À LA CARTE DINING
hoppin’ into the new year Hoppin' John is a meal typically eaten on New Year's Day and is said to bring good luck and prosperity in the year ahead. Many of us have heard of it, but what is it? And what is the story behind it? Hoppin' John originated in Charleston, South Carolina; however, it has become a popular dish enjoyed by many nationwide. If you eat leftover Hoppin' John the day after New Year's Day, then the name changes to Skippin' Jenny since one demonstrates their
frugality determination. Eating a bowl of Skippin' Jenny is believed to even better your chances for a prosperous new year! The earliest recorded recipe for Hoppin' John can be traced to the cookbook The Carolina Housewife written by Charlestonian Sarah Rutledge in 1847. The original recipe called for one pound of bacon, one pint of peas, and one pint of rice cooked in a single pot. While early versions contained red peas or cowpeas, black-eyed peas are most commonly used. Some are cooked all
in one pot and some are cooked on their own then ladled over the rice (as in BCC's Assistant Restaurant Chef Daniel Nosek's favorite recipe listed below). Most notably, in Chef Daniel's recipe, he uses Carolina Gold Rice, which is cooked to al dente, dried back out in the oven, then butter is added, gravy made from the black-eyed peas and the pea mixture are then spooned over the rice. However it's made or served, Hoppin' John is always a hit for any New Year's Day celebration! ◆
HOPPIN’ JOHN RECIPE FROM THE KITCHEN OF ASSISTANT RESTAURANT CHEF DANIEL NOSEK

INGREDIENTS
DIRECTIONS
2 quarts Chicken Stock 1 cup Dried Black-Eyed Peas 11/2 cups Onion (diced) 1 cup Carrots (diced) 11/2 cups Celery (diced) 2 cloves Garlic (minced) 1 Bay Leaf 10 sprigs Thyme 1 Jalapeño (minced) 2 pinches Kosher Salt 4 cups Water 1 tbsp Cider Vinegar (to taste) 2 tbsp Scallions (thinly sliced) 1 tsp Kosher Salt 1/4 tsp Cayenne Pepper 1 cup Carolina Gold Rice 1 tbsp Unsalted butter 4 tbsp Unsalted Butter (cubed)
1. Soak peas in a pot of water in fridge overnight 2. Bring stock to simmer in small pot 3. Drain peas and add to stock along with the onion, carrots, celery, garlic, bay leaf, thyme, jalapeño, and salt. Cook peas, partially covered over low heat until soft (~1 hr). Season to taste with salt 4. Drain peas and reserve cooking liquid. Measure 1 cup of peas and 2 cups of liquid for gravy. Return remaining peas and liquid to pot to keep warm 5. Bring water, salt, and cayenne pepper to boil in large saucepan over medium-high heat. Reduce to medium, add rice, stir once and bring to simmer. Simmer gently, uncovered, stirring occasionally until the rice is al dente (~15 minutes) 6. Drain rice in a sieve and rinse with cold water. Spread the rice on a rimmed baking sheet and dry the rice in a 300° oven, stirring occasionally for 10 minutes. Scatter the butter evenly over the rice and continue to dry it, stirring every few minutes for about 5 minutes. All excess moisture should have evaporated and the grains should be dry 7. GRAVY: Put 1 cup of peas, 2 cups of cooking liquid, and butter into a blender and blend until smooth. Add vinegar to taste 8. Use a slotted spoon to transfer the peas to a large serving bowl, add rice and carefully toss. Pour gravy over top and garnish with scallions

Unlike most cleanse programs that focus on expensive juices or pills, this plan focuses on whole foods and nutrient-dense superfoods. We will be eliminating common causes of inflammation like meat, dairy, processed foods, caffeine, sugar, salt, oils, additives, and fillers. We'll take a whole body, whole food approach, from the inside out. We address the mindset, meditation, exercise, and self-care routines. Results will vary from person to person. However, people who have followed this detox have experienced increased energy levels, better digestion, glowing skin, overall better mood, improved sleep, weight loss, and reduced sugar cravings—to name a few.
PHASE 1: Pre-Cleanse Prep (7 Days)
The pre-cleanse is about committing, setting your intentions, shopping for cleanse-friendly foods, and beginning to ease your body into the full cleanse
PHASE 2: The Cleanse (7 Days)
During the cleanse, you will follow the simple elimination diet plan and body practices such as exercise and self-care
PHASE 3: Reintroduction (7 Days)
You will reintroduce foods back into your diet one by one to identify food sensitivities and intolerances, and create a maintenance eating plan that best serves you
WEEKLY ZOOM GROUP SESSIONS
Mondays | January 10, 17, 24, 31 | 7:00pm We will do one Zoom call with the group each week to discuss challenges, ask and answer questions, and have accountability for our actions.
This program does not require you to purchase any products like supplements or powders—just the food during the cleanse. I recommend picking up a dry skin brush and a journal if you do not already have these items on hand. ◆ If you are pregnant, breastfeeding, or taking certain medications, please consult your doctor before starting this program. OPENING YOURSELF UP TO THE NEW YEAR By Rebecca Printen, Therapeutic & Alignment Yoga Instructor If you’re in the habit of setting new year’s resolutions, re-think it from a yogic perspective. In yoga, we have Drishti—a gazing technique used to draw the mind inward. What if this year, instead of setting a resolution, you set a Drishti of sorts? Deciding on what we want to spend our time looking at rather than declaring what we must do or change about ourselves. Here are some examples: • Instead of saying, “I resolve to make more time for myself,” say “I resolve to set my Drishti on the time I already have, and taking some of that time for my well-being.” • Instead of “I resolve to take criticism with more of an open mind,” say, “I resolve to be more confident.”
For this kind of resolution to happen, all you have to do is to set your Drishti and keep looking with sustained interest, and then wait for what is already present to reveal its true form. Of course, sometimes changes do need to be made, and the new year is a good time to start fresh, but instead of demanding ourselves to make changes, can we look closely, stay focused, and invite change with softness and ease. ◆

GOLF
TIPS from the
PROS REPLACING YOUR GOLF GRIPS By Travis Peters, Director of Outside Golf Services Believe it or not, wear and tear on your golf grips can have an adverse effect on your game. Sometimes you don’t realize how worn your grips are until they are replaced. Grips are what connect a golfer to their clubs. Over time, heat, sweat, UV rays, oils, and dirt can wear away at your grips. ◆
THE TELLS
HOW OFTEN
If you know what to look for, it’s relatively easy to determine whether your grips are worn and need to be changed. When a grip looks shiny or is hard and cracking, it’s a good sign it needs to be repaired. You may notice extreme wear where their thumbs are placed on the top half of the grip.
The frequency in which you have your clubs re-gripped is dependent on how often you golf, your grip pressure, the weather, and how or where you store your clubs. A good rule of thumb is to replace your grips each year. If you are an avid golfer, it is recommended that you re-grip your clubs two to three times a year. An avid golfer can be defined as someone who is on the course four times a week along with practice rounds. It is also recommended that all of your clubs are re-gripped at the same time so your grip is consistent.
WHERE Book an appointment today! Contact our Director of Outside Golf Services Travis Peters at tpeters@bcc1898.com or 386.365.4571 with your club repair or re-gripping needs. All services are conveniently offered on-site at Five Farms. Our services include, but are not limited to: • • • • • • • • • 10

GROUNDS
PRESERVATION OF THE
American Elms: AN UPDATE
By Cathy Wagner, CPH, Director of Horticulture
Air-spading revealed abundant fine root growth within the mulch panel, which is promising for recovering where root pruning was necessary. Luckily, most of the roots were located within the top 12" to 18", which allowed the pipe to be carefully inserted underneath. It was a tedious and labor-intensive process that the pipe crew had never experienced before. However, they were fully committed and dedicated their efforts to guide the pipe around the critical roots. Sometimes the long pipe had to be cut into smaller pieces and refit together underneath where roots were especially dense. Where unavoidable, arborists cleanly cut roots that were directly in the way of the 8" pipe. Roots that are cleanly cut (not pulled and torn, as in conventional excavation) are more likely to show healthy regrowth following construction. The whole process took a little over two weeks.
Construction at our Five Farms clubhouse is well underway, and all disciplines continue to work closely with BCC Horticulturists and consulting arborists to protect the American Elm trees in each phase. From the beginning, temporary construction fencing and speciallyengineered access roads were installed to limit the area of disturbance and mitigate compaction while still allowing construction access within the critical root zone (CRZ). Once pipes were installed, the trenches were backfilled using the same soil that had been removed. The trenches were only lightly tamped to avoid damaging roots. Instead, subsequent rainfall and freeze-thaw allowed the trenches to settle naturally. The trench lines will be topped off as needed with topsoil and sodded when the weather allows.
In November, the teams began the first phase of invasive site work within the CRZ of the Elms. Drain lines for the stormwater management system needed to be installed between trees in two places, then joined and run downhill where they combined into subsurface infiltration tanks between the first tee and fairway of the East. To preserve the critical Elm roots, specially trained crews employed soft trenching techniques instead of conventional trenching. The trenches were “dug” using pressurized air-spade to blast away soil and a vacuum truck and hose to remove debris from the trench and save for backfilling. The process was closely monitored by our consulting Urban Forester, and arborists trained in root preservation were on-site to pin back fine roots for vacuum access and perform selective root-pruning, as necessary. 12
January 2022
The next phase impacting the Elms came in mid-December, when steel beams for the additions were installed using a crane. For best access without affecting the Elm roots, it was necessary to lift beams over the building through the tree canopy. Consulting Urban Forester, trained arborists, and BCC staff worked together with the crane operator and construction crews to selectively prune or pull back branches for clearance during installation. We strive to keep the membership informed of our efforts to preserve these invaluable trees throughout the implementation of Phase 1 of the Lifestyle Facilities Master Plan. For more in-depth information regarding tree preservation during the construction process, please direct any questions to Cathy Wagner at cwagner@bcc1898.com. To receive weekly updates on Phase 1 progress, subscribe to the BCC Lifestyle Facilities Master Plan blog at bccmasterplan.com. ◆
RACQUETS
WHAT TO LOOK FORWARD TO IN 2022! Dear Members, As we celebrate the new year, I wanted to take a moment to inform members of what the Racquets Department has planned for 2022. From the Racquets Banquet to new programming and merchandise—exciting things are on the horizon. Saturday, February 26, marks the return of our Racquets Banquet: Smash & Bash. This event celebrates all things Racquets at BCC, including awards for the past year, acknowledging key performances, showcasing what’s on sale for the next year, giveaway prizes and surprises. So whether you play tennis, pickleball, paddle, squash, or all racquets sports at BCC, this is an event you don’t want to miss. Registration is available on the Club Calendar. As we get closer to the outdoor season, members can look forward to an improved Junior Program with detailed instruction. The program will be fun for our juniors and put them on the path to developing a well-rounded game to gear the students towards tournament level, high school competition, college, and beyond. Members can look forward to improved warm-up clinics for our interclub teams. Instructor run warm-ups can ensure all of our teams are ready for their match. The correct warm-up can give us that initial momentum to carry through into match play and achieve stronger results. Fitness programs–‘Not your average cardio’ will be coming in 2022. This program will involve racquets specific resistance work coupled with agility, non-stop movement, music, and fun.
These classes will combine staff from the Fitness & Wellness and Racquets teams to perform this platinum level portion of the program. This coming season members can expect to see a revitalized social event calendar in all of our racquets sports. We will be offering a variety of competitive, social competitive, and casual events throughout the year. USTA events for adults and juniors, Ladies’ Night Out events, Men’s drop-ins, Junior Socials, Summer Kickoffs, Member-Guest events, Club Championships, and more. I am proud to say the Racquets Committees and the Racquets Department have worked cohesively to bring about the event calendar. The Tennis Pro Shop at Five Farms will continue to be a onestop shop for racquets equipment and service. Additionally, members can look forward to a variety of products and apparel to suit all their needs. Brands such as Lacoste and Tecnifibre will be added to our offerings. If you need whites, the Pro Shop can accommodate. I am very excited for this year. 2022 is set to be a fantastic year for the Racquets Program, and as always thank you for your support of Racquets at Baltimore Country Club. ◆
