SOURDOUGH & ARTISAN BAKERY What is sourdough bread?

Sourdough is a leavened bread, which means the dough naturally rises as a result of gas which is produced as the grain ferments. While most commercial breads use baker’s yeast as the raising agent, sourdough is made using a naturally occurring sourdough starter.

Why is sourdough bread good for you?

The long, slow fermentation makes a loaf of sourdough bread more nutritious, as the body can access and use more of the fibre, vitamins and minerals contained within the loaf. This fermentation also reduces the gluten load, so that the sourdough bread is more easily digested, and it increases resistant starch, which can control blood sugar.

Supports gut health: the fibre and plant compounds, called polyphenols, become more bio-available. These act as an important fuel source for our gut microbes, Aids blood sugar management: The fermentation process and higher fibre content makes sourdough a useful option for those with blood sugar management issues.

Reduces the risk of heart disease: Typically, diets high in fibre are associated with a lower risk of heart disease.

Easier to digest: The slow fermentation process increases the bioavailability of the bread’s vitamins and minerals & also starts the breakdown of proteins (including gluten), making sourdough easier to digest.
