IMPACT 250 CONTINUES SPOTLIGHT ON RESILIENT ENTREPRENEURS There’s a moment in every entrepreneur’s journey when the path forward isn’t clear. The capital isn’t there. The customers haven’t arrived. The business model that seemed bulletproof on paper fractures under the weight of reality. It’s those moments that separate the businesses that endure from those that don’t: the willingness to bet on yourself when no one else will.

Jesse Booker knew this when he walked away from a steady salary to buy Let George Do It. Chase Thomsen understood it when he traded the prestige of fine dining for breakfast shifts that would let him see his kids at night. Danelle Schlegelmilch learned it twice — first when she launched Passport PR, then again when she had to decide whether to give up or go all in after the pandemic nearly destroyed her industry.

These are the stories we set out to tell when we launched Impact 250 last April, and they’re the reason we’re continuing the project through at least April 2026.

For years, Midlands Business Journal has chronicled the region’s major commercial real estate deals, tracked the movements of executives at Fortune 500 companies, and analyzed the economic forces shaping our market. That coverage remains essential.

But Impact 250 gets to the heart of why Bob Hoig started the publication: to provide a platform for the businesses that create the backbone of this community, the small businesses in which the owner has a passion for their product.

Working with these businesses over the past year has been one of the most rewarding aspects of my role at MBJ. Getting to know the people at the heart of Omaha’s business community — their challenges, their pivots, their wins — has deepened our understanding of what makes this region’s economy work.

Some, like Patty Dudziak at Village Grinder, have been at it for more than 40 years. Others, like Mark and Michelle Brannen at Benson Bounty, are just over a decade into their business journey. What unites them is resilience. Stuart Kolnick moved five truckloads of inventory when downtown Lincoln became too expensive.

These aren’t accidents. They’re choices made by people who understand their markets, know their worth and refuse to compromise on what makes their businesses distinctive.

The businesses in this edition aren’t just surviving. They’re shaping Omaha’s commercial landscape, employing our neighbors and proving that buying local matters. Village Grinder became “the island in the oasis” during the pandemic because Dudziak stayed open. Benson Bounty shifted from farmers markets to national shipping because the Brannens weren’t afraid to pivot. These adaptations don’t happen by chance.

Finding Balance CHEF TRADES FINE DINING FOR FAMILY TIME AT BREAKFAST SPOT After 20 years of working late nights in upscale dining, Chase Thomsen sought a more subdued lifestyle, one in which he could spend evenings with his wife and children. So, he opened a restaurant that focused on breakfast and lunch, allowing him the family life he craved.

Thomsen originally started Saddle Creek Breakfast Club inside an old gas station in 2017.

In true Chase Thomsen style, Saddle Creek Breakfast Club wasn’t going to be a traditional diner emphasizing bacon and eggs, although the Saddle Creek Standard does cater to sausage/bacon, eggs and hash browns diners.

Thomsen created unique dishes that have remained popular over the years, such as chorizo burrito, featuring Mexican rice, scrambled eggs, pico de gallo, jalapeno and Monterey jack cheese. Even the ham-and-egg dish is a far cry from tradition, including shoulder ham, sweet onion

jam, baby Swiss cheese, toast and hollandaise.

“I thought I could kind of apply the dinner-style aspect of dining to breakfast, and maybe do something a little original,” he said.

That first year of business featured several hurdles, largely because of Saddle Creek’s immediate popularity.

“The original concept really wasn’t to be that wellknown or that busy, but we were right out of the get-go,” Thomsen said. “So there was a yearlong growing pain.

The entire first year consisted of restaffing, beefing up staffing and understanding the amount of product that needed to be produced and purchased. So essentially, that whole first year, the entire business model changed.”

Because of the restaurant’s popularity and his notoriety as one of Omaha’s best-known chefs, Thomsen acknowledged his struggle with sobriety a couple of years after opening Saddle Creek Breakfast Club.

“It was another relearning process of what my personal journey and the professional journey were and how they looked side by side,” Thomsen said.

Now in its eighth year, Saddle Creek Breakfast Club made a major move in mid-2025, relocating to Countryside Village near 87th and Pacific streets. The eatery nearly doubled its seating capacity from 36 to 65. He plans to add a 20-seat patio area, Thomsen said.

“Our revenue was capped down there,” he said. “We were doing the most that we possibly could. After COVID, just the expense of running a restaurant, we really needed to essentially generate more revenue.”

The intimate setting of the original location, initially a question mark, was proven by its instant success. Looking to replicate it at the new location, Thomsen said the new space created new opportunities.

“We’ve been able to kind of learn on a curve, just because we’ve always been this steady growth, so it’s not as daunting when we’re kind of like that,” he said. “It’s not as if we went from a 35-seat, not-high-volume, not-popular restaurant, to all of a sudden out here. We knew what busy felt like. We did add a day. We used to be open six days a week. Now we’re open seven.”

customers, as well as retaining its loyal ones, Thomsen said. It also gives Thomsen space to cater events, he said.

“We were cut off to a very large section of Omaha being down there,” he said. “This place worked out, just because it is where it is. We’re not too far west Omaha and Elkhorn, and we’re not too far downtown or midtown. So, accessibility was a big point.

Size was a big point.”

In the summer of 2024, Thomsen reached out to Angie Andahl with an offer she couldn’t refuse: come aboard as part-owner and chef. Andahl, who owns 15% of Saddle Creek Breakfast Club, specializes in vegan menus and serves as a chef. She studied at Metropolitan Community College’s culinary program and plays a major role in the restaurant’s operations, Thomsen said.

In reflecting on his journey, Thomsen said he would like to tell young chefs the recipe for running a business is to love what you do.

“I don’t know if I would give it to my younger self, but maybe perhaps to a younger person. If you’re not finding enjoyment in doing it, then the restaurant industry is an industry that will grind it out of you,” he said. “If you don’t like it, you don’t stand much of a chance in longevity terms. If I could have learned to trust other people earlier in the process, it would have made my life a lot easier. I could have probably avoided some personal pitfalls that I’ve experienced.”

Urban Farm Feeds Omaha

FAMILY CULTIVATES COMMUNITY WITH SUSTAINABLE AGRICULTURE Over a decade ago husband and wife Mark and Michelle Brannen made a decision that would change not only their small family but the lives of many in the Omaha community.

A desire to work from home and be present with their three small children combined with a brief stint working on an organic farm in Panama inspired Benson Bounty, a 1.5-acre family-run farm in the heart of Omaha. The couple offers a variety of fresh produce, youpick flowers and value-added products like jams, syrups and body care items.

Collaboration is key

Benson Bounty also hosts free educational classes where the Brannens pass along their knowledge and passion for agriculture, including offering tours to local students. As nonprofits like City Sprouts and the Big Garden partner on training and building on the spirit of community, Benson Bounty offers space to other entrepreneurs and makers, free of charge, to grow their business or provide complimentary services.

“One thing I’ve learned as an entrepreneur over the years is the importance of collaboration with other business owners. It might not be something that is our specialty but coming together can make us both more successful,” Mark said.

One such collaboration is with District 2 Floral, where community members learn to create floral arrangements utilizing flowers the Brannens grow themselves.

“We can always keep our head down and focus on our business but again I think we are stronger together,” Mark added.

A global shift

Like many other businesses in 2020, Benson Bounty’s business model had to pivot alongside the rest of the world in response to the global pandemic.

“Prior to 2020 the majority of our sales consisted of face-to-face interactions at the farmers market, but we were forced to change our business model to focus more on wholesale clients purchasing produce and putting more energy into our online sales,” Mark said.

This pivot created demand for more curated goods accounting for a large portion of their current sales and Benson Bounty began shipping nationally, often for customers with friends and family in Omaha looking for unique gifting opportunities with a local touch.

Lasting legacy

As their family looks to the future, Mark is proud that Benson Bounty continues to provide for their family and wants to continue growing and expanding on the company’s most lucrative offerings.

“We’ve been around for 10 years and are stronger than ever.

Next we’d really like to either build or get access to/buy a commercial kitchen to expand our value-added products,” he said.

When thinking of advice he’d offer to other entrepreneurs, not being afraid to make capital investments that will help generate income or create efficiencies in the long run was the first thing to come to mind.

“That’s something we were very conservative on for a long time because we didn’t want to overextend ourselves. We put off buying a tractor but ultimately once we did, we realized all the efficiencies that it created and it paid for itself within a couple of years.”

Betting on Himself

BOOKER BUILDS ON 47-YEAR LEGACY WITH FRESH APPROACH When Jesse Booker decided to buy Let George Do It, a carpet cleaning company with more than 50 years of operating within the Omaha metropolitan area, he knew he was taking a calculated risk. Walking away from a predictable salary as a Stanley Steemer manager wasn’t easy, but it was a necessary step toward business ownership.

“When the chance came to buy Let George Do It, a business that’s been trusted since 1978, I knew it was time to bet on myself,” said Booker. He also said that making the bold decision to buy the company still stands among the most pivotal moments of business ownership for him.

“It was a leap of faith. I wanted more than just a paycheck. I wanted the freedom to innovate, to take care of customers in the way I felt they deserved, and to create a company where community mattered.”

Historically positive reputation

Booker purchased Let George Do It in March 2025 from Gary Anderson, who, until the sale, owned the company since 1985. The business started in 1978, founded by George Bang. Since taking ownership, Booker’s primary goal was to not only sustain the positive reputation of Let George Do It, but also to expand with new certifications and service lines, like air duct cleaning and water damage mitigation.

In the beginning of owning the company, Booker said, “Every slow day felt like a mountain to climb, but those moments forced me to get scrappy, sharpen my marketing and lean into community partnerships.”

The power of relationships

Booker assumed that the success of his business would hinge solely on technical expertise, but quickly realized that relationships are even more important. Word-of-mouth referrals fuel the company’s success.

“From property managers who give us repeat business to neighbors who recommend us on Facebook groups, it’s the trust factor that drives growth,” he said..

Booker said Let George Do It is primarily a cleaning company, but added, “We’re neighbors first.” Booker and his team are active within the local community and are frequent presenters at local schools. They also host neighborhood hydrant parties in partnership with the Council Bluffs Fire Department.

Let George Do It partners with other local companies, too. Honey’s Yummies Pet Treats provides dog treats to the Let George Do It team to give to clients with dogs.

“Those little touches create connections, and we’re proud to be a company people feel good about inviting into their homes and businesses.”

The team follows a clean-restore-protect-maintain model, viewing their services as long-term care as opposed to a one-time service. Let George Do It also holds NADCA and IICRC certifications, demonstrating their expertise.

Creating a one-stop shop

“Looking ahead, our big goal is to add more service lines so we can be a one-stop shop for home and building maintenance,” said Booker. “We’re actively pursuing the licenses and training to make that a reality.”

Still in his first year of business ownership, Booker said that aspiring business owners shouldn’t wait until everything feels perfect to get started toward their dream.

“You’ll learn more in one year of running your own business than in a decade of preparing for it,” he said.

“The fear of risk will never fully go away, but once you lean in, you’ll find that the hard days teach you the most and the wins taste even sweeter.”

DANELLE SCHLEGELMILCH LAUNCHES PUBLIC RELATIONS FIRM Danelle Schlegelmilch said her PR career started when she was “pretty young.” Not everyone can boast a career that kicked off in high school, but Schlegelmilch traces hers back to an anti-tobacco campaign she and fellow students ran in her junior year.

Though initially self-taught, she later earned her degree in journalism and public relations. It was a great fit for Schlegelmilch, a self-proclaimed storyteller and connector. She worked for a couple of agencies before deciding to open her own.

When she started Passport PR in 2016, she was a young mother of a 2-year-old. Starting her own agency allowed her flexibility and relief from the long hours and burnout associated with most agencies.

Exit from agency life

Starting her own PR business boosted her confidence as she realized she had the experience, knowledge and connections needed. Her storytelling abilities, coupled with her ability to connect people, became a powerful asset to Passport PR’s success.

“I’m like a matchmaker,” Schlegelmilch said. “I love to connect people and tell the stories of people doing really cool things.”

A pivotal moment was the COVID-19 pandemic, when PR budgets shrank and in-person events halted. Pitching stories became nearly impossible since the news cycle was dominated by pandemic news. She made the difficult decision to take on another full-time position while keeping Passport PR afloat.

Going all in after the pandemic

The period directly after the pandemic taught her the biggest lessons. It was when she had to decide to be “all in” with Passport PR. She dove into accelerator courses on leadership and business ownership, which empowered her to move forward with intention.

“COVID kind of shook everyone’s world,” she admitted.

“Especially the PR world. After COVID, just being able to bet on myself again and learning and investing, I’ve been able to grow the business.”

Growth for Passport PR means different things. The growing staff, multiple awards and earned media from major outlets are all tangible signs of the company thriving. But the company’s 10th anniversary next year, despite having endured a global pandemic, might be one of the biggest signs of success.

Learning to know her worth

Looking back on nearly a decade of running Passport PR, Schlegelmilch realized the most important lesson was to know her own worth. After years of undercharging clients and taking every client who asked, she began to realize her expertise was worth more.

Nowadays, she only takes clients who are a good fit. Though her business does pro bono work for nonprofits they care about, she’s no longer undercharging clients. Knowing her worth has helped her move forward audaciously, landing PR exposure for clients outlets like Forbes, Oprah, Martha Stewart and more.

STORE OFFERS VAST SELECTION AND PERSONAL TOUCH Almost any music-loving Recycled Sounds regular will tell you the experience of going to the central Omaha record store is as memorable as the music they’re purchasing.

That’s because for almost any used CD, record or poster within Recycled Sound’s walls, owner Stuart Kolnick will have a story behind it.

Be it Kolnick seeing U2 during their Las Vegas residency at The Sphere, a used ‘80s-era Aretha Franklin album or an observation about the different reissues of the classic Rolling Stones album “Sticky Fingers”, Kolnick has some thoughts to share.

A record haul

Kolnick certainly had time to amass an almost-Wikipedia level of musical knowledge. Recycled Sounds has been in business since 1992. For almost 25 years, the store operated in Lincoln, even though Kolnick lived in Omaha.

“I commuted. Like tens of thousands of other people,” Kolnick said.

Kolnick moved Recycled Sounds to Omaha in 2016 after downtown Lincoln developments made operational costs too expensive. It took five trucks to move all the store’s contents to its current location near 78th and Cass streets.

Aside from its central location, Recycled Sounds stands out for its trove of music posters. In the main area, hundreds of posters are spread throughout the store. And that’s just what customers can see.

“I’m afraid there’s still 5,000 (posters) in the back room,” Kolnick said.

The personal touch

He also has a flattening tool that can remove many warps on an album; he also charges $2 for the service.

Recycled Sounds’ traditional hours are noon to 9 p.m. Monday through Saturday, and 12:30 to 5:30 p.m. on Sunday. But those hours are known to frequently stretch much later, depending on Kolnick’s mood.

“You might find someone here ‘til 2 a.m.,” Kolnick said.

Three decades in

As Recycled Sounds enters its third decade, Kolnick has seen his store go from selling roughly an equal number of CDs and records to now selling a majority of records. He had also sold almost exclusively used material until the 2020 COVID-19 pandemic, when he began to sell new vinyl.

“All of a sudden, the (neighborhood) traffic was down, and there was nobody on this block except for me for a few months, so no one was bringing you used copies to sell,” Kolnick said.

Buyers’ tastes may have changed since 1992, but Kolnick said there are some constants he’s seen for decades, mainly that there will always be a need for used Pink Floyd and Metallica albums. Kolnick said he’s still surprised at how popular the 1980s decade remains for customers. Even with 30 years under his belt, Kolnick said the job can still amaze him..

“Every day there’s someone new who walks through that door,” Kolnick said.

COFFEE SHOP ANCHORS COUNTRYSIDE VILLAGE For more than 40 years, Village Grinder has offered people more than a fresh cup of coffee — it’s a community.

“We know their names,” said owner Patty Dudziak. “We have (Westside) high school across the street. A lot of these kids come over here and maybe life isn’t so good at home, but they can come here and get a smile, a friendly face. For me, it’s very important that you have the community here, where you can come and there’s no pressure. We’re just giving you coffee, and we hope you have a nice, comfortable, cozy experience.”

Community support

The COVID-19 pandemic solidified Village Grinder’s place in the community, Dudziak said. Remaining open, the store offered halfdoor service so people could pick up their drink. People flocked to Village Grinder for their daily fix of caffeine.

“You would have thought I invented bread,” Dudziak said. “It was like we were the island in the oasis-type thing. I think people just appreciated that and showed their appreciation by still coming in.”

Dudziak started her coffee career by helping her aunt with her coffee shop in San Francisco, which inspired her to open her own store in Omaha. While the California location was more of a cafe, Dudziak sells coffee beans, gifts and more at Village Grinder.

“I’m kind of a jack-of-all-trades and a master of none,” she joked.

“We’re local and we’re small. We don’t make six dozen doughnuts

and muffins a day. We keep it small. We don’t do large quantities, so the freshness is there, the quality is there.”

Customer-focused

As one of Omaha’s earliest coffee shops, Village Grinder opened in 1983. It wasn’t an overnight success story, Dudziak said.

She put in a lot of hard work to attract customers.

“They weren’t just going to come walking in your door,” she said.

“I remember thinking, ‘Well, if I take out an ad in the paper, we’ll be so busy.’ Oh my gosh, how clueless was I? You have to keep reinventing the wheel.”

While other coffee shops have come and gone in Omaha, Dudziak said she’s proud that Village Grinder is in its fifth decade.

“That’s huge, because obviously I must be doing something right to stay open this long,” she said. “I’m proud to be a part of Countryside Village, I’m proud that I can still keep going and I still love it.”

To other aspiring business owners, she offers advice about owning a business: perseverance.

“You can’t give up,” Dudziak said. “You’ve got to just keep trying. You have to have it in your heart. You have to have the determination that you can do it. There were times that I didn’t, but I always kind of felt like I would not give up. I kept at it.”

NEBRASKA BUSINESSES CAN STILL APPLY FOR DROUGHT AID LOANS The U.S. Small Business Administration (SBA) is reminding eligible small businesses and private nonprofit organizations in Nebraska of the Jan. 27, 2026, deadline to apply for low interest federal disaster loans to offset economic losses caused by drought beginning May 6, 2025.

The disaster declaration covers the Nebraska counties of Antelope, Boone, Boyd, Cedar, Garfield, Greeley, Holt, Keya Paha, Knox, Loup, Madison, Nance, Pierce, Platte, Rock, Stanton, Valley, Wayne and Wheeler as well as the South Dakota counties of Bon Homme, Charles Mix and Yankton.

Under this declaration, SBA’s Economic Injury Disaster Loan (EIDL) program is available to small businesses, small agricultural cooperatives, nurseries and PNPs, including faith-based organizations, with financial losses directly related to the disaster. The

SHAPING THE FUTURE OF HEALTH CARE IN NEBRASKA According to the University of Nebraska Medical Center, the University of Nebraska Board of Regents is considering a strategic transaction expected to transform Nebraska’s health care through education, research and patient care.

The main highlights of this transaction are as follows: • Some time ago Clarkson Regional Health Services let the University of Nebraska and Nebraska Medicine know that they plan to resign their 50% membership rights in Nebraska Medicine. This decision followed internal strategic planning initiatives about the future of Clarkson Regional Health Services. Clarkson Regional Health Services will resign their 50% membership, leaving the University of Nebraska as the sole (100%) member of Nebraska Medicine. In exchange for Clarkson’s withdrawal and resignation of its membership interest, the University of Nebraska would pay Clarkson $500 million. The University would also purchase land and buildings that have continued to be owned by Clarkson since the partnership commenced in 1997 for its appraised fair market value, expected to be approximately $300 million.

• As part of this transaction, Clarkson Regional Health Services will also donate $200 million to the University of Nebraska, which would represent one of the largest philanthropic gifts in the history of the university. This historic donation would be used to support Project Health, the ongoing facility replacement project on the Omaha campus.

• There will be no changes in Nebraska Medicine’s extensive ambulatory and inpatient day-to-day operations, services or staff because of the transaction, only future growth. Nebraska Medicine will remain a nonprofit world class academic medical center. *This transaction has been opposed by Nebraska Medicine, which is calling the regents’ proposal a way to “initiate a state takeover” of Nebraska Medicine.

SBA is unable to provide disaster loans to agricultural producers, farmers or ranchers, except for small aquaculture enterprises.

EIDLs are available for working capital needs caused by the disaster and are available even if the business or PNP did not suffer any physical damage.

The loans may be used to pay fixed debts, payroll, accounts payable and other bills not paid due to the disaster.

“Through a declaration by the U.S. Secretary of Agriculture, SBA provides critical financial assistance to help communities recover,” said Chris Stallings, associate administrator of the Office of Disaster Recovery and Resilience at the SBA. “We’re pleased to offer loans to small businesses and private nonprofits impacted by these disasters.”

The loan amount can be up to $2 million with

interest rates as low as 4% for small businesses and 3.625% for PNPs with terms up to 30 years. Interest does not accrue and payments are not due until 12 months from the date of the first loan disbursement.

The SBA sets loan amounts and terms based on each applicant’s financial condition.

Applicants may also call SBA’s Customer Service Center at (800) 659-2955 or email disastercustomerservice@ sba.gov for more information on SBA disaster assistance. People who are deaf, hard of hearing or have a speech disability should dial 7-1-1 to access telecommunications relay services.

Completed loan applications should be submitted to the SBA no later than Jan. 27, 2026. However, after the deadline has passed, there is a 60-day grace period during which SBA will accept applications.
