CLUB UPDATE A MESSAGE FROM YOUR GENERAL MANAGER We hope everyone had a great summer and thank you for your support of our club activities. Both Men’s and Women’s Member Guest Tournaments were just completed and I would like to thank Justin Mathers and his staff for planning and hosting these fantastic events and Chris Chapman and his team for working around the clock to make the course in perfect shape. I also want to recognize William Davis & Chef Isaac and their respective staff for the tireless work that they performed during the event. Everyone went above and beyond to make the overall event a huge success and my hope is that we have more participants play next year. I want to take a moment to announce that one of our long-time servers, Hannah Ridenhour has been promoted as the Activities and Catering Manager. All catering and meeting inquiries should be directed to Hannah moving forward. Anna has made a career change and is now teaching 2nd grade for the Winston-Salem School District and we wish her well in her new endeavors. We are in the process of planning our holiday events (Thanksgiving & Christmas) and will have more information coming soon. Please ensure you come visit us for lunch and dinner and please make reservations, when possible, it helps us staff efficiently so we can take care of all our members who attend.

I am looking forward to finishing the season strong and continually making adjustments to make all of your experiences at Old North State Club memorable. David M. Wilson General Manager

OLD NORTH STATE OF MIND

ROASTED PUMPKIN SOUP WITH BACON AND THYME Ingredients:

3 pounds sugar pumpkin, seeded and halved 4 ounces thick-cut smoked bacon, cut into 1/4-inch pieces 1 small white onion, chopped 1 clove garlic, minced 1 tablespoon minced fresh thyme 1 tablespoon firmly packed light brown sugar 1/4 teaspoon white pepper 1/2 teaspoon freshly ground cinnamon 1/4 teaspoon freshly ground nutmeg 1/8 teaspoon cayenne pepper 3 cups low-sodium vegetable broth 1/2 cup heavy whipping cream Kosher salt Roasted pumpkin seeds, for garnish (optional)

Directions 1. Preheat the oven to 400º. Oil the inside of the pumpkin halves and season each with salt. Place the pumpkin halves cut side down on a baking sheet and bake in the oven for 30 minutes, or until the pumpkin meat is forktender. Remove from the oven. When it's cool enough to handle, use a spoon to scoop out the roasted pumpkin and set aside. 2. In a large pot, sauté the bacon over moderate heat, until it's crispy on all sides. Move the bacon pieces to a paper towel and set aside. To the bacon fat, add onion, garlic, thyme, sugar, pepper, cinnamon, nutmeg and cayenne pepper and cook for 3 minutes. Add the roasted pumpkin and broth, stirring to incorporate, then season with salt, and bring the soup to a boil. Reduce the heat to low and simmer for 20 minutes. Stir in the cream and let cool for 10 minutes. 3. Transfer the soup to a blender (or use an immersion blender in the pot) and puree until smooth. If needed, add additional water or broth to reach the desired consistency. Return the mixture to the saucepan and warm. Serve and garnish with roasted pumpkin seeds.

TEE IT UP A NOTE FROM YOUR DIRECTOR OF GOLF

A NOTE FROM YOUR COURSE SUPERINTENDENT

Greetings Old North State Members,

We are approaching our first winter with bermuda greens and it’s going to be interesting. Bermuda greens cannot tolerate extended cold temperatures (27ish degrees) and have to be insulated with tarp like covers to keep the ground temperature higher. Who knows, we may have a mild winter and never pull the covers out. Or we may have a harsh winter and keep them covered for several days at a time. There isn’t a set temperature for covering bermuda greens, variables such as the high temperature for the day or the low for the next night are part of the equation. Chances are we will have to cover the greens at some point and when we do the course will be closed. Once I determine it’s safe to remove the covers they will be strategically folded and placed behind the green until the weather requires they be covered again. The good news is when it’s cold enough for the greens to be covered, most of you would not want to be playing anyway.

The Golf Staff is excited to have the course open again! It’s great to see our members enjoying the renovations; we’ve heard nothing but good things about the changes. In October we held our Men’s Member-Guest Tournament with a record number of 130 players! Thirteen teams competed in the Shootout on the Eagle’s Claw to determine the winner. A bald eagle even flew overhead during the competition! Congratulations to Jeff Sepesi and Michael Shenk on their win after six shootout holes. Next up is the WGA Member-Guest which will feature an all pink Barbie Party theme. We have over 40 ladies participating! Who will win the trophy to display in their dreamhouse? Mark your calendars for the following events: November: 4-5 | All Member Club Championship 10 | One Day Member-Guest

I’m sure we will have mild days throughout the winter for you to enjoy the course. See you out there! Chris Chapman

December: 8 | Golf Shop Balloon Sale 9 | Tough Day Stop by the Golf Shop to shop or just to say “Hello”. We are putting out new merchandise daily and have a great selection of layer pieces for fall and winter. As always, thank you for your continued support of the Golf Team! Justin Mathers, PGA

RECREATIONAL NEWS A NOTE FROM YOUR DIRECTOR OF SPORTS & WELLNESS Happy holidays to our ONSC members! As we approach the Christmas season, it’s time to start thinking about those gifts for our loved ones. The Tennis & Pickleball Pro Shop has all your basic needs for the devoted player in your life. You can also get top of the line gear at our Online Pro Shop, which is linked under the Racquet Sports page of your member website. Need to brush up on your game? Lesson gift certificates would be a great little envelope to leave under the tree. As the cold weather starts to settle in, we will experience periodic court closures. The colder nights lead to soft and wet conditions on our clay courts. As the temps get below freezing overnight, it also pops our lines up, which have to be rolled down once conditions allow. Please stay upto-date on these conditions by using the court reservation dashboard. As always, please reserve your court online so that we can best “serve” you! Chris Callicutt

TENNIS, PICKLEBALL & BOCCE Please use your member portal to reserve courts online. Online reservations take priority over walk-ups. This short step lets our staff know that you're coming so we can serve you better. It also helps us keep track of our facility usage. Extensive court maintenance has been completed in order to get our courts back to quality you have come to expect. There are projects still being completed, and I hope that you can see a positive difference in your playing surface. To help keep our courts in pristine condition, please wear court specific shoes when playing tennis and pickleball. Running shoes, while comfy, tear up our courts worse than court shoes. The bocce courts are open for play. Equipment can be checked out at the Tennis Shop during business hours or inside the Activity Center after business hours. There's now a Keurig coffee pot in the Tennis Shop. Stop by and get that last pep in your step before you step on court.

As in years past, we are asking you to join the holiday spirit and contribute to our Employee Holiday Fund. Contributing to the fund is a thoughtful way to show your appreciation to our heroes – our awesome staff members from the front of the house to the back of the house, and all those helping hands who work behind-the-scenes. While contributing to the fund is voluntary, a contribution will be reflected on the October 31 statement cycle for your convenience.
