02 | Step-by-Step Method 1. Rinse and cook the quinoa Rinse quinoa thoroughly under cold running water. Combine it with the water in a small saucepan and bring to a boil.
2. Simmer until tender Reduce the heat to low, cover and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
3. Rest, fluff and cool Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork. Spread the quinoa in a shallow container or wide bowl and refrigerate until completely cool, about 30 minutes.
4. Prepare the chickpeas and vegetables Drain and rinse the chickpeas, then pat them dry. Dice the cucumber and halve the tomatoes. Gently blot excess moisture from the cut vegetables.
5. Make the lemon-herb dressing Whisk olive oil, lemon juice, minced garlic, oregano, salt and black pepper in a small bowl or jar.
6. Assemble the salad Add the fully cooled quinoa, chickpeas, cucumber, tomatoes, parsley and feta to a large mixing bowl. Pour over the dressing and toss gently until combined.
7. Portion for meal prep Divide into four airtight containers. For the best texture over several days, keep the dressing separate and add it shortly before eating. Refrigerate promptly.
