My Italian Favorites

aised in a sprawling 100% Italian family in Vineland, we rarely dined out on the cuisine of our homeland. There was a good reason; few restaurants, if any, could replicate the earnest, authentic cooking of my Sicilian/Neapolitan/Modenese/Piedmontese quartet of grandparents.

In the decades since, I’m happy to report that Italian food - in all its splendid, regional glory - is now very much alive and well in our little corner of the globe.

Without further adieu, here is our compilation of the finest Italian restaurants locally.

Joe Italiano’s Maplewood, I and II, Hammonton and Mays Landing Only a place this amazing could get away with roadside Black Horse Pike signage advertising “World’s Best Spaghetti.” Rest assured it is neither bragging nor hyperbole. Start with this: late founder Joe Italiano virtually introduced white pasta sauceslong common in New York City- to southern New Jersey. Suggestions include Uncle Nino’s special; loaded with lobster, shrimp, Dungeness cr-

ab and clams in either red or white and shrimp Geraldine in spicy white sauce. Entrees are always accompanied by their famed house salad, served family-style.

Fornelletto, Borgata, Atlantic City Easily one of the most underrated regional restaurants. With a diverse menu largely representative of northern and coastal Italian victuals, Fornelletto occupies a warm, cozy, cavernous space at the lower level of Atlantic City’s undisputed premier casino resort. Unusual options are the norm here, like ravioli del plin, filled with artichoke, spinach, and Montasio cheese in a unique butter and poppy seed dressing or porchetta accompanied by braised Swiss chard, broccoli rabe, fruit mostarda and pork jus.

Hometown Hero: Jeanne Edwards

“Y

ou may not know this, but you saved my life,” said Amanda to her big sister, Jeanne Edwards. Although she is not a biological big sister, Jeanne is Amanda’s Big Sister through Big Brothers, Big Sisters of Atlantic and Cape May County, a nonprofit organization that matches children in need of a mentor with a Big Brother or Big Sister.

Jeanne has been Amanda’s Big Sister for fifteen years. When they met, Amanda was eight years old, shy, insecure and living in a difficult situation.

Her mother’s sometimes debilitating mental illness caused frequent erratic behavior and an unpredictability that was frightening for the little girl. There were times when her mother would not come out of her room for days or even weeks and other times when she yelled hurtful words and would lock the girl out of the house. Years went by. Amanda was in and out of foster care, but her Big Sister was her one constant. They saw each other weekly for fifteen years and when Amanda had a crisis, she knew she could reach out to Jeanne for help. “Big Brothers,

Big Sisters is a great organization to work with. When issues arose, they were always available for guidance,” said Edwards.

Amanda grew up and developed a passion for science. She now resides in Michigan where she is a biologist with the Organization for Bat Conservation. She graduated fourteenth in her class from Ocean City High School and went on to graduate from Rutgers University with a degree in Ecology. She credits her success in and out of the classroom to her Big Sister. In a recent speech, Amanda describes how critical Jeanne’s presence in her life was. “When I got a little older, I started taking note of

how she would confidently walk into a room and be kind to everyone and everything. I learned how to make friends by watching her.”

One of Jeanne’s biggest goals was to help Amanda understand that her mother’s behavior was part of her illness. Now grown and at 23 years old Amanda thanked Jeannie for teaching her to separate from the mental illness. She went on to say that because she learned how to separate it, she does not resent her mother for her behavior.

Jeanne is an emergency room nurse at Atlanticare Hospital and lives in Egg Harbor Township with her husband. She also volunteers for

PACT (People Animals Companions Together), a nonprofit organization that fosters pets for deployed military personnel.

Jeanne was recently matched with her second Little Sister, Emily.

She is a shy twelve-year-old that lives with her mom and grandmother. This week they are plan on making her Halloween costume. “One of our civic responsibilities is to volunteer,” said Jeanne. “If we want our world to be better, we need to make it better. We can’t expect others to do it for us.”

Recently, Jeanne repelled 175 feet off the Sheraton building in Atlantic City as part of the Over the Edge fundraiser for Big Brothers, Big Sisters. She was terrified, but said she

knew she had to doit and is glad she did. Each match costs Big Brothers Big Sisters approximately $1400 in administrative and mentoring costs.

Jeanne raised $1200 in sponsors, almost enough to cover her match.

Next year, she plans to do it again and her goal is $1400.

Big Brothers Big Sisters of Atlantic and Cape May counties is in their 51st year of service. In 2015, 186 children were matched with a Big Brother or Big Sister. They are currently tracking 200 for 2016. anyone in their right mind think that a slow moving turtle could win a race against a rabbit?

The two make their way to the starting line. The whistle blows and off they go (at least the hare). He leaves the tortoise in the dusk. But this is where the story takes a twist.

The overconfident, boastful hare sees how far in front he is and decides he can take a nap, rest a while, let down his guard. As we find out, when he awakens he finds that the tortoise has overtaken him and won the race.

Nice story. But how can we apply it to our lives or business? Often we get discouraged when we don’t see progress. It might be with your children. You try to instill values or impact their lives in a positive way and you don’t always see the immediate fruit. Or in business,your competition seems to zoom right past you and you think, “What’s the use. I might as well quit.” Maybe, it’s a dream you’ve held close for many years and you just never seem to see the progress you hope for. Consider this, the lesson

rarely results in overnight success.

But it is rewarding if you stay the course, plot your journey wisely and keep the faith. There is a verse in the Old Testament that puts it this way, “The race is not to the swift.” (Ecclesiastes 9:11).

Maybe you feel like you’re surrounded by a drove of hare, don’t get discouraged. Consider this your kick in the seat. Keep moving forward.

Steady wins the race. I’ll see you on the other side of the finish line.

Soul Collaboration A Family That Rocks

ick My Soul is more than a band, they’re family. Kelly and Iggy clicked and started dating because of their love of music. Their dream of putting a band together became reality when Shane (Kelly’s thirteen year old son) dropped in to jam with them. After a couple of nights of playing covers they tried one of Iggy’s original songs.

Within minutes Kelly and Shane had added their own spin to it. The chemistry was undeniable. More songs like “Fascinating” and “This Place Sux” followed with the same ease and within a month they were performing in Atlantic City.

During their shows at the Boneyard in Atlantic City and Ref’s in Egg Harbor Township, Lick My Soul played covers like “Take the L” from The Motels and “Again” from Lenny

Kravitz, as well as their own original music. The band’s sound can best be described as Pop/Punk, although “BluSkyy Girl” is a slower love song with a soulful cello accompaniment.

“We have been told on many occasions we sound like the Talking Heads but with a metal feel,” said Iggy.

Iggy plays bass, keys and supplies vocals, he picked up the trombone at seven and can make noise with most instruments he can get his hands on.

Kelly learned guitar as a high school freshman and is self taught, giving her her own unique style. She also plays bass and supplies vocals. Shane plays percussion, which he sometimes does standing up. “He got his first drum set when he turned one year old and has never stopped playing since,” said Kelly.

To say Lick My Soul is driven is an understatement. They just finished recording six of their original songs at a local studio, including “Thinking of

You” a faster tempo song with overtones of The Misfits. The CD is called “Sulphur and Burnt Metal” and will be released in the coming weeks. It will be available for purchase on their newly finished website lickmysoul. com.

For the near future they are planning a CD release party and are in the process of reaching out to different venues. They plan to play the Philadelphia area soon with New York to follow. Kelly would like to play the Stone Pony and while they are dreaming big Red Rocks Amphitheater in Colorado is on their list too.

Lick My Soul likes to have fun with social media and uses it to keep their fans up to date with what they are doing. “It’s too early to pin point our audience, but if our Facebook page is any indication, it’s across the board age-wise,” said Iggy.

Something other than music that Iggy, Kelly and Shane have in common is that they all like to cook.

One of them will make dinner, they’ll eat together, then go spend time in their studio. “Our close relationship does give us more time to play together,” said Iggy, “plus we all know what works for us and what doesn’t.”

Superstar Surfer Bethany Hamilton Wows the Crowd During Her Ocean City Appearance

ola DeMarco has a white T-shirt that she vows will never, ever be washed. The fifth-grade student at the Ocean City Intermediate School showed off what has now become her prized possession, an autograph by famed surfer Bethany Hamilton that adorns the bottom of the shirt.Lola was among hundreds of adoring fans who gave Hamilton the rock star treatment during the surfer’s standing room only promotional appearance Friday night at Coastal Christian Ocean City.

A line of admirers stretched down the sidewalk along West Avenue while waiting for the doors to open for the event.

Hamilton is proclaimed as the world’s most famous surfer, not only because of her prowess on the waves, but also her inspirational recovery from a shark bite in 2003 that severed her left arm. She was only 13 when a tiger shark attacked her while she was surfing in Kauai, Hawaii.

She was back to surfing within a month of the attack.

For young girls like Lola DeMarco, Hamilton is more than just a sports

idol. The stirring tale of a teenager who survived what could have been a fatal shark attack and went on to become an elite adult surfer with just one arm has resonated with people across the globe.

Sisters Lilli and Stella Kiefer, of Greenwich Township, Cumberland County, sat just a few feet from Hamilton.“I really enjoy watching her surf and enjoy looking at her pictures,” 9-year-old Stella said.“I think it’s amazing seeing her in person, after watching her movie and reading her book,” added 11-year-old Lilli.

Hamilton, 26, is in the midst of a promotional and inspirational tour sponsored by the casual footwear maker Cobian, which carries her personal line of sandals.On Friday night, she also gave the audience a sneak peek of her upcoming film, “Surfs Like a Girl.” Her life story already has inspired a book, a documentary and the 2011 Hollywood feature film “Soul Surfer.”

Thousands Turn Out for American Cancer Society Walk in Ocean City

Burgess and dozens of other women wore sashes across their shoulders that were adorned with one very powerful word emblematic of their fight against breast cancer: “Survivor.”Burgess and the other survivors were showered with applause and cheers as they waded through a crowd in the thousands Sunday at the American Cancer Society Making Strides Against Breast Cancer Walk in Ocean City.

“It all makes you want to cry in a good way,” Burgess said of the crowd’s emotional salute. “It gives you a good feeling that you have survived.”

Burgess, 75, of Atlantic City, was diagnosed with cancer in October 2014 after a lump was discovered on her right breast. She went through a series of chemotherapy and radiation sessions for her treatment. She credited her family and her faith in God for giving her the strength to pull through.

“There are a lot of people who have breast cancer. It affects nearly every family,” said one walker, Ann MacMurray. She was among a group of employees at Shore Physicians Group in Somers Point who participated in the walk to support their co-worker, Beth Beaver, who has cancer.

Last year, the American Cancer Society’s walk in Ocean City attracted 6,000 people and raised $300,000.

Spokesman Jason Plaia estimated Sunday’s crowd at between 6,000 and 7,000. Now in its 10th year, the walk is the American Cancer Society’s biggest event in South Jersey.

“This is a growing event. Our hope is to make it even bigger every year,” Plaia said.

Halloween pumpkin-carving pointers

T

ransforming pumpkins into cleverly carved creations is a Halloween tradition. Each October, glowing pumpkins take up residence near doorsteps and porches, adding to the magical ambiance of the season. Young and old spend time designing their themes and then taking knife to pumpkin to achieve the desired effects.

Carving pumpkins into jack-o'-lanterns can be traced back centuries to Ireland and a story about Stingy Jack.

The tale involves Jack outwitting the Devil twice, the second time freeing the Devil from a prank in exchange for the promise that he would not claim Jack's soul should Jack die. When Jack did die, God did not want the unsavory character in heaven, but the Devil could not claim Jack for hell.

Therefore, Jack was relegated to roam the planet indefinitely with only a burning coal to light his way. Jack put that coal into a carved-out turnip.

His ghostly figure was referred to as Jack of the Lantern.Later on it was shortened to Jack O Lantern. When Irish immigrants arrived in North America, turnips weren't plentiful, so jack-o'-lanterns were instead carved into pumpkins.

Today, many people carve jacko'-lanterns, with some featuring just smiling or grimacing faces while others are far more artistic creations.

These tips can help anyone carve a pumpkin. ● Begin with a fresh pumpkin.

Look for a pumpkin with a green stem. If the pumpkin has been sitting around for too long or has been handled too much, the stem can get brittle and/or fall off. A

thick, fresh pumpkin is best for carving. ● Plan your ideas. Draw a plan for your pumpkin before you make your first cut. Then transfer that design to the pumpkin with pen or a thin marker. Pumpkin-carving kits come with designs that can be traced by poking small holes to create the outline of the design. ● Don't cut all the way through.

do not actually cut clear through the flesh of the pumpkin. They carve and shave off layers of the outer rind until it becomes more translucent. The level of transparency can be adjusted based on how much skin is removed and as a way to add texture and shadowing. The more air that is allowed to penetrate the pumpkin, the faster it will start to degrade. ● Delay carving until the last minute. Wait until the day before Halloween to begin carving. Pumpkins are a perishable item, and they'll begin to rot as soon as you begin carving. Spritzing them with water can help them stay fresh, but there's no turning back the clock once the first cut is made. ● Cut a hole in the back. According to Brooklyn-based Maniac Pumpkin Carvers, cutting off the top of the pumpkin can affect its structural integrity and cause it to rot faster.

Instead, cut a hole in the back of the pumpkin and use an electric light to illuminate it. LEDs are adviseable because they don't generate much heat, which can cook and rot the pumpkin from the inside out.

With some creativity and a little know-how, anyone can create an eye-catching jack-o'-lantern.

our years ago on October 29 th , Super Storm Sandy changed the lives of so many people in our area. That day will be remembered as the worst disaster to ever hit the state of New Jersey.

This storm formed in the Caribbean Sea near Panama on October 22nd and quickly intensified into a Category 3 Hurricane as it moved north toward Jamaica and into the Bahamas. As the storm continued to move north, Sandy encountered some high wind sheer which weakened the storm, but Sandy gained some strength before making landfall in Brigantine on October 29th.

The economic losses for the state of New Jersey reached $30 billion.

Over 2 million people lost power in the storm, with 346,000 homes that were damaged or destroyed; Sadly 37 people lost their lives.

This storm was historic in terms of preparations as well. Before the storm made landfall, President Barack Obama signed an emergency declaration for New Jersey. Governor Chris Christie ordered mandatory evacuations for all barrier Islands from Sandy Hook down to Cape May. All Atlantic City Casinos were forced to close and tolls were suspended on the northbound Garden State Parkway and the westbound Atlantic City expressway. Wildwood Crest received 11.62 inches of rain from Sandy and because of this storm the beaches in New Jersey got smaller by an average of 30 to 40 feet; also more than 113,000 trees in the state were damaged or destroyed.

Lucy almost got her feet wet The worst of the damage occurred just to our north. The right front quadrant is typically the side of a storm that gets the highest wind, storm surge and rainfall. Areas from Mantoloking down to Seaside were pummeled. Barnegat Bay actually met the Atlantic Ocean in Mantoloking with many homes along the beach completely wiped off their foundations. Brigantine was a spot that two miles made a huge difference.

At the northern end of the Island, the sea wall was no match for Sandy as water and beach erosion along with storm surge easily made its way over and caused extensive damage to homes and businesses. At the south-

f you stop and think about it, grapes are pretty darn amazing.

It’s almost like they were created for making wine. Customers ask for all kinds of wines made from all different kinds of fruit. Most of these “fruit wines” are actually wines made from grapes with other fruit flavor added. Grapes are the only

ume compared with grapes, and are pretty bad at making wine on their own. Although these alternative “fruit” wines aren’t necessarily my thing, I am amazed that some wines have such strong characteristics of other fruits. It’s sometimes difficult to explain to some people that these wines are just made from grapes.

Let’s say that you have a nice Napa Cab that tastes like blackberry, or an Oregon Pinot Noir that tastes like cherry. You’re actually right. When certain grapes ferment into wine, they often start to resemble the chemical signature of other fruits. Customers often ask me to recommend a wine that tasted like grape juice. My answer… They all taste like grape juice.

The way a grape stores it’s juice in different compartments is also quite amazing. The first pressing of the grapes produce the best wine. 2nd and 3rd pressings, maybe not so bad, but the juice will get more bitter as you get closer to the center of the grape with the seed. The way the grapes store their juice, also lends itself quite nicely to pulling up flavors from the soil, which gives wines from certain regions their unique style.

The True Inventor Lost To The Monopoly

o Elizabeth Magie, known to her friends as Lizzie, the problems in America were so vast, the income inequalities so massive and the businesses so mighty that it seemed impossible for one single woman to fight it. She needed a way to express her progressive beliefs to the masses. So at night, after working at the US Post Office, Lizzie sat in her home, drawing and redrawing, thinking and rethinking. She would do it through a medium that interacted with millions of middle-class families: a board game. And so Lizzie set to work creating a game about money, power

Patent by Darrow and monopoly. In 1903, Lizzie received a patent for an invention she called the Landlord’s Game, a square board with nine rectangular spaces on each side, set between corners labeled “Go to Jail” and “Public Park.” Players circled the board buying up railroads, collect-

ing money and paying rent. She made up two sets of rules, “monopolist” and “anti-monopolist,” but her stated goal was to demonstrate the evils of accruing vast sums of wealth at the expense of others. Speaking out against the railroad, steel and oil monopolies,

she told a reporter in 1906, “In a short time, men and women will discover that they are poor because Carnegie and Rockefeller, and that maybe they have more than they know what to do with.”

She sold her patent for The Landlord’s Game to a small game publisher out of New York for $500. Sales fizzled and Lizzie moved on – not knowing that series of variant games based on her concept was later developed.

These games were not sold in a store or packed in a box, but passed from friend to friend.The homemade game became popular among intellectuals along the Eastern Seaboard, including Quakers living in Atlantic City.

Years later, this evolved game with Atlantic City street names found its way to thehome of a Philadelphia businessman named Charles Todd.It was 1932 in the midst of the great depression. He and his wifeintroduced their friends Charles and Esther Darrow to a game they had recently learned to play themselves. The two couples sat around the board, enthusiastically rolling the dice, buying up properties and moving their tokens around. The game didn’t have an official name but they called it the monopoly game.

Charles Darrow asked Charles Todd for a written copy of the rules…and Monopoly was born (or recreated). It was the Atlantic City iteration that Darrow copied and sold to Parker Brothers in 1935, along with his tall tale of inspired creation. It became a phenomenal success, eventually making the poor unemployed fathermillions. A few years later, a journalist from The Philadelphia Bulletin asked how he had managed to invent Monopoly out of thin air.“It’s a freak,” Darrowsaid, “Entirely unexpected and illogical.”It was a story too good to be true. The myth of Charles

Darrow’s innovation existed for many years,thanks to Parker Brothers and the man himself. Monopoly became a massive hit, selling 278,000 copies in its first year and more than 1,750,000 the next. It became the bestselling board game, after checkers and chess.

The game lost its connection to Magie and her critique of American greed, instead it came to mean pretty much the opposite of what she’d hoped. Lizzie Magie died in 1948, a widow with no children, whose obituary made no mention of her game invention.

Lizzie Magie’s role in the invention of Monopoly remained obscure until 1973.

That’s when Ralph Anspach, a leftwing academic created a game he called Anti-Monopoly. Like Lizzie, seventy years earlier, itprofessed against greed. Parker Brotherssued him for stealing their concept. As he seeking to undermine the company’s hold on the intellectual property, he uncovered Lizzie’s story. The case lasted a decade, but he prevailed in the end, in the process putting Lizzie’s vital role in the game’s history beyond dispute.

Changes In The Game’s Street Names Atlantic City’s Illinois Avenue was renamed Martin Luther King Jr. Blvd. in the 1980s.

St. Charles Place no longer exists, as the Showboat Hotel was developed where it once ran.

Arctic Avenue was changed to Mediterranean Shore Fast Line railroad was changed to Short Line It was not until 1995 that Parker Brothers acknowledged the misspelling of Marvin Gardens, formally apologizing to the residents of Marven Gardens, a neighborhood in Margate.

he 2016 Phillies season was one that had its ups and downs. They started out the season very strong, winning close ball games and getting clutch hits when the game was on the line. At one point they were in first place early in the season and had the second best record in the National League. Youth and inexperience caught up with this club and the Phillies came back down to earth.

They played very well in stretches the rest of the season, but they also had several losing streaks of five games or more. Many experts predicted the Phillies to be among the worst teams in baseball. They played a bit better than expected with a respectable recordof 70 winning games, finishing in fourth place in the National League East ahead of the Atlanta Braves.

for the Phillies, and he had a tremendous season overall. His fifteen homers and 25 stolen bases, along with being a reliable hitter all season long.

This club had trouble with runners in scoring position, ranking near the bottom in that category and they struck out far too often. As a result, the club will have a new hitting coach in 2017.

In terms of pitching, Jeremy Hellickson and Jerad Eickoff led the rotation that had its ups and downs in terms of injuries and performances. Vince Velasquez struck out sixteen Padres in a game early in the season, got hurt but finished on a solid note. Aaron Nola was up and down all year but his season ended prematurely due to an elbow injury. He only managed six wins on the year. Adam Morgan, Jake Thompson, and Zach Eflin all spent time in the rotation this season. Jeanmar Gomez had a great first half of the year but absolutely

Pete Mackanin did a nice job in his first full season as Phillies manager. I thought players got better as the season progressed – especially Cesar Hernandez and Freddy Galvis. The biggest surprise was the play of rookie first baseman Tommy Joseph. He was called up to replace a struggling Darin Ruf and he excelled by hitting 21 homers and driving in 47 runs while platooning with Ryan Howard.

Speaking of Howard, sadly 2016 was his last season in a Phillies uniform. He will go down as one of the greatest to ever wear Phillies pin stripes. Ryan Howard hit 25 homers in his final season which tied him for the team lead with Maikel Franco.

Cameron Rupp and Freddy Galvis far exceeded expectations in terms of hitting home runs with Rupp hitting 16 and Galvis hitting 20 long balls respectively. Oduebel Herrera was the lone All Star this year

tired down the stretch and while his 4.85 ERA doesn’t look so good, he managed 37 saves. Hector Neris had the second most strikeouts by a Phillies relief pitcher ever with 102. He has the tools to be a future closer.

As we head toward the off season General Manager Matt Klentak will continue to make upgrades with this club. He will pick up some hitters signed-on free agents or acquire them through trades.

This team will be fun to watch next season as this young team continues to grow and improve.

Tales of The Jersey Devil

olklore of the New World abounds with tales of otherworldly beasts- labeled ‘cryptids’from the Greek word ‘hidden’ or ‘secret’- but none older, or more historically-significant than our own Jersey Devil.

For those unfamiliar, our story begins sometime around 1735, when a woman known only as ‘Mother Leeds’ was preparing to give birth to her 13th child. She lived in Atlantic County’s northeastern outpost of Leeds Point, six miles north of Absecon, sandwiched midway between westerly Smithville and the Edwin B. Forsythe National Wildlife Refuge to the east.

In that colonial era, thesewere referred to as “The Wilds of South Jersey”, particularly the nearby district which would later come to be known as The Pinelands;a densely-forested, uninhabited sprawl of intimidating, boggyterrain.

An ideal locale for the birth of a monster.

One version of the tale tells ofan angry Mrs. Leeds exclaiming publicly, upon discovery of her latest preg-

nancy, “May it be the devil!”A slightly different variation has her, during a prolonged, painful childbirth, invoking the assistance of the devil (and after twelve children, can anyone really find fault with her?)

There are also those who suggest a Leeds family curse, or perhaps her unwillingness to convert from strongly-held Quaker values to conventional Anglican liturgy.

Yet another, more fact-based rendering has the Leeds clan coming into business conflict with up-and-coming

Regardless, descripcriptions of the ‘monster’ stter’ seem to be fairly co cononsistent.

Most refer to a kangaroo-like being g with the head of a goat,, leathery bat-like wings, horns, arms m with clawed ms hands, cloven hooves ves and a forked tail. It has been reported eported to move rapidly with the ability to fly and emitting a ‘blood-curdling’ howl.

Interestingly, as early as 1728, The Leeds Almanac featured a masthead including the family crest, which contained three figures on a shield.

J

anuary marks the dawn of a new year, but for football fans, the first month of the calendar year also means the playoffs are about to begin. Football gatherings can be fun for ardent and novice fans alike. One of the reasons such get-togethers appeal to so many people is food, which typically plays a big role on game days. Hosts who want to wow their guests with homemade chili can try their hands at the following recipe for Texas Chili With Chipotle Cream from Neal Corman's Virgil's Barbecue Road Trip Cookbook (St. Martin's Press).

Texas Chili With Chipotle Cream •

Serves 4 to 6

Chipotle Cream • • • • • • •

101,2 ounces goat cheese 2 tablespoons pureed chipotle in adobo sauce 1 cup plus 2 tablespoons heavy whipping cream Juice of 1/2 lemon Juice of 2 limes Zest of 1/2 lime 1/2 teaspoon kosher salt

2 tablespoons Texas Chili Spice Mix (see below) 1/4 cup canola oil 2 pounds skirt steak 2 teaspoons kosher salt 1/3 pound sliced bacon, diced 4 cups finely diced yellow onions 2 cups finely diced green peppers 1/2 cup chopped garlic 1 28-ounce can crushed tomatoes, drained 2 tablespoons dark brown sugar 2 tablespoons dried Mexican oregano 2 tablespoons Texas-style chili powder (use 3 to 4 tablespoons for a thicker chili) 3 tomatillos, rinsed and diced 3 tablespoons corn masa flour (recommended: Masaca) 2 tablespoons pureed chipotle in

adobo sauce 5 cups beef broth • 2 16-ounce cans black beans • 1/2 bunch cilantro, coarsely chopped, divided • 1 13-ounce bag tortilla chips, crushed 1. Combine all the ingredients for the chipotle cream except for the zest in a food processor. Process until evenly incorporated.

2. Remove to a medium bowl and fold in the zest. Refrigerate for at least 2 hours before serving.

3. Mix the Texas Chili Spice Mix with the oil to make a paste. Dust the skirt steak with salt, then baste with the paste.

4. Marinate for 1 hour and then grill over high heat to medium rare.

Set aside and allow to rest.

5. In a large, heavy-bottom pot, render the diced bacon until it is crispy. Add the onions, green peppers and garlic, and sautŽ until slightly brown.

6. Add the tomatoes, brown sugar, oregano, chili powder, tomatillos, flour, and chipotle. Heat for 3 minutes, or until the mixture begins to thicken.

7. Add the beef broth, bring to a boil, and reduce to a simmer. Simmer uncovered for 1 hour.

8. Cut the steak against the grain into small cubes. Add the steak and beans to the chili, and simmer for an additional 20 minutes.

9. Add most of the chopped cilantro and serve over crushed tortilla chips with a dollop of chipotle cream and a sprinkling of fresh cilantro on top.

Texas Chili Spice Mix Makes 1 cup 2 tablespoons guajillo chili powder • 2 tablespoons chipotle powder • 6 tablespoons ground cumin • 4 tablespoons dry Mexican oregano • 4 tablespoons sweet paprika Combine all the ingredients in a medium mixing bowl. Transfer to a covered container and store in a cool, dry place.
