Oh, My Mama … What a Sauce

W

hat can I say about the lives we are living during this unusual time that hasn’t already been said by millions of people around the world? This “new normal” is complex and frustrating, but we will get through it, and we will be stronger for it.

In times of crisis and concern, one thing that does bring us together is food, because food is our common ground, it’s our universal experience. And now whether you’re cooking for your family at home, or supporting our local restaurants by ordering take out/pick up, I hope you are staying safe, following the guidelines, and maintaining a positive attitude.

My last article in Shore Local was about some of the many, many sauces in Italian cooking. If you read it, I hope you enjoyed it.

But in response to that article many readers asked me why I didn’t include the recipe for my famous Mama Sauce, which, by the way, is the number one selling take-out pasta dinner at my restaurant. And, because of the increased interest in at-home cooking, we’re also selling it by the quart and actually shipping it to many regular customers by request.

So, if you missed the article the first time, here it is again along with the recipe so you can make it at home…or, as I said, you can pick some up at the restaurant.

When I opened Mama Mia’s restaurant in Seaville, New Jersey, in 1988, Penne alla Vodka was all the rage. Every restaurant in the United States, and in fact the world,

seemed to offer its version of this iconic Italian-American dish made with a Rosa Vodka Sauce.

A basic Vodka Sauce is made with canned plum tomatoes, garlic, red pepper flakes, vodka, cream, Parmesan cheese and herbs, usually basil. However, it seemed to me that every version of vodka sauce I tasted (and believe me I tasted many, many versions) was bland. I always was left wanting more flavor, more depth, more … something. There was not one version I would have been proud to serve in my restaurant.

So when I was preparing to open Mama Mia’s Restaurante I knew I had to include a Penne alla Vodka dish, but one I liked. I began experimenting with recipes long before opening the doors of Mama Mia’s.

I can’t recall how many times I tested the recipe until I came up with the one I loved and still use today. I’ll bet I tested 20 to 30 versions over several months – or more! My wife, Christine, and my friends got so tired of tasting my versions of Vodka Sauce!

Because I wanted to set my Vodka Sauce apart from all the rest, I decided to name it Mama’s Sauce, both after my restaurant but also after my Mama, Bertina, from whom I got my love of food and hospitality growing up, literally, in the kitchen of her tavern in Italy.

Here is my recipe written in quantities you can make at home. I hope you enjoy it.

Chef Joe Massaglia’s Original Mama Sauce *1 medium onion, chopped and caramelized in 2 tablespoons butter in advance of making the recipe ● 3 tablespoons (3 ounces) butter ● 2 tablespoons extra-virgin olive oil ● 1 teaspoon dried sage ● 1/4 cup chopped scallions, white parts only ● 2 to 3 garlic cloves, chopped ● Pinch of crushed red pepper flakes ● 1 teaspoon salt ● 2 to 3 tablespoons chopped fresh basil ● 2 tablespoons chopped parsley ● 6 ounces sweet Masala wine ● One 28-ounce can crushed tomatoes ● 1 cup heavy cream ● 1 cup (about 5 ounces) frozen peas, thawed ● 4 to 6 ounces grated Parmesan cheese, plus extra for garnish ● Cooked penne pasta, drained, reserving 1 to 2 cups of pasta water ● Additional basil, parsley and Parmesan cheese for garnish *Before starting to make Mama Sauce, caramelize the chopped onion by melting 2 tablespoons butter in a small saucepan over medium heat until sizzling. Add chopped onions and a pinch of salt and cook, stirring constantly, until onions become translu-

cent. Reduce heat to medium low, stirring occasionally, until onions become softer and medium brown. This may take up to 20 minutes to complete.

Meanwhile, melt 3 ounces of butter and extra-virgin olive oil in a large skillet over medium heat. Add sage, scallions, garlic, red pepper flakes and salt; cook, stirring occasionally, until slightly softened. Add the caramelized onions, basil and parsley and bring to a sizzle over medium heat.

Remove from heat and add Marsala wine. Return to heat and reduce the mixture by one-third, stirring occasionally. Add the heavy cream and reduce the mixture by one-half, stirring occasionally.

Add crushed tomatoes and peas and bring to a simmer, stirring occasionally.

Cook about 10 minutes, stirring occasionally, to develop flavor. Reduce heat to low and stir in Parmesan cheese until melted.

Add the drained penne to the pan and toss until the pasta has absorbed some of the sauce, about 3 to 5 minutes. (If it’s a bit thick add saved pasta water, a little at a time, until you reach your desired consistency.)

Serve sprinkled with additional basil, parsley and grated cheese.

've always been quick to get "cabin fever" so as you can imagine, I'm not faring too well in this quarantine. Staying home, with no work or social obligations seemed easy at first. I initially thought of it like a "snow day," a break in my busy schedule. Six weeks later, it's more like a snow storm on steroids.

The nonstop news coverage makes my head spin. The ever climbing coronavirus counts are scary. Even the commercials are a downer with sentimental music, along with a voice over telling us how much each company cares.

The highlight of my day is walking my dogs . In fact, I have been going for SO many walks that even they are getting suspicious. They are probably wondering when I'm going back to work so they can get a break.

Grocery shopping has changed so much! Everyone is donning masks and many wearing gloves, limited

entrances with guards and at times, even a line to enter. Once in the store, many of the essentials are missing, especially toilet paper. Chicken has become a rare commodity and even scoring coffee cream and yogurt isn't to be taken for granted anymore.

My heart bleeds for those who have lost loved ones, the many that suddenly lost their jobs and now face food insecurity for themselves and their families. In all the shock and despair of this pandemic, there also are many positive and heartwarming stories of recovery and selflessness. We

are forever grateful to the frontline workers, the individuals and organizations that are stepping up to do more.

Atlantic City Arts Foundation continues to brighten the city with new murals during Covid-19

T

he Atlantic City Arts Foundation started adding murals to Atlantic City in 2017 through their 48 Blocks AC program.

There are now over 50 murals in the city that have been supported by ACAF, including 5 created during the city’s first mural week in May of 2019. Due to Covid-19, the organization has postponed their second mural week originally scheduled for May 11-17, 2020 but they are still committed to creating murals in the city.

ACAF program manager Zach Katzen coordinated with local artist Charles Barbin to create a new mural this month at Kay-Vil Construction, located at 342 N. New Jersey Avenue in Atlantic City. Using leftover paint the organization had on hand from previous mural projects, Charles created “PERSONAL SPACE”, the third mural on Kay-Vil’s building.

“PERSONAL SPACE was motivated & inspired by the desire to want to stay together, to congregate with our neighbors and our community, as a flock. We’ve recently been exposed

to a world where we’ve been denied the choice to act socially in a group,” Barbin shares.

The mural features a soft yellow background and a colorful, textured cityscape. Barbin used an assortment of stencils and stamps to create texture and layers of color on the buildings. Wires cross the piece, full of birds quietly perched, appearing to be waiting.

ACAF hopes to create additional murals in the coming months, working with our local artist community.

“Like our fellow non-profits, Covid-19 has impacted our funding. We are doing everything we can to secure funds so we may continue to create art in our city, serve our community, and invest directly in artists,” shares Joyce Hagen, ACAF’s executive director. “This is a challenging time for our city and we know that creativity, art, and inspiration are more important

ichael Chait, first year President of the Greater Atlantic City Chamber of Commerce is an unsung hero in the Corona Virus Crisis. He jumped into action immediately to help local businesses.

Chait created a Facebook page called "Atlantic County Take Out and Delivery Options." The page has been wildly successful! In just a matter of weeks, it has grown to 14,200 followers. It averages a thousand comments a day and up to 10,000 comments per week. Chait is the ultimate matchmaker between community and business, giving residents information on the choices of local restaurants that are open and offering take-out. While giving local restaurant owners a platform to share their information and specials. One question posed today was "Where should I order a nice premade family meal for three in or around the Linwood area?" Dozens of suggestions were given. Seeking Treasure Along The Beach

i th the Atlantic Ocean and wetlands to the east and pine barrens to the west, South Jersey has one of the most sought-after ecosystems for wildlife in the country. Our shores are home to an abundance of sea life. A favorite past time is to walk along the waterline to search out its gems, including pieces of driftwood, sea glass, sharks’ teeth and shells. Recent storms have brought much of it on the beach.

Seashells are the most beautiful, sought after treasures that were once home to various mollusks (slimy-like creatures such as snails or clams). Shells you can expect to find along our shores vary in size and color. Bay scallops, Atlantic ribbed mussels, oysters and razor clams are just a few of them.

The most sought-after shells are the Whelks, white surf clams, starfish and sand dollars, which are a real treasure if found fully intact. The knobbed whelk is the official state

shell of New Jersey. Its shell is usually large in size and shaped like a pear and has long coils. These shells can be found anywhere along the coast from Massachusetts all the way down to Florida. Finding an unbroken whelk is a cherished find.

Over the past month, seals have become a frequent visitor to the Jersey Shore. They are semi-aquatic, meaning it is perfectly natural for them to haul themselves onto

the sand. It’s the perfect place for them to warm up and rest. Those who encounter a seal are advised

not to approach these wild mammals. Call the Marine Mammal Stranding Center 24-hour hotline at 609-2660538. These specialized trained personnel will check the mammal and decide if the seal is healthy or requires relocation.

Several of our local beaches are

still open to local residents, including Margate, Atlantic City and Brigantine. Those that venture out are encouraged to exercise caution, staying six feet in distance between others. And remember to check all of your shells before taking them home. If it feels too heavy, it is most likely the current home to a snail or other sea creature. Please be sure to return these to the waters of the ocean.

We live in a very unique ecosystem. From the precious coastlines and sandy beaches to the luscious green of the pine barrens, our area is surrounded by nature you will not find anywhere else.

Let us remember to take care of the Earth around us and the animals that surround us every day. Please remember to share all the respect with our natural resources and our local sea life.

are very lucky, you will also attract a couple of beautiful bluebirds that will return each spring if they find their part-time home suitable. Catbirds are always welcome return guests to my yard, and I keep them busy with fresh fruit such as grapes, apples, and oranges. I’m always hoping to attract the elusive oriole to my garden, and have planted flowering quince with optimism. Though I haven’t had any luck with them yet, I also try to draw orioles in by setting out oranges and grape jelly.

As you can see, many birds like the same types of seeds, fruits, and plants.

Plant sunflowers in your garden, fill

your feeders with suet, peanuts, and black-oil sunflowers seeds, and soon you will be hosting woodpeckers, finches, cardinals, blue-jays, tit-mice, nuthatches, and chickadees. Be sure to provide them with a water source as well as trees and bushes for protection from predators and the elements.

In return, they will eat pests in your garden and serenade you with their beautiful songs.

Progress, not perfection is the key to success Shore Fit

hen success is defined as perfectionism, it’s a recipe for failure. When we focus on progress not perfection, we set ourselves up to achieve. How many times during your lifetime have you heard, “nobody’s perfect?” Trying to be perfect puts too much pressure on ourselves and is completely unrealistic. This next sentence really resonated with me because just like so many of us, I am guilty of putting the pressure on thick when it comes to myself. "I don’t expect perfection from others, so why am I so hard on myself?

Science shows that being kind to yourself when things don’t go as planned can actually help you get back on track by eating better and moving more. We are only human and we make mistakes, so rather than dwell on it, get over it, and move on! It’s perfectly okay to get

frustrated with yourself because it just means that you care about your health and wellness. That in itself is something to be proud of. If we get off track, cut yourself some slack by imagining what you would say to a friend or family member in a similar situation. Repeat those same words to yourself. You wouldn’t tell someone that you care about to just bag the healthy eating or exercise plan because of a slip up. It’s definitely not the end of the world, so don’t let it define you as a failure. You can get back on track, the next day or even the same day by choosing to eat better for your next meal. I’m definitely not a fan of, “ I’ll start back on Monday.” Why start on a Monday when a Thursday is even better because it’s the next day. Sometimes, Monday’s never happen and it spirals into the next Monday or the Monday after that. No time, like the present is what I say.

Focusing on progress instead of perfection can make it much easier and more enjoyable to reach your goals. The benefits of progress motivates you to keep going and can be empowering when you see the progress you’ve made, regardless of the challenges that you faced.

Here’s one to scratch your head over; even when we fail, we succeed!

in progress. Even Albert Einstein said "Encountering our failures prompts the most necessary changes in our lives.”

When I say failure, I don’t actually mean failure. What I mean is setback and setback sometimes gets perceived as failure. This is where we go downhill. Our perceptions take us there. We become our own worst enemies. Have you ever been that person who splurges on a delicious dessert or skipped a couple of workouts which then snowballs into weeks or even months of bad meal choices and inactivity?

Equip yourself with rational self-talk such as, “All I can do is my personal best,” and making an error does not define me as a failure. Focus on the big picture and move forward. When progress is the goal, ask yourself, “Did I do better today than I did yesterday?” Only you can answer that and if your answer happens to be no, then what do you need to do about it? Please, just take it one day at a time.

Somewhere along the line, I decided to personally challenge myself with a goal that challenges both my mind and body.

Don’t get me wrong, I challenge myself almost daily by lifting heavier weights or with longer bouts of cardio intervals, but this is a totally different beast. I’ve decided to run a half marathon. Not only have I decided, I’ve registered for it. This means that I’ve sealed the deal!

Due to unforeseen circumstances, the half marathon is postponed but that isn’t stopping me from my training. It’s just a bump in the road and my goal of completing it is just going to happen a little

later in the future.

How does this challenge me mentally and physically?

Glad you asked. I’ve never considered myself a runner and I don’t love it either.

It pushes me out of my comfort zone.

We all have different modes of exercise that we prefer and running just isn’t mine. I dabble in it because I like to mix up my workouts. You have to shake things up once in a while and your workouts need a good shaking every so often. You must trick your body because it will just get used to your routine if it stays the same. I’m always learning and progressing to become an even better version of myself, fitness instructor and personal trainer. Completing this goal of a half marathon just gets me one step closer.

Will I be perfect and finish first? Heck, no and what is perfect anyway? I have one goal and that’s to finish! Do I have a time frame in mind? Yes, I do but I will also be proud of myself, regardless. What I will do is look back and see how far I’ve come on my very personal journey. It’s all about progress and not perfection.

If you take anything away from reading my article, I hope that it’s to always strive to reach your goals even when setbacks arise and try something new and different that might be out of the box for you and watch yourself kill it along the way.

Atlantic City during Quarantine

A

tlantic City is one of the “Shore Towns” that has remained open. They did not close the Boardwalk or the beaches to local residents. Even though all the casinos are closed and most of the stores that do not do “take out” are closed, it appears that even a warm sunny day did not bring out many residents to the City’s Boardwalk or streets.

It is a real quandary for many, living in an area that has remained open with access to a boardwalk. With a mask and gloves, respecting the required social distancing, it is possible to get fresh air, exercise by walking or taking a bike ride and just a relief from the quarantine.

However, the other side of the coin suggests that residents should remain inside under quarantine in an effort to protect yourself and the others near you. At the same time, it is hoped that by remaining inside away from others you will not possibly infect them as well.

It is a decision that each individual must make for themselves and their family and friends. Atlantic City is one

Each day brings new information, new knowledge, new opportunity and perhaps most importantly, new hope. The media often only reports the negatives of COVID-19 because fear sells, fear gets more clicks, and fear increases ratings but truly, there is a side of this entire experience that doesnâ&#x20AC;&#x2122;t get nearly the attention it deserves. I am talking about the stories of recovery and hope, about communities banding together to care for those

If the level of selfless acts taking place not just in our community but in the entire world is any indication, I am confident that people are feeling fulfilled in ways they have never felt before. Although COVID-19 has caused much grief and heartache, it has also given us all an opportunity to step up for our community and give a part of ourselves that could lead to personal growth that would have never been realized in a status quo environment.

Keeping in the spirit of focusing on the positive, I want to tell you about a close friend of mine, Maria, who is in the process of recovering from COVID-19.

thinks she contracted the virus around 4 weeks ago when dealing with an infected patient. She experienced all the reported symptoms and after her test came back positive, she said there was a sense of relief. That would not be the reaction of most people but working in healthcare and knowing that the vast majority of people do recover from COVID-19 gives Maria a unique perspective. Maria started off with a fever for just over a week she said,

"

I was just relieved to know what it was, it is better to know than not to know.”

Maria is part of the force of frontline workers that put their lives at risk each and every day to keep the rest of us safe. When she had symptoms, she took precautionary measures, went home and quarantined. Now after almost 4 weeks she is recovering. Sure, there are still some aches and pains here and there, but she is soon to be one of the almost 72,000 Americans that has recovered from COVID-19.

One thing that American businesses are great at doing is adapting to situations.

One of the many local businesses that is not only adapting to the new normal by creatively restructuring their business model but has also found new ways to give back to the local community is Water Dog Smoke House (7319 Ventnor Avenue, 08406 Ventnor City). These

guys are nothing short of local heroes with the work they have been doing to support people that have been impacted

by COVID-19. When speaking to one of the partners, Steve Marchel, you can understand the love and passion this company has for its local community. Steve said,

Our area had many families living in households experiencing food-deficits before the casino closings and now we are at or near crises level in our communities”

So the company has started a number of initiatives to play their part in helping to alleviate some of this pressure faced by people in the area. They make weekly deliveries of non-perishable food goods to the Food Bank of South Jersey and have a box in the restaurant for those in the community who want to donate food, which they deliver. Last week, they delivered over 200lbs of food. They have generously committed to deliver a free hot meal to anyone or family who is in need. They also, like me, are dog lovers and began a drive to help our 4-legged friends, by starting the "Dogs of Water Dog" Campaign. Now this I love - on 4 large antique cheese boards, our local artist has painted the face of any of their customers' dogs for a fee of $20. Proceeds will go to the Atlantic City and Ocean City Humane societies and thus far, they have over 150 dogs, including my two fur angels. Check out their Face-

It’s true that these are trying times for many of us. Everyone will experience change in different ways. Many people have lost their income and some of our community is struggling to adapt to the new normal. Thankfully there are programs in place and help when you need it. Finally, I want to take this opportunity to say thank you. Thank you to all frontline workers like Maria, that are keeping our country functioning such as doctors, nurses, emergency first responders, police officers, firefighters, supermarket workers and everyone else that is still working tirelessly so we can feel some version of normal. Also, thank you to everyone who took the guidelines seriously and stayed at home, following government guidelines, and being patient with everything that is going on. You are the reason that the curve has flattened and that a beautiful bright future is right around the corner.

Getting Past Corona: How We Can Live Long and Prosper Opinion

T

he crew of the Star Trek Enterprise, while visiting some distant and exotic planet would often find themselves afflicted by some new unknown virus or malady that threatens the lives of the crew or even of humanity as a whole. It could be premature and rapid old age, grotesque lesions that drive a man mad, parasites that take over one’s nervous system or even a giant-sized single-celled organism that swallows whole planets. One thing that they all had in common was that a cure would inevitably be found between the fourth and final commercial breaks.

There would be much suspense as Dr. McCoy and Mr. Spock brought all their brainpower and computer skills to bear but the cure was a forgone conclusion.

In real life there are very few magic potions or miracle pills. Humanity has made enormous strides in medicine and surgical procedures over the past century – so much so that we routinely see folks living deep into their 90s.

When I was a kid, I never saw anyone who was 95, most folks were lucky to get to 75. That often four generations of a family can be alive at the same time is probably unprecedented in human history. This is a real blessing, but it also has lulled us into a false sense of physical invulnerability.

Prior generations knew and accepted that life was often short and fraught with threats and dangers from all sides. If you were lucky to survive your early childhood, you had to fend off no end of diseases throughout your lifetime – maladies for which there were no cures. Prior generations accepted the risks attendant with daily life and went about their business. They weren’t hyster-

ical people. But in today’s instantaneous digital world, that we don’t “have an app for that,” has caused no end of panic worldwide.

Which brings me to the Coronavirus pandemic afflicting most of the world. In 1982 there was a hit song

by Thomas Dolby called “She Blinded Me With Science,” (“She blinded me with science and failed me in biology, yeh yeh…”). The woman of Mr. Dolby’s infatuations, Ms. Sakamoto dazzled him with technology so that he was helpless in her hands. Much the same has occurred with our national and local political leaders. Despite the fact that the Chinese insisted that only about 83,000 people in Wuhan had the Coronavirus and only 3,300 died from it (which we now know to have been lies) the scientists across the globe predicted Bubonic Plague-like catastrophic mortalities as it made its way round the world. One study asserted 2.2 million people would die in the US and a half million in the UK. Revised models dropped down to 200,000 in the US, then 100,000, then 85,000 then 61,000.

The initial and ensuing panic prodded our leaders to put the entire country in a lockdown quarantine which has so far resulted in 26 million Americans applying for unemployment benefits as of April 23rd, wiping out all jobs created and gained since the 2008 recession. Whole sectors of the economy have been decimated – travel, hospitality, restaurants, retailers, sports, oil and energy and even vast swaths of the health and medical establishment and more to come. Education has been stopped cold. Mighty industries are dancing on the precipice of insolvency. The shutdown of the most populated parts of the country will end up being from 45 to 90 days depending on where you live. Thousands que-up in lines for boxes of food despite very generous

unemployment benefits. The federal government has ramped-up spending to a level that may double the size of the federal budget this year and incur debt and deficits that multiple generations probably won’t be able to repay.

Never in my lifetime have I ever seen anything quite like this, and I’m 61. The very social fabric of our country has been torn asunder with the rationale of “flattening the curve.”

Some in the media commentariat have led millions of Americans to believe that “curve flattening” is about saving hundreds of thousands of lives and if we emerge from our hermetically sealed shelters the virus may kill us all.

I had occasion to speak with one of my doctors who is one of the top people in his field in the nation. He converses regularly with colleagues of similar stature in other specialties.

He told me bluntly that “flattening the curve was about reducing the demand for ambulances, emergency rooms and intensive care facilities and equipment as the virus hit its apex” and not about reducing the number of cases or saving lives perse. He went on to tell me that as a result of this the disease will continue in our midst probably for the next year and a half in some form or another in varying degrees of severity, with a dip in the late Spring and Summer (owing to the virus not surviving well in the air and on surfaces in intense heat and light) and a resurgence in the late Fall and coming Winter and beyond. He went on to say that “there will be no cure or vaccine for another year, two or maybe never” and that “the medical community is looking at Corona in a similar way to HIV/AIDS, in that there is no cure but enough medication and treatment so that the infection is not lethal.”

As it is, the overwhelming number of tragic fatalities from Covid-19 have been for people over 50 with a heavy majority being over 65 and among those, a heavy mortality rate among the obese and people with other existing ailments. More than 95

percent of those testing positive for Coronavirus will survive it, thank God So where does this leave us? Well, as a society until just recently we’ve been accepting of the fact that not every illness has a cure. According to the American Cancer Society, there will be 606,520 cancer deaths in the United States in 2020. The CDC also reports that 83,564 Americans passed from diabetes. The IIHS reports that 36,560 people died in car crashes in 2018. As of April 23rd, 49,885 of us perished from the Coronavirus. There are no cures for any of these things.

We take risks every day we get up, start the car and go to work; anytime we get on a plane, anytime we eat a fatty steak, delve into a tub of ice cream; anytime we have a drink of alcohol, anytime we cross the street, even anytime we shake hands or kiss someone. As adults we measure the risk-reward ratio for all our actions and decide if it’s worth it. As consenting adults, the government trusts us to live responsibly (or not) and doesn’t dictate that we can’t have that hamburger and wash it down with a pitcher of beer.

So, we’ve “flattened the curve” on Corona to the extent that ERs are sitting empty in much of the country. We’re awash in ventilators.

The virus will be with us for a while.

The government needs to give us a “get out of jail free card” and let us resume our lives. How do we do this and stay safe? By “turning Japanese.”

I used to laugh at all the pictures of Asians teeming together in their blue facemasks every winter. No longer.

Many would laugh at their custom of bowing in greeting, but it’s a lot safer than shaking hands. That might be the way to go. Masks and gloves when out in public. Initially not cramming together like sardines. Use those new digital laser-like thermometers outside every venue to see if someone has fever. Also, for social distancing in travel, airlines could charge more to keep the middle seats empty. Many would pay for the privilege. Ditto with restaurants charging more for increased space between tables.

Theaters and sports stadiums can do likewise, charge a premium for increased space. And we’re going to need more hospitals and more beds permanently.

But we must resume work and life or there will be no point in living because there will be no quality of life. Staying on lockdown will financially bankrupt us individually and collectively, this cannot be sustained.

Memo to government: We voluntarily acceded to flattening the curve, now treat us like adults and let life resume.

Stocking Up through the Pandemic

n this time dealing with COVID-19 we all understand non-perishable foods are the most purchased items in supermarkets across the country. This is mainly because they have a long shelf life. The vast majority of non-perishable foods don’t require refrigeration to keep them from spoiling. This type of food can be safely stored at room temperature, such as in your pantry or in a kitchen cabinet. Additionally, they are food staples everyone should stock up on, especially when we are talking about emergency situations. However, not all food staples are created equal, so in order to maintain your healthy eating journey, we’ve selected the good from the bad, giving you the opportunity to opt for healthier non-perishable foods.

Let me suggest , Dried and canned beans are a smart option when it comes to non-perishable foods because they have a long shelf life, providing a high nutrient content. Canned beans can easily and safely be kept at room temperature for approximately five years while dried beans can last 10 or even more years, depending on the packaging.

Beans are a great source of fiber, plant-based protein, magnesium, B vitamins, manganese, iron, phosphorus, zinc, and copper. They can be paired with most foods.

Who doesn’t love nut butters? They are creamy, nutrient-dense and very tasty. Even if storage temperatures can actually affect their shelf life, commercial peanut butters can be safe to consume for up to 9 months at room temperature. Natural peanut butters don’t contain preservatives, so they

can last up to 3 months . Did you know almond butter keeps for up to 1 year at room temperature, while cashew butter keeps up to 3 months? Nut butters are an excellent source of healthy fats, protein, vitamins, minerals, and powerful plant compounds, including phenolic antioxidants, which are actually compounds that protect your body against oxidative stress and damage by unstable molecules called free radicals.

Dried fruit and nuts! Yes, fresh products have a really short shelf life, but dried ones are actually considered non-perishable. Most dried fruit can be safely kept at room temperature for up to 1 year when properly stored. Dried vegetables can be kept about six months—again, when properly sealed and stored (vacuum-sealed packaging can help prevent spoilage). You can select your favorite ones from a variety of dried fruits and vegetables such as dried berries, apples, tomatoes, and carrots. However, you can easily use a dehydrator or your oven to make your own healthy dried fruits and vegetables.

Enjoy them as a snack or add dried veggies to your soups and stews.

Try canned fish and chicken. When consumed fresh, fish and poultry are packed with essential nutrients our bodies need in order to function properly. Unfortunately, they spoil really fast.

Canned varieties instead can be safely kept without refrigeration for long periods of time—up to five years at room temperature. Tuna and other seafood products are also sold in lightweight packages known as retort pouches which are great for smaller pantries and backpacking.

Nuts and seeds are the perfect snacks when you’re on the go. They are also nutrient-dense and shelf-stable. In other words, nuts and seeds are excellent options to munch on in any given situation.

On average, nuts last about four months when they are kept at or near room temperature though shelf life varies greatly between nut varieties. For example, cashews can be kept for six months at 68ºF while pistachios only last one month at the

same temperature.

Grains are definitely the smartest option when referring to the current situation—coronavirus (Covid-19). Whole grains such as oats, rice, and barley have a much longer shelf life than any other popular but perishable carb sources like bread. For example, brown rice can be kept at 50–70ºF for up to three months while farro lasts up to six months at room temperature. They can also be easily added to soups, salads, and casseroles, making them a really versatile non-perishable item. Plus, consuming regularly whole grains may minimize your risk of type 2 diabetes, heart disease and certain cancers.

Canned fruits are a great idea. We all know that canning is commonly used to lengthen the shelf life of certain foods such as fruits and vegetables. The heat used during canning actually kills potentially harmful microorganisms and the characteristic seal of canned foods keeps new bacteria from spoiling the contents. However, as you probably guessed, the shelf life of canned fruits and vegetables is based on the type of produce. For example, low-acid canned vegetables, including potatoes, carrots, beets, and spinach, last 2–5 years at room temperature while high-acid fruits like grapefruit, apples, peaches, berries, and pineapple last just 12–18 months.

Real Estate Update: Covid's Impact on the Market

I

know most of you are stuck at home constantly reading emails on your cell phones and on social media sites hearing and seeing different things going on across the country during the pandemic. I have been getting quite a few questions about the current state of the market. Some question if itâ&#x20AC;&#x2122;s a good time to buy or sell now in our South Jersey area.

I personally have the good fortune of being busy and sold 3 homes in the last 3 weeks, and two of them are closing quickly. Realtors can still get things done like CO`s, title work, home inspections and other parts of the real estate transaction. So far prices are staying stable. Vacant homes for sale have been easier to show in the last 6 weeks. Investors are still buying up the homes in the

$225,000 and below range quickly.

It`s Wednesday April 22 when I am writing this. Here are some guidelines as of today: In-person activities must be by appointment only.

No more than two people, including the realtor, may be at the property at any one time; and those two persons must strictly follow social distancing guidelines established by the Centers for Disease Control and Prevention (â&#x20AC;&#x153;CDCâ&#x20AC;?) by remaining at least six feet apart at all times.

No open houses (except virtual tours/online open houses). Buyers must be pre-approved. Lenders, Escrow and Title are working, which are essential to complete transactions.

Professional photographers, staging, inspections, appraisals are also working as long as they adhere to the above rules.

Bottom line: Houses are certainly closing on time without a hitch in just about in all cases. Some title companies have set up tents outside of their buildings for easier drive up closing access.

Incredibly, virtually all numbers went UP across the board nationwide.

Locally, the listings of properties have slowed down some. Most people are still shocked and grasping the latest details about the virus to see what will happen. Some others are moving forward and taking precautions and making things happen for themselves.

Here are the highlights: â&#x2014;? In March, sales prices continued to climb, and we still saw multiple offers as buyers tried to take advantage of low interest rates. â&#x2014;? Although listing inventory is still DOWN overall from the same period last year, new listings, pending and closed sales were all UP over last month nationally. â&#x2014;? Buyers are decisive! More decisive in this market now, they come prepared wearing masks and gloves, so they are serious buyers for sure, and they are making decisions quicker now I noticed with most of them. The local property inventory is not as plentiful in most price segments as it was 2 years ago or even early of 2019 year.

The average days that a listing is on the market before they get into contract dropped from 42 days in

February to only 26 days in March nationally. Interest rates, like the stock market have been volatile. Your lender can explain what effect the Fed has on long term rates (not much). STILL very ALL-TIME low interest rates now! â&#x20AC;&#x201C; So, no worries there at all. As of today, a person buying with a 720 FICO credit score can get a low 30 year payout interest rate with zero points at an incredible fixed rate of just 3.30% For first time homebuyers, depending on what and where they are buying, it is usually much cheaper for them to buy and own now, then paying rent of $1500 a month or more.

Some loan types are no longer available, and some banks have even withdrawn from the market temporarily. Overall, that is not a big loss.

There are still options for people with employment to get mortgages even without fabulous credit. If your buying soon and need a quick prequalification over the phone, contact a good mortgage lender. Better yet, a complete approval (subject to an appraisal) will put you in the driverâ&#x20AC;&#x2122;s seat to get the best deal possible on your purchase. It would allow you to compete with a cash buyer if a multiple offer situation comes up, which still can happen in this pandemic.

We All Still Count: The Census 2020

I

n the midst of a global pandemic African American Leaders are coming together to make sure that their community members are counted in the upcoming 2020 Census.

On Thursday April 10th, several community members from various organizations in South Jersey met with community members via Zoom for a South Jersey Census 2020 Tele Town Hall.

The event was sponsored by The Center for Cooperative Media, a program run by Montclair State University.

This was actually a follow up to a live in person town hall discussion that took place on January 30th at St Augustine’s Church, in Atlantic City.

This event drew over 75 people from the community to get up to date information and to get excited about The Census 2020.

Another South Jersey Town Hall style event was planned to take place on Thursday, March 26th at The Labelle Art Gallery in Voorhees, NJ. Due to the stay at home measures to keep people safe from The Corona Virus Pandemic, the March 26th town hall had to be cancelled. Instead, the organizers decided to convene the town hall via teleconference on April 10th.

The speakers from the community organizations included Kaleem

Shabazz, President Of The Atlantic City Chapter of The NAACP. Mr. Shabazz spoke about the continued efforts and dedication of The NAACP to The Census 2020. Mr. Shabazz confirmed that the NAACP was working on a national level and at each branch level to make sure all of their members and the people in their community of influence would complete their Census forms “SAFELY” via the phone, internet or by mail.

Mr. Shabazz also explained that The NAACP will continue to educate people about these key facts: The Census 2020 is “fast” (easy to complete). The Census is “urgent” it only happens every 10 years and it will surely determine how money and services are given to communities of color. The Census is “a private matter.” Shabazz explained that the information is only used to collect a count and the information is only kept by The Census Bureau.

“Therefore this information will NOT be used to serve warrants or to deport anyone. In fact, they never ask about warrants or immigration status.”

Also speaking at The South Jersey Census 2020 Town Hall was Ms. Gina Burton, President Of The National Coalition of Black Women -South Jersey.

Ms. Burton spoke of her organizations’ overall vision and commitment to Black Women in South Jersey in particular, as well as the health and welfare of all Southern New Jersey.

She discussed that despite the social distancing, it is still important that “Black Women be counted” in The Census 2020. Even before the outbreak of Covid 19, women of color suffered because programs that fund things such as research into infant mortality do not receive all the mon-

ey that it should. The reason many health programs and organizations that directly benefit Black Women, may not have all the funds they need, is because of people not participating in the last Census.

The last community speaker was Vaness Maria Graber who is the General Manager of radio station FM 106.5 WPPM in Philadelphia, Pa. Though her station is based in PA, the signal broadcasts into much of South Jersey and is available throughout the world via the world wide web. Ms. Graber discussed special programming content that was created by WPPM producers around The Census 2020.

More importantly, Ms. Graber discussed resources that are available for people in South Jersey that are spanish speaking. Lastly she discussed some of the barriers that kept Spanish speaking Black and Brown people from completing the 2010 Census and how WPPM and other organizations

are working to make sure the voice of Spanish speaking South Jersey is counted.

Finally our keynote speaker, Ms. Patricia Williamson from The New Jersey Institute for Social Justice spoke. Ms. Williamson tied together the messages of our earlier speakers and shared more information.

Explaining that incomplete numbers hurt every community in South Jersey. Ms. Williamson also explained that New Jersey lost their share of over 700 Billion dollars for 10 straight years as well as a seat in Congress.

Then Ms. Williamson discussed how and why people of color in South Jersey have been considered “hard to count”. Ms. Williamson even provided maps showing the counts from The Census 2010, she presented another map that showed how each county in South Jersey was doing so far on The Census 2020.

The Teleconference ended with a question and answer period.

The Atlantic City NAACP is sponsoring another Tele Town Hall On Thursday March 14th at 5pm. The event will be held on Zoom and hosted

by Shore Local writer Raymond Tyler.

Meet Marc Berman

arc Berman is passionate about life, the Jersey Shore and...well, bacon!

With his lively personality and great sense of humor, he has even found a way to make people smile in the midst of this pandemic, with his bacon facemask and Tiger King spoof videos.

Marc wears a lot of hats and has had many extraordinary experiences. He is a husband, father, radio personality, entertainment business owner, and marketing guru. In all facets of his life, Marc is a forward thinker who is always a step or two ahead of his time.

Since 1981, Marc began his career in the entertainment business as the owner, disc jockey, and emcee of Marc Berman Entertainment, a full time entertainment company based in Northeast Philly.

In the mid 80's, Marc started Philadelphia's first male revue show, the European Male Revue which played up and down the East Coast. The show also helped raise thousands for many local charities.

1943 Copper and 1944 Steel Cents Shore Collectibles

I

t seems that not a week goes by where someone with a 1943 steel (some call them silver) cent thinks they found a rare coin. Hopefully, this will clear up the confusion.

At the start of 1943 we had been at war for almost 2 years and all production was geared toward the war effort with many items including food and gasoline being rationed. Since copper was a key metal necessary for bullets and shells in artillery, it made no sense to use this metal to mint one cent coins. Therefore, it was decided that all 1943 one cent coins were to be struck using steel with a zinc coating. This was to be done at all 3 mints, the Philadelphia, Denver, and San Francisco mints.

Well, remember Murphy, the guy who created Murphy’s Law “anything that can go wrong, will”? While things didn’t actually go wrong, there was something that wasn’t expected or considered as to what effect it would have in the future. That was there were a few copper blanks left over from 1942 that were not minted into one cent coins. Mint workers, not giving any consideration just threw those copper blanks into the minting presses along with the steel blanks.

This occurred at both the Philadel-

phia and San Francisco mints. No one knows the exact number of copper blanks that were turned into 1943 cents, but it could not have been more than a handful since very few have surfaced after all these years.

If you think this was a one-time occurrence, think again because Murphy was still lurking in the mints.

As a result of a major salvage effort,

1944 Steel Cent

boat loads of used shell casings were recovered from the battlefields, shipped back to the states, and processed into material that could be used to strike one cent coins. But, (there is always a But) as in 1943, some steel cent blanks were left over and found their way into the minting process, resulting in a few rare 1944 steel cents.

How rare is rare and what could someone owning one of these coins expect to receive? There is no guarantee, but valuations of plus or minus $100,000 depending on condition would not be unheard of.

1943 Copper Cent

Now the question is “have they all been found?” to which the answer is “no one knows”, so if you are feeling lucky, grab a handful of copper and steel cents and check the dates.

Some dastardly people have gone to the extent of counter feiting 1943 copper cents by copper plating steel cents, but this can be uncovered quickly because steel is magnetic, so a copper plated steel cent will stick to a magnet. Use a magnet when testing, do not do what someone did to the 1943 copper cent I once owned. They scratched it with

iving a life by design means that you choose your future and shape your life based on what is important to you. Essentially, you “design” your life. If I’ve lost you after the first two sentences, hang tight with me, here.

This isn't some new age philosophy that I am talking about. I am talking about the power of clarity, intention, and strategy, packaged up in the most awesome gift you could ever give yourself: a life by design. It is essentially getting clear on your long term goals, the why behind those goals, and then creating a plan to hit those goals. That is the simple anatomy of a life by design.

Will tough times come, like a sudden world crisis with an extreme lack of toilet paper and rubbing alcohol, and a life-altering, endless quarantine? Survey says: Apparently yes.

Over the last month or three, or however long I’ve been at home, I have come to realize that if certain things

are in alignment, one can weather the storm with little worry. So how do we do it?

Think ahead ten years. How old will you be? How old will your children be? If you could create the most amazing life ever by 2030, what would it look like? I need deets. (That means details, Mom.) Tell me it all. What is your life like?

Who are the most important people in your life? Are you healthy? What does that look like to you? Where do you vacation? How often? Are you married? Divorced? How many kids do you have? Or dogs? Or parakeets?

What is your legacy? How much do you give/donate? Where do you donate? What is your reputation like?

What do you eat? When do you wake up? Where do you live? What do you drive? All the thingswhatever matters to you most.

Next, get clear on why those things are important to you.

Dig deep and really let the question hang out in your heart for awhile. Asking the “why does this matter to me” question will help you understand your values (and maybe yourself) like you never have before.

Look at all of the notes that you have compiled and ask yourself the following question: What are the five most important things or skills that you would need to acquire, commit to, or achieve (in the next ten years)

in order to live the life that you want to live? The CEO of MAPS Business Coaching, Abe Shreve, says that “clarity does the heavy lifting.” I love that. Simply getting clarity on what it is that you want is the biggest piece of the puzzle.

Once you do that, set benchmarks along the way. You might set a benchmark for every year.

Maybe you set one for every month, every week, or even every day. A benchmark will simply let you know that you are on track. If you’re not on track, you’ll have a clear understanding of what it will take to get back on track.

When the benchmarks are set, you are ready for the strategy. Most of us love to start out with the strategy, but if you don’t know where you’re going, how will you know when you arrive? Only after you know where you are going, by when, and where the benchmarks are, should you actually make the plan. In order to plan, think of all of the activities you need to do to hit the benchmarks. Strategize and put a plan in place.

Have you ever heard the term “simple not easy?” Good. That’s this.

It’s a simple concept… think about what you want, find the why, benchmark it, and create your plan. But it ain’t easy, folks. Taking the time to ask ourselves the right questions and get clarity on what we want and where we want to be is rarely done.

And what a shame that is, y’all.

You have the power to change your life and live the life of your dreams, but if you don’t know what the life of your dreams even is, and if you won’t take the time to find out, then you’ll end up living the opposite of a life by design: a life by default.

whatever happens to you, happens to you. You don’t take ownership for your life. You “deal with the hand you were dealt”. Just hearing that sounds depressing. If you want a life that is driven by purpose, whatever that means to you, the path is simple, though not easy. Just remember the anatomy of a life by design: get clarity on what you want, discover the why, benchmark it, and develop the plan of attack. You got this. I believe in you.
