Chill out capital Sydney loves Byron Bay and so does the rest of the world, which is no surprise to international hoteliers, John and Lyn Parché.

Since the dawning of the Age of Aquarius, Byron Bay has woven its magic over those who sojourn to Australia’s most easterly point — an area often identified as the “chill capital” of the globe. When entrepreneurs Gerry Harvey and Katie Paige discovered a 45 acre footprint of sub-tropical rainforest in Byron Bay, they contacted Lyn and John. “Gerry and Harvey Norman asked if we could prepare a feasibility study on Byron Bay to determine whether it was 3

suitable for a resort,” explains Lyn, “As a result The Byron at Byron Resort and Spa opened in February 2005.” The architecturally designed facilities were inspired by nature and built in harmony with the landscape. Situated on only ten per cent of the landholding, significant care was taken to preserve the unique rainforest and Lake Tallow environment. The grounds encompass a series of boardwalks linking to tranquil retreats including deluxe spa suites nestled in leafy habitat.

Our head chef Gavin Hughes sources seasonal ingredients from the Byron Bay Farmer’s Market and regional suppliers to create memorable paddock to plate dining experiences. He also takes guests on a complimentary tour to the market every Thursday to showcase the local produce and to stock up on supplies for the restaurant,” Lyn says.

Local and international celebrities who have stayed at the resort include Nicole Kidman and Keith Urban, Bob Dylan, Robert Plant and Elvis Costello plus former Prime Minister Julia Gillard. “The world comes to us. We have 40% repeat business and the biggest supporters are from Sydney. Sydney loves Byron,” Lyn confirms.
