DAD’S MEATLOAF WITH TOMATO RELISH {{ ingredients }} Tomato Relish: Extra-virgin olive oil 1 onion, finely diced 2 garlic cloves, minced 2 bay leaves 2 red bell peppers, cored, seeded, and finely diced 2 tomatoes, halved, seeded, and finely diced 1/4 cup chopped fresh flat-leaf parsley 1 (12-ounce) bottle ketchup 1 tablespoon Worcestershire sauce Sea salt and freshly ground black pepper Meatloaf: 3 slices white bread, crusts removed, torn into chunks by hand 1/4 cup whole milk 1 1/2 pounds ground beef 1 pound ground pork 2 eggs Leaves from 2 fresh thyme sprigs Salt and freshly ground black pepper 3 to 4 bacon slices {{ directions }} Preheat the oven to 350 degrees F.

2

Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. medic91 1.com Simmer the relish for 5 minutes

to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish. Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together. This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small “hamburger” patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning. Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise. Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it’s baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist! To review the entire recipe and for photo credit, visit foodnetwork.com

As previously noted, the latest Performance Pay Tracking Period began on July 1st. We are striving to meet the Patient Satisfaction goal of a ≥ 65% rating (experience as “Excellent”). In order to create a comfortable margin of performance, while continuing to improve the patient experience, we would like to share some feedback from recent patient focus groups. The two areas that patients value the most are: 1. Communication from the treating crew: “Explain treatment options and procedures” “Provide reassurance and compassionate communication with the patient”

SEPTEMBER 2014

2. Setting clear expectations: “Set transport length expectation” “Set a triage level expectation before arriving at the hospital”

VitaMin Vital health information in a minute

Give your budget a checkup Are your finances healthy? Take this quick test: 1. Do you live within your means (spend less than you earn each month)?

* Yes * No * I don’t know

2. Do you pay more than the minimum payment on credit cards?

* Yes * No * I don’t know

3. Do you have emergency savings to cover at least three months of living expenses?

* Yes * No * I don’t know

4. Are you saving for future goals, such as retirement?

* Yes * No * I don’t know

5. Do you feel secure (not stressed) about your finances?

* Yes * No * I don’t know

If you answered yes to all: You’re making strides for a healthy financial future. Now let’s keep the momentum going. Try something new to give your budget a boost. If you answered no or I don’t know to any of the above: A few changes to your financial habits may help you feel more secure, so you can sleep better at night. Not sure where to start? Read on for more tips. Get fit with your finances

›

Track expenses to find out where your money goes. Looking at your monthly spending on coffee shops or dining out can help you zero in on areas to trim.

›

Save money in your sleep. Set up automatic transfers into a savings account each month – it’s easy and painless. Even small amounts add up over time, and it’s there in case of an emergency.

› ›

Squash impulse spending. Give yourself a “waiting period” for purchases over a certain dollar amount. With a 24-hour waiting period, you’ll think twice before buying on a whim. Pay down debt. Check the interest rates on your credit cards and loans. Pick the loan with the highest interest rate and make extra payments so you can

pay it off faster. You’ll pay less in interest – and that’s more money in your pocket.

›

Expect the unexpected. Short- and long-term disability insurance can help protect your finances if you’re sidelined by a serious illness or accident.

›

Focus on the future. Do you want to take a vacation this summer? Buy new furniture? Pay off a car loan? Having big goals in mind will give you motivation to get your budget in shape.

›

Get help when you need it. Financial stress can weigh you down. It can affect your work, your relationships and even your health. Feeling stressed? Seek advice from a financial advisor to help you get back on track.
