Back in the late ’90s, Don Froylan Ochoa and his wife Zoila came to Oregon with big dreams—but no authentic Mexican cheese in sight. So, like any cheese-loving family would, they rolled up their sleeves and got to work in the kitchen, turning milk into melty magic with everyone pitching in (yes, even the littles and the abuelitas). Word spread fast—because let’s be real, good cheese has a way of doing that—and demand soon bubbled over. Although Don Froylan passed before seeing his dream of a creamery come to life, his family made sure it did, opening Don Froylan Creamery in Salem in 2003. Today, their awardwinning lineup—including the star of the show, Queso Oaxaca—plus Fresco, Panela, and Botanero, proves one thing: this cheese is pure corazón, and one bite will have you hooked.
