MEMBERSHIP November is the month to remind us to be thankful for the many positive things and blessings in our lives. Mine would be my family, my husband, Chris, and two sons (Austin-16 & Parker-12). And of course, my work family, too! I know the everyday challenges and celebrations wouldn’t be the same without them all in my life. I’m truly blessed! And just maybe this will be the month that my boys will actually put away their clean laundry and put dirty dishes in the dishwasher! #BoyMom Let’s talk numbers. Over the past two months (September and October), we have welcomed 16 new members to the Holston Hills Country Club and McConnell Golf families. Twelve of them were from member referrals; talk about AMAZING! We are so thankful for you and so happy you are all with us. As of the end of October, that puts us at 85 new members. However, we have also said good-bye to 51 members over the past 10 months. Our retention rate is right around 91%. Please don't forget to check the HHCC Weekly Happenings email that goes out every Tuesday afternoon for upcoming events and important information, as well as the Holston Hills website and calendar. We have a busy November and December in store for you and your family. We look forward to seeing you at some of our upcoming events. LETTER FROM CHEF Fall has been in full swing here at Holston Hills. I hope you all have enjoyed the opening of the 19th hole. If you have not stopped by to check it out, it’s currently open Fridays at 4:00-7:00pm and Sundays at 11:00am-4:00pm. Come play some cards, hand shuffleboard, and relax with a cocktail and an appetizer. There is a limited menu available. As we get into the winter/holiday season, we will be hosting a number of events. Make sure you are checking the HHCC website calendar for additional information. We are excited about hosting our second Mixology Event, holiday-style with our own Cynthia Burrell. If you missed the first one, this is a fun class-style event where we walk you through how to make three cocktails. Our culinary team pairs a small dish with each cocktail. We will also be hosting some annual events, such as the Thanksgiving Day Brunch Buffet, Breakfast with Santa, Bucky’s Bikes, and the Holiday Jazz Brunch. We hope to see you and your family out at the club over the next two months. The recipe I’ve chosen for this edition is a great holiday appetizer. My personal favorite holiday side dish is green bean casserole. I’ve shared my recipe for that in the past and this is a fun twist on it. One year, my sister told me about making these, and they’re fun for a cocktail party when you can’t serve the whole casserole. The best part is that if you want to use frozen beans, you can just thaw them out, cut them into the small bite-sized pieces, and skip the blanching step. If you want them spicy, sub out pepper jack instead of cheddar, or add some diced jalapeño peppers to the onion mixture before you sauté. Green Bean Casserole Stuffed Mushrooms INGREDIENTS: 1/3 lb. Fresh Green Beans 1 lb. White Button Mushrooms (stem removed and set aside)
1 TSP Minced Garlic (1 clove minced)
2 TBSP Chopped White Onion 3 TBSP Unsalted Butter 2 TBSP Vegetable Oil
2 TSP All-Purpose Flour ½ Cup Whole Milk ½ Cup Shredded Cheddar Cheese ½ Cup French’s Fried Onions (crushed)
½ TSP Kosher Salt 1 TSP Fresh Ground Black Pepper
METHOD OF PREPARATION: Trim the ends off the green beans and cut them into small bite-sized pieces (about 1/4 inch in length). Bring a pot of lightly salted (2 TBSP) water to a boil and add in the beans. Cook for 2–3 minutes and transfer to a bowl of ice water. Remove the stems from the mushrooms and set them aside. Cut the stems into small dice. Cut the onion into small dice. In a sauté pan over medium heat, add 1 TBSP of oil and 1 TBSP of butter. Once the butter is melted, add the onion and mushroom stems. Sautee for 2 minutes while stirring. Add the garlic and lower the heat to medium-low. Continue to cook for 3–4 minutes until the onions are soft but not browning. Add in the remaining 2 TBSP of butter. Once the butter is melted, add the flour and whisk to combine. Once combined, add milk and whisk to form a thickened paste. Add green beans and stir in salt and pepper. Remove from heat and set into a bowl to cool. Place the mushroom caps into a large bowl, add the remaining 1 TBSP of oil, and toss to coat. Arrange mushrooms on a parchment-lined baking pan, stem side down, and place mushroom caps in a 350-degree oven for 5 minutes. Remove the mushrooms from the oven and flip them over. Fill mushrooms with the green bean mixture, then sprinkle with cheese, and top with crushed fried onions. Bake for 10–12 minutes until fully heated to 165 degrees.

From Women’s, Men’s, Juniors, and Future Birdies classes throughout the week, the Academy provided a fun way to get everyone on the golf course. Powered by the Operation 36 program, the HHCC Golf Academy met weekly from March to October for class and multiple times a month for 9-Hole Play Days to give many new golfers an opportunity to experience the golf course for the first time!

TENNIS MESSAGE FROM OUR TENNIS DIRECTOR... Hello Holton Hills CC Members!
HHCC Tournament Season We have had an amazing turnout for HHCC club tournaments this year. Our Men's and Women's Club Championships were so much fun to witness, as well as the Mixed Doubles Club Championships.
Fall is upon us and winter is coming! I want to start by saying how pleased I am with this past summer tennis season. We have had so many great events and I could not be happier with how this program is growing. I am now in my third year at Holston Hills CC as the Director of Tennis, and I have enjoyed every minute of it. I want to highlight some of the events we have had, along with what we have to come the rest of this year: Ladies Tennis Weekend at CCA We had an absolute blast at the ladies' tennis weekend in Asheville, NC. The Holston ladies played some great tennis and had an amazing time around the city as well! We are looking forward to having this event next year as well.
Upcoming events for November & December OLD NORTH STATE RETREAT We are having our first ever tennis retreat weekend at Old North State in November. These are events I have been working on for some time now. Please be on the lookout for next year, as we will be doing more of these interclub matches/trips! LADIES NIGHT and PIZZA with the PRO Our ladies nights have also been great times to play some tennis and unwind with some new and friendly faces. Our next ladies night will be November 8th from 5:00-7:00pm. Pizza with the Pro! Our final event of this season, will be Friday, December 1st, from 4:30-7:00pm. UTR Events at HHCC I will continue to run UTR events here at the club through the fall and winter. Please be on the lookout for these events, as they are great competition and a way to get some extra matches in. As I said before, I am so happy with the growth I have seen over the last 2 and a half years. We have the best membership here at HHCC! Please use this great fall weather the best you can and come out and play some tennis before we all freeze! I hope to see you all on the courts this fall, and GO VOLS!

HATHA YOGA CLASS THURSDAYS I 6:00-7:00pm & SATURDAYS I 10:00-11:00am $10 per class An introductory yoga class that is accessible to most people, this class follows an Iyenger-style format which is focused on form, detail, precision, and alignment. Suzanne teaches basic postures to help strengthen muscle and bone, improve balance, and promote flexibility in the body. The class generally moves at a slower pace with controlled movements and stretches that align with the breath. You can expect an emphasis on simplicity, repetition, and ease of movement. This is a foundational class that will help develop any beginner’s yoga practice while pose modifications can be instructed to create a more challenging practice for intermediate yogis. SEASON OF GIVING BUCKY’S BIKES SUNDAY, DECEMBER 3 | 11:00am-7:00pm (drop-off) Join us for our annual Bucky’s Bikes fundraiser for the Mission of Hope. Holston Hills CC will be accepting new bicycles and monetary donations to purchase bicycles. Monetary donations can be done via check or on your member account. Call Jim Disney at 865.523.4119 x1231, for more information. Bucky Jones, a former HHCC employee, believed that every child should have a Christmas present. For years, he would donate a bike to Mission of Hope in your name for your gift from him each year. Family and friends wanted to keep up the tradition after Bucky passed away. Last year, we received over 300 bikes to donate to Mission of Hope and Bucky’s Bikes is the largest donation source of bikes for MoH. Help us reach 350 or more!!
HARPER FAMILY CHRISTMAS DRIVE The Harper Family Christmas drive for Knox County Schools is going on its 10th year. Each year, we work with the school social worker from Mooreland Heights Elementary to bring Christmas to children whose families are just above the cut-off line to receive help from local charities. These are working families who would struggle to make Christmas happen for their children without our help. This year, we’ve added Sunnyview Primary and Chilhowee Intermediate School for a current total of 240 children. If a child in a home receives gifts, we also buy gifts for every child in the home up to their senior year of high school. We also have sponsors buy a new coat and a new pair of shoes for them as well. All gifts are due by the first week of December. If you are interested in sponsoring a student or two, please contact Nykky Harper, one of our HHCC Members and a Holston Hills resident, via cell # 865.789.1905 or email: Nykkyharper@gmail.com. Can’t sponsor a family right now? Here’s another way to volunteer... we will la need large rolls of Christmas wrapping paper, bags of bows and gift tags.
EMPLOYEE HOLIDAY FUND On behalf of the McConnell Golf family and Holston Hills Country Club, we would like to extend a big “Thank You” to all for your continued support. As in years past, we are asking you to join the holiday spirit and contribute to our Employee Holiday Fund. Contributing to the fund is a thoughtful way to show your appreciation to our heroes – our awesome staff members from the front of the house to the back of the house, and all those helping hands who work behind-the-scenes. Thank you. While contributing to the fund is voluntary, a contribution will be reflected on the October 31st statement cycle for your convenience. Adjustments to the fund received by November 30, 2023, will be reflected on your November 30th statement. The contribution will then be distributed among all Holston Hills Country Club employees throughout all departments.
