Atlanticare Continues to Expand The health giant is building a $38.3 million medical pavilion in Atlantic City, which will house Women and Children’s Services, dialysis, a medical education center, and wellness programs for Atlantic City residents.

Shoprite breaks ground on a $18.5 million grocery store The first grocery store in 15 years will be built in Atlantic City this year. Atlantic City Will Offer a Waterpark and Music Festival The widely-rumored $100 million indoor water park began construction last week, plotted next to the former Showboat casino. The city also unveiled a three-day country music concert this August which will be headlined by Luke Bryan and Morgan Wallen.

Celebrating Life at The Southern NJ Shore

In three short weeks, I lost five pounds without making any additional changes. I’m already sleeping better and feel all-around healthier.

Though this is just the beginning of my journey, I am enjoying my newfound sense of freedom and look forward to what’s to come. “Forever” is a big word that I don’t like to use, but for the foreseeable future, I don’t have any real desire or plans to begin drinking again. I recognize that not everyone’s experience is straightforward and sober living takes a great deal of commitment at varying degrees. This is simply my experience that I wanted to share with the world.

Bryanna Heather Storck Becomes South Jersey's First Female Eagle Scout

I

n 2019, when female youth were invited to join the Boy Scouts of America, 16-year-old Bryanna Heather Storck saw an opportunity to shatter glass ceilings and rise to the top. This past Saturday, Bryanna did just that. Now 19 years old, Storck was honored as the first female in the South Jersey region to achieve the rank of Eagle Scout.

The new program, “Scouts BSA,” encompasses all of the same time-honored traditions and skills that it has for the past 110 years while providing an equal opportunity for young female youth to rise to the challenge.

Following in her father and grandfather’s footsteps, Bryanna set her eyes on the highest possible goal then

proceeded to climb every mountain necessary to achieve it. With time being the biggest hurdle, Bryanna had to work harder than most to achieve her Eagle Scout status. Most scouts begin their journey around the age of 10 and continue through their 18th birthday on the quest for Eagle Scout status. Bryanna, who joined Scouts at 16 years old, completed the task in under 29 months.

Throughout the process, Bryanna had to meet all of the requirements set forth in the program, including

earning 13 merit badges in topics such as Citizenship in the Community, Citizenship in the Nation and Citizenship in the World; merit badges related to topics of safety, such as First Aid, Lifesaving, Emergency Preparedness and still others that allow each scout

to explore their own personal interests. As a performing arts enthusiast, Bryanna’s interest focused on art, music, and theatre.

Eagle Scouts must earn a total of 21 badges of the 135 offered through the program while working their way through the six preceding ranks from Scout to Star and Life. Scouts participants must learn and demonstrate their commitment to the Scout Oath and Law through the journey, which is the foundation of developing character and morals. Additionally, they learn outdoor skills, camping, survival skills, safety knowledge, personal fitness, fire building, cooking, and more. Ultimately, by the time a Scout achieves Eagle rank, they will have completed approximately 325 requirements, culminating in a largescale Eagle Scout Project.

Throughout her tenure, Bryanna held leadership positions such as Patrol Leader and Assistant Senior Patrol Leader. She has gone as far as to hold the title of Senior Patrol Leader, the top youth leadership position in the Troop.

While the requirements must be completed by the Scout’s 18th birthday, a Covid extension and a National BSA extension allowed Bryanna the necessary time to achieve her goal. Though Bryanna fell victim to Covid twice through the process, she did not back down or waver from her vision.

She worked relentlessly to complete her requirements, ultimately earning her the title of the first South Jersey female Eagle Scout.

Bryanna’s achievements were celebrated with an Eagle Scout Court of

Honor Ceremony at Greentree Church in Egg Harbor Township. Bryanna was recognized by her BSA Troop 452 along with U.S. Rep. Jeff Van Drew, several state senators, and Atlantic County Commissioners Frank Balles and John Risley. Her service to the community, leadership, and commitment to excellence is an inspiration to scouts of all ages, both male and female.

Bryanna is currently a sophomore at Stockton University while continuing to serve as an assistant scoutmaster, leading the young Scouts that will follow in her footsteps.

The Father of Atlantic City and The Railroad to Nowhere

T

he mid to late nineteenth century was a period of immense development for South Jersey, most notably in Atlantic City. Much of the development is thanks to a local physician, Dr. Jonathan Pitney, who had an idea to promote the island of Absegami (meaning “little water”).

Born in Mendham, New Jersey in October 1797, the doctor studied medicine at Columbia University. He practiced for two years at the Staten Island Hospital before moving one hundred miles south to Absecon, NJ in 1820. During his career as a physician, Dr. Pitney would often travel by horseback through the sand dunes of Absecon Island to visit his patients.

In doing so, he imagined Atlantic City as a premier health resort. He was convinced that the island offered the perfect climate with its restorative healing properties of sea air and saltwater. He shared his idea with General Enoch Doughty, a successful

merchant and landowner. Meeting in Doughty's store on Shore Road in Absecon, they wrote the first draft of a railroad company charter. Working with businessman Richard Summers by his side, history would rightly recognize Dr. Pitney as the visionary behind the development of the seaside retreat.

Richard Osborne, an Irish-born civil engineer, would design a grid system following the example of Philadelphia to make the streets easier to navigate. Avenues would be named after the world’s oceans, intersecting with streets named after America’s states and numbered up to twenty-seven in the latter part of the century. city were submitted to Philadelphia’s railroad investors. With the approval of The Pennsylvania Railroad (PRR) board, Dr. Pitney coined the name “Atlantic City” for his 11.92 square mile city by the sea. Many skeptics labeled this concept the "Railroad to Nowhere". Unconcerned with the public's perception, the doctor was determined to build Atlantic City into a destination location. The shorebound railways would be vital to the success of both the city and state’s future tourism industry.

In the progression of Atlantic

City’s development, Dr. Pitney became the designated postmaster and recorder of shipwrecks. He led the fight to have Atlantic County divorced from Gloucester County in 1837, then advanced to a position as Atlantic County's delegate to the State Constitutional Convention in 1844. Another of his contributions was his successful attainment of a Congressional grant in the sum of $52,436 ($1,870,000 by 2020 standards). It was his intention to have a 171 feet tall lighthouse constructed where the Atlantic Ocean met the back bays at the Absecon Inlet. His motivation came by way of a deadly storm off the Jersey coastline in April 1854.

The shipwreck of “Powhattan” was north of Absecon Island, resulting in the loss of over 300 European passengers and crew. Victims’ remains were scattered on the beaches of both Ocean and Atlantic counties. Of the more than one hundred lost that washed ashore in Atlantic City, half were buried in Smithville Methodist’s churchyard and the other half were buried in a mass grave directly across from Doctor Pitney’s House. cessible. Today, the historic Absecon Lighthouse in Atlantic City retains its position as the tallest maritime navigational structure in the state of New Jersey.

In March 1853, New Jersey granted the Camden and Atlantic Railroad Company, a subsidiary of PRR, a charter to build and operate a rail line between the Delaware River and (the renamed) Absecon Island.

The unveiling would commence on July 4, 1854, welcoming eager travelers from cities all along the eastern seaboard, including U.S. President Ulysses S. Grant in 1874.

Fifteen rail stations were constructed between Camden, Philadelphia and Atlantic City. The railroad, true to the promise made by Dr. Pitney, created a land boom. Several hotels opened within two years of the inaugural train, including the Surf House, Congress Hall, and the Mansion House. The greatest benefit of the railroad was the attainability for all Philadelphians, who would no longer have to endure a day-long ride in an open stagecoach to reach the seaside.

The final spike on the second city-toshore railroad, Philadelphia and Atlantic City, was driven in July 1877. By the time the West Jersey and Atlantic Railroad launched in the summer of 1880, the boardwalk had already been part of the landscape for ten years. 20,000 Philadelphians were traveling to Atlantic City each weekend during the high season with a year-round population of 14,000.

On June 16, 1880, with fanfare only a few in South Jersey had ever witnessed, the “Queen of Resorts” was officially opened. The first West Jersey and Atlantic Railroad (WJA) excursion carried stockholders, members of the press and VIPs including George Wood, President of the WJA. They arrived in four new passenger coaches at the intersection of the beach and Florida Avenue. Thanks to visionary Dr. Jonathan Pitney, Atlantic City was quickly becoming

America’s favorite seaside resort and playground, as well as the nation’s first vacation destination.

Tragically, just weeks later on August 11, 1880, the WJA Excursion would experience a deadly collision in Mays Landing, NJ on the return from Atlantic City. Thirty lives would be lost from Philadelphia’s Irish neighborhoods, primarily as a result of scalding injuries sustained from the locomotive’s steam engine. Dr. Pitney did not live to hear of this tragedy. However, the railroad’s overall legacy remained positive despite this.

Pitney wouldn’t live to see all that developed as a result of his ingenuity, history remembers him fondly as the “Father of Atlantic City”. The doctor was able to see his vision become a reality by bringing in the railroads that built a city. He would die in his Absecon home four months following the close of the Civil War, on August 7, 1869.

Ten Unspoken Rules of the South Jersey Shore (You Probably Already Know)

very place has their own quirks and nuances, and those are what make a spot special. We, as locals, have the responsibility to communicate these norms to visitors, to maintain peace and tradition. As every Marvel fan knows, with great power comes great responsibility. Most states see a convenience store as maybe a cigarette shop or much-needed bathroom in a desperate moment, but Jersey knows that Wawa offers so much more. Commuters stop in to pick up breakfast sandwiches, hoagies,

Dog Beach is better than any dog park.

A Senior’s Observations, Opinions and Rantings

I

s the honeymoon over? Did the New Year resolutions you made with all good intentions take hold or are they a work in progress? You are trying to be the best you can be, right? That is what most of us are striving for. A new year offers a chance for renewal. Perhaps a chance to be a better person for ourselves as well as those closest to us and a chance for a more peaceful, healthy existence especially during these challenging times. I have made resolutions in the past that are pretty ordinary; stop smoking, lose weight, deal more effectively with stress, eat better, read more, watch less TV to mention a few. I have been more successful with some than others.

I stopped smoking almost forty years ago, but my head still snaps around when the scent of a Marlboro Red wafts by. I’ve lost and gained enough weight to build another human. It gets more difficult as one gets

older. I have been months without a TV when my wife and I took off on a nearly three month camping trip and didn’t miss it at all. At this writing, we are traveling and have not watched TV for over a week. Again, not missed.

The big challenge for 2022 is peace. I, along with probably most of you, are bombarded by “peace violations” from multiple sources. I have heard “don’t let anyone steal your peace” but that is easier said than done.

With that being said, since my wife and I are retired, the workplace stress, which had been substantial for both of us is gratefully, no longer a factor. Our circle of friends and family has been whittled down so interpersonal contacts are solely at our discretion. It appeared that while I was only entering the third week of my resolutions, there was hope for me. Hope for a more peaceful 2022 with less anger and lower cortisol levels.

Alas, this was not to be. It only took a call to my cable/internet company to take me down that dark path.

I needed to transfer to service to another location. Navigating the endless prompts begins the downward slide. I finally reached an agent and explained my request which I had to clarify multiple times. Finally, after a torturous forty minutes, the agent said my request was taken care of. I asked if there was a confirmation n u m b e r/ c o d e / something to assure me everything was completed satisfactorily. I was told that was not necessary and I swear I heard a rooster crow in the background. This prompted me to ask where she was located since I was unaware of any “bring your rooster to work” day that I knew of. She told me she was “offshore”; more specifically, the Philippines. I guess they are working from home/ farm/barn.

I had my suspicions about my

request being handled correctly so I called back, again being subjected to all the prompts. My fears were confirmed when I was told that there was no record of my request being completed. I was then transferred to a second and finally a third agent who completed my request without a rooster in the background and sent a confirmation via my phone.

That’s four people to do one task.

I was then emailed a survey to rate my experience. How clueless do you have to be to not know how abysmal your service is but I could not resist the temptation and rated them as poor as I was allowed. A futile gesture at best.

The way I have to look at it is I now have forty nine weeks of 2022 left to work on my peace and that is something to crow about.

The Added Nutritional Value of Quinoa Nutrition

ne of the most popular whole grains due to its health benefits is quinoa. Whole grains include the entire grain seed without removing any of its parts. The quinoa plant is similar to beetroot and spinach. The most common versions of quinoa available in the grocery store are white, red, and black quinoa, all packed with nutrients.

Quinoa is also considered a protein and is an excellent choice for anyone following a vegan or vegetarian diet. High in fiber, quinoa can help reduce the risk of several health conditions, including constipation, high cholesterol, high blood pressure, and diverticulitis.

Quinoa is also a great food for people looking to lose some weight. It helps you stay fuller for longer periods and is high in fiber. The fuller you stay the longer you potentially reduce your overall food intake.

One cup of quinoa supplies the daily recommended intake of iron. Adequate iron intake supports healthy connective tissue and muscle metabolism. One cup of quinoa is also a great source of magnesium. Magnesium is essential if you are dealing with high blood pressure, cardiovascular disease, type 2 diabetes, and migraines.

It’s easy to incorporate quinoa into your diet. People use it instead of rice in any recipe. It’s small grains cooked to tender in as little as 5 minutes. Quinoa has a subtle nutty taste that makes it a versatile ingredient. Use it beside any hot side dish, cold salads, and burgers.

Scallops with Citrus and Quinoa Ingredients ● 3/4 cup quinoa, cooked well ● Kosher Salt ● 3 oranges ● 4 tangerines ● 1 tbsp apple cider vinegar ● 1 tsp. Coriander seeds, crushed ● 2 tbsp. Cold unsalted light butter, cut into pieces ● 1 1/4 lb sea scallops ● Freshly ground pepper ● 1 tsp. Extra virgin olive oil ● 1 tbsp. Chopped fresh parsley or chives Directions: Combine the quinoa, 2 cups water, 1/2

teaspoon salt in a saucepan and bring to a boil over high heat. Reduce the heat to low and simmer, uncovered until the water is absorbed. 12-14 minutes. Meanwhile, grate 1 teaspoon orange zest, then the juice of 3 oranges and the tangerines into a bowl.

Whisk in the vinegar, citrus juices and zest, and coriander. Return to medium heat and boil until thick, about 8 minutes. Remove from the heat and whisk in the butter, keep warm. Season the scallops on one side with salt and pepper. Heat the oil in a large cast-iron skillet over medium heat.

Add the scallops seasoned side down and sear until golden, 4 to 5 minutes. Flip and cook until golden on the other side, 2 to 3 more minutes. Fluff the quinoa with a fork and decide among plates. Top with scallops, drizzle with the citrus sauce and sprinkle with the parsley or chives.

Discovering the Weymoth Furnace

everal months ago, during the peak of fall foliage, I discovered one of the most unique hidden gems in all of South Jersey… the Weymouth Furnace.

Located off Route 322 in Hamilton Township, this 11 acre park is home to several walking paths, a picnic area, and is a starting point for canoeing, kayaking and tubing along the Great Egg Harbor River.

Once known as Weymouth Forge, the land was owned by West New Jersey Society until the year 1800, when the area was purchased by a partnership with George Ashbridge and Charles Shoemaker. In 1801, the state granted permission to dam the Great Egg Harbor River to accommodate iron works and other waterworks. One year later, iron production was well underway.

During the War of 1812, production

shifted to the supplying of weapons for the United States. This included the production of cast cannons and cannonballs.

By the 1850s, the tract of land contained a forge, furnace, sawmill and gristmill. This area also had a Methodist church, a mansion for the owners, blacksmith shop, wheelwright, and up to 20 houses for workers. The forge was in production for nearly 60 years, with the iron produced smelted

from local bog iron furnaces fueled by charcoal. Production at this facility mainly consisted of cast iron water pipes, but not limited to stoves, pipes and nails.

In the 1860s, the Weymouth Forge no longer could compete with updated coal powered forges in Pennsylvania. In 1862, the Forge was reportedly destroyed in a fire. By the later part of the decade, the land consisted of two paper mills.

The Weymouth Paper Mill came to fruition in a wooden structure, while the Atlantic Paper Mill building was made by stone. Together, the two plants produced paper made out of manila rope, rags and old bagging.

By the mid 1880s, wood pulp was primarily used to produce paper. Both mills went out of business in 1897.

By the 20th century, the land was

sold and the site was left in disarray.

The buildings that once stood on the thriving property began to collapse, and a brake in the dam caused the nearby mill pond to drain. Ultimately, the stone building became a victim for thieves and vandals. To this day, much information about this Pinelands community remains a long-lost mystery, leaving many to imagine what this area looked like more than two centuries ago.

While much of the Furnace has been erased from history, several remnants can be seen. The brick chimney and arches still stand to this day, while stone remnants from the paper mill remain fenced off. In 1966, Atlantic County acquired the land and re-opened the area as a public park. Today, the site is open to visitors as an attraction to walk, take pictures, and explore the last remains of this once versatile community.

The Great Egg Harbor River runs directly behind the furnace. It is important to note that swimming in this part of the river can be dangerous, with waters as deep as 20 feet in several locations. It is best advised to swim near lifeguards, in locations such as The Cove at Lake Lenape, which is open seasonally.

OC Commissioner Marilyn Moore, Trailblazer for Women A Look Back

istory is made; Woman is named co m m is si o n e r ” was the headline across the front page of the February 17, 1972, Ocean City Sentinel-Ledger.

The article began, “City Tax Assessor Mrs. Marilyn Moore was sworn in Wednesday as this city’s first woman Commissioner ever at ceremonies prior to the City Commission meeting.

“Mrs. Moore takes the chair vacated last month by Revenue and Finance Commission Robert E. Lewis, who was forced to step down due to a cardiac disorder.”

An editorial in the same newspaper began, “Mrs. Marilyn Moore became the newest member of the current City Commission Wednesday and the first woman every to occupy a seat in the governing body of this resort.” It ended, “Like any other first, there is a certain amount of excitement that comes with Mrs. Moore’s appointment.

All eyes will be on her in the weeks and months to come. Then after a while, though Mrs. Moore will never become ‘one of the boys,’ today’s skeptic will grudgingly admit that a women commissioner the job as well as a man, and maybe even do some things better.”

Five-Minute Donuts Make Owning an Air Fryer Sweet Let It Grow

ell, thanks to a gift from mom, I’ve finally jumped onto the air fryer band wagon.

Due to my small kitchen and large size of air fryers, we were hesitant at first.

But, wow, my family has been running this thing practically non-stop since we opened it. We have been making so many different types of potatoes, that I need to make sure I plant loads of potatoes in the garden this spring.

We have made French fries, sweet potato fries, and red bliss potatoes.

Even my 14 year-old son has gotten into the act by making his own homemade fries.

Because you can’t survive on a diet of potatoes alone, we’ve branched out and made chicken fingers, wings, and drumsticks as well. From there, I tried roasted balsamic Brussels sprouts that did not disappoint. But hey, sometimes you need to satisfy your sweet tooth. When I heard you could have “healthy” donuts in five

minutes, I had to try.

Making donuts in the air fryer is so easy that no one can believe how good they taste. Simply open a can of refrigerated biscuits, listening for that gratifying “pop”.

Preheat your air fryer to 400° while you poke a hole through the middle of the biscuit with your thumb. Use your hands to form a donut shape, and make the hole large since the biscuits will expand while cooking. According to my air fryer instructions, non-stick sprays like Pam can damage the non-stick surface of your fryer pan. So I purchased the recommended spray coconut oil (found in the same aisle at the grocery store), and it works like a charm. Spray one side of your future donuts and cook them for 2 ½ minutes in the air fryer. Flip biscuits, give them another quick spray, and cook for an additional 2 ½ minutes. That’s it! Now for the fun part—toppings.

My youngest (who has grown so tall, I can no longer call him my

little guy) loves glazed donuts with sprinkles. So mom is here to please.

Mix powdered sugar with the tiniest bit of milk until you have a thick but spreadable consistency. Frost the donuts, then add sprinkles before the icing dries. Of course, you can skip the sprinkles (or “jimmies” if you insist on calling them that), and opt for a classic glazed donut. Personally, I love cinnamon sugar donuts. If you’re going to break resolutions, don’t hold back. Brush melted butter on both

sides of your donut then dip it into a bowl of cinnamon sugar. For best results, eat all this deliciousness while the donuts are still warm.

Fair warning: buy extra cans of biscuits when you go to the store. Once your family, friends, and neighbors hear about these, you’re going to need to make more. But they are so fast and easy to make, not to mention a little healthier than fried donuts, you won’t mind at all.

Lessons Learned from my Bout with Covid Jeff's Journal

A

s I sit here writing, it’s from a hospital bed that has been my home since New Years Eve. As I write this, I’ve been here for 12 days. Needless to say, I’ve been sick with Covid-19 and it has been a battle to breathe. I wanted to take my column to share with you so many of the thoughts that go through the mind of someone confined for this length of time and someone with so many questions and at times deep concerns.

My wife and I (along with a couple of other family members) contracted Covid-19 over Christmas. Like so many others, we don’t know how.

My wife Sharon and I were hit the hardest with high fevers, chills and eventually breathing issues deep in our lungs. After checking our oxygen levels incessantly (and I highly recommend everyone getting an oxygen sensor that you put on you finger. I consider it a literal life-saver), we determined she had to go to the hospital. I followed her a few hours later. Fortunately, for her, the diagnosis was not as severe as me. She was able to recover and as of writing this, we are so grateful that she is home, on low oxygen and doing great.

For me, there was more. I had to be moved to another unit with more

concentrated, heavy dozes of oxygen.

The good news for me is that after 12 days, each day gets better and prayerfully, I will be out of here in a few days.

So, that is the backstory. If you’ve had Covid to this extent or any other illness hit you hard, you know your mind goes in a hundred directions. All of the questions and all of the what-ifs come flooding through. If you follow my column, you know I’m a fan of sharing lessons learned.

I’ve learned and am learning so much that I wanted to share it with you my readers. Let me say from the start that I and my family are people of deep faith. So, our faith plays a huge role in this whole story.

If you are not a person of faith, I’m not here to judge in anyway or diminish your perspective. I only know what I know.

What I (and we as a family have learned and continue to learn) Nothing is as sobering as realizing much of what you are experiencing is out of your control. It can be overwhelming.

Once you grasp that concept, nothing is as sobering and reassuring as knowing you must put your life in someone else’s hands. In our case, we prayed for a doctor who would know what to do, when to do it and how to treat us. We found that

doctor here at AtlantiCare. He has been with Sharon and me from the moment we arrived at the hospital, tracked and lead our prog, dress, and has been nothing short of amazing.

From the very start, our faith led us to put our complete trust in Him, to reach out unashamedly for pr,ayer, and lean heavily on family and friends to be there. The response has been nothing short of amazing. I can confidently say that literally thousands of people were praying around the world for our family. We have felt the prayers in unimaginable ways.

Our family at home during this time (especially our girls) have rallied in ways we can’t explain. We have six at home from 23 on down and each has done a remarkable job of stepping up to keep things going. Their maturity, sure, length, and commit-

ment can’t be measured.

From family and friends sending meals, to phone calls and texts, this experience has been one we will never forget.

I know this has been a very different column, but I wanted to share it with you because like other columns I write, the material comes from my heart, what I’m thinking and where I am at a particular time.

My take-away. Don’t take anything for granted in life, not a single breath. Each one is a precious gift from God. And when you get a chance to pay it forward, do it! You never know the impact you can have on others. I know once I am out of here, one of my missions is to do just that. Until next time, Go out and make a difference!

ACUA’s Annual Food Drive Nets More Than 29,000 Pounds of Food

esidents donate generously during difficult times Atlantic County Utilities Authority’s annual Food Drive brought in more than 29,348 pounds of food for the Community FoodBank of New Jersey’s Southern Branch in Egg Harbor Township.

Residents in Atlantic County put out bags of canned, nonperishable items with their recycling during the annual two-week drive in December for collection by ACUA’s recycling crews.

2021 marked the 31st year for the ACUA’s Food Drive, which provides residents with an easy and convenient way to help the needy while helping the environment. All canned goods collected through the Holiday Food Drive are distributed through the Community FoodBank and its many partner agencies located throughout Atlantic, Cape May and Cumberland counties.

“The generosity of Atlantic County residents who donated the

much-needed food during this year’s Food Drive is so greatly appreciated,” said ACUA President Rick Dovey. “Atlantic County remains one of the most food insecure counties in our state, with many of our neighbors navigating through very challenging times. The success of our December Food Drive speaks to the generosity and caring of Atlantic County residents,” Dovey added.The 29,348 pounds of food collected during 2021 ACUA food

drive brings the total amount of food collected over the past 31 years to more than 993,240 pounds.

“ACUA’s annual Food Drive is one of our most important community programs and we are truly grateful for everyone’s participation.”

Four Low Carb, Low Sugar Recipes to Reset Your Wellness

ow is the time of year that we all pause and regret eating all those Christmas cookies. December means lots of cocktail parties, gifted chocolate boxes, cookie dough, and candy canes to dip in hot chocolate.

Look down. Do you have an eggnog belly? Well, like millions of Americans, let’s intentionally try to eat healthier and start 2022 on a positive, clean note. When I want to feel better, I try to reduce my overall caloric intake by limiting simple sugars in my diet. Basically that means I eat more veggies and protein than processed carbs and sweets. This does not mean I eat salads for every meal. Healthy meals can be filling and delicious. Here are four recipes to fast-track your health journey and make you feel satisfied:

Barbeque Chicken Bowls

Ingredients: ● 4 chicken thighs, boneless and skinless ● 2 cups of frozen corn ● 2 cups of brown rice, cooked

1 yellow onion, diced 1 large bunch of kale, chopped and stem removed 4 sweet potatoes, peeled and cubed 3 tbsp of cumin 3 tbsp of chili powder 2 tbsp of garlic powder Salt Pepper Olive oil 1 tbsp of red pepper flakes Sugar-free barbeque sauce Tortilla chips as a garnish Curly parsley as a garnish

Heat a large saute pan over medium heat, with a drop of olive oil to lubricate the pan. Place thighs in the pan and let brown on one side for 8 minutes. Turn over chicken and let cook for 10 minutes. Add salt and pepper, and remove from heat and place to the side.

Preheat the oven to 400 degrees Fahrenheit. Place diced sweet potatoes on a sheet pan and lightly pour olive oil and sprinkle salt and pepper.

Roast in the oven for 40 minutes, then place to the side.

In the pan (with the chicken fat), saute onion and corn. Cook for 10 minutes.

Using two forks, shred chicken and add to the sauted mixture. Add cumin, garlic powder, chili powder, red pepper flakes, salt and pepper.

Stir and turn off heat.

In four portion-sized bowls, add chopped kale at the bottom, ½ cup of cooked brown rice in each bowl, then ¼ cup of sweet potatoes. Scoop one cup of corn, onion and chicken.

Top bowls with crushed tortilla chips, a handful of parsley, and drizzle with barbeque sauce. Enjoy!

Shrimp Stir-Fry

Ingredients: 1 pound of frozen shrimp, deveined ● 1 cup of edamame ● 1 cup of frozen broccoli ● 1 cup of button mushrooms ● 5 large carrots, peeled and julienned ● 1 yellow onion, diced ● 3 cloves of garlic, crushed ● 2 tbsp of ginger paste ● ¼ cup of soy sauce, low sodium ● ¼ cup of fish sauce, low sodium ● 1 spoonful of miso ● Coconut oil ● Salt ● Pepper Heat one spoonful of coconut oil in a large saute pan over medium heat.

Add frozen shrimp and cook for five minutes until the shrimp are pink and firm. Scoop shrimp into a bowl and place to the side.

Add diced onion and let brown for 10 minutes. Add broccoli, mushrooms, edamame, and carrots. Stir every few minutes and let saute for 20 minutes, until vegetables are soft.

Flavor vegetables with miso, ginger paste, soy sauce, fish sauce, salt and pepper. Add shrimp and stir mixture thoroughly. Turn off heat and serve warm. Delicious! ●

Peanut Butter Balls

Ingredients: 4 ounces of cream cheese, softened ● ½ cup of peanut butter, unsweetened ● 2 bananas, mashed ● 2 tbsp of all-natural honey ● 1 package of cacao chips ● 2 tsp of coconut oil Using a stand mixer, combine cream cheese, bananas, honey and peanut butter. Mix until evenly distributed. ●

Cover bowl and place in the refrigerator for one hour.

Pour cacao chips into a microwaveable bowl with coconut oil. Microwave for two minutes. Take out of the microwave and stir until chocolate is creamy and smooth. Let sit at room temperature for ten minutes to cool down. Use a cookie scooper to scoop peanut butter mixture onto a sheet tray, covered with parchment paper. Dip each ball into the chocolate and place on the sheet tray. Place the tray in the fridge for two hours (or more). Enjoy as a snack or dessert!

Western Omelets

Ingredients: ● 5 large eggs ● 4 ounces of breakfast sausage, browned

1 green bell pepper, diced 1 beefsteak tomato, diced ● ½ cup of milk of choice (preferably 1% milk) ● ½ cup of cheddar cheese ● Salsa or sliced avocado (optional) Whisk together eggs and milk.

Pour half of the mixture into a nonstick pan over medium heat.

Add bell pepper, tomato, and sausage (half of each, makes two omelets).

Once the egg has firmed, use a spatula to flip half of the omelet onto itself, creating a half circle with veggies and meat in the middle.

Sprinkle cheese on the top of the omelet. Once it has fully melted, place the omelet on a plate and repeat the process with a second omelet. This makes for a healthy breakfast! ● ●

Fashion Week Returns to Atlantic City

F

ashion week is a term synonymous with cities such as New York, Milan, London, and Paris. The world’s most successful designers showcase their latest designs for the upcoming season on some of the world’s most famous runway models. In 2011, L a mont and Jeana Bowling ambitiously set up a fashion week to rival those, and it has been going from strength to strength since its commencement. The weeklong event sees thousands of people de-

scend on Atlantic City to witness or participate in high-fashion runway shows, seminars, celebrity appearances, retail events and industry parties. The biannual event is presented in part by fashion STYLE Magazine and KingBeeMedia and will return this February 7th-12th, with the main events taking place at the Showboat Hotel (801 Boardwalk, Atlantic City).

In previous years, the event has drawn designers from all over the world, including England, Hungary, Russia, Australia, Haiti, Trinidad, the Dominican Republic, and of course, the United States. There have also been some notable retailers who made appearances such as Michael Kors, OshKosh B’Gosh, Abercrombie and Fitch, Tiffany’s, and Invicta. It has even seen lines from designers from the popular television show “Project Runway”, including Helen Castillo, Lantie Foster, and Dom Streater. It is safe to say, this is fashion week which is truly on the global stage.

This year marks the 10th anniversary and season 20 of the AC Fashion Week. The week starts at 7 pm on

the 7th with a seminar regarding the Business of Fashion featuring Couture Designer, Sofia Davis. On February 8th, Rowan College at Burlington County will showcase their Black History Month Fashion Show at the RCBC Student Success Center (1500 College Circle, Mount Laurel, NJ). The event is free and all are welcome.

On February 9th, “Modeling 101” will take place offering a free virtual workshop on the business of modeling, which is highly recommended for current and aspiring models.

There will be a model Q & A featuring American fashion model Ronald Epps whose campaigns include Balmain, Ralph Lauren, River Island, and Old Navy. The annual Student Fashion Show and Competition will take place on February 10th this year at the Showboat Hotel at 7 pm.

The coveted competition boasts designs from some of the best up and coming fashion designers in the country, with prizes of $1000 cash, the Atlantic City Fashion Week Lead Crystal Award, a Brother sewing machine, and the chance for a designer’s collection to be shown either on the Ready-to-Wear or Couture night during ACFW S20.

On February 11th, the Ready to Wear Fashion Showcase will take place at both 3 and 7 pm, and the final main event on February 12th will take place at both 3 and 7 pm to showcase Couture and Avant Garde pieces. Ready-to-wear is the term

for ready made garments which come in standard sizing opposed to being custom-made and is what most of us will be accustomed to.

Avant Garde fashion, however, is defined as, “a forward-looking movement animated by innovative designers and artists who dare to go against the mainstream and propose ideas that stand out from the conventional.” You’ve see it in those wacky pictures from New York Fashion week with outfits that you could not dream of wearing in public. This line of fashion is more about making a statement rather than producing something for the average person to wear, and it is most certainly a spectacle to witness.

’m sitting down to write this just ONE day after my birthday, and realizing once again, how tough it is to be a fan of Philly sports. The Eagles season is over. The Flyers are awful. The Phillies players are locked out and the Sixers are still dealing with a star player’s absence. I’d be remiss if I didn’t thank my friends and family though for all the birthday wishes. You are ALL truly appreciated!

Since I last wrote, the Eagles won two of their last three games to get into the playoffs, but once they were there, it was “one and done”. Now the questions begin about their talent level and who they might pick in

the NFL draft in April. The Flyers came back from the holiday break with an impressive win in Seattle, but have lost eight straight since then. A common line I’ve heard since the Eagles lost is “when do pitchers & catchers report?”, but Major League Baseball still has the players LOCKED out, but at least the two sides are talking. Finally, the Sixers ripped off a seven-game win streak not long after my last column, but they are still dealing with the distraction of no Ben Simmons and what might happen there. Locally, an area high school basketball tournament soldiered on, despite Covid-19 concerns.

And, congrats to a local female wrestler for her holiday tournament win.

From entertainment, one of my favorite reality shows is back on TV. Plus, what a finale for what many folks are calling the BEST drama on television right now. Finally, we lost some very famous faces over the holidays. As always though, we begin with sports, and my thoughts: ● I’ll start with the Eagles as they won big at home against the Giants and then rallied to beat Washington to qualify for the playoffs. A meaningless loss in their regular season finale didn’t change anything as they got the new #7 seed for the playoffs and went to Tampa to face the Bucs.

The problem is, those are still the defending Super Bowl Champion Bucs, and even though they were missing a few key players on offense, it was the Tampa defense that really shut down the Birds. The Eagles trailed 31-0 going into the 4th quarter and looked whipped on all sides of the ball. The fact that they managed 15 points in the final quarter to lose 31-15 doesn’t hide the flaws that Tampa Bay exposed in the playoff win.

Let’s start with the offense, who once again got off to a slow start and couldn’t manage a point until the final quarter.

QB Jalen Hurts came up short in his biggest start so far, and his two interceptions certainly didn’t help. Now the questions will begin again if he should be the starting QB moving forward. More on that later.

The Birds were also held to just 95 yards rushing as a team. Remember, they were leading the NFL at just over 157 yards per game going into the playoffs, so the Bucs answered the call on that front for sure.

On defense, the Eagles couldn’t find an answer on how to slow down Tom Brady and the Bucs attack. Mike Evans had 9 catches for 117 yards and one TD. Rob Gronkowski caught the other Tampa TD, and generally speaking, Tom Brady owned the Eagles once again. The Eagles did manage 4 sacks against TB #12, but at the end of the day, that wasn’t enough.

Finally, on special teams, that may be the worst area of all. Punt returner Jalen Reagor lost a key fumble early in the 3rd quarter that led directly to the Gronkowski touchdown for Tampa.

Arryn Siposs had one punt for 27 yards early. That’s not gonna get it done!

So, here’s where the Eagles stand. One & Done. Room to Grow. The Birds will have three first-round picks in April’s NFL draft as they pick #15, #16 and #19.

Even though he looked terrible in the playoff game, put me in the category of someone who wants to give Jalen Hurts another chance with better talent. Use

all three of those picks to bring in more TALENT. Lack of talent is extremely evident in the problems with the Flyers these days. As a lifelong Flyers fan, this is killing me to watch my team lose night in and night out. Worst of all, they just do not seem to be able to compete for a full 60 minutes each night.

As I write this, they are on an eight-game losing streak. Remember, earlier in the season, they had a ten-game losing streak, as they appear to be going nowhere fast. If they lose the back end of the home-and-home to the Islanders, they could end up in the Metropolitan Conference basement.

Again, as I write this, the Flyers are 2-162 when giving up the first goal of the game, and 1-16-3 when trailing after two periods. In 2006-07, the Flyers went 2248-12, the worst record in all of hockey.

I hate to write this, but it’s possible they could reach that low again.

After the Eagles loss, I wanted to make the joke about “pitchers & catchers report soon”, but I can’t because the owners & players of Major League Baseball are still on a lockout. The span between any core-economic conversations between the sides reached the 43-day mark before a meeting was finally held. That is nearly a month and a half during which the sides could have been talking. To put it another way: The gap between the Dec. 2 lockout and today is greater than that between today and the mid-February dates pitchers and catchers are expected to report to spring training. This does not make me optimistic.

So, you’d think the Sixers winning seven games in a row after my last column would make me happy, right? Would give me something to be positive about?

Well, as nice as that was, I’m writing this column after a 117-98 loss to the Wizards in Washington. The Wizards finish the game with seven players in double figures, which proves the adage that DEFENSE wins championships in the NBA.

I do have to acknowledge the outstanding play of Joel Embiid though.

He’s averaging more than 27 points per game and just over ten rebounds, so he contributes a double-double just about every night. But he’s only one guy, and if the rest of the team doesn’t contribute defensively, I just don’t see the Sixers going far in the playoffs.

Plus, there’s still the Ben Simmons situation to deal with. The latest report from ESPN’s Ramona Shelburne is that Simmons is “open” to sitting out the entirety of the season, despite the fines, if the Sixers don’t trade him by the February 10th deadline.

The standoff between the Sixers and Simmons stretching into the summer is a real possibility it seems, due to Philadelphia’s high asking price, and the fact

that the team isn’t interested in a deal that compromises their longterm prospects just to “move on”.

Plus, Sixers president of basketball operations Daryl Morey might want to hold onto Simmons until the offseason in order to set up a potential sign-and-trade with the Brooklyn Nets to get James Harden. That’s been reported as well. As always, stay tuned!

Mini Golf and Bike Rentals Coming to North Beach, Atlantic City

ilings are in the ground and construction has begun on Atlantic City’s newest family-friendly activity. North Beach Mini Golf, located in the Atlantic City inlet at 120 Euclid Avenue, was the vision of local entrepreneur and investor, Mike Intrieri.

Originally conceptualized several years ago, Intrieri set his sights on the North Beach location with intentions to bring more family-based activities to the city. The 18-hole course, being built by Florida-based company, Miniature Golf Solutions, is host to beautiful views of the Absecon Lighthouse overlooking the water and the newly built inlet boardwalk.

“We love the momentum and the energy that’s happening here,” ex-

North Beach Mini Golf will offer bike rentals as well as light refreshments. The open-air concept will pay homage to Atlantic City’s pastime with Photos by Marc Berman various props and holes centered around the city’s history. free golf,

Construction is currently ahead of schedule with grand opening plans set for late April - early May 2022. The grand opening event is set to feature giveaways, refreshments,

Locals and visitors alike have long requested non-gambling activities in Atlantic City. The mini-golf course will serve as a welcome addition to the growing family dynamic that has been unfolding in recent years. Down the street, Island Waterpark broke ground this month with plans to bring a family, indoor waterpark to the Showboat property in 2023. Showboat is already home to a variety of family activities including the Lucky Snake Arcade and a variety of pop-up shows. The North Beach section of the city aims to offer food and fun to guests of all ages including the Steel Pier, Top Golf, and The Absecon Lighthouse and events.

Showboat Breaks Ground on Largest Indoor Beachfront Waterpark in the World Developer Bart Blatstein plans to transform property into a family-friendly mecca

howboat embarked on its latest and most anticipated family entertainment venue today, breaking ground on ISLAND Waterpark.

Philadelphia developer Bart Blatstein is doubling down on non-casino attractions by adding this entirely new concept of family-friendly entertainment to complement the Showboat’s massive 100,000 square foot “Lucky Snake” arcade and sports bar.

Starting the New Year with Three Simple Financial Resolutions

What's New with Redonkulous Entertainment

ocal entertainment group, Redonkulous Entertainment premiered their first film documentary last month with a showing at Tilton Theatre in Northfield. The well-attended premiere was viewed by Atlantic City Mayor Marty Small Sr. as well as nearly 100 other attendees. The entertainment group, comprised of eight

childhood friends, aims to provide unforgettable entertainment at a local and global level.

Their movie premiere, The Road To Reminiscence, highlighted the tumultuous journey of bringing a meaningful event to life when in-person events seemed impossible.

The 2020 Redonkulous Reminiscence event, which took place in September 2020, paid tribute to lost loved ones and lives cut too short. Movie attendees left in tears, inspired by the production and compelled to call their loved ones.

The Redonkulous team is preparing this month to kick off a year full of events, comic book releases, and international travel. The Redonkulous Year of 2021: The Musical Remix, 80’s Style is set to premier virtually at the end of this month. RE’s first musical performance will feature 80’s style performances with their redonkulous stories and

experiences from boat parties and book signings to travels and radio appearances.

In April, the group will be traveling to Cairo, Egypt to participate in the Bolera Film Festival. Additionally, they will be hosting their annual boat party out of Gardner’s Basin, wrestling themed events, a 5-city tour, a virtual interview series with local entrepreneurs, and so much more.

Growing up with a shared love of comic books, the members of Redonkulous each bring their unique gifts to the table. The team of eight includes writers, editors, concept

artists, and a product marketing team. They are affectionately known by their nicknames, each speaking to their roles within the company. Together, they’ve created a comic universe of their own known as M.A.V.E.N. with titles such as Arrowshot, Bloodmoon, and The Knight-Owl. This year, RE fans can look forward to two new comic book releases from MAVEN (Military Advanced Vigilant Elite Network) including the next release of The Knight-Owl and The Mysterious Black Ninja.

Growing up, Valerie attended countless art classes, eventually earning a Bachelor of Fine Arts degree from Stockton University. As post-college life took over, Valerie found herself working in nightlife, ultimately putting her passion on the back burner. That is until a global pandemic left her alone with nothing but her paint and her thoughts.

“2020 changed everything for me,” explains Feo who painted day and night during the world-wide quarantine. “Having this time to really find myself has given me the highest sense of awareness and gratitude.”

As an expressive figurative artist, Valerie paints with flow rather than

intention. Each piece begins with a spark of inspiration either from a color or a line then follows a journey of feeling, as inspiration continues to flow from Valerie’s paintbrush.

Her breakout piece, High Standards, was featured at the Palazzo Ducale Museum of Art in Genoa, Italy as well as the International Contemporary Fair in Paris.

“I knew it was a turning point.

It was a feeling of dejavu,” explains Feo about High Standards.”When you have dejavu, they say you’re right

where you’re supposed to be. I have felt no greater sense of satisfaction than when I was creating that piece.”

Her art career has continued to blossom and evolve alongside her own self-discovery since then, catching the eye of global art publications like International Contemporary Art Curator Magazine who awarded Valerie with a Collector’s Vision Award.

Inspired by obscure beauty involving long necks, abstract noses, and a variety of colors, Valerie continues to paint each day with no plans or expectations of the outcome. Valerie’s works, such as Bright Side of the Moon and the subsequent, Dark Side of the Moon, have been featured in publications and shows from Italy to Paris.

“Honestly, I’ve learned a lot about my art through how curators and collectors have described my work,” explains Feo. “I feel like my art journey has just begun. I’m still figuring myself out and, in turn, my art.”

Currently, Valerie is working with Kensington Furniture to create signature pieces to compliment custom

furniture. She is continuing to push the boundaries of her canvas, in a constant state of creativity and self discovery.

Valerie’s artistic style is uniquely her own or as she refers to it, “so Val.” “When you see my art, I hope you know that that’s So Val,” shares Feo in reference to her collections. “I hope it inspires you to be SO you. I hope we get to the point in our journeys where we are so intune with ourselves and feel invited to be our truest selves.”

Valerie Feo looks forward to creating for years to come. While she is continuing to explore on canvas, she looks forward to eventually moving towards fashion and merchandising.

Tips to Lower Your Home’s Heating Bills This Winter

A

frosty winter wonderland is fun to experience -- outside.

Inside is another story. By keeping your home heating system running at peak performance, you'll lower your winter utility bills and experience increased comfort.

According to North American Technician Excellence (NATE), here’s how to stay toasty this winter without breaking the bank.

Get the Right Equipment It all starts with the right heating equipment. Choosing a furnace with an ENERGY STAR logo is important, however, it’s also a good idea to understand standard efficiency ratings so you can easily compare the performance of different systems.

When you need to measure the thermal efficiency of your furnace or water heater, Annual Fuel Utilization Efficiency (AFUE) helps determine the actual, annual, average efficiency of that piece of equipment. It measures the amount of heat delivered to your house compared to the amount of fuel that you must supply to the furnace. The U.S. Department of Energy determined that all furnaces sold in the U.S. must have a minimum AFUE of 78%.

The Heating Seasonal Performance Factor (HSPF) is the most commonly used measure of the heating efficiency of heat pumps. Typically, a high-efficiency heat pump pays for itself in savings in a few years.

Take These Steps A little DIY can work wonders. Follow this checklist for improved efficiency of heating equipment: ● Check heating filters every couple weeks and change them at least twice in the season, or as directed by the manufacturer.

Check and maintain insulation.

Improperly insulated walls, floors, attics, basements and crawlspaces drain away heat and can also lead to moisture imbalance. ● Check ductwork for insulation and leaks. No matter how “state of the art” your heating system is, if your ductwork is bad, it will diminish efficiency. ● Turn down the thermostat by a few degrees and dress more warmly. ● Clean the furnace area. Don’t keep chemicals or cleaning products near your heater, and don’t store anything next to it that could impede ventilation. ● Keep vents and returns free of obstructions. ● Install a humidifier to make indoor air feel warmer.

Work With Experts Be sure all work performed on your heating equipment is carried out by a trustworthy, NATE-certified technician.

Even the most efficient system can suffer if it’s not properly maintained. NATE-certified technicians have demonstrated knowledge of today’s heating and cooling systems. Better installation and service means your equipment will run at peak efficiency.

If you do call in a technician, prep for their arrival. You can help your technician diagnose a potential problem with your heating equipment by being prepared to share important information, such as the age, brand and model of your furnace and whether it’s been leaking, making unusual noises or emitting odors.

With a combination high-efficiency equipment, a little DIY and the help of professional expertise, you can stay warm and cozy on-budget, all season long. ●
