Unlike the glossy, checklist-style Goa most tourists chase, Rampal’s version is unhurried and intimate.

“Goa has a vibe that allows you to breathe differently,” says the actor.

This is precisely why he moved bag and baggage to the state, frequently travelling to Mumbai for work commitments. “Moving to Goa was the best decision for my family. There are barefoot mornings, music drifting through old Portuguese homes, intimate dinners with close friends, and long stretches where time almost seems irrelevant,” he says.

That’s when Goa is truly beautiful,” he remarks.

The Curious Side of Cheese, Reimagined in India

Cheese in India today spans everything from processed slices and everyday mozzarella to washed-rind, aged cheddar, and bloomy-rind cheeses. But within the country’s growing artisanal cheese movement, there is increasing attention on terroir, that is, how milk quality, climate, microbial activity and ageing conditions shape flavour, texture and character, giving Indian cheesemaking a distinct and evolving identity.

A New Cheese Vocabulary Unlike standardised industrial production, artisanal cheesemaking is deeply reactive to its surroundings. “Cheese is a living product and constantly reacts to the environment around it,” says Diana Chinoy of Pune-based ABC Farms. At their creamery, airflow, humidity and temperature become critical during ripening, particularly for cheeses aged over several weeks.

Climate shapes the process in more ways than one. In warmer regions, fermentation and microbial activity move faster, affecting curing timelines and texture development.

“If it’s a really hot place, the curing time is shorter, and the salt is more. Microbes are also dependent on the weather,” explains Namrata Sundaresan, co-founder of Käse Cheese, an award-winning fromagerie based in Chennai.

The Indian Turn While many Indian cheesemakers continue to work with European techniques and cultures, they are increasingly adapting them to local conditions. Chinoy points to a cheese, traditionally wrapped in maple leaves and ripened in wine, that her brand makes with local wine and mulberry leaves. At Käse, Sundaresan experiments with turmeric leaf wrapping, black tea smoking and ageing techniques shaped by local weather conditions.

Some cheeses are also beginning to reflect familiar Indian flavour memories.

At Mumbai’s Eleftheria Cheese, founder Mausam Narang points to a brunost (traditional Norwegian whey cheese) whose caramelised milk notes reminded diners of khoya and peda.

Consumers, too, are becoming more interested in washed-rind cheeses, blues and natural-rind varieties alongside broader conversations around fermentation, slow dining and handcrafted food.

What is emerging is the Indian artisanal cheese evolving into a richer cheese culture, with cheesemakers experimenting with regional milk, native ingredients and climate-responsive techniques shaped by place and process.

The fast ferry from Central Pier 6 in Hong Kong’s bustling business district takes about 35 minutes to reach Mui Wo, a quiet town on Lantau Island. By the time the ferry approaches the pier, Hong Kong’s iconic skyline of glass towers vanishes from view, replaced by winding roads where feral water buffalo roam freely, a reminder of how little this part of the island has changed over the decades. Most visitors come here for the beaches and hiking trails. But a growing number are arriving for something far less expected: the coffee grown, roasted, and served on the same island.

Where It Grows The numbers remain intentionally small. Since 2017, Ringo Lam, a certified SCA Roasting Professional, has been roasting coffee for the local community. Two years later, after a sourcing trip to Panama, he began cultivating coffee trees from seeds he germinated himself. What followed was not the rise of a large plantation, but the gradual growth of a community effort: one farmer joined, then another, and eventually more. In 2022, Lam formalised the initiative as the Lantau Coffee Co-operative. Today, over 20 growers tend to more than 400 arabica trees scattered across Lantau Island’s subtropical hillsides.

Wanderland OutBound Learn the Craft The Hideout, tucked inside a village house that is a short walk from Mui Wo pier, is where the island’s coffee culture comes most vividly into focus for visitors. Its “Coffee Farm to Cup” workshop, led by Lam himself, takes participants through cultivation, harvesting, processing, and guided tastings, with Lantau-grown beans served alongside coffees from other origins. The session concludes with each participant roasting 100g of beans to take home.

LCC Roastery, also based in Mui Wo, is where these scattered efforts come together.

What began as Lam’s personal roasting setup in Cheung Sha has evolved into a small-batch workshop focussed on roastto-order coffee, transparent sourcing, and immersive experiences. Its “Coffee Roasting and Camping” programme, which is a two-day, one-night experience, combines nursery visits, harvesting, cupping sessions, and an overnight stay at a seaside campsite in Cheung Sha. Priced at HK$1,500 to 1,600 (around INR 20,000) per person, including accommodation, it offers perhaps the most intimate glimpse into a coffee supply chain that travellers will ever encounter.

Out west in Tai O — Hong Kong’s famed stilt-house fishing village, about a 45-minute bus ride from Mui Wo — two cafés have turned extraordinary settings into a part of the experience. Solo on Kat Hing Street occupies one of the traditional 19th-century Pang uk stilt houses that rise directly above the tidal canal.

These atmospheric wooden homes, iconic to Tai O and often featured in Hollywood action sequences, form the backdrop to handcrafted artisanal coffees served in heart-shaped mugs. From the terrace, you can view traditional sampan boats gliding below as the village’s stilted skyline stretches across the opposite bank. Arrive early on weekends; the location is coveted enough that the café enforces time-limited seating.

A short walk away, NAK Kafe sits beside Tai O's drawbridge with a balcony over the river and a menu that takes its coffee seriously enough to list specific origins alongside truffle prawn toast and European desserts. Dog-friendly, cheerfully decorated, and considerably less crowded than Solo, it rewards visitors who wander further than the main street market.

April to June offers the best chance of spotting the Himalayan Monal, especially in the early mornings during the breeding season. By July and August, sightings become less predictable, but the region turns lush, with misty forests and vibrant green slopes.

If you trek regularly in the Himalayas, you would know how villages seem to appear out of nowhere. One moment, you are walking through dense forests and in the next, a cluster of colourful homes emerges amid terraced fields and orchards. Smiling villagers wave as you pass, before the mountains reclaim the silence around the next bend. Sari, a space of happy habitation in the Rudraprayag district of Uttarakhand, feels like many others at first glance, with oak forests, wheat fields, apple and peach orchards and rhododendron-lined trails. But between its concrete and stone homes appear breathtaking views of the Tungnath and Chandrashila summits towering in the distance, giving trekkers their first visual temptation.

If you are not a trekker, you can walk around this quaint village, its many cafes that have come up to cater to the trekkers on this popular route, or spot the elusive Himalayan Monal, the state bird.

Sari village is best known as the starting point of the Deoriatal Trek, a short and scenic 3 km hike to a pristine lake surrounded by dense forests and towering Himalayan peaks.

The trek is beginner-friendly and can be completed in a couple of hours.

How to Reach

Fly to Dehradun, the nearest airport. From there, Sari village is a seven to eight-hour drive via Rishikesh and Rudraprayag.

Treks To Try I chase this bird with a unique iridescent plumage, from Sari to Deoriatal and Tungnath. For days, there is nothing except rustling leaves, distant calls, and the feeling of being slightly out of rhythm with the forest. Then, one morning, it appears.

A brief flicker at the edge of a clearing. A pause and its plumage shifts between green, blue, and copper in the early light, before vanishing into the woods. Near Chopta, there’s another glimpse and this time, in flight.

Further up, near Tungnath, the forest begins to thin and the landscape opens dramatically. The air turns sharper and the ridgelines wider. In the stillness of the early morning, the temple rests quietly against the mountains. It is here that the Monal appears again, lingering a little longer, gliding across the slopes with a grace that makes you instinctively stand still.

And then, like before, it slips away.

The trek to Deoriatal is a must-try. The lake feels magical not just for its ethereal beauty, but for the stillness it brings. On clear mornings, the snow peaks mirror on the still water, and silence comes naturally to every viewer.

From Sari, trek for around six hours (approximately 13 km) to reach Rohini Bugyal’s vast forest-fringed meadows that are ideal for camping. Another 9 km of moderate trekking through the Kedarnath Wildlife Sanctuary will take you to the pristine, glacial Bisudi Tal (or Bisurital).

By late June into July, the landscape here changes. Snow melts and gives way to fresh green slopes, and mist begins to drift through the forests. The Monal becomes harder to spot, retreating deeper into cover.

Not everything here is meant to be found easily.

But every now and then, the mountains offer a moment that makes the wait worthwhile.

The Maharashtrian town is also known for its wilder, untamed side. One evening, while driving back from dinner, the quiet of the forested road was broken by a fleeting, edge-of-the-seat moment, as a leopard crossed our path. It was enough to vouch for the region’s rich wildlife.

Part of the dense forests of the Western Ghats, Mahabaleshwar is home to diverse species, including deer, wild boars and a variety of birds such as the Malabar whistling thrush and hornbills.

Zerodha’s co-founder Nithin Kamath on burnout, purpose, startups, health and staying untouched by entrepreneurial hype.

Your brother (Nikhil Kamath) and you have built one of India’s most successful financial companies, yet you’ve stayed away from the startup glamour. Was that instinctive?

When you're building a business, you want as few distractions as possible.

Luck, timing and market cycles all play a role in how far a business goes. The problem with being too connected is that you inevitably get influenced by other founders. You start optimising for growth targets set by someone else's journey, or chasing valuations others claim.

Founders today are expected to constantly build a personal brand.

Do you think visibility has become overrated in entrepreneurship?

A good product plus incredible storytelling, done consistently over

many years, is what builds a brand. What's overrated is the idea that visibility is an alternative to the product.

Was there ever a phase where you genuinely thought Zerodha might not work?

Several times, and any entrepreneur who has built a business will tell you the same.

There’s never certainty in entrepreneurship. In life, things work out best when people around you want you to succeed, and for that, you need to stay around long enough to get lucky.

What worked for us was staying lean, sticking to our philosophy, and continuing to build what was right for the customer.

Tips for New Startup Founders

• Be obsessed with solving a real problem, not chasing a hype.

• Let valuations and growth follow the product and not drive it.

• Stay focussed on what’s right for the customer, not the competition.

• Sometimes the best startups are built away from the startup bubble.

Your company thrives in a space driven by uncertainty and speculation. How do you stay calm?

It’s tough, and I don’t think I have any special ability to tackle it. But what has helped is to always make peace with the worst-case outcome and also take a long-term view.

You’ve spoken openly about burnout. Are people becoming more honest about the weight of success?

I'd like to believe so. In 2024, I spoke about my stroke because I wanted people to see that even someone who supposedly does the right things can face challenges. Talking about burnout after the fact is easy, but admitting it in the middle of it matters more.

Did that health scare alter your definition of success?

Now, my health is my focus.

What's the use of money if the planet you live on is destroyed and your health is ruined?

If the internet stopped hearing from you for six months, would your life get better or worse?

Probably better. For the first decade of Zerodha, I was mostly on trading forums and writing blogs, not on other social media platforms. Six months away would probably show me how much of it I truly need and how much is just habit.

You’ve helped millions build wealth. What gives you fulfilment?

Beyond Zerodha, a lot of my focus today is on backing ideas that matter in the long term.

Through Rainmatter Foundation, we’re working on climate resilience, while Rainmatter Investments supports startups across fintech, climate, health and deep tech. We’ve earmarked 10 per cent of Zerodha’s earnings for startup investments and another 10 per cent for the Foundation. That sense of building for the future keeps me excited.
