T

his year the world’s meat/ poultry industry will continue to grow, according to the USDA and WHO. Chicken will remain in its never-wavering upward cycle. Pork might suffer slightly from its own success as China’s own farms increase production meaning less import, while beef remains popular with good Asian growth.

Much of this increase in production has been fueled by world grain surpluses, lowering the cost of feed, and by two years of decent weather in grain/livestock areas.

You’d think by now we’ve have this all down to brass tacks. Our earliest ancestors date back to 6 million years – with modern humans to 200,000 – and during that entire period, we’ve been meat eaters. Granted, while during most of that time we were more into gnawing than sous-vide, we loved – and still love – our meat. So, why do we fret every year as to how the meat/ poultry market is changing?

Because it is. And, if you do not acknowledge this and plan accordingly, you’ll be left behind.

In my own lifetime, I’ve seen poultry go from an expensive once-a-week meal, to now being cheap enough to eat daily – and some people do. On the flip side of that, thanks to some clever marketing, chicken wings, which once butchers couldn’t give away, are now as expensive as chicken breast in the USA. Pork went from being fatty and flavorful, to the other ‘white meat’ in the late 1980s – tasting like a dried-out memory – to being back to fatty and flavorful. While beef remains a favorite around the world for taste, it’s beginning to take a side-of-the-

plate role with Millennials as opposed to the center-plate star for Boomers and the Silent Generation.

The irony of it all is; meat/poultry has never been cheaper nor produced to such a high standard, and yet throughout most western nations, consumption is slipping.

So, do you go after that elusive foreign market and possibly get shot down by a trade war, global competitors, or discarded trade deal? Or do you think closer to home?

MPJ suggests that while an eye should always be kept on the export market, you should invest and adapt first to your local market that will always be with you, especially to up and coming consumers.

For the Boomers price has always been the driving force behind their decision to pick up a pack of pork chops, which is why in the USA the Wednesday newspaper, with all its supermarket ads, is the most popular edition of the week. With Millennials, however, if you want to make the sale, it’s not only price but also preparation ease, time spent in the kitchen, and whether they have the knowledge to cook the dish.

Millennials, too, might like variety and are willing to try new things, they balk, however, buying unfamiliar meat/poultry items that come with a much higher price

than other new food experiences.

What California’s lamb producer Superior Farms is pushing with Millennials is lamb burgers or meatballs using ground (minced) lamb. Ground lamb is inexpensive compared to lamb chops or legs, but after Millennials gain confidence with a lamb burger – which anyone can make – they are more willing to move up the chain.

While some believe that one of the key highways to the Millennial market is transparency and ‘story’ of product, allowing a product scan to show the farm the meat came from, how the animal was raised, etc, MPJ believes this is a waste of money on the producers’ part. The seafood industry has been promoting this for years through the Marine Stewardship Council and Monterey Bay Aquarium so shoppers can be sure to buy fish from only sustainable stocks. Have you ever seen a shopper text either to check on their cod?

No, neither has MPJ. Indeed, in the UK numerous supermarket chains have taken the complete opposite tack and have created fictional farms to show where their meat/ poultry and vegetables come from. While the UK media picked this up for a day, by the next it became old news and there has been no mention since of this practice.

Another leaf that the meat industry can take from the seafood is to create more value-added meals. Once frozen fish consisted of blocks of fish or fish fingers, today value-added drives the industry.

With meat, while a Boomer might scorn a meal kit as a paint-by-number dish, for Millennials they’re great news, having all the ingredients and recipe in a box.
