zimmer mit weitem Blick über das Tal und verschiedene Salons fürs gesellschaftliche Beisammensein. Doch für das Vergnügen waren die hauptsächlich aus England stammenden Gäste selbst besorgt. Sie organisierten sich in «Indoor and Outdoor Committees», jeder und jede bezahlte in den entsprechenden «Amusement Fund» ein. Man spielte Thea­ ter, zeitgenössisch Vergnügliches mit Titeln wie «Der Zahnarzt meiner Frau», stellte Bilder nach, so genannte «Tableaux vivants», mit Sinn für Kostüme und Pose, legte Bob Runs an – neben dem Cresta Run auch den Lake und City Run –, zog mit den Skiern los, veranstaltete einen «Fancy Dress Ball» oder Wohltätigkeitsveranstaltungen zugunsten des «Aid Fund». In jedem Fall waren Mann und Frau aktiv, die Identifikation mit dem Ort war gross und die eingeschworene englische Gemeinschaft, die den Wintersport im Engadin erst «salonfähig» gemacht hatte, nannte sich selbstbewusst «The St.Moritzers». Und um aller Welt zu berichten, wie viel Spass man bei all diesen Aktivitäten hatte, gründeten die Gäste gar eine eigene Zeitung, The St.Moritz Post, und das Kulm Hotel diente als Redaktion und Headquarter in einem: «all communications must be addressed to the Editor, Hotel Kulm, St.Moritz».

Frederick de Beauchamp Strickland, der im Kulm residierte und mit Unterstützung weiterer Gäste desselben Hotels die Zeitung erarbeitete, betonte im Editorial der zweiten Nummer denn auch, wie vergnüglich sich ein Winteraufenthalt ausnehme. Den Daheimgebliebenen sollte klar werden, dass St.Moritz kein Exil für Kranke, sondern ein äusserst abwechslungsreicher Gesellschaftsort für Erholungssuchende sei. «‹Nach St.Moritz reisen?› ‹Was!! Im Winter!!›», setzte der Herausgeber mit effektvoller Rhetorik ein, «‹Was um Himmels willen kann man dort mit sich anfangen?› ‹Ist das nicht beängstigend langweilig?› ‹Vermisst man nicht Menschen, mit denen man sich unterhalten kann?› Dies sind die Fragen, mit denen man in London oft konfrontiert ist, und die selbst Leute stellen, die das Engadin im Sommer kennen; die Beschreibungen von Tobogganing, Eislaufen und Wettrennen, von unseren Unterhaltungen, Musik, Tanz und

The newspaper reveals how active the hotel’s guests were and how strongly they identified with St.Moritz and the Engadine.

Here is a look back to an age when holidays embodied a way of life – by Cordula Seger In the winter of 1886, those who travelled to the Engadine for relaxation and pleasure needed plenty of leisure time – the journey from London to Chur alone took a good 26 hours. In Chur travellers would stay in the prestigious Hotel Steinbock by the station, to be ready to catch the stagecoach early the next morning. Later, usually after a stopover in Mulegns, they would continue up the mountain by light open sleigh. Some of them reported on the cold and the stormy winds on the Julier Pass, feeling glad when they reached Silvaplana safe and sound. Anyone who ventured this far had come to stay not for a few days, but for months.

At the time, the Kulm Hotel was already comfortably furnished and equipped for winter guests, with a large open fireplace in the hall, rooms with wide-ranging views over the valley and various lounges for socialising. But the guests, most of them from England, made their own entertainment. They organised themselves into “Indoor and Outdoor Committees”, with everyone contributing to an “Amusement Fund”. They put on plays, contemporary delights with titles such as “My Wife’s Dentist”, reconstructed works of art, known as “tableaux vivants”, in which they paid great attention to costumes and poses, established bob runs – as well as the Cresta Run, these included the Lake and City Run – tried their hand at skiing, held a Fancy 5 KRONENHOF KULM MAGAZIN

‹last, but not least› die Schilderungen der schönen Landschaft und des wunderbaren Sonnenscheins, des klaren Frosts, der Picknicks auf dem See während des Eislaufens oder auf einem der Pässe, um später zu rodeln, lassen viele Menschen eine Verbindung von Gesundheit, Beschäftigung und Vergnügen entdecken, von der sie nie geträumt hätten.»

Auch Elizabeth Main, die sich im Kulm Hotel längst häuslich eingerichtet hatte und mit ihren eindrücklichen Landschaftsfotografien und Texten über ihre Erstbesteigung verschiedener Gipfel im Winter für Furore sorgte, gehörte zu den Stützen der Zeitung. Selbstbewusst und mit britischem Humor beginnt Main einen der ersten Artikel mit der Feststellung, dass sie nicht am zukünftigen Erfolg der Zeitung zweifle, sei diese doch das Produkt des «höchsten englischen Kreises in Europa» – um augenzwinkernd darauf zu verweisen, dass man sich in St.Moritz schliesslich 6000 Fuss über Meereshöhe befinde. Diese Ironie konnte sich die Autorin jedoch nur deshalb herausnehmen, weil sie selbstredend zur besten englischen Gesellschaft gehörte und sich als wagemutige Bergsteigerin, Fotografin und Schriftstellerin all jene Freiheiten herausnahm, die ihr der Sportsgeist der upper class einräumte.

Tatsächlich schrieb die englische Gemeinde des Kulm Hotels in The St.Moritz Post denn in erster Linie über sich selbst und liess keinen Zweifel daran, dass es auch eine breite Leserschaft daheim auf der Insel interessieren musste, dass die junge Miss Luard etwa, die im Stück «Der Zahnarzt meiner Frau» die Hauptrolle gespielt hatte, sehr «hübsch und natürlich» ausgesehen habe. Und so liest sich die jeweilige «Visitors List», die jede Ausgabe beschloss und selbstverständlich zuerst die Gäste des Kulm Hotels aufführte, wie ein Who is Who jener Zeit.

Dress Ball and staged charitable events to raise money for the “Aid Fund”. All these activities involved both men and women, who identified closely with the resort. This closeknit English community, who first brought social acceptability to winter sports in the Engadine, self-confidently called themselves “The St.Moritzers”. And to tell the world about the fun they were having with all these activities, these guests founded their own newspaper, The St.Moritz Post, with the Kulm Hotel acting as editorial office and headquarters combined: “All communications must be addressed to the Editor, Hotel Kulm, St.Moritz”.

Frederick de Beauchamp Strickland, who resided in the Kulm and who produced the newspaper with the help of other guests at the same hotel, proclaimed in the editorial of the second issue how pleasurable a winter break could be. The intention was to make clear to those back at home that St.Moritz was no exile for convalescents, but a rich and varied social milieu for pleasure-seekers. «“Going to St.Moritz?” “What!! in winter!!” “What on earth do you do with yourself?” “Is’nt it frightfully dull?” “Don’t you long for somebody to talk to?” such are the questions we have frequently been assailed with in England, even by people who have been here in summer; a description of our Tobogganning, skating and races, and our entertainments, music and dances and last, but not least, the beautiful scenery and the delightful sunshine, the clear frost, the picniccing on the lake for skating, or on one of the Passes for Tobogganning discovers to many people a combination of health, occupation and amusement, never thought or even dreamed of.»

Elizabeth Main, who had made herself at home in the Kulm Hotel and caused a sensation with her impressive landscape photographs and reports of her first ascents of various peaks in winter, was also among the pillars of the newspaper. With confidence and typically British humour, Main begins one of the first articles with the observation that she has no doubt about the future success of the newspaper, the product of the “most elevated English circle in Europe” – only to refer with a wink to the fact that in St.Moritz you are indeed 6,000 feet above sea level. The author could only get away with this kind of irony because she herself naturally belonged to the best of British society and as a bold mountaineer, photographer and author benefited from all the freedoms granted her by the sporting spirit of the upper classes.

In The St.Moritz Post, the English community of the Kulm Hotel were first and foremost writing about themselves, and they had no doubt that a wide readership back home would be interested in such gems as the fact that the young Miss Luard, who played the principal role in “My Wife’s Dentist”, looked very “pretty and natural”. And so the contemporary Visitors List, which featured at the end of each issue and of course listed the Kulm Hotel guests first, reads like a Who’s Who of the times.

The Kulm Hotel has the top ranking in St.Moritz. Heinz E. Hunkeler, CEO with overall responsibility for both hotels and Marc Eichenberger, Managing Director of the Grand Hotel Kronenhof, talk about the importance of public votes on the Internet – by Gallus Hufenus

Viermal Gold, einmal Silber und einen fünften Rang. Das Grand Hotel Kronenhof erhielt 2014 sechs der begehrten Travelers’ Choice Awards des Onlineportals TripAdvisor. Die Gäste sind es, die via Internet, das Grand Hotel Kronenhof zum «besten Top-Hotel der Welt» gemacht haben. Ist für Sie die Meinung einer Fachjury oder die des Publikums wichtiger?

Heinz E. Hunkeler (HH): Ein Publikumsvotum richtet sich weniger nach den objektiven Beurteilungskriterien der Gastronomieprofis, sondern es fühlt den Puls eines Hauses. Die Gäste spüren das Hotelleben unmittelbar. Zudem ist das Volumen grösser als bei einer ausgewählten Jury. TripAdvisor bringt uns eine weltweite Anerkennung.

Marc Eichenberger (ME): Natürlich freuen einen beide Anerkennungen. Aber dieser Preis ist direkt auf unsere Gäste zurückzuführen. Das Feedback wird von vielen Menschen geteilt.

Schaut die Jury mit anderen Augen?

ME: Die Fachjury bewertet Infrastruktur, Abläufe, Präsentationen usw. Die Rückmeldungen der Gäste setzen den Fokus auf das Zwischenmenschliche.

Und jeder Gast gewichtet die Angebote unterschiedlich: Familienfreundlichkeit, Wellnessangebote, Gastronomie, die Lage und mehr.

Four gold awards, one silver and one fifth place – in 2014 the Grand Hotel Kronenhof obtained six of the coveted Travelers’ Choice Awards of online portal TripAdvisor. Here it is the guests who have had their say online to make the Grand Hotel Kronenhof the “best Top Hotel in the world”.

Which do you think is more important – the opinion of a specialist panel or the votes of the public?

Heinz E. Hunkeler (HH): A public vote is less guided by the objective evaluation criteria of the gastronomy review professionals, but it has its finger on the pulse of a hotel.

The guests experience hotel life first-hand, and there are far more of them than the members of a selected jury.

TripAdvisor brings us worldwide recognition.

Marc Eichenberger (ME): Of course we are delighted with recognition from both. But this award is solely based to our guests, based on the feedback of many people.

Was sind die Gründe für die Bestnoten?

HH: Wir haben kontinuierlich in die Infrastruktur der Häuser investiert und die Strukturen verbessert. Wir bieten ein ehrliches Preis-Leistungs-Verhältnis, eine einmalige Lage, und unsere Mitarbeitenden tragen ebenfalls massgeblich dazu bei …

ME: Das Team liegt uns besonders am Herzen. Jedes Haus wird von seinen Menschen geprägt und den verschiedenen Persönlichkeiten. Da leisten alle zusammen Grosses.

Die weltgrösste Reisewebseite zählt monatlich über 260 Millionen Besuchende, bis jetzt sind es 125 Millionen Erfahrungsberichte. Die Auszeichnung basiert auf einem basisdemokratischen Hintergrund. Andererseits sind die Bewertungen geprägt vom subjektiven Empfinden des Gastes. Ist das nicht heikel, wenn Bewertungen aus einem emotionalen Affekt gemacht werden?

HH: Erstens passiert dies nicht nur im Schlechten, sondern ja auch im Guten.

Und darum ist es eben wichtig, so viele Einträge wie möglich zu erhalten. Erst eine Vielzahl von Feedbacks macht das Bild objektiv. Wenn etwas wiederholt bemängelt wird, ist wohl etwas dran.

Bitten Sie darum Ihre Gäste, Einträge zu machen?

ME: Ja, wir sprechen sie darauf an. Besonders freut mich, dass uns viele Stammgäste gerne bewerten. Teilweise sogar mehrmals. Dafür möchte ich hier ganz einfach Danke sagen!

Allerdings hört man auch, Onlinebeiträge seien leicht zu «inszenieren». Haben Sie keine Angst vor gefälschten Einträgen?

ME: Wir versuchen nachzuvollziehen, wer den Eintrag gemacht haben könnte. In der Regel können wir den Weg zur Verfasserin oder zum Verfasser zurückverfolgen. Wenn wir gegenüber TripAdvisor belegen können, dass es sich um eine gefälschte Bewertung handelt, können wir verlangen, dass der Eintrag aus dem Portal entfernt wird.

Does a jury view you with different eyes?

ME: A specialist jury examines the infrastructure, procedures, presentation, etc. The focus of guests’ feedback is on interpersonal contact. And each guest has a different view of what is on offer: the welcome for families, wellness facilities, the food, the location and more.

What are the reasons for the top grades?

HH: We have continually invested in the hotels’ infrastructure and improved the structures. We offer genuine value for money, a unique location, and of course our staff make a considerable contribution to our guests’ enjoyment.

ME: We really value our team. Each hotel is defined by its people and their different personalities. They all combine to make a huge contribution.

The world’s biggest travel website has over 260 million visitors a month, with 125 million reviews to date. The award therefore has a fundamentally democratic basis. On the other hand, the opinions are based on guests’ subjective impressions. Is it not tricky when assessments are made on the basis of an emotional impression?

HH: Firstly, this not only applies to the negative aspects, but also the positive. And for that reason it’s important to get as many reviews as possible. Only majority feedback gives an objective view. If a complaint is frequently repeated there must be some basis for it.

Do you ask your guests to leave reviews?

ME: Yes, we mention it to them. I’m particularly pleased that many of our regular guests are happy to review us – sometimes more than once. I’d like to take this opportunity to thank them!

You sometimes also hear that online reviews are “staged”.

Are you worried about falsified reviews?

ME: We try to find out who may have written the review.

We’re generally able to trace the author. If we can prove to TripAdvisor that a review has been falsified we can ask for it to be removed from the site.

Auch bei Schweiz Tourismus haben Sie sich die Krone erobert. Der Kronenhof ist das freundlichste Luxushotel der Schweiz. Diese Auszeichnung basiert ebenfalls auf Gästefeedbacks. Jedes Hotel mit mindestens 70 Bewertungen qualifiziert sich automatisch für den Wettbewerb. Was waren hier die Gründe für Gold?

ME: Auch hier möchte ich das Lob unseren Angestellten weitergeben. Der Fokus liegt bei diesem Preis auf der Gastfreundlichkeit. Es geht hier also um Herzlichkeit, Leidenschaft, Kompetenz, Empathie und Zuverlässigkeit der Mitarbeitenden. Dafür wurden die nominierten Hotels aber zusätzlich von einem Jurymitglied getestet.

Heinz E. Hunkeler, Sie und Ihre Frau haben den Kronenhof 2008 nach einer umfassenden Renovation aus dem Dornröschenschlaf geweckt und kontinuierlich verbessert. Heute führen Sie das Kulm Hotel. Schmerzt es etwas, das Schiff verlassen zu haben – jetzt, wo es die Früchte zu ernten gibt?

Nein, im Gegenteil. Als Gesamtverantwortlicher beider Häuser freue ich mich über jeden Erfolg. Zudem ist uns bewusst, dass so ein Erfolg nicht über Nacht eintritt. Als wir das Grand Hotel Kronenhof übernommen hatten, war es als ‚unique‘ klassifiziert, also nicht kategorisierbar. Es war ‚nur‘ ein ‚einmaliger Ort’.

Die Zimmer hatten teilweise Etagenbäder. Dann erhielten wir fünf Sterne, fünf Sterne Superior, wurden Mitglied der Swiss Deluxe Hotels, erhielten den Titel zum ‚Hotel des Jahres’ … Es ist nun eine Freude für uns, wenn Marc Eichenberger diese Erfolgsgeschichte weiterführen kann.

Marc Eichenberger, Sie sind seit 2013 der neue Direktor. Die Messlatte ist hoch gesetzt. Was sind Ihre Visionen für die Zukunft?

Ich schätze hohe Messlatten. Ich nehme die Herausforderung gerne an, bestes Gastgebertum zu leben. Diese Kultur und die Servicequalität möchte ich weiter verfeinern. You have also won a top award from Switzerland Tourism – the Kronenhof is the friendliest luxury hotel in Switzerland. This is also based on guests’ feedback, as every hotel with at least 70 reviews automatically qualifies for the competition. What were the reasons for this Gold award?

ME: Here, too, all credit must go to our staff. The focus of this award is on friendliness towards our guests, so what matters here is the warmth, passion, competence, empathy and reliability of our employees. But these qualities in the nominated hotels were also tested out by a jury.

Heinz E. Hunkeler, you and your wife awoke the Kronenhof from hibernation in 2008 after comprehensive renovations, and continued to make improvements. Now you’re managing the Kulm Hotel. Are you sad to have jumped ship, now when the harvest is there to be reaped?

No, on the contrary. I have overall responsibility for both hotels, so I’m delighted with every success. We are also well aware that such success doesn’t happen overnight.

When we took over the Grand Hotel Kronenhof it was classified as ‘unique’, in other words impossible to categorise.

It was ‘merely’ a ‘unique location’. Some of the rooms had shared bathrooms. Then we were awarded five stars, five stars Superior, became a member of Swiss Deluxe Hotels, acheived the title of ‘Hotel of the Year’ … We cannot be happier that Marc Eichenberger is here to continue the success story.

Marc Eichenberger, you have been the new Director since 2013. The benchmark is high. What are your visions for the future?

I love a high benchmark; I’m happy to accept the challenge of being the best possible host. I would like to refine the hotel’s culture and the quality of the service even further, encouraging every employee to feel like they themselves are the host. Of course there are objective quality standards, but the focus is on human qualities: every guest should feel they are being treated personally.

Nein, Liebe auf den ersten Blick kann man dem nicht nachsagen: Tina Lepperhoff, Kölnerin, hätte nicht im Traum daran gedacht, im Engadin zu landen. Ihr Mann verschickte für sie sogar die Bewerbung. Beim Anblick des in die Jahre gekommenen Kronenhofs, noch vor der umfassenden Renovation, wollte sie am liebsten wieder umkehren. Der damalige Direktor konnte sie überzeugen zu bleiben. Es werde sich bald viel ändern, versprach er. Jean-Jacques Baur, Neuchâtelois, genoss am Vortag seiner Ankunft im Kulm Hotel noch den Strand Madeiras, wo er mit seiner Familie zuvor lebte und arbeitete. Als er im Mai vor zwölf Jahren in St.Moritz eintraf, regnete es Bindfäden, später schneite es ihm waagrecht ins Gesicht.

Heute: «Dieses Haus hält mich fest im Griff», so die Vizedirektorin. «Wir leben hier drin», doppelt Baur nach. Der «Knabe» und das «Mädchen für alles» beschreiben das Hotelleben als «Brimborium». «Wir leben in einer Wattewolke.» Man erlebt hier täglich Geschichten und einen Lifestyle, mit dem sie, sollten sie sich doch mal pensionieren lassen, Archive füllen könnten. Jean-Jacques Baur kramt ein schwarzes Notizbüchlein hervor, wo er seit Kurzem seine Erlebnisse, die Anekdoten notiert. «Natürlich ist das, was wir hier erleben, nicht ein Spiegel der Welt. Es ist nur eine kleine Realität. Aber wir haben etwas zu erzählen.»

Der Alltag von Vizedirektoren erfindet sich minütlich neu.

Für eine Hotelkette könnte sie nicht arbeiten. Dort seien alle Abläufe vordefiniert. «Hier konnte ich mein Pflichtenheft selber erschaffen, ein Team von 0 auf 100 aufbauen.»

Kurze Zeit, nachdem sie im Kronenhof ihre Stelle antrat, begann die «Ära Hunkeler». Da wurden die Ärmel hochgekrempelt. «Heute kenne ich jeden Stein des Hotels.»

No, you could hardly claim it was love at first sight – Tina Lepperhoff from Cologne would never in her wildest dreams have thought she’d end up in the Engadine. It was even her husband who sent in her application. When she first saw the ageing Kronenhof, before its comprehensive renovations, she felt like turning back. But the director at the time convinced her to stay – a lot of changes were planned soon, he promised. As for Jean-Jacques Baur, originally from Neuchâtel, the day before he came to the Kulm Hotel he was still enjoying the pleasures of the beach in Madeira where he and his family used to live and work.

When he arrived in St.Moritz twelve years ago it was pouring with rain, and later horizontal snow blew into his face.

But things are different now. “This hotel has me firmly in its grasp,” says Tina Lepperhoff. “This is our life,” echoes Baur. The “lad” and the “girl Friday” describe hotel life as being like a whirlwind. “We’re wrapped up in our own little world here.” Should they ever retire, they could fill a library with the stories and way of life they experience here on a daily basis. Jean-Jacques Baur produces a black notebook in which he has recently begun noting down anecdotes of his experiences. “Of course it’s all about what we experience here, not a commentary on the world in general. It’s just a small part of the reality. But we’ve got plenty to tell.”

The everyday life of the Deputy Director changes at every turn. Tina Lepperhoff describes her duties as “freestyle”.

She could not work for a hotel chain, where all the procedures are predefined. “Here, I can draw up my own set of specifications, create a team on the spot.” A short time after she took up her post at the Kronenhof, the “Hunkeler Era” dawned, and sleeves were rolled up in readiness. “I now know every stone of the hotel.”

Jeder ein Direktor Die Spuren, die Heinz E. Hunkeler in den Hotels hinterlässt, gleichen zwar Bärentatzen. Doch auf dem Sofa der Hotelbar im Kulm Hotel sitzen zwei – noch nicht ergraute – Eminenzen, die in diesen Positionen am längsten da sind. Zwei, die sich ergänzen. «Jean-Jacques ist der bessere Gastgeber als ich und steht viel an der Front. Ich entwickle lieber Strategien oder optimiere am Computer. Wer die Webseite des Hotels anschaut, erkennt den Lepperhoff-Touch.» Darum treffe sie sich eben mit den Gästen erst spätabends an der Bar, lacht die 40-Jährige. «Dafür ist Tina die grosse Stütze. Sie ist zwar nicht ständig erreichbar, doch sie ruft immer zurück. Wenn ich schlafe, arbeitet diese Frau immer noch», schmunzelt der 49-jährige Romand.

Eine funktionierende Teamarbeit, die hilft, dass die beiden Schwesterhotels wirklich zusammenwachsen.

Dass sie manchmal «bloss» die Ideen einspeisen, welche die Direktoren dann verkaufen, stört sie nicht. «Ich bin die beste Nummer zwei im Grand Hotel Kronenhof.» Dahinter setzt Tina Lepperhoff bewusst einen grossen Punkt.

Baur meint dazu: «Jede Mitarbeiterin, jeder Mitarbeiter muss Direktor in ihrem oder seinem Bereich sein.» Ohne Herz geht’s nicht. Das ist es denn auch, was die verschiedenen Fünf-Sterne-Häuser weltweit voneinander unterscheidet. Der Vizemeister des Kulms hat noch eine andere Beschreibung für seine Position parat: «Wenn es ein Problem gibt, werden wir Vizes zuerst vorgeschoben.» Er sei der «Bad Cop», der Direktor darf der «Good Cop» sein.

Matt oder hochglanz poliert Auf den Charakter der beiden Häuser angesprochen, zeigt Jean-Jacques Baur auf seine matten Schuhe, dann auf die hochpolierten Stöckelschuhe seiner Kollegin: «Das Kulm Hotel ist nicht wie die Schuhe von Tina. Es hat Klasse, aber es hat’s nicht nötig, so zu glänzen.» Seine Kollegin prustet los, die beiden necken sich wie ein Ehepaar, das sich schon lange kennt. Genau das schätzt Tina Lepperhoff: «Ich komme aus einer lockereren Hotellerie und rede gern so, wie mir der Schnabel gewachsen ist. Es ist mir wichtig, diese Lockerheit auch in einem Grand Hotel Kronenhof beibehalten zu dürfen und mich nicht verstellen zu müssen.» Sie präzisiert sogleich: «Der Gast hält uns einen Spiegel vor. Ist er distanziert, sind auch wir zurückhaltender. Zeigt er sich gesprächig, können wir kollegialer im Umgang sein.»

Vielleicht sind Gastgeber eigentlich Psychologen. Oder Reporter, welche die Menschen genau beobachten – die Gäste einerseits, jedoch auch die Mitarbeitenden. Das ist ein Schlüssel zum Erfolg: der Service, der zu einem DeluxeHotel gehört. Gleichzeitig die Authentizität, die uns das Gefühl vermittelt, zuhause zu sein. Da darf man ruhig über den Mai-Schnee schimpfen, als man in St.Moritz eintraf.

Und eigentlich gleich wieder weg wollte.

Everyone is a director Heinz E. Hunkeler has made a huge mark on the hotels and he is a hard act to follow. But on the sofa of the Kulm Hotel bar sit two important people, not yet grey-haired but who have been in their positions the longest. Two who complement one another. “Jean-Jacques is a better host than I am and is often to be found front of house. I prefer to develop strategies or sit at the computer optimising various aspects. Anyone looking at the hotel website will see the Lepperhoff touch.” That’s why she rarely meets guests in the bar until late evenings, laughs the 40-year-old. “For all that, Tina is a huge support. She may not be available at all times, but she always returns your calls. And when I’m asleep, this woman’s still working,” grins the 49-year-old.

This effective teamwork is the reason the two sister hotels work so well together.

The fact that they sometimes “merely” feed in ideas that the directors then sell on doesn’t worry them. “I’m the best Number Two in the Grand Hotel Kronenhof.” Tina Lepperhoff is deliberately making a point here. Baur adds: “Every employee must be a director in their own sphere.”

Without heart and soul it won’t work. This is also what makes the two five-star hotels so different from one another. The Deputy Director of the Kulm has another ready way of describing his position: “Whenever there’s a problem, it’s the second-in-command who’s in the front line to deal with it.” He is the “bad cop”, while the Director is painted as the “good cop”.

Matt or gloss Asked about the character of the two hotels, Jean-Jacques Baur points to his matt shoes, and then to the glossy stilettos of his colleague. “The Kulm Hotel isn’t like Tina’s shoes. It has class, but it doesn’t need to shine like that.”

His colleague bursts out laughing; the two of them tease one another like a married couple who have known one another for years. That is what Tina Lepperhoff treasures: “I come from a more informal hotel background and like straight talking. It’s also important for me to retain that relaxed atmosphere in the Grand Hotel Kronenhof, and not to have to change my ways.” She immediately clarifies her words: “Guests hold up a mirror to us. If they keep their distance, we are also more reserved. If they’re communicative, we can relate more closely to them.”

Perhaps hoteliers are really psychologists, or reporters, observing people closely – both guests and employees.

That is the key to success – the service that is part and parcel of a deluxe hotel. It is also a sense of authenticity that enables people to feel at home. An atmosphere in which you could forgive someone for cursing the May snow on arrival in St.Moritz – and even for wanting to leave before really getting to know its charms.

Der «Monkey 47 Schwarzwald Dry» aus 47 verschiedenen Gewürzen und Kräutern wird mit einem eigens ausgewählten Tonic kombiniert, weil das leichte Wasser die Aromen nicht erschlägt. Oder der lokale «Breil Pur Grison London Dry Gin» mit seinen Alpenrosen und der Schokoladenminze passt zum «Gents Swiss Roots Tonic Water», mit Enzian aus dem Jura und dem natürlichen Aroma von Siziliens Zitronen.

Der Drink an der Bar ist zu einer Wissenschaft geworden und wird hier nicht in Longdrinkgläsern, sondern im Ballonglas serviert – damit sich die Aromen besser entfalten. Was auf den ersten Blick seltsam anmutet, entpuppt sich als eine Trinkkultur, die gefeiert werden möchte: Beim Wein ist diese Kultur schon lange eine Selbstverständlichkeit, bei Kaffee werden sich Gourmets seiner Unterschiede ebenfalls mehr und mehr bewusst, und jetzt wird auch der Gin zelebriert.

Eine Renaissance. Genuss statt Rausch. Die Alkoholnote bleibt im Hintergrund.

Der Gin zeigt sich rund und fein.

Den Gin entdecken Die F&B-Managerin Adriana Novotná-Braun gibt zu, dass sie früher keine Gin-Trinkerin gewesen sei. Doch in Fünf-Sterne-Häusern müsse man mit den Trends gehen. Die Gastronomen haben bemerkt: Was früher der Wodka war, ist seit Kurzem wieder der Gin. Also recherchierte die Gastronomin, reiste in ihren Ferien in die USA, nach San Francisco, Las Vegas, New York und liess sich vom dortigen Angebot inspirieren. Viele Entdeckungen brachte sie zurück. 20 Sorten stehen heute auf der Gin-Karte der beiden Häuser, der grössten Gin-Selektion im Engadin: aus England, Schottland, Spanien, der Schweiz, Deutschland oder aus Frankreich. Die Hotels haben aber bereits weitere zehn Spezialitäten auf ihrer Liste, die sie demnächst vorstellen möchten. Die Experimentierlust geht nicht aus. Und man entdeckt dabei ständig neue Welten. Sinnliche Geschmackswelten.

Thyme, basil, rosemary and even the scent of olives play around the nostrils. This “Mediterranean Gin Mare” from Catalonia is paired with the harmonising Fever Tree tonic, in which thyme and rosemary are blended with handpressed citrus oil. The fear of being served a gin and tonic like the one you might have expected a few years ago over the bar of your local club is completely unjustified. The “Monkey 47 Schwarzwald Dry” with 47 different herbs and spices is combined with a specially-selected tonic, a light water that does not drown the aromas. Or the local “Breil Pur Grison London Dry Gin” with its Alpine roses and chocolate mint goes perfectly with the “Gents Swiss Roots Tonic Water”, with Jura gentian and the natural aroma of Sicilian lemons.

Gin served at the bar has become a science, and here it is not served in long glasses, but in balloon glasses – to allow the aromas to circulate more freely. It may appear strange at first glance, but is soon seen to be a drinking culture that demands to be celebrated. This culture has long been taken for granted with wines, and gourmets are becoming increasingly aware of the nuances of different coffees, so why not celebrate gin? A renaissance. Tasting pleasure instead of intoxication. The tang of alcohol remains in the background. The gin is well-rounded and refined.

In Blogs und Fachblättern heisst es denn: «Gin mischt wieder mit. Gin ist in aller Munde.» Basis dabei ist hochprozentiger Agraralkohol aus Getreide oder Melasse. Üblicherweise wird in ihm Wacholder eingelegt, hier beim «Williams Chase Elegant Gin» ist’s auch stattdessen mal Apfel. Hinzu kommen weitere Kräuter, Früchte, Koriander, Ingwer, Orangenschalen oder sogar Safran – immer natürliche Zutaten, niemals künstliche Aromen. Nach einer erneuten Destillation wird Gin mit Wasser auf Trinkstärke gebracht. Gin hat mindestens 37,5 Prozent Alkohol, in der Regel zwischen 40 und 47.

Eine neue alte Kultur Der Ursprung des englischen Nationalgetränks liegt übrigens in den Niederlanden: im Genever oder auch im Jenever, zu Deutsch Wacholder. Englische Soldaten kämpften im spanisch-niederländischen Krieg und brachten den Schnaps im 17. Jahrhundert in ihre Heimat – seither heisst er englisch «Gin». Er wurde zum Modegetränk, als der Niederländer Wilhelm III. von Oranien 1689 König von England wurde. Liberalisierungen der Destillationsgesetze sorgten dann sogar dafür, dass die Gin-Produktion 1736 die Bier-Produktion um das Sechs­ fache übertraf. Ein Volk war im Rausch. Doch knapp 200 Jahre später war aus dem Arme-Leute-Alkohol eine hochwertige Spezialität geworden, besonders geschätzt bei den Offizieren: In den britischen Kolonien nutzten sie den Gin, um bitteres Chininpulver gegen Malaria hinunterzuspülen, ebenso wie ihre tägliche Ration Zitronensaft gegen Skorbut. Dies war die Basis für «Gin Tonic» – eben chininhaltiges Wasser. Eine neue Cocktail-Kultur war geboren. Eine Kultur, die seit Mitte des letzten Jahrhunderts immer mehr vom kalten, grellen und neutral schmeckenden Wodka ertrunken wurde. Wodka, der indifferent schmeckt, damit er zu süssen und exotisch anmutenden Früchtesirups passt.

Heute ist der Gin wieder da. Erinnert an nostalgische Zeiten in den Zehnerjahren des neuen Jahrtausends. Zeigt sich gerne komplex und kosmopolitisch.

Discovering gin The F&B Manager Adriana Novotná-Braun admits that she used not to be a gin drinker. But in five-star hotels you have to keep up with the trends, and the word among restaurateurs was that the place formerly held by vodka has recently been taken over by gin. So she spent her holidays travelling in the USA, to San Francisco, Las Vegas, New York, gaining inspiration from what was on offer there. She brought back many discoveries, and the gin list now has 20 varieties, the largest selection in the Engadine – from England, Scotland, Spain, Switzerland, Germany and France. But the hotels already have a further ten specialities on their list to be introduced soon. The desire for experimentation is never-ending, with new worlds being discovered all the time. Sensory worlds of taste.

Blogs and the specialist press agree: “Gin is back on the scene. Gin is on everyone’s lips.” The basis is high-percentage agricultural alcohol from cereals or molasses. It is usually flavoured with juniper but other varieties are found, such as the “Williams Chase Elegant Gin” which uses apple. It often also includes other herbs, fruit, coriander, ginger, orange peel or even saffron – always natural ingredients, never artificial aromas. After a further distillation gin is watered down to an appropriate drinking strength. It contains a minimum of 37.5 percent alcohol, generally between 40 and 47.

Reviving an old culture The origin of the British national drink actually lies in the Netherlands – Holland genever or jenever, which means “juniper” in English. British soldiers who fought in the Eighty Years’ War between Spain and the Netherlands in the 17th century brought the spirit back home, since when it has been known as “gin”. It became a fashionable drink when the Dutch William III of Orange became King of England in 1689. Subsequent liberalisation of the distilling laws even enabled gin production to outweigh beer production six-fold in 1736. The people were in raptures. But just under 200 years later, the poor man’s alcohol became a high-quality speciality, especially prized by officers – in the British colonies they used gin to wash down the bitter quinine powder against malaria, together with their daily ration of lemon juice against scurvy. This was the basis for gin and tonic, tonic being water containing quinine. A new cocktail culture was born, a culture that since the middle of the last century was increasingly pushed aside by cold, harsh and neutral-tasting vodka, whose indifferent taste makes it suitable for sweetening and mixing with exoticsounding fruit syrups.

Now gin is back. In the second decade of the new millennium it has an air of nostalgia. It is complex and cosmopolitan. In the Grand Hotel Kronenhof and the Kulm Hotel, St.Moritz, a gin and tonic is artistically prepared, sometimes garnished with star anise or a dried juniper berry.

ROLF SACHS: CAMERA IN MOTION Rolf Sachs was born in 1955 to German-French parents in Lausanne and today mainly lives in London. Since his childhood, he has had a close connection to the Engadine Valley and St. Moritz.

Already creative in his youth, since the late 1980s Sachs has established himself as a designer and artist. His works are inspired by everyday objects and materials that he reinterprets in unconventional ways. From the beginning, Sachs has demonstrated a restrained aesthetic and avoided decoration in favor of a more conceptual language that evokes emotional and sensory reactions.

The integration of the human factor as well as humorous elements are typical characteristics that run through his multidisciplinary work.

In cooperation with Galerie von Bartha, Galerie Andrea Caratsch will be showing a selection of photos from the series Camera in Motion: from Chur to Tirano, which Sachs began in late 2012. In this body of works, Sachs took photographs

from a moving train. Depending on the speed of the train, the subject and its distance from the camera, the resulting photographs show varying degrees of blurriness that play and compete with moments of surprising clarity. The exhilarating landscapes in these works unavoidably call to mind the German Romantics and the paintings of Turner. Among more recent examples, a similar postmodern involvement with landscapes, abstraction and photography, though carried out in the medium of painting, can be found in the overpainted photographic landscapes of Gerhard Richter. The drama and pathos of the large-format landscape pictures contrast with the silent and more contemplative pictures of a railroad worker or a train signal, in which we recognize Sachs’s interest in the everyday and the prosaic. Beyond these visual references, Camera in Motion: from Chur to Tirano is meant to be understood as a reflection on the notions of time and impermanence. It presents symbols of the fast pace of our time, captured moments from all of our life journeys which continually slip out of our consciousness and memory.

OLIVIER MOSSET: THE KITCHEN PAINTINGS

THE ART OF CODOGNATO

Olivier Mosset was born in 1944 in Bern, Switzerland. He lives and works in Tucson, Arizona.

Attilio Codognato is a fifth-generation jeweler as well as an art collector, author and curator. An intellectual with a fondness for Proust and movies, he wears the ribbon of a Chevalier des Arts et des Lettres on his lapel. For nearly 150 years the Codognato jewelers have been situated at the same spot in Venice, near the Piazza San Marco, where they attract an illustrious international clientele fascinated by the inventiveness and subjects of their designs. At home, Attilio Codognato lives in his Venetian palazzo amid his eclectic collection, in which works by Warhol, Duchamp, de Chirico, Rauschenberg, Kosuth and Naumann are juxtaposed with classical antiquities and Italian and Russian period furniture.

The artist has spent considerable time in Paris and New York. In the 1960s, he was a member of BMPT, a group of conceptually driven painters, along with Daniel Buren, Michel Parmentier and Niele Toroni. The group sought to democratize art through radical procedures of deskilling, implying that the art object was more important than its authorship. In the 1970s, Mosset undertook a series of monochrome paintings on regular or shaped canvases, mostly of monumental format, that more or less implicitly comment on circuits of production and exchange. For four decades, he has been researching the future of painting through geometric abstraction, exploring other formats and materials of abstract painting.

His work has since continued to be consistent with issues of neutrality, appropriation and repetition. The artist voluntarily abandons all anecdotal, significant or interpretative content, and invites the contemplation of the meditative calm of monochromes.

Galerie Andrea Caratsch will show a selection of works from Codognato’s jewelry collection, all of which were designed by his family and himself. This display will be combined with artworks selected by the jeweler in the gallery’s holdings which reflect Codognato’s taste for the unusual and unconventional.

The present show was originally created for the artist space The Kitchen in New York in autumn 2013. It consists of three groups of four monochrome paintings in the shape of letters, all of which reference the artist Marcel Duchamp: TUM’, MUTT and TUTU. Mosset says about the present group of works: «There is a Frank Stella type of thing going on, and a subtle game with Duchamp in the titling.» In TUTU he refers to Duchamp’s drawing of a ballerina, but at the same time the work is an homage to his own interest in ballet and his friendship with a prima ballerina. However, he sees these things as «excuses to make a painting, but then you lose the subjective narrative and it becomes the onlookers.»

«GENIESSEN, WAS GESUND UND GLÜCKLICH MACHT» – von Thomas Veser Reto Mathis, Sie gehören zum Urgestein der Engadiner Gastronomieszene. Was hatte Sie 1994 bewogen, das erste Festival dieser Art ins Leben zu rufen?

Mathis: Meine Familie lebt bereits vor 150 Jahren im Tal, also schon vor dem Beginn des Wintertourismus, und wir waren immer eng mit der Gastronomie verbunden. Mein Vater Hartly hatte als Koch in ganz Europa Karriere gemacht, bevor er die Gastronomie auf dem Berg übernahm. Damals war der Speisezettel auf den Berghütten sehr einfach, Suppe, Würstchen oder Spaghetti zum Beispiel. Das genügte dem Vater nicht mehr. Er wollte «Fine mountain dining», führte diese Formel bei uns als Erster ein und wurde so zum Trendsetter. Er hatte erkannt, dass Besucher anspruchsvollere Gerichte wünschten. Das klappte vom ersten Tag an und fand rasch Nachahmer.

Und welchen Part haben Sie dabei übernommen?

Ich selbst war in jüngeren Jahren in Sachen Gastronomie weltweit viel unterwegs, um meine Produkte vorzustellen. Als der Champagnerhersteller Pommery bei uns eine «Cuvée de Prestige St.Moritz» lancieren wollte, trat der örtliche Kurverein an mich heran. Als Besitzer der geschützten Markenbezeichnung St.Moritz, die Pommery für diese Partnerschaft benötigte, bat mich der Kurverein, extra für diesen Anlass ein Galadiner mit einem französischen Spitzenkoch zu organisieren.

Und das war der Ursprung des Gourmet-Festivals. Mein Vorschlag, nach dem Auftakt mit einem Koch für einen Tag gleich zehn Star-Köche für eine ganze Woche zu engagieren stiess auf Zustimmung. Für die Gäste ist das seither ein einmaliges Erlebnis, zumal die Dîners jeden Abend in einem anderen Restaurant stattfinden. Die auswärtigenTop-Chefs motivierten die lokalen Köche, die bei dem Austausch neue Methoden kennenlernten und sich weiterbilden konnten.

Reto Mathis, you are one of the pillars of the Engadine gourmet scene. Back in 1994, what first moved you to inaugurate this special festival?

Mathis: My family has lived in the valley for over 150 years, which means they were there before the arrival of winter tourism, and we have always been closely involved in hospitality. My father, Hartly, had a career as a chef throughout Europe, before taking over the restaurant in the mountains.

At the time the menu in the mountain huts was very simple – soup, sausages or spaghetti, for example. My father wasn’t satisfied with this; he wanted to introduce “fine mountain dining”, and as he was the first to introduce this formula at our restaurant, he became a trendsetter. He recognised the fact that diners wanted higher quality food. It was a success from day one and others soon followed.

St.Moritz gilt als eine der international führenden gastronomischen Destinationen. Welche Rolle spielte dabei das Gourmet-Festival?

Man darf mit Fug und Recht behaupten, dass ihm eine massgebliche und wegweisende Rolle zukam. Nicht nur die teilnehmenden Betriebe haben daraus Nutzen gezogen, die gesamte gastronomische Szene verbesserte ihre Leistungen. Das Festival hat in unserer Profession eine regelrechte Eigendynamik hervorgerufen.

And what part did you play?

In my younger years I travelled a lot in connection with my culinary career, presenting my products. When champagne producer Pommery wanted to launch a “Cuvée de Prestige St.Moritz” at our restaurant, the Kurverein, the local tourist office, approached us. As the owners of the protected brand name of St.Moritz, which Pommery needed for this promotion, the Kurverein asked me to organise a gala dinner with a top French chef to mark the occasion.

That was the origin of the Gourmet Festival. After a successful launch with a chef for the day, my suggestion of following it up by hiring ten top chefs for a whole week met with approval. For the guests it has become a unique experience, as the dinners take place in a different restaurant every night. The invited top chefs motivate our local talent, who enjoy the exchanges, learn new methods and expand their knowledge.

Welchen Voraussetzungen muss ein Koch entsprechen, damit er zum Festival passt?

Punkte oder Sterne sind mir persönlich nicht so wichtig. Wenn ich die Auswahl treffe, ist jedoch ein gewisses Niveau unentbehrlich. Etwa ein Drittel der Teilnehmer zählt zum bekannten Top-Level. Nochmals so viele gelten als experimentierfreudige Newcomer, die einen Vorgeschmack auf künftige Entwicklungen geben. Das letzte Drittel besteht aus exotischen Cuisiniers, etwa aus dem Fernen Osten oder Afrika, stets Meister ihres Faches, die zur kulinarischen Avantgarde gerechnet werden dürfen.

St.Moritz is considered one of the leading international gourmet destinations. What is the role of the Gourmet Festival in this?

It can justifiably be claimed that the festival has played an important, pioneering role. Not only have the participating establishments enjoyed the benefits, but the whole gourmet scene has improved. The festival has generated a lively internal dynamic within our profession.

Die 2015er-Edition ist eine Hommage an die Briten, die beim Start des Wintertourismus vor 150 Jahren eine Schlüsselrolle hatten. Nach welchen Gesichtspunkten haben sie die Spitzen-Cuisiniers von der Nordseeinsel ausgewählt?

Früher war Grossbritannien nicht unbedingt für gastronomische Höhenflüge berühmt. Das hat sich massiv verändert und das ist dem Personenkreis, den wir mit dem Festival ansprechen, hinlänglich bekannt. Chefs, die in London Rang und Namen haben, brauchen deshalb in St.Moritz nicht extra vorgestellt werden. Wir wollen 2015 aufzeigen, in welcher Richtung es in Grossbritannien gastronomisch weitergeht und wer zum künftigen Top-Chef avancieren könnte. Wie üblich haben wir die Besten aus ihrem Fach ausgewählt, darunter Angela Hartnett, als „Chef-Lady“ eine der talentiertesten Kochgenies. Wir wollen weiterhin aufzeigen, wie England unsere Küche geprägt hat, nämlich durch die Belieferung von zahlreichen Gewürzen und Zutaten aus der asiatischen Hemisphäre, die einst in Teilen zum „Empire“ zählte.

Branchenkenner wollen bei Ihnen erfahren, was in der Szene abgeht und welche Trends und Tendenzen gerade angesagt sind. Wie kommt der provokative Part des Festivals zum Ausdruck?

Provoziert wird bei uns natürlich nur im positiven Sinn, etwa durch Aussergewöhnliches und Erstaunliches, das bei den Besuchern spontan Neugier und Aufmerksamkeit erregt. Etwa mit den Kreationen des gastronomischen „Enfant terrible“ Virgilio Martínez aus Peru. Er hat die bei uns unbekannte, durch aussergewöhnliche Vielfalt geprägte Küche der Inka, salonfähig gemacht. Oder Alvin Leung, dem es gelungen ist, in der seit fast drei Jahrtausenden in sich ruhenden Küche Chinas erfolgreich molekulare Ansätze einzuführen. Auch ältere, eher konservativ veranlagte Festival-Besucher lassen sich dadurch überraschen und reagieren durchweg positiv. „Bei uns geniesst man, was gesund und glücklich macht“, versprechen Sie Ihren Gästen. Was bedeutet für Sie in der Gastronomie „Glück“?

Das ist vielschichtig: der Moment, die jeweilige Begleitung, der Ort und das Umfeld, in dem man sich wohlfühlt. Wenn das alles stimmt, empfindet man sich als glücklich. Dann ist der Koch gefordert: Kochen beansprucht alle Sinne, für mich ist das ein sinnlicher Beruf, der mir und meinen Mitarbeitenden erlaubt, Ideen so umzusetzen, dass sich der Gast sagt: Da will ich nicht mehr weg, nie mehr. Das ist für mich der Zustand von Glückseligkeit. Ich selbst schätze mich als glücklicher Mensch ein und das ist die Voraussetzung dafür, dass ich mein Ziel erreichen kann.

What are the conditions for a chef to be accepted for the festival?

I don’t consider points or stars to be the most important thing, although a certain standard is an essential criterion when making my choice. Around a third of the participants are recognised at the top level. A similar number are newcomers who are willing to experiment, who have an eye for new developments. The final third is made up of exotic chefs, from the Far East or Africa, for example – they are always leaders in their field, those who are considered part of the culinary avant-garde.

The 2015 festival pays homage to the British visitors who played a key role in starting winter tourism 150 years ago.

What criteria did you use to select the top chefs from the British Isles?

Britain has not always been renowned for its culinary excellence, but that is certainly no longer the case and the type of people to whom our festival appeals are well aware of that. Chefs who have made a name for themselves in London don’t therefore need a special introduction in St.Moritz. In 2015 we want to show the direction in which things are moving on the UK culinary scene, and who could go on to become tomorrow’s top chefs. As ever we have chosen the best in their field, including Angela Hartnett, lady chef and extremely talented culinary genius. We also want to show how England has shaped our own cuisine, by introducing numerous spices and ingredients from the Asiatic lands that used to be part of the Empire.

Those in the industry are looking to know from you what the news in the scene is and what is happening and trending.

How is the provocative aspect of the festival expressed?

Of course we are only provocative in the positive sense, by highlighting the extraordinary and the amazing to attract the attention of our visitors and arouse their curiosity.

Take, for example, the creations of the gastronomic “enfant terrible”, Virgilio Martínez of Peru. He has introduced us to the hitherto unknown cuisine of the Incas, characterised by an amazing variety, and got everyone talking about it.

Or Alvin Leung, who has succeeded in introducing a molecular approach to the cuisine of China, which has remained more or less static for almost three millennia. Even older, more conservatively inclined guests have been amazed in a thoroughly positive way.

“With us, you enjoy food for health and happiness” – this is what you promise your guests. What does “happiness” mean to you in the culinary sense?

It has multiple layers: the moment itself, good company, the location, and an environment in which you feel good.

When that all comes together, you feel happy. This is the chef’s task: cookery appeals to all the senses. To me it’s a sensual profession that enables me and my employees to implement ideas in such a way that diners respond: I don’t want to leave, ever. That, I believe, is a state of bliss. I consider myself to be a happy man and that’s the essential ingredient that enables me to achieve my goals.

Numerous cookery books and regular TV appearances have helped the multi-award-winning chef gain a high level of popularity. He is a dedicated supporter of several charities devoted to the fight against poverty and hunger.

He is currently China’s best-known culinary ambassador: in his London restaurant, China Tang at The Dorchester, Chong Choi Fong celebrates unpretentious Cantonese cuisine based on original recipes.

This maestro, who has also worked in southern China and Japan, also makes uncompromising use of traditional spices and the freshest ingredients. His repertoire of “evergreens” includes his soft shell crab fried with egg yolk, and Yunnan style steamed chicken. The China Tang has earned a reputation as a Mecca for gourmets, and many British society notables go there to treat themselves.

EISKÖNIGINNEN Von Katharina der Grossen bis zu Lizzy Yarnold, der aktuellen Skeleton-Olympiasiegerin, haben Frauen den Rodelsport genossen und sich manchmal darin ausgezeichnet. In der Früh­ zeit wurden gerade, oft nebeneinander angelegte Rodel­ bahnen verwendet. Sie wurden jeden Winter an natürlichen Hängen eingerichtet, oder man baute Rutschen mit Holz­ rahmen und zog sie dann an ihren Standort auf dem gefrorenen Eis eines Flusses oder Sees – von Stephen Bartley So wurden in St.Petersburg, wenn der Fluss Newa zugefroren war, zwei dieser hohen, kunstvollen Konstruktionen in etwa 400 Meter Abstand aufgestellt, so dass die Schlittenfahrer ausreichend Schwung haben würden, um die zweite Rutschbahn zu erreichen und dann über eine parallel verlaufende Bahn zurückkehren zu können. Im Winter war es eine Lieblingsbeschäftigung von Katharina der Grossen, und die Idee fand ihren Weg nach Nordamerika, wo Schlitten bereits seit mehreren Jahrtausenden von den Ureinwohnern Kanadas verwendet wurden. Die erste Rodelbahn in St.Moritz wurde 1876 von Franklin Adams auf dem Hang gegenüber dem Eingang zum Hotel Kulm angelegt.

Das Rodelrennen in der heute bekannten Form begann in Davos in den frühen 1880er Jahren, und im Winter 1884/1885 wurde der Cresta Run in St.Moritz eingerichtet, die erste Eisbahn mit künstlichen Ecken. Zeitrennen auf dieser Bahn und das Rennen auf der Poststrasse von Davos Laret nach Klosters wurden durch die Einführung des kleinen Schweizer Taschenchronometers möglich, wodurch die Zeiten jedes Rennrodlers mit der Genauigkeit einer Fünftelsekunde gemessen werden konnten.

An diesen frühen Rennen nahmen in der Regel nur Männer teil, doch es dauerte nicht lange, bis Frauen begannen, sich ernsthaft mit diesem Sport zu befassen. Für das Strassenrennen von über drei Kilometern in Klosters benötigte man beträchtliche Stärke, um sich über die flacheren Abschnitte hinwegzubewegen, was Charles Austin zu der Bemerkung veranlasste, seiner Ansicht nach sei es nicht für Damenrennen geeignet. Bei den steileren und kürzeren Bahnen wie dem Cresta Run und dem neuen Buol Run in Davos Platz sah es jedoch anders aus. Bei diesen Rennen war der Körperbau von geringerem Vorteil, und eine gute Balance sowie die Einschätzung von Geschwindigkeit und Bahn waren weitaus wichtiger. Das erste Damenrennen auf dem Cresta Run gewann 1886 Frau Vickers, während Annie Robertson, die Frau des Australiers George Pringle Robertson, auf den 4. Platz kam. Herr Robertson war bei der Einrichtung des Cresta Run im Jahr zuvor die treibende Kraft gewesen. Den Damen von St.Moritz war es damit gelungen, eine Revanche für ihre Niederlage in Davos einige Wochen

QUEENS OF THE ICE From Catherine the Great to Lizzy Yarnold the current Olympic skeleton champion, women have enjoyed and sometimes excelled at the sport of tobogganing. In the early days long, straight toboggan chutes were used, often built side by side. These would be constructed each winter on natural slopes, or by building timber-framed slides that were pulled into position on to the frozen ice of a river or lake – by Stephen Bartley In St.Petersburg for example, when the River Neva froze over, two of these tall, elaborate constructions were placed about 400 metres apart, so that the tobogganer would have sufficient momentum to reach the second slide, in order to be able to make the return journey via a parallel track. It was a favourite winter pastime of Catherine the Great, and the idea was taken to North America where toboggans had been used by the First Nations peoples for thousands of years. The first chute in St.Moritz was created in 1876 by Franklin Adams on the slope opposite the entrance to the Hotel Kulm.

Toboggan racing as we know it today started in Davos in the early 1880s, and in the winter of 1884/1885, the Cresta Run in St.Moritz was created, the first track with artificial corners. Timed races on this run and the Post Road course from Davos Laret to Klosters were made possible by the advent of the small pocket Swiss chronometer that enabled each racer’s times to be measured to an accuracy of one fifth of a second.

These early races were usually for men only, but it was not long before women started to take the sport seriously.

The road course of over two miles at Klosters required considerable strength to propel oneself over the flatter sections, leading Charles Austin to comment that he thought it not suitable for ladies’ races. However the steeper and shorter runs like the Cresta Run and the new Buol Run in Davos Platz were a different matter. Over these courses, physique was less of an advantage, and a good balance, and judgement of speed and line were more important. The first ladies race on the Cresta Run was won in 1886 by Miss Vickers, with Mrs Annie Robertson, the wife of the Australian George Pringle Robertson coming 4th.

An den Abenden fanden Kostümbälle und Theateraufführungen im Hotel Kulm statt und sorgten für die Unterhaltung der zahlreichen Gäste.

Unter den tüchtigen jungen Frauen, die an dem Cresta-Wettkampf teilnahmen, waren auch die Saunderson-Schwestern. Sie zählten zu den ersten Teilnehmerinnen, die auf dem neuen Skeleton-Schlitten eine liegende Position (mit dem Kopf voran) einnahmen. Das Sitzen auf einem klassischen Rodelschlitten war für Damen die übliche Position, doch ihre langen Röcke machten es schwer, den Anstand zu bewahren, vor allem bei einem Sturz in der Shuttlecock-Kurve. Daher trugen sie breite Gummibänder an ihren Beinen. Der Start für Frauen lag weiter unten als der für Männer, gegenüber der Kirche und direkt über dem Church Leap. Er war so steil, dass sie auf ihren Schlitten bereits in Position starteten.

Ein Rennstart von Frauen war ziemlich ungewöhnlich, bis 1899 eine kleine, 19 Jahre junge Australierin aus Melbourne, Lorna Robertson, in St.Moritz eintraf. Sie war entschlossen, ihrem Vater, ihrer Mutter und ihren zwei älteren Brüdern nachzueifern, die zehn Jahre zuvor auf dem Cresta Run gefahren waren. Die begabte Reiterin wurde schon bald ein Star der Rodelgemeinde. Beim Ashbourne Cup, dem wichtigsten Saisonrennen ab der Junction, gewann sie den 6. Platz. Zum Erstaunen aller schlug sie mehrere hochqualifizierte Herren unter den Rodlern und wurde die erste Frau, die mit den Farben des St.Moritz Tobogganing Club ausgezeichnet wurde. Im folgenden Jahr kam sie wieder, um beim Grand National der Herren von der Top aus mitzukämpfen, und war auch hier wieder die erste Frau, die als ausreichend qualifiziert galt, um an dem Herren-Event teilzunehmen. In den Damenrennen, bei denen sie in liegender Position rodelte, war sie unschlagbar, auch wenn Frau Ursula Weble für die sitzende Position ihren Spitzenplatz verteidigen konnte.

Mr Robertson had been the prime mover in the creation of the Run the year before. The St.Moritz ladies thus were able to avenge their defeat in Davos a few weeks earlier.

This friendly rivalry between Davos and St.Moritz continued for a number of years and by 1896 the Race Week, which included a Men’s and Ladies’ Grand National, had become the social highlight of the winter season. They were accompanied by skating, curling and bandy competitions and even one year, a cricket match on the frozen lake. In the evenings fancy dress balls and theatricals would be held in the Kulm to keep the large gathering of visitors entertained.

Among the brave young girls who competed on the Cresta, were the Saunderson sisters who were one of the first women to adopt a headfirst position on the new skeleton toboggan. Sitting on a traditional luge had been the usual position for ladies, but their long skirts made it difficult maintain their modesty, particularly in the event of a fall at Shuttlecock. Large strips of elastic around their legs were employed as a result. The start for women was lower down than that for men, opposite the Church and just above the Church Leap. It was so steep that they would start already in position on their toboggans.

A running start by women was quite uncommon until in 1899 a petite young nineteen year old from Melbourne, Australia, Miss Lorna Robertson arrived in St.Moritz determined to emulate her father, mother, and two elder brothers who had ridden the Cresta Run ten years before. A gifted horsewoman, she soon became a star of the tobogganing fraternity. She finished 6th in the Ashbourne Cup, the main race of season from the Junction.

To everyone’s astonishment, she defeated a number of very competent male riders becoming the first woman to win the colours of the St.Moritz Tobogganing Club. The following year she returned to compete in the men’s Grand National from the Top, again the first woman considered to be competent enough to enter the men’s event. In the Ladies’ races, using the head first position, she was unbeatable, although Mrs Ursula Weble remained the best exponent of the seated position.

In der nächsten Saison folgten ihrem Beispiel Frau Bott, die Ehefrau des grossen John Arden Bott, und May Bott, seine Schwester, die damit ihren einzigartigen Rodel-Wettstreit auf dem Cresta Run einleiteten. Sie waren beide herausragende Athletinnen und spornten sich gegenseitig an.

Beide fuhren von der Top aus im modernen Stil, wodurch sie Frau Weble zwangen, ihre sitzende Position aufzugeben. Bis 1914 belegten diese Frauen beim Damenrodeln in St.Moritz Spitzenplätze, während in Davos Katharine Symonds auf dem Buol Run die herausragende Teilnehmerin war. Zur damaligen Zeit konnten sie zu Recht als «die schnellsten Frauen der Welt» betrachtet werden.

Diese Jahre galten als goldenes Zeitalter des Damenrodelns. Nach dem Ersten Weltkrieg liess seine Beliebtheit nach, als Skifahren die vorherrschende Wintersportart wurde. Mit der Wiedereinführung des Skeleton-Rennens auf Bobbahnen weltweit in den 1980er Jahren und der Aufnahme eines Damen-Events zu den Olympischen Winterspielen von 2002 erlebte dieser Sport einen neuen Aufschwung. Die erste Goldmedaillengewinnerin war die Amerikanerin Tristan Gale in Salt Lake City, gefolgt von der Schweizer Skeleton-Fahrerin Maya Pedersen im Jahr 2006.

Seit damals liegen bei der Sportart die Britinnen vorn – zuerst Shelley Rudman, die 2006 auf Platz 2 kam, dann Amy Williams, die 2010 in Whistler die Goldmedaille gewann, und in Sotschi die Olympiasiegerin Lizzy Yarnold.

Alle diese Athletinnen haben – ebenso wie ihre Vorgängerinnen – das Prädikat «Eisköniginnen» verdient. Der nächste Skeleton-Weltcup für Damen in St.Moritz findet vom 19. bis 25. Januar 2015 auf dem Olympia Bob Run statt.

Following her example the next season, Mrs Bott, the wife of the great John Arden Bott, and May Bott, his sister, began their unique tobogganing rivalry on the Cresta Run. They were both outstanding athletes and each would spur the other on. Both rode from the Top in the modern style, forcing Miss Wheble to abandon the sitting position. Until 1914 these women would dominate ladies’ tobogganing in St.Moritz, whilst in Davos, Miss Katharine Symonds was the outstanding female performer on the Buol Run. At the time they could rightly be considered ‘the fastest women on earth’.

These years were considered to be a golden era for women’s tobogganing. It became less popular after WW1 when skiing became the predominant winter sport of choice.

With the re-introduction of skeleton racing on bobsleigh runs around the world in the 1980s, and the inclusion of an event for women in the 2002 Winter Olympic Games, the sport received fresh impetus. The first women’s gold medallist was the American Tristan Gale at Salt Lake City, followed in 2006 by the Swiss slider Maya Pedersen. Since then the sport has been dominated by the British – first Shelley Rudman who was runner-up in 2006, then Amy Williams the gold medallist at Whistler in 2010, and at Sochi

by Olympic Champion Lizzy Yarnold. All these athletes are worthy of being called ‘Queens of the Ice’ as were their predecessors. The next women’s World Cup skeleton event in St.Moritz will take place on the Olympia Bob Run on January 19–25, 2015.

St.Moritz is celebrating from December 2014 the beginning of winter tourism in the Alps.

The story began in the Engadiner Kulm Hotel in 1864, when the farsighted hotelier Johannes Badrutt allegedly made a bet with some English hotel guests: If they returned in winter and did not find everything to their liking, especially the sunshine, he would pay all their expenses – by Diane Conrad-Daubrah

Seit 1855 hatte Badrutt die Pension Faller gepachtet, die sich in sonniger Lage oben in St.Moritz-Dorf befand. Ab 1858, als er das Anwesen kaufte und in Hotel Engadiner Kulm umbenannte, erweiterte er das Gebäude und bot eine attraktive Lebensart für britische Gäste an, die bis dahin überwiegend im Kurhaus Hotel bei den Mineralquellen von St.Moritz-Bad abgestiegen waren.

Kurz bevor er seine angebliche Wette machte, versprach der 45-jährige Badrutt am 21. August 1864 ein Grundstück, auf dem eine englische Kirche gebaut werden sollte. Für die betuchten Viktorianer war es wichtig, ihre Religion nach ihren eigenen Traditionen pflegen zu können, und der clevere Hotelier erkannte den werbewirksamen Vorteil, für seine Gäste eine englische Kirche zu haben.

Der Ruf eines Ferienortes gründete sich damals teilweise auf einfachen frühen Reiseführern wie dem Murray‘s, oder – noch wichtiger – auf persönlichen Memoiren, Reiseberichten und Zeitungsartikeln. Die schriftlichen Zeugnisse früher Touristen ermutigten andere, in das Engadin zu kommen, sei es aus Gesundheitsgründen, für Entdeckungsreisen oder zum Wandern und Bergsteigen.

1864 empfing Badrutt über 50 britische und 6 amerikanische Gäste in seinem Hotel. Einige der Reisenden, die nicht nur in St.Moritz, sondern auch im Kronenhof (dem damaligen Hotel Krone von Gredig) in Pontresina verweilten, hielten ihre Erfahrungen und Eindrücke während dieses Sommers vor 150 Jahren fest: Harry Jones, ein Pfarrer aus London, der später ein Hofgeistlicher von Königin Viktoria wurde, beurteilte Badrutt persönlich als «ein geistreiches, weitsichtiges Mitglied der Gemeinschaft». Jones und seine Frau verbrachten eine Woche in Pontresina im Hotel Krone, wo sie am 11. August 1864 vom Schneefall überrascht wurden: «Nachdem wir nichts Böses ahnend zu Bett gegangen waren und das grosse Federbett weggeräumt hatten, da es für den Sommer zu warm wäre, erwachten wir am nächsten Morgen bei klirrender Kälte!» In der nächsten Woche zogen Herr und Frau Jones ins Kulm, wo sie «ein sehr freundliches Zimmer und gute Küche» fanden, wozu er bemerkte, dass das Essen in Pontresina für ihren Geschmack «zu stark mit Knoblauch gewürzt» war.

Frau Freshfield, die Ehefrau eines Londoner Anwalts, der seit 1857 für die Bank von England arbeitete, schrieb über einen früheren Aufenthalt: «Die guten Leute von der ‚Krone’ schienen fast gekränkt, als wir sie so früh verliessen. Sie sagten, wenn wir zufrieden seien und uns wohlfühlten, warum wir dann nicht länger bleiben würden?» Frau Freshfield war begeistert vom Engadin, hatte aber eine eher negative Meinung von Unterkunft und Verpflegung. From 1855, Badrutt had rented the guesthouse Faller, in a sunny position at the top of St.Moritz village. From 1858, when he bought the property and renamed it the Hotel Engadiner Kulm, he extended the building and offered a lifestyle attractive to British visitors who, up to that time, had mostly stayed in the Kurhaus Hotel by the mineral springs of St.Moritz Bad. Shortly before making his purported bet, the 45year-old Badrutt on 21st August 1864 promised a piece of land on which an English church would be built. It was important for the well-heeled Victorians to worship according to their own traditions and the astute hotelier realized the promotional advantage of having an English church for his guests.

The reputation of a resort in those days was built partly by basic early guidebooks such as Murray’s or, more importantly, by personal memoirs, travelogues and newspaper articles. The writings of early tourists encouraged others to come to the Engadine, whether for the sake of their health, to explore or to walk and climb in the mountains.

schrieb sie 1864 zu ihrem Aufenthalt in St.Moritz, das Essen im Kulm sei «verzeihlich; mit Ausnahme von Rind- und Kalbfleisch muss alles von Chur oder von weit entfernten italienischen Dörfern auf der Südseite der Alpen herbeigeschafft werden». Ihre Meinung zum Heilwasser von St.Moritz steht ebenfalls im Gegensatz zum Urteil von Harry Jones: «eine Flüssigkeit mit einem Geschmack wie beim Ausspülen von Tintenfässern, die noch dazu ein, vom überschüssigen Eisen, Kopfweh verursachen kann», während Jones meinte, das Heilwasser sei «köstlich; viel zu gut für Medizin ... es vereint den feinsten Geschmack von prickelndem Mineralwasser und Selterswasser, eisgekühlt».

Freshfield Junior, Douglas, schrieb einen privat veröffentlichten Bericht von seiner Reise im Jahr 1864 mit zwei anderen Studenten und einem Reiseführer zu Fuss von Thonon (Frankreich) nach Bozen (damals Österreich). Bei der Ankunft im Kulm, wo er seine Eltern treffen wollte, sah Douglas, wie ein Wagen abgeladen wurde: «Ich erkannte das Gepäck mit dem roten Band ... und bemerkte, dass wir unsere Verabredung bis auf zehn Minuten genau eingehalten hatten, was angesichts des zurückgelegten Reisewegs gar nicht so schlecht war.» Er und seine Freunde reisten nach Pontresina weiter. Auf der Rückkehr von einer anstrengenden Tour zur Berninagruppe bemerkte Douglas, dass «...der verwahrloste Zustand unserer Kleidung ... uns dazu nötigte, uns wie Statuen an die Wand zu stellen, als wir in der Halle der Krone empfangen wurden ... Gredig war so freundlich, ein kleines Zimmer für uns drei zu reservieren, und servierte uns ein Abendessen, obwohl die Zeit der ,Table d’hôte’ schon lange vorbei war.»

Francis Fox Tuckett (Frank) und seine Schwester Elizabeth (Lizzie) waren regelmässig im Engadin zu Gast und wohnten 1864 mit anderen Bergsteigerfreunden in der Krone, wo sie bei ihrer Abreise im Gästebuch folgenden Eintrag hinterliessen: «Dieses Hotel ist wärmstens zu empfehlen, die Zimmer sind sau-

Some of the visitors, who came not only to St.Moritz but also to the Kronenhof (then Gredig’s Hotel Krone) in Pontresina, recorded their experiences and impressions during that summer of 150 years ago: Harry Jones, a London clergyman who later became a chaplain to Queen Victoria. His personal judgement of Badrutt was “a spirited, far-sighted member of the community”. Jones and his wife spent a week in Pontresina at the Krone, where they were taken by surprise by a snowfall on Aug 11th 1864: “Having gone innocently to sleep and taken off the great feather bed as too hot for summer, we find ourselves in the morning as cold as a French dinner plate!”. The following week the Joneses moved to the Kulm, where they found “a very pleasant room and good fare”, noting that the food in Pontresina had been “too garlicky” for their taste.

Mrs. Freshfield, wife of a London lawyer who from 1857 was solicitor to the Bank of England, wrote about a previous visit: “The good folks at the ‘Krone’ seemed almost hurt at our leaving them so soon. They said, if we were satisfied and comfortable, why did we not remain longer?” Mrs. Freshfield was enthusiastic about the Engadine but had rather negative views on accommodation and food. In The Times in 1864, during her stay in St.Moritz, she mentioned the food at the Kulm as being “excusable; with the exception of beef and veal, everything has to be brought from Coire (Chur), or from the Italian villages far down on the south side of the Alps”. Her opinion of the St.Moritz spa waters also contrasts with that of Harry Jones: “a fluid in flavour like the washings-out of ink bottles and which is apt to give one an iron headache”, whereas Jones thought the waters were “delicious; far too nice for medicine…they combine the finest flavour of the best soda and seltzer water, iced”.

Freshfield junior, Douglas, wrote a privately-published account of his 1864 trip with 2 other students and a guide on foot from Thonon (France) to Bozen (then Austria) . On arrival at the Kulm to meet his parents, Douglas saw a cart being unloaded; “I recognised the red-ribboned luggage… and found that we had kept our rendezvous within ten minutes, which, considering the distance travelled, was not so bad.” He and his friends moved on to Pontresina. Returning from a strenuous tour of the Bernina, Douglas noted that “…the dilapidation of our clothes… obliged us to assume monumental positions against the wall when welcomed in the hall of the Krone… Gredig had been polite enough to reserve a small room for three of us and allowed us to have some supper, although the table d’hôte hour had long past.”

ber, die Kosten angemessen, der Wirt ist höchst aufmerksam und das Essen sehr gut – es ist eines der angenehmsten Quartiere in der Schweiz, und jeder setzt alles daran, es zu ruinieren, indem er anderen Leuten rät, hier einzukehren!»

Sie assen am 5. August im Engadiner Kulm, als Lizzie über ihren Nachbarn am Table d‘Hôte bemerkte: «Sie lernen, dass es verschiedene Arten gibt, mit Messer und Gabel umzugehen.» Lizzie, eine begabte Künstlerin, fertigte während der ganzen Reise Zeichnungen an, und später erhielt Herr Gredig ein Buch mit ihren Illustrationen geschenkt, das sich heute in der Museumsbibliothek von Pontresina befindet.

Der englische Geistliche Alfred Strettell wohnte während der Sommersaison 1864 im Kulm, wo er sehr wahrscheinlich regelmässig Zeit damit verbrachte, Johannes Badrutt Englischunterricht zu geben. Alfreds Sohn Arthur war der erste Wintertourist, der in dem Gästebuch des Hotels erscheint. In einem Brief an die Zeitung «The Times» von 1868 blickte Alfred auf das Jahr 1864 zurück: «Die erfrischende Luft und das gesunde Wasser an diesem Ort haben in letzter Zeit eine grosse Zahl unserer Landsleute und Amerikaner angelockt ... Dass St.Moritz sehr beliebt werden würde, wurde von einigen von uns bereits vor vier Jahren vorhergesehen.» Auch wenn es keine Aufzeichnungen darüber gibt, dass Strettell in der Krone in Pontresina abgestiegen sei, so muss er doch von 1865 an oft dort gespeist haben, als er half, eine anglikanische Seelsorge in der Krone einzurichten. Im Hotel wurden Gottesdienste bis 1882 gehalten, als eine Kirche gebaut wurde. Die ursprüngliche Bibliothek der englischen Kirche ist heute noch im Hotel Kronenhof angesiedelt.

Von keiner der erwähnten Personen wird berichtet, dass sie im Winter wieder nach St.Moritz gekommen seien. Es scheint jedoch, dass um das Jahr 1864 das Engadiner Kulm und die Krone bevorzugte Unterkünfte für britische Touristen waren. Heute empfangen die beiden Hotels Gäste zahlreicher Nationalitäten und lassen die bereits vor 150 Jahren fest etablierten Traditionen der Gastlichkeit weiterleben.

Francis Fox Tuckett (Frank) and sister Elizabeth (Lizzie) were regular Engadine visitors who stayed in 1864 with other mountaineering friends at the Krone, where their entry in the visitors’ book on departure read: “This hotel is highly to be recommended, the rooms are clean, charges moderate and landlord most attentive and the food very fair - it is one of the pleasantest headquarters in Switzerland and everyone does his best to spoil it by telling other people to go there!” They ate at the Engadiner Kulm on 5th August, when Lizzie commented on her Table d’Hôte neighbours “they learn that there are various ways of using a knife and fork”! Lizzie, a talented artist, made sketches throughout the trip and later Mr. Gredig was presented with a book of her illustrations, now to be found in the Pontresina Museum Library.

The English chaplain Alfred Strettell stayed for the 1864 summer season at the Kulm, where he most probably regularly spent time teaching English to Johannes Badrutt. Alfred’s son Arthur was the first winter tourist to appear in the hotel’s visitors book. Alfred in 1868 looked back to 1864 in a letter to The Times newspaper: “The invigorating air and salubrious waters of this place have lately attracted such numbers of our countrymen and Americans…..That St.Moritz would become very popular was foreseen by some of us four years ago.” Although there is no record of Strettell having stayed at the Krone in Pontresina, he must have eaten there often from 1865, when he helped to establish an Anglican chaplaincy at the Krone. Services were held in the hotel until 1882, when a church was built. The original English church library is still housed in the Hotel Kronenhof.

None of those mentioned above was recorded as having returned to St.Moritz for the winter. However, it seems that by 1864 the Engadiner Kulm and the Krone were the preferred places to stay for British tourists. Today, the two establishments welcome visitors of many nationalities and continue the traditions of hospitality already firmly established 150 years ago

Es handelt sich dabei um einfache Produkte. Der Luxus liegt viel mehr in der Wertigkeit des Rohstoffes.

It is going home. Going back to find all the treasures of nature that have always been there for us. Things we have lost sight of. Things whose effects we are often too impatient to wait for. But which do us such good. Only a few words are needed to express this latest trend in wellbeing. The development of products and treatments can be summarised in a single phrase: back to the source. Nadine Böning-Soares, Spa Manager of the Grand Hotel Kronenhof and the Kulm Hotel, says: “Up here we have nature all around us. It is only right that we should draw on it.”

She is referring to the “Pharmos Natur Green Luxury” products that have been recently introduced to the spas at the Kulm Hotel and the Grand Hotel Kronenhof. Great faith is placed in the pure strength of aloe vera, the healing plant that replaces water as the basis of all the active cosmetics, giving the skin freshness and bringing it alive. And there’s more. Nadine Böning-Soares cuts into one of the healing plants. The thick gel that seeps from the fleshy leaves is applied direct and pure to the skin. “When we treat our guests with this, it is deeply moving for them and for the therapist.” The spas at the two hotels have been using this new acquisition in pioneering ways since last summer. The products are simple, with the luxury stemming largely from the quality of the raw ingredients.

Totale Entspannung Als zweite Neuentdeckung spricht Böning Soares die Cosmeceuticals von Ericson Laboratoire an, sozusagen der Gegenpool zur puren Natur von Aloe vera. Es sind kosmetische Produkte, die einen Soforteffekt erzielen. Doch in jedem Fall gilt ein Credo: Die Gäste sind ganzheitlich zu behandeln. Körper und Geist bilden eine Einheit. Es geht in der heutigen Hochleistungsgesellschaft je länger je mehr darum, wieder zu entschleunigen. «Wir kommen kaum mehr zur Ruhe. Daher ist es umso wichtiger, unsere Gäste sanft zu verwöhnen.» Entwickelt wurde hierfür eine neue Behandlung: Die Gäste können beispielsweise während der ganzen Massage auf dem Rücken liegen und sich so noch mehr entspannen.

Dieser ganzheitlicheren Sichtweise auf die Gesundheit seien sich vermehrt auch die Gäste bewusst. Gerade bei Detox-Behandlungen: «Wenn wir den Körper von Giften und Ballasten befreien möchten, reicht nicht ein Wundermittel allein.»

Natürlich gehören Basensalze dazu, die Übersäuerung im Körper wieder auszugleichen. Doch das Wohlfühlteam stellt ein Gesamtpaket zusammen, inklusive Trainingsplan, der zu Hause weitergeführt werden kann. Dazu gehört insbesonders die Ernährung oder die Fitness, wie zum Beispiel Pilates- oder Yoga-Lektionen, die unter anderem von den Personal Trainern der beiden Grand Hotels angeboten werden.

Zum Schluss lässt Nadine Böning Soares mit leuchtenden Augen den Blick über den Spa des Grand Hotels Kronenhof schweifen. «Sehen Sie, eigentlich ist alles schon da. Die wunderbare Natur. Und im neuen Kulm Spa St.Moritz ist sie sogar im Innern des Spas allgegenwärtig.» Die Materialisierung der Innen­ ausstattung besteht mehrheitlich aus dem wohlriechenden Holz der Arve, der Königin aus dem Engadin. Wir müssen uns nur noch auf die Kraft der Natur einlassen und ihr wieder mehr unserer Zeit schenken.

But each is underlain by the same belief: guests are treated holistically. Body and spirit are a whole. In today’s demanding society we have an everincreasing need for opportunities to wind down. “We hardly ever get any chance for peace and quiet. It is therefore all the more important that we gently pamper our guests.” A new treatment has been developed for exactly this purpose.

One aspect is encouraging guests to lie on their backs throughout the whole of a massage, enabling them to relax all the more.

This more holistic view of health is also something guests are increasingly aware of. Take, for example, detox treatments. “If we want to rid our bodies of poisons and ballast, a wonder potion is not enough.” Of course basic salts help to balance out excess acidity in the body, but the wellbeing team put together a complete package, including a training plan, that can be continued at home. This involves in particular diet guidelines and a fitness regime, such as pilates or yoga classes, led by instructors who include the personal trainers at the two Grand Hotels.

At the end of the interview Nadine Böning-Soares looks around the spa of the Grand Hotel Kronenhof with shining eyes. “Look, it’s all here. The wonders of nature. And in the new Kulm Spa St.Moritz nature is even a constant presence indoors.” The predominant material used for the interior is timber from the beautifully-scented Swiss stone pine, the queen of the Engadine. We simply have to trust in the forces of nature and give her more of our time.

HÜTTENLIEBE Pia Schwander ist eine Gastgeberin mit Herz. Inmitten des spektakulären Alpenpanoramas, das bereits den Maler Segantini inspirierte, betreibt sie mit viel Idealismus die ParadisHütte. Und bäckt göttliche Kuchen – von Gallus Hufenus Als könnte man das Berninamassiv umarmen. Die bulligen Gipfel kratzen am tiefblauen Himmel. Eine dicke Schneezunge wölbt sich unterhalb des Piz Palü dem Tal entgegen, sie scheint jeden Augenblick abzubrechen und dem Morteratschgletscher entgegen zu krachen. Zwei ältere einheimische Herren sitzen auf der Terrasse der «Chamanna Paradis», der Paradis-Hütte, geniessen die Berg­ arena und verdrücken genüsslich ein Stück des hausgemachten Aprikosenkuchens. Saftig leuchten die grossen Fruchtstücke. Dazu schlürfen sie in kleinen Schlückchen je ein Gläschen des roten Hausweins und meinen, dass sie jetzt grad die glücklichsten Menschen auf Erden seien. Dass die Wirtin immer noch so fröhlich sei wie vor 31 Jahren, ihrem ersten Sommer auf der Hütte. Und dieser Kuchen, der sei sowieso der beste überhaupt. Allerdings, der Schreiber hat Pech: Die beiden Männer haben das letzte Stück des Tages erobert. Als Insider wissen sie bestens: Wer den berühmten Kuchen Pia Schwanders geniessen möchte, sollte diesen am besten per Telefon für sich reservieren lassen (+41 79 610 36 03). Kuchen auf den Berg An einem Schönwettertag bäckt Pia sechs bis acht Kuchen. Sind diese vertilgt, muss man wieder hoch wandern. «Aufgebackenes oder Aufgetautes gibt’s nicht, alles ist frisch», so die Gastgeberin. Nachbacken ist nicht möglich: Auf 2540 Metern über Meer arbeitet das Team in der kleinen Holzhütte ohne Strom, nur mit Gas. Wasser wird vom Tal auf den Berg gepumpt. Frische Spezialitäten in alpiner Höhe angeboten ist ein Luxus. Dahinter steckt viel Arbeit: Bei gutem Wetter steht die Wirtin von Anfangs Juni bis Anfangs Oktober täglich um 5 Uhr morgens in ihrer Küche zuhause in Pontresina und zaubert Früchtekuchen nach saisonalem Angebot aus dem Backofen. Um 8 Uhr besteigt sie und ihre beiden Mitarbeiterinnen mit den Kuchen unter den Armen den Sessellift auf die Alp Languard und wandern auf die Hütte, wo sie kurz nach 9 Uhr eintreffen. Mit dabei im Rucksack Brot, Käse, Fleisch, Gemüse für ihre reichhaltige Menükarte.

Nur «Schweres» wird per Helikopter geliefert. Am Abend bäckt sie weiter, Rüebliund Schokoladenkuchen. Die Wirtin liebt ihre Arbeit, sonst könnte sie diese langen Tage wohl kaum bewältigen. Manchmal würde sie nach strengen Stunden schon gern noch etwas länger schlafen. Aber die Hütte ist Pias Berufung.

Und die Geschichte einer Liebe: Die gebürtige Luzernerin plante, lediglich einen Sommer lang in St.Moritz zu bleiben. Der Fremdsprachen wegen wollte sie während einer Saison in einer Feriendestination als Drogistin arbeiten. Auf einer Wanderung landete sie per Zufall in der kleinen Chamanna, wo sie ihren zukünftigen Lebenspartner Andri kennen und lieben lernte. Dessen Mutter führte damals die Hütte. So übernahm Pia mit ihrem Mann den Betrieb, als es der Mutter aus gesundheitlichen Gründen zu anstrengend wurde, und teilte alsbald mit ihm das Bergleben. Seit ihr Partner vor fünf Jahren gestorben ist, helfen ihr heute noch «die beiden fleissigsten Mitarbeiterinnen». Sie blickt zum Bernina und sagt: «Wir betreiben das Paradis im Sinne von Andri weiter.» Natürlich kennt die Wirtin nach all den Jahren praktisch all ihre Gäste, es sei wie eine grosse Familie. «Die Wertschätzung, die ich von diesen Menschen spüre, die Geschichten, die ich mit ihnen teilen darf, sind der schönste Lohn», sagt sie mit leuchtenden Augen. Tatsächlich: Praktisch alle Gäste werden mit Vornamen begrüsst, die Chefin schüttelt ihnen persönlich die Hände und verteilt den Kindern zum Schluss ein Bonbon oder ein Schöggeli. Eine Heimat auf Zeit. «Solange es meine Gesundheit zulässt, mache ich weiter. Ich schaue Jahr für Jahr», sagt die heute 58-Jährige.

Steinwild, Murmeltiere und Aussicht Bis zu diesem Tag teilt Pia Schwander dieses «Paradis» (romanisch ohne «ie») mit ihren Besucherinnen und Besuchern: mit Wanderern, Hochzeitspaaren und Geburtstagskindern. A thick tongue of snow hangs above the valley below the Piz Palü, looking as if it will break off any moment and crash down to the Morteratsch Glacier. Two elderly local gentlemen sit on the terrace of the “Chamanna Paradis”, the Paradise Mountain Hut, enjoying the mountain landscape and gleefully tucking into a slice of homemade apricot tart, which gleams with large pieces of juicy fruit. They take small sips from glasses of the red house wine and agree that right at that moment they are the happiest men on Earth – and that their hostess is still as cheerful as she was 31 years ago, that summer when she first came to the mountain hut. And the cake – that is also the best ever. But it’s bad luck for this reporter: the two men have polished off the last slice of the day. Der Moment vor dem Ansturm.» Mal öffnet sich über dem Piz Palü ein Fenster im Nebel, ein andermal erleuchtet die Morgensonne die weissen Gipfel hell.

Das Schöne ist überall. Man muss es nur sehen. Und: Sich unbedingt beim nächsten Besuch ein Stück vom Früchtekuchen reservieren lassen...

Cakes on the mountainside On a day when the weather is good, Pia bakes six to eight cakes. Once these are gone, you have to continue your way upwards. “Nothing is heated up or defrosted; everything is freshly baked,” she says. The baking is done in advance, as at 2,540 m above sea level the team in the little wooden mountain hut work without electricity, only with gas. Water is pumped up the mountain from the valley. Fresh specialities served at an Alpine altitude is a luxury. There is a lot of work behind it – from the beginning of June to the beginning of October, when the weather is good Pia Schwander gets up at home in Pontresina at 5 am to conjure up her fruit tarts made from seasonal produce. At 8 am she and her two assistants, cakes tucked under their arms, take the chairlift up the Alp Languard and walk to the hut, arriving just after 9 am. Their rucksacks also contain bread, cheese, meat and vegetables for their rich menu. Only “heavy” goods are delivered by helicopter. In the evenings she continues her baking, producing carrot cakes and chocolate cakes. She loves her work, otherwise she would be unable to cope with these long days. Sometimes she would like to sleep for a little longer after these demanding hours of work, but the mountain hut is Pia’s vocation.

And it’s a love story: born in Lucerne, Pia’s original plan was to spend just one summer in St.Moritz. She intended to spend a season learning foreign languages while working at a chemist’s in a holiday resort. While out walking she came by chance upon the small chamanna, where she met and fell in love with her future husband Andri, whose mother was running the mountain hut at the time. That was how Pia came to take over the business when his mother’s health meant it had become too much for her. She became immersed in her husband’s Alpine way of life. Since he died five years ago she has been helped by “the two most hardworking employees I could wish for”. She looks across to Bernina and says, “We continue to run the Paradis as Andri would have wanted it.” Of course, after all these years Pia knows practically all her guests, who are like an extended family. “The appreciation I feel from all these people and the stories I get to share with them is the best possible reward,” she says with shining eyes. And it shows. Practically all the guests are greeted by their first names, Pia shakes their hands in person and as they leave she gives the children a sweet or a chocolate. A home from home. “As long as I have my health I will continue to do this. I take life one year at a time,” says the 58-year-old.

Ibex, marmots and views Pia Schwander continues to share this “Paradis” (the Romansch spelling) with her visitors: hikers, newly-weds and children celebrating their birthdays. Or with former government ministers, and even UN Prosecutor Carla del Ponte, together with bodyguards. They all marvel at the location in the midst of one of the largest ibex colonies in the Alps, the Albris region known as the “ballroom” of the mountains, and thoroughly enjoy the one-hour walk from the chairlift station through the wonderful marmots’ habitat and nature reserve of Val Languard. “My favourite personal moments are in the mornings as I walk the trail in peace and quiet. The calm before the storm.” Sometimes a window opens in the mists above the Piz Palü, at others the morning sun shines brightly on the white peaks. Beauty is all around. It just has to be seen. PIONIERGEIST «Buy and build big», lautete das Motto des Grossreeders Stavros Niarchos (1909-1996) und daran hat er sich sein Leben lang gehalten. Er schwärmte für das Engadin, wohin er auch seinen Wohnsitz verlegte – von Thomas Veser Ausgeprägter Geschäftssinn, gepaart mit einer gehörigen Portion Beharrlichkeit, begründete in den 1970er Jahren seinen Aufstieg zum grössten privaten Tankerflottenbesitzer. Schon vor dem Zweiten Weltkrieg hielt sich Stavros Niarchos gerne im Engadin auf. St.Moritz hatte es ihm besonders angetan, diesen Ort schloss er spontan ins Herz. Skifahren zählte zu seinen Leidenschaften. Der Athener beherrschte diesen Sport perfekt und konnte sich keine schönere Kulisse dafür vorstellen als die Engadiner Bergwelt. So nahm er seinen Wohnsitz in St.Moritz und begann im Oberengadin zu investieren.

Von seinem Wohnhaus konnte er den mächtigen Corvatsch bewundern, und das brachte ihn Ende der 1950er Jahre auf eine Idee, die nicht ganz neu war: Stavros Niarchos wollte den 3303 Meter hohen Berg und den Piz Nair mit einer Luftseilbahn erschliessen. Denn damit wäre Wintersport im Oberengadin dank des Corvatsch-Gletschers ganzjährig möglich geworden.

Beitrag zur Entwicklung des Wintersports Was hatte den Milliardär aus Hellas zu diesem Engagement veranlasst? Offensichtlich strebte er in erster Linie einen Beitrag zur Entwicklung des Skisports in diesem Landesteil an. Solche Absichten gab es zwar schon früher, aber alle sechs bis dahin geplanten Projekte zur Erschliessung des Corvatsch durch eine Bahn waren in den Schubladen verschwunden. Erst der siebte Versuch, eine Bahnverbindung von Surlej auf den Piz Corvatsch anzulegen, wurde 1959 vom Eidgenössischen Post- und Eisenbahndepartement positiv beschieden.

Dank Niarchos‘ Finanzkraft konnte das Initiativkomite für den Bau der Corvatschbahn das ehrgeizige Vorhaben anpacken. Pendelbahnen sollten ermöglichen, die steilen Bergflanken in wenigen Minuten zu überwinden, um vom höchsten Punkt aus den Blick auf die Gletscher des Bernina-Massivs und die oberengadinische Seenplatte zu geniessen und sich dem Skisport zu widmen.

PIONEERING SPIRIT “Buy and build big” was the motto of ship­ ping magnate Stavros Niarchos (1909–1996), one he stuck to throughout his life. He enthused about the Engadine, where he also came to live – by Thomas Veser On the basis of his remarkable business acumen paired with a healthy dose of perseverance, he built up a career that in the 1970s led to him being the owner of the biggest private shipping fleet.

Stavros Niarchos started coming to stay in the Engadine before the Second World War. He was particularly taken by St.Moritz, which immediately found a place in his heart.

Skiing was among his passions, and as the tycoon from Athens perfected his skills he could imagine no better backdrop for the sport than the Engadine Mountains. So he took up residence in St.Moritz and began to invest in the Upper Engadine.

Allerdings zogen die Bewohner der Gegend kaum mit, weswegen er zum Hauptaktionär wurde. Drei Jahre nach Baubeginn konnte die Bahn 1964 in Betrieb genommen werden. Die damalige Aufbruchsstimmung hatte dafür gesorgt dass die Gebäude und Anlagen in dieser Höhe auch unter schwierigsten Bedingungen wie vorgesehen erstellt werden konnten. Alle Akteure zogen damals an einem Strang.

Fortwährende Verbesserung der Qualität Die Vorteile des Skigebiets seien offensichtlich gewesen, berichtet Alois Jurt, seit 1968 im Verwaltungsrat der Corvatsch AG und heute ihr Präsident. «Dank der Höhen- und Nordlage hatten wir die besten Pisten, auf denen am längsten Schnee lag», fügt er hinzu.

Bald darauf schaffte man das erste Pistenfahrzeug an und 1979 ging der Skilift Curtinella in Betrieb. Seit Mitte der 1980Jahre standen die ersten Beschneiungsanlagen bereit, die fortwährend durch sparsamere Geräte ersetzt wurden. Dann schlossen sich 2007 die Luftseilbahn Surlej-Silvaplan-Corvatsch AG und die Furtschellas Bahn AG zur Corvatsch AG zusammen.

Seither konnte die Qualität des Skigebiets durch den Bau einer Tiefgarage, einer modernen Pendelbahn 2.Sektion, der Sesselbahn Rabgiusa sowie eines Personalhauses noch weiter gesteigert werden. Auch zahlreiche gastronomische Neuerungen hielten damals am Corvatsch Einzug.

Stavros Niarchos bleibt der Nachwelt jedoch nicht nur als unermüdlicher Impulsgeber für die Fremdenverkehrsbranche in Erinnerung. Er trat in späteren Jahren verstärkt als philanthropisch veranlagter Unternehmer, Kunstsammler und Mäzen auf. Er gründete mehrere Stiftungen, die er mit Stiftungskapital aus seinem Vermögen ausstattete. Sie sind bis heute auf sozialem, medizinischem und kulturellem Gebiet tätig, entweder weltweit oder auf seine Wahlheimat beschränkt. «St.Moritz und das Engadin verdanken der Familie Niarchos sehr viel», bekräftigt Hanspeter Danuser, ehemaliger Kurdirektor von St.Moritz.

From his house he would marvel at the mighty Corvatsch and towards the end of the 1950s it gave him an idea that was not entirely new – Stavros Niarchos wanted to connect the 3,303 m high mountain by cable car (Stavros Niarchos and his friend Lionel Guinness had already built the PizNair cableway in 1952). This would make winter sports possible in the Upper Engadine all year round thanks to the Corvatsch Glacier.

Contribution to the development of winter sports What was the Greek billionaire’s intention behind this undertaking? First and foremost he was seeking to make a contribution to the development of skiing in this region.

Similar projects had previously been proposed, but all six of the projects planned up to that date for a cable car up the Corvatsch had been put on the backburner. It was not until the seventh proposal, to establish a cable car link from Surlej to the Piz Corvatsch in 1959, that the Swiss Post and Railways Department gave a favourable decision.

Niarchos’ financial backing enabled the Corvatsch cable car initiative committee to go ahead with the ambitious project. A cable car would enable steep mountain slopes to be ascended in just a few minutes, giving passengers access to the view of the Bernina massif glacier and the Upper Engadine lakes from the very top, and enabling them to also enjoy the summer skiing up there. Stavros Niarchos founded a public limited company with shares available for anyone to buy. However, take-up from local residents was minimal and he became the principal shareholder. The cable car was opened three years after the launch of construction, in 1964. The mood of change prevalent at the time had ensured that, even at this altitude and under the most difficult conditions, the buildings and equipment were completed as planned. All those involved were untied and wanted a positive outcome.

Continuous quality improvements The benefits to the skiing area were obvious, according to Alois Jurt, a member of the Corvatsch AG board since 1968 and its current President. “The height and the north-facing location meant we had the best pistes with snow lying for the longest periods, well into the spring” he adds. Soon afterwards the first snow groomer was acquired and in 1979 the Curtinella ski lift became operational. The first artificial snow machines have been in place since the mid-1980s, and have been regularly replaced by more economical versions. In 2007 the Luftseilbahn Surlej-SilvaplanaCorvatsch AG and the Furtschellas Bahn AG merged to form the Corvatsch AG. Since then the quality of the skiing area has been improved even further with the construction of an underground car park, modernization of the first and second section, the Rabgiusa chairlift and a staff amenities building. A number of new restaurants were also established on the Corvatsch.

Diese Verbundenheit mit dem hochalpinen Tal teilen auch seine Söhne Philip und Spyros, die ebenfalls dort ihren Wohnsitz genommen haben. Ihnen gehört das St.Moritzer Kulm, das als Wiege des Wintertourismus gilt, sowie der Kronenhof in Pontresina. Zudem sind sie die grössten Grundbesitzer vor Ort. Die symbolträchtigste Errungenschaft, die auf den Reedermagnaten und Tankerkönig zurückgeht, ist und bleibt jedoch die Corvatsch-Bahn, die in dem halben Jahrhundert seit ihrem Bau über 55 Millionen Passagiere befördert hat. Die bisweilen ungünstigen Entwicklungen, die seit einigen Jahren den Skitourismus prägen, sind auch an ihr nicht spurlos vorübergegangen. Seit Ende der 1980er Jahre hat sich der Gletscherrückzug verstärkt und nachdem 1992 der Sommerbetrieb endgültig eingestellt wurde, sind die Bahnen heute von November bis Anfang Mai in Betrieb. Weil die Zahl der Wintersportler zurückgegangen ist, stellt die dringend benötigte hohe Auslastung zwischen November und April die Bahn vor hohe Herausforderungen. Maschinell zu beschneien sowie Pisten zu präparieren und zu pflegen, wirft hohe Kosten auf.

Deswegen ermuntert Markus Moser, Vorsitzender der Geschäftsleitung, seine Mitmenschen, «mit Mut und Beharrlichkeit» an den Pioniergeist der NiarchosEpoche anzuknüpfen. Der erste Schritt in diese Richtung sei der geplante Bau eines Familienhotels an der Furtschellas-Talstation, um so Wintertouristen zurückzugewinnen.

Stavros Niarchos is remembered by his successors not only as a tireless entrepreneur in the tourism sector (he purchased the Kulm Hotel with two other investors at the request of the Community Council). In his later years he played an increasingly important role as a philanthropist and art collector. He established several foundations that he endowed with capital from his own assets. They operate to this day in the social, medical and cultural sectors, both worldwide and in his adopted home. “St.Moritz and the Engadine have a lot to thank the Niarchos family for,” confirms Hanspeter Danuser, former tourism director of St.Moritz. This connection with the high Alpine valley is shared by his sons Philip and Spyros, who have also made their homes there. They are the owners of the Kulm in St.Moritz, the cradle of winter tourism, as well as the Kronenhof in Pontresina, (which the Kulm Hotel acquired at the express wish of the Niarchos brothers); it is now the “flagship” of Pontresina.

Nevertheless, the most symbolic achievement of the shipping magnate and tanker king was and remains the Corvatsch cable car, which has carried 55 million passengers in the half century since it was built. The unfavourable developments that have hit ski tourism in recent years have not passed without leaving their mark. Since the end of the 1980s the glacier has been receding rapidly and summer opening was finally brought to a halt in 1992. Because the numbers of winter sports aficionados have declined, the need to fill the cable car to capacity between November and April presents a major challenge. The provision of artificial snow and the need to prepare and maintain pistes come with high costs.

For this reason Markus Moser, the C.E.O., encourages people to continue in the tradition of the pioneering spirit of the Niarchos era “with courage and perseverance”. The next step in this direction is the planned construction of a family hotel at the Furtschellas base station, to win back winter tourists to the area. The Niarchos brothers are certainly continuing in the spirit of their father and have authorized investments of CHF 27 million over the next 3-years.

With these various investments in St.Moritz, Pontresina and Silvaplana combined the Family Niarchos are also indirectly the largest employers in the Engadine.

AUF PRIVATER PISTE Exklusives Skifahren, gutes Essen und Feiern mit Freunden in einem Erlebnis vereint: Die «Private Corvatsch Night» lässt den Traum vom «eigenen» Berg wahr werden.

Am 26. Februar und am 4. April 2015 ist es den Gästen des Kulm Hotel St.Moritz und des Grand Hotels Kronenhof Pontresina vorbehalten, die längste beleuchtete Skipiste der Schweiz in nächtlicher Glitzerpracht über 4,2 Kilometer von der Mittelstation Murtèl bis zur Talstation Surlej abzufahren.

Bevor die Gäste erste Schwünge setzen, werden in der Gondel über den Baumwipfeln Gaumenfreuden serviert, mit einmaligem Ausblick auf die nächtliche Lichterpracht des Oberengadins. Dann geht es über 840 Höhenmeter von der Mittelstation ins Tal. Dort hält das Vergnügen an, wenn im beheizten Zelt der legendären «Hossa Bar» Live-Musik für Stimmung sorgt. Transfers, Gondelbahn, Getränke und Speisen sind kostenfrei. Zwei Mal freuen sich Kulmund Kronenhof-Gäste in der Wintersaison 2014/15 über erstklassigen, zwanglosen Sport- und Kulinarikgenuss vor einmaliger Kulisse – am 26. Februar und am 4. April 2015.

On the 26th of February and the 4th of April 2015, only guests of the Kulm Hotel St.Moritz and the Grand Hotel Kronenhof Pontresina are allowed to ski down the longest illuminated ski piste in Switzerland during its glistening evening splendour, a distance of 4.2 kilometres from the Murtèl middle station to the Surlej valley station.

Before the guests start to swish down the mountain they will be served gourmet delicacies in a cable car high above the treetops, which offers a unique view across the magnificent night illuminations of Upper Engadine. Then it’s time to ski down from the middle station, 840 metres above sea level, to the valley where the fun continues with live music in the heated tent of the legendary “Hossa Bar”.
