espect for the ingredients and implements he uses are what define Akiraâs approach to cooking. But he must also rely on intuition and inspiration. âI am always seeking the perfect marriage for a new dish,â he says. âIt is amusing to be able to discover new ingredients and play with them.â As well as innovative dishes, there are classics on the menu. âMany Europeans delight in discovering them, but they might be considered too classic in Japan.â But whatever he is conjuring up in the kitchen, Akira approaches his ingredients with deference, bringing out the best of their natural flavours. Akira is also modest and keen to acknowledge the crucial role his boss, Hajime Miaymae, as well as other kitchen and front of house staff, play in ensuring customers enjoy the whole Kamakura experience.
