ARANCINI WITH PEA RISOTTO 400g carnaroli risotto rice 1 banana shallot 150ml of white wine Olive oil 50 salted butter 2 litres chicken stock (simmering) 50g Parmesan (grated) 300g garden peas 250 ml double cream Salt and pepper Panko breadcrumbs 2 eggs 120g plain flour l Begin this dish a day in

advance of serving. Start with the pea purée - blanche the peas in boiling water for 3 minutes. Add cream, blend and sieve before covering and setting aside. l To make the risotto, add olive oil to a large, high-sided frying pan. l Finely chop the shallots and add to the oil on a medium

heat. Cook slowly until translucent. l Add the rice and stir until coated in the oil and slightly translucent (approx 3-4 mins). Increase the heat slightly, add the wine, get it to a simmer and reduce by half. l Add a ladle of stock, stirring gently but continuously. When stock is absorbed add another ladle and repeat.

l When rice no longer has a

chalky bite to it, remove it from the heat, add the butter and Parmesan. Stir through and put a lid on to rest for 2 minutes. Add the pea puree and stir through. If serving as a risotto add some stock to loosen if necessary. Perfect risotto should have a porridge-like consistency. l For arancini, cool the risotto. Form small balls. Dip in flour, beaten egg and panko and fry at 180 degrees until golden brown and hot all the way through.


SESAME RAMEN WITH CARAMELIZED PORK Serves 2 For the paste 6 tbsp tahini 1 tbsp Thai red curry paste 2½ tbsp soft brown sugar 2 tbsp light soy sauce 1 tbsp grated ginger (approx. 6cm) For the pork 2 spring onions, finely sliced 1 tsp grated ginger 1 clove of garlic, crushed 1 red chilli, finely sliced 200g pork mince, preferably 15–20% fat content 2½ tbsp honey 1½ tbsp fish sauce For the noodles 2 large eggs 800ml chicken stock 100g tenderstem broccoli, cut into 5cm pieces 2 portions of ramen or medium egg noodles 1 carrot, shredded with a julienne peeler or cut into matchsticks 1 spring onion, finely sliced l Whisk the paste ingredients

together and divide between two serving bowls. Cook the noodles according to instructions then rinse well under cold water. Set aside. l Heat a large frying pan over a medium heat and add 1 tablespoon of oil. Add the spring onions, ginger, garlic and chilli, and stir-fry for 1 minute. Add the pork, turn up

to medium-high and fry for 4–5 minutes, breaking up the meat as you go, until browned and starting to dry out. Mix in the honey and fish sauce and stir-fry for a further couple of minutes. Turn off the heat. Set aside. l Fill a small saucepan with boiling water and bring to the boil over a medium heat. Add the eggs and cook for 6 minutes, then immediately remove and run under cold water for a minute or so. Peel and cut in half.

l Bring the stock to the boil in

a large pan. Add the broccoli and cook for 2–3 minutes, until just done. Remove and set aside. Add the cooked noodles and turn down the heat – you want them to reheat, not cook. Add a ladle of stock to each serving bowl and whisk to combine, then stir in the remaining stock. Add the noodles, and top with the caramelized pork, the halved soft-boiled eggs, the broccoli and shredded carrot. Garnish with spring onions.

SCALLOP AND BLACK PUDDING WITH POTATO AND GREEN APPLE Serves 4 4 king scallops in the shell 400g black pudding, diced 400g potatoes, diced – good frying potatoes work best Sml bunch flat leaf parsley, shredded 1 green apple, julienned 3 cloves garlic, chopped 25g butter, unsalted l You can get scallops in

the shell from most good fishmongers – they will be happy to shuck them for you. If you fancy giving it a go yourself it is very easy. You will need a table knife and a spoon. You will notice that the scallop shell has a rounded and a flat shell. Insert your knife into the hinge of the shell and twist to pop open. Run your knife along the inside of the flat shell to separate it from the meat. l Once you have the shell completely open, take your spoon and scoop everything out. You now need to remove the white meat and the roe from the skirt. I do this by separating them with my fingers. Bin all excess material so you are left with white juicy meat and roe. Give them a quick clean under cold water. l Pre-heat your oven to 200°C. Place the diced potato into a frying pan and fry until golden and crisp. 6 foodies

Make sure that the potatoes have started to go soft before adding the black pudding. l Add the black pudding and cook until it starts to crisp up, then add the garlic and cook for a couple of minutes. l Put the potato mixture on to a tray and pop it into the oven until the potatoes are cooked. l Meanwhile, give your pan a clean, pop it back on the stove, and once hot add a little oil. l Next place each scallop into the pan. Try not to shake or shoogle the pan, as you are looking to create lots of colour on the scallop before turning it. Once you have coloured both sides of the scallop, reduce the heat and add your butter and a

squeeze of lemon juice. Baste the scallop in the butter and lemon. Once cooked remove from the pan. l Now take the potatoes and the black pudding out of the oven, mix in the shredded parsley and double check the seasoning. l Next fill each of the empty shells with the potato and black pudding mixture. Top each one with a scallop and finish with your apple.

SCALLOP, DASHI, KIMCHI For the scallop brine 1000ml water 50g salt 10g lemongrass 5g kafir lime For the scallop skirt butter 500g butter 250g scallop skirt 1 lemon 8g salt For the kimchi dressing 6 bunches spring onion 1 tub gochujang paste 6 thumbs ginger & 6 thumbs galangal, peeled and chopped 70ml fish sauce 100g spring onion, sliced For the dashi 150g shitake mushrooms 100g kombu seaweed 100g bonito flakes 6L water For the kafir lime oil 100g kafir lime leaf 100ml grapeseed oil To assemble 1 scallop, 60g, brushed with scallop butter 15g spring onion kimchi 40ml dashi 5ml kafir lime oil 5g caviar l For the brine, boil the salt,

water and aromats. Chill and reserve until needed. l Open scallops, remove and wash the skirt – reserve. Remove the roe and rinse

lightly. Brine for 20 mins.

l For the kafir lime oil, place oil

and leaves in the thermomix at speed 10 for 1 min, then blitz at speed 6, heat 70ºC for 10 mins. Chill In a bowl over ice, then strain through muslin, hang in a piping bag to allow the oil and water to split, drain the water and keep the oil. l To assemble, place scallop brushed with scallop butter in the centre of the dish. Garnish with spring onion kimchi, dashi, kafir lime oil and caviar.

lightly oil and season the skirts then roast for 20 minutes at 180ºC. While roasting, dice the butter and add to a warm pan. Cook until the butter browns and stop with the juice from the lemon, add the salt then the roasted skirts. Infuse for 60 mins. Strain. l For the kimchi dressing, blend all ingredients apart from the spring onions, then mix in spring onions. Season with salt. l For the dashi, soak the kombu in cold water overnight. Place the soaked kombu and mushrooms in a pan with the water. Warm gently, never boiling, infuse for 30 minutes, strain and add the bonito flakes. Infuse for a further 30 minutes and strain again.

SAVOURY CRUMBLE Serves 6 For the topping 75g plain flour 75g oats 100g stuffing mix 100g vegetable/baking butter spread ½ tsp salt ½ tsp black pepper For the filling Knob of vegetable/baking butter spread 1 large onion 1 large carrot 2-3 large potatoes (500g) 100g mushrooms 75g peas 100g chicken-style pieces 1 tbsp onion gravy granules 250-300ml boiling water ½ tsp salt 1 tsp sage Nutritional yeast l In a medium bowl, mix all

of the topping ingredients together until resembling breadcrumbs. Set aside. l Cut the carrot and potatoes (leaving skin on if preferred) into cubes of approximately half a centimetre. Dice the onion. l Preheat the oven to 180ºC. In a large frying pan, melt the butter on a medium-high heat. Add the potatoes, carrots and onion to the pot and cook for 10 minutes, stirring regularly. 8 foodies

l Meanwhile, roughly cut the

mushrooms into quarters. Add them to the pan with the peas, chicken-style pieces, gravy granules, water, salt and sage. l Cook for a further 5 minutes, stirring regularly. Add more water as necessary to keep the sauce at a consistency you like. l Pour the filling mix into a large ovenproof dish and spread it to the edges. Sprinkle the crumble mix evenly over

the top. Finish with a topping of nutritional yeast. l Bake for 20-30 minutes, until the top has turned golden.

GIN & CITRUS CURED TROUT, BITTER LEAVES, OYSTER CREAM, BLOOD ORANGE DRESSING 500g trout, thick end of the fillet, pin-boned and skinned 20ml gin 1 lemon, zest only 1 blood orange, zest only 60g sea salt 40g caster sugar For the blood orange dressing 1 lemon, juice only 1 blood orange juice only Double the volume of juice of vegetable oil Equal to volume of juice of extra virgin rapeseed oil 1 tsp runny honey Salt to taste 1 star anise For the oyster cream 4 large rock oysters 10g parsley 1g salt 10ml gin 150ml neutral oil 15ml lemon juice 1g xanthan gum 150g creme fraiche To serve Picked bitter leaves such as radicchio and chicory Pickled and fresh radishes l First make the cure mix by

blending the lemon and orange with the sugar and salt.

Brush the gin directly onto the trout flesh, then cover the fish in the cure mix and leave in the fridge for 3.5 hours. Wash off carefully and dry. Cold smoke the cured tail and belly for 45 minutes. Dice into evenly sized cubes. For the blood orange dressing, juice the fruit and weigh, pass into a jar. Add double the volume of juice in veg oil. Add equal volume of juice of rapeseed oil. Add the honey. Toast the star anise lightly and add to the jar. Season. Shake well and check for balance. If too oily add more juice, if too acidic add a touch more oil. Leave to infuse for a minimum of 2 hours. For the oyster cream, weigh the oysters and their juice to 100g. Combine the oyster, parsley,

salt and gin, then blend until smooth, slowly adding the oil to emulsify. Add the lemon juice and xanthan gum. Pass through a fine sieve then mix with soured cream. To serve, lay cured and smoked trout on a plate and dress with blood orange dressing. Scatter over a few bitter leaves and pickled and raw radish slices. Put a neat spoonful of oyster cream to one side of the plate.
