Chloé-Maria Baker & Scott Alan Rive

Chloé-Maria Baker and Scott Alan Rive were married on 23rd July 2022 at the Sacred Heart Church, St Aubin, in front of 150 guests.

The delicate strains of a string quartet filled the air, playing Taylor Swift's Love Story, as the bride walked down the aisle. For Chloé, walking down the aisle to this song felt like a dream come true as she recalls imagining her wedding day whilst listening to the song when she was younger.

For the wedding reception, the theme of strings continued as the bride and groom made their entrance into the marquee at St Ouen’s Manor. Guests dined on delicious food, danced to music that filled the air with joy, and toasted to the happiness of the newlyweds.

Describing the day as magical, Chloé shares that being 3 months pregnant with son, Bodhi, at the time, made it even more special.

SKIN HEALTH TIPS

Fiona Weston, a well-known skin health expert, shares her top tips for getting and maintaining the skin you deserve.

Effectively removing makeup is a gateway to clearer, healthier skin. When makeup is removed, your skin becomes a clear canvas ready to accept products. Double cleanse. Please, for the love of God, DON'T use Micellar Water to take your makeup off and think that it will do the job. It won't.

If you wear foundation, tinted moisturiser or SPF, please use a Pre Cleanse Oil, followed by an appropriate milk cleansing lotion or Cleansing Gel (low foam). I recommend Environ Pre Cleanse Oil £26 and either Environ Youth Essentia £43 or Hydra-intense Lotion £46. If breakouts are a concern, I suggest the Sebu-Wash Gel Cleanser £34.

TREAT YOUR NECK AS AN EXTENSION OF YOUR FACE

The 45-degree angle at that you hang your head to look at your cell phone causes a repeated squishing of the neck, also called 'tech neck,' resulting in premature folds and wrinkles. To treat this, most people know to apply moisturiser to the neck, and many do this, but the mistake is made in treating the neck as an afterthought. This particularly applies with sunscreen since the number one cause of premature skin ageing is UV rays from the sun. The best way to apply sunscreen to this area is by doing a full second application exclusively to the neck. In addition to sunscreen, be sure to use your serums and moisturisers in an upward motion to go against gravity.

DON'T SKIMP ON SERUMS

No matter your skin type, a serum will help. There are many formulas to hydrate, anti-age, brighten, exfoliate,

everything. WEDDING FOOD

(you can never have too much!)

From food stalls and stations to dramatic centre pieces, Harriet Rouse shares the latest in wedding food trends.

Once upon a time, long, long ago (well, pre-2000), wedding food was still very much a formal sit down, top tables, seating plan, traditional speeches, and an evening buffet piled high with vol-au-vents, slices of traditional fruit cake, and triangle sandwiches and sausage rolls. But just writing that makes me realise that that was a different time. However, I won’t hear a word against the vol-au-vent.

There are still traditional food options for any wedding venue, but these days, you can have what you want, how you want it, and how you want it. Whether that’s trestle tables under the stars (or, given our weather, yurts), with street food vibes and the option to eat as and when you and your guests are hungry, or a grazing spread groaning with delicious produce, the rules are far less rigid, and you really can have the food that you want.

It is a truth universally acknowledged that you cannot always please all the people. There will always be voices of dissent, poo-pooing the notion that anything but a three-course sit-down meal followed by coffee and mint chocolates is somehow risqué, but these voices are (mercifully) few and far between. You see, the thing about weddings is that the day is long. Really long. Often, there are drives to get to a venue; if you live in Jersey, you might have even had to throw in a flight to the mainland, where you’ve driven the night before and had a bad night’s sleep in a hotel near the venue. And that’s just as a guest! If it’s your wedding, then you might be too nervous for food, or have a small matter of a dress to wear. With so many weddings around 1pm, do you have breakfast or brunch? And early lunch, or wait until the reception? It is a conundrum.

When once there was a strict limit of three canapés per person, with one glass of fizz while you waited to be called through to dinner, weddings have become a lot more celebratory, a lot more laid-back, and a whole lot less rigid regarding food, wine, and all the fun stuff in between.

So, whilst we still love a traditional wedding breakfast and applaud anyone who takes the time to create a seating plan to slot those awkward family members into a table where they’ll be looked after but comfortably

out of earshot from you, we’re here to celebrate the less formal, the freestyle, and the notion of putting food at the centre of the celebration, but for it to not take the headlines. You eat with your eyes, so colourful, interactive, wonderful and intriguing displays that you can also eat, with height, beautiful dressing, and an effortless vibe.

For seating, think hay bales strewn artfully around a field or marquee (with rugs on… hay bales look lovely but do prickle). People can sit where they want, with whoever they want, whenever they need a break from the party or at long trestle tables. Make a point of popping up signs saying to sit where you want, and let people meet over, and enjoy your day over your food choices. 

If you have an outside area that you know you'll be able to cook in no matter what the lovely, dependable weather does, then why not go dramatic and cook outside? Hog roasts are always a huge success, are delicious, and can feed a small army. Alternatively, paellas cooked in an oversized pan can give more options for veggie and vegan guests.

FOOD STALLS AND STATIONS

Street food is another trend that’s been hitting big for years. It goes back to the notion of catering to lots of different tastes. Whether it’s an oyster stall, delicious Middle Eastern wraps, or wood-fired pizza, the key is to be diverse if you’re going for more than one option. ECTOIN 101

Ectoin, sometimes spelled ectoine, is the latest buzzy skincare ingredient known for its protective properties.

Ectoin is a naturally occurring molecule produced by extremophilic micro-organisms, which thrive in extreme environmental conditions such as high salinity, high temperatures, and drought. It was first discovered in halophilic bacteria but has since been found in various other micro-organisms, including bacteria, archaea, and fungi.

A Home of Emotional Respite

Having embarked on her own journey of self-discovery and personal growth, Bronte Le Marquand founded Aeloria Therapy to help bridge the gap between public waitlists and extortionate private prices.

Astudy by the University of Melbourne released the alarming statistics that 10% of young adults do not make it to their 30s due to selfharm. Although these statistics are simultaneously disturbing and totally incomprehensible, this is sadly the harrowing reality of our society today.

The Mortality Statistics provided by the Government of Jersey for 2022 revealed that mental and behavioural disorders were one of the four most significant contributors to the overall rate of deaths on the island, alongside neoplasia and respiratory and cardiovascular diseases. Together, these causes accounted for four in five (74%) of all deaths in 2022, 8% of which were due to mental and behavioural disorders.

What can be done to combat these statistics, given the never-ending rise of the digital age, the limitless resources accessible to young adults on social media, and a magnitude of additional external factors?

The dichotomy of private practice, as opposed to public practice, leaves many wondering where and who to turn to. On the one hand, despite their best efforts, the public sector can have wait lists of up to 6 months, which isn’t feasible for some. Once

we are allocated our long-awaited ‘slot’ for our desired therapy, we are left with little autonomy as to who we are assigned to. From my own experience, having waited months for the relevant support, I was disheartened to learn that I not only lacked rapport with my therapist but also did not benefit from their tick-box approach. In the same breath, there are concerns about how those waiting on these lists cope during this time.

I have always been fortunate to confide in my family and close friends, but support systems might only be present for some. Of course, it goes without saying that charities such as Samaritans, Mind, Brighter Futures, and JAYF, to name a few, are invaluable pillars of support for thousands of individuals. However, I suppose the question is how we can give young adults that “right-hand man” and tailored support?

On the other hand, although private practice offers the immediate

accessibility that the public sector cannot promise, it comes at a cost. More often than not, the rates of private practice naturally limit its own accessibility, in turn leaving it a financially feasible option for the minority. The media have glamorised private practice for years, unlike how public practice has been repeatedly ill-depicted. By way of example, it seems far more attractive to be Carrie Bradshaw from Sex and the City with her ‘celebrity shrink’ psychotherapist, which serves as her ‘very expensive foster care’, as opposed to the public practice institutions depicted in the iconic One Flew Over the Cuckoo’s Nest and Girl Interrupted. Regardless, it seems perplexing that even though mental health comes without prejudice or discrimination, in a way, the lack of options in between public and private practice fuels this. Therefore, it begs the question, how can something so crucial leave us completely stuck between a rock and a hard place?

There is a desperate need for relatable, accessible and affordable services that balance the desirable elements of private and public practices. Our options shouldn’t be reduced to grinning and bearing increasing waitlists, nor should one feel they need to surrender to a financial commitment beyond their means. This is why I created Aeloria Therapy, a home of emotional respite that is economically modest and available for those like myself who have felt caught in the middle. Everyone deserves to have autonomy over their mental health and know that despite their circumstances, they are entitled to the best support as much as the next person.

craftspeople utilised throughout, the project embodies the design studio’s commitment to both style and substance.

Influenced by international ideas of slow living which prioritise comfort and wellbeing, ‘wabi-sabi’ (Japan) and ‘hygge’ (Denmark), the design concept undulates between softness and sophistication, mirroring the dual function of The Cultured as both a place to work and unwind. This is achieved by the blending of organic and geometric details to create a haven of earthy tones, contemporary accents, and natural textures.

You ascend a statement-lit staircase to the first floor which leads to the Shallow Work and Hydration Area, a flexible room which can transform to cater to the versatile needs of the space. From collaborative informal co-working, workshops or socialising during events, the furniture can be easily re-arranged or packed away depending on what’s required.

The organic texture of the limewashed walls on this floor add a rugged, casual quality to the sleek space, all whilst being a completely anti-bacterial, vegan and eco-friendly material. Next door, a Socialised Working space boasts statement banquette seating for breakout chats, downtime and creative conversations.

Upstairs, you enter the Deep Focus work area – aided by the superior sound proofing of the LVT flooring used throughout, this is a dedicated quiet zone for zero distraction working.

And finally, complete with a bespoke wood panelled statement wall, a large round table for discussions and a Smart TV screen for presentations, the Meeting Room is the ideal space for more formal discussions.

Commenting on the design

concept, Clare said: “It’s not often that you get to work on a project where the design is completely fundamental to changing the entire function of the space. Nicola and I had a really clear vision from the start, which was luxurious but also calming, playful and reflective – somewhere you go for both focus and fun. Playing with bespoke lighting accents became really central to our entire design. This brought a level of precision and radiance that brought the whole space together.”

Founder of The Cultured, Benji added: “The Cultured is a place where luxury and authenticity collide, and the design concept delivered by Interiors by Pebble really speaks to that. It has been an incredible experience working with the Pebble team. They completely understood

my vision right from the beginning and, even though we were working to a tight timeframe, I was so impressed with how efficiently and creatively they approached the project.”

Spring Gardening

Get your garden ready for spring by attracting bees and preparing a cutting garden.

Hear that noise? That is spring. The familiar sight of birds carrying improbably large twigs, the blossom on the trees, and the lengthening days mean we can finally return to the garden.

Alongside general maintenance such as weeding, checking on fence panels after the storms, jet washing the patio and tidying up, there are some great spring projects that you can get involved with that will ensure optimum enjoyment of the garden in the coming months (by which we mean the bit where you sit down with a glass of something chilled and look at your handiwork!)

WELCOME THE BEES

Whilst some pollination is wind-born, bees are crucial to our gardens. The good news is that it's straightforward to make your garden welcoming to bees and other

pollinating insects, and – the more you encourage them – the better your garden will look.

Why not put out a bee hotel? If you try it, opt for the smaller versions that encourage solitary bees, as honeybees are content in their hives.

Alongside spring bulbs, there are some other great early pollinators that not only give colour and interest to your garden but also encourage bees and insects.

Why not try planting out some Broom? With its delicate early flowers readily available in light pink and yellow varieties, it is a hardy evergreen that continues to give structure throughout the year. Skimmia is another excellent addition to any garden. It smells incredible and flowers early. It's also great for winter foliage, with the clusters of red buds being a great addition to any winter wreath.

PREPARE A CUTTING GARDEN

There are very few people who don't like bringing the outside into their home with flowers, plants or foliage displays, be they real, faux, or a mix of the two. One way to do this and keep your costs down is to plant a cutting garden. It might sound like you need a lot of space, but you don't. You just need time and a little bit of planning and preparation. It would help if you also kept cutting, as the more you cut your blooms, the more they'll come. Here are some ideas that can work for your space, be it a window box or an unloved bed.

It's worth remembering that while the rest of your garden might be designed to look nice all the time, a cutting garden is intended to be, well, cut. It will be functional and pretty, but not to be used as a border for displays.

PREPARE

First, choose a spot, ideally sunny, and perhaps a bit tucked away so that it's not the first thing people see. If you're lucky enough to have room for a veg patch, you can borrow a couple of rows of that to try out a year of working on a different crop. If space is limited, then a couple of small planters can be surprisingly productive; just ensure you keep them watered and fed.

You need to plan. Group plants by height so they all get sun. Group them by when they start flowering, and ensure you have access by planting them in rows.

Whether you opt for a couple of window boxes or have a larger area, preparation is vital. Weed thoroughly so your flowers don't have any competition, and mulch at least twice - once at the start of the planting and once halfway through the season. Mix in some organic fertilizer and compost, and you'll be giving your blooms the very best start in life.

CHOOSE YOUR FLOWERS

Choose what you love. There's no point in putting in Dahlias if they leave you cold. Likewise, if you're all about modern striking arrangements, go big - foxgloves (biennial) or alliums (bulbs). Remember, though, that if you go tall, many plants will need staking to support their growth.

If you're fond of a small, country-style arrangement in a small vase, anemones, sweet peas, poppies, and other short stemmed plants are a great place to start –though poppies do not last more than two or three days in a vase.

One of our favourite plants is a sunflower – they look gorgeous, and you only need one or two to make a real impact. They're also a great way to get the kids involved with your planting (or to give them something to do in their own pot!). Choose a variety with multiple heads to get as many as possible for your displays – you can find the details on seed packets. 

Ganache Jersey is an accumulation of experiences gained by chefs Glenn Noel and Constance Claperon throughout their journey as pastry Chefs, delivered through fine chocolates and French patisserie.

Based in Millais House, Castle Quay, Glenn and Constance have been producing a high-quality range of chocolates, pastries, biscuits and macarons since opening in August 2023. The products are handmade using artisanal craftsmanship. Each chocolate is designed, produced, enrobed, decorated and hand selected for each box. GLENN NOEL

Born and raised in Jersey, Glenn has always had a passion for food and cooking. At 16, he joined the Academy of Culinary Arts at Highlands College and worked for the Royal Yacht Hotel in Cafe Zephyr. He completed his diplomas at Highlands College and received a Medal of Excellence from City and Guilds. At 19, he won the Channel Islands Young Chef of the Year in 2011.

He then went to work at the Michelin Starred Ocean Restaurant at the Atlantic Hotel and spent a few years there under Mark Jordan before moving to the 3-timeswinner of the World's 50 Best Restaurants, Noma in Copenhagen. After Noma, Glenn worked for Tom Kerridge at The Hand and Flowers before moving back to Jersey and taking charge of the pastry section at The Atlantic Hotel.

In 2016, Glenn moved to France to work for the renowned chocolate company, Valrhona, at their school based in Versailles. After 2.5 years and a promotion from assistant to teacher, Glenn was offered the position of Valrhona Pastry Chef for the Middle East, India and Africa, based in Dubai. Covering 23 countries, he was responsible for sharing the Valrhona know how and coordinating the pastry activity across the zone. After

nearly 4 years in the Middle East, Glenn decided it was time to move back home and start Ganache Jersey.

CONSTANCE CLAPERON

Originating from a small French town in the Rhone Alps, Constance has grown up with French gastronomy and developed a real passion for pâtisserie and chocolate.

After completing CAP and Bac Professional in boulangerie and pâtisserie, Constance moved to the heart of Lyon and spent 4 years working for the renowned chocolatier, Bernachon. It was here she developed her love of the trade, using traditional methods to make all types of confectionary from raw ingredients.

Constance then moved to Paris, the epicenter of pâtisserie. She worked 4 years for Le Pâtisserie Cyril Lignac and worked in all aspects of pâtisserie, chocolate and bakery. Her last post being in charge of the dough for making the vienoisseries, brioches and galettes. Her time in Paris included stints working for Christophe Michalak, Sous Chef for Julien Duboue at B.O.L.O.U.M, Mamiche and at the Park Hyatt.

In 2019, she moved to Dubai to work for the pastry department of Classic Fine Foods UAE. After 3 years, she moved to Jersey with Glenn to open Ganache Jersey.

Pea and Mint Pesto

Mint pesto is a light, fresh alternative to classic basil pesto and goes really well with peas.

INGREDIENTS

• 100g Peas

• 30g Pine Nuts

• Fresh Mint Leaves, washed, dried

• 25g freshly grated Parmesan

• 60ml quality Olive Oil

• 1 Garlic clove, peeled and crushed

• Juice of half a Lemon

• Sea Salt and Black Pepper

METHOD

Blitz all ingredients in a food processor and check the seasoning before transfer to an air-tight container. Store the pesto in the fridge and use with pasta, as a salad dressing, or stirred into vegetable soup.

Asparagus and Spinach Soup

Traditionally the English asparagus season runs from St. George’s Day to the Summer Solstice so there are just a few short weeks to enjoy this delicious seasonal treat.

INGREDIENTS

• 100ml quality Olive Oil, plus a little extra

• A large bunch of Asparagus

• 1 medium Onion, peeled and finely sliced

• 2 sticks of Celery, washed and sliced

• 2 large handfuls of Spinach, washed and dried

• 1 quality Vegetable Stock Cube

• Sea Salt and freshly ground Black Pepper

• Small bunch of fresh Chives, finely chopped

METHOD

1. Prepare the asparagus by removing the tough woody ends. Chop the stalks and save the tender tips.

2. Heat the oil in a large saucepan, add the onion and celery and cook until soft. Add the asparagus, stock cube and 600ml of boiled water. Bring to a simmer and cook for 15 mins until the asparagus is soft.

3. Remove from the heat and stir in the spinach. Allow to cool slightly. Carefully puree the soup with a hand blender.

4. Gently reheat, check the seasoning, and serve garnished with a drizzle of oil and the chopped chives.
