El Mayor’s Fine Tequila Tradition

Once when Grace Gonzalez was in preschool the teacher asked all the students what they wanted to be when they grew up.
“I looked at the teacher and said, ‘I’m going to make tequila.’ So they called my mom,” Grace recalls with a warm, easy laugh.
Grace’s mother had to explain to the school that her father Rodolfo’s business — and his art — was making fine equila, using the same traditional processes and 130-year-old heirloom yeast strain his own grandfather had perfected.
“I wanted to do anything he was doing,” Grace says. “He would take me to the agave field. He was a very present father. I wanted to be like him.”
Throughout her formative years, Grace’s aptitude as a foodie and passion for the craft of distilling grew, but her father required her to work outside the family business for at least two years before joining.
At 24 she went to work for the family distillery in Jalisco, Mexico, eventually worked as a brand ambassador, and then at 30 turned her passions for the family business, food and wine, and her highly developed sense of taste and smell toward the role of master distiller.
“I don’t only want to sell it,” she recalls saying. “I want to make it with my own hands.”
These days, Grace, with her father, Rodolfo, and brother, Paul, runs the company and shares her passion for
tequila with the world, including the Green Mountain State, which she says is a natural fit or El Mayor.
On Vermont
Grace went to school in New England and spent years skiing Vermont’s mountains and getting to know the state.
While tequila is often associated with warmer climates, Grace says she finds it the perfect spirit for cold, mountain

The Jalisco Painkiller
This little drop of sunshine is just what the doctor ordered.
2 ounces El Mayor Reposado Tequila
3 ounces unsweetened pineapple juice
1 ounce cream of coconut
1 ounce freshly squeezed lime juice
Combine ingredients in a cocktail shaker with plenty of crushed ice. Shake well and pour all contents into your glassware of choice. Garnish with pineapple fronds and nutmeg.
Espresso Diablo
This late-night delight blends the awardwinning Añejo with smooth espresso.
2 ounces El Mayor Añejo Tequila
1 ounce espresso liqueur
3 dashes chocolate bitters
2 dashes red chili powder
Combine all ingredients into a shaker tin with ice. Strain into a coupe glass. Garnish with whipped cream and chocolate shavings.

She’s learned that Vermonters know what they like.
“They have an elegant palate and do their due diligence,” Grace says. “They are concerned with where (the spirit) comes from, and what its story is.”
For El Mayor, that story is very much a story about the land, and the heritage, of the brand.
The Importance of Agave and the Land
With tequila, as with wine, terroir matters. The El Mayor agave plantations are in the highlands, more than1,600 meters above sea level. This stony soil, Grace says, doesn’t look as pretty, or produce as pretty-looking agave, as lower, gentler climes.
“But the acids that we are looking for are there,” she says. In that tough landscape, the agave’s growth is limited. “When the plant struggles to grow amidst the rocks, the sugar content is higher.”
Just like Grace and her family, many of the jimadors who walk the fieldsto select perfectly matured agave, can trace their work back generations.
“We select the best of the best. We only use fresh agave, and it’s cooked within 24 hours of harvesting,” she says. “If you think about the high temperatures of Mexico, if we leave it around, the cooking process will start on the patio.”

Rodolfo Gonzalez is a very hands-on master distiller. Passionately overseeing the entire process from field o bottle, Rodolfo ensures every drop that leaves the distillery is nothing short of perfection. Rodolfo’s son, Paul, and daughter, Graciela, represent the fourth generation of Gonzalez distillers and the continuation of the family legacy.
From there, the plant goes through a fie-step milling system that gently squeezes the agave. Then it’s on to closed and controlled fermentation. This is important, Grace says, to deliver a consistent, high-quality product. The tequila next goes through two distillations — any more than that would begin to distill away the true experience of agave. “If we did a third,” Grace jokes, “you might as well drink vodka.”
The tequila is aged in white oak bourbon barrels from Kentucky, and later the barrels are rigorously blended to ensure consistent flvor in each bottle.
Types of Tequila
The length of the aging process determines the characteristics of the various tequilas El Mayor produces and are available in Vermont stores.
Blanco is clear and unaged “to show the world the true flvor of agave,” Grace says. This is Grace’s favorite because, without the influene of the barrel, it conveys the agave most strongly. She says you find in it noes of earthiness, spice, citrus and sweetness. She recommends it to gin fans.
Reposado spends a minimum of nine months in the barrel. It has a smooth, elegant feel, and Grace says you’ll taste notes of cinnamon, oak and vanilla. She says Scotch drinkers may prefer the reposado.
Añejo is aged for 18 to 36 months, while Extra Añejo is aged for a minimum of three and a half years. It’s darker than reposado and has notes of dried fruit, molasses and a little bit of caramel.
On Family and Giving Back
Whichever variety of El Mayor you choose, you can be sure it will be the same with each bottle you open. In addition to expert blending of barrels, the family protects the flvor in another way.
“We had to sign a document with my father that we will not change the recipe,” Grace recalls. “He said, ‘you know I’ll come back and haunt you (if you do).’”
“I’ve never met somebody who has more passion for what he does for a living than my father,” she says. As a result, “I don’t think there was a way of not falling in love with this.”
That love has carried Grace through the weighty challenges of succeeding and defining her spae in what is still a male-dominated industry.
“It’s very important to me to show other women we can do what we want. Even when it isn’t easy.”
Just as important to her is to continue to be a good steward of the gifts her family has been given and the land and people who have contributed to El Mayor’s success.
“One thing we owe to our country is to give back. Give back to the land, to the people who help you,” she says. “We are in a very blessed and unique position”

Local Ingredients at the Heart of the Vermont Spirits Industry
Distilleries have a long history in Vermont; one that’s inextricably interwoven with the products of Vermont agriculture.
Writing for the Mad River Distillery blog, author and Vermont historian Adam Krakowski describes a burgeoning distilling scene in the 19th century, with more than 260 active distilleries, their periods of operation tied to the seasons they could get the raw agricultural materials they needed, including barley, wheat, oats and cider.
Browse through any of the websites of Vermont’s active distilleries today (vermontdistillerstrail.com), and you’ll find that, while the seasonal limitations on their operations may have been overcome in modern times, their reliance on local produce remains.
As Caledonia Spirits’ website aptly sums up: “These smallbatch spirits are rooted in the land and celebrate Vermont’s rich crops and capabilities. They allow us to partner with small-scale local farms to create new and exciting products that support farms and push the boundaries of distillation.”
In celebration of that ethos, here are some cocktail and mocktail recipes that celebrate Vermont agricultural products either as cocktail ingredients or the ingredients in the foundational spirit, and the terroir that produces them.

Blueberry Lavender Bee’s Knees
One of my fondest memories is picking the wild blueberries that grew behind our place up in Barre when my two eldest kids were little. We had four woody acres and the berries grew in abundance on a rocky slope just above the house. No matter how many pints we picked, they were gone long before we had time to bake them into anything. I can still see my two-year-old daughter’s face, big, delight ed grin stained purple from devouring our haul. There probably would have been enough left to make the following cocktail, though!
2 ounces Barr Hill Gin
¾ ounce fresh lemon
½ ounce lavender honey syrup
4-5 fresh blueberries
Muddle blueberries and honey syrup together; add remaining ingredients; shake; double strain into coupe; blueberries for garnish.
Maple Old-Fashioned
Growing up in Dorset in the 1970’s, I remember plenty of sugar houses in the region, and we had neighbors who used to bring over a gallon or two of the good stuff each sprin. This supplemented the meager output of the old maple in our front yard enough so that, even though we didn’t have much money, I never had that “pretend” grocery store syrup until I was a teen ager. There’s nothing like the smell of Vermont maple syrup to evoke childhood, sugar on snow at my great-grandmother’s place, and an overall feeling of “home.” These days, I might be just as likely to savor it in a cocktail like the Maple Old-Fashioned as on pancakes.
2 ounces bourbon or whiskey
1 ounce Metcalfe's Vermont
Maple Liqueur
Dash of Angostura bitters
Cherry and orange peel for garnish
Combine ingredients in a rocks glass over one large ice cube, garnish and serve.

Coppers Sugarwood Negroni
Speaking of maple syrup, while you can certainly add it to your cocktail while mixing it up, it also serves as an ingredient in a wide range of Vermont-made spirits, including Coppers Sugarwood Gin, by Vermont Spirits.
2 ounces Coppers Sugarwood Gin
1 ounce campari
1 ounce sweet vermouth Orange twist for garnish
Combine gin, vermouth and campari over ice in a mixing glass. Stir until well chilled. Strain over new ice in a rocks glass. Serve with orange twist.
Marshmallow Smoke Out
We’re not done with maple syrup yet! Did I mention maple products are the third-largest agriculture product in Vermont, according to the state’s Agency of Agriculture and Food Markets? Back in 2020, Vermont created 51% of the total maple syrup produced in the United States. So even when the spirit isn’t Vermont made, odds are the maple syrup in the cocktail ought to be.

This cocktail reminds me of Vermont in two distinct ways. The name, Bushwacker, evokes my first job as a oung adolescent, working for my mother who was a land surveyor at the time. We did lots of bushwacking through Vermont’s hills, climbed over plenty of fences. (I learned something about how it feels to grab an electric fence at that time.) Beyond its evocation of the woods and fields of the Green Mountain State, this is the one cocktail on our list that uses Vermont’s single largest agricultural product: dairy! Just make sure that ou use in the recipe below is from a Vermont dairy farm.
2 ounces (¼ cup) aged rum (or white or dark)
2 ounces creme de cacao (white or dark; we used white)
Shaved chocolate or grated nutmeg for garnish
Add all ingredients to a blender and blend until smooth. Garnish with shaved chocolate or grated nutmeg, if desired.
MOCK TAIL
Apple Ginger Fizz Mocktail
No roundup of recipes highlighting Vermont agriculture would be complete without apples. Apple cider vinegar has a wealth of purported health benefits — t least according to the lore. But setting those aside, it’s still a perfect ingredient to add a bit of punch to an alcohol-free cocktail. The recipe below takes advantage of both apple cider vinegar and apple cider for a refreshing, zesty alcohol-free adult beverage.
3 ounces still apple cider
1 ounce freshly squeezed lime juice
6 mint leaves
1 teaspoon apple cider vinegar
Pinch powdered cinnamon
3 ounces ginger ale
Place apple cider, lime juice, cinnamon, apple cider vinegar and a few ice cubes into a cocktail shaker.
Crush the mint in your hands to release the scent and add to the shaker.
Shake until ingredients are combined.
Pour into an ice-filled glas, top with ginger ale.
Stir gently, garnish with mint and serve.
