Lemon Chicken with Capers

2 skinless/boneless chicken breasts, cut in half Salt & Pepper to taste

1/2 Cup flour

4–6 Tbsp unsalted butter

5 Tbsp olive oil

1/3 Cup fresh lemon juice

1/2–1 Cup chicken stock

1/4–

1/2 Cup capers, rinsed

Season chicken with salt and pepper, lightly sprinkle flour on chicken both sides. Melt in skillet over medium heat: 2 Tbsp butter + 3 Tbsp Olive Oil. When it starts to sizzle, add chicken. Cook 3 min and flip for another 3 min. Transfer chicken to plate. Repeat process for additional chicken. In same pan after chicken is done; add lemon juice, stock + capers. Scrape bottom of pan for extra flavor. Add chicken to pan, simmer 5 minutes. Place chicken on plate and add 2 Tbsp butter to pan. Stir all sauce and pour over chicken. Garnish with lemon slices, serve with Pasta.

Aarti Sequeira, author of Unwind devotional cookbook and My Family Recipe Journal, is a television personality, chef, cookbook author, news and documentary producer, third-culture kid, and chaser of the polyglot palate. Fall 2020, I experienced a painful loss when my mom passed away from COVID. I was struggling to find hope and direction until I stumbled upon Mary & Martha through a Facebook post in a community group. While attending a women’s conference, I won a gift basket with a Prayers to Share. I fell in love with them and decided to buy more online. My order included a Mary & Martha mini catalog where I found the perfect birthday gift for my friend - the Adventure Tote.
