CLUB UPDATES

Greetings and Happy Holidays! We have recently completed the renovations to the upstairs of the clubhouse and the results are stunning! The club’s dining area has been completely transformed with a modern elegant design that is sure to impress. The ballroom, Azalea, and Dogwood rooms have also undergone a complete renovation, with new flooring, lighting, and décor that create a warm and inviting atmosphere. The restrooms upstairs have also gone through a complete modernization and upgraded facilities. The new foyer is very welcoming and inviting. Please come out and see what has taken place. At this moment in time, the exterior painting is underway and will brighten the exterior. Plans are underway for the downstairs renovation and as soon as I have the details, I will share them with you. It is an exciting time at the club. We are proud to offer you these beautiful new spaces for dining and events. Whether you are looking to host a wedding reception, corporate event, or family gathering, the club’s dining area and ballroom are sure to impress. The holidays are just around the corner. This year we are open for a Thanksgiving feast. Join us for a sumptuous Thanksgiving buffet on November 23rd. We have a special buffet planned for you and your family to enjoy. Other special events this season include the Santa Brunch, Members Christmas Dinner, Sunday Christmas Brunch, New Year’s Eve Dinner, and more. Please keep your eye out for the Weekly Happenings email for all the details. We will be discontinuing Tuesday Takeout during the holiday season. I encourage you to order takeout off the dinner menu if you are one of the few regular members who order from the Tuesday Takeout menus. On behalf of the McConnell Golf family and Wilson Country Club, we would like to extend a big “Thank You” to all for your continued support. As in years past, we are asking you to join the holiday spirit and contribute to our Employee Holiday Fund. Contributing to the fund is a thoughtful way to show your appreciation to our heroes – our awesome staff members from the front of the house to the back of the house, and all those helping hands who work behind-the-scenes. Thank you. While contributing to the fund is voluntary, a contribution will be reflected on the October 31 statement cycle for your convenience. Adjustments to the funds received by November 30, 2023, will be reflected on your November 30th statement. COURTSIDE NEWS TURKEY SHOOT SOCIAL SATURDAY, NOVEMBER 18 | 10:00AM - 12:00PM Come and play in a tennis doubles round robin with the winner going home with a Thanksgiving turkey.

SATURDAY MORNING ROUND ROBIN Saturday round robin is every Saturday morning weather permitting starting at 10 am. This time will be through March 2024. No need to sign up, just show up and a doubles round robin will be organized. TUESDAY MORNING DOUBLES ROUND-ROBIN A Tuesday morning doubles round robin will be held on Tuesdays for the months of November & December. Both men and women are welcome. No need to sign up, just show up. Participation will determine the continuation of this round robin on Tuesday mornings.

HAPPY HOLIDAYS I would like to wish all the WCC members and their families a very Merry Christmas and Happy New Year. It is hard to believe that I am going on my 34th year here at WCC as your tennis professional. As always, it has been a privilege and honor to serve this club as the WCC tennis professional.

TENNIS AND PICKELBALL GUEST FEES Guest fees for tennis and pickleball are $10.00 per guest. A non-member can play as a tennis or pickleball guest one time per month.

WCC TENNIS COURT RULES Let’s review some basic WCC tennis regulations: Proper tennis attire is required on both clay and hard courts. No tank tops and cut-out t-shirts for men. Please enter your court from the nearest gate. Smooth-soled shoes are required for play on the clay courts. No bikes and skateboards allowed on the hard courts. Please be courteous and leave your court as you entered it. Throw trash in courtside receptacle. Please turn off all lights before you leave if playing at night. Court maintenance has priority on all courts.

- PICKLEBALL IS HERE The pickleball courts are on courts one and two of the hard courts. We are using portable pickleball nets. Your cooperation is expected and needed to keep these nets in excellent condition. Please do not move the pickleball nets.

PICKLEBALL LESSONS Pickleball 3 and Me: A little intimidated doing a private lesson alone. Book a private pickleball lesson and invite two of your friends to join you in the lesson. I will be the fourth and we will explore pickleball doubles. Pickleball 4 and Me: Book a clinic with 4 people and I will supervise and teach pickleball doubles with the 4 participants. TURF TALK

Even with summer behind us and the cooler temperatures that we have had as of late, the golf course maintenance crew has not slowed down. We have been busy getting fall fertilizer out and a gypsum application as well. Both things will help maintain the aesthetics of the course, the health of the grass, and the overall health of the soil. Outside of greens aerification and the previously mentioned, the crew has been hard at work catching up on maintenance on the beds throughout the course and the clubhouse. We have removed some shrubs and trimmed back others that were too close to the building so that the painters can paint the exterior. Our hope is to get these replaced soon after the painting has been completed. We will be cutting some dead trees throughout the course very soon and hopefully, that work will be completed by the time this newsletter is sent out. While some were lost to beetles, other trees died of causes beyond my understanding. Regardless, none of the trees in question will be a significant loss or alter the way the course looks or plays. I have been busy getting quotes together and gathering information that is needed to make decisions on the impending renovation of the course. KITCHENS CORNER Dear Members, We hope everyone is enjoying the new menus, specials, and atmosphere. Now that renovations are completed upstairs, we can start to enjoy some holiday fun and activities in the new spaces. Notable dates to remember for November will be our fall Member-Member Golf tournament and our annual Thanksgiving buffet. Both of these tend to fill up fast so get your reservations in to secure your spot. All other dates, menus, and times are listed for future planning. Hope to see you all soon!

Cookies of the Month November: Russian Tea Cookie Sam Tessman, Line Cook at Holston Hills Country Club "My mother makes these cookies every holiday season and it is just one of those things I look forward to each year. They are so tasty and are one of my absolute favorite things about the holidays." Ingredients:

Directions:

2 Cups Butter, softened 1. Mix vanilla, 1 cup of powdered sugar and butter in 1 Cup Powdered Sugar a large bowl until combined. Stir in flour, nuts 2 Tsp Vanilla and salt and continue mixing until a soft dough is 4 1/2 Cups Gold Medal™ All-Purpose formed. Flour 2. Preheat oven to 400°F. Roll dough into 1/2 inch 1 1/2 Cups Pecans, finely chopped balls and place on ungreased baking pan lined (pecans may be replaced for walnuts) with parchment paper 1 inch apart. 1/2 Tsp Salt 3. Bake for 10 minutes until cookies are set, but not Powdered Sugar for tossing browned. 4. Transfer to a wire rack to cool slightly. 5. While cookies are still slightly warm toss in powdered sugar.

December: Italian Ricotta Cookie Recipe Emily Montimurro, Pastry Chef at Porters Neck Country Club “This is my version of the Italian wedding/holiday cookie called “Tadal” which is traditionally flavored with Anisette and has a drier, crumbly texture. My Noni always made them, to the adoration and praise of family and friends. My grandmother was a painfully humble woman who shied away from any sort of compliment. Whenever she’d receive praise for these confections, she just shook her head and mumbled that they were just “stupid cookies.” Our family now refers to them exclusively as “stupid cookies” to this day. So as a pastry chef, this is my personal interpretation of them. I make them on holidays in reverence to that modest, selfless lady who was the first chef I ever idolized. To make them more shelf-stable and palate-friendly to adults and children alike, I created a recipe where ricotta cheese keeps them soft and chewy, and flavored them with vanilla. They lend themselves to any holiday, happy occasion, or cup of coffee.” Ingredients: 1 Pound Butter 3 1/2 Cups Sugar 4 Eggs 30oz Ricotta Cheese 4 TBSP Vanilla 8 Cups All-Purpose Flour 2 TSP Baking Powder 2 TSP Baking Soda

Glaze Ingredients:

8 TBSP Milk 3 Cups 10x Confectioners Sugar 1 TSP Almond Extract (optional)

Directions: 1. Cream butter and sugar. Add eggs, ricotta and vanilla. 2. In a separate bowl, combine flour, baking powder and baking soda. 3. Add dry ingredients to the ricotta mixture until fully incorporated. 4. Chill & scoop; Bake for 12-15 minutes at 350°F depending on size. 5. Allow to cool on sheets before transferring. 6. Mix glaze, making sure it’s not too drippy. 7. Spoon glaze over each cookie and don’t forget to add desired sprinkles or décor before it dries!

The dates for three PGA TOUR and Korn Ferry Tour events taking placing at McConnell Golf properties have been set for 2024. The Korn Ferry Tour kicks off back-to-back events at McConnell Golf properties with the Visit Knoxville Open at Holston Hills from May 23 - 26. Raleigh Country Club then plays host to the UNC Health Championship from May 30 - June 2. Sedgefield Country Club and the Wyndham Championship wrap up the trio of tournaments from August 7 - 11.
