Elderflower & Lime Martini

Perfect for spring, Christian Gott's recipe is full of floral notes from the elderflower, balanced by the tart fresh lime juice
Adry Martini consists of dry, white vermouth and gin. Over time the amount of vermouth has dropped from around a quarter to almost one part in fifty; this is achieved by swirling the vermouth in the serving glass or with ice and then throwing it away (you can always use it in cooking). Today there are numerous variations, from the Espresso Martini to the daringly named Porn Star Martini made with vanilla-infused vodka and passionfruit juice.

ELDERFLOWER & LIME MARTINI
You will need a mixing jug, martini glass and a small strainer or sieve.
Ingredients
50ml Gin
(preferably with lots of botanicals)
30ml Elderflower Cordial
15ml Lime Juice, freshly squeezed
15ml Dry Vermouth
Method
1. Pour the dry vermouth into the martini glass and swirl it around in the glass to get it up the sides. Pour out all but a small splash of the vermouth.
2. Fill a jug halfway with ice cubes and add the remaining ingredients and stir slowly until very cold.
3. Strain the mixture into the vermouth rinsed glass. Sit back, sip and relax.
