CLUB UPDATE

A MESSAGE FROM YOUR GENERAL MANAGER Happy early fall, As we strive to provide an exceptional experience for all our members, I want to highlight the importance of making reservations for club facilities and events. Reservations are essential in ensuring that we can offer the highest level of service and convenience to everyone. By making reservations: 1. Efficient Resource Management: We can allocate our facilities, staff, and other resources more effectively, ensuring availability and maintaining our high standards. This is also very helpful for holiday events and concert evenings. Chef Isaac orders food based on our reservations, and sometimes we have to set a maximum number of participants, so we don’t run out of food. We have seen a large number of reservations come in the day prior to events but making a reservation several weeks out helps us prepare all facets of the operation. 2. Enhanced Member Experience: With reservations, we can reduce wait times, prevent overbooking, and provide a more personalized experience, contributing to your overall enjoyment. 3. Operational Excellence: Advanced planning allows us to prepare adequately for your visit, ensuring that everything is in place for a seamless and enjoyable experience. We kindly ask all members to make reservations for dining, golf, tennis, and other club activities whenever possible. This small step greatly aids us in maintaining the quality and exclusivity that you have come to expect from our club. Thank you for your cooperation and continued support. I look forward to seeing everyone at the Club.

Cheers, David M. Wilson General Manager

A MESSAGE FROM YOUR FOOD & BEVERAGE MANAGER Greetings Everyone, There’s no better time to enjoy everything the club has to offer. We have an exciting lineup of events on the horizon, and we can’t wait to share them with you! Join us for our Labor Day celebration on August 30th where we will be hosting The Catalinas! This band is in the NC Music Hall of Fame, the NC Beach Music Hall of Fame, and has had many hit songs! This is a great end to the summer concert series. September also brings us the brewmaster from Highland brewing for the Brewer’s Dinner. In October, we are hosting our fall festival with an Oktoberfest theme, an Orin Swift wine dinner, and the Adult Halloween party! We are also glad to announce that Brian Sainte is returning to ONSC. We sold out last time to get your tickets early! We will still cap the event at 100 people. Purchase your tickets for a fun and laughter-filled night of magic.

FROM THE KITCHEN A MESSAGE FROM YOUR EXECUTIVE CHEF Hello Everyone, I hope everyone has had a chance to come and dine at the lake this year and enjoy our summer selections. Now, as the days grow cooler, we’re ready to bring you the cozy, hearty flavors of fall— soups and stews that warm you through, slow-braised and smoked meats, fresh local produce, and maybe a warm dessert or two to end the night just right. This fall is extra special for me as I celebrate four incredible years here at The Old North State Club. Over these years, I’ve shared countless meals, laughter, and memorable moments with you—our members, our friends, and our extended family. It’s been an honor to be part of your celebrations, your quiet dinners, and everything in between. I’m looking forward to being a part of year five at the lake. In that spirit, we’re refreshing our menu format to hopefully serve you even better. As always, expect seasonal variety, local flavors, and a little extra creativity on each plate—while still keeping your tried-and-true favorites close at hand. Here’s to another year of great food, great company, and unforgettable evenings at the lake! We appreciate every member and guest who takes the time to grab a bite to eat by the lake. We are trying our best to grow as chefs, and I hope it shows.

See you at a table by the lake, Isaac J. Spencer Executive Chef

WILD BOAR RAGU Total Time: 3½ Hours, Plus Overnight Marinating Yield: 4 First-Course Servings

Ingredients 1 Pound Wild Boar Shoulder or Leg, Cut Into 1- to 2-Inch Pieces 1 Rosemary Sprig, Torn in Half 4 Garlic Cloves, Peeled 2 Cups Chianti or Other Red Wine, or as Needed 3 Tablespoons Extra-Virgin Olive Oil 1 Small Carrot, Finely Chopped 1 Small Celery Stalk, Finely Chopped 1 Small Onion, Finely Chopped 1 Cup Canned Tomatoes, With Their Liquid 2 Cups Vegetable Stock or Water Tagliatelle or Other Pasta, for Serving

Instructions 1. The night before making the ragù, place the meat in a bowl with the rosemary, peppercorns, garlic, and enough wine to cover. Cover and refrigerate overnight. 2. Discard the rosemary and garlic. Drain the meat in a strainer set over a bowl, reserving the wine. In a Dutch oven over medium-high heat, heat the oil until shimmering, then add the carrot, celery, and onion. Sauté until softened, 3 to 5 minutes. 3. Add the meat and cook, stirring frequently, until all the liquid released by the meat has evaporated and the meat is browned, 10 to 15 minutes. Add the reserved wine and cook, stirring frequently, until the mixture is dry, 10 to 15 minutes. Add the tomatoes, breaking them up with a spoon. Add 1 cup of water, reduce heat to very low, and cook, partly covered, at a low simmer for 1 hour. 4. Add the vegetable stock and continue to simmer, stirring occasionally, until the meat begins to break apart, 1½ to 2½ hours. Remove from heat and, using a whisk or spoon, break the meat into very fine shreds. Serve, if desired, over tagliatelle or other pasta.

TEE IT UP A MESSAGE FROM YOUR DIRECTOR OF GOLF Greetings ONSC Members, I hope you have all had a wonderful Summer! It was great to see everyone enjoy the Golf Course! Thank you to everyone who participated in the Club Championship and CONGRATULATIONS TO ALL THE WINNERS! Hopefully September and October bring cooler air along with all the football. The Ladies Member-Guest highlights the month of September. We are looking forward to continuing to improve on the overall experience for you and your Guests! Please make sure you DO NOT miss out. We are still working on fitting days, and if the reps cannot find time to come out to ONSC…we will and can do it for you. We have ALL the major fitting carts other than Callaway. Please schedule a time to double-check if your clubs are right for you…that includes putters and wedges! The Fall 1-Day Member-Guest is scheduled for Friday, November 7. Teams of four players (at least 1-Guest) will compete in a gross and net game. The charity has not been locked down just yet. We have already started planning the 2026 Golf Schedule of Events. The final draft won’t be pushed out until around Thanksgiving, but the plan is to keep you all informed sooner than later. Last, but not least…Alex Stover was named Employee of the Quarter for ONSC. Great Job Alex!

See you soon! Justin Mathers, PGA Director of Golf

A MESSAGE FROM YOUR COURSE SUPERINTENDENT Fall is finally here, and it’s time to begin preparing all of our Bermuda grass, including the greens, for dormancy. There are three key tasks that we complete in the fall to promote green-up next spring: 1.Raise the height of all Bermuda except the rough. This allows the plant to store more carbohydrates to efficiently break dormancy next spring. 2.Apply a moderate amount of potassium to improve disease resistance and winter hardiness. 3.Apply fungicide to greens, tees, and fairways for spring dead spot disease prevention next spring. Get out and enjoy the course, the cool temperatures, and the colorful foliage.

Best Regards, Chris Chapman Golf Course Superintendent

FRANKIE’S FITNESS TIP OF THE MONTH Strength training and building muscle become increasingly important as we age, offering benefits that extend far beyond aesthetics. Regular resistance exercise helps counteract the natural loss of muscle mass and strength—known as sarcopenia—that typically begins in our 30s and accelerates after 50. By maintaining and increasing lean muscle, we improve mobility, balance, and functional independence, reducing the risk of falls and injuries. Strength training also boosts metabolism, which can help manage weight and body composition more effectively, while supporting healthy blood sugar regulation and bone density—critical for preventing osteoporosis. Additionally, it enhances joint stability, reduces chronic pain, and supports overall cardiovascular health. The mental benefits are significant too, with resistance training linked to improved mood, cognitive function, and confidence in daily activities, making it a powerful tool for aging well and staying active. We invite you to try any of our different fitness classes here at ONSC. All are designed to help you increase your muscle mass, while also having a great time and burning calories. First class is always free so come check out what we have to offer.

FITNESS CENTER Main fitness center at the Clubhouse is open from 5am-11pm daily with electronic access. If you would like access after hours, please contact Chris Callicutt to receive your invitation to download the Paxton10 app.

MASSAGE THERAPY Contact your therapist directly to schedule your time of bliss with our certified massage therapist. Crystal Forrest (704) 984-2553 Tiffany Wright Scaplen (336) 541-6954 Dates: Crystal: September 20-21, October 25 Tiffany: September 13, October 11

RECREATIONAL NEWS 2025 POOL SEASON INFORMATION

POOL RULES As another successful season comes to a close, we would like to thank you for a well-attended and fun pool season. A big thank you goes to our teams at ONSC and AquaTech who continue to strive to make your experience a great one. We look forward to more improvements in the offseason and welcoming you back next May!

POOL HOURS Effective Tuesday, September 2 - Sunday, September 28 Monday-Friday: Swim at own risk; no attendant; waiver required Saturday-Sunday: 12pm-7pm, attendant on staff

POOL CABANA HOURS: The Cabana will close for the season after Monday, September 1st

2025 POOL WAIVER: As we did in 2024, we are requiring all adults (members and guests) who use the pool to sign a waiver document. This is due to our pool facilities having “Attendants” rather than “Lifeguards.” We have made this into a digital document this season. Please check your emails and fill out the Google Form. You will only have to do this once. There will also be an iPad at the check-in station to complete it upon your first visit to the pool this season if you didn’t do so prior to your visit. Then you will simply check-in with the attendant each visit before enjoying your fun in the sun. Thank you for your understanding and cooperation.

Violators will be given a verbal warning for first offense and are subject to removal from premises and loss of pool privileges for second offense and beyond. Check in at attendant's table at main entrance before entering the pool. This includes all members, guests, and children. Obey Pool Attendant at all times. No running or horseplay. When using the slide, you must go down one person at a time, feet first, on your back/bottom. No personal coolers allowed with exception of children’s items. No glass bottles/containers allowed. No pets allowed. No child drop-offs. Children under 16 should have adult supervision at all times. No diving at any part of the pool. Be respectful of swimmers in lap lanes. Infants should wear appropriate swimwear to prevent bathroom accidents that would lead to pool closure. Intoxicated and/or boisterous individuals will be asked to leave. Pool may close without notice when deemed necessary for safety (weather, waste in water, accident, etc.)

POOL IMPROVEMENTS: Our goal is to completely resurface our family pool in the offseason so it will be glistening once you return next summer. We also acquired pool furniture from another club that we will be implementing to make your stay as comfortable as possible!

RECREATIONAL NEWS A NOTE FROM YOUR DOCKMASTER As summer fades and fall approaches, the air is a little less humid and a little crisper. The busy lake calms to a more peaceful and tranquil scene. Fall boating is probably the most enjoyable boating time of the year. The days aren’t as hot, but the water is still warm enough to enjoy swimming and wake surfing, and the fishing gets better. Fall also provides a great opportunity to correct any trailer issues you may have. We have already begun doing some trailer repairs. If you need any work done on your trailers—from new wood and carpet to new winch straps and wheel bearings—please contact the marina (336-461-4456) so we can schedule it. Our hours of operation will change as we enter the fall; I will list them below. Get out there and enjoy the lake during this amazing time—before you know it, winter will be here! We will also start winterizing after Labor Day, so if you don’t plan to use your boat or Jet Ski during the fall and winter months, give us a call and we will schedule it to be winterized for the season. Thank you, and I hope everyone has a great rest of the summer and early fall!
