T’was The Night Before Christmas

T’was the night before Christmas when all through the house not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that Saint Nicholas soon would be there. The children were nestled all snug in their beds, while visions of sugarplumbs danced in their heads, and Mamma in her kerchief and I in my cap had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter, I sprang from my bed to see what was the matter. Away to the window I flew like a flash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow gave a luster of midday to objects below, when, what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeer; With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name: “Now, Dasher! now, Dancer! Now, Prancer! and Vixen! On, Comet! On Cupid! On, Donner and Blitzen! To the top of the porch, to the top of the wall! Now, dash away, dash away, dash away all!” As dry leaves that before the wild hurricane fly, when they meet with an obstacle, mount to the sky, so up to the house-top the coursers they flew with a sleigh full of toys, and St. Nicholas, too. And then in a twinkle, I heard on the roof

prancing and pawing of each little hoof. As I drew in my head, and was turning around, down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot; a bundle of toys he had flung on his back, and he looked like a peddlar just opening his pack. His eyes how they twinkled! his dimples how merry! His cheeks were like roses, His nose like a cherry. His droll little mouth was drawn up like a bow, and the beard on his chin was as white as the snow. The stump of a pipe he held tight in his teeth,and the smoke, it encircled his head like a wreath. He had a broad face and a little round belly that shook, when he laughed, like a bowl full of jelly. He was chubby and plump, a right jolly old elf. And I laughed when I saw him, in spite of myself. A wink of his eye, and a twist of his head, soon gave me to know I had nothing to dread; he spoke not a word, but went straight to his work. And filled all the stockings; then turned with a jerk, and laying his finger aside of his nose. And giving a nod, up the chimney he rose. He sprang to his sleigh, to his team gave a whistle, and away they all flew like the down of a thistle. But I heard him exclaim as he drove out of sight, “Happy Christmas to all and to all a good night.”

hen you think back on your favorite holidays, what do you remember most fondly? Whatever it is, it probably involves some sort of yearly tradition. It’s doing the same things year after year, and being able to compare how much you and your family have grown and changed in the 364 days in-between, that really strikes the nostalgic chord of the season. There are still plenty of ways to make sure that the time between Thanksgiving and Christmas is full of joy, love and fun. Here are some Christmas traditions — feel free to take these ideas, put your family’s twist on them and start using them in your own annual celebrations. From now until Santa’s arrival (Christmas advent calendar, anyone?), these ideas are packed with good cheer. It’s these little things you do to celebrate that your family will look forward to all year long, since the holiday rituals you start today become the good memories your family has in the future. Create a Countdown Routine Sure, you can buy an advent calendar based on your kids’ favorite activities and watch with joy as they get a new goodie each day. But it’s even more fun to make your own. “Each year fill an advent calendar tiny toys, sweets and speical notes. Try this: Fill 24 bags, boxes or drawers with love notes, candy, small toys or ideas for good deeds they can do that day to spread good cheer. Or, keep special ornaments aside in a box and add a new one to the tree each morning! Send Cards or Letters Your holiday cards just might be the only postal mail you send all year, so make sure they’re a big to-do! You can DIY a card, or get the whole family together for a photo (that actually has everyone in it, smiling, hair brushed and in nice clothes — for once). You can also figure out a fun way to display the cards you receive.

Make the Tree Special When it comes time to trim the tree, find a way to commemorate a milestone or memory from the past year. Making DIY ornaments together is another way to sneak some bonding time into a busy time of year. And don’t forget the tree topper!

Host a Movie Marathon There’s a Christmas movie out there for every personality. Do you like romance? Hallmark Christmas movies have you covered. Action? There’s always Die Hard or Batman Returns. Kids at home? There are tons of Christmas movies for kids to choose from. A common favorite is National Lampoon’s Christmas Vacation — try wearing sweatshirts with funny sayings from the movie for our holiday portrait, In December, have every person in the family pick a favorite, then either take a weekend to binge them all, or watch one a week leading up to Christmas. You can even design a bingo card to keep track of movie tropes. Spread a Little Magic With Elf on the Shelf No doubt, come December your feeds are filled with elves that get up to mischief in the night. But whether you commit to an Elf on the Shelf or find another way to bring enchantment into the house — like hiding and “discovering” a Santa Key that lets Santa into the house on Christmas Eve — do something that keeps them guessing about the nature of Santa’s magic. Get In Touch With Santa A letter to the North Pole is probably the best (and most long-lasting) way to get in touch with St. Nick. But, in this digital age, of course you can reach out through an app, too. Portable North Pole lets Santa send a personalized video message, or just text him with Santa’s Magic Phone and he’ll respond. Either way, you get a helpful reminder to stay on the “nice” list.

Go Caroling (or Host a Sing-Along at Home) There are so many good Christmas songs, and you only get one season in which to play them over and over and over again. (Unless you’re one of those people — the kind that listens to holiday music yearround.) Print out some lyrics, fire up a playlist and get ready to belt out your favorites. (Bonus: This is definitely something you can do over Zoom with far-flung relatives.) Play Holiday Hide-and-Seek Hide a pickle ornament on the Christmas tree for the family to find. The origins of the Christmas pickle tradition are murky, but experts believe that the glass gherkin ornaments have been hung on American Christmas trees since the late 1800s. But gets everyone involved trying to find it.

Look for Decked Halls on Christmas Eve Take a stroll and check out all the decorations. Walk the neighborhood to look at lights and sing your favorite Christmas songs,” It helps to move around a bit before you settle in for the big Christmas Eve feast. But Leave Room for Dessert! Whether it’s a family cookie recipe or holiday cupcakes, you have to leave something sweet for Santa — with plenty of portions put aside for you, of course. Teach Your Kids About Giving Back Each year have your child pick out toys they own but don’t play with anymore to give to other children as extra presents when Santa visits them, placing them in a special sack waiting for Santa under the Christmas tree. It teaches them that the best part of Christmas is not receiving gifts, but given them to others, especially those in need. You can also get them involved with the local toy drive and pick out a gift to donate. Build Memories One Gingerbread House at a Time Make gingerbread houses together. It’s fun and it allows you to teach the lesson that at the core we are all the same, but there are little things that make us special.

Make Place Settings Special Have your child get involved with setting the table for Christmas Dinner. Make Christmas Crackers for everyone to pull, also place cards with everyone’s names on it. Pass Down a Family Recipe Every family has a special recipe that has passed through many generations and kitchens. Make the holiday season special by getting together and teaching the next generatiuon how to make it. Wear Matching Christmas Jammies Matching or coordinating holiday PJs, heralded in many-a family photo and in song, makes for an extra pop in Christmas photos.

Show Gratitude It might be too much to ask overstimulated kids to sit and do hand-written thank-you notes when they’d rather be playing with their new toys (though that’d certainly be meaningful if you can get them to do it). But it’s not too hard to make sure that everyone takes a beat before dinner to be thankful for the good holiday — and year — they’ve had. Play a Game Together Until Late at Night Organize a marathon of your favorite board games, or DIY holiday twists on classic games like Pin the Nose on the Rudolph. Keep a running tally of who in the family is most victorious, and that person is Champion of Christmas ... until next year. Cook Together on Christmas Morning Opening up all those presents sure whips up an appetite. If you can tear the kids away from their new toys for a minute, have everyone help out in the kitchen and make breakfast. (Put the little ones in charge of the toast.)

Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, but as for me and grandpa we believe. She’d been drinking too much eggnog, and we begged her not to go. But she forgot her medication, and she staggered out the door into the snow. When we found her Christmas morning, at the scene of the attack, she had hoof-prints on her forehead, and incriminating Claus marks on her back. Now we’re all so proud of grandpa, He’s been taking this so well. See him in there watching football, drinking root beer and playing cards with Cousin Mel. It’s not Christmas without Grandma, All the family’s dressed in black and we just can’t help but wonder: Should we open up her gifts, or send them back? Send them back!!

loin until well-browned on all sides, including the ends, about 2 minutes per side (12 minutes total). Transfer to a plate. When cool enough to handle, snip off twine and coat all sides with mustard. Let cool in fridge. Meanwhile, make duxelles: In a food processor, pulse mushrooms, shallots, and thyme until finely chopped. To skillet, add butter and melt over medium heat. Add mushroom mixture and cook until liquid has evaporated, about 25 minutes. Season with salt and pepper, then let cool in fridge. Place plastic wrap down on a work surface, overlapping so that it’s twice the length and width of the tenderloin. Shingle the prosciutto on the plastic wrap into a rectangle that’s big enough to cover the whole tenderloin. Spread the duxelles evenly and thinly over the prosciutto. Season tenderloin, then place it at the bottom of the prosciutto. Roll meat into prosciutto-mushroom mixture, using plastic wrap to roll tightly. Tuck ends of prosciutto as you roll, then twist ends of plastic wrap tightly into a log and transfer to fridge to chill (this helps it maintain its shape). Heat oven to 425°. Lightly flour your work surface, then spread out puff pastry and roll it into a rectangle that will cover the tenderloin (just a little bigger than the prosciutto rectangle you just made!). Remove tenderloin from plastic wrap and place on bottom of puff pastry. Brush the other three edges of the pastry with egg wash, then tightly roll beef into pastry.

Candied Yams For many, candied yams are an indispensable part of the Thanksgiving meal, along with mashed potatoes and homemade cranberry sauce. We agree! Though candied yams might be super sweet on their own, they’re the perfect compliment to a plate full of savory dishes. Our version gets an added kick from bourbon—we think once you try them you’ll never want yams without it! Ingredients 1/2 c. dark brown sugar 1/2 c. orange juice 3 tbsp. butter, plus more for pan 1 cinnamon stick 2 tbsp. bourbon (optional) Pinch nutmeg Pinch kosher salt 5 medium sweet potatoes (about 3 lb.) Directions Preheat oven to 400°. Butter a medium baking dish. In a medium sauce pan over medium heat, combine sugar, orange juice, butter, cinnamon stick, bourbon if using, nutmeg, and salt. Stir to combine and bring to a boil, then reduce to a simmer and cook until it has thickened slightly, about 10 minutes. When reduced, remove and discard cinnamon stick. Meanwhile, prep potatoes: Peel potatoes and slice into 1/2” rounds, then layer in prepared baking dish. Pour thickened syrup over potatoes and cover dish with aluminum foil. Bake 30 minutes, then remove foil and bake about 50 minutes to 1 hour more, basting with sauce every 15 minutes. Let cool slightly before serving.

Honey Garlic Baked Cauliflower I can’t get enough of this honey garlic sauce. It’s savory, spicy, and sweet, all at the same time. And crunchy bites of cauliflower are the perfect vehicle for soaking up the thick sauce. The sauce is so versatile, too. Ingredients 1 small head of cauliflower cut into bite sized florets 2 cups panko bread crumbs cooking oil spray 2 large eggs whisked 2 scallions finely sliced Sauce 6 tbsp honey 4 garlic cloves minced 1 tsp onion powder 6 tbsp water + 2 tsp cornstarch 1 1/2 tbsp low sodium soy sauce 1/2 tbsp sriracha sauce

Instructions Preheat oven to 350°F. Line a large baking sheet with parchment paper. Spread panko crumbs in a thin even layer across the surface of the baking sheet. Spray panko crumbs with cooking oil spray. Bake crumbs about 5-7 minutes or until golden brown. Set whisked eggs aside in a small bowl. Line another large baking sheet with parchment paper. Dip cauliflower in egg mixture and then shake a few times so that excess egg drips off. You don’t want to dampen your breadcrumbs with excess egg because then they won’t stick to the cauliflower. Then place into sheet with panko crumbs. Cover cauliflower with panko, pressing the crumbs gently against the cauliflower to help them stick. Place coated cauliflower on empty prepared baking sheet. Repeat until all cauliflower is coated. Bake for about 15-20 minutes or until cauliflower is cooked and the coating is a dark golden brown. While the cauliflower is cooking, make sauce on the stove. In a small bowl, completely dissolve cornstarch in water and set aside. Add all sauce ingredients except the cornstarch +

water to a small pot or saucepan. Bring to a gentle simmer and stir a few times until ingredients are mixed. This should only take a few seconds. Then add cornstarch water to the sauce. Stir immediately to dissolve cornstarch into the sauce. Stir occasionally and let sauce come to a simmer (make sure to stir otherwise the cornstarch will clump up) and cook until sauce starts to thicken (about 2 minutes). Allow sauce to cool a few minutes and thicken even more. Drizzle over cauliflower. If you wish to completely coat cauliflower in sauce, it’s best to double the sauce and brush it on with a pastry brush. Garnish with scallions. You most likely won’t need all of the panko breadcrumbs, but to ensure the cauliflower is completely coated it’s easier to start with more than you need. The recipe makes just enough sauce to drizzle over a small head’s worth of cauliflower florets. If you are using a medium or large head of cauliflower or you wish to coat the cauliflower completely in sauce, you should double the sauce. If you make any adjustments to the sauce (i.e. add more soy sauce or other liquids) you may need to also add more cornstarch to thicken the sauce. Remember to dissolve any additional cornstarch in a little water before adding it.

Ingredients 6 oz. cranberries, thawed if frozen (1 1/2 cups) 3/4 c. cranberry juice cocktail 1 cinnamon stick 2 (3-inch) strips lemon peel, plus 3 tablespoons lemon juice 2 3/4 c. granulated sugar, divided 1 (6 ounce) box liquid pectin Directions Line bottom and sides of an 8-inch square baking pan with plastic wrap. Blend cranberries and cranberry juice cocktail in blender until smooth. (You should have about 1 ½ cups puree). Combine cranberry puree, cinnamon stick, lemon peel, 2 tablespoons lemon juice, and 1/2 cup sugar in a medium saucepan. Cook over medium-high heat, stirring constantly, until mixture comes to a simmer. Add 1 3/4 cups sugar and pectin. Reduce heat to medium and cook, stirring constantly, until candy thermometer reaches 225ºF, 10 to 15 minutes. Remove from heat, immediately remove cinnamon

Cherry and Pecan Divinity Ingredients 1 (6-ounce) jar maraschino cherries, drained and chopped 2 1/2 c. granulated sugar 1/2 c. light corn syrup 2 large egg whites, at room temperature 1/4 tsp. kosher salt 1/4 tsp. cream of tartar 1 1/2 tsp. pure vanilla extract 1 c. chopped toasted pecans

speed to medium-high and gradually drizzle hot syrup into egg whites in a thin, steady stream, 1 minute. Increase speed to high and beat until candy is beginning to lose its gloss and holds its shape when dropped from a spoon, 4 to 6 minutes. Immediately stir in vanilla, pecans, and cherries. Working quickly using 2 spoons, drop candy by heaping spoonfuls onto prepared baking sheets. Let stand at room temperature, uncovered, overnight. Store at room temperature in an airtight container up to 2 weeks.

Directions 1. Place maraschino cherries on a plate lined with paper towels; blot dry. Line baking sheets with parchment paper. Stir together sugar, corn syrup, and 1/2 cup water in a saucepan. Bring to a boil over medium heat. Cook, without stirring, until a candy thermometer reads 260°F, 8 to 9 minutes. Meanwhile, beat egg whites, salt, and cream of tartar with an electric mixer on medium speed until stiff peaks form, 3 to 4 minutes. Baileys Chocolate Pretzel Sundae 4 scoops ice cream (French vanilla or your favourite flavour) 4 oz Baileys Original Irish Cream A handful of chocolate covered pretzels (or any of your favourite toppings – be creative!) DIRECTIONS Place 2 scoops of ice cream in a glass. Pour 2 oz of Baileys Original Irish Cream over ice cream. Smash pretzels and sprinkle on top of sundae.

Ingredients 4 cups Whole milk 2 tbsp Sugar 1/2 Vanilla bean or 1 tsp vanilla 6 oz Dark chocolate (60%) 1 tsp Sea salt 4 oz Bourbon 2 oz Frangelico 2 oz Irish cream Marshmallows

Directions: In a small sauce pan heat milk, sugar, salt and vanilla over medium-low heat until sugar and salt are completely dissolved. Make sure the milk does not come to a boil. Add the chocolate in pieces, whisking until completely incorporated. Remove from heat. Once removed from heat, stir in bourbon, frangelico and Irish cream. Serve immediately with marshmallows.
