We will also change to our Spring Summer hours on March 10th which means an expanded Wednesday and Friday evening. Pasta Night in March will be Thursday the 12th and in April it will be on Thursday the 9th. Always our members favorites! Birthday Night for March will be Friday the 13th and in April will be on Friday the 24th. Please make reservations online, through the McConnell Golf App or by call Jim Disney, as these evenings fill up fast and we cannot guarantee a seat if you walk in. On April 3rd, we kick off our first Couples golf of the year. We are excited about the redesigned of this event, with the first one being a Masters theme. You definitely don’t want to miss it, sign up early! This Newsletters recipe come from one of our new menu items. It is our new Garlic and Herb Aioli. It combines the sweetness of Roasted Garlic with the fresh floral notes of Parsley. ENJOY! ~Patrick Budniewski, Executive Chef

GARLIC & HERB AIOLI INGREDIENTS 2 Cups Mayo 1 TBSP Roasted Garlic Puree 1 TBSP Chopped Parsley 1/2 TBSP Dried Chives ROASTED GARLIC 15 Garlic Cloves 1 Cup Canola Oil (use an oil with a high smoke point, not extra virgin) DIRECTIONS: Heat oven to 350 degrees. In a small oven safe container place the garlic and oil, the oil should cover the garlic. Cover the container with aluminum foil or a lid and roast for 30-45b minutes until the garlic is soft and tender but not burned. Cool the garlic and oil, drain off oil and save for cooking if desired. Smash garlic into a paste and store in refrigerator in covered container. In a medium sized mixing bowl add all ingredients and stir together. Taste and add salt and pepper if desired. Spread on bread for a sandwich, or use a dip for anything from fries, vegetables and even chicken or steak. Yields 2 Cups.

TURF TALK

KORN FERRY TOUR COURSE UPDATE - VISIT KNOXVILLE OPEN This May, Professional golf returns to Holston Hills Country Club as we host the VisitKnoxville Open. Planning for a tournament of this size is a big undertaking and we are doing our absolute best to balance Member play with Tournament Preparations. With the Tournament being in early May we are very weather dependent when it comes to the turf and the quality we can provide. Due to this we are going to be doing all we can to promote growth in the fairways, tees, and rough leading into the event. Below are the key dates for the VisitKnoxville Open Tournament preparations and we really look forward to seeing you at the Tournament. ·

April 20th - Carts need to remain on paths only. Over the three-week period prior to tournament we are going to keep carts strictly on the paths only. Our main goal is to promote the rough to grow out of dormancy along with the fairways. Giving the turf three weeks to heal from cart traffic is a big help when it comes to growth potential.

·

April 27th - Build out to start for Hospitality areas. Construction of Hospitality areas will be going on during Member play, but is really just limited to a couple holes. Large tents will be erected behind The 18th green area, to the behind of the 17th green, right of the 11th green, and in the large grass area by our current cart staging area. There will also be trucks unloading materials in the parking lot starting this week for the build out.

·

May 4th- Advance week, the course will be open like normal, just very busy week on course. This is our last week to do any final prep the Tour may require, plus busy week putting out hole signage, tee signs, etc.

·

May 9th (Saturday) – The course will be open a half day on Saturday. We will have a shotgun start that morning to get as many Members out on the course as possible. The Course will then close in the afternoon to allow the staff to work on course prep and to give the putting surfaces a rest from traffic leading into the Tournament. That afternoon the rope crew will also be here to starting roping off all the fairways. All of the holes will have the entire fairways roped.

·

May 10th (Sunday) – The Course will remain closed all day Sunday prior to Tournament. This is the last day to prepare course for the week. Rope crew will still be here working, all Tour trucks arrive this day, parking lot fencing to install at main parking lot. Lot going on this day.

·

May 11th -17th Course Closed for Tournament Week.

·

May 18th (Monday) – Members Tournament day. On Monday after tournament we will prepare the course like we have been doing for the Tour event so Members can play the course as it was set up for the final round.

~ Ryan Blair, Golf Course Superintendent

Every day there is an opportunity to make a difference and we’re excited about what 2020 has to offer! “I slept and dreamt that life was joy. I awoke and saw that life was service. I acted and behold, service was joy.” - Rabindranath Tagore

COOKIES OF THE MONTH

MARCH COOKIE OF THE MONTH: HEATH BAR COOKIE

APRIL COOKIE OF THE MONTH

By: Ron Gordils, Executive Chef at Old North State Club

By: The Easter Bunny

Growing up my great grandmother would always hand out Heath Bars for the holidays. That and a five dollar bill for every birthday, Christmas and even Easter card she would hand out. She has been gone for a few years now, but anytime I have a Heath Bar I think of her. This cookie is a delicious balance of cookie dough and crunch. ENJOY!

INGREDIENTS 2 1/2 Cups All-purpose Flour 1 teaspoon Salt 1 teaspoon Baking Soda 1 Cup (2 sticks) Unsalted Butter 3/4 Cup Brown Sugar 2 Eggs 3/4 Cup Granulated Sugar I teaspoon Vanilla 1 1/2 Cups Chopped Heath Bar (about 8, 1.4 ounce bars) 1/2 Cup Chopped Walnuts DIRECTIONS: Whisk dry ingredients: In a medium bowl, vigorously whisk together the flour, salt, and baking soda. Set aside. In a separate bowl, combine Heath Bar pieces and chopped walnuts. Set aside. Whisk butter, sugars, vanilla, then add eggs: In a large bowl, beat together the butter, brown and white sugars, and vanilla. Beat in the eggs one at a time. Make and chill dough: Add the flour mixture a third at a time, beating after each addition. Beat in the Heath bar walnut mixture. Chill cookie dough for at least 30 minutes - better an hour or longer. Spoon out dough balls onto a cookie sheet: Preheat oven to 350°F. On cookie sheets lined with parchment paper or Silpat, spoon out the cookie dough in small 1-inch diameter balls (size of a large marble). Leave ample space because they do spread. BAKE: Bake at 350°F for 10-12 minutes, until the edges are just starting to brown. Remove from oven and let cool for a few minutes.

INGREDIENTS 3/4 Cup Butter, softened 1 Cup Packed Brown Sugar 1/2 Cup Granulated Sugar 2 Large Eggs 1 teaspoon Pure Vanilla Extract 1½ Cups All-purpose Flour 1 teaspoon Baking Soda 1 teaspoon Ground Cinnamon 1/4 teaspoon Kosher Salt 1 Cup Packed Shredded Carrots 3/4 Cup Unsweetened Shredded Coconut 1/2 Cup Raisins 2 Cups Old-Fashioned Oats Cream Cheese Glaze: 1 Cup Powdered Sugar 4 teaspoon Milk

1oz Cream Cheese (room temp) 1/4 teaspoon Pure Vanilla Extract

DIRECTIONS: Preheat oven to 350º and line a baking sheet with parchment. In a bowl of an electric mixer, beat butter and sugars until light and fluffy. Add eggs, one at a time, until incorporated, then add vanilla. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Add dry ingredients to butter mixture until well-combined. Stir in carrots, coconut, raisins, and oats and mix until just combined. Scoop 1” rounds of dough onto baking sheet. Bake until golden, 15 to 18 minutes. Let cool. Make glaze: Beat together cream cheese, powdered sugar, milk, and vanilla until combined.
