On July 14, I was at Kolkata airport to board my evening flight on another airline. One of the passengers, Mr. J K Singh (BSF) was at the check-in counter. He was busy adjusting his baggage, which was overweight and had to pay extra charges. He was in a hurry and was a little tensed. All of a sudden, he fell on the ground, bleeding and foaming at the mouth. It was extremely unfortunate that the staff of the airline just kept looking at him instead of helping. Then, I saw two SpiceJet employees pick-up the passenger from the floor and escort him to the doctor. I was left speechless. Later, I came to know that the SpiceJet employees who helped were Mr. Martin J Paul and Mr. Tapan. I commended them on helping the passenger of another airline. Thank you SpiceJet. Care & concern I am a SpiceJet frequent flier for the past many years. On June 20, 2014, on my way to Rajahmundry airport, my car got stuck in traffic. Not only did we reach the airport late, I had injured my ankle and could not move quickly. To my surprise, I found your staff waiting outside to rush us. One employee even offered a wheelchair and water to me and I had a comfortable check-in. The SpiceJet services in-charge (if I can recall, Mr VS Rao) was co-ordinating and helping all late comers like me. They are mentally and physically strong, coupled with the ever necessary grit and determination that enable them to give their very best in the planning, strategy and execution of plans.
This never-say-die spirit, instilled in the armed forces, helps them to conquer the world not only when they serve their country but also when they serve in other industries

Spiceroute, in conversation with them, finds out more about their experiences when serving in the armed forces and also with their current employer, SpiceJet.
Tales of courage, honour and pride... Pratim Mazumder, Security InCharge (East), SpiceJet, firmly believes that ‘all the effort in the world doesn’t make any difference if one is not inspired’. Talking about his initial days, he recalls how an inspiration changed his life. At the age of 19, after watching the American iconic adventure film, 20,000 Leagues under the Sea, he aspired to become a submariner one day. The obsession to wear the white, crisp uniform materialised in 1985, when he joined the Navy. “It seemed that finally I had achieved what I had been waiting for. Since then, there was no looking back and every day of those 15 years of attachment with the profession was an unforgettable experience of my life. To live and breathe 600 mt below sea level in a world of our own, is something that is difficult to describe. It is not just the fun and frolic, but the sense of pride and honour associated with it,which is a distinct part of the profession,” he proudly shares.
Holding so many special memories in his heart, Pratim has many proud moments to share with Spiceroute, such as visiting different ports of Sri Lanka like Trincomalee and Batticaloa on war patrol in 1987; being a part of ‘Operation Pawan’ deployment by the Indian Peace Keeping Force and Kargil operation. His eyes speak volumes when he recalls those 25 days of operation that gave him an immense heartwarming experience to serve for the purpose of peace in the wartrodden regions of Sri Lanka. In the same way in 1999 during the Kargil war, he sailed underwater for 54 days near Karachi, Gwadar, Ormara and Pasni. Serving in the Navy was not just another job, but one in which Pratim’s overall attitude changed his
perception of life. As he puts it, “It is a profession of pride, honour and integrity which helps you lead your entire life with a sense of discipline and moral conviction.” Remembering the days when he decided to join the armed forces, Capt Rajan K Gupta says, “In 1985, while pursuing my Masters in Physics, I was suddenly bitten by the Armed Forces' bug. I took the Combined Defence Services Exam followed by the SSB and by next summer, I was in drill boots with a zero hair-cut at the Indian Naval Academy in Goa! As training progressed, the transition

Dedicating his achievements to Indian Navy, he says, “I owe it to the Indian Navy for what I am today.” Feeling sad about the growing apathy, in present times, towards soldiers, seamen and air warriors, he states, “It is not enough to just
remember these brave men with tokenisms on Independence Day and Republic Day.” Capt Sandeep Dhawan joined the Indian Navy in 1988 and served for 21 years. He has been flying for SpiceJet for over five years. He recalls, “I was a flying instructor in Indian Navy. Due to this reason, for a long period I also served in the training institutes of Indian Air Force and I have taught over 400 pilot trainees, directly or indirectly. This gives me immense satisfaction and pride.” One of his finest memories was of taking part in formation flying for

Know more Stepwells usually consist of two parts: a vertical shaft from which water is drawn and the surrounding inclined subterranean passageways, chambers and steps which provide access to the well.

In Delhi, these baolis usually consist of one broad flight of stone steps running from ground level to below the waterline, along the whole width of the site. Subsidiary flights may also run opposite or at right angles, thus reducing the final cross section into an octagonal shape. The galleries and chambers surrounding these wells were often carved profusely with elaborate detail and became cool, quiet retreats during the hot summers.

A baoli is one of the many variants of the native word for a well. Mostly, it is used to refer to a stepwell or staircase well where a pool of water lies at the base of the structure. These were inherently built at places that were arid or semi-arid and witnessed low levels of rainfall in the western part of India, in order to collect and supply water. They have narrow stairs going deep down into the earth so as to expose little surface area to the sun to avoid evaporation and drying up of the reservoir. Multiple storeys and galleries provide it shade from all possible angles of the sun and at the same time causing the water to remain cool.

In Rajasthan, stepwells run north along the Aravalli Hills between the Great Thar desert and Delhi. These buildings are the visible architecture that mark entry to the invisible landscape of underground water throughout the region that once provided life and sustenance to towns and villages. One of the biggest in the world and over 1,000 years old Chand Baori, located 95 km from Jaipur in the Abhaneri village of Rajasthan, is roughly 100 feet deep and stylised after a big collection of small pyramids. The temperature around the water tank downstairs, is 5-6o lower than normal. The purpose of such an elaborate structure was most probably water harvesting. There is also a royal residence with rooms for the king and queen and even a stage for performances. The baoli even made a small appearance in Christopher Nolan’s Dark Knight Rises.

inside the cavity to fluctuate freely with the surrounding water table. Continuous steps from ground level to the bottom of the structure led to water, no matter how great the variation in the water table. Queen’s stepwell or Rani-ki-vav located in the north Gujarat district of Patan has been included in UNESCO’s World Heritage List last month. It is said to have been commissioned by Queen Udayamati in memory of her husband King Bhimdev I of the Solanki dynasty, and is of great historical and archaeological importance. The structure has one of the most intricate designs among all baolis in the subcontinent, fashioned as an inverted temple highlighting the sanctity of water.

Delhi
Baolis in Delhi are axiomatically smaller and belong to the Islamic tradition of architecture, though with heavy imitations of the indigenous north Indian style. They were constructed mostly during and after the Delhi Sultanate was established. Rajon ki Baoli, located within the Mehrauli Archaeological Park,

was not only used as a water reservoir by pedestals, but also as a resting place, an assumption that is corroborated by the presence of a small mosque situated right next to it. This is one of the grandest stepwells in Delhi. It was constructed by Daulat Khan during the reign of Sikandar Lodi. The baoli is a simpler structure with five levels, each lined with arched niches with carvings. The present status of stepwells in India is that they are more or less dysfunctional with a few exceptions. But, thankfully, all the major ones have been adopted by Archaeological Survey of India and are being taken care of. As a tourist, they are absolutely worth a visit or two if you ever happen to be in a close proximity.

How did you discover your love for theatre? My school, though average, had some eminent teachers. It was run by a minority trust in Kashmir. Our principal, Dinanath Nadim, was a prominent Kashmiri poet who has several poetry books, short stories and folk songs to his credit, which are sung even till date. He used to write short plays for us and we would enact them. After school, we used to have two hours of extracurricular classes. At that time, the approach towards education was more wholistic. It was an egalitarian culture in Kashmir and there were more than 20 big theatre groups at that time. I have seen Begum Akhtar and Md. Rafi performing live. I became an actor in school, pursued theatre in college in Kashmir and got state scholarship to study in National School of Drama (NSD) in Delhi. Since then, it has been only theatre for me. You have experienced international theatre closely. How would you compare it to Indian theatre? Abroad, theatre is a profession and people invest in theatre. Theatre groups pay their actors and other supporting staff just like in any other job. They have professional actors, directors, community facilities and infrastructure. There, it’s a competition to hire the best directors and actors. It happens on a grand scale, where technology plays a major role. It takes only seconds

Theatre debates and works like a mirror of the society for the entire stage to change, which is truly magnanimous. They also have community theatres. In India, we don’t have even one theatre group of such standards, as our government does not believe in spending money on theatre. Still, India has the highest number of voluntary cultural organisations in the world, which means people are spending from their own pockets to pursue their passion. You have actively been promoting theatre in Kashmir for a long time. How did the idea of working with local Kashmiri actors occur to you? It happened when I lost Kashmir.

With the death of my mother, I lost my only connection with the valley and it left a deep sense of vacuum in my life. In 1992, I went back to Kashmir but it was not the Kashmir of my childhood. Even during the day, the streets wore a deserted look. The architecture, environment, peace and culture of the place – everything was ruined. The local folk theatre culture had almost vanished and actors were forced to do other odd jobs. I decided to do something to revive the old charm of Kashmir and started taking theatre workshops. I started with only two Kashmiri actors who had stopped performing for 10 years. Slowly, the numbers increased. Today, I have trained many artistes and have produced plays with them. I work in villages
Hobbies I enjoy cooking and make good Kashmiri food. Both my son and I are hooked onto organic farming these days, which we carry out in the space in our front yard. We have grown many vegetables there. I also love to read and write. I love to spend time in Safdar

Raina’s laurels M K Raina has been honoured with the Sanskriti Samman in 1980, Sahitya Kala Parishad Award in 1981, Best Director of the Year by West Bengal Government in 1982, Best Director's award of Punjabi Akademi, Delhi, in 1987. He received the Sangeet Natak Akademi award in 1995 and the Swarna Padak from the government of Jammu & Kashmir in 1996 for his contribution to the field of Indian theatre. 50
He has directed several memorable productions like Kabira Khada Bazar Mein, Karmawali, Lower Depths, Pari Kukh, Kabhi Na Chooden Khet and The Mother. Andha Yug, which he directed was performed in Berlin and in the Festival of India in the USSR. He also produced Jasma Odan at Hawaii University in 1986. When we staged the show in Kashmir, more than 1,000 people came to watch it. To restore and protect the architecture, we have started making documentaries on it.

nlike every other spice in the kitchen box, we don't actually eat bay leaves. Not the way we have basil, clove and even cinnamon. So what makes these dried leaves such a kitchen essential? They do, as it turns out, quite a lot. And by lot, we don’t really mean the easy flavouring that it imparts in every dish, but also the benefits it gets along. Bay leaf or tej patta, as Indians famously refer to it, hails from the Mediterranean regions, in and around Turkey.
A member of the laurel family, bay leaf was once used to make wreaths for Olympic champions in ancient Greece and Rome. The two main varieties are Mediterranean (Turkish) and Californian

Tiger Prawn Sizzler Ingredients Three tiger prawns, head off, slit lengthwise and deveined. Method 1. Marinate prawns in lime juice and salt and keep aside for 10 minutes. 2. For the sauce, sauté garlic in olive oil and butter, add chilli paste, lime juice, seasoning and honey. 3. Boil vegetables like broccoli, baby corn, cauliflower, carrot, etc., separately and keep aside. 4. For the noodles, sauté garlic, add capsicum, spring onions, then add noodles and sauté, add seasonings and soya sauce. Stir fry and keep aside. 5. Grill the prawns on a griller with oil on both sides. 6. Grill half a tomato with seasonings sprinkled on it. Sauté vegetables in butter and season them. 7. Deep fry potato wedges till crisp and sprinkle with salt. 8. Line hot sizzler plate with cabbage leaves. 9. Arrange vegetables and potato wedges on either sides and noodles in the centre. 10. Put the grilled prawns over the noodles, nappe the garlic chilli glaze. 11. Arrange grilled tomato and garnish with lime and parsley.

Chefs also add the wow factor by marrying flavours and Chef Girish feels it would be an interesting way. He suggests that a sizzler could be used in the form of a warm dessert. A sizzling plate can be used to caramelise fruits, along with caramel and chocolate sauces mixed a la minute on the table with a dash of rum or brandy.

It is the drama around the sizzler that actually makes it special. So it is got to be served hot. Chef Kashyap concurs, “Amongst the presentation arena, not much can be done, because if you remove the hot plate how do you make the whole ‘sizzler’ thing come alive?” Also, there should be no residue or oil on the iron plate, otherwise it will lend a burnt flavour. Chef Pai further cautions that the plate should be lined with thick blanched cabbage so that the cooked food does not touch the hot plate. So make sure when it drizzles next, you are enjoying a scrumptious, hearty sizzler.

The process In naturopathy, paraffin wax therapy is given by melting the wax on a heater. At normal room temperature, the wax is in its solid state. For application, it needs to be in a semi liquid state since in this state the wax reaches optimal temperature required for heat therapy. The time that the wax is heated basically depends on the quantity used. 78
Once the wax is semi liquid, it is removed and a muslin or cotton cloth is dipped in it. Using a blunt knife, the excess wax is removed. The specific part of the body where the therapy is to be administered is massaged with sesame/ mustard/ coconut oil. This is done so that the wax does not directly come into contact with the skin and stick to it. The cloth dipped in wax is then wrapped around the affected area, kept for around five minutes and removed.

Beauty Treatments
Paraffin wax is used for facials, manicures and pedicures. For a French facial with a paraffin wax mask, the cleansing and massage routine is followed by the application of room temperature paraffin wax mask on a wet face gauze; layers of paraffin wax masks are applied on the gauze and kept for 20 minutes. More the layers, longer the heat last.
Then the mask is gently removed by applying downward movements so as not to pull any hair from the hairline. The easy removal of the mask is possible because of the cream massage which is done previously. Normally, a paraffin wax facial is advised for clients who are below 65 years. n 1969, drought had affected many regions of Kutch. For about three years before this calamity occurred, there had been an absolute lack of rainfall. At that time, Ramakrishna Mission had started a kitchen in Dhaneti Village of Kutch to help the droughtaffected areas. Chandaben Shroff visited this area with her family to offer their help.

Over the years, the demand for garments adorned with different embroidery styles started increasing, and thus, Shrujan was born. Being an artist, Chandaben Shroff chose to make her hobby and passion for handicrafts, her profession.

Embroidery Exhibition find an eclectic mix of traditional embroidery on contemporary apparels, including men's kurtas as well as silk and woolen jackets. The result of years of research on hand embroidery from Kutch and its communities is evident on the resplendent display of stitches and vibrant hued garments.
Shrujan enabled people to earn a dignified livelihood Besides showcasing its classic range, these exhibitions highlight linen and silk kurtas and tunics; bright, embroidered Maheshwari dupattas and stoles; and tie-n-dye skirts and cholis. These exhibitions also showcase original, handembroidered fabrics that 3,500 craftswomen from 100 remote villages of Kutch have fashioned into high-quality products such as garments, bags, home furnishing, decor items, etc.
Working style
Today, Shrujan enables nine communities that practice
16 styles of Kutchi hand embroidery to earn a dignified livelihood. Craftswomen who are part of the Shrujan family work from home. Shrujan’s production team provides threads and fabrics to craftswomen even in the remotest villages. The women do not have to pay for these materials. However, they are paid for their skill and time, and that too right at their doorsteps, as soon as they complete the embroidery. Chandaben believes that everyone gets an opportunity, at least once in a lifetime, to achieve what they desire. So, overcome all the obstacles, and grab that opportunity and follow good work ethics. Be truthful to yourself and follow a path of righteousness.

Janmashtami
Janmashtami celebrates the birth of Krishna, a popular and beloved Hindu deity. The day before Janmashtami is one of prayer and fasting, which continues till midnight and beyond, when an idol of the god is placed in a cradle and rocked. All the main temples in Vrindavan and across the world are decked with lights and the idol
is ceremonially bathed in a mixture of milk, honey, yoghurt, dry fruits and tulsi leaves- all of which are then distributed as prasad. Hymns, the chanting of devotional mantras and processional tableaux are accompanied by the enactment of incidents from the life of Krishna. One of the liveliest customs connected with Janmashtami festival is the breaking of the
dahi-handi, a pot of milk, yoghurt, butter, honey and dry fruits which are suspended high above a street, symbolic of Krishna’s love for milk and butter. Celebrating the bond between brothers and sisters is Rakshabandhan when sisters tie rakhis as a reminder of love on their brothers’ wrists, praying for their longevity. Brothers, in turn, are bound by these threads to protect their sisters. Rakhi is celebrated on a full moon day in August with great fervour in India. According to Indian history, Queen Karnavati of the Rajput kingdom of Chittor, had sent a rakhi to Humayun, Mughal Emperor of Delhi, seeking his help against Bahadur Shah of Gujarat. Emperor Humayun accepted her request to protect her. According to a legend, Lord Vishnu was pleased with his devotee, King Bali, and granted him a boon of immortality. In order to fulfill his promise, Lord Vishnu left his abode, Vaikunthdham and came to stay with King Bali. Soon Goddess Laxmi visited King Bali on Shravan Poornima day disguised as a poor Brahmin lady and tied a rakhi.

Ganesh Chaturthi Ganesh Chaturthi marks the birth of Lord Ganesha, the elephant-headed god. This festival is all about bringing home beautifully crafted idols of Lord Ganesha and keeping them till Ganesh Chaturthi, when he is immersed in water. It is an important festival especially in the states of Maharashtra, Karnataka, Tamil Nadu and Andhra Pradesh. Preparations for the festival begin up to 10 days in advance, and sometimes even months. Grand pandals or stages are set up and the idols are dressed in colourful clothes and ornaments. There is often a competition to see which pandal has been most artistically decorated

or which is the best dressed idol! On the day of the festival itself, ladoos and sugary modaks, a favourite of the god, are distributed. When the festivities are over, the idols are taken out in a grand procession. Accompanied by fireworks and beating drums, the idols are ritually immersed in a lake, river or sea. Dear Customer, Like most people, I have always had the utmost admiration for the men and women who choose to join the armed forces, perhaps the bravest and most patriotic career choice that can be made by any citizen. As India celebrates its 68th year of independence this month, we are proud to honour a group of wonderful former service men and women who are today part of the SpiceJet family, post their service careers. These individuals are featured in the foldout cover of this magazine, and their stories are in pages 22-26. Each of these remarkable individuals has served the country honourably; many have seen action on the frontline in wars and other conflicts in various places in the world. Today they have different roles at SpiceJet, from pilots to security to HR and admin to operations to project management. They have served the country with pride, courage, honour, and dedication, putting their lives on the line for all of us, and we thank them from the bottom of our hearts for that.
Onto other news: If you are travelling on a Friday or over the weekend, you will notice the fresh, bright, and colourful weekend uniforms worn by our female cabin crew, resplendent in red or saffron kurtis and blue jeans, while our male cabin crew wear smart black polo T-shirts with blue jeans. We introduced this weekend uniform last month, and the response from both customers and crew has been overwhelmingly positive. There is something special about the new ambiance, warmth, and informality that this is helping to create in the on-board experience, a welcome break from the formal traditional cabin crew uniforms. This is also in line with the more casual dress code adopted by many corporate houses on Fridays. It is proving so popular, we have even received emails suggesting we make this the standard uniform for all days of the week, but for now we are staying with Fridays and weekends only – that way it remains special! This month we are officially launching our new SpiceMAX seats, where the first 5 rows on our Boeing aircraft have been re-configured to provide 5-6 inches more legroom
than standard seats on SpiceJet and other budget airlines. We have been gradually re-configuring our Boeing fleet, and those who have experienced the new legroom have been giving rave reviews. It will be well worth the modest premium we will be charging for these seats; details of the product and pricing will be announced shortly. We have also recently launched a new ad campaign to celebrate the nine years, since 2005, that SpiceJet has been painting the Indian skies red, the nine years since SpiceJet started offering affordable fares to the Indian customer, the six years since SpiceJet became the first budget airline in India to offer hot meals on board, and the two years since SpiceJet started connecting smaller cities with no air service with our Q400 aircraft. All of which we celebrate and bring to you with passion and commitment and with all our hearts, each and every day. there was one instance in which we had almost four flights on ground at the same time. the fact that we managed to carry out all the loading and unloading on time, simultaneously, was a feat in itself. I still remember, I was appreciated by my Station Manager for doing an excellent job.
Your responsibilities at present. In my current role, I have to carry out the loading of cargo and baggages passed on by the ramp staff, and it is important to get the work done quickly. I also need to make sure that sufficient manpower is there on all allocations. What do you love the most about working here? I have been a part of the SpiceJet family since November 2005. And it has been a great experience ever since. What I love the most about working here is the on-time salary with yearly increments. What excites you in this industry? This industry is constantly changing. It is never static. And to be able to do the work assigned to me on time, with religious dedication in this environment, is what makes my role extremely exciting. What are the challenges you face? I stay with my parents, two elder brothers, of which one is also working with another Indian airline, and my wife Mamta, who works in a beauty parlour. I love to spend time with them. As part of their CSR activity, SpiceJet initiated a programme with Akshar, an NGO, to recycle the office wastepaper.

roject Akshar is all about creating affordable, eco-friendly notebooks by recycling wastepaper (used sheets, magazines, newspaper, shredded paper, etc.) that are discarded by corporates and organisations. After collecting the wastepaper, notebooks are fashioned by victims of drug abuse and human trafficking. This is carried out in collaboration with Akshar’s NGO partner, Sahara, who have been trained in book binding by Akshar. This aids in ensuring a sustainable source of income for them.

For every three notebooks sold, one is sent to a child in need The business model works on sensitisation among society towards reducing carbon footprints, recycling, creating opportunities to earn a living and empower slum children with tools for education.
