It’s also the season of realizing my parents were superheroes for raising three kids, feeding us (every day!), and making household management, including holiday splendor, look effortless. How is this possible? from Neat & Sweet INGREDIENTS ½ lemon 5 drops vanilla extract 2 ounces cranberry juice 1 ounce demerara simple syrup sugared cranberries
Juice lemon half. Combine liquid ingredients in a shaker cup and shake. Pour over ice. Garnish with sugared cranberries. Note: For the simple syrup, combine equal parts demerara or brown sugar and hot water. Stir to dissolve sugar and chill.

Authentic Greek food awaits all who come through the door of The Gyro Spot in Fuquay-Varina. Whether you choose a classic gyro or souvlaki, a Greek salad or spicy tirokafteri cheese with pita bread, you’re guaranteed to find satisfying sustenance. Among the fast-casual eatery’s most popular scratch-made menu items is the lemon chicken soup. Consider it ladled comfort in a bowl that nourishes the soul as much as the body. “The soup is made from a stock we create using chicken thighs and vegetables,” says owner Derek Kostantinos Mikilas, a Greek American. The Fuquay-Varina resident runs the restaurant along with business partner Sue Stamos. Available in 8-ounce bowls and quartsized containers, the soup is sometimes referred to as avgolemono, meaning it’s prepared with a mixture of egg yolk and lemon juice. It also contains well-seasoned rice, carrots, celery, and onions. A large black kettle near the front counter keeps the savory goodness piping hot all day. “It’s a very traditional Greek soup,” Mikilas shares. “My mother on my Greek side grew up eating soup just like this. When she tried it here, she said it brought her back to her childhood.” Don’t leave without ordering a hearty portion of house-baked baklava for dessert. It’s crunchy on top and moist on the bottom, just like you would find in Greece.

Bestow Baked Goods Written by Emily Uhland | Photographed by Jonathan Fredin For every gathering of friends or family, especially those during the holiday season, Heather Sutton is tasked with bringing a cake. “My love is cakes. There will always be cakes,” she says. It’s no surprise, really, as Sutton is the owner of Bestow Baked Goods in Holly Springs, a bakery that specializes in custom cakes, cupcakes, and sweet treats. Creating one-of-a-kind desserts for weddings, birthdays, and baby showers is a fun privilege for Sutton. “You are a part of the family cel-
ebration, and that’s what we want — we want to be a part of all the special moments for folks,” she says. Before the bakery opened, Sutton honed her talents as a home baker. “I love sweets. I wanted to learn to make them at home,” she says. And bake she did — using flour in 50-pound bags and sending abundant treats to colleagues and neighbors. Bestow Baked Goods launched in Fuquay-Varina’s Cultivate Coffee in 2019, then moved to its Holly Springs home between Triangle Wine Company and Eggs Up Grill on Sunset Lake Road.
The oh-so-tempting bakery case contains Bestow’s well-known (and wellloved) staples — cupcakes, of course, oatmeal cream pies, chocolate chip cookies, and sweet potato donuts — as well as seasonal whoopie pies, stuffed cookies, and some vegan options. “Our chocolate chip cookie is really fantastic. It’s just a classic chocolate chip, but it’s perfect. A little crunchy around the edge, and soft and chewy in the middle — just like my favorite way to eat a cookie,” says Sutton. “The sweet potato cupcake is near and dear to my heart. It’s probably the 29
best cupcake we ever make. Everything is good, but it’s my favorite,” she says. The spiced cake comes topped with cream cheese frosting, and is the bakery’s most popular wedding cake flavor. “My grandmother and great-grandmother were bakers. My grandmother made sweet potato pie,” says Sutton. “She was a Southern baker, so she didn’t have a recipe, just added ‘a little nutmeg’ or ‘a dash of cinnamon.’” Sutton used the same method when creating her sweet potato cake, and, with a little tinkering, landed on “my little miracle recipe.” Another of the bakery’s superstar sweets is the Nutella-stuffed chocolate chip cookie. “You can put Nutella on boot leather and it would be delicious, so it’s hard to beat that one,” says Sutton, who has fun creating combinations she thinks customers will love using caramel, Biscoff butter, and cheesecake as fillings. Spiced seasonal flavors make their way onto the bakery’s menu for the holidays, including ginger molasses cookies, apple pie, chocolate pumpkin layer cake, and cranberry orange cake. “Cranberry orange is a little surprising for people, but it’s really, really good.” Now, back to those parties and gatherings, holiday or otherwise — Sutton recommends offering a variety of flavors to make sure every guest finds something to enjoy. “You’ve got to have vanilla — it’s a crowd pleaser — something chocolate, and something spice,” she suggests. Each year, Sutton and her husband, Kyle, host Christmas dinner for about 50 guests, including both of their families, “bonus” family members, and friends. “My husband cooks the way I bake,” says Heather. “We do every bit of the meal.”

SEASONAL CAKE FLAVOR CRANBERRY ORANGE IS SURPRISING, BUT DELICIOUS, SUTTON SAYS.
Kyle handles the savory spread, typically preparing two or three proteins, as well as starch and vegetable side dishes. Heather, of course, supplies the desserts. “It gets bigger every year,” she says. “As a Southerner, my memories of holidays revolved around going to my grandmother’s house. That’s where my ideas about hospitality took root,” says Kyle. “I remember a full home and full table with an overabundance of food.” The Suttons’ Christmas spread might include Kyle’s herb-rubbed strip loin or a bone-in rib roast, and a ham that Kyle cures himself. These entrees are typically accompanied by a potato side dish, such as hasselback or au gratin potatoes, and a vegetable. Kyle makes his signature bourbon punch and offers wine pairings recommended by Triangle Wine Company (Bestow’s next-door neighbor). Despite these delicious offerings, the table isn’t complete without one recipe in particular. “My family will riot if they don’t have mac and cheese,” Kyle says. “Food is at the center of our gatherings. It brings people together — especially good food; you want to share good food with people,” Heather says. Sharing has always been a central component of Heather’s love for baking. “The thing I enjoy most about baking is being able to give it as a gift. We choose the name Bestow, which means to convey as a gift. It’s a way to connect with people, and that is important to us.”

Local nonprofits work year round to take care of our neighbors in need. They can’t do it without help — donations of money, supplies, and time — from area businesses, residents, and civic groups. Let’s close out the year (and begin a new one) with donations that will directly bolster the local community. Here are a few options from the many that serve our area.
SLEEP IN HEAVENLY PEACE You probably won’t catch Zella Bracy resting. The co-president of Fuquay-Varina’s chapter of Sleep in Heavenly Peace (SHP) announced her professional retirement and founded a nonprofit organization on the very same day. However, she has dedicated the last three years to ensuring local children have adequate rest. “Building beds for kids that don’t have beds is our main mission and task,” Bracy says. Volunteers for bed building “Young students need sleep, and delivery good sleep, not in mom’s bed with the TV on or a phone lit up. A bed is a safe, comfortable place to rest. Every child should have one,” Bracy says. SHP hosts bed-building events about once a month, where volunteers come together to turn lumber into twin-sized beds, completing as many as 50 beds in a day. “It’s amazing what happens in an hour and a half,” Bracy says. “Volunteers walk away knowing they made a major difference.” Make sure to check the calendar on the organization’s website to see which builds have open volunteer slots. Volunteers are also needed for monthly bed deliveries. The bed frame isn’t the only component provided by SHP. A new mattress, sheets, comforter, and pillow are always included in bed deliveries, which means bedding drives and donations are essential to the organization and the community it serves. “A $30 bed-in-a-bag is an easy way to make a difference,” Bracy says. shpbeds.org/chapter/nc-fuquay-varina

PAWFECT MATCH RESCUE AND REHABILITATION
As a foster-based rescue organization, Pawfect Match relies heavily on its network of partner families and volunteers to care for the dogs, puppies, and cats — more than 700 per year — that come through its program looking for forever homes. “Our people are our most valuable commodity,” says Debbie Sandlin, director of Pawfect Match. “If we have the people, we can get the job done.” For each animal receiving care, Pawfect Match covers medical expenses (to the tune of $250,000 in 2022), spay and neuter surgery, food, a crate, and toys. “We try to make sure the foster family is not impacted financially,” says Sandlin. Despite having generous local support, the need for fosters and financial donations remains ever present, especially as rural rescues are overworked and overfull, funneling more animals to Pawfect Match. “We always need more foster families and vacation fosters, people to help with transport and intake (of new animals), even to hold leashes and help set up at adoption events. We have events almost every weekend,” says Sandlin.

GUARDIAN ANGEL THRIFT You might not think a few dollars spent on glassware and hand-me-down sweaters at Guardian Angel Thrift adds up to much, but, since 1999, the organization has raised and donated $3 million to Alzheimer’s research. “We donate about $100,000 annually,” says Executive Director Lynette Somers. “The funds stay in North Carolina and fund seed grants to help young or new researchers get interested in brain health and begin to work for the cause.” “The only way to cure this disease is through research, to find out what’s causing it and how to stop it,” says Somers. Support this mission with donations in good condition, and by shopping at the Fuquay-Varina and Apex locations of Guardian Angel Thrift. Furniture, decor, kitchen items, wall art, clothing, and shoes are among the best sellers. “We always need volunteers in the Apex and Fuquay thrift stores, sorting bags 36 December 2023/JANUARY 2024
of donations, testing electronics, and stocking the floor,” says Somers. The organization employs about 40 staff members to operate the thrift stores, frequently hiring senior adults and disadvantaged individuals looking for employment, sometimes with physical handicaps or mental health challenges that have prevented other employment. “We need your donations to cover the research funding and pay the bills, like rent, energy, and salaries. Nonprofits have bills like everyone else,” says Somers. 2024 will mark the 25th anniversary of Guardian Angel Thrift, so stay tuned for special events and celebrations to commemorate the milestone. “There are very few people who have not been touched by Alzheimer’s. “Toys at the hospital are not a luxury, they are a necessity,” says Holly Schwab, founder of Zach’s Toy Chest, who learned this lesson firsthand while her infant son, Zach, underwent 12-hour cancer treatments at a hospital with no toys or distractions for the young patients. Fourteen years later, Zach’s Toy Chest has donated over 140,000 new toys to hospitals and clinics across North Carolina. “Toys play a part of the healing process. Kids recover faster and better when they aren’t scared and anxious,” says Schwab, a Holly Springs resident. HOLLY SPRINGS FOOD CUPBOARD “Every time you go to the grocery store, think about the family that is not able to go to the store. Pick up a little something for that family that needs,” suggests Pat Haggard, executive director of the Holly Springs Food Cupboard. Current food distribution has risen 50% from the previous year, Haggard says, putting a strain on the Cupboard’s resources. “We depend on a constant flow (of donations) from our community. Food drives — big and small — every piece of it goes together to make it happen,” says Haggard. For Thanksgiving, the Food Cupboard supplied 450 turkey dinners with all the fixings to households in need. And for Christmas, the organization will distribute special meal gift cards on top of their regular weekly distribution. Gift cards eliminate the challenges of food storage (think hundreds of Christmas hams) and accommodating dietary restrictions. “People are thinking about meals more during the holidays. Families naturally think about donations more,” says Haggard, acknowledging the generous support of the community from October through December, when the Food Cupboard receives the majority of its annual donations. But the need remains all year long, making each neighborhood, Scouting, or school food drive a vital piece of the puzzle. “All it takes is one emergency, and all of a sudden there is no money for food,” Haggard says. hsfoodcupboard.org

Dr. Keri Kenning is a Board-Certified Orthodontist and a board member and advisor for Invisalign who has previously practiced in both Asheville and Charlotte. She completed her B.A. at the University of Kansas, D.D.S. from Creighton University School of Dentistry, and Certificate in Orthodontics from the University of Texas Health Science Center at Houston. Prior
to becoming an orthodontist, she worked as a marine biologist, writer, and speaker for a marine conservation nonprofit in Key Largo, Florida. Her favorite pastimes include scuba diving, exploring America’s national parks, playing tennis and pickleball, and cheering on the Kansas Jayhawks. After meeting with several doctors from around the nation, Drs. Bo and Baker knew Dr. Keri was the perfect fit for the office. Tyler returned weekly to browse The Vine’s selection of herbal supplements and natural wellness products, becoming fast friends with the store’s then owner, Lisa Young. This past April, Tyler enthusiastically became the shop’s new owner, excited to build on an already well-loved community business. “The Vine is all about encouraging and empowering folks to take better care of themselves all the time. … I meet many people who feel frustrated and disempowered due to challenging and unresolved health concerns. I want everyone to feel validated, empowered, and proud to have taken another step toward better health as they leave the shop,” Tyler says. Tyler grew up in a family that practiced herbalism, using plants and herbs for health and healing. This tradition encouraged the women in her family to take ownership of their own health, Tyler says, instead of waiting for illness to strike to seek treatment. 50 December 2023/JANUARY 2024

While many modern medicines often mitigate symptoms of illness, herbal remedies, like those available at The Vine, work to boost the body’s natural ability to heal. “It’s fun to read and research (holistic wellness), but it’s easy to get overwhelmed,” says Tyler, which causes many people to give up before they even begin. “There is no best way. The best way is for you to simply start and build upon it.” Tyler recommends researching a single herb, or adding one supplement or practice to begin a health journey. Don’t try to add everything all at once. “Make it an exploration, rather than a fact-finding mission, and have fun,” she says. Something as simple as drinking herbal tea — “Tea was medicine in my family” — can become a springboard for other wellness habits. You don’t have to commit to a fully holistic lifestyle to reap any benefits, either. “People come in and think they don’t belong here if they eat Swedish Fish. medicine cabinet staple in my house now. … It is my first choice when anyone in my house feels run down, congested, or sore.” Other favorites include a line of topical magnesium products by Mg12, a family-owned, NC-based company — especially the roll-on oils and Dead Sea Bath Salts. “I love the Dead Sea Bath Salts because they are multipurpose and highly effective, but inexpensive. These relieve anxiety, digestive irregularity, muscle and joint pain, inflammation, and sleeplessness. These can be added to the bath for children and babies as well. It will help them sleep,” she says. “I love products that everyone can use, that are safe and effective for kids and adults.” The Vine’s top-selling product is AnxioCalm, a stress and anxiety relief remedy that uses a botanical extract to increase feelings of calm and relaxation. “Just about every item in the shop has been my favorite at one point or another,” Tyler says. Heading into a new year, Tyler doesn’t usually set specific resolutions, but she does make time to reflect and connect with how she is feeling. “The best way to take ownership of my own health is to reconnect with myself and body,” she says. “You have to listen to your body. Intuition is so valuable to health.”

The Food Lion Christmas trees might be scoffed at in Western Wake, but true locals know that these bad boys are cheaper than the ones on the fancy lots (still overpriced, but what isn’t these days?). Make a day of it! Bundle your kids up to survive the freezer section, grab a box of Little Debbie Christmas tree cakes, shake the needles off the trees that are piled higher than your morning poop, and make some memories! A DASH MORE COMPETENCE I don’t know who is in charge of decorating Fuquay-Varina for the holidays, but every year there’s a new mistake that no one we all saw coming. At this point I’m starting to wonder if some dude named Jeff is trolling the whole town. If so, I’m not mad about it. They may be upside down or missing entirely, but the holidays wouldn’t be the same with perfectly coiffed decor.

LOWER YOUR EXPECTATIONS This one goes way back to 2017, and I can’t remember if it was in Holly Springs or Fuquay-Varina — but does it really matter? They advertised the crap out of this Instagram-worthy snowglobe, and this was the end result. Residents got out there and took a picture with it anyway, because they know not to expect Cary-level decorations — you get what you get, and you don’t pitch a fit.

BELLS & WHISTLES Every Southern family has got a grandma in a church bell choir, and when the town Christmas parade comes around, mobility can be an issue. In Fuquay, the obvious solution is their grandson’s noisy tractor, perfect for getting Mee-Mee off her feet and for drowning out the sound of bells, birds, or nuclear sirens from Shearon Harris.
CHRISTMAS BALLS The holiday season doesn’t officially arrive until the Town of Fuquay-Varina hangs its pretty balls from the trees in Fuquay Mineral Spring Park. Fuquay’s balls. No, there’s not another word for them. Get your mind out of the gutter.
LIGHT UP YOUR LIFE I think we can all agree that smoking is bad, but this tree has it all: every pack your grandpappy smoked, and then some; a penguin wailing on an electric guitar; a chancla that someone’s Abuela probably hit them with that morning (smoking is bad); a rusted bucket, most likely filled with ashes from the spirits of students past. Southern Wake at its best.

NO WINE LEFT BEHIND This is exactly what it looks like. The Wine Advent Calendars at ALDI are released in stores on Nov. 1, and it’s basically Woodstock for women in Southern Wake between the ages of 30 and 55. The craze started in Apex (obviously) a few years back, but women in Southern Wake now have multiple locations to set up camp. Stay safe out there.
IT’S OK TO ASK FOR HELP Dash is now one of two K-9 police officers in FuquayVarina, but they really did him wrong with this one. Dash looks like he got into a stash of something he was supposed to be confiscating. Dash looks like he just survived the first holiday gathering of the year. Dash looks like he just saw
something he can’t unsee behind the Walmart parking lot (don’t go there). Dash looks like he just bought five items at the store and the total came to $106.78. Dash is all of us.

LOCAL DECOR The best thing about this glorious display is THE ACCURACY. That cute little home is inches away from the nuclear cooling tower. Each house sits on a 0.24-acre lot. The streets are empty due to a nuclear evacuation except for that one guy who couldn’t hear the siren over the tractor bell choir. Perfect. Chef ’s kiss.

The Southern Regional Center, a Wake County government facility, is located at 130 N. Judd Parkway.
In a study recently published by RentCafe, the supply of apartments in the Fuquay-Varina zip code 27526 more than tripled from 2017 to 2022 — from 563 in 2017 to 1,781 in 2022 — a 316% boost. That’s the fourth highest percentage growth in the nation, behind two Washington, DC zip codes and one in Queens, NY.

A new public parking lot, located at 801 Durham Street in Fuquay-Varina, opened last month, created thanks to a community partnership with Ample Storage. The lot offers 123 street-level parking spaces and four electric vehicle charging stations, and is located near The BrickHouse Bar and Grill in the Varina district.
