Community Mourns The Loss of Young Lifeguard

Fatally injured on duty

he City of Cape May recently announced the passing of Lifeguard Norman V. Inferrera III on August 21st.

Inferrera was involved in an incident which occurred off the Reading Avenue Beach on August 19, 2021. Based on current information, while rowing a lifeguard boat in the ocean, the boat was broadsided by a wave and flipped over. Inferrera was knocked unconscious. Fellow lifeguards responded immediately to his aid.

“My heart, prayers, and condolences go out to the Inferrera family;" said Mayor Zachary Mullock.

“Even at such a young age, Norman was loved by his fellow Lifeguards. No words can express the sadness suffered by all of our Beach Patrol family.

Norman chose to protect others. He

did so professionally and worked hard at it. That is an extraordinary attribute for anyone, especially at 16 years old. The Cape May community cares so deeply for those who protect us.

I know this entire community is going to do anything it can for Norman’s family and friends.”

Cape May Beach Patrol Chief Harry Back expressed his condolences. “My thoughts and prayers are with the Inferrera family. He was a beloved member of our Beach Patrol family. Norman had a permanent smile on his face and was living out his dream to be a lifeguard.”

A tale of two storms and a case of hurricane déjà vu Weather

S

o most of South Jersey escaped unscathed from Hurricane turned Tropical Storm Henri last weekend, minus a little tidal flooding and rain. Parts of North and Central Jersey weren't so lucky, with flash flooding and up to almost 10 inches from a tropical deluge. The same rung true in eastern Pennsylvania, with flooding and a half of foot of rain in spots. Meanwhile, the Rhode Island coast bore the brunt of what wind and waves, as well as the highest concentration of power outages from a storm that many were expecting to be worse than it was. It's sort of a case of meteorological déjà vu for us, ironically almost 10 years to the week.

It was the last week of August in 2011 when Hurricane Irene shot up the East Coast, it too was weakening into a tropical storm before its landfall in South Jersey. It also had more dire expectations than what was realized, or if you prefer the classic idiom, the bark of Irene was much worse than her bite, at least in South Jersey. And meteorologists and emergency managers would have to live with those consequences, which in turn impacted the messaging in advance of Hurricane Sandy one year later.

For the folks in New England, who haven't seen a landfalling hurricane in 30 years (since Bob in 1991), Henri was thought to be the storm that could end that unusually long streak and bring widespread damage to a large area. When the storm weakened faster than expected, Henri lost a lot of its punch. Sure, there were 70mph wind gusts in spots, some trees and branches fell, and there were power outages too. But the

worst of the storm was the flash flooding and 6-10 inches of rain that fell hundreds of miles from landfall, from New York through the Poconos to much of North and Central Jersey.

Sound familiar? It should.

When Irene made her landfall near Brigantine early Saturday morning on August 28, 2011, there were 70mph winds, some trees and wires down, and some lost power from the storm. But South Jersey was relatively unscathed compared to some destructive flooding that occurred to our north over North Jersey and up north in very hard-hit Vermont, to our south over North Carolina, and to our west and farther inland over Pennsylvania.

Yes, being near the "eye of the storm" doesn't always equate to seeing the worst weather, especially with some tropical systems here in the Mid-Atlantic and Northeast. But most of us fall victim to the "IMBY" or "in my back yard" syndrome when it comes to storms, where if it doesn't happen in one's backyard, then the storm was a bust and meteorologists were wrong.

That's not to say meteorologists weren't wrong with Henri in New England. Or with Irene here in South Jersey. They were. I was with Irene.

What made things worse was that while areas in Atlantic County east of Route 9 and all of Cape May County were under mandatory evacuations in advance of Irene, the weather regrettably ended up being much worse points north and west, where many that left had evacuated to.

Trust is something that can take meteorologists years to earn with their viewers. And only one incorrect forecast to lose. So we were blessed that Irene spared South Jersey, and many were grateful. But many were also less inclined to put their trust in meteorologists one year, or specifically 14 months late when Hurricane

Sandy approached the coast in late October of 2012.

Every hurricane is different, and just because one spared us doesn't mean the next one will. That's a message the meteorological and emergency management community repeatedly stressed leading up to Sandy, but one that fell on more deaf ears than was pre-

ferred. The reason many gave: Irene wasn't that bad here and I would have been better off staying than evacuating. It's a valid reason, and hindsight is indeed 20/20. But Sandy was not Irene. And for New England's sake, their next storm will not be Henri.

It certainly has been an active start to hurricane season. So far, we've had to directly or indirectly deal with Elsa, Fred, and Henri here in the Northeast.

And the peak of the season is still a few weeks away, with September the prime time for the highest number of storms, not to mention the strongest ones as well.

The story of Henri in New England provides a nice opportunity to look back at the similarities to Irene here in South Jersey, just in time for the 10th anniversary of what was our first legitimate hurricane threat in a few decades. Here's hoping it is decades before our next. But this time of year, it could also only be a matter of days.

But whenever it is, remember that the next storm won't be an Irene. Or a Sandy. Or a Gloria. Every storm is different. And our actions and preparations for any storm should reflect that.

Priceless Advice: “Old Coots” Offer Wisdom at the Ventnor Farmer’s Market

f you stop by the Ventor Farmer’s Market, you may be able to get more than just fresh produce there. The “Old Coots and Company Giving Advice” team has been setting up shop there to offer free advice to anyone who stops by.

Every Friday at the Ventnor Farmer’s Market, you’ll find a couple of senior men and women lounging under a tent. Above them is a sign that reads “It may not be the best advice...but it's free.”

It all began with a Washington Post article. Andrew “Andy” Starer, Ventnor Farmer’s Market Manager, read about a group of older men who hung around a coffee shop every Saturday morning. “They solved all the world’s problems in their heads,”

Starer said. “Then, one day, they noticed the farm market across the street and decided to head over there and try to solve their problems.” Starer wanted to offer the same kind of listening ear to his own community. What began in 2019 as a dream became a reality, and the Ventnor Old Coots came into existence.

Market visitors ask the Coots all kinds of questions. They give advice on where the best pizza is found, how to apply for a mortgage, and where the nearest gas station is located. Unexpectedly, however, the Coots also answer deeper questions such as how to live as a widow, whether to move away from their hometown, and how to tell someone you love them.

One of the most heartwarming moments for the Coots was when a young woman sat down and asked whether she and her husband should try to have a third child. The Coots

agreed that there is no harm in trying to grow your family. So the woman went home. One year later, the woman came back with a baby in her arms.

“They were in tears,” recalled Starer.

The Coots follow their “Coots Code,” which provides guidelines for relating to people and giving advice.

The volunteers are asked to give a warm welcome to visitors and make sure they feel comfortable. The code stresses staying focused on each

question and imparting advice based on your own experiences. Stay away from controversial topics like religion and politics, and most importantly, listen well. You don’t need to have any special expertise. Kindness, honesty, and compassion are enough.

“We have had people from all over the world call us and ask about our program, hoping to recreate Old Coots in their community,” said Starer.

“Now we have Old Coots in Pennsylvania, and in Birmingham, England!”

As the Coots grow, they are looking to set up their booth at different festivals and block parties around Atlantic County. They also are always looking for volunteers. his past week has been undeniably damp. In a shore town, the change in mood and pace when the weather is wet is hard to miss. Flip flops get swapped for something non-slip, sunglasses are rendered unneces-

sary, and the beaches lay bare. As someone serving drinks to the public all day, I also see a great shift in beverage choice. What suits a sunny day on the beach feels bittersweet when sipped from the couch, but it doesn't have to! Here are my favorite rainy day wines, to suit the weather and perhaps help you embrace a calm day inside watching the rain fall.

L'Umami Pinot Noir: As the obvious choice, I feel obligated to get Pinot Noir out of the way first. With flavors of baking spice amid cherry and cranberry, it's a no-brainer for

ave you ever felt that overwhelming feeling that you had something of value to share with someone else?

It may have been in your personal life or in the business world. Maybe something comes to mind right now as you’re reading this column. It’s a burning desire to share an idea, a feeling, something to impact a relationship, contribute to your workplace.

You get the idea.

But maybe, the reality is you’re someone who lives your life in the shadow of someone else or in the background. It could be you’re shy, maybe haven’t been recognized by others, overlooked when your boss is looking for an opinion or a direction to head.

Recently, I had the opportunity to share with some area business leaders about the concept of becoming a person of influence in their role as leaders. I enjoyed sharing

Now you may not espouse to a role of influence or leadership. If that’s the case, you can feel free to stop reading right now. But I’d bet we all at one time or another want to know that we can make a difference and influence a person or situation.

So how do you become a person of influence? A lot of people mistake the person with the corner office or the title of leader as the most influential person in a given situation. But that is not the case. The truth is whether you are the CEO or the Front Desk person on the job, many of us lead in some way. The real definition of leadership is influence, nothing more nothing less.

Making an impact around you takes time, building relationships and communicating empathy and care for those around us. If you take the leap, the rewards can be great.

Stockton’s Murphy Writing Institute Brings Power and Prose to Local Community

P

eter Murphy wasn’t satisfied as an award-winning writer.

Writing can be an isolating process, he thought, and sought to invite more voices into the writing process. Creativity can only go so far, and the world has many diverse voices waiting to be heard.

Fast forward to 2021, 24 years after Murphy had the vision, the Murphy Writing Institute was born. Now affiliated with Stockton University, it has a broader reach and connection with faculty and students. The Institute has become a community booster and powerhouse of the arts.

Emari DiGiogio, the faculty director of the programs, is a writer herself. She published two poetry books,

“Girl Torpedo” and “The Things the Body Might Become.” She teaches first-year writing and poetry classes at Stockton but could be found under the Absecon Lighthouse during the 48 Blocks Festival last Sunday, handing out writing prompts to the crowd.

“I am excited to announce that in-person workshops are coming back this September,” she said. “And we also plan to follow CDC guidelines, of course.”

On September 18th, the Murphy Writing Institute will host a mini writing workshop for writers of all kinds in the community. The day will be sectioned off by different writing prompts, and writers will share their work and receive group feedback at the end of the conference. A digital version will be held during the following week for those who prefer working remotely.

When asked about her relationship with writing, Emari shared a story. When she was a graduate student at NYU, she interned in a pediatric unit at Cornell Medical Center, where she worked with kids to write either

stories or poetry. “It’s amazing because none of them were into poetry,” DiGiorgio said.

“But in the end, the kids split between two different types of writers. Some kids wanted to express these elaborate worlds and adventures and escape from their reality, but others needed to process their reality. Feel what they need to feel, so life doesn’t seem as scary or lonely. And that’s beautiful. Writing allows us to escape and create a magnificent world, or process the pain we face every day.”

the community and hold poetry workshops with different populations. Some students go to the Covenant House in Atlantic City, and others visit nursing homes or daycare centers. “When we bring poetry to people, it’s incredibly powerful,” said DiGiorgio.

From memoir writing classes to spoken word events, the Murphy Writing Institute is intentional about allowing people to connect with their inner selves and using words to make meaning. Their open mic series, “World Above,” returns to the Noyes Arts Garage in Atlantic City next month on September 15th at 7 pm.

The theme will be “Hope in the Dark: Writing Through the Pandemic.”

“Now that we are starting up in-person events again, it feels like a rebirth as a writer,” said DiGiorgio.

“Writing brings us closer to one another through the expression of experiences shared by countless others, and I think that’s pretty cool.”

Iconic Ocean City Summer Treats You Can Make At Home 1 large egg, room temperature 1 cup of heavy cream ● 1 cup of granulated sugar ● 1 teaspoon of salt ● 5 cups of all-purpose flour ● 1 cup of brown sugar ● 2 tablespoons of ground cinnamon ● 4 tablespoons of salted butter, melted ● ½ cup of light corn syrup ● ½ cup of chopped pecans Pour active dry yeast in a bowl with warm water and ½ cup of granulated sugar. Let bloom for 10 minutes. You’ll know the yeast is ready if the surface of the water is foamy and bubbly.

In a stand mixer, combine egg, ½ cup of granulated sugar, salt, heavy cream, and ½ cup of melted butter at a medium speed.

At a slow speed, combine flour and warm water (with yeast) into the stand mixer (full of wet ingredients).

Once combined, cover and let rise in a 70-75 degree Fahrenheit environment for 18-24 hours.

Once the batter has risen to at least double in size, dump onto a floured surface and knead for 4-5 minutes. ● ●

ne of the best parts of spending time by the shore is the food. Delicious treats make the summer special. As August winds down and this season draws to a close, extend summer by making Ocean City yummies in your kitchen!

Here are some recipes to keep summer alive, and that are easy enough to test out in your kitchen:

Homemade Sticky Buns, Inspired by Mallon’s Sticky Buns

Ingredients: ● 1 full packet of dry active yeast ● ½ cup of warm water ● ½ cup of melted butter

In a small bowl, combine ½ cup of brown sugar, cinnamon, and salted butter.

Roll dough into a flat rectangle around 12 inches by 15 inches. Pour the small bowl’s contents (brown sugar, cinnamon, and butter) on top of the rectangle and spread evenly across the entire surface.

Carefully roll dough horizontally over the cinnamon mixture. Wrap

in plastic wrap and refrigerate for 1 hour. Preheat the oven to 400 degrees.

Once the dough has finished resting, remove from plastic wrap and cut into 3 inch thick buns. Place buns on a buttered pan and bake in the oven for 45 minutes.

While the buns are baking, heat corn syrup, ½ cup of brown sugar, 4 tbsp of salted butter at medium heat for 15 minutes in a saucepan until the mixture looks thick and caramel-like.

Turn off the heat and stir in the pecans.

Once the buns have finished baking, pour syrup over buns while they are still warm. Let cool for 10 minutes and enjoy.

French Fries, Inspired by Boardwalk French Fries

Ingredients: ● 2 pounds of Russet Potatoes ● 1 gallon of peanut or vegetable oil ● Sea Salt to Taste ● Old Bay to Taste Clean potatoes thoroughly and dry.

Cut potatoes into 4-inch by 1-inch rectangles and set aside.

In a large pot, heat oil until it reaches 325 degrees Fahrenheit.

Scoop 1 cup of potato rectangles into the oil and allow to fry for 8 minutes. Using a spider strainer or slotted spoon, remove fries from oil and pour onto a paper towel. Continue this cycle until all rectangles are fried.

Salt fries heavily and add Old Bay to taste. Allow to cool and enjoy!

Caramel Popcorn, Inspired by Johnson’s Popcorn

Ingredients: ● 1 cup of popcorn kernels, unpopped ● 1 cup of light corn syrup ● 1 cup of brown sugar ● ½ cup of butter ● 3 tbsp of salt ● 1 tsp of canola oil In a large pot, heat oil over medium heat for 1 minute. Pour in popcorn kernels, then cover and shake the pot

over heat (so that the kernels don’t burn) for five minutes. Once the kernels have popped, turn off the heat and pour popcorn into a bowl.

In a small saucepan, combine corn syrup, brown sugar, and butter over low heat. Stir until the mixture develops a thick texture and becomes light brown in color.

Pour caramel evenly over popcorn and add salt. Allow to cool and taste the rich, sweet flavor!

Cheese Pizza, Inspired by Manco and Manco

Ingredients: ● 1 packet of dry active yeast ● 3 cups of all-purpose flour ● 1 cup of sugar ● ½ cup of warm water ● 1 tsp of honey ● 3 tsp of olive oil ● 2 tsp of oregano ● 2 tsp of basil ● 2 tsp of garlic powder ● 2 tsp of salt ● 1 gallon of crushed tomatoes ● 3 cloves of garlic, diced ● 2 cups of mozzarella cheese, shredded

Pour yeast into a bowl of warm water with honey added to the mixture. Allow it to bloom for 10 minutes.

In a stand mixer, combine flour, sugar, and salt. Once the yeast has bloomed, slowly add to the dry mixture at a low speed. Cover and let rise in a warm, dry environment for 18-24 hours.

In a large pot, heat olive oil over medium heat for 2 minutes. Add diced garlic, saute for 4 minutes. Add spices and saute for 1 minute.

Add crushed tomatoes and cover over low heat for 3 hours. Let rest in a refrigerator overnight.

Once the pizza dough has doubled in size, knead over a floured surface for 5-8 minutes.

Spread into a circle with a 12-inch diameter.

Evenly distribute sauce over the surface of the pizza, then add cheese. Add a little bit more sauce over the cheese.

Bake in a pizza oven for 6 minutes (or a regular oven on a pizza pan for 15 minutes). Remove from heat once the crust is crispy and brown, and eat with friends or family.

Homemade Lemonade, Inspired by Boardwalk Lemonade

Ingredients: 12 lemons, juiced ● 2 cups of granulated sugar ● 3 cups of water ● Fun add-ons: crushed raspberries, vodka, or chipped ice Juice lemons (either using a juicer or hand-squeezer). Be cautious to remove seeds or peel that may fall into the juice.

Combine water and sugar and stir thoroughly to dissolve sugar.

Add any additional ingredients and pour into a fun pitcher. Enjoy! ●

BARRY WILLIAMS TO APPEAR IN OCEAN CITY ON SEPT. 11 Barry Williams, who starred as America’s most reliable big brother in the 1970s sitcom “The Brady Bunch,” will visit Ocean City on Saturday, Sept. 11, and be on hand to meet and greet fans and to lead a parade of street rod cars down the boardwalk.

Hundreds of prized automobiles will be on display for Ocean City’s Classic Car and Street Rod Show, and Williams will lead a procession down the Ocean City Boardwalk from Sixth Street to 14th Street starting at noon Sept. 11.

uards Named To Hall of Fame" was the headline in the September 1, 1975 The Press of Atlantic City. The article included a statement from Mark Soifer, Ocean City Public Relations Director: "This year's lifeguards decided to honor past members of the beach patrol. Over the years the beach patrol here has been the leader in Cape May County for winning lifeguard competition. The guards wanted to

honor the men who had previously served and who had given the Ocean City Beach Patrol a glorious history."

Captain George T. Lafferty presented plaques to the first members of Hall of Fame: T. John Carey (19261937), Tom Oves (1951-1964), and Dick Thieler (1958-1971).

On August 14, 2021, OCBP Alumni directors Jack Brooks and Vince Hink inducted Erin Curry, Stephanie Hauck, Jeff Garbutt, and Matt Garbutt into the Hall of Fame.

Since 1975, a total of 111 lifeguards have become members of the Ocean City Beach Patrol Hall of Fame.

Sweet Magnolias Foundation Brings Comfort to Cancer Warriors

weet Magnolias Cancer Care Foundation is a lighthouse of love for individuals navigating their cancer diagnoses. Led by four long-time friends, Sweet Magnolias was created to honor the life of founder Karen Foley’s late mother, Diana Adams. Their mission is to bring a sense of comfort and peace to families as they navigate their life-altering diagnoses.

Following Diana’s battle with lung cancer, Karen Adams Foley set out to keep her family matriarch’s memory alive in a way that would serve others who face the unimaginable. Karen Foley called her long-time friends with the idea for Sweet Magnolias. Each of them leaped at the opportunity to work alongside their friend. To-

gether, they brought their strengths to the table to create a foundation that would offer a dose of comfort for cancer patients from New Jersey to New Zealand.

The four women who sit on the board of directors at Sweet Magnolias work together with families to orchestrate fundraising events to help families cover the cost of cancer care. “We had no idea what we were doing when my mother was going through it,” explains Foley. “Helping them with fundraising takes something off of their plate while they’re going through treatment.” Additionally, Sweet Magnolias offers comfort kits, family photo sessions (with wigs and makeup offered to patients), and more to bring families a spark of joy during this trying period of their lives.

The comfort kits were originally inspired by the items that Karen’s mother found comforting during her treatment, but each one is custom-made for every new recipient.

Kits vary depending on the type of cancer, the age of the recipient, and specific needs. The bundle of comfort usually includes items such as

inspirational mugs, phone chargers, tissues, journals, worry stones, and warm blankets. “It is an opportunity to be a ray of hope, a gentle kindness that finds them on a day they might need extra love. Families are struggling in the dark hours of the night when no one is in touch with them.

The blankets and journals let them know that even when people aren’t there, there are people caring,” shares board member Pamela Fackler.

These comfort kits also often include personalized gifts such as masks and mastectomy pillows, which are handmade by co-founder, Lisa Madsen, using the large collection of fabric left behind by the late Diana Adams.

Sweet Magnolias Cancer Care Foundation proudly partners with Be The Match Foundation, an organization in place to match bone marrow donors with cancer patients in need of a transfusion. Be The Match raises awareness of bone marrow transfu-

sions and offers free testing swabs for those interested in participating.

As Sweet Magnolias celebrates their one-year anniversary this month, board members Karen, Pam, Terri, and Lisa are looking forward to continuing their 30+ year friendship as they work together to provide comfort to cancer warriors. “We are here on this planet for such a short time, it’s not just about what we can do for ourselves,” shares Pamela Fackler, secretary for Sweet Magnolias.

A tale of a surfers dream...

T

he year was 2000. Y2K, the apocalypse, and hype of the world coming to an end was upon us. There was a big change, a huge shift, the new millennium was upon us. Nias O’neill Deep Jungle Open June 2000. Nias is a small remote Island in North Sumatra, in Indonesia, an Isolated Island chain which dates back to pre-history. Historians and archaeologists have cited the local culture as one of the few remaining Megalithic cultures in existence today.

Nias is known for war dances and stone jumping; a manhood ritual that sees young men leaping over 2 meter stone towers covered with spikes that can lead to their death.

A surfers dream: the lure of the perfect wave, the adventure and journey to get there, and to find a secret or unfound perfect wave that no one else has ever surfed. Nias was this place! I first saw this place in magazines, and always

dreamed of surfing there. Travel time is about 48 hours, and it took every form of transportation - planes, trains, boats and donkeys - to get there! Once in Sumatra, the Association of Surfing Professionals (ASP) had two chartered planes for all the competitors.

“Sketchy” would be an understatement when observing these planes! We loaded up the planes with our boards, and were ready for take off when I overheard one of the Australians pointing out the guys on the tarmac with fire extinguishers. Not a good sign for this dual prop airplane with duct tape everywhere! We made it there, but the other plane had to turn back and make an emergency landing because one of the props stopped working after take off. Glad I wasn’t on that plane! After arriving in Nias there is a 5 hour van ride across the Island. No one told us that there are still headhunters on Nias until we got stopped in the middle of the road by a bunch of tribesman waving machetes!

I just wanted to go surfing, not have

my head shrunk and put into a bottle!

No worries: the local escort talked our way through. If that wasn’t enough, after finally arriving that night, we were hit with a 7.4 earthquake and tsunami warning!

My first glimpse of Nias that first morning was of a beautiful blue ocean lagoon, thick, plush, green, Malaria infested jungles, and wildly bent palm trees, with huge coconuts, lining the white sandy beaches. The locals were friendly and curious, as they hadn’t seen many foreigners. My first surf was amazing! Sitting on the water I could see clear to the bottom, and tropical fish everywhere. It was like floating on top of an aquarium.

The contest was held for the prelim-

inary rounds at the famous right hand point break at Lungundi Bay. When it’s small the wave peels perfectly along the inside reef. When it gets over 6 feet it breaks on the outer part of the reef and barrels big time! The waves were small for the preliminary rounds, but super fun, and very rip-able. After 6 days of small surf, and the contest being on hold, in hopes of better surf, the locals were ready to take things to a higher power with a local tradition of having a sacrificial ceremony. I thought they were kidding when they said they would hang a cat, and throw it out to sea, to send a swell our way. That evening, we were hanging out on our porch, overlooking the contest break, when we spotted a cat with a noose

tied around its neck floating in the channel. A few minutes later we saw a chicken, with its head chopped off, also floating out to sea! This is a local tradition and, although very cruel, it is part of their culture. I guess the locals didn’t want to take any chances with just one form of sacrifice. This may sound crazy, but just before the sun was setting that evening we saw the biggest sets of the day coming in! Coincidence? Or was there something to this ancient ritual?

We were all laughing and making jokes about it actually working. In our culture, surfers have been known to sacrifice a surfboard in hopes of a swell to come.

As the sun rose the next day, finals day, the swell was absolutely pumping!

Ancient energy? After assessing the conditions, the contest organizers decided to move the contest venue up

the beach and around the corner, to a secret spot never surfed at this size before. It was a rare swell angle that was hitting this reef just right. It was a dangerous wave over shallow, razor sharp reef, with only a tiny keyhole to paddle out through, surrounded by dry reef. The wave had an end section that was named “the death section” because, if you didn’t make it past you were facing dry rock and potential serious injury or death! The surf was more than I had imagined! Solid 8-10 foot spitting barrels, and breaking boards like toothpicks! On the beach the locals

were hooting for every wave, as they had never seen anyone surf this wave at this size before. It was finals day. Only sixteen competitors left, and fortunate-

ly I was one of them. Everyone was charging and pulling in deep, in hopes of grabbing the big World Qualifying Series (WQS) ratings points. The surf was so good that even the competitors were hooting at each other during their heats! As the heats went on, the Australians were dominating: guys like Joel Parkinson, Chris Davidson, Dean Morrison, Sasha Stocker, and Lee Winkler to name a few. In my semi final heat I took the hardest hit into the reef in my life! I dropped into a huge set wave, was pulled in deep, and got clipped. I came up after being ragdolled underwater, to find half of a surfboard, and the next wave a double up foamy beast breaking right in front of me! It pounded me down, took me back up, and back over, slamming my back, arm, and head straight into the razor sharp bottom.

When I came up my back was a bloody mess, and I was seeing stars! Luckily there were only a few minutes left in the heat, and I had enough points to

advance to the finals. I was in so much pain, I could barely move my arm, and I didn’t think I could finish the contest.

My back looked like hamburger meat.

I sat in the jungle alone and motivated myself to paddle back out there. After all, I had come so far, traveling across the planet, and now the final of a big event. I was mentally and physically shaken up, but I paddled back out for the final. Sasha Stocker was ripping, pulling in deep, and getting spit out everywhere. He took the big win, Lee winkler finished 2nd, I came in 3rd, and Joel Parkinson 4th.

Finding the perfect wave will never happen. We always seek more. Find the perfect wave in the journey.

Turn Leftovers into Egg Rolls for a Quick and Easy Dinner Let It Grow

o you ever open your refrigerator hoping you have enough leftovers to feed your family only to find “a little of this and that?" Don’t despair.

You can make a little leftovers go a long way with egg rolls on the menu.

Usually, we have a little leftover chicken, beef, or tempeh that’s already been cooked, but won’t quite make do as the main entree. That’s when I break out the egg roll wrappers. They can usually be found in the produce department of your grocery store near the tofu and other plantbased foods. Though they require refrigeration, they will stay fresh for a few weeks if unopened, so I try to keep a package handy.

Top your protein with chopped cabbage, carrots, and green onions, then drizzle with dipping sauce.

The beauty of making egg rolls is that you can add almost anything you like to them. If I have leftover vegetables, they might find their way into the wrappers as well. For a quick and

easy egg roll, I use one of the Asian bagged salads that often has a nice combination of cabbage, chopped carrots, and green onions. The meat (or other protein) will already be

cooked through, but warm it up for a few minutes in the microwave. Add a little ginger (fresh grated is best, but powdered will work) to add in an Asian flavor. Whiz the leftover meat and/or veggies in a food processor. If your salad mix doesn’t have carrots, add a few baby carrots to the food processor. Next I make a dipping sauce that is also used inside the egg roll wrapper for a little extra flavor.

Mix equal parts soy sauce and Asian sweet and sour sauce. For an extra kick, use Thai Chili sauce in place of the sweet and sour sauce or a combination of all three. You can also add a little fresh or powdered ginger to the sauce.

Once all your ingredients are ready, make a little assembly line, because things will go quickly once you get started. Add a tablespoon of your chopped-up protein to the middle of the egg roll, top with the chopped Asian salad, and drizzle a bit of your pre-made dipping sauce. Most egg roll wrappers will have instructions on folding the wrapper. Use water on your hands as the “glue” to seal the roll, being careful that the edges are

completely sealed. Preheat a small amount of cooking oil in a frying pan on medium heat. You want the oil hot enough that the egg rolls will sizzle when placed in the pan, but not so hot that they burn quickly. If the oil is not hot enough, too much oil will be absorbed into the egg roll. You are not deep frying them, but giving them a quick browning that will cook the wrappers and give them that gratifying crunch. Make 4-6 at a time, being careful not to crowd the pan. Have a pair of tongs and ready eyes to turn the egg rolls, since they will brown very fast. A cooking buddy would be helpful at this point, to watch the stove while you roll. When all sides of the egg roll are nicely browned, place them on a paper towel-lined plate to absorb some of the oil. When ready to plate, drizzle the egg rolls with your dipping sauce and top with sesame seeds

Rice makes a perfect side dish for egg rolls, but if you have leftover rice, you can add this to the egg rolls as well. Just be sure not to overfill them or they will break in the pan, making a big mess. Serve egg rolls for dinner and your family will be very happy that you served them “leftovers."

On The Move: History of South Jersey Railroads The six-mile long Somers Point Bike Path, a six-mile long trail that stretches between Somers Point and Pleasantville, runs along the former Atlantic City and Shore Railroad. This railroad, also known as the Shore Fast Line, operated from 1907 until 1948 and provided service between Atlantic City and Ocean City. Some of the former rail stations can be found along the bike route offering a reminder of the paths history.

outh Jersey has a vast network of bike and walking paths. Many have enjoyed countless sunny days strolling through Linwood or taking in a workout along West Jersey Avenue in Egg Harbor Township.

Margate Cornhole Hits The Mark By: Valerie Lonkart

W

alk down any side street of Margate and you're apt to find a spirited game of Cornhole being played. The game,

similar in concept to horseshoes but minus the incessant clanking of metal, can be played anywhere and by anyone. On sidewalks, the beach, and backyards, Cornhole is quickly becoming one of the most popular games to play.

Originating in Germany in the 14th Century, Cornhole was rediscovered in the foothills of Kentucky about 100 years ago. The game, played with two wooden boxes called cornhole platforms and eight corn bags, lends itself perfectly to mobility. This mobility allows the Margate Cornhole

league to be held at four different host locations each Monday night.

Robert's, Bocca, the Greenhouse, and Maynard's each has a perfect outdoor venue to hold tournaments and after parties.

Margate has hosted a Cornhole tournament for the past several years during its annual Beachstock beach party, but this year the

Margate Business Association decided to try something a little bit different.

"Anna Maria and I were always talking about taking our tournament to another level," said Cornhole League organizer and local business owner Michael Collins. "The timing worked out well with the lifting of Covid-19 protocols, and we just ran with it."

While the winners will take home a cash prize of $175, trophies, and sweatshirts, the real prize is in the bragging rights, said Blescia-Courter.

"From a business association perspective, we like to promote the community and local businesses," said Collins. "This league is about bringing people to our local businesses and restaurants and it succeeded.

From the four host locations to the 20 board sponsors designed in our UPS store, this league has brought all the businesses together."

"We wanted to create a way to bring the community out on a Monday night," said Margate Business Association Executive Director Anna Maria Blescia-Courter. "This was a way to continue to bring people into our local businesses and restaurants."

The strategy succeeded.

"It was a great idea," said Margate resident Ed Allen, a member of the OG Corn Stars.

"It's fun and I met a lot of great people. As an added benefit, it gave me another night of the week to drink."

The Spring league had 40 teams and was such a success that they needed to turn teams away due to logistics. The summer league has been equally successfully with 80 teams and 160 players.

"This has been such a wonderful community building event," said Blescia-Courter. "We've had a marriage proposal, social engagements, birthday celebrations, childhood friends

who haven't seen each other in years reconnect. It's just been incredible for our community and our businesses."

Margate resident a member of The Understudies couldn't agree more: "It's awesome that the guys at Colmar put this together. What a great way to bring the community together to make Mondays another funday!"

"This has been a great way to get out on a Monday night, meet new people, and support local businesses," said Paul Giegerich, another member The Understudies. "I can't wait for the fall season."

The playoffs were held August 16th at the Greenhouse with an afterparty at Maynard's. Thirty-nine teams will compete in the finals which will be held August 30th 6 p.m. at Robert's. The final after party of the season will be held at Bocca immediately following the tournament.

Now You See Her; Now You Don't …Lucy to Disappear on September 20th

N

o, David Copperfield isn’t going to make Lucy vanish! On September 20th, Lucy will disappear behind weatherproof scaffolding and not be visible to visitors for approximately 9 months. The Save Lucy Committee is about to embark on the largest restoration effort of the famous National Historic Landmark since she was saved from the wrecking ball in 1970. Lucy’s entire metal skin surface is going to be replaced with all new metal. More than 50% of her skin has deteriorated beyond repair.

After careful analysis by Lucy’s restoration architect, Margaret Westfield of Westfield Architects and Preservation Consultants of Haddon Heights, NJ, along with metallurgist, Scott

Kreilick of Kreilick Conservators, they have determined that replacing her metal skin would be more cost effective than trying to remove the 50 years of paint and rust.

“This is an enormous financial undertaking” said Richard Helfant, Executive Director of the Save Lucy Committee.

“We are so fortunate to have been awarded a grant from the Preserve NJ Preservation Fund administered by the New Jersey Historic Trust. The cost of this project is estimated to be $1.4 million. Additional funds have been applied for from the National Park Service’s Save America’s Treasures grant program. The balance of funding will be raised by donations to the non-profit and fund raising campaigns” Helfant went on to say.

ight off the bat and deservedly so, I’d like to recognize the Atlantic Shore 13U Babe Ruth Baseball team as they went to Jamestown, NY and won the Babe Ruth World Series. It is the 13-year equivalent to the Little League tournament (though Babe Ruth is a competing organization) that many see featured on ESPN television. My radio colleague Mike Gill is the manager of the team, and although he had taken two other teams to the World Series before, this was his first time winning the whole thing.

Congrats to Gill and his coaches Don Myers, Steven Myers and Frank Curtin. Congrats to the players as Jake Blum, Colin Thompson, Will Hickman, Aidan Ralph, Ryan Baldwin, Christian Madamba, John Franchini, Damon Herzchel, Brady Arena, T.J. McBall, T.J. Santarpio, Colt Russo, Matt Wagner, Bernie

Hargadon, Dillon Singleton and bat boy Roman Franchini now all have a collective experience that they will never forget as 13U Babe Ruth World Series Champions!

Since I last wrote, the Phillies have watched the Braves go on a 9-1 tear over their last ten, while the Phils could only manage a 4-6 record in the same time frame. The Eagles get blown out by the Patriots in preseason game #2, but what does it exactly mean? The Flyers have given an extension to one of their key, young, defenseman. The Sixers schedule is out, and they’re getting no love from the league and the national TV partners. Finally, on the local front, congrats to all the folks who were inducted into the Atlantic City Boxing Hall of Fame last Sunday.

From entertainment, I’ve been meaning to write about the new JEOPARDY host, but that story keeps evolving. Plus, I checked out a series on Netflix that has mystery, hidden treasure and more! As always though, we begin with sports, and my thoughts: ● We’ll start with the Phillies, for the third week in a row, but they almost got bumped out in favor of the Eagles I must admit. When I wrote last week, the Phillies were on the verge of going to Arizona where they would have a solid three starters pitching for them in Kyle

The problem in Arizona wasn’t the pitching, it was the offense. The bats went silent as the Phillies could only manage 7 hits in 60 plate appearances and just 4 runs over the three game series. Remember August 8th? That’s when the Phillies were finishing a sweep of the New York Mets to move into first place in the division. All they’ve done since then is go 4-8 to fall to four and a half games behind the Braves in the N.L. East.

After Hurts was a no-go (Joe Flacco got the start), new coach Nick Sirianni elected to pull most of the starting offensive line. Just three plays into the game, backup center Nate Herbig launched one over backup QB Joe Flacco’s head and it resulted in the Patriots getting the ball on the Philadelphia 9-yard line. Two plays later, the Patriots scored and the rout was on. Flacco looked TERRIBLE as he went 10 for 17 for 83 yards and an interception. 3rd string QB Nick Mullens was WORSE as he was also picked off once, and sacked three times.

The only bright spot was the on-field debut of top draft pick and Heisman trophy winner DeVonta Smith. Smith caught two balls for 19 yards, but more importantly showed an ability to create separation from his defender and get open on each of the four times he was targeted. The big question is, will Jalen Hurts at least see some playing time in the final preseason game against the Jets?

This week will serve as a crucial period for general manager Howie Roseman and the front office as they finalize decisions and construct a 53-man active roster by next Tuesday 8/31. Leading up to cut day, the Eagles will hold two joint practices with the Jets in Florham Park, N.J., followed by the final preseason game on Friday 8/27 at MetLife Stadium.

In hockey, the Flyers avoided salary arbitration with defenseman Travis Sanheim by signing the restricted free agent to a two-year deal that carries a $4.675 million average annual value.

Sanheim received a heathy raise despite a disappointing season last year.

Perhaps more significantly is that the Flyers are investing in their defense. The Flyers’ cap hit for their seven projected

defensemen will be a little higher than Vegas’ for its top seven defenders. The Golden Knights had the best defense in the NHL last season, allowing 2.18 goals per game. The Flyers surrendered a league-worst 3.52 goals per game.

The Flyers also will spend more than what two-time defending Stanley Cup champion Tampa Bay will pay its seven defensemen.

Hey, last season GM Chuck Fletcher thought he could “skate by” with the existing defensemen he had and it was a colossal failure. So, even though it’s going to cost them, I’m all for spending money on the defense! Sanheim is expected to be paired with recently acquired defenseman Rasmus Ristolainen.

The Flyers development camp begins this weekend and runs from Aug. 28 to Sept. 1 in Voorhees. Among the notable prospects is 6-foot-7 238-pound defenseman Jackson van de Leest. The undrafted 20-year-old caught the eyes of Flyers scouts when he played for Calgary in the Western Hockey League last season. I’ll be keeping an eye on him too!

Which leaves us with the Sixers as their schedule is out and they aren’t getting much love from the NBA schedule makers. Despite being the #1 seed in the East last year, they did not get a Christmas Day game. While they won’t play

on Christmas, the Sixers were included on the NBA’s opening week national TV schedule. The season will tip off on Oct. 19 and the Sixers will host the Brooklyn Nets on Oct. 22 in an ESPN game.

So, while the league didn’t give the Sixers much favor in the Christmas and opening week games, Philly is featured in 27 nationally televised games on the 82-game slate. That’s the eighth-most in the NBA. Travel efficiency was a key component to the schedule, which is why the Sixers’ longest home stand is four games and the longest road trip is six. Last season many of the league’s stars suffered injuries in the final two months. The estimated travel mileage is a record low for NBA teams, sin-

gle-game road trips are down almost three games per squad, and no franchise has a scheduled four-games-in-five days stretch.

Oh, last column I forgot to write that the Sixers had re-signed veteran guard Danny Green to a two-year, $20 million extension. Green was a big part of why the Sixers earned the #1 seed last year as he provided a legitimate shooting option besides Joel Embiid and Ben Simmons, plus stingy defense on the other end. Green was injured in the playoffs though and missing when the Sixers went down against Atlanta in the second round. He’s also one of the older

members of the team now as Dwight Howard and George Hill are gone. The 34 year old had offers from the Nets, Bucks, Bulls and interest from other teams in free agency, so I think this is a key free agent signing for the Sixers.

On the local front, congrats to the 25 boxers, trainers or media people who were inducted into the Atlantic City Boxing Hall of Fame last weekend. Because of the pandemic, they basically inducted two classes in one weekend as The 2020 and 2021 inductees are Roy Jones Jr., Riddick Bowe, Pernell Whitaker, Al Cole, Ernest Bing, Tony Thornton, Sr., Calvin Grove, Percy Richardson, Tommy Parks, Earl Morton, Steve Weisfeld, Ron Katz, Murad Muhammad, Marc Abrams, Al Bernstein, and Ms. Laoma Byrd. Congrats to Atlantic City Boxing Hall of Fame President & Founder Ray McCline for an outstanding weekend at Hard Rock Hotel & Casino and I’m looking forward to next year when the class of 2022 goes in!

Bialik was chosen for some prime time specials and spin-offs. Well, what a difference a week makes as Richards is now OUT as host, he’s staying on as executive producer, and Bialik is IN, at least for now. Bialik will now fill in as host of the Jeopardy syndicated show as producers search for a new permanent host to replace Mike Richards. Bialik is currently scheduled to tape 15 episodes across three weeks of programming when production resumes this week.

However, Sony Television will still be bringing in a new roster of guest hosts.

My last item is about the Netflix series “Outer Banks”. Are you a fan of mysteries and treasure hunts? That’s essentially what the series boils down to as “Outer

Banks” is an action-adventure mystery teen drama streaming television series with two seasons out so far on Netflix.

The premise is that Outer Banks is set in a coastal town along the Outer Banks of North Carolina, where there is a stark social divide between wealthy seasonal residents and working-class locals (who have the nicknames "Kooks" and "Pogues", respectively). The show follows a group of Pogue teenagers who live at The Cut, and are determined to find out what happened to the missing father of the group's ringleader, John B. Along the way, they discover a legendary treasure that is tied to John B's father.

Chased by the law and a wealthy group of Kooks from Figure Eight, the Pogues seek to overcome obstacles such as

drugs, love, fighting, friendship, money, and the disenfranchisement of being an American teen. Call me a sucker, but I couldn’t get enough of it and can’t wait for season three! Oh yeah, I binged watched this one.

I’ll close with a personal note about COVID-19 and the delta variant. I had a scare myself as I was at a dinner the other week and sitting next to two friends who then tested positive for COVID-19. Needless to say, I freaked out a little, and rushed to get a test done. Thankfully, it came back negative, but there’s no doubt this is not over. It is my continued hope that you stay safe, stay healthy, and if a place requires you to wear a mask, it’s for a reason! Above all, just please be KIND to one another.

From Summer to September: How to Transition Your Children Back to School

t’s that time of year again! As 2021 offers unique challenges, this school year might be an adjustment for kids, parents, and teachers alike. Maybe your child is returning to school in person after learning virtually last year, or maybe your kiddos are confused about why there are still restrictions in place. Whether you’re excited or nervous, planning ahead will help make this change a little easier. Here are my tips for how to transition your children from summer to school: Be Open About Changes Keep in mind that your kids aren’t as up-todate on changes as you are. So, perhaps two weeks before school starts, talk to them about how this school year may be different. Hold a family meeting and talk about masks, washing hands, and if your children are older, the delta variant. Explain why it’s important to stay safe and healthy, and who we need to protect during the pandemic. Even if you disagree with the school policies, staying positive will benefit your kids and help them stay out of trouble.

Give Them Reasons to Smile Maybe your teenager is bummed about having to leave their bed to go to school in person.

Maybe your 6-year-old is still struggling to keep their mask over their nose. Perhaps your kids are frustrated that the pandemic is still ongoing. Regardless of your opinion on pandemic restrictions, we can all agree that kids have been dealing with a lot of changes during these challenging times.

Give them something to smile about as they face the coming year. Pack encouraging notes in their lunchbox. If their teacher is okay with it, let younger kids bring their favorite stuffed animal to school. Brainstorm ways for your child to hang out with friends, and acknowledge that going back to in-person school can be scary for shyer kids.

Bake some sweet treats to surprise the kids for when the bus comes in the afternoon. Tell your kids how proud you are of them for handling the pandemic like a champ. After school, whip out some board games or watch a favorite movie together to de-stress. During these challenging times, it’s important to look toward the future with a smile because that builds resilience in the present.

Pick Up Some Cool New Stuff For School Back-to-school shopping has always been my favorite time of the year. Fresh new notebooks, inky pens, and the sharpest crayons await you.

Help your child feel proud of themselves by assuring that they are prepared and looking nice.

Check In On Mental Health Your kids aren’t insulated from the mental health epidemic in America. Sit down with each kid one-on-one and ask them if they are feeling lethargic, overly anxious, or angry all the time. A quick way to do this with younger kids is to ask whether they feel thumbs up, thumbs down, or somewhere in the middle. Listen when your kids seem overly frustrated, and model how to handle

big emotions. It’s understandable that challenging times can increase mental illness symptoms, so if your child is struggling, schedule an appointment with a child psychologist so your child can work through their issues. Make sure your child knows that if they’re struggling, it's not their fault and you still love them. Don’t whisper about your child’s behavior changes behind closed doors, but instead get down on their level and ask them what’s going on. A little understanding can go a long way.

Give Kids Time to Adjust Try not to schedule anything like doctor’s

appointments or piano lessons for the first two weeks of school. Changing routines is hard, so respect your kids’ need to wind down at the end of the day. Don’t expect them to be in the best mood, but be patient and assure them that it will get better. Remind them we can all get through this together.

The start of the 2021 school year is a challenge for parents, students, and teachers. However, with some optimism and flexibility, we can make the most of this fall, learn something new, and celebrate the changing of seasons.

orror film fanatics get ready this September 3rd-5th for the New Jersey Horror Con and Film Festival, hosted at the Showboat (801 Boardwalk, Atlantic City, 08401). The three-day event will have a wide range of films, vendors, and special celebrity guests from the horror world.

The celebrity guests include an exciting reunion with cast members from the beloved 1985 cult classic, The Goonies, with Kerri Green (Andy) and Ke Huy Quan (Data) who you may also recognize as Indiana Jones’ loyal sidekick, Short Round, in Indiana Jones and the Temple of Doom. There will also be appearances from Tom Arnold (Freddy’s Dead, The Final Nightmare; True Lies) and David Howard Thornton

Bare Knuckle Cafe Celebrates Five Years of Knuckle Sandwiches

O

n any given summer evening, Egg Harbor Township locals can find the neon green Bare Knuckle Cafe food truck pumping out mouthwatering “knuckle sandwiches” and delectable desserts. The cafe-on-wheels is known to draw long lines that are well worth the wait. As customers approach the window, they are met with a warm smile, impeccable customer service, and a made-to-order meal that their taste buds will not forget.

Bare Knuckle Cafe is family-owned and operated by Chef Ray and Elizabeth Klein,

along with their daughter Emma. Chef Ray spent 17 years as a highly regarded chef in the casinos. However, when he was off duty, he was known for the “big boy wraps” that he’d often make for his family.

“Big boy wraps,” now known as “Knuckle Sandwiches,” are the stars of the Bare Knuckle Cafe menu. Chef Ray, who is often referred to as Uncle Knuckle by the children in his life, creates each menu item entirely from scratch. Using fresh, local ingredients, the menu fluctuates regularly to incorporate seasonal produce and guarantee high-quality meals. From the seasoning blends to the fresh-squeezed lemonade, everything that comes out of the Bare Knuckle Cafe truck is made from scratch and with love.

The Klein’s food truck journey began in 2015 when Ray and Elizabeth were in the midst of career changes and searching for a way to continue to feed the community that they love. They bought a run-down truck on a leap of faith that would soon feed people by the dozens. The truck had been on the

side of the road for some time and featured a rusted grill and chewed wiring. As far as Chef Ray was concerned, “the bones were good,” and they would figure out the rest.

As the family celebrates their fifth year in business, they are reminded of the community that made Bare Knuckle Cafe possible. Elizabeth refers to it as the “Food Truck of the EHT Community.”

The run-down truck, which was once filled with acorns and covered in images of hot dogs, was beautifully transformed through the helping hands of Egg Harbor Township residents. Family, friends, and acquaintances began to come together

People that the Kleins had never met before volunteered their time and resources to revive the once disregarded food truck, transforming it into the vibrant, green truck we know today.

After 15 months of repairs and prayers, the Bare Knuckle Cafe hit the road for their first graduation party and has not stopped cruising since. Despite some bumps in the road with zoning and permits, the Kleins have persevered and continue to draw a crowd no matter where the truck parks its wheels.

Bare Knuckle Cafe regulars are known by name, as the only person working the window is the smiling Elizabeth Klein herself. As a family, they are committed to providing a quality experience for each visitor. Meals are made to order and can be changed to accommodate dietary needs.

With Chef Ray in the background pumping out knuckle sandwiches and Emma Klein handing out ready-to-eat meals, the Bare Knuckle Cafe is a well-oiled machine.

When the Klein family isn’t busy feeding local customers at pop-up locations, they are behind the scenes giving back to the community. They have been known to donate food for funerals and other unexpected life events. They’re involved in local activities, always willing to sponsor a baseball team or feed a fire department.

“When you are saturated in the community, it is your moral responsibility to uphold that community,” explains Elizabeth Klein.

“God has been good to us. We love to feed people. It’s about nourishing the soul.”

Chef Ray and Elizabeth spend time mentoring young adults and new business owners looking to launch their own food trucks, stating that “there is enough for everyone to go around.”

Through their mentorship, they remind young people that it is okay to be scared but not to let fear stop you from pursuing your dreams. The Sticky Story of Salt Water Taffy

t’s as iconic as the boardwalk, more widely loved than the casinos, piers and bayside brews.

And you’ll find it in the humblest of homes - inside an old-fashioned candy shop. This is what Atlantic City is known for - the birthplace of salt water taffy.

Salt water taffy is one of the most common souvenirs bought along the Jersey Shore. This chewy candy comes in a variety of flavors like root beer, lemon, strawberry and mint. Some candy shops experiment with unique flavors. Shriver’s, located on the Ocean City Boardwalk, sells flavors such as chocolate peanut butter, sour cherry, and cremesicle. Tourists most commonly pick up variety packs of taffy so they sample different flavors on their long drive home.

Make Your Own Salt Water Taffy!

I

Ingredients: 1 cup of sugar ● 1 tbsp of cornstarch ● 1 tbsp of salted butter ● 1 cup of corn syrup ● 1 tsp of vanilla extract ● ½ cup of water ● 1 tsp of flavoring extract of your choice ● 3 drops of food coloring of your choice In a large pot, combine sugar, butter, cornstarch, water, vanilla, and flavor extract over medium heat with a candy thermometer. Whisk until the mixture reaches 250 degrees Fahrenheit.

Turn off the heat, add food coloring and stir to combine.

Pour the candy onto a sheet pan and let cool for 10 minutes.

Stretch and knead the mixture for 15 minutes. The candy will turn from translucent to opaque.

When the taffy becomes thick and difficult to pull, roll candy into one 16-inch log and let rest for 10 minutes.

Cut candy into 2 inch pieces and wrap with wax paper. Enjoy! ●

By 1886, salt water taffy became a household name. The candy was popularized by Joseph Fralinger and Enoch James, candy competitors from Atlantic City.

James is responsible for refining the

recipe, making it less sticky and easier to unwrap. Both competitors owned shops on the Atlantic City boardwalk.

Salt water taffy is still sold on the boardwalks of Atlantic City and Ocean City.

However, the taffy is now available in candy stores all over the United States and Canada. If you want to a local treat, make sure to pick up your sweets along the Jersey

What’s the origin of salt water taffy? The legend goes like this: one stormy night in 1883, David Bradley’s candy shop flooded in a seaside hurricane. His entire stock of taffy was soaked in salt water. The next day, a young girl entered the store and asked to purchase some taffy. Bradley joked that it’s a new creation - salt water taffy - and sold a piece to the child. She loved it so much that she ran to her friends and family and offered them a taste. Bradley’s mother was in the back of the store and heard the interaction.

She was so tickled by the new name that she forced Bradley to change the marketing of his taffy permanently.

Despite popular opinion, modern salt water taffy usually does not have any salt in it (except perhaps a caramel or peanut butter flavor). It does have water, though! Salt water taffy is made of butter, corn syrup, sugar, glycerine, flavor and food coloring. In the old days, taffy was pulled by hand in a copper pot, stretched to aerate the corn syrup and sugar mixture. This made the taffy lighter and less dense.

It was cut into two-inch logs with scissors and wrapped in wax paper. Today, the process is mechanized. Hooks and

n the 1890's, Atlantic City offered a flume ride much like the extreme thrill rides of today. "Shooting The Chutes" was a major attraction on the boardwalk. Riders were pulled up a long incline in an open car, then were transfered to a flat-bottomed boat. The boat raced down a track to a large pool, where it bounced and skimmed across the water.

Many Opting For A Green Burial (Part Two)

n my first article, I mentioned how more and more loved ones are honoring their deceased family with a simple, environmentally friendly process called a green burial.

Both traditional burial and cremation are very common methods of final disposition in our society but many have pointed out that both are not good for the environment and many more do not find personal value in these types of services. Traditional burial with embalming uses chemicals to.preserve the deceased but these chemicals are a carcinogen and can be dangerous to both the embalmer and possibly the environment. Also, there are many who don't feel the need or want to be embalmed and want to return to the earth naturally.

Some people are concerned about the use of land for cemetery space and are concerned about the carbon footprint left behind when a casket or vault is placed in the ground. In regards to cremation the amount of energy needed to cremate an indi-

vidual is large but more importantly is the amount of particle's that are created from a cremation which is quite numerous. It is because of these two facts that make cremation not environmentally friendly at all.

Based on all of this Green Burial is becoming very favorable for those with environmental concerns and/ or want a very simple method of disposition.

So, again Green Burial, also known as natural burial is a way of caring for the dead with minimal environmental impact that aids in the conservation of natural resources, reduction of carbon emissions, protection of worker health and the restoration and/or preservation of habitat. Green burial necessitates the use of non-toxic and biodegradable materials such wicker/ bamboo caskets, linen and cotton cloths or shrouds.

Exercise for beginners Shore Fit

D

o you want to begin an exercise routine? If you’re unsure about how to start working out or if you’ve never really exercised regularly before, I’m here to help! Whether you’re looking to run, ride a bike, lift weights, or do yoga, just thinking about how to start, can feel intimidating. Scrolling social media or seeing runners in your neighborhood can make it seem like exercise comes so easily to others though. Never compare yourself to others. We are all "newbies" at some point.

Your exercise routine is about you and your individual goals, your preferences, and your interests. What matters instead is finding a fitness program that works for you.

There is a lot out there to choose from. Are you ready to start? Here are a few of my suggestions to get the ball rolling. I want you to find a successful exercise program that’ll stick with you for the long haul.

Identify you're why! Why do you want

this? This may take some digging but it is so important to hone in on the reason that you’re doing this. This is a huge part of staying motivated, consistent, and positive when you're first starting to work out.

Fitness should be about your own goals and what feels right for you. Don’t get caught up in what everyone else is doing. Just remember that we all move at our own pace, and focus on what is best and most enjoyable for you and your body.

You will also want to invest in some gear. This will be specific to what type of exercise program you’ll be doing but a few staples tend to be universal. Sneakers will be first and foremost unless you’re starting yoga and then you’ll want to invest in a great mat. Sneakers will also be specific to what type of fitness you’re embarking upon. Will you need running sneakers or sneakers that move better, laterally if you’re starting CrossFit or Bootcamp classes. If you’re a woman, you’ll want to invest in some supportive sports bras. This is so important if you’re doing some sort of jumping and/or plyometrics. I highly recommend purchasing a few cute workout outfits that you feel comfortable in.

As you get started working out, think about long-term consistency. A great

question to ask yourself is, how many days a week can you realistically fit into your life? Start with two days per week and work your way up to three or four days per week.

These can be as short as 15-30 minutes each designated day of exercise.

Never set yourself up for failure by going too grand and unattainable. Setting a realistic goal and sticking to it, is key to success.

Once you find a type of workout that works for you, you don’t want to go all-in right away. Take the time first to learn the basics, which will allow you to safely progress with your exercise of choice.

My son just recently started using the Peleton with beginner rides of 20-30 minutes. He’s building a base and learning how to get and keep himself in the correct zones of resistance and cadence (leg speed). He has the right idea because he’s not moving on until he masters the basics. He’s also challenging himself by beating what he did the day or ride before. It’s him vs. him! This can be very motivating for many. You may also want to start with a beginner exercise class or a less intense and slower-paced one. Your fitness class should feel challenging, but not so difficult that you feel defeated.

Find a time to work out that works for you. There is no set time that’s the

best for working out. The best time is always the one that fits your lifestyle, your preferences, and your energy level.

You don’t have to get up for that 6 am cycle class if early morning is not your thing. You will most likely not stick to it and has zero to do with the exercise. Find the time when you have the most energy.

Is that before work or after?

Another strategy is to get your workout essentials together the night before, especially if you’ve decided to try morning workouts. If you're groaning at your 6 A.M. alarm, it's much easier to get up if you know you have your things put together, so all you have to do is slip into your clothes and walk out the door.

Last but not least, make sure that you’re listening to your body. If you’ve been going too hard, you may need a break, and that’s perfectly fine. Starting a workout routine shouldn’t add to your stress, it should be a helpful self-care measure that makes you feel better and motivated to keep going!

Ocean Casino Resort’s “Change for Change” Donations benefit people with Intellectual and Developmental Disabilities in South Jersey

he Arc of Atlantic County is proud to honor one of our par tner organizations, Ocean Casino Resort, for their generous contributions in 2021. The Arc of Atlantic County recently received a donation from the #OceanCares

Change for Change initiative.

We look forward to our continued community partnership with The Arc!” For sixty years, The Arc of Atlantic County has served people with intellectual and developmental disabilities (IDD) and their families throughout our community.

Through residential services, job training, recreational activities, case management, family support services and other programs, The Arc has grown today to support over 1,000 people with disabilities and their families throughout Southern New Jersey.

“At The Arc of Atlantic County we believe our community is strongest when all people, including those with IDD, are included as engaged participants. heat, besides the climb, being a Light Keeper might not seem like a tough job. But, imagine a dark stormy night, the wind is gusting at 60 knots, the rain is slapping against the bricks, powerful waves are crashing onto the shore, the tower of iron and brick is actually swaying under your feet, and you alone are responsible for keeping the light!

Besides the rather perilous stormy nights, historically, lighthouse keepers were needed to trim the wicks, replenish fuel, wind clockworks and perform maintenance tasks such as cleaning lenses and windows. They

Mike is happy to explain about his quest to hike part of the Appalachian Trail in each of the 14 states it passes through, and how he is using the lighthouse to train for his upcoming second attempt to reach the more treacherous northern end of the trail at the Katahdin summit.

Mike has been training at the lighthouse for nine weeks now, and every time he steps off the 228th stair into the light keepers watch room at the top, a lighthouse volunteer is there to greet him. Thankfully, there is a new addition to the group this trip. Joe, Mike’s and my brother-inlaw and friend, has made the cut. He just turned 60 so he is the youngster of the group. Since he is a volunteer fire fighter and an EMT. I am very glad

he is joining the other idiots, woops, I mean guys, on this particularly difficult hike!

As I write this, Mike’s hike is only days away, ready or not!

Dina Guzzardo

n incredible amount of talent and love goes into each edition of Shore Local Newsmagazine. Our “Meet The Team” series was created to share the stories behind the Shore Local storytellers. Each week, we will introduce you to one member of the Shore Local team as we honor and celebrate every individual that makes Shore Local possible.

Dinar Guzzardo, author of the column Going Places with Dina Guzzardo, has worked in sales her entire career.

While she has spent several years of her life working in timeshare and mortgage brokerage, she has always been led back to event coordinating.

After the 2007 financial crisis, Dina left the mortgage world to launch her own business, Dina Media Group.

The Mercato Market at the Atlantic City race course was the highly regarded event that launched Guzzardo’s career in event coordinating.

Featuring over 100 vendors, a food truck village, cigar lounge, and live entertainment, the Mercato Market drew attendees by the thousands.

Since then, Guzzardo has gone on to organize dozens of farmers markets including the 13-week Shore Medical Center Outdoor Market and Craft Fair and the Somers Point Fall Market. Other events coordinated by Dina Media Group include The Parrot Head Festival in Wildwood, Wild Fest British Invasion, and the launch event for Lucky Snake’s at Showboat.

Dina’s attention to detail and indepth knowledge of the entertainment industry has been a winning formula for Guzzardo in her career as an event planner and coordinator.

D ina began writing for Shore Local Newsmagazine in 2018. Her regular column features local events and happenings throughout the Jersey Shore from food festivals to concerts and everywhere in between.

“I have so much respect and admiration for other events and event planners. I know how much work goes into it. Shore Local is one of the few publications that is strictly for locals.

I am proud to write for them,” shares Guzzardo.
