1 T shallot, minced fine
2 T Suzie’s mayonnaise
4 oz. cream cheese
1 oz. parmesan, grated
8 oz. medium cheddar or a blend of sharp and medium, grated
3 oz. roasted pimento pepper, drained, diced fine (or sub roasted red peppers)
½ t Joey’s hot sauce, to taste
Pinch each of salt and pepper, to taste
Burgers:
4 burgers, fresh Market Meat Dept.
4 fresh Market Bakery burger buns, split
4 large jalapeños, washed and grilled Lettuce, tomato and condiments as desired
Steps:
• Add shallot to processor and mince well.
• Combine cream cheese and mayo in processor and pulse until thoroughly mixed, scraping down sides.
• Pulse in parmesan, then add remaining ingredients and pulse until uniformly combined.
• Transfer to airtight container and keep refrigerated until ready to use.
• Serve on freshly grilled burgers with toasted buns, top with lettuce, tomatoes, grilled jalapeños and condiments as desired.
