More and more people are becoming fully vaccinated and in person events are happening with many more being scheduled.

Outdoor venues seem to be the safer bet so many major events are moving outside.

Warming Up To Spring

S

pring continues to stretch its legs across South Jersey as green up is now underway.

We're back on daylight saving time and enjoying the extra evening daylight. And our average temperatures continue to slowly and steadily warm each week.

As a meteorologist, spring usually comes in a few stages, defined by the most common questions I get from March through May. In March, it's something like "Are we all done with the snow?" or "Are you sure I can put the snowblower away?" And thankfully this year, the last measurable snow fell on February 18th.

Next comes April, when a high volume of questions come from the gardeners, landscapers, and farmers throughout South Jersey. "Am I safe to plant my tomatoes yet?" or "When is our average date for our last frost and freeze?" are some of those annual April inquiries. So the focus shifts from snow to any lingering cold

nights that Mother Nature may have up her sleeve. Finally in May, attention shifts to the upcoming hurricane season and what the early outlook suggests may be on the way. And the forecast certainly calls for a future column to focus on just that in the near future.

But as we're in the midst of April, let's focus on the growing season, just now getting underway for some of us now or in the coming weeks.

Let's start with our average last date for 32 degrees nighttime lows. 32 degrees is of course the freezing mark, and a hard freeze can occur and kill any sensitive plants when temperatures drop below 32 degrees for several hours at night.

At the Atlantic City International Airport, where records in South Jersey are kept, the average last date for a 32-degree low temperature in the spring over the last 75 years or so is April 19th. Of course, it is just an average, although our last 32-degree night in 2020 actually did occur on April 19th last year.

In reality however, there's more than a two month range between the extremes, the earliest and latest dates for our final 32-degree low temperature each spring. On the

early side, March 14th is the earliest date for our last spring freeze, which occurred way back in 1945. Contrast that with what happened in 1992, when the temperature plummeted to a record low of 28 degrees on the morning of May 21st. Sure, the temperature soared more than 55 degrees to a high in the mid 80s that afternoon, probably one of the biggest ranges between our morning low and afternoon high we've ever seen in a single day. But the unusually late hard freeze had a tremendous impact on agriculture that year, most notably on the famous South Jersey blueberry crop.

Only one other year, on May 20th in 1911, did we see freezing temperatures beyond the middle of May (May 15th). That's why when asked, I always use Mother's Day weekend as my boundary. Once we're past mom's big day, you have a very good chance, let's say close to 99 percent, of staying frost and freeze free. It certainly doesn't mean you can't plant before then, as many years you could be safe right now.

Also remember that areas closer to the shore, like all of our barrier islands, are more likely to remain frost and freeze free this time of year than areas farther inland. The sandy nature of the soil throughout the Pine Barrens allows for great radiational cooling on clear and calm nights anytime of the year, hence the later frost and freeze concerns each spring.

While a killing hard freeze requires below freezing temperatures, frost can form with temperatures above the 32-degree mark. Patchy frost can occur with temperatures as high as

around 40 degrees, but widespread frost is more likely when lows reach the low to mid 30s, let's say roughly 32 to 37 degrees. Of course, frost is less destructive than a hard freeze, and it's also easier to take precautions to protect plants from a frosty night rather than a freezing one.

Given our warming climate, is there a chance that our last frost and freeze will occur earlier? That's tough to say with any certainty, but any earlier trend has not started yet.

Let's look at the last 10 years for proof. In doing so, we'll find that the average date for our last 32-degree night hasn't changed, and still sits at April 19th. As recently as May 11th, 2010, we saw freezing temperatures into early May, which means some sneaky late season cold is still a possibility.

The moral in all of this: If you're planting now, still plant with caution.

While there's a 50/50 chance you'll be safe from freeze concerns after April 19th, there's still a risk for a cold night or two into early May. But any plants you get for mom for Mother's Day should be safe to go in the ground after the holiday weekend.

Coyotes are here, but you may never see one

heard their yips and howls, including once in response to a nearby siren, and he had even seen them in the past. Still, as his day came to a close a little past sunset, he was surprised to see two of the animals walking under his tree stand.

They looked almost like they could be somebody’s pair of German shepherds, with bushy tails and thick coats, but he had no doubt they were coyotes. This was muzzle-loader season, he said, about two years ago.

“They were big,” he said. “It was kind of a little intimidating, especially with the two of them together.”

Coyote attacks on humans are extremely rare. Still, with a long walk back to the car ahead of him, Rosenberg was perhaps a little more attentive than usual to the sounds around him as the woods got dark.

Hunters get used to seeing deer, he said, and plenty of other animals like hawks, skunks or foxes. Sometimes growing to more than 50 pounds – and often looking bigger with their shaggy coats – coyotes are a different kind of sighting.

They are also becoming increasingly common. The animals have been reported in almost 400 municipalities in all 21 counties in New Jersey, with a significant increase since 1980. A graphic representation posted to the website of the New Jersey Department of Environmental Protection’s website shows the coyote range in red. In 1960, there are just a few spots on the mostly empty map. Most of them are in the densely wooded far northwest of the state, with a patch at the southernmost tip of Cape May. Each decade, those numbers increase, until almost the entire state shows red by 2012. At one count –likely incomplete for such a secretive animal – there were an estimated 3,000 coyotes throughout New Jersey. There is every reason to believe the population continues to increase, but Andrew Burnett, a principal wildlife biologist with the Division of Fish and Wildlife, said the number of reported sightings has dropped.

“We used to get a lot more reports than we do,” Burnett said in a recent interview. “I think they’ve become common to the point that people don’t give them a second thought or think that they need to be reported.”

He does get reports from hunters, who are required to report when they shoot a coyote, and a couple of dozen

of the animals are struck by cars each year.

Burnett, whose specialty is upland game and furbearer research, lives in Galloway.

“I’ve only seen a handful of live coyotes,” he said. One was crossing the Garden State Parkway by the Atlantic City reservoir. It was moving fast, he said.

“They’re very wary,” he said. “They’re a difficult animal to harvest if you’re a hunter. It’s a little bit easier if you’re a trapper.”

There’s an old saying about wild animals: That they are more afraid of you than you are of them. For some, like grizzly bears and sharks, that’s probably nonsense. But for coyotes, it seems true.

According to DEP Spokesman Larry Hajna, there have been instances of attacks from rabid animals.

“A healthy coyote attacking a person is exceedingly rare,” said Burnett.

But exceedingly rare is not never.

The only recorded attack in New Jersey was in Boonton Township in 1999, in which a woman was walking several dogs. A coyote attacked the dogs, and the woman fell and broke her leg. According to reports, the coyote bit her arm and did not flee until an onlooker hit it with a stick.

More common are attacks on cats, dogs and livestock. Outdoor cats are the most likely to be attacked. In 2005, a coyote killed a pet poodle in Lower Township. The animals also prey on sheep and lambs, particularly in the spring.

In Upper Township, Bill Simmerman said coyotes are all around in New Jersey. He’s the owner of Misty Meadows Farm, a sheep dairy in the Petersburg section of Upper Township. He said the sheep know when there are coyotes around.

“We have them here occasionally.

I have a unique way of battling them,” he said. Rather than shoot or trap the animals, he set up a high tensile electric fence around the sheep. It does not take long for the coyotes to decide they’d rather stay away.

“It’s just like training a dog with a shock collar,” Simmerman said.

For years, there was a persistent story that the state introduced coyotes to control the deer population.

That’s a common assumption south of the Cape May Canal, where there

has been a breeding population of coyotes in the preserved land for decades, even when the rest of the Jersey coyotes were on the far side of the New Jersey Turnpike.

The DEP has never introduced the animals. But Burnett suggested it is possible they were introduced just the same. He found an article from 1949 about a zoo that gave two

coyote pups to a New Jersey couple.

In a recent interview, he raised the possibility that some of the coyotes in southern New Jersey descended from those pups.

Coyotes are indigenous to the American West. In Colonial times, Burnett said, New Jersey had red wolves and gray wolves, but no coyotes. The accepted theory for the spread of coyotes is that they moved east across Canada and crossed the

St. Lawrence River.

“At least some of them came in the back of somebody’s station wagon,” Burnett said.

The animals remain rare on the barrier islands. Hajna joked that they wanted to avoid beach fees.

The first wild coyote reported in New Jersey was in 1939, near Lambertville in Hunterdon County.

Reports came sporadically after that. The state still gets reports. Many of the callers are surprised to learn that coyotes live in the nation’s most populated state. Some want them removed, Burnett said.

“They say, ‘I want him out.’ Well, he’s not doing anything,” he said. “Some people see wildlife and they want it gone.”

The state does have tips for living with coyotes, including keeping garbage in tightly closed containers and bringing pet cats and dogs inside at night. Putting out cat food can attract coyotes and other critters, which puts the cat and other pets in danger.

“If coyotes are present, make sure they know they're not welcome. Make loud noises, blast a canned air siren, throw rocks, or spray them with a garden hose,” reads the recommendations on the DEP website.

Tips for Protecting Your Pets from Coyotes Coyotes have been spotted throughout the area in recent months.

Although they normally do not pose any danger to humans, they can be a danger to small animals. Small dogs and cats are especially vulnerable if left outdoors alone.

NEVER leave your pet unattended: Keep an eye on your pet when you open the back door to let him out and do not let him stray too far away from you. Whenever possible, take your dog out on a leash. You should use a 6-foot leash, not a retractable leash, as they provide little to no control if your pet encounters a coyote. Also avoid walking your dog during twilight hours as coyotes are more active at night, so it’s best to keep an extra eye on your pet when you let him out after the sun goes down. Carry a headlamp or flashlight when walking your dog at night.

Cover and secure all garbage cans: Garbage cans should be secured with wildlife proof lids. All cans should be sprayed with ammonia inside and out each time you open them to remove any food smell which attracts wildlife.

Do not feed wildlife: One of the biggest reasons that coyotes are coming into neighborhoods is the attraction of food. If you feed feral cats, the food should be removed 30 minutes after each feeding to discourage wildlife from sharing the food.

Do not feed your pet outside: As food can be a big attractor of coyotes, giving your pet his dinner indoors is always a good idea. If you feel you must feed your pet outside, feed midday at a set time and pick up leftovers immediately.

Be extra mindful during coyote breeding season: April is when the coyotes are going to have their young and April through August is when they are going to be more protective of their young. Walk a dog on leash and be cognizant of coyotes in the area.

Remove any kind of attractants around the exterior of you house: Feeding wildlife and birds can attract coyotes to your yard. Attractants for coyotes include compost, dirty grills, and birdseed. Birdseed, for instance, can attract rodents and, therefore, attract coyotes. Fallen fruit should also be cleaned up, as coyotes consume large amounts of fruit during certain points in the year.

Make your yard a less attractive habitat: Keep trees and shrubbery trimmed to reduce cover, which makes great hiding places for coyotes.

You can install coyote-proof fences (these are typically quite high) or use motion-triggered deterrents like light or sprinkler systems. Fences should be at least 6-foot high and buried at least 6 inches underground or fitted with a mesh apron on the outside of the fence extending 12 inches out from the bottom of the fence and secured with landscape.

Looking Back at Tony Grant’s Tonyettes

ometimes, one seemingly small decision can send you on a path that changes your whole life. For Celeste Mogab Dunion, opportunity knocked when Tony Grant came to her Granville Avenue School in Margate offering dance lessons. Celeste begged her mom to enroll at Grant’s dance studio, and the rest is history. By the time Tony Grant’s “Stars of Tomorrow” were performing on the Atlantic City Steel Pier in the 1940s, Celeste had become a favorite performer, was teaching new students to dance, and was captain of Tony Grant’s Tonyettes.

Dunion jokes that she literally took center stage among the dance team because she was the tallest, so Tony placed her front and center.

Tony Grant’s Stars of Tomorrow was the “America’s Got Talent” of its day, giving young amateur performers

a stage to feature their talents such as singing, dancing, ventriloquism, and magic acts. Some of these young stars also performed on the Ted Mack Amatuer Hour and Paul Whiteman’s Goodyear Review, two televised variety shows. As they grew up, many of the performers continued to use their talents thanks to their experiences and encouragement from Tony Grant. Some opened their own dance studios, while others continued on the big stage. Stars like Frankie Avalon and Connie Francis are among the Tony Grant Graduates. Dunion remembers Tony Grant as a generous, caring man that inspired young performers to reach their full potential.

Dunion performed with Tony Grant for years, often appearing on stage with him as his partner in acts such as Stardust Review and the Haunted House routine. She remembers him as an incredible dancer who would encourage children and bring out any little talent they had. Children in Longport. Another memorable show was their performance at the 1949 Kiwanis International Convention. She recalls a breathtaking display as she and the other Tonyette dancers climbed ladders decorated like rose trellises that reached to the tall ceiling of Convention Hall, with the fire department providing safety ropes. Rollers were affixed to their waists, and as they climbed, the Canadian flag unfurled on one side, a cannon was fired and the Canadian national anthem was played. As the second canon shot was fired, the girls turned, and like a Venetian blind, the flag flipped to the American flag on the other side, making a striking scene. While the audience was being wowed, a third cannon was fired and as it rang out, thousands of red, white, and blue balloons were dropped from the ceiling, giving a spectacular show to the crowd of just under 10,000 people that attended the convention that year. Celeste’s mother later marveled that the sight gave her goosebumps.

Three of the original Tonyettes, including Dunion, were accepted into the Radio City Rockettes, but Dunion’s father did not want his 18 year old daughter to join. She did, however, continue to work with Tony Grant until 1954 when she got married and moved away. Dunion also had an extensive modeling career spanning 20 years both locally in the Atlantic City area as well as up and down the East Coast. She worked with the Atlantic City Press Bureau and the Philadelphia Models Guild. She appeared in ads for Captain Starn’s Restaurant and Fishing Pier that they used for the next 30 years. She also modeled for Reliance Motors Inc., Yankee Maid Ham, General Electric demonstrating the first colored televisions, and Ford Motor Company advertising features of new cars to dealers. She made television appearances on Paul

Whiteman’s Goodyear Review variety show and Ted Mack’s Amatuer Hour, which was filmed in the Ed Sullivan Theatre. Celeste’s younger sister, Sandie Mogab Belitz, followed in her sister’s footsteps and was a member of the Junior Tonyettes. She recalls also performing on the Paul Whiteman show in the 1950s.

In later years, with four children of her own, Mrs. Dunion remembered the opportunities that Tony Grant had given her and so many others. While working at Rose Tree Media School in Media, Pennsylvania, Dunion created a program for students to showcase their acting, singing, modeling, and photography skills among others. She hoped to bring out their hidden talents and provide great memories as Mr. Grant had done for others. After a long career in finance, Dunion retired and began working as Facilitator of Senior Citizens’ Programs at her local YMCA. While there, she organized a talent show and drew from all of her entertainment and performance training and experiences. Though she now lives in a retirement community in Florida, Celeste Dunion cannot be stopped. She even performed a dance routine at her own 80th birthday party proving she’s still “got it”.

Dusting off a 50 year-old Vacation Guide

A Look Back at Ocean City

eading the 92-page Ocean City 1971 Vacation Guide is like opening a time-capsule and seeing what life was like in America’s Greatest Family Resort a half century ago. While some things have changed, many things have not.

The guide was published by Bolling Publishers under the auspices of the Ocean City Hotel, Motel and Restaurant Association. It was distributed by the Department of Public Relations to prospective visitors interested in learning more about Ocean City and its accommodations, attractions and facilities.

A welcoming letter signed by Mayor Robert L. Sharp, Commissioner David L. Simpson and Commissioner Chester J. Wimberg, was on the first page of the guide. It was printed under the headline: “You are most cordially

The Flanders Hotel was featured in the two page centerfold. A Senior’s Observations, Opinions and Rantings

The Road Most Traveled Senior Moments

I

have been a driver for over 50 years and if I may say, a pretty good one, although there is one guardrail on the Garden State Parkway that may beg to differ. In those years, I have driven cross country twice, driven on the Pacific Coast Highway in California and numerous forays deep into New England. What I have found is that those who are attuned to the road, can sense a certain rhythm to it; a dance if you will. Years ago, we experienced such

a dance with a white Jeep Wrangler while heading east through Nebraska. In this Jeep, was a young father and his son in a red baseball hat. Our young children looked over at the Jeep. The baseball hat looked back.

We passed a tractor trailer and the Jeep passed the tractor trailer. We passed the Jeep and the Jeep passed us. This continued for hours and it was evident that even though separate, we were all traveling together.

We danced down the highway exchanging who would lead and who would follow. It was an unspoken choreography. Eventually, the Jeep ahead put on its right turn blinker and we watched it slow down for the

next exit. We briefly pulled alongside and waved. In an instant, we were once again on our own and missing our dance partner. That being said and moving fast forward, my wife and I just finished our second drive down to Florida in a little more than a month. Two consecutive 9 hours days on the unforgiving I-95 is far from a pleasure trip. If a drive can be compared to a dance concert, I-95 from Baltimore to Richmond is akin to the mosh pit at a Slayer concert.

My wife is from northern Virginia so we have driven that route more times than I would like to remember but something has definitely changed.

70 MPH is not fast enough anymore even in the slow lane, 75 isn’t even fast enough! Then if you are already doing 80 to pass another vehicle and you are not passing quicky enough, the grill on that jacked up pickup truck is filling your rearview mirror and pulling halfway to the left to make sure he is also filling your side mirror. Those who know me best know this does not work well with me. Add into the mix, the little Fast and Furious wannabes that are driving like they are in a video game;

erratically changing lanes in and out at speeds that far exceed the speed limits. While I do not wish anyone harm, well almost anyone, I would be hard pressed to feel compassion for such a driver causing an accident resulting in possible injury/death or heaven forbid the delay of my journey. My wife and I enjoy long drives.

We have in depth conversations, listen to podcasts, my Apple music library or sometimes just listen to the hum of the highway. But on this return trip from Florida, we are not giving I-95 the satisfaction. Before Richmond we are making the turn towards Lewes, Delaware and looking forward to a cruise back to New Jersey on the ferry. As far as Washington, the Beltway and Baltimore; sorry, our dance card is full.

Local Organization Puts Heart in Horseback Riding

ine year old Ava was beaming as she arrived for her weekly horseback riding lesson on a small farm in Egg Harbor Township. Her mother, Courtney Crowley, watched with joy from outside the arena. “She doesn’t stop smiling the whole time.”

The individuals who come through Hearts Therapeutic Riding Center shared the same experience, from their loyal riders, to the dedicated staff and caring volunteers.

Stefanie Green is the Executive Director at Hearts. She has over 15 years of equine experience and has been teaching therapeutic lessons for nearly a decade. Green spoke about her career and working for Hearts. “I say all the time that my horses are my therapy; it’s amazing to see the magic these horses can work.”

Hearts Therapeutic Riding Center was formed in 2011. Their founders, Sue Adams and Rindy Faust, launched the program following the closure of a neighboring horseback riding facility. Each lesson is conducted at the 13 acre Rolling Seas Farm, just off of Asbury Road. The farm is currently home to seven horses, four of which are owned by the organization. Each of their staff members are certified PATH International instructors with years of expertise.

Upon signing up with Hearts, each person is given an evaluation to discuss their likes and goals. An on-site assessment will further determine each person’s comfortability and skill sets. With each lesson, riders are paired with a horse, along with a trainer and anywhere from one to three volunteers, depending on the individuals needs.

South Jersey resident Courtney Crowley describes how horseback riding lessons have greatly affected her daughter. “It gives her a bunch of confidence. She’s learned a lot of skills, not just riding skills either, but life skills.”

Individuals of all ages have shown major emotional and physical impacts from horseback riding. For a person with emotional challenges, the bond between the rider and horse can lead to improved confidence, self-esteem and patience. It has been shown to

have great benefits for individuals with learning disabilities and sensory impairments.

Therapeutic horseback riding can provide a wide range of physical and psychological benefits regardless of your age, health or mental ability. Helen Rinaldo, 98 years young of Brigantine, arrived at Hearts for her first lesson with Garfield the horse leading the way. Following her assessment, Rinaldo gave Garfield a big hug as she summed up her experience. “At 98, it’s pretty good!”

On Saturday, April 17th, Hearts TRC is hosting an Open House where members of the public can find out about the many programs that are offered. You can also participate in

horse grooming and handling courses, meet the team and sign up to become a volunteer. There will also be on onsite tack sale. Food and beverages will be available for purchase.

Getting to Know David Spatz Views from the Shore

ne of the things I like the most about being a marketing director are the relationships I have developed with a the members of the local news media. For more than 20 years, I have done the best I could to help them cover our area, providing them with information, experts, and often being the subject of an interview.

While I am not privy to know why certain subject matters are selected to be covered in the news, I do know one thing – a good news story does not happen by accident. It is the result of the hard work, planning, and communication skills of the reporter, no matter if is online, print, radio or television. So for this column, I sat down with David Spatz, to familiarize you with a local reporter who has been bringing you local news from each of these mediums for more than 40 years.

Who is David Spatz?

David currently is the host of the popular radio show called “Middays with David Spatz,” which airs Monday-Friday from 12noon-2pm on Newstalk 1400AM WOND. “As the host of the show, I have the freedom to decide what is talked about and who my guests are going to be.

All subjects are fair game as long as they deal with a local issue or they are a national issue with a local connection,” said Spatz.

“My audience is local and they are tuning in for local news, so I always keep that in mind.”

David brings to the airwaves years of media experience. “I came up old school in 1974 – geeze has it been that long? I was the only contributor to the entertainment page (yes, the entertainment section was a single page) at the Press of Atlantic City called “Compass – Your Entertainment Pathfinder.” In 1980, David and the Press developed a larger entertainment section called “Venture,” and 10 years later, he became a founding member of At the Shore which continues to be published today.

David’s career in media also includes decades of work on television, including hosting a news-magazine show on Channel 10 with a young Matt Lauer and receiving the 2007 Emmy Award for best talk/interview series, Curtain Call with David Spatz.

David also fondly recalls working on six New Year’s Eve specials with Merv Griffin. “I could not have learned in school what Merv taught me. It was like a Master’s class. Merv always knew how to fly the plane and landed it right on time. It was the best work experiences I ever had and I got paid for it too! I think it was the first time my dad realized that I could actually do television. I had been in media for years, but when he saw me with Merv, it became real.”

After covering more than 6,000 shows, David doesn’t need to see another performance but he does miss covering entertainment. “I miss talking to performers and learning

about what’s going on in their world, directly from them. But there is so much going on locally with my radio show, that I’ve really been too busy to think about it!”

Adapting to news today To say that the way news operates now is different compared to when David first started would be a huge understatement, but David has adjusted quite well. “It’s been a lot of fun adapting to the digital and on line newsworld,” reflects Spatz. “People don’t want a story that’s 24 hours old, they want one that’s 24 minutes old. Rather than being kept to a word count, I can go a little longer if the story requires a little more to include information necessary to make it a complete story.”

Sipping Small: A Case for Small Wineries

his past year, citizens have stepped up in ways they never imagined to help preserve their communities.

While it’s been heartening to see the way so many have rallied behind Shop Local movements, many businesses are still struggling to keep their doors open. The unique needs of small wineries have left them paralyzed compared to their mass-produced counterparts. It’s high time that we extend our “Shop small” mindset to our wine habits.

Why are brands like Barefoot flourishing during the pandemic, while family-owned vineyards’ sales are floundering? Small wineries rely on direct sales – like during tasting room visits and tours – FAR more than big brands. In fact, Forbes reported that

in 2019, direct sales made up more than 61% of ALL sales for family-owned wineries.

With the drop in visitor traffic, the little guys have been left in the dust by big name competitors.

The simple solution is, of course, to opt for wines made by these small wineries more often than the big brands. I realize this doesn’t seem like an easy task to the typical wine-drinker. For starters, aren’t the prices of boutique wines far higher? Nope! Some of my favorites are from small producers and I can assure you, I don’t have a big budget!

Fermented Foods and Your Health Nutrition

robiotics have been associated with a variety of health benefits, including improved digestion, better immunity, and even increased weight loss. Fermentation is a process that involves bacteria and yeast breaking down sugars. Not only does fermentation help enhance food preservation, but eating fermented foods can also boost the number of beneficial bacteria, or probiotics, found in your gut.

Kefir is a type of cultured dairy product. It’s made by adding kefir grains, which are made up of a combination of yeast and bacteria, to milk. This results in a thick and tangy beverage with a taste that’s often compared to yogurt. Studies have shown that kefir may come with many benefits, affecting everything from digestion to inflammation to bone health. I refer my clients to using kefir because so many are lactose intolerant. Not only does the kefir drink help improve lactose digestion, but it also contains less lactose than milk. When kefir grains and milk are combined to make the kefir drink, the bacteria in the kefir grains help ferment and break down the lactose in the milk.

Kimchi is a traditional Korean dish made with salted fermented vegetables. It typically contains cabbage and seasonings like sugar, salt, onions, garlic, ginger, and chili peppers.

It may also boast other vegetables, including radish, celery, carrot, cucumber, eggplant, spinach, scallions, beets, and bamboo shoots. Though kimchi is usually fermented for a few days to a few weeks before serving, it can be eaten fresh, or unfermented, immediately after preparation.

Sauerkraut is a popular condiment consisting of shredded cabbage that’s been fermented by lactic acid bacteria. It's low in calories but contains plenty of fiber, vitamin C, and vitamin K. The antioxidant content of sauerkraut may also have promising effects on cancer prevention. You can use sauerkraut in just about anything.

Throw it in your next casserole, add it to a hearty bowl of soup, or use it to top off a satisfying sandwich. To get the most health benefits, be sure to choose unpasteurized sauerkraut, as the process of pasteurization kills off beneficial bacteria.

Hard Rock brings back live entertainment

ive entertainment is officially making a comeback to the Hard Rock Hotel and Casino (1000 Boardwalk, Atlantic City, 08401).

After over a year of livestreams and parking lot sessions, we are finally getting back to the non-replicable atmosphere of watching entertainment live. Whether that is music, theatre, comedy, or something else, we are starting to see the return of the industry that even throughout the challenges of 2020 adapted to the “new normal” in order to survive.

This month, Bob Saget has two scheduled live dates on April 17th (7pm and 10pm) with special guest, Mike Young. Saget is probably best known for his TV shows “Full House” and “America’s Funniest Home Videos”. However, he is also a Grammy-nominated stand-up comedian and this show is sure to be a sellout. After a long 12 months, it is finally starting to feel like things are getting back to normal. Perhaps not the normal we all knew before, but a mix of what we were used to and the new normal which we have become accustomed to. With restrictions being opened up for live entertainment 2021 promises to make up for everything we missed in 2020.

3 Brunch Recipes to Make This Weekend

issed breakfast? No worries! Not quite breakfast, not quite lunch, today we are talking about brunch. Weekend mornings are prime brunch times because you can turn your late breakfast into a totally different and more relaxed meal. So, grab your mimosa or Bloody Mary and plan your weekend brunch using three of my favorite recipes.

Bell Pepper Potato Frittata If you are looking for a recipe to elevate your weekend brunch my Bell Pepper Potato Frittata should be on your list. This delicious, savory recipe may appear intimidating to make, but is actually quite easy. A great way to repurpose leftovers and one frittata goes a long way when paired with fresh fruit or a side salad.

6 servings | Cook time 35 minutes

Ingredients ● 8 whole large eggs ● salt and black pepper, to taste ● 2 dashes hot sauce, optional ● 2 TBSP butter ● 1 whole medium onion, sliced thin ● 2 cups pre-cooked roasted baby potatoes, halved ● 2 cups green bell pepper, sliced into thin strips ● French Fried Onions, optional Directions Preheat the oven to 375 F. Beat together the eggs with the salt and pepper (do not over-beat; just mix until the eggs mostly come

together.) Stir in hot sauce if using and set aside.

In a large oven-proof non-stick skillet, melt butter over medium-high heat. Add the onions and cook for several minutes, stirring frequently, until the onions are soft and golden brown. Add peppers and cook for a couple of minutes. Add potatoes and cook for another few minutes.

Make sure all the ingredients are evenly distributed across the bottom of the skillet, then pour in the egg mixture so that it evenly coats everything. Let it sit on the burner for about one minute to set the edges, then put the skillet in the oven.

Watch the frittata as it cooks. Let it cook in the oven for 10-12 minutes until the eggs are set and slightly browned on top.

Slide the frittata out of the skillet and onto a cutting board. With a long serrated knife, slice it into wedges and serve warm. Garnish with french fried onions (optional).

Use this granola to finish fruit and yogurt parfaits or add it to yogurt bowls, top your favorite pancake recipe or serve us individual-sized portions for a nutritious snack after a day at the beach or during your walk, bike or hike.

8 servings | Cook time 50 minutes Ingredients ● 10 cups oats ● 2 cups shredded coconut ● 2 cups chopped nut mix ● 1/2 cup sunflower kernels ● 2 cups wheat germ ● 1/2 cup sesame seeds ● 1 cup honey ● 1 cup coconut oil ● 1 TSP vanilla ● 1 TBSP cinnamon ● 1/3 cup water Directions Preheat oven to 325 degrees.

Mix oats, coconut, nut mix, sunflower kernels, wheat germ and sesame seeds together.

Mix honey, coconut oil (melted), vanilla, cinnamon and water together.

Add to first mixture.

Spread onto oiled baking sheets with raised sides. Bake at 325 degrees for 40 minutes. Stir a couple of times during baking. Let cool and store in a large storage container.

Breakfast Naan Pizza Pizza is always a solid choice, but pizza for brunch is next level. My Breakfast Naan Pizza serves up bites of your favorite breakfast foods and can be easily personalized according to taste and preferences.

4 servings | Prep time 15 minutes Ingredients ● 4 pieces of Naan bread ● 6 strips of turkey bacon sliced ● 2 pieces of Canadian ham (or pork roll) chopped ● 4 sausage links chopped ● 1 cup shredded Mozzarella cheese ● 4 large eggs ● 2 TBSP finely chopped flat leaf parsley ● 1 TBSP thinly sliced green onion ● salt and black pepper to taste Directions Preheat over to 400 degrees.

Fry the bacon in a large sauté pan over medium-high heat until crisp.

Let cool and cut into small pieces.

Chop Canadian ham into small pieces, cook until browned.

Cook sausage until browned, slice into pieces.

Place the Naan bubble side up on a baking tray, sprinkle with mozzarella cheeses, cooked bacon, cooked Canadian ham and cooked sausage.

Crack one egg onto each piece of Naan and season with salt and pepper. Do not break yolk.

Place Naan on middle rack of the oven and heat for 10-12 minutes or until the cheese is melted and the egg yolks are cooked. Remove from oven and sprinkle with the parsley and green onions. Slice and serve immediately.

Easter Cheese and Spinach Pie

A

lthough we celebrated Easter the first weekend in April, I want to share a favorite dish of mine which celebrates both Easter and spring.

Also known as Torta Pasqualina, it was traditionally made with 33 layers of phyllo dough (the number of years in the life of Christ). This ancient recipe is believed to date back to 15th century Genoa, the capital city of Liguria. Liguria, a region in Northwest Italy, is the home of the Italian Riviera and it borders on my home region, the Piedmont.

This recipe uses thin dough (you can substitute phyllo dough) and is made with spinach (my mother would use chard) or other spring greens, artichokes, hard cooked eggs

and is seasoned with marjoram or other herbs. Unlike the more familiar Neopolitan version known as Pizza Gain, Pizzagaina, Pizza Rustica, or Pizza Chiena, it does not contain cured meats. That type of Easter Pizza (pizza means pie of course) is made with cheeses, salami, pepperoni or ham, hard cooked eggs and a thicker dough.

This Easter Cheese and Spinach Pie recipe can be found on my website (www.joestablefortwo.com) and is one of 600 authentic recipes from the Italian Regional Cooking cookbook by famous Italian cookbook author Ada Boni. I’ve updated some ingredients from Ada’s original recipe to so that it’s easier to make.

You can substitute other greens or use a mixture of greens, add some fresh dill if you like, and use other seasonings to “make it your own.” I hope you enjoy it.

Easter Cheese and Spinach Pie (Liguria) Serves 6.

*Dough: 8 cups all-purpose flour ● 5 tablespoons olive oil ● 1 teaspoon salt Filling: ● 30 ounces fresh spinach or other spring greens, rinsed and drained thoroughly ● 10 canned artichoke hearts packed in water, drained and chopped ● 5 tablespoons olive oil ● 1 medium onion, chopped ● 2 cloves garlic, chopped ● 16 ounces whole milk ricotta or cottage cheese ● 3/4 cup milk ● 1/4 teaspoon salt ● 2 tablespoons butter ● 6 large eggs ● 1/2 teaspoon dried marjoram ● 1/4 teaspoon pepper ● 3/4 cup freshly grated Parmesan cheese Mix the flour, olive oil and salt; gradually add enough water to make a stiff dough. Add water slowly so dough does not become too wet and sticky. (Dough should leave the sides of the bowl cleanly.) Knead the dough thoroughly and divide it into 10 equal size balls. Put them on a lightly floured pastry board, cover with a damp cloth and let rest for 15 minutes.

Heat a large sauté pan over medium heat. Add about half of the spinach; gently toss and turn the spinach with tongs so all of the unwilted leaves make contact with the bottom of the pan.

As the spinach cooks down, add remaining spinach and continue to toss. When all the spinach is completely wilted and has turned bright dark green, remove the spinach from the pan and spread it out on a cloth or paper towel lined rimmed baking sheet until cool. Chop and

set aside.

In the same pan, heat olive oil over medium heat, add onions and garlic; sauté until soft but not brown. Remove from the heat, add spinach and artichokes and stir to combine. Combine the ricotta, milk and salt; fold into spinach mixture; set aside.

Brush a 12x10x2-inch baking dish with olive oil.

Roll one ball of pastry into a wafer-thin sheet, keeping the rest of the pastry balls under the damp cloth. Line the prepared pan with the first pastry sheet, brush lightly with oil and trim off any excess pastry even with the rim. Repeat this procedure with 5 more pastry balls, brushing each layer with oil and trimming the edges.

Gently spread the cooked vegetable mixture on top of the pastry layers. Make 6 indentations (wells) in the filling. Place a small pat of butter in each one and put an egg in each on top of the butter. Sprinkle the surface with marjoram, pepper, another pinch of salt and Parmesan cheese.

Roll out the remaining 4 balls of pastry as with the first 6, brushing each with oil as you layer. Prick the top layer with a fork, brush generously with oil and trim off any overlapping pastry.

Bake at 400° for 40 to 45 minutes or until pie is bubbling around the edges and golden brown. Loosely cover with a piece of aluminum foil if it browns too quickly. Let sit at least 15 minutes before serving.

Serve hot or cold. *You can substitute 10 sheets frozen phyllo dough, thawed according to package directions, for the homemade dough layers. You also can use more phyllo sheets if you like.

Discover History, Nature and Culture in Bivalve

S

ituated along the southern tip of Cumberland County, along the Maurice River, is the small, quiet community of Bivalve.

The area was once home to a thriving oyster industry, where over 1 million prawns were harvested in the 1920s.

The industry reached its peak during the mid-1950s, after which pathogens significantly affecting the local oyster population. Today, Bivalve is the second largest distributor of oysters in the country, with over 250,000 bushels harvested annually.

This area’s rich history can be found at the Bayshore Center, home to the Delaware Bay Museum and A.J. Meerwald schooner. The building that houses the Bayshore Center was constructed in 1904 by the Central Railroad Company of New Jersey. In its early days, the property was used to pack and ship oysters and consist-

ed of up to thirty units. Today, part of the railroad can be seen at the front entrance of the property, along with a vintage wooden boxcar built in 1916.

At the Bayshore Center, you will find New Jersey’s Official Tall Ship, the A.J. Meerwald. Launched on August 31, 1928, the Meerwald was one of a hundred schooners built during the height of South Jersey’s shipbuilding industry, and is one of only a dozen tall ships in the United States. Today, the ship is used for onboard sightseeing and educational tours. Following the 2021 season, the Meerwald will leave its home port to Maine for much-needed restoration.

Also on site is the Delaware Bay Museum, which boasts many replicas and treasures showcasing the vibrant history of the coastal community. On May 26th, the museum will open a brand new exhibit, Tattoos in the Life of the American Sailor. The display, on loan from the Independence Seaport Museum in Philadelphia, will spotlight unique artifacts, artwork and photographs aimed to illustrate how sailors shaped the perception

of tattoos in our culture. Rachel Dolhanzyck, Curator at the Delaware Bay Museum, describes this upcoming exhibit. “Tattoos are interesting because they’re contemporary and people get them, yet they are so rooted in maritime history.” The display will run through April 2022.

Every month, the Bayshore Center opens its doors for Second Fridays, an evening where visitors can tour the museum and explore the vibrant waterfront while enjoying live music and good food on the wharf. Their on-site restaurant, Oyster Cracker Café, provides an appetizing array of fresh, local seafood. From their half shells and fried oysters to delicious cups of chowder, there is something for everyone.

Dr. Darlyne de Haan’s New Web Series Marries Science and Creativity.

cientist/educator,film maker and Galloway resident, Darlyne de Haan (Dr. D) has created a series of videos called Neighborhood-Science. www. neighborhood-science.com is where young people can go to learn science in a fun and comprehensive way. I suspect that even older, young people like magazine columnists that always wanted a chemistry set or to build a robot will enjoy Neighborhood-Science as well.

Dr. de Haan has spent decades teaching science in the South Jersey educational system. Dr. D has also spent that time exploring new ways to teach science and to make it fun for everyone. I first met Dr. D in approximately 2005. Dr. D had produced hip hop music that taught

the ecosystem, the periodic tables, the water cycle and more.

Dr. D’s goal in making this new Neighborhood-Science short video series is still to creatively engage young minds and inspire an interest and participation in science. “I want children to get excited about science.” She recently explained. According to Dr. D, connecting children to science is what she is passionate about and wants her legacy to be. Dr. D looks forward to greeting youngsters that will have become scientists because of her work marrying science with art and creativity.

One of my favorite videos in the series is “Why Airplanes Fly.” I always wondered as a child “How do airplanes fly?”

The video explains not only why airplanes fly, but also explains the 4 forces of nature/science that work together to keep the airplanes up.

Dr. D also includes an experiment that anyone can do that supports the science in her video. There’s also a

dance involved but no one reading this needs to picture me actually dancing in front of my computer screen. Let’s just say the dance was fun and move on.

pril showers bring May flowers righ? Here’s hoping you are starting to get OUTSIDE more despite any rain drops that might pass through.

Hope SPRINGS eternal is another phrase I like, as not only is the weather warming up, but we are starting to have more “freedoms," which I love.

Since I last wrote, the Flyers quickly moved from buyers to sellers at the trade deadline. The Phillies started off their season with a bang, but have had some more busts of late. The Sixers continue to be an intriguing team as the playoffs approach. The Eagles are “rocked” once again by another media report detailing internal issues.

On the local front, an area college baseball team is hoping their “Bring it Home” campaign will result in them having a dream place to play. Finally, there’s a Mike Adams update coming out of Clearwater, Florida.

From entertainment, there’s a new “guest host” on Jeopardy and it’s

a pretty familiar face to football fans.

Plus, someone I loved and admired was caught by TV cameras as a “cutout” at the Final Four and National Championship Game in men’s college basketball. As always though, we begin with sports, and my thoughts: ● Let’s start with the Flyers as I actually went up to the Wells Fargo Center on Saturday April 10th to watch them play in-person with my longtime friend Scott Buscher.

My rationale was that I just had to see with my own two eyes why this team is so bad! Well, wouldn’t you know that Scott and I were lucky enough to see a win as they beat Boston 3-2 in a narrow but exciting hockey game. ● Of course, they followed that up last Sunday by losing 5-3 to the lowly Buffalo Sabres. In that one, it wasn’t just that they lost, but how they lost as the Flyers quickly jumped out to a 2-zip lead after one, then were tied at 2-2 after two, but when much maligned Shayne Gostisbehere scored to put the Flyers in front at 3-2 early in the 3rd period, it looked like things were moving in the right direction.

And then the proverbial “wheels” came off. Buffalo scored two goals

in just :25 seconds to snatch victory from the jaws of defeat and make Flyers GM Chuck Fletcher’s decision on what to do pretty clear.

You see, the loss came right before the NHL trade deadline, so any thoughts that the Flyers might try to pick up a player, changed to SELL, SELL, SELL! On Monday 4/12, Fletcher and the Flyers actually began the day by re-signing left winger Scott Laughton to a five-year, 15 million dollar deal.

But then the selling began as they dealt pending unrestricted free agents Michael Raffl and Erik Gustafsson to Washington and Montreal respectively. All this came while the teams in the current four playoff positions in the East made aggressive moves.

That’s what probably bugs me the most. Not only will my favorite hockey team miss the playoffs.

But, Washington, the Islanders, Pittsburgh and Boston all made moves to bolster their chances to hoist a Cup. The Caps made a big deal to bring in Anthony Mantha from Detroit. They also quietly picked up Raffl from the Flyers.

The Islanders have Lou Lamoriello as GM and he appears to have worked his “magic” once again by getting Kyle Palmieri and Travis Zajac to mitigate the loss of team captain Anders Lee. Oh, and did you see what former Flyer and current Pittsburgh GM Ron Hextall did? He reunited with 36-year-old Jeff Carter who only had eight goals in 40 games with the Kings, but wouldn’t it make you sick to your stomach to see Hexy and Carts celebrating with the Stanley Cup on a Jersey Shore beach this summer?

Thankfully, Fletcher doesn’t seem to be placing the blame on Head Coach Alain Vigneault. When asked after the trade deadline if he would consider making any changes to the team’s coaching staff after such a disappointing season, he answered “No”. Which says to me, everyone else should be on notice that no one’s job is safe. Here’s hoping Fletcher blows up the roster as much as possible and brings in some new blood for next season.

In baseball, the Phillies began the season with a sweep of the Braves and then beat the Mets to start out 4-0, but as I write this, they sit at 6-4 as they definitely are a team with some flaws. The bullpen is MUCH improved. The top three starters are quality, but the biggest issue might be in centerfield.

Aaron Nola, Zack Wheeler and Zach Eflin are a solid 1-2-3, but Matt Moore and Chase Anderson don’t scare anybody so far. The bullpen is better, even though RHP Archie Bradley now has an oblique issue. The big problem so far, as I see it, is the lack of production from centerfield. Prior to a 4-3 loss to the Mets on Tuesday 4/13, the Phillies had received just three hits (all singles), no walks and 10 strikeouts in 30 at-bats from their centerfielders. Including time as a pinch-hitter, Roman Quinn went into that game just 1 for 16 with no walks and eight strikeouts. Adam Haseley, including time in left field and as a pinch-hitter, was 4 for 19 with no walks and four strikeouts.

Ugh. That’s pathetic and the Phillies are suffering because of it.

Put it this way, it’s almost like the Phillies are playing with one less weapon than the other team! To be honest, I’m not sure what the answer is though, as the team says Scott Kingery needs more time to fix his swing in the minors and they seem hesitant to bring up controversial outfielder Odubel Herrera from the alternate site in Lehigh Valley.

There is one great piece of Phillies news, and that came OFF the field in Atlanta last Friday night. Did you see the video where the young Phillies fan missed a home run ball off the bat of Braves star Freddie Freeman? 14-year-old Josh Scott was attending his first MLB game in person and he was all lined up to

catch a home run ball with his glove, but he dropped it. Then, a Braves player in the bullpen threw it up to him, and he dropped it again.

Then, the player threw it up a second time and it went over Scott’s head and into the bushes in front of him. All this was caught on TV, and instead of pouting, or throwing the ball back (since it was from the Braves and not his favorite team the Phillies), Josh Scott sought out a young Braves fan wearing a Freeman jersey and gave HIM the baseball. What a great moment this was as a young African American boy (Scott) gave the baseball to a young Caucasian fan of the Braves & Freeman. The video quickly went viral on social media. The Braves were so impressed, they gave Josh Scott and his father seats behind home plate for the Sunday night game, and Scott was given a baseball signed by Bryce Harper and Freddie Freeman. After the Phillies won 7-6 in a wild finish, catcher JT Realmuto gave Scott his game used bat! Sometimes kids really show us what is GOOD and RIGHT with the world, don’t they?

Real quick, I have to update you readers on Holy Spirit alum turned professional pitcher for the Phillies Mike Adams. Thanks to Mike’s mother Joan for a nice “action” shot of Mike throwing live BP at the Phillies Baseball Complex in Clearwater. Adams is just like I saw him with the Margate Hurricanes of the ACBL, “works quick, throws HARD”. Keep up the good work Mike Adams!

As I write this, the Sixers are coming off a 113-95 blowout win over the Dallas Mavericks. Joel Embiid looked dominant as he finished with 36 points and seven rebounds. Up next, the team everyone thinks they will compete with the most for the Eastern Conference title, Brooklyn.

The Nets have 2014 NBA MVP Kevin Durant, 2018 MVP James Harden, and Kyrie Irving. They acquired Harden from the Houston Rockets in a four-team trade Jan. 13. Brooklyn also later added Blake Griffin and LaMarcus Aldridge in the buyout market. As a result, the Nets have six players with multiple All-NBA selections: Durant, Irving, Harden, Griffin, Aldridge, and DeAndre Jordan. But, as Sixers star Ben Simmons says “there’s only ONE basketball”, plus if Brooklyn is going to win the East, they’re going to have to play better defense.

That’s where the Sixers shine in my opinion. Their defense is much-improved under new coach Doc Rivers, and I’m looking forward to seeing who comes out with the #1 seed in the East for the playoffs as things wind down in the regular season for the NBA. My only Eagles item for this column is about ANOTHER media report detailing internal issues in the organization. In an long (and outstanding) piece for The Athletic, Eagles beat writers Sheil Kapadia, Bo Wulf and Zach Berman detail “Paranoia, mismanagement and office politics: Inside the Eagles’ downfall under Jeffrey Lurie, Howie Roseman” Once again, stories are coming out that the Philadelphia Eagles may have bigger issues than lack of talent ON the field. Stay tuned.

From the local sports scene, I wanted to shine a spotlight a little bit on the Atlantic County Community College baseball team. The Buccaneers have not practiced or played on their Mays Landing campus for more than two decades. Currently, the team travels more than 20 miles to Surf Stadium in Atlantic City to practice and play. With that in mind, they’ve launched a “Bring it Home” fundraising campaign.

The campaign seeks to raise $1.5 million for a multi-phased project to revitalize the existing field on campus, making it playable and adding dugouts and a scoreboard.

Phase two will improve the field and fan experience by installing

energy-efficient lighting and new seating by spring of 2023. Phase three will add the finishing touches with a field house and concession stand by 2025. Donations can be made by visiting atlantic.edu/ bringithome or by texting BUCCSBASEBALL to 41444. ● As always, I’ll close with a few items from entertainment as Green Bay Packers QB Aaron Rodgers has been the latest “guest host” on JEOPARDY. Rodgers had an interesting start when during the taping of his very first show, a contestant didn’t know the correct question for Final Jeopardy, and instead took the opportunity to “zing” Rodgers. Two-time champion Scott Shewfelt was too far behind the leader to make it up with a correct answer, so he decided to troll Rodgers a little bit by bringing up Packers coach Matt LeFleur's decision to kick a field goal while down by eight points in this past season's NFC Championship Game writing down, "Who Wanted To Kick That Field Goal?"

Rodgers has expressed an interest in hosting the show full-time, and he certainly showed he’s got the ability for it. ● Finally, I wrote in an earlier column about my love for the late Temple basketball coach John Chaney.

Well, anyone who knew Chaney, knew it bugged him that he never was able to take a team to the Final Four. It was pretty special to me to see that someone made a cardboard cutout of Chaney for the Final Four games in Indianapolis. A very touching gesture indeed!

I’ll close with my reminder to keep wearing those masks and staying socially distant please. Vaccines continue to be given out in New Jersey with more and more people getting vaccinated every day. I’m fortunate enough to announce that I am now “fully vaccinated” and I hope that you will do the same. Hopefully “normal” is coming soon!

ne of the top fitness trends for the last few years has been and continues to be, wearable fitness tracking devices. These have many uses that promote a healthy lifestyle. They even tell you when it's time to stand because you've been sedentary too long.

There are so many to choose from!

Two of the most popular devices are from FitBit and Apple. If you’re a savvy fitness enthusiast, you’ll know how to use such technology to maximize your performance.

Fitness Watches can tell you how many calories are burned during a workout. These are all specific to your very own height, weight, gender and age. If you want to achieve a certain amount of steps, that's also something that is tracked through fitness watches. Sleep can be monitored, indicating how much sleep you actually get and how many times you wake during the

night. I use my watch to achieve a daily goal of 60 minutes of exercise and a calorie goal of 600 calories burned.

Fitness watches track your heart rate. Monitoring your heart rate or your rate of perceived exertion is not only important but great for motivational purposes as well.

The heart rate monitor, built into these types of watches, allows you to learn, grow, and improve your understanding about how your body responds to exercise. It is great for reflection and comparison, so that you can monitor how one workout varies from another.

By becoming familiar with your heart rate during a specific workout you’ll see from session to session if you are improving and pushing yourself as hard as you should. You’ll learn when you can push harder, and when you need to recover during the workout. You´ll also be able to detect early warning signs if something is wrong with your health or your stress-levels.

You won’t see the increased heart rates as much in yoga as you would in a high intensity workout. It is particularly valuable if you’re a fan of high-intensity interval training. I’m a big fan of this type of training. You get more bang for your buck in less time.

In a group fitness workout ev-

eryone is doing the same thing and experiencing the togetherness, yet it leaves a lot of room for personal variation. I may be using a much heavier weight than Susie or Joe which makes it personal for me and my results may be different as a result. The beauty of it is that everyone is different and that goes for their fitness levels as well, which is ideal even in a group setting. A great instructor will always provide you with modifications and adjust the intensity by choosing easier or harder options depending on your training objective.

The idea that more is better and that your heart rate should be high throughout a workout is a huge misconception. There is a bigger picture and that lies in how you’re feeling (rate of perceived exertion) with what your heart is telling you (heart rate).

It’s such a great tool and gives you knowledge about your own body. You should use your heart rate as just one tool to train smarter.

Maximum heart rates vary a lot.

This is individual because our ages and fitness levels vary from person to person. The rule of thumb which is 220

minus your age is your maximum heart rate. It’s your job to control and adjust your workout intensity. It should be based on your individual threshold and daily capacity, not always your maximum heart rate.

Mix it up and do a variety of workouts. It’s the combination and the cross training that will really have your body responding and always guessing. Heart rate training is wonderful to keep you in check with your body and make sure you’re not over doing it. In the event of overdoing it, you’ll know when to back off especially if you are familiar with your own maximum heart rate. Be in tune with your own body and do not compare yourself to the person next to you. Fitness tracking devices are a great tool to help you achieve your goals.

Angela Burton Collects Rain Boots for Children Atlantic City icon and former Club Harlem singer, Angela Burton is collecting Rain Boots for Children through her non-profit organization, Creative Multi Media.

Recently, Burton was surprised by the Casino Dealer Academy in Northfield. Upon entering, owner, Angel Jones presented a Rain Boots for Children display with balloons and dozens of children's rain boots, all to be donated to Burton's charity. Cathy Burke, owner and proprietor of the Irish Pub in Atlantic City, has also shown immense support for Burton's cause.

ho has your ear? Whether it’s social media (Facebook, Twitter, Instagram, SnapChat, Tik Tok, etc.), family, colleagues at work, friends, the media or politicians, so many forces speak into your life; some of them directly, many passively. But make no mistake, they all shape what we believe and in turn decisions we make that impact our lives. So how do you filter these influences and still hold true to who you are and what you believe?

It all comes down to what you value.

Whether you know it or not, we all have core values that shape us. These values have been formed over time; some of them good, some maybe not so good. These values dictate how we live both personally and professionally. Or at least they should.

I’ve thought a lot about values lately because of so many people, companies and organizations trying to sway our values.

It’s more important than ever that we consciously know and stand by our values.

We need to pass them on to our children and live them out personally and on the job.

So, how do you do that? You share those values whenever the opportunity presents itself. When it comes to your family, don’t pass up the opportunity to share stories, offer examples and model the values you want lived out by your children. On the job, it’s much the same and if you are in a leadership role, it’s paramount that you speak values into your employees.

What values do you hold? Whatever they are, they have to become a part of your DNA, who you are. But the question is, how

do you do that in a way that is authentic, not hokey or corny and forced. Here’s one idea. It’s been said that vision leaks. In other words, you can cast a vision, talk about your values and mission but if you don’t constantly beat the drum in an authentic way, it leaks. It vanishes, disappears. This is a constant thing. So one idea you might try to reinforce the core values you’ve laid out is to look for teachable moments each day.

Just like a parent who takes the opportunity of a child disobeying to teach or explain the right thing to do, on the job you as a leader in your area, your department, your team or company look for those teachable moments when something comes up to simply. Look for ways to simply say “You see that’s why one of our values is… or this is an example of us living out value number 4.”

Both personally and professionally, find stories to share that can reinforce your values. People not only love stories, stories make the biggest impact. But my takeaway for you today is this. Look around you each day for practical ways to not only gather up and store away examples of your core values being lived out but take time to share moments with those around you. Find ways you can apply those values each day. And most importantly, don’t let outside forces negatively influence your values. If these values are important to you, don’t be afraid to push back and live by your convictions.

At a time where values are being compromised, it’s critical that you and I stand firm in sharing and living out positive values that advance our culture, not erode it.

Health and Safety Technology Unveiled

at Atlantic City Airport

n the age of COVID-19, health and safety has never felt more important. Officials at Atlantic City International Airport (ACY) are hoping to add a little peace of mind during your next flight. Representatives from Israel Aerospace Industries North America (IAI), Israel’s largest aerospace company, were on site to provide a first-hand look at two new devices that aim to assure the health and safety of air passengers.

During a demonstration, two brand new pieces of technology were unveiled. The Tamar, a stateof-the-art monitor, accurately reads body temperature, along with heart and respiratory rates without human contact from up to six feet away.

tries and Eltel, provided an up-close look at the device.

“The person that is operating this doesn’t even need to be in the same room, so a potentially infectious person is not going to infect anyone around them.”

Also on display was the Grenada, a machine that illuminates Ultraviolet-C (UVC ) light to kill viruses and bacteria. Assaf Tamir, with IAI, says development of the new device was put into effect last year. “We started connecting with engineers and test pilots to find out the best way to deploy this kind of technology."

At the height of the pandemic, air traffic at ACY went down by 95% compared to the year 2019. The new devices are aimed to help in the fight against COVID-19 and make passenger journey as safe as possible, according to SJTA Air-

port Director Tim Kroll. “The biggest key in aviation right now is to make sure that passengers feel confident in traveling and getting back into the air.”

The demonstration also highlighted the importance of the relationship between the state of New Jersey and Israel. New Jersey Secretary of State Tahesha Way, speaking at ACY, says these experiments are

laying the groundwork for future innovations designed to keep travelers healthy. “We are seeing some of Israel’s most cutting edge technology being tested through these demonstrations.”

Atlantic City International Airport received an Airport Health Accreditation by Airports Council International for its plan to help fight the spread of COVID. Kroll says while the new technology unveiled will assist in that, there will still be a need for it beyond the pandemic. “We don’t know when the next pandemic is going to be, and our job is to make the traveling public feel safe.”

Atlantic City International Airport was one of several small U.S. airports selected as a testing site for these demonstrations.

Many Opting for a Green Burial (Part Two)

reen Burial, also known as natural burial is a way of caring for the dead with minimal environmental impact that aids in the conservation of natural resources, reduction of carbon emissions, protection of worker health and the restoration and/or preservation of habitat. Green burial necessitates the use of non-toxic and biodegradable materials such as wicker/ bamboo caskets, linen and cotton cloths or shrouds.

The beginning process of a green burial service starts off much like a traditional burial and any of the different types of cremation services. When someone passes away the family contacts the funeral home and the funeral home brings the deceased back to the funeral home to place the person under the firm's care. Then based on the families wishes one of two things happens, the deceased

is embalmed by a green embalming method or is placed under refrigera-

tion. Again, some individuals don't like the idea of embalming while some people are fine with the procedure or the situation may call for it based on the time involved for family to get home for viewing and services. Green embalming is a method that uses a special environmentally safe fluid that temporarily preserves the individual and restores a semblance of color because of vascular color distribution.

The fluid itself does not preserve as well as regular embalming fluid but it is not toxic and is actually made from natural plant oils, one of them coming from the common vanilla plant.

Following the green embalming or being taken out of refrigeration the deceased is bathed, shaved if needed; eyes and mouth closed naturally and would then be dressed in clothing that is made from natural materials such as cotton or wool, possibly a shroud.

Most green burial cemeteries have a requirement that nothing artificial is allowed to be buried with the deceased. Assuming that the family wants a viewing it is at this point the loved one would be cosmetized with cosmetics that are natural and water based as opposed to oil based. Then the deceased would be placed in a biodegradable or green casket for viewing, funeral, transport and burial.

A green casket is anything made of naturally occurring materials such as wood, wicker, bamboo or seagrass. The point is for the individual

to return to the earth and hence the casket must be strong enough to hold and transport the deceased but also break down in a short amount of time.

Following the services if any, the loved one would then be transported to a green burial cemetery for final internment. Green burial cemeteries have two classifications the first is a Hybrid green burial cemetery, which means that it does both traditional burials and green burials. The second classification is a green burial cemetery that only does green burials and is called a Natural Burial Ground. Currently in Atlantic county there are three Hybrid Green Burial Cemeteries and one Natural Burial Ground. Both types of cemeteries bury in a similar fashion in that the graves are about four to six feet in depth and a vault is not used to protect the casket or support the grave. The difference is that the Natural Burial Ground's grave is dug and filled-in by hand as opposed to a backhoe and the grave-site is not marked with a traditional monument but with a mountain stone or not at all. Some green burial cemeteries use GPS coordinates to mark the location of the deceased.

The green burial casket is lowered into the grave directly in contact with the earth following the graveside committal rites, if any. The grave is then filled-in, covering the casket and the deceased's remains will return back to the earth. This method of disposition is extremely environmentally friendly, reducing the carbon footprint in the funeral process to a minimum and appeals to the environmentally conscious. It is also appealing to those individuals who are searching for a "simple" funeral or service that requires less preparation of the deceased if chosen and a natural place of rest.

With the world becoming ever more complicated and more generations having environmental concerns, I am sure the green burials will start to be requested more to the point of being commonplace.

t has long been considered prestigious to live along Shore Road, where the homesteads of many of the original settlers, ship captains and founding families purchased their land and property so many years ago.

In the 1860's horse and carriage and railroad were the form of transportation. The Mainland Town of Northfield was originally known as
