outh Jersey is turning a sea of green as fans in Atlantic and Cape May County get ready for Superbowl Sunday. The 13-3 Patriots, who have been in the big game three of last four years are 5 point favorites over 13-3 The Eagles. That comes as no surprise to local fans that seem to embrace it. The birds have been decided underdogs before the season began and then after Carson Wentz was injured. After their playoff win over the Falcons, players Chris Long and Lane Johnson found a creative way to call out the naysayers. They put on their dog masks and walked off the field. Since then, the masks have been flying off shelves as fans have gone doggone

Ode to the Underdog
I
From the Editor
f I were a gambler, I'd put my money on the underdog. Out of necessity, the underdog is scrappy. The underdog learns to work harder and be more resourceful than their opponent. Their past is marked by stunning victories and staggering defeats, and they are conditioned to be resilient. The underdog is well-versed in the art of getting back up and doing “whatever it takes.” Grit is one of their favorite words, as it embodies their passion and perseverance. No one expected the Eagles to make it to the Superbowl, and that makes their journey to the big game a thousand times sweeter. As underdogs, they were underestimated from the start, which has offered them an unbeatable mental toughness, drive, and focus. The story of David and Goliath,
found in the Bible's Old Testament, is one of the most famous underdog stories. Goliath was much bigger and more powerful than David. In spite of that, David had the courage and sheer determination to challenge him. David was resourceful. He was faster and more agile because he was small and had no armor weighing him down. He transformed his apparent disadvantages into strengths, and ultimately arose victorious. Here at Shore Local, we know a
thing or two about being the underdog. Billionaires in Nebraska have bought out most of our area’s print media, which makes us one of very few locally owned and operated news sources. As such, we face an imposing Goliath each day. This is a feeling most small business owners know all too well. As national chain stores and restaurants seem to take over our local communities, small business owners must embody unwavering grit, passion, and determination in
order to succeed. In my experience, small businesses deliver consistently better service than their big business counterparts. The stakes are much higher for small businesses and they take pride in their contribution to the fabric of their communities. The connection between the customer and the owner is much more direct in small business, and they will fight and work diligently for your loyalty. From all of us at Shore Local, we offer heartfelt gratitude to all of the advertisers, columnists, and readers who have believed in us and given us the opportunity to succeed. We are the underdog that promotes other underdogs. We implore you to keep your dollars in your community by shopping local, eating local, and thinking local. We believe in the power and integrity of small business and we acknowledge and respect the superior grit and determination embodied by small business owners. Here’s to the underdogs who follow their passions and pour their heart and soul into everything they do. Never underestimate them. Fly Eagles Fly!
Peace & Love, Cindy

Shore Local Talent: Gianni Nistico lost his home to Hurricane Sandy and came to live with Gianni and his family in Linwood. “I remember seeing the box of magnifying glasses and my uncle creating etchings on boots,” said Gianni. It was not love at first sight though. “It took me about two and a half years to really like it and appreciate the art if it,” explains Gianni.
By Cindy Fertsch
G
ianni Nistico creates amazing pieces of art. What’s equally amazing is that he does it only using a piece of wood, a magnifying glass and the sun. It is called Solar Pyrographing and there is only a handful of artists doing it in the entire country. Gianni first learned the art from his Uncle Anthony, who had
Now Gianni has mastered the art of Pyrographing and has created hundreds of pieces. His work is displayed in the Ducktown Tavern, Kelsey and Kim’s Soul Food and the North Baltic Distillery in Atlantic City, Ernest & Son in Brigantine and Tailgators in Galloway. Recently Gianni created an etching of the Atlantic City
skyline to present to the Mayor Frank Gilliam. Gianni is a 2012 graduate if Mainland Regional High School and he currently lives in Ventnor. His favorite place to create is on the Atlantic City Boardwalk. The angles of the sun are critical to his work and he looks forward to March and April when he will be able to produce more. Gianni sells his artwork at all of the area’s Art Shows, at Peace if Wood in Ocean City, at The Honey Tree in Northfield and also online through Etsy and Instagram. He also takes many custom orders. If you would like more information about purchasing Gianni’s artwork you can email him at gn17920@gmail.com

Hometown Hero: The Brigantine Polar Bears
By Cindy Fertsch
E
veryone in Brigantine looks forward to the Polar Bear Plunge. The Brigantine Polar Bears are the nonprofit organization that make it all possible. What began in the year 2000 with just a couple hundred people, and no fundraising, has grown to include more than 6,000 participants on the beach, and a town wide party fervor, all while raising $70,000 for charity. The Brigantine Polar Bears include 60 volunteers, all headed up by three Board Trustees and a Polar Bear: Tricia Cosgrove, Emmett Turner, Rip Reynolds and Rosemary Kelly. This year the New Year’s Day Event was rescheduled due to extreme temperatures. “It was just too dangerous,” said Rosemary. It was held on January 13th instead and as luck would have it, temperatures were at least 40° warmer. However, the ocean temperature was colder than ever. That didn't hold anyone back though. “We are still counting
the dots on the drone photos,” reported Emmett Turner. Rosemary spent the day in costume as the Polar Bear, posing for many photos. “It is a giant party on the beach with a DJ and Phillips Seafood is there giving out hot soup to all that took the cold plunge” said Rosemary. “Everyone loves it and it is great for business.” It is held in front of the Laguna and there is a big party there afterwards. In recent years, participants have begun wearing costumes which has added a new element of fun to the festivities. A favorite this year was a large group that came in costumes, each representing one if the many Mother Goose Nursery Rhymes. “It has gotten so big that it has replaced much of the New Year’s Eve celebrations. In Brigantine, New Year's Day is the day to celebrate and party,” said Board Trustee, Tricia Cosgrove. All of the money raised by the Brigantine Polar Bears is donated to the Fisher House Foundation, which provides comfort homes for families receiving medical care at major

military and VA medical centers. “It is similar to Ronald McDonald Houses, but for veterans,” explains Rosemary Kelly. “We chose this charity for two reasons,” says Board Trustee, Emmett Turner. “ The first is we love our veterans and we
want to help them. When a veteran’s family is able to be near them while they are receiving treatment , they respond better. The second is because the Fisher House Foundation has a four star rating; 97 cents of every dollar goes directly towards their mission.” In total, the Brigantine Polar Bears have raised and donated over half a million dollars to Fisher House. The Plunge is free so how do they raise so much for their charity? The Brigantine Polar Bears sell long sleeve
t-shirts and hoodie sweatshirts with sponsorship names on them. This year they had 170 sponsors. Sales for the t-shirts begin on Thanksgiving weekend and continue through the event. There is also some fun challenges that happen within the city administration. The deputy mayor, Andy Simpson, donated a $1000 - if the mayor and his wife plunged and another $1000 - if the Chief of Police and the Fire Chief plunged. They all took the challenge and $2000 was donated to Fisher House by Andy. The Brigantine Polar Bears have created the perfect Win-Win. The plunge and festivities are a fun tradition for many families. There is an excitement, that is nearly tangible, with the plungers, onlookers and businesses in town, as the day approaches. And for the icing on the cake, they are raising big money for charities that support our veterans. Kudos to the Brigantine Polar Bears!

Nor'easter's February Forecast By Nor'easter Nick
B
efore I get into the weather forecast, I’d like to touch on sports for one moment. I’m sure I’m writing to thousands of EAGLES fans out there and I’m sure you share my excitement. I mean, how could you not? I love it. Classic underdog story. As the Birds take on the Pats, it will be a David and Goliath matchup. My prognostication? 27-21 Eagles take the trophy. All we can do is support and cross our fingers! Alright onward to something I’m more of an expert in – the weather. What’s up with all this warmth suddenly? Is it Global Warming? Should we be concerned? No. It’s completely normal. We’ve witnessed a “January Thaw”. Happens more often than not. In fact over the past 100 years we’ve seen our first 60 degree day of the
year occur in January 56 times. We’ve had lots of 50s recently, but still not as warm as last year overall. Will it continue or can we expect to revert back to a cold and snowy pattern? Simple question, simple answer. The January Thaw was well anticipated. If you follow my methods of forecasting, you’d see why. I explained it in my Winter forecast. It
is my firm belief that Old Man Winter will come roaring back into South Jersey by the end of the first week of February. Perhaps even a little sooner. Upper atmospheric dynamics are projected to head in a favorable direction by then. February is typically our best month for Snow and I’m sure this year won’t disappoint. We’re at 24” of snow currently at the airport in EHT. 25% above the norm. We are
going to continue. I’d bet we’ll end the season 50% above the norm at this point. Don’t forget to check out your latest LOCAL news, sports and weather every weeknight at 7pm and 11pm on Channel 26. unday February 4th, 2018 The NFL is giving us a rematch of Super Bowl 39. The New England Patriots Vs. The Philadelphia
Eagles. Since we are in Eagles Country (extended) I reached out to some various people to get Super Bowl Predictions for this year’s game. Atlantic City Councilman, Marty Small - Councilman Small maybe the Atlantic City’s Number one Eagle’s Fan. The 14 year season ticket holder, shared his thoughts. “I never make a score prediction until the Friday before the game, so I am not going to jinx it. I can tell you we (The Eagles) are going to win.” Atlantic City Councilman, Mo Delgado - “I just want to see a good game. Patriots 28 and The Eagles 14. Gayle Brown - Ms. Brown is a teacher

Team-Patriots 30, Eagles 27. Brady and that bunch are hard to beat with two weeks to prepare. Gary Monterosso-Known in The South Jersey area as “The Beer Guy” Gary has hosted successful radio and TV shows. “The Eagles have a lot of heart! Their team is playing loose and they are having a lot of fun. It wouldn’t shock me if The Eagles won. The Eagles 27 and The Patriots 23. For Entertainment Purposes Only Here are my thoughts. My main concern is whether The Eagles can change up the defense during the 4 quarters of the game. Patriots QB Tom Brady has a history of figuring out defenses in big games. He tends to struggle early and then come on in the 3rd and 4th quarter as if he is playing John Madden football from 2008. Still, I’m going to have some faith in the “Bird Gang” and say they are on a mission.

ers, teaching new recruits as well as continuing education in firefighting and all aspects of fire service. He serves as President of Atlantic County Fire and Arson Investigator Association, which is a network covering Municipal, County, Federal and State Investigators involved in the County. There is no such thing as an “average day”, but part of his day consists of responding to emergency calls, anywhere from smoke detectors going off to actual working fires. He is in charge of the fire scene, assigning Firefighters to anything from driving the Engine, Running the Pump, or being the Interior Firefighter. Each Firefighter is trained in every position so that in any rotation, each job can be performed because of daily skills and equipment training. All Firefighters are EMT’s. All Firefighters are skilled in Vehicle Rescue, as well as Confined Space- which includes going into manholes and any other space that I don’t even want to think of… this Team keeps refreshing their skills to stay up to date on every kind of fire emergency. Battalion Chief Wellington participates in Pre-Planning mode with
Businesses, identifying what could be a potential fire hazard and how to solve it. This includes coordination with the staff, informing them of how to handle a fire and the emergency steps they need to follow. I asked what the most important fire-safety rules were in a household, and I NEED to share this: Step 1: Change your smoke detector batteries every 6 months. Do this when you change your clocks ahead or back, you can make it part of the ritual. Step 2: Replace your smoke detectors every 10 years. If you don’t know how old your smoke detector is, replace it and put a date on it in a sharpie marker. Step 3: Keep all doors, including bedrooms, closed at night. Doors will hinder the progress of a fire. On the BOTTOM of each door, try and write WHO IS IN THAT ROOM (#)Kids in Room, (#)Pets in Room, (#)Adults in Room. FIREFIGHTERS ARE CRAWLING ON THE GROUND (smoke rises, they stay under the smoke during rescue), they will know who needs rescuing/ accounting for family safe outside. If you need more information on Fire Safety, please contact your Local Fire Department. Thank you Battalion Chief Gene Wellington, We Salute You.

Now Open: Bellino’s Market
Vegging at the Shore By Marci Lutsky
O
ver the past year I’ve been writing about great things happening in Smithville Square with the opening of Smithville Eats and The Play House & Café. I’ve been patiently awaiting the arrival of Bellino’s Market. I visited recently and knew instantly that it was worth the wait. While owners Suzanne and Chris Bellino have never operated a supermarket, they both have impressive backgrounds in the culinary arts. Suzanne is a trained pastry chef who attended the Culinary Institute of America and Chris trained at Baltimore International Culinary College. With a wide range of experiences, they saw a perfect opportunity for a mom and pop supermarket in Smithville.
Bellino’s is a specialty market where you could pick up all the ingredients needed to make a fabulous meal. Fresh produce first greets you when you enter the market. Other departments include prepared foods, bakery, and a deli counter. The shelves are stocked with unique marinades, sauces, local honey and pastas. Breads come from Le Bus and Formica Brothers. Many things stood out to me when I visited Bellino’s. To shop at Bellino’s is to support a small business. When I asked Suzanne to describe the market she said they are not an Italian market,
but instead are more of a mom and pop supermarket. Suzanne and Chris are present and visible in the market working hard while interacting with customers. Their presence is known not just as the owners, but as people who are interested in making connections with their customers. It is a family affair at Bellino’s. Their mom and dad can be found working the bakery counter and stocking shelves while their daughter can be found working at the cash register when not at school. As someone who values high quality food, Bellino’s is a dream. Everything is fresh and appealing. I overheard Chris telling a customer about his fresh made soups and they all sounded so good. As I’ve been following them on social media, I see they make their own sausages and their meals to go look just fabulous. The bakery alone is worth a visit with enticing items like Jewish apple cake,
eclairs, bread pudding , muffins and baklava. The sandwich counter was bustling when I was there with people picking up lunch. You definitely wouldn’t be hungry after eating one of their sandwiches! Bellino’s is located in Smithville Square at 45 South New York Road. They are closed on Mondays and otherwise are open from 8:30-6:30 Monday through Saturday and from 8:30-4 on Sundays. You can follow them on Facebook and Instagram. Stop in and welcome them to the neighborhood! The Eagles Lesson In Teamwork We All Can Learn From
By Jeff Whitaker
W
ho would have thought the Philadelphia Eagles would be headed to the Super Bowl? Not a lot of people after December’s setback when quarterback Carson Wentz tore his ACL. With Wentz out for the season, many sportswriters and fans as well thought the entire team would come to a screeching halt too. But they were wrong. And in less than two weeks, the Bird are headed to Minneapolis. So, how has a team that lost their leader managed to not only hang on, but actually dominate? Many would say it comes down to teamwork and determination. There are so many lessons we can all learn from the Eagles and apply to our own lives. In his book The 17 Indisputable Laws of Teamwork, John Maxwell writes about what he calls The Law of Mount Everest. It essentially says when the challenge escalates, the need for teamwork elevates. That couldn’t be more true for the Eagles and for each of us as well. The reality in life is we can’t go it alone and we were never meant to either. We all need a strong support team if we’re to achieve everything we are capable of accomplishing. In the case of the
Eagles, backup quarterback Nick Foles was called into service and stepped up to the plate big-time. But the truth is, the rest of the team had to ‘up their game’ in a big way as well. Which reminds me of another of the 17 Laws, The Law of Significance. That law says that one is too small a number to achieve greatness. We’ve all heard the phrase, “Don’t put all your eggs in one basket”. The saying applies to how we tackle life as well. The reality is, when each of us learn (whether in our personal lives or in business) to bring our individual gifts to the table, play to our strengths and let everyone else play to theirs, the odds of winning in any aspect of life increases tremendously. But going at life solo doesn’t cut it. Who is on your team? Are you trying to go it alone or are you relying on the assistance of others to help you accomplish all you can on the job and in your personal life? It’s still the beginning of 2018 and if you want to have a winning year, take a lesson from the Eagles, build your team of support and draw on the strengths of each team member to make this your best year ever. Together you can do it! Jeff Whitaker is a lifelong communicator and storyteller. He is a certified trainer, coach and speaker with The John Maxwell Team. Jeff’s goal is to encourage excellence in individuals and corporations through leadership and communications training. Local Restaurants Reveal Their “Locals Only” Off-Menu Winter Items
By Kimberly Shurig Food & Beverage Editor
F
orget the “Secret Menu” at McDonald’s. It was fun and exclusive until I saw the movie “Supersize Me.” In a number of our local restaurants, however, clandestine meal options exist for those in the know. Some are dishes that patrons routinely request after they appeared as a special or vanished from the menu because revisions were made. Others were born on a whim by chefs who cooked for a table of close friends or fellow employees — and for reasons of culinary greatness, they stuck around discreetly. I hacked into several of my favorite local go-to spots and discovered things you won’t see printed on their menus.
New Owners Come to Tilton Rd Business
Vagabond Kitchen & TapHouse Atlantic City, NJ I’ve had almost everything on the menu and not one meal has disappointed. They serve over 18 tap beers on tap 6 exclusively for New Jersey, it’s an authentic craft beer drinkers paradise. While you are already dining in style, take the experience to the next level by ordering off the menu. The Carne Asada with homemade rice and beans , fresh queso fresco, sliced avocado, homemade green salsa, and toasty tortillas! This is one of those places that if you go there for any reason it is always a good decision
Fitzpatricks Somers Point, NJ In this era of food anxiety, it’s no wonder we sometimes feel the need to throw the book away and tuck into foods that remind us of a simpler time. ing else to teach us, it gets reinvented, this time at the hands of talented Chef Bill Hurst. It is made from a combination of beef, pork, and veal, individually baked to order (yeah, how come Mom never did that?), served with mashed potatoes, sautéed asparagus , and a rich homemade mushroom gravy. Get it while you can! It’s only served during the winter as an off the menu item. I’m serious, people: You need this meatloaf in your life. Kimberly Shurig is a Jersey-born, city-loving foodie! An avid traveler, always looking to discover those hidden culinary gems everywhere she goes. She loves unexpected and creative combinations, both in the food she eats and cooks. Though her palate has become more refined, she is still excited by a grilled cheese sandwich; that, and a great cup of coffee. Anchorage Somers Point, NJ I’m getting ready to order my usual crab dip and easy Fingers and I can’t help but notice the sizzling fajitas passing by. I dine at the Anchorage often and I know for a fact they don’t serve fajitas. I look up at the bartender, “It’s our off-menu winter item,” Joey Mac says, reading my mind. “It’s available only in the winter, we don’t advertise because it’s only for the locals, “ adds bartender Adam Bruno. The staff won’t come right out and tell you about this tasty item unless you specifically ask. Not even me. But now we know. Carne Asada , homemade rice and beans , queso fresco fresh avocado and homemade green salsa, and a few tortillas!!

Happy Hour Favorites By Mortimer Spreng
O
ld man winter may have gripped the Jersey shore area, bringing a blizzard and some brutally cold temperatures but don't let that stop you from venturing out and taking advantage of the Happy Hour deals offered by some of Atlantic City's oldest and best known haunts. It's a great way to beat the cabin fever we all get this time of year, and you get a chance to revisit some of your favorite places and see some familiar faces, too. We'll start with the youngest on the list, Los Amigos (1926 Atlantic Ave, AC), which has been at the same location since it opened in 1978. This Mexican restaurant is still run by the same family, Curt and Mimi Taylor, and has been a popular spot for locals since it first opened. Although the term 'Mexican food' now has many different meanings, the fare offered at Los Amigos is a perfect blend of creativity and authenticity. They have a really great Happy Hour from 3:30p-6:30p at the bar where you can get
$5 margaritas (frozen or rocks) and choose from a small bites menu, we recommend the 2 fish tacos also for $5, they are fresh and tasty with a mango salsa, a nice summer flavor to chase away the winter blues. Next up is Angeloni's II (2400 Artic Avenue, AC), serving authentic Italian restaurant with a massive wine list for 40 years now. Along with all the traditional Italian favorites, they have daily specials and some creative appetizers. And many of the staff have been there for years, so it's like going back home every time you visit. They have Happy Hour from 3p-7p Monday thru Friday (at the bar only) and from 4p-close on Sundays. You can get $2 domestic beers, $3 imports, $4 house wine, and $5 well cocktails and a $5 appetizer menu that includes clams, calamari, mussels, long hots and more. But their craziest idea is their Meatballs and Martinis special on Thursdays from 4p-close. Get a $5 Stoli Martini AND get free meatballs, it's a combination you didn't realize would go so perfect together. Our next favorite haunt is the one and only Tony's Baltimore Grille (2800 Atlantic Ave., AC), originally opened in 1927. Now here's a place everyone has been to, usually after a late night out at the clubs, and it has remained the same for decades, which is exactly why we love it. The staff is brusque, the dĂŠcor is dated, but the food is all comfort. And their pizzas
are arguably the best around. Tony's offers two Happy Hours (4p-8p bar/11p-2a bar and dining room) with rotating food and drink specials, but they also offer a 3 course 'Value Meal' 4p-6p, Sun-Thurs for only $12! Salad, main course, and dessert, now that's a deal that should get you out of the house, great food for a great price. Our fourth choice is the venerable Knife & Fork Inn (3600 Atlantic Ave., AC), an Atlantic City institution since 1912. A popular spot during Prohibition, the Knife & Fork has been home to many a famous face over the years, even making an appearance in a scene from the film 'Atlantic City', starring both Burt Lancaster and Susan Sarandon. Now owned by the Dougherty family, the food here is exquisite and served by an expert staff. They have a well-attended Happy Hour from 4p-6:30p so it's best to get there a little early if you want a seat at the bar. The Happy Hour includes 1/2 priced appetizers that include crispy duck leg confit, lobster spring roll, crab and avocado terrine, and many other tasty items. Our last choice is also the oldest restaurant in the city, Dock's Oyster House (2405 Atlantic Ave., AC),
which has been serving delicious and fresh seafood from the same location since 1897. Also owned by the Dougherty family, this local gem is a favorite destination restaurant for special events and occasions. Because of it's enduring popularity, they recently expanded, doubling their seating and creating a beautiful space to compliment their delicious culinary creations. Although Dock's is a little more high-end, they have a wonderful Happy Hour from 4p-6p that includes appetizers and, of course, oysters. There you have it, five of Atlantic City's oldest and best known restaurants all open and ready to help you chase away Jack Frost. Enjoy! Mortimer Spreng has been in the service industry in Atlantic City for decades. From opening Trump's Castle to bartending at Studio Six, from waiting tables at Trump Plaza to performing on the casino stages, he is well known to many of the residents of South Jersey. If he's not behind the bar somewhere in the city, you can be sure to find him sitting at one with a very dirty Martini in hand.

Roll Out the Red Carpet: Three Award-Winning Films You Want to See This Month
By Sarah Fertsch
I
t’s five o’clock on a Tuesday night. My twin sister Holly and I shiver as we wait in an hourlong line at the movie theater. The wind chill feels below zero but there’s a whiff of popcorn in the air. People flood the movies not just because the boardwalk is frozen solid, but it’s Oscar season. Holly and I try to watch every movie nominated so we can properly bet with our friends at Oscar parties. We’ve seen almost every film so far (except “The Post” and “The Shape of Water”), so here’s our ratings for what you need to see this January: 1. “The Greatest Showman” I didn’t expect much, but the music is stunning. Hugh Jackman revitalizes
his Jean Valjean essence and brings his classically-masculine voice to this circus-themed musical. I confess that the film soundtrack has become my anthem---I belt it out on the elliptical regularly. Zac Efron and Zendaya have real chemistry onstage, bringing real “High School Musical” vibes in their duet “Rewrite the Stars.” I was admittedly worried how the film would transform a somewhat-dark part of history into an inspirational film, but the cast was surprisingly inclusive, and the song “This is me” (which won a Golden Globe) brings anyone who’s ever felt like an outsider to tears. Please, please watch this film. Thanks.
Otherwise known as the worst movie ever? Tommy Wiseau’s production has evolved into a high-brow piece of art with a massive cult following.
James Franco (recipient of the Golden Globe for Best Actor) transforms into the mysterious, quirky Tommy Wiseau and replicates the making of “The Room.” Overflowing with cringey moments and social awkwardness, I found myself both laughing and crying. Do your research, see this movie, and you’ll understand why James Franco won Best Actor. Excited to see how the Academy Awards treat him.
2. “The Disaster Artist” Okay, so this film requires some background knowledge. Do you remember “The Room” from 2003?

3. “Lady Bird” It’s a coming-of-age film about a young girl (Saoirse Ronan) navigating high school and a complex relationship with her mother. Seems cliché? Well, the cinematography was breathtaking and Ronan’s acting is superb (She even won Best Actress at the Golden Globes). The audience was transported into the all-too-real life of Lady Bird, formerly known as Christina. As she searches for love and colleges on the East Coast, we empathize with her struggle to accept her family’s financial struggles, her father’s depression, and her mother’s standoffish attitude and harsh demeanor. The theatre was in tears by the end. It’s heartfelt and moving with splashes of awkward teenage humor. It’s well-worth the price of a ticket and popcorn. Go feel the feels. While I still want to see “The Shape of Water” and “The Post” (as a political communication major, a movie about the pentagon papers has me swooning), these films are spectacular and you deserve to see some quality works of art. Grab some buddies or bae, and make a night of it. Turn off the Netflix, throw on your boots, and have the night of your life. Then, like me, you can seem like a bada** genius at your Oscar party.

Connecting Food to Mood
By Nancy Adler
H
aving mood swings? One reason could have something to do with the food you’re eating. There are many explanations for the cause-andeffect relationship between food and mood. Fluctuations in blood sugar levels are associated with changes in mood and energy and are affected by what we eat. Furthermore, brain chemicals (neurotransmitters such as serotonin, dopamine and acetylcholine) influence the way we think, feel and behave and can be affected by what we have eaten. For example, there can be reactions to artificial chemicals in foods, such as artificial colorings and flavorings. In addition, there are reactions that can be due to the deficiency of an enzyme needed to digest a food. Lactase, for instance, is needed to digest lactose (milk sugar). Without it, a milk intolerance can build up. Furthermore, low levels of vitamins, minerals and essential fatty acids can negatively impact mental health, with some symptoms associated with particular nutritional deficiencies . There is a psychological relationship between our mood and food choices. It is generally accepted that how we feel can influence what we choose to eat or drink (mood to food). The use of caffeine is one example of this complex relationship. Caffeine found in tea, coffee, and cola drinks and chocolate is probably the most widely-used behavior modifying drug in the world. We often choose a caffeinated drink if we are feeling tired and irritable because it can give us a boost and help us to concentrate. Having a cup of coffee or tea also has a lot of positive psychological associations. We meet a friend for “coffee and a chat” or give ourselves a break by sitting down with a cup of tea, and these things are very important. But too much caffeine (which is a different amount for each of us) can cause unwanted symptoms such as anxiety, nervousness and depression. Any exploration into food and mood needs to take into account this two-way relationship and include the psychological aspect behind what we choose to eat. There are also positive connections between food and mood. Vitamins and minerals are some of the best sources to help improve and connect the mind and body. The best bet is balancing a varied diet of health supporting foods. You may even need to supplement your diet with
JANUARY 25 - FEBRUARY 7, 2018
extra nutrients. However, it’s important to get the correct balance between different vitamins and minerals, and to avoid taking any one nutrient in excess. A nutritionist can recommend safe levels of supplementation for individual needs. For a positive mood boost from food choices, you must examine your diet and consider the fundamentals. The basis of a healthy diet is about achieving a balance between a wide variety of foods, where the variety is spread out over a number of days. certain foods are eaten on most days, by most people, perhaps because they are generally considered healthy to eat. Unfortunately, these can be the very foods that are having a disabling influence upon your health. It’s often a combination of eating too much-of some foods and not enough of others that contributes to symptoms such as depression or anxiety. An essential part in making changes to your diet involves making sure you are not going without the nutrients your body requires on a daily basis. So if you cut down on one food, you will usually need something similar to eat, instead. This may mean, for example, replacing wheat-based bread with bread made from rye flour . The real foods that negatively affect our moods and cause problems with our weight control are foods containing alcohol, sugar, caffeine , chocolate, wheat (such as breads, biscuits, and cakes in some people) dairy products (such as cheese), certain artificial additives and hydrogenated fats. Other commonly eaten foods such as yeast, corn, eggs, oranges, soy and tomatoes may also cause symptoms for some people. And yet, eating healthy foods can contribute to significant improvements in the following: mood swings, depression (including postnatal depression), irritable or aggressive feelings, concentration at work, PMS, insomnia, fatigue, behavioral and learning disorders, and seasonal affective disorder (SAD). The most vital substance for the mind and body is water, good old H2O. It’s so easy to overlook drinking the recommended six to eight glasses per day. Remember that water is a low cost, convenient, self help measure than can quickly change how we feel, mentally as well as physically. We need great foods to feel great! Drinking lots of water and having a minimum of 6 portions daily of fresh fruits and vegetables is key. This provides the nutrients needed to nourish mind and body as one, and, as a holistic approach to healthcare, proper nutrition can help to manage medical conditions. After all, taking care of the mind is just as important as taking care of the body. Nancy Adler is a certified nutritionist and practitioner in Linwood.

A
tlantic County Prosecutor Damon Tyner has described James Kauffman as a "one man crime spree. "Tyner is a very measured man. He's not one for hyperbole. However, when you charge a man for plotting to kill his wife (April Kauffman) and for running a drug ring (through Kauffman's medical practice) with The Pagans; It has all of the making of a made-for-television movie. This placed the once cold case in the realm of truth is stranger than fiction. According to Tyner, after Kauffman was arrested in June, 2017, the man (Ferdinand Augello) who Kauffman allegedly hired to kill his wife, wanted Kauffman killed in prison after his arrest. Tyner believes that Augello felt that Kauffman would implicate him in April Kauffman's murder. In light of the threat on Kauffman's life, Tyner moved him far away to a different prison. Tyner prevailed at the Thursday, January 18, 2017 Detention hearing before New Jersey Superior Court Judge Bernard DeLury. Both Kauffman and Augello will remain in prison, pending their trials. Several reliable sources have confirmed to me that these criminal trials are a year or more away. April Kauffman was murdered on May 10, 2012, at approximately 11:30 a.m. at her residence in Linwood, New Jersey. James Kauffman reported the Linwood Police Department that he found his wife deceased. April Kauffman was pronounced dead at 11:45 a.m., in the second floor master bedroom as a result of multiple gunshot wounds. It remained a disturbingly cold murder case until former New Jersey Governor Chris Christie appointed Tyner 10 months ago. What stayed ice cold for five years was solved by Tyner and his various local, county, state and federal partners in just 10 months. This was no accident. The former Prosecutor, James McClain is friends with and was a former patient of James Kauffman. During the entire time that McClain was the Prosecutor, no recognizable work was being done on the April Kauffman murder. FBI Special Agent Daniel A. Garrabrant was integral in keeping this investigation alive, while McClain appeared to be "slow-walking" it here at the County level. Multiple reliable sources have confirmed to me that McClain would not even permit his staff to work on the April Kauffman murder case on their own time. When the time is right, McClain must answer some very serious questions about why he didn't do more. The driving force and the face of this case is Damon Tyner. The lead investigators are Garrabrant and Atlantic County Prosecutor's Office Sgt. James
Scoppa, Jr. They have both done a highly credible job, especially considering the disadvantage they were placed by McClain. It is very fortunate that Tyner came along when he did. People involved in this case are getting older and the alleged killer of April Kauffman (Francis Mullholland) died on October 8, 2013 of a heroin drug overdose. Had McClain continued for several more years in his former job, it is my strong belief that this case may have never been solved. McClain left his job as Atlantic County Prosecutor after being nominated/appointed to be a New Jersey Superior Court Judge. Tyner obviously has some very good sources regarding why the murder of April Kauffman occurred. Tyner has confirmed the following: April Kauffman wanted a divorce. James Kauffman did not. Tyner alleges that James Kauffman "would rather kill April Kauffman than grant the divorce and lose half his empire." Tyner further has confirmed that April Kauffman was prepared to "spend as much money as possible until a divorce was granted; expose the fraudulent practices taking place at Kauffman's medical office, which allegedly was an illegal Oxy distribution network," that James Kauffman had established according to Tyner. Tyner has successfully brought forward the following criminal charges: James Kauffman has been charged with: 1st degree Racketeering, 1st degree Leader and Murder. Augello has been charged with: 1st degree Leader, 1st degree Murder (April Kauffman), conspiracy to commit the murder of James Kauffman and 1st degree Racketeering. Six others have been charged with various Racketeering charges. It's been a heartbreaking and gut wrenching almost six years for April Kauffman's Daughter, Kimberly. She's had to endure the loss of her Mother. She's had to deal with no progress being made for almost 6 years. She had to live with the pain and anguish of James Kauffman auctioning away her Mother's belongings on the internet. Yet, Pack has dealt with a life-shattering event with poise and dignity and grace and elegance. Some how, now that closure is finally on the nottoo-distant horizon, Pack is taking an approach of "forgiveness." This is remarkable and it speaks to Pack's character. She has all of the fight that her Mother possessed. She also possesses profound class and decency. You rarely see this in today's ever more violent and caustic atmosphere that exists in our country these days. Harry Hurley is the president of Harry Hurley Consulting and Communications, LLC. e are now four weeks into the new year. Four weeks into our New Year’s Resolutions. So how are you doing? Did you lose any weight at all? Are you making any progress towards the goals of your resolutions? How many of us have made similar resolutions to yours. According to the website YouGov, the top resolutions are eat better, exercise more, spend less money, self-care, read more books, learn a new skill and get a new job just to name a few. On the other hand, Time magazine cites the top failed resolutions as, lose weight, get fit, quit smoking, learn something new, eat healthier and diet, get out of debt, spend more time with family and drink less. In my opinion, depending on your family circumstances, I don’t know if spending more time with family and drinking less go well together but keep in mind, these were failed resolutions. I think at least making resolutions are a valuable exercise. I believe they are arrived at with some measure of introspection and an intent to improve what we perceive as either shortcomings in ourselves or as a pursuit of being the best person we can possibly be. Are resolutions just for adults, though? A visit to the Ventnor Community Education Complex revealed that some kindergarteners also had some resolutions. One might wonder what life experiences they have
had to draw upon in such a short amount of time to even determine what they need to improve upon. But here they are and they are adorable: ●● I want to be better at school by reading each night. ●● I will help my classmates. I will be kind to mommy and daddy. ●● I want to get better at making good choices and playing with my toys. ●● I will brush my hair and teeth every day. ●● I want to get better at speaking English. ●● I want to get better at baking. ●● I want to play with my Doc McStuffins. ●● I’m going to stop eating candy. ●● To be nice to my new dog Sadie and do everything all by myself. ●● I want to start cleaning my toys and playing with my toys. ●● I’m going to count to 100. ●● I want to get better at my Legos. ●● I want to get good at writing my name. ●● I’m going to run to my room to put my things away and hug mommy. Kudos to the teacher who has given these children the opportunity to take a look at themselves and helped them come up with their own measurable goals. Perhaps these resolutions will be revisited throughout the year to chart their progress. I wouldn’t mind adopting a couple of these resolutions as well. What about you? Pour bloody Mary mixture over wings until they are fully submerged, reserving some to reduce. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least an hour. 5. When an hour has passed remove wings from the bowl with tongs and place on a large baking sheet. Roast 45 minutes, or until golden and crispy. 6. What’s an Underdog to Do?
By Trina Byrd, President T.Byrd Computers
T
here is a large population of Southern New Jersey and maybe even Northern New Jersey residents that took advantage of the thriving opportunities strait out high school who joined the Casino Industry in the late 70’s. We thought what a booming opportunity, the lights, action and just the atmosphere alone made you proud you were finally in the right place at the right time. I know for me, I had just graduated college in May OF 1979 and was immediately hired at that time in the Data Processing department. My starting salary was $5.00 an hour. I was rich, my goal was to get a job making $10k and life would be great there after. Others who didn’t go to college still landed jobs making triple salaries than their parents and friends. So fast forward to the now, where in large numbers we are laid off, unemployed and feel like the underdog, simply because we made sound decisions to invest our future in an industry that looked like it would never die. During the course of this journey, we learned to use technology specific to the job we were doing, never realizing or imagining that the casino industry would slow, even close, but here we are now. Our skills only meet the potential jobs of other casinos in other states and do we want to relocate, this is our home, we love the beach, we love the weather and we love being close to our family and friends. Who wants to give that up for a job? So as the underdog, what do we do? Well here are a few good options. First take advantage of the free training opportunities afforded individuals who have been laid off. Not only will you get training for free, but you can extend your unemployment an additional 12 weeks while you are in school. So what training should you take, well when you entered the workforce several years ago, technology was not a requirement for any job and if you needed computer skills, you were taught them on the job. Today, employers not only want you to have experience, but also a certification or credential indicating that you have been recently trained in at a minimum; Microsoft Office (word, excel, access, power point, publisher) and Quick Books.
“An underdog is a person or group in a competition, who is expected to lose. The party, team, or individual expected to win is called the favorite or top dog.” So now that you are in the position as an underdog, do something about it now! Enroll in our free Microsoft Office Professional and Quick Books course, so you may get the experience and credentials you need to combine your strong customer service skills of working in the casino industry with your new training to land an entry level position in any industry – since all industries demand computer skills as a requirement to simply fill out an application online, even to collect your unemployment, you need computer skills. The second option is to take this class to get the skills you need to start and run a successful business. Business and project development is incorporated in this class so you are dual trained to not only get a career oriented position, but to also start your own business. As an underdog it is your opportunity to take that dog bone and turn it in to opportunities and become the top dog and get the skills you need that will be applicable to all industries and put you back in the driver’s seat leading the way. Attend T. Byrd Training Center’s free online webinar on “Changing Careers with New Technology Skills” to get more information on how you can obtain a free training grant to go to school to become proficient in computers, get certified and get your unemployment re-instated for an additional 12 weeks. It’s time to win again as Top Dog!
