THE ULTIMATE SMOKED BUFFALO CHICKEN WINGS INGREDIENTS • 12 - 18 Chicken Wings Sauce: • 1 cup Frank’s Red Hot sauce • 2 tablespoons butter INSTRUCTIONS Chicken Rinse wings in cold water and pat dry.

Place a drying rack over a cookie sheet and place wings on top.

Place into a refrigerator, uncovered, for up to three hours to dehydrate. This is crucial to the end texture of the chicken.

This process will prevent the wings steaming when you cook it, which creates a rubbery texture. We’re going for crispy here, trying to emulate the texture of fried wings.

When ready to cook, preheat smoker to 225 degrees. Put wings on the smoker for one hour.

Then increase heat to 325 and let wings cook another 30 minutes, then flip for remaining 30 minutes. Conditions can change which can lead to more time. The key is to not pull the wings off until you get that crispy outside.

Sauce Prep sauce just before the wings come off the smoker.

Bring butter and sauce to simmer (not to a boil!!). Remove from heat. Place into a bowl.

Remove (chicken) from smoker and toss immediately with sauce.

Serve with your favorite dipping sauce.

As previously noted, the latest Performance Pay Tracking Period began on March 1st.

We are striving to meet the Patient Satisfaction goal of a ≥ 65% rating (experience as “Excellent”).

In order to create a comfortable margin of performance, while continuing to improve the patient experience, we would like to share some feedback from recent patient focus groups.

The two areas that patients value the most are: 1. Communication from the treating crew:

“Explain treatment options and procedures”

“Provide reassurance and compassionate communication with the patient”
